Victorinox 40520 Fibrox 8-Inch Chef's Knife

Victorinox Swiss Army 8-Inch Fibrox Straight Edge Chef's KnifeThe Forschner 40520 was rated as "best overall" in Cooks magazine in Fall 2004. Pretty good report card from "the" chefs magazine. It took top honors over several high end ($80 -$100+) Wusthofs and Henckel models. While they didn't claim that the Forschner was better at any one specific task or that the craftsmanship can stand up to the others (its blade is cut from a blank ribbon of steel, instead of a hand-forged one piece) they did say that its lighter weight was preferred by some of their testers and that it handled the basics just as well as more expensive models. I just took delivery of mine last week and I am putting it to the test. I can say that it arrives razor sharp...nice... and that it's fairly well balanced. The handle is made of a grippy composite that allows you to securely hold firm if wet or in akward positions. The handle is a little longer than others I've owned, maybe too long for small hands, but it is contoured so you can move up towards the blade for better control. The blade does have a nice rocked contour, which makes chopping & dicing easier. I've grown to prefer ligher weight blades and you don't sacrifice much when it's this sharp. Overall I would say that for the price, this is a great chef knife..time will tell if any problems develop. Definitely doesn't have the same craftsmenship or allure of one of the high end Germans, but if your looking for a highly functional, lightweight, standard chef, it's hard to go wrong here.

This knife is such a value. I have always had a hard time accepting the high-prices on Wuesthoff or Henckel knives because I never felt the VALUE was worth it. Boy am I glad I held out for the Victorinox knife! This knife, also known as Forschner, is consistently sharp. Just a few swipes of the sharpening steel and its good as new again. I use this knife and a 6" every day. The handles are comfortable and do not get slippery when wet. They are practically the only knives I use. I wash and wipe dry after each use (NEVER put in the dishwasher). I think you'll be as pleased as I if you try this knife.

I liked the knife at first but after only a few months of light use, about 1/4" of the tip seems to have broken off. This doesn't surprise me, as the blade is thin compared to the better knives.

Update on this review: I was beyond the Amazon 30-day return period, but Victorinox was more than happy to replace it, emphasizing that all their products have a lifetime guarantee.

I to bought this knife because of the rating in Cook's Illustrated. I have Henckels and was interested in something to use in more utilitarian situations. I didn't want to baby it; I wanted to use it and then put it in the dishwasher and forget about it. After using this knife I realized that I made a mistake in ever buying the Henckels. They now seem heavy and clumsy in my hand. Every time I reach for a knife I grab this one. I only bought one knife because I wanted to see if it would hold an edge and to see how hard it would be to re-sharpen. Well after a year of constant use I still don't know how hard it will be to re-sharpen because I haven't had to do that yet. It was yesterday while slicing tomatoes that I realized just how fantastic this knife was. Here I had a knife that hadn't been sharpened in a year and I was slicing tomatoes like I was using a seriated utility knife! The only reason I don't have more than one is because my magnet is full of Henckels that I don't like to use. Anybody want to buy a set of totally babied Henckels? I need more knives I like to use.

This is the chef's knife I've been looking for. The blade is the right balance between stiff and flexible. NEW, Quality Stainless Steel 20-Piece Hanging Flatware Set, Includes Stainless Steel StandI searched high and low for hanging flatware sets and this was the only set I was able to find. I needed to replace a set that I already owned for many years, as many of the pieces have been lost and a few were dammaged by falling into the disposal. I am very happy with this set. They are a nice, heavy weight and sturdy. The hanging rack is also very nice. The overall appearance is very nice-looks great on my counter. I do not have drawer space for flatware, so this was a must for me. The only downside was that I could not find the sets without the rack, as was mentioned by another customer, as I wanted a complete service for 12. I had to buy 3 complete sets, with the racks, so I probably paid a bit more, but it was all worth it. The set I am replacing was a service for 8 and cost about $80 several years ago. It was 18/10 stainless, and this one is 18/8; I'm not sure what that will mean to me, but might affect the price? Shipping was also a bit high, but considering that no one else had this, I gladly paid it to get these sets, which arrived very fast-way ahead of schedule. I would highly recommend this product if you want (or need) hanging flatware!

