Concord Sushi Pro Line 3-Piece Santoku Knife SetWe bought a set of these knives and are very happy with the purchase. The build is high quality, the wooden handles are beautiful, and the quality of the steel is high for the price. The blades are decent at holding an edge. When we need to sharpen them, the Chef's Choice 440 2-Stage Manual Sharpener gets the edge back in about a minute. Great value for the money.

Considering the price, these knives are a great deal. Despite their affordability and the fact that they are made in Chinanot the best knife forgersthey do have some nice attributes. They are full tang (the metal goes all the way through the handle) and have great balance. I am a professional chef and I use my knives more in one day than most people do in a year. So my criteria is a little differentI appreciate the fact that they are so affordable-not such a crushing loss if they "disappear" in my kitchen. Additionally the handles are solid and feel comfortable to grip for long periods. The one negative thing I have to say is that the blades are not exceptionally sharp out of the box. But a few passes with a sharpening steal should remedy that.

A couple of years ago, I saw one of those infomercials on TV before the holidays and thought maybe we could use a few "SUPER SHARP SUSHI KNIVES" to add to our regular knives in the kitchen. I saw these on Amazon.com and they looked impressive. I thought I should order some in time for Christmas and wrap them for my husband who does like to cook from time-to-time. When they arrived, they looked substantial. They say they are made from Carbon Vanadium Stainless Steel. The handles are wooden with a steel plate going through the wood and out the back and around the bottom for strength, which makes them look good and much more solid in your hand. Because of the wood handles, you cannot put them in the dishwasher, nor get them wet much because the wood will swell and lose the varnish and color. But, of course, this is the case with all wooden handled knives. I believe they were relatively sharp, however, they were not "super sharp" like I was hoping, even after re-sharpening. So, maybe our sharpening technique is flawed, but they did not become our favorite knives as I had hoped. Maybe we just have really good knives already, so I do not want to be critical.

All in all, I think they were a good value for the price.

These are very versatile, sharp knives. Just moved, so these are the only knives I have at this point and they are good for anything and everything. I gave the middle size to my mother, because who needs three. :) She loves hers too. The handle is very beautiful, you can tell they are quality. Can't beat these.

These are everything you could want in a knife except that they are made in China -which is obviously why they were so inexpensive. I highly recommend them.

Chef's Choice Serrated Blade for Model 662 SlicerWhat can I say, it works as expected. I bought it expressedly for slicing bread and it does it well on my homemade bread. But the effort to change from the non-serrated blade that comes with the slicer to this optional serrated blade is enough of a hassel that I won't be swaping back and forth whimsically since the serrated blade can do most everything the smooth one does. The only reason I'm not giving it 5 stars is that I think something this sharp should come with a storage container of some sort. I am planning to purchase the blade changer holder if I can find a source so each blade could have it's own blade changer holder for storage. This would make blade changing easier if the blade to be changed to is already in a blade changing tool, and the spare blade changing tool is free to be used to remove the blade on the slicer. This would make it easier to switch between the two blades -at least it would make me feel safer.

My cuts of bread white, wheat, rye, and multigrain) all come out looking like store quality. As long as you have lined the bread up correctly on the device and the quality of your bread you can get many slices per loaf. My usual standard loaf has 20 slices but I have taken it up to 24. No ragged edges, and seems to slice through the crust on the top and sides without difficulty. If you own the slicer, and plan to slice bread, I would highly recommend this.

Cuisinart 14-Piece Triple-Riveted Forged Knife Set with Bonus Santoku KnifeI tried a few knife sets before settling on this one. I tried the Kitchenaid & Farberware sets and they cannot match the quality of these Cuisinarts. They are so sharp that I had to change the way I prepared vegs they are like razors! They are heavy and well balanced. Did I mention sharp? Be careful!

These knives are not meant to compete with Wustof, Henkels, and Furi knives. What do you expect for $100?

However, as a set of everyday knives I have found them to be very nice. They keep an edge after I gave them a proper sharpening, they look nice, and they get the job done without messing up your nice knives. I have a few pieces of professional cutlery and of course these don't compare, but I'm not going to throw $1000 down to get that type of set, either.

Pros:

Clean up easily.

Hold an edge for a good amount of time.

Cons:

Not balanced (nothing is for this price)

Handles are a tad small for someone like me with large hands.

I wanted a REALLY nice set (nicely balanced, remained sharp, very dependable), and did not want to pay the outrageous price of other sets. Zwilling J.A. Henckels Bellisimo 42-Piece Flatware SetI am having a huge love-hate relationship with this tableware. The quality, weight, balance, finish and styling is phenomenal....gorgeous....perfect!

Sadly, it just isn't practical. It has to be hand-washed and immediately hand-dried. Otherwise, it spots to a degree of spotting that I've never seen before! Rewashing, even with a lot of scrubbing, doesn't get rid of the spots. The only way to make them spot-free is to use stainless cleanser.

When I was a kid we had two sets of silverware: One for everyday use and a different one for special occasions. I hated the holiday set. It was heavy and edgy; the forks had bulky, square prongs that split a potato rather than piercing it. The spoons were so big that we kids always had soup dripping down our faces. You've seen stuff like that. Of course, a kid doesn't know that life could be different. I was resigned to the bulky silverware just like the taste of fish oil, kisses from an aunt I did not like or a dentist's mechanical drill that vibrated my whole skull.

Things are better now. Dentistry came a long way and the aunt doesn't come around anymore. I still take fish oil but only so that I can annoy the kids and make them take it, too. Otherwise they'd never want to grow up. We take our turns, make faces, swallow and say "blaw". I always point out smugly that I actually don't have to take fish oil anymore because I am a grownup. That way our kids will want to get their own kids to have someone to annoy and boss around. Because of such seemingly trivial events the Western civilization may not end abruptly and those of you who don't have kids because you spend all your time reading Amazon consumer reviews will at least have someone else's kids to wheel you around the old folks' home. But I digress.

This silverware would have done it for us kids back then. It has a clean modern design but with a traditional handle shape---just like our comfortable old everyday set---while being nice enough to impress the in-laws over holidays. I tried some of the other Henckels thin-handled sets including those with "standing knives" but I did not like them. It's form over function. If you want your knife to stand on its edge you can always stick it in your food. My mother-in-law gives me "the look" when I do it but I don't want to talk about that right now. These handles have enough shape and mass to hold steady and keep from spinning in your hand but not so much bulk to look like it's an arthritis-friendly design. The knife handles are hollow---there is a straight seam where the blade is attached with a smooth transition so you won't be looking at unidentifiable food sediments in the crease like with our previous knives. The hollow handles give the knives good balance. The forks were designed for forking---I successfully tried them on a boiled potato. The spoons are unusual---a sleek drop-like shape that at first seemed smaller in volume compared to other spoons. They are not---the spoons have enough depth to make up for the missing surface so I won't lag behind during supper on account of a small spoon and I won't get "the look". Of course, unless people brought their own spoons to dinner it would not matter anyway because everyone at the table would have pretty much the same equipment just like in NASCAR. That's also why we decided to buy two sets so we have enough standardized gear for everyone.

The forks and spoons have stamps on the underside that say: J.A. Henckels International 18/10 China. They are letting us know that there is 18% chromium and 10% nickel in the stainless steel and also that we can't pay the Germans to manufacture such things anymore. Not in affluent Solingen, for sure, and impoverished East Germans won't do it for less anymore because it would not be fair and also because they'd lose their welfare checks. Fortunately today's Germans are very sensible people and when they hire the Chinese to make German products they at least make the stamping so small that most people won't see it without glasses and your unionized dinner guests won't berate you over your Chinese silverware. Also, the knives which could give the game away do not have any such compromising stamp and should a guest start scrutinizing the underside of your spoons or forks you can always enliven your dinner conversation by remarking in a nasal tone, "Is there something the matter? Did the kitchen help not polish your fork, Steve?"

I ran the whole set through a dishwasher right after unpacking to see what happens. It came out with the same mineral stains like it does with everything else, including our old silverware. That was reassuring because we are on hard well water and dishes are supposed to look scuzzy after a dishwasher cycle. I put it back in some water, wiped it with a scotch-brite and it came right off. We rarely did it with our old silverware but I'll make the kids polish this new set regularly and I'll always call it "flatware" when I do. That'll give them two more reasons to want to grow up.