I've had some really 'cheap' looking hanging flatware, and so this set is a huge relief! I needed this for a small kitchen with little drawer space, so now everything is in it's place, and I'm a happy camper. I stil would love to buy a second set, without the hanging stand, as this stand could easily handle two sets. How's about it?

I am just thrilled with this flatware set. It has a very substantial feel to it, is of an interesting "cutting-edge" design, and it hangs in a very balanced way on the holder. I was afraid it would have a cheap feel to it, but NOT. I've got it sitting out on my kitchen island; not only is the flatware handy, it all looks quite decorative. Highly recommended.

I have owned a set of these for over 7 years. Over time, pieces have "disappeared" (kids probably). But I have looked everywhere for this EXACT set. The pieces I still have look brand new, no forks with staying teeth, spoons aren't disfigurred from bending back and forth, no rust or deteriation and the knifes are (even after used as a screwdriver a few times) flat as they day they were bought. Speaking of flat, the flat tips of the knifes unique and very useful (better than a spatula).

I had bought some flatware quite a few years ago and was looking for some that was like it because it's heavy duty. when I saw this on amazon I was so excited because some of my pieces have disappeared. This is great flateware nothing fancy but will last a long time. The fact that it hangs frees up a drawer if you have limited space.

The handle on the older knife finally gave up the ghost and repeated feeble attempts to fix it did not work. This new Ulu is a little thinner gauge of steel than the older one and the wooden display stand is a lot smaller. I threw out the new display stand and am using the older one.

We use Ulu knives a lot. They are great in a variety of applications where standard bladed knives are not so good. If you do much slicing and dicing, you need an Ulu in your kitchen.

We owned a Ulu knife but wanted another one for use in our RV. We like our new Knife and will use it often.

We purchased the Pfalzgraff flatware because our stainless set was old and hard to keep spot-free, we had mismatched sets, and the outlet store was having a huge sale. After we got the flatware home and started using it we went back and bought more. Pfalzgraff flatware is wonderful. It's much heavier than normal stainless and runs through the dishwasher beautifully. First time guests at our home always comment on how heavy and nice their fork or spoon is (yes, it still amazes me that people actually notice!). Then they ask 'what kind of stainless is this'? All our Pfalzgraff stainless flatware still looks brand new even after 8 years of everyday use.

Our son and his fiance chose this Pfalzgraff flatware pattern as part of their wedding gift registry at a local store. I checked Amazon to compare pricing since the local store charges $50 for a 16pc set. As usual, I could depend on Amazon to offer great value, so I quickly ordered this set for an upcoming bridal shower.

When I opened the box I was surprised at how nice this set actually is. It has full place settings for 8 people, all the great serving pieces and even has 8 steak knives! What a deal! The box says 'Lifetime Guarantee' and the pieces are just as heavy and shiny as our old Pfaltzgraff stainless. I know this gift will be very welcome. And if the happy couple does not receive more flatware at the bridal shower, I will order another set like this for them. You can never have too much flatware especially when I expect this Pfalzgraff will last them through a lifetime.

My not liking the flatware has nothing to do with the quality of the set. Online it looked liked my set but didn't match once it arrived. I had to send back for that reason. Price was great for that many pieces and I am still looking for the ones to match my existing set.

J A Henckels Professional 'S' Hollow Santoku Knife 7'My fiance insisted that we buy this knife after watching Giada DeLaurentis use it on her show. "Are you kidding me? We don't need a $100 knife." Now, I don't know how I could survive without it. It makes cooking so much easier and so much more fun. I had an average set of knives that I got for Christmas when I first started living on my own. I only use this knife now. I can't wait until we get married so we can request an entire set of nice knives. If you can spring for it, you should get this knife. Make sure you get the professional grade, and make sure it's hollow. It helps to keep food from sticking to the blade, and it makes the blade stronger (at least that's what my fiance insists). I'm not a chef, and I don't know anything about knives, except that I couldn't cook without this knife.