This silverware deserves 5 stars even though I was tempted to subtract one for using stuck-up words like "flatware" and for misspelling a common word like "bellissimo".

I have used Rada cutlery for a dozen years, after finding a tiny set at a hospital gift shop. I have given this cutlery as gifts for years, including to terrific cooks, who cherish their pieces. This cutlery is thin and lightweight, and may require an adjustment if you are used to heavy knives that pin your foot to the floor if you drop them. These knives are elegant, sharp and have a stainless blade that holds an edge well and is easy to care for. This set was purchased for my nieces wedding shower. This set is my favorite because it has the 4" butcher knife. My personal favorite. It stays rigid through any cut and is a great length. RADA knives in general are a much better knife than the price states. They stay sharp, sharpen easily with the knife sharpener and will last for years. My family first bought them through a fundraiser and never looked back. You won't go wrong with these knives.

Chef'n Slicester Cheese Slicer, ApricotI like this slicer for several reasons. It is easy to use, safe and creates slices that are even all the way to the bottom. The handle is a comfortable size and shape to grip and feels secure in your hand. The unit will accommodate a cheese block as wide as 3 1/4". The roller is adjustable allowing for three different slice thicknesses, from an 1/8" to 1/4". I found the adjuster a bit hard to turn so I've selected the size I like most and just leave it there most of the time.

There's a spring action built into the cutter that isn't evident when looking at it, but allows the blade to descend all the way to your cutting surface giving an even slice from top to bottom. I've only used the cutter on cheddar and block cheeses of similar firmness so can't speak to its performance on other types, but am very pleased with the slices on those I've tried. The blade is not sharp so might not be good on hard cheeses. The holes in the blade are good for letting each slice fall away rather than sticking to the cutter as happens with some types.

I don't like the spatula/plane type slicers with the slot in them because the slices are too thin to suit me and I can never get them even. I've tried the T shaped slicers with the wire, but get annoyed that I can't get all the way to the bottom of the block so after several slices I have a sort of tongue of cheese left at the base of the block. The cheese cutting boards with the wired lever can work until the wire breaks, but since I'm left handed, they aren't ideal for me.

I'm always trying the latest gadget for cheese slicing and have finally found one I really like. If, like me, you haven't been satisfied with traditional slicers, you may find this is the answer. It sure does a great and consistent job for me.

First off, I will say it is easier to clean than my "board and wire" slicer. Just toss it in the dishwasher. Other than that, this is a great idea and I wanted to like it but it is fundamentally flawed.

First of all it only has three thickness settings, not an infinitely adjustable dial. For me, the thinnest was too thin and the next setting too thick.

It is difficult to cut even slices, especially on the thinnest setting.

You are limited to slices the size of the thin side of supermarket block cheese such as Cabots (about 3 inches max). If you have a bigger chunk or a wedge, or want a bigger slice, forget it.

Overall, too limiting for my use. It has gone in the trash and I've gone back to my "board and wire" cheese cutter.

This product really is perfect for slicing cheese.

This past Sunday it got its first good try out, since we sliced up about 5 blocks of cheese for the superbowl. Using this tool I was very easily able to slice a block in just a couple of seconds and each slice was the exact same size. The cheese slice might be a bit thicker than some people like, but I don't mind a thick piece of cheese. If you press the cheese firmly up against the plastic the metal blade will cut the perfect slice each time.

This cheese slicer is made of plastic and it isn't sturdy at all. The cheese never comes out in a single thickness because the inner arm isn't held in place at all. I bought it hoping it was as handy as it looked, but it was a terrible waste of money.

This is a great cheese slicer for burgers, sandwiches and more. The thinnest setting may produce too thick of slices for some applications. The more I've used it though the more I like it.

The only thing about these that i don't like is that the edge is not serrated, other than that they are perfect. Oh, and they are hand wash only if you want the edge to last, but any decent knife is hand wash only anyway so nothing new there. Note to KitchenAid: I hated the impossible to open hard shrink wrapped plastic box and sliced my finger open, not on the knives inside, but the sharp edge on the plastic trying to get the knives out. There has got to be a better way.

EVERYONE IN MY FAMILY REALLY LIKE THESE KNIVES. THE POINTED EDGE MAKES THESE KNIEVES VERY DURABLE. THERE NOT TO LONG AND THE HANDLES FIT NICELY IN YOUR HAND. BE CAREFUL FOR THEY SHARP. WASH IN THE DISHWASHER AND CAME OUT BEAUTIFUL. VERY SATISFIED.

The knives are very nice, I was actually surprised at how sharp they were right out of the box. They are well priced for what they are. Unfortunately I decided to test my luck and put them in the dishwasher once, I was shocked at how many rust spots appeared just after the first use. Totally my fault, as it says not to put them in the dishwasherbut just wanted to leave a review about it. Do not bother with the dishwasher :P

When I soak these knives along with other steak or paring knives in soapy water, these start to show rust spots fairly easily, while my other knives rarely do that. I'm not sure if it's due to the quality/composition of the stainless steel (chromium content), or if is because my other knives have a more polished finish on them. Still, this is a decent low-cost set for occasional utility use.

Calphalon Katana Cutlery 6-Inch Chef's KnifeMy wife bought me this knife a few weeks ago and gave it to me for an early Christmas present. I use it everyday as MY ONLY KNIFE at work. It had held up as good as the day that I bought it. The "China" printed on the side opposite of the Katana lable did throw me off at first but this is true Japanese steel. I breakdown tenderloins, fish, chicken, calimari, and all various vegetables. Potatoes don't stick, cheese doesn't stick. I'd still pick a damascus Shun, Ginsu, or Kyocera over this, but the whole set is beautiful and affordable. I would recommend this for ANY CHEF. This knife has an excellent feel in the hand. The handle flows from the blade like a piece of art. I fell in love with Japanese steel ever since I saw Kill Bill, and whenever I use this knife I feel like a Samurai. The blade is beautiful and holds a an edge the is like non other. I bought this knife for my girlfriend (now wife) 6 years ago and it has been her daily kitchen knife since then. It has seen a lot of abuse since then and it still going strong. The only noticeable wear can be seen where the black part of the handle meets the blade. It has slightly separated, but is only noticeable when you really look at it. Other than that the blade is in need of a good professional sharpening. I am slightly amazed at how well it has lasts considering that my wife routinely leaves it submerged in water in the sink, stores it in a cluttered drawer, and has used it consistently for so many years. Definitely worth $50.

Norpro 18 Inch Aluminum Magnetic Knife BarI was a bit hesitant to order this after reading some reviews that said it was hard to install properly/evenly. I had visions of a wobbly knife rack, but decided to order it anyway.

Well, here's how NOT to have a wobbly knife rack (and it's Norpro's fault for not including any instructions whatsoever): the black plastic parts at each end which eventually hold the screws, COME OUT! Yes, they slide out from the back of the bar. So what you should do is remove those plastic end pieces, measure the correct distance and put the screws into the wall, then slide those plastic pieces around the screws, and snap the magnetic bar back on.

That's what I wound up doing, and the bar is perfectly mounted on the wallnot at all wobbly or loose.

The product itself is nice, heavy quality, and a good length. Totally happy with it, and would buy it again.

The knife holder is very nice. It works well, tension is just about perfect for keeping the knives secure and not being too difficult to pull off. Looks good, and unlike the other reviewers i found the wall anchors and screws to be perfectly capable. Good buy.

I received my order about an hour ago, it is hanging and full of knives, and I love it. We had one similar to this years ago and I only thought about not having it when I moved into a tiny apartment. Because I read through the reviews I was able to hang it right in a couple of minutes, The black end caps come off to make mounting it to the wall a snap.

The problem with the mounting system is that it's too easy for the endcaps to slip off of the screws. Instead of the screws going completely through the endcaps (or the bar itself, for that matter), the endcaps slide onto the screws. Basically this means that you have to mount one endcap to the wall, tighten it, slide the bar over the endcap, and then slide the remaining endcap both into the bar and over the other screw (meaning you can't tighten the second screw). Unless you get them exactly right, the bar has about 1/4 inch of play and slides back and forth, and because the endcaps are not particularly tight, this means that pushing one end can push the opposite endcap off the screw. I was tempted to drill holes through the bar and use some very long screws with heads that I could make flush with the surface. This was a little more work than I wanted today, though.