I have about seven Henckels Pro S knives, which I bought ala carte, and this was the last one I purchased. Initially I bought it for a rather silly reason. I saw a lot of people using Santokus on television. Then one day I was in my local restaurant supply store, had some extra money in my pocket, and they had this knife on sale. So I bought it. I took it home, tried it out, washed it, put it in my knife block, and there it sat. Though I had tested it a bit at the store, I discovered I didn't really like the heft or balance of it, compared to my Pro S chef's. I was used to a bolster and a much heavier blade.

But, I eventually started using it. At first I discovered with the Granton edge, (what they call "hollow," here) it was great for slicing cheese. Cheese usually stuck to the side of my chef's knife, necessitating my peeling it away. With this knife, at least as often as not it just fell to the cutting board, and when not it was much easier to dislodge. Then I started using it to cut up veggies. Pretty soon I found that my Santoku had replaced my chef's as my automatic go-to knife. I use it all the time now, and am quite happy I bought it.

I still love my chef's for certain things, but for fast, light work I don't know how I ever got by without my Santoku.

And for those of you who wonder about the quality of this particular Santoku, I have had no problems keeping it quite sharp by touching it up on the steel regularly. I can't use one of those clear flexible cutting sheets; my knives cut them to ribbons.

And regarding the handle shape, these traditional handles feel good in my hands. However, it is all in what you get used to, as long as the blades are of good quality, as evidenced by my initial dislike and my later love of this knife.

I bought this knife as a gift for a wedding shower. I own one myself, and I love it. It works so well that I buy it for all kinds of gifts. Shower, wedding, or anniversary. It took me a long time to buy myself quality knives so to me giving a good knife that should last them for years is a gift I wish someone had given me. I am an avid cook and think anyone who needs a knife should definitely consider this one.

Overall, I like this knife alot. The one thing I don't like is how the slices stick to the blade. I thought that santokus were supposed to eleviate this problem which is why they have the indentations on the sides. Also, I own another Henkels knife from the Twin Cuisine line and I definitely prefer the Twin Cuisine handles to the Professional S handles

For years, I used a chef's knife for all of my chopping and slicing needs in the kitchen. Mostly I cut vegetables and fruits. The Henckels knife is perfect for that. I'd say it's twice as easy as my old knife. The blade is very sharp, and the knife very well made. On the expensive side, but it should last a lifetime.

The handle is awesome! I love the feel of it although it's kind of hard to clean 'cause it's so sticky. It's good for cutting though. I never feel like I'm going to let go of the blade and cut myself.

The wooden case is cheesy. Make the knives feel cheap; which they aren't but again, compared to the Pro S Henckel's, they look cheap.

One gripe about these blades are that they don't sharpen as fine as the Henckel's. They get pretty sharp but not to the point where I feel like they would cut right through bone.

I don't know if that's what knives are supposed to do but again, comparing these knives against the Henckel Pro S, you can't compare.

These are a deal for your money but definitely look into the Henckel Pro S blades.

My mother and I both love Rachael Ray and have been wanting to get her knives for quite some time. I purchased this knife for my mom as a mother's day gift, and we were both surprised and disappointed to find that straight out of the package it was so dull it wouldn't cut butter!

We never thought Rachael Ray would put her name on a defective product!

After several sharpenings we have made the knife usable, but are not happy that we had to go through this!

Maybe we just got a bad knife, but I would suggest really thinking before purchasing this knife because I feel it was a rip off!

I bought this knife on a daily deal site. It came in a plastic storage sheath that had a "sharpener" inside. To be completely honest I was unbelievably disappointed when I received this knife and it couldn't even cut a tomato skin efficiently. The sharpener inside of the sheath did not make the blade work any better either. It will cut some things, but for the $20 I spent, it is not a good knife. I would not recommend spending your money on these knives as they do not perform as advertised.

I read reviews about this knife being dull 'after' I already purchased it. Needless to say, my expectations were not very high. But I can tell you, this knife is as sharp as a razor blade! I've been cut by it 4 times already, and I am not careless. It was in the dish drainer and my hand just lightly brushed it as I reached for something else, and it drew blood immediately. On three other occasions that knife got the better of me. I swear, if I even look in its direction, I get nicked!

With that said, it is in fact a cheap knife, and I doubt it would hold up to being man-handled. So don't try to cut a frozen block of cheese with it (like i did my previous Rachel Ray knife) and break the blade.

Wallace Dark Walnut 2 Drawer Chest with FeetHolds a service for 12 with no problem. The two drawers will not hold longer pieces in slots. They have to lie sideways. The slots are too narrow to hold some pieces. It will not hold a large soup ladle.

This is a beautiful, well made chest that I ordered for a wedding present. I would have given it 5 stars if it wasn't for the hardware. The knobs are not as nice a quality as the chest itself. The first one I received, had several of them rolling around in the box and when we tried to screw them back on, the screw shaft was embedded sideways in the drawer making it impossible to put the knob back on. We exchanged it (no problem with the exchange and the replacement arrived immediately) and the new chest had the same issue with the knobs not staying on. The screws just aren't long enough and the lining is glued to the insides of the chest making it impossible to remove and replace the screws with longer ones. We ended up putting a drop of super glue on the inside of the knob to help it not fall off again. For the price it was worth the hassle. Other chests I looked at were well above $100. I am planing on ordering another one for my daughter.

The chest is a good value. Finish is OK, but not of high quality. Overall, it is what should be expected for the price payed. Ordered a week before Christmas, but did not arive until week after Christmas, although info on order said it would be only 3 to 5 days. Memo: Don't wait that close to order an item.

This particular knife was my first Blackwood purchase and it is the most frequently used knife that we own.

BTW, you can find these knifes at a very well known auction site, for approximately 1/3 of the MSRP. However, be careful at that site because some sellers are advertising Ikon Classics as Blackwoods, which is simply untrue. The real Blackwood knifes have dark brown handles, not a black handle.

I have to admit I was looking at the expensive $160.00 sharpeners and read the 4 reviews for this item. They all claimed that it was great so I figured I would give it a try. Here are my thoughts:

1. Initial Reaction when I first opened the box was. I GOT SWINDLED. This looks like a pile of junk

2. After reading the directions: I GOT SWINDLED. This looks like a pile of junk

3. After using it for the first time: WOW!!!!!!!!!!!!!!! It REALLY WORKS!!!!!!!!!!!!!!!!!!!!!!!!

Overview: The main unit is a T shaped piece of aluminum which is in two pieces (Two L brackets). It has notches in it for the different angles you want to put on the knife, i.e. How sharp do you want it to be. You place the knife between the two pieces of aluminum and tighten it in place. You then pick up the coarse stone which is one of the items in the picture that look like screw drivers. You hold onto the base of the of the T with the blade facing you and put the metal rod of the stone into the angle notch you want to use and push the stone towards the angle bracket. You then pull it back out move the stone about ¾ of the stone width down the blade and repeat until you have done the entire side of the blade. Next you flip the angle bracket upside down and repeat for the other side of the blade. You do the same thing using the medium and finally the fine stone. Once done depending on the angle you chose you will have a wickedly sharp knife.

PROS: IT WORKS PERFECTLY!

CONS: Ok you're not paying $160.00 for it so it has some. Most of the cons go away once you realize you do NOT have to press hard to get the job done.

1. Kind of cheaply made but could easily last a lifetime with proper use.

2. Holding onto the base of an L bracket is kind of stupid and difficult the first time you try to use it. They should have put some sort of hand grip to make it easier to hold on to.

3. Depending on how hard you press and how long the blade is (Long kitchen knife) it is pretty hard not to have the knife swivel between the brackets. Once I realized I only had to apply light pressure this problem went away.

4. You're pushing the stone over the blade. Do not slip or get your fingers in the way or you will be a bloody mess. Once again if you applying light pressure and are paying attention so your fingers do not get in the way it is not an issue.

5. When you first put oil on the stones it instantly disappears. This is not really a con as the stones are new and thirsty but once they get used repeatedly this issue goes away and you still have plenty of oil left.

6. The metal shaft of the stone should be steel not aluminum so it cannot accidently get bent which would mess up the angle. Once again unless you are applying way too much pressure this should not happen, but let's face it people drop thinks so steel would have been better.