And yes, the mounting hardware is inadequate. They provided the weirdest, most useless wall anchors I've ever seen. They're not tapered, so they can fall into the wall quite easily if your drilled hole is even slightly too large. Even after using my own screws and anchors, I was uncomfortable with the amount of movement, so I hot-glued the entire thing to the wall; that won't keep it from falling, but it did reduce the wiggling.

It holds knives perfectly, but Norpro should come up with a different mounting solution. I took off 2 stars for the poor mounting solution and hardware.

Bron Original Stainless Steel Mandolin SlicerI have used many different slicers (V-type, diagonal) and this stainless steel Bron which I also own is my favorite by far. The Borner V slicer I own does not have legs and is thus unstable, it is okay for quick non-uniform shredding and slicing. This model has it's own legs so your two hands can focus on the cutting. If you simply pay attention to where the blades are (put the cell phone down), you shouldn't cut yourself. It has a sliding guard for the food to rest in which attaches to the mandoline (which in the picture of the item is shown attached upside-down) and I believe to be safer than the free floating guards of the others. One plus of the steel construction is absolutely true uniform slices which are produced, which has not been experienced with plastic slicers. If you have the money, it is a great investment that should last you your lifetime.

Realy happy with the perfomance of this mandoline so far. Had it for about 2 weeks now and it is way better than the last mandoline I owned. Of course it was a bit more expensive than the last one but well worth it to me. I saw one in local store at nearly double the price ($280.00) so $150.00 was a great deal.

The safety gaurd is easy to use and solid stainless construction. The last one I owned had a cheap plastic gaurd and it was not guided on rails like this one. The guided safety gaurd prevents slipping when cutting hard root vegetables and damaging the blade (or myself).

The blades for this one are all self contained on the madonline and rotate and lock into position. The straight blade is very sharp so be sure to raise the upper sliding surface above the blade to avoid cutting yourself when haddling/storing the item.

Storage Really happy that all of the blades and the gaurd can store together on the machine. It looks good left out in the open as well. It hangs a little funny off the rack when hung by the support leg since it swivels out, but I may drill a hole near the top to get it to hang straight up and down.

Be sure to read and understand the instruction booklet provided with it.

After much research this was my first choice until actually using the de Buyer dicing mandoline form William and Sonoma. I knew I wanted a quality and versatile mandoline that would last for years to come as well as do the job with consistent results. I've used two other mandolines, the OXO mandoline and de Buyer dicing mandoline, this is the only one that will give consistent slicing thickness at 1mm or less thickness between slices as well as from one end to the other end of the slice (where most failed continually)

It's not made clear on amazon.com but this particular Bron mandoline come with the 10mm and 3mm julienne blades. 2mm blades would be nice sometimes but cutting 3mm x 1mm yields a similar cut that is nice in its own right. You can always purchase the blade set with the 2mm and (8mm / 4.5mm) blades separately. This brings me to a fantastic attribute to this mandoline. If you somehow break something you can purchase every single part separately!

The Good and great: It cuts perfectly at any thickness. The blades are super sharp. The guard a bit odd at first compared to the deBuyer but in the end superior in my opinion as the guard really transmits pushing power and isn't a hindrance at all. Blades are riveted in for strength. Its stainless steel where it counts. It doesn't need a non stick surface for the food to slide down because the polished SS is slicker than anything else. Julienne blades are fixed to the mandoline. All one piece so no cheap plastic blade holders to fall off as in the de Buyer dicing model. Separate blades fro crinkle and straight. Collapsible feet that fold neatly out of sight. It looks beautiful leaned against the wall on your countertop!

The slightly less fortunate: The rubber on the feet slide more on some countertops than other models (either hold at the cross bar on the legs or sit on large wood cutting board) The guard doesn't work for the crinkle blade (buy the Microplane Cut-Resistant Glove for $10-15). Only comes with two julienne blades.

Nothing is perfect generally but I do with the guard worked for the crinkle blade. I would have paid the extra for the additional SS required but the quality of the product out weights the few negative things.

In the end if you are looking to spend more than fifty bucks on a mandoline spend the extra and get this. You will be able to give it to your grand kids some day!

First of all, I want to say that my Bron mandoline came razor sharp out of the box. Anyone that says that their's is dull must have gotten a defective unit, or else they have it set up backwards, but I don't think that anyone would do that. Those who say it's unsteady must definitely have it set up wrong, because the Bron mandoline is very steady and heavy duty, so that you can concentrate on cutting instead of having to hold it with one hand like most of the cheaper ones.

Mine is sharp enough to cut sweet potatoes into thin slices. But, this is not the kind of mandoline to use on tomatoes. A V blade mandoline is better for that. I hate mandolines that you have to hold with one hand, and the v blade mandolines I've used in the past were a pain to use compared with this one. I use a chef's knife to cut tomatoes with, and if it is sharp enough you can cut paper thin slices of even the ripest tomatoes. There are dedicated tomato slicers that don't cost much more than this mandoline if you really need something to cut tomatoes with.

I would recommend getting a braided stainless steel or kevlar butcher's glove to protect your fingers and hand. The first time I used my mandoline, I knicked my finger while cutting a cucumber. At first, I saw no blood, but a few minutes later the wound started bleeding profusely, and I started to use the guard when the vegetable gets down to a couple of inches. You can't really use the guard until the vegetable is that small as the handle of the guard pivots on a hinge and a large piece just will not fit. You could cut the vegetable into smaller pieces and then use the guard, but I think that kind of defeats the purpose of saving time and getting uniform slices by using a mandoline like this one.

I watched Jacques Pepin use this same mandoline on "Julia & Jacques Cooking At Home" and learned to use the palm of your hand to hold the vegetable down, and I cut 5 pounds of potatoes into thin slices in less than 5 minutes with no guard, and better yet, no cuts. You just have to slow down on the last couple of cuts on each vegetable. You should take it slow at first and then go faster as you develop your technique, kind of like when using a knife.

You can make juliennes of 3 and 10 mm with the blades that come with the straight cutting blade. You could always use the straight blade to get the proper thickness, and then julienne by hand if you need other thicknesses than those. There's also another size of julienne blades that you can find online. There is a ruffled blade as well, that can make waffle cuts and the like. Now I don't use that blade as much, but it's fun to make homemade waffle fries for people and then they always want to know how it's done. There are videos on you-tube on how to set up and use this fine mandoline. The video from Bron-Coucke even shows basic maintenance for the mandoline, including sharpening the straight blade on a stone. I highly recommend watching that video before using the mandoline, and I wish that I had. You can even buy spare parts for it if you do an internet search.

I have to say again, that anybody whose Bron mandoline is dull, is defective and should return it if they can, because mine and almost all of the other ones purchased are very sharp and very steady. If you want to cut vegetables and fruits (but not tomatoes) quickly and uniformly, then the Bron-Coucke mandoline will do the job very efficiently, and for a very long time.

This mandoline is a sturdy and well-made tool, excellent for making even and precise slices, shoestring potatoes (pommes allumettes), waffle-cut potatoes, ordinary French fries, and so on. I have had mine for about 15 years, and it works like new.

The main problem with it is that it's expensive. There are inexpensive plastic slicer/shredders available, such as Benriner (often sold in Japanese and Korean grocery stores), which work just as well. In fact, they're actually better for very fine slices and shredding. If you only want to make French fries, you're probably better off getting a French-fry cutter, which is faster, but it's hard to get blades fine enough for true shoestrings.

The Benriner plus a French-fry cutter together will cost about half as much as the mandoline, and work as well or better; of course, they are nowhere near as heavy-duty, but that won't matter for most home users.

The Bron mandoline has a couple of minor disadvantages. On older models, the feet would scratch countertops, but I believe this has been fixed now. Although most parts are stainless, the rivets and screws do rust a little; this has not been a problem.

The pusher does not work very well. On the other hand, this is a dangerous tool used without the pusher -it produces especially ugly cuts if you're julienning. My solution is to use a cut-resistant fillet glove (also good for the Benriner). This gives you far better control and thus less waste.