7. Depending on the angle chosen you could have the stone come in contact with the T bracket. This is more of the user paying attention when setting the blade between the angle brackets.

8. If you do press to hard on the stone and temporarily bow the knife the stone will come in contact with the metal sides of the blade and leave scratch marks. Once again use light pressure.

Conclusion: It works great and YES I would definitely recommend and buy it myself again. No I have no intentions of buying the $160.00 sharpener as this one works great. When you first get it try it out on a long junk kitchen knife that you do not care about. This will allow you to practice with how much pressure to apply. I am pretty good with it after several tries and using light pressure I can do one side of the blade using one stone in less than 20 seconds. I then come around for a second pass since I am using only very light pressure (part of the 20 seconds). Doing an entire knife on both sides using all three stones takes me about 3 minutes. I could go faster but I want to make sure the blade is not scratched and comes out perfectly and I do not want to get stupid and cut myself. I do not recommend this unit if you are not coordinated holding the T bracket in one hand and sliding the stone over the blade with the other. However, for most people especially those who have worked with tools in the past this is a much cheaper alternative than paying $160.00 and it really does work!

Let me say that had it not been for a few things, this kit has the capability of producing an excellent edge, once i was done making some changes. I like the idea of buying a product and not having to fix it in order for it to work properly. This would be a 5-star product, a few key things aside. Here's what i didn't like and what you'll deal with out of the box:

1. Opening the case requires me to pry it open each time. The plastic case is designed where a stone sits right near the edge that you'd be pushing on to open the case. This prevents it from opening normally.

2. The built-in guide rods are supposed to slide in and out. I was unable to get most of them out by hand. I had to use pliers to break them free, then i had some luck. I ultimately had to slide them in and out a bunch of times to get them to "break in."

3. Now that the rods are loose enough to slide in and out, they're also loose enough to wobble up and down. This changes the angle on the stone, making getting a sharp edge almost impossible. When you go though the various stone grades, you need the angle to stay the same in order for the finer stones to do any good. Having a wobbly guide rod is a showstopper.

4. The honing oil bottle is made of Adamantium (Wolverine of X-MEN fame has a skeleton made of Adamantium, a nearly indestructible metal). Sure, it looks like clear plastic. It's the hardest to squeeze squeeze bottle i've ever used.

5. The clamp, while quite good, has one useless feature. The tip of the clamp has a cutout that can allegedly be used for clamping thin blades. It would work, if that cutout was flat. It's not. It's pretty well rounded and I have yet to find a technique that clamps a small blade in this cutout securely. I believe the clamp was a cast component, where this part should have been machined to be the needed shape. Looks like a bit too much cost-cutting was done on this part.

The above combined to make a "professional" kit that's hard to open, hard to use, and makes a terrible edge. I actually began to package this up to return it, but then realized the wobblyness of the rods was likely to blame for most of my disppointment with this product. So, here's what i did to fix most of the above issues and make this into a good kit:

1. Now that the rods are loose enough to slide in and out without having to take steroids, i fixed the wobblyness with a bit of superglue. I put some of the glue on the rods, then slid the rods in an inch or so. This forced the glue into the wobbly slots. I let the glue cure and then broke the rods free from the glue by twisting them with pliers. Once broken free, the rods still slide in and out nicely, but no more wobble! This alone made my second round of sharpening attempts very successful. I got some very scary sharp edges on my kitchen knives and my pocket knives.

2. I replaced the not-so-squeezable squeeze bottle with a softer one that also had a small dropper-style tip. This allows for easy dispensing of the honing oil.

Additional tips and comments:

1. I soaked all the stones thoroughly with oil. This used up about half the bottle of oil, but from now on, only a few drops are needed to keep them clean and happy during use. My new squeeze bottle makes this a pleasurable experience. Be sure to clean the stones by adding some oil, spreading it on the surface of the stone, then smacking down onto a paper towel. This will get the fine metal shavings out of the stone and prevent it from clogging up.

2. Make sure all the rods are at the same angle. This makes or breaks a successful sharpening session. With the wobbly rods i dealt with, the edge was awful. Once fixed, the edge was great.