This is a decent quality silverware set. I was a bit disappointed as the forks & spoons were a bit flatter than I realized. But heck, they hold food and function like forks and spoons are supposed to. They seem very durable though I haven't had them a long time yet.

J.A. Henckels Four Star 18-Piece Block SetI was perplexed when I saw Twin Four Star, as I'd never heard of such a beast. I went to the Zwilling website to discover, there was no such series as a Twin Four Star There's a Twin series with several product lines and there's a Four Star series.

My husband then suggested that I look up the model number to see what other site's listed. Sure enough, when you plop the model number into a search engine, you get a listing corresponding to the FOUR STAR series along with the prices all upwards of $400.

So, to my dismay when these were listed @ $218, I jumped on it. I'd carelessly lost one of ours from our current FOUR STAR block set (only 9 pieces) and to replace it would have cost us $60. So for $218 to have 16 more knives was too good to pass up.

Needless to say that I love these knives, which is why I was on here trying to replace the one I'd thrown away.

PS, We bought our original set while we were in Germany. What we were told by the knife guy (assuming he knows what he's talking about) is that the only difference between the FIVE Star and FOUR STAR series is the handle.

Update: I've received my knives and I have a mixed review. The knife sharpener is not the same one I received with my first Four Star set. It's of a lesser quality, and a bit shorter. The steak knives leave much to be desired as well. The blade may be good, but the handles look cheap. I compared the other knives to these and they are exactly the same, so no complaints there. The only other difference was the block; the Henckel logo was stamped, as opposed to a nicer metal doodad.

When I saw these on sale, I regretted buying my in-laws the 20-piece Calphalon set only days before (on sale for $200). But after my experience with the steak "Banquet" knives, I'm happy I bought them the Calphalon set instead.

If I paid a cent over $219, I'd be upset, give it 3 stars, and return the set for a lesser count. But, at that price, the set was a great deal.

Hello: To begin with, this is my first complete set of decent knives. I have been using the Henckels gourmet series steak knives, cleaver and chef's knives brought individually, though. The set is definately cheaper than buying the knives individually(I paid 219 shipped). Hence no complaints there.

The knives from the Four II series are good enough even though I like the pro or the 5 series better (in looks). My biggest complaint with this set is the cheapo steak knives that they have included with the set. These are the Banquet series knives with terribly cheap looking handles. The steel seems reasonable (a little flimsier than the gourmet series if you ask me). I wish they had included the four star steak knives to make this a perfect set at the price. I would definately not have paid 400 bucks for this set (which it regularly sells for), but 219 is OK.

All in all, a good knives set but you will need to spend extra on steak knives ($100 for 8 gourmet series) and might try to ebay the banquet steak knives that came with this set.

I purchased this set at a bargain price of $218. I've used it for over a year and am pleased with my purchase. My knife skills are probably average, so I find it helpful to have a large set. I mostly use the large chef's knife. I've added to the set, finding Four Star paring knives at TJ Maxx and Tuesday Morning. I just bought a Chef's Choice electric sharpener and find that keeping my knives very sharp speeds me up in the kitchen and is helping me produce more uniform slicing results. Would recommend without hesitation. I've also used the Five Star knives. Other than the handle shape, I notice no difference in performance.

Progressive International Reversible Flexible Chopping Mat, Set of 3I have a large old butcher block in the center of my kitchen. I like using the flexible cutting mats so I can just remove those and wash them, rather than having to wash the block itself in between a variety of ingredients. I recently bought a pack of some at Bed Bath and Beyond and they were basically useless. My knives are good quality and they'd cut right through the plastic. So, I went on a quest for some high quality ones and these so far are amazing. Very sturdy, but still bendable enough to easily move chopped things and dump them into a pan.

My mom turned me on to this style of cutting board years ago and I've never used anything else. But these are both sturdier than most and certainly more artfully colored...and if something makes you smile when cutting an onion, more power to ya.

The difference in using these as opposed to a glass or wood board is that after you chop your veggies or whatever you may use them for, you simply pick up the entire cutting board and bend it over the pot (these are flexible so it creates a curved "tube" they slide down without spillage when bent) so that all the pieces fall easily into the pot without you ever needing to touch them or have them fall onto the counter away from the pot.

Too, unlike a glass or hard cutting board, this will not dull your knives when chopping...and unlike a wood board, these will never harbor any bacteria and take up no room in the dishwasher after use as they are so thin. They also take up no room in a cabinet.

They also work great for rolling out dough...just sprinkle with flour. No stick!

Some use the color coding to cut different things...meat on the red one, veggies on green etc...I just use them all for whatever and sanitize in the dishwasher later.

I bought these because earlier ones I had purchased ended up warping badly when I ran them through the dishwasher. These have held up well and so far, they still lie flat for use. They're a little on the stiff side for folding and pouring chopped items, that's the trade-off for them not warping in the dishwasher.

UPDATE! Within a few weeks of getting these mats, they started curling up on me when I ran them through the dishwasher. It's now January of 2013 so they LAST well, but the boogers are constantly wanting to curl up and that makes stuff you chop roll off, or roll to the center of the mat, according to which side you have up. I would NOT recommend them to a friend.

When it comes to cutting mats, I am hard to please. In the last four years I have tried the SiliconeZone 11-by-15-Inch Non-Skid Flexible Cutting Boards, as well as These and even This. These would have been the best choice if they arrived flat, but alas, they have a permanent curve to them.

Enter these reversible mats. These are a bit thicker than other ones I have tried. The color coding is nice, but not essential, since I change mats when switching between raw protein and other items. I also sanitize my mats between uses. They arrived flat and mostly stay flat during use. Like most plastic mats they curl when hot things are placed on them. They are also are slightly curled out of the dishwasher (no heated dry cycle, please) but the flatten out as they cool when stored flat.

Like all plastic mats, they are slippery and slide around the counter. Best to get some of this grippy shelf liner to put under the mat. A damp towel also works (a tip from a chef friend).

Since they are thicker than other mats I have tried, they aren't as flexible, but this is not an issue for me. They show some knife marks, but no signs of cutting through.

The Verdict: After using these mats daily for the past four months, I am happy with them and would purchase them again. Longevity has yet to be determined, so stay tuned for updates.

The slots for the steak knives are too close together so the handles (which are a tacky rubber) rub against one another, so you may accidentally pull out two knives when only trying to take one out. The bread knife is too serrated to the point where you destroy bread as opposed to cutting through it. They seem to hold an edge farily well for the price, and I like the size of the french knife. I've come to the realization that a knife set like this is really unnecessary for me personally. I'd rather buy the knives I need. This was a 10th Anniversary gift for work, so I'm glad I have it and thank work for it. It should last awhile if I keep them sharp (and safe).

I've had my set for many years. Other than the knife block having knicks from missed insertions, each and every knife is as good as it was since I got the set. Had them professionally sharpened for the first time last year.

I've only ever hand washed them, as instructed.

I can't say I have the same complaints as some of the other reviewers. The knife set is solid, and they knives are well balanced. I agree that the wood block isn't stellar, but it's not bad, and the knives don't crowd one another.

Maybe they've changed the set over time, but my handles aren't rubber, I'd say they're a ceramic composite. Hard to the touch and smooth.

The knives are all quite sharp, and I haven't had any issues with dulling yet, though I've only had it for 4 months. Time will tell if they also rust like other users report, however I would hazard a guess that some user's issues with rust are due to running the knives through the dishwasher. It says on the box, and in the description online that the dishwasher is not recommended to clean the knives, which is common for any higher quality cookware.

Everyone will have their own expectations, but personally I find myself happy with the set, and variety of knives provided.

I received this set as a gift for Christmas. I use some of them, don't really use others... I take care of them as per the instructions that came with them. I mean, they are knives so it's not rocket science, right???

Well, they are all rusting! The knives and the scissors. This is not a cheap set of knives and the blades are all rusting. I can't believe my eyes and it's embarrassing because when I have my mother over, she wonders why I'm not using them... Thinks her money went to waste but I don't want to embarrass her further by making her think she bought an inferior product. In the process now of trying to get a replacement to a completely different set because an entire set cannot be simply defective and must be poorly made. Wish I could get a refund and buy a completely different brand.