Conclusion:

This kit had me so frustrated at first that i wanted to return it. The only reason i decided to try fixing it was my next step was to buy an Edge Pro Apex system. Considering that system is around $200, i really thought twice about having to spend that kind of money. Ultimately this product did deliver a good result, but not until i had to make some improvements. If you don't mind making some changes, you'll probably be happy with it. The larger stones and integral guide rods to me seem better than the Lansky system. The clamp offers finer angle selection, which i consider very useful as well. All this is unfortunately negated by some poor choices in some injection-molded plastic parts. I think Gatco cut a few too many corners when making this kit.

I have tried many different knife sharpening systems and this is the first one that actually works. I took our old dull kitchen knives (which were exspensive to begin with) and was able to put a razor sharp edge back on them. I thought I was going to have to buy new knives and this set saved me a bundle. It took three passes because they were really dull but it worked great. I was also able to put a new edge on my pocket and hunting knives on the first pass. I haven't tried it yet on serrated knives, but I have no doubt it will work.

I've had my Gatco five-stone kit for about six years now and believe it was the best addition I could have added to my outdoor tools. I liked it so much that I added the 15006 Extra-Fine (purple) stone and the ceramic 15010 Ultimate Finishing (light blue) ceramic hone for a mirror finish to my edges.

PROS:

* Takes the guesswork out of making sure you have a good, consistent edge.

* Ability to adjust edge sharpness with stone variety (Extra Course to Fine).

* Price/performance. You get a good variety of stones for the money.

* I guarantee it will take a very dull blade and make it razor sharp if you follow the directions.

* Easy to handle and safe grips protect your fingers from getting cut.

* Self-contained kit; everything fits neatly in the box (except for extra stones).

CONS:

* Getting smaller or larger blades to lock in to the guide clamp and be stable can be a challenge.

* If not properly clamped on to the blade, the clamp can leave small marks in the blade finish.

* Rods are set firmly in the plastic handles, but can be pulled out. (A minor issue that has rarely happened.)

* The oil container leaked in mine. Again, not a major issue, but now I no longer have an oil dispenser in the kit box.

* One stone came loose from the plastic handle. I re-cemented it in to the handle. All other stones have been firm.

So why did I give this five stars if there are several minor issues? Because I can't give it 4 1/2 stars and this kit really does simplify sharpening. Try to teach a young Scout or adult how to sharpen a knife on a whetstone and you will find most people can't get a consistent edge. There are tricks you can do to keep the blade edge at a consistent angle, but that is often a futile trial for ham-fisted people.

A key element in getting a secure clamp on the blade is to use the screw closest to the "ladder" to clamp down on the blade spine. The front screw adjusts to the proper width. You will also find that you don't need to apply a lot of pressure to make this work well. Even if you have knives with nicks in the edge, just take the Extra Course stone and gently caress the edge of the blade until the nick is almost gone, then work your way through the other stones to the Fine stone to finish the sharpening.

As with all things, it may take a little time to adjust and learn the device's nuances, but it's well worth it. I've also been around knives and sharpeners for about 40 years, ever since I was a young boy, and I no longer use any of my whetstones. I keep the stones clean and oiled, so I've had six great years of successful sharpening.

You might cut yourself, please be careful.

It isn't very good with cutting things like steak. You really want a longer knife. Seriously, you'll just make a mess of the steak, and might hurt yourself in the process.

Does not fit well in pockets, particularly front and back pockets.

I would buy this knife again, especially if I wanted to cut things.

I have several of the Twin Four Star II knives and they are all great. I highly recommend this knife.

Magnetic Kitchen Knife Holder: 12-inchesI purchased this item because the wood matched my cabinets and it was being offered at a very reasonable price ($14.50 or so). I went ahead and purchased even though there weren't any reviews on it at the time (somebody's gotta be first, right?).

The good:

It was well packed upon arrival and its box was intact. This is about where the good aspects of this purchase end.

The bad:

I took it out of the box and not one, but BOTH of the magnet strips slid out before the wood did. They had been attached with what appeared to be some VERY cheap wood glue. Why the manufacturer thought this would be a good idea when dealing with two different surface types (one of which is not porous and most definitely not wood) is beyond me. I might have overlooked this as I tend to keep epoxy and JB weld on hand, but the final straw was the fact that this didn't even come with mounting hardware.

Overall:

Horrible product, but great customer service on Amazon's part (I have yet to be disappointed by Amazon's customer service). I put in my return request on a Sunday evening and the "trash" was gone from my porch by the time I got home from work on Monday afternoon.

Excellent Item, very well made. No problem with attaching knives because the magnet is very strong. The screws are for drywall but worked well for attaching to side of wood cabinet. Highly recommend this item after researching other magnetic kitchen knife holders.

Edit 6/15/09: I am now more familiar and experienced with stones, so I would like to add a few things. First and foremost, I still believe this is a good stone and at the listed price ($25), it's quite a bargain. I only wish they offered one that was a little wider. I've now tried some King waterstones the standard for cheap but good Japanese waterstones. In comparison, this stone does not cut as fast as the kings at the 1000 grit level. The 240 side is fairly aggressive and cuts pretty fast, perhaps faster than king's offerings. Like most coarse stones (a notable exception being the bester 500 grit stone), the 240 side dishes quickly. The 1000 grit side dishes comparably at a more moderate pace. More importantly, I feel like this stone leaves a nicer finish than does a king stone at 1000 grit. As such, I recommend this stone in general, but I recommend it very highly if you are on a limited budget and don't want to buy any higher grit stones to finish on. The coarse side is probably one of the better stones in the 240 range on the market, but it is slowed down just a bit by it's narrowness. Neither stone individually is the best of its kind (though you'd have to leave amazon to find some of the best), but taken together and considering the price, it's a good combo stone that could easily be either your only stone or the first two in your progression.

In either case don't waste money on stones sold by knife companies shun, global, whatever. They charge a huge markup compared to other companies based on brand recognition and people assuming that a company's stone is best for their knives.

This whetstone is great for typical knife sharpening maintenance.

It can be used in about 5 10 minutes after being soaked in water. However, it takes about a full day to dry completely.

For dull knives:

One side of the stone is 240 grit, which can be used for aggressive sharpening. The other side is 1000 grit, which can be used after the 240 grit sharpening to perform light sharpening. You can then hone the knife on your steel sharpening rod.

For typical knife sharpening maintenance, you can just use the 1000 grit side, followed by some honing on your steel rod.

Note that this stone will not fix damaged knife blades.

After neglecting our kitchen knives for too long, I bought this sharpening stone to try to reclaim them from their terrible state. So far so good. It has really helped.

However, the absence of instructions in English do make it somewhat challenging since I really don't know what I'm doing.

Also I learned the hard way that rubber gloves are a good idea. As I sharpened my knives small pieces of metal imbedded into my fingers. Not too bad, but a lesson learned.

Since buying this stone less than a month ago, I've ended up sharpening close to a dozen knives with it. I bought it on vacation, and before I got home to Toronto ended up sharpening a number of knives for my grandparents and relatives, many of which hadn't been sharpened in decades. I definitely appreciate the two different grits-the coarse does a great job of removing any notches from the blade, and the 1000 grit side does a good job of honing the edge.

My only complaints are that the stone seems a bit narrow. It would be a bit easier to use were it a little wider, like a King Whetstone. Additionally, it seemed fairly easy to score, and I've carved some of the edges off accidentally with my sloppy form-though I can't compare it to other stones because I've only actually sharpened with this one.

This stone also comes with a rubber holder for the stone that works well to secure the stone on a countertop. That being said, it only works when directly placed on a bare countertop. The first time I used the foot, I spent a half hour cleaning a mess of slurry off my countertop. I've thrown that bit in the garbage. Save yourself the pain, and use a wet rag to secure the stone instead-it'll collect the slurry and save you the wash-up time.

As a heads-up, the "instructions" are purely in Japanese-but it makes little difference because there are a number of great instructional videos readily available on the internet.

Without a doubt, this is a great stone for such a low price. You can't really go wrong.
