I think $100 knives are hype so I took a chance on these more moderately priced knives and I believe it was worth it. They are the most expensive knives I have and now I have two of the utility knives (did give one away though), one of the boning knife, and one of the 15cm kitchen knife. You have to be careful with these knives because once they start cutting they will slide through, so you have to have good control and positioning or will cut yourself. The bad is that the one 17cm utility knife I'm using came with a not so perfect blade though it's still very sharp. It has like three tiny knicks that are hard to see. The blades are thinner then normal blades but I was hoping the material be harder then this. Another problem is that even after washing/drying the utility knife after every use there is a tiny spot on the blade with a small discoloration in the metal. I wonder if it was used for something it shouldn't have been used for or maybe the crafting was bad. The first utility knife didn't have the same problem and is slightly sharper than the imperfect one. Other reasons I chose these knives were their all metal construction and good grip. They are well weighted (on the light side). They have a sharp tinging echo to them when you hit the blade with a fingernail, different then most other knives. This makes me think the handle is hollow and maybe welded onto the blade. Comparatively, my mom has two dollar asian knives (extremely good knives) and those are almost as sharp as these and probably much easier to sharpen. So there is a question of value when I bought these but still think my purchase was well worth it. I hope they last a long time and I won't have to break out my sharpener. I have 15 dollar big company knives I bought at the local store and I thought I was rip-offed in terms of usability! btw the boning knife is thicker then the other two knives and none of the knives have the indentation pockets that reduces food stickage. I am in the food industry and have some great "old" Chicago knives. Some of my knives are over 50 years old and still going strong. They have great blades that sharpen easily and wear well.I bought a vacation home recently and one of the first thing I bought for the kitchen was this set of Chicago Cutlery. I was angry when I saw what Chicago Cutlery has done to the quality of their product. Poor grade thin steel blades that feel like toy knives with handles of cheap poor quality wood.
Stay away from these knives...do not reward them for destroying a great American Tradition.
They should be forced to give up the Name......I got this set for my mom for Christmas. She is a "cook", no t a chef, so the knives are fine for her purposes. Better than what she had. The biggest disappointment was the wood handles, I don't know if they were not treated or what, but right out of the box they were dry and rough. They felt like they would give you splinters. My mom put some oil on them and it helped, but had I seen the handles as they were before purchase, I probably would not have purchased them. Or at least made the handles more presentable myself. But I paid $25 for them and can't really complain too much.

Knives are easily steeled to bring edge back. The knives are very easily taken care of by washing off blade and drying. For those who think they must hve a different knife for every occasion then this will work fine. Having worked as a meat cutter since the 50's I can cut up any size beef with just the boning knife.( And a Hand Saw for the bones) It is nice to have a 12 inch blade for the Round Steaks, but can get by without.If you get splinters from the handles, then it is obivious you are unaware how to take care of wood. I have knives from the 50's never one splinter ...of coure I have never washed a knife with a wooden handle in a dish washer either.
These can last a life time.

I had a drawer knive block before but it only held 7 knives-and now I realize was quite large. I had several extra knives just in drawer and was concerned someone might reach in drawer and get cut. So started search for knive holder that would fit in my drawer and hold more knives. Love this product. Similar size to my old one and holds twice as many knives. These LOOK great, but WORK poorly. The hinge point is not strong enough to keep the blades together even to cut cardboard. Then, after two weeks of light use (simply because they don't work for any real duty), the handle broke off. Ugh. Waste.This is the second pair for my mother. She loved her first pair, so when the spring metal broke, she wanted another pair. The first pair lasted about two years.These are some heavy duty kitchen shears! There is a spring that helps as you cut so your hand doesn't get fatigued. 1) From TV viewing, I was under the impression that when chopping an onion or tomato with a Santoku, the slices wouldn't stick. NOT. Basically, as others have said in reviews of other Santokus, it's -no more, no less a chef's knife.2) Having said that, this knife is SHARP. Love it. I would buy this brand again (when you come right down to it, Henkels is overrated. Ditto Wusthof).
3) Well balanced & nice fit to my hand (tho prob too small for an extra large hand). I like it much better than our classical (huge) chef's knife as it's easier to use.
4) Attractive "traditional" appearance
Overall? Major bang for buck. I will try Victorinox again (btw, this knife is made in Solingen, Germany).Beware of the odor that the wooden handle has. It's a shame, because the blade cuts beautifully and it sits well in the hand. Maybe I will re-order with plastic handle.

This Japanese knife is fantastic. It is sturdy but lightweight. Easy to hold, it cuts like you cannot believe. We have always had Henkel and Wustof knives and thought they were good. Sharp and doesn't turn my lettuce brown. Easy to wash and hasn't dulled yet. I'd recommend it to anybody thinking about it.I had a cheap lettuce knife from the grocery store which broke. I only bought this knife so my salad lettuce wouldn't brown. What I didn't expect was this: the blad is very wide, so scooping the lettuce into a container is ultra fast. One of my Marine veteran friends lost his right hand, and when he and his wife visited this summer, he showed me this knife when I took them out for steak. While he re-iterated the knife's virtues, which are listed in the description, his wife seemed just as happy that she didn't have to cut his steak, that it fit in any purse or pocket and that it was easily cleaned by hand or in the dishwasher.So I bought one and sent it to my brother, who'd also lost his right hand. A few months later, they visited, and I took them to Golden Corral, where he delighted in showing me how easily he could cut any food we'd gotten. He even sliced a cherry tomato into quarters very easily with this knife, and they both told me that he'd reached a new level of independence. My brother prefers a Kershaw leach at work (as a farmer), but he flatly refused to use any other knife for dining while he was here.
Fortunately, I've got a lot of veteran friends who visit occasionally. Unfortunately, some of them are now one-handed. Fortunately, I bought a second Maddox rocker knife to keep at my house for their visits. They (and their wives or husbands) have convinced me that this knife is worth every penny and has made a dramatic improvement in their lives.The Maddox knife fits the bill for my husband who has the use of only one hand due to a stroke. We've bought rocker knives in the past but he couldnt generate enough down-force with them to cut a steak. This knife fixed that problem. He can now cut his own food without help which makes him feel so much more independent. I ended up buying another one and now hubby wants a third.The knife is well made, very sturdy and quite sharp. You can get a good grip on it and it doesn't require much wrist strength to use. The "sheath" is not what I call a sheath. It only covers one side of the knife. Carrying it in a pocket to and from a restaurant leaves it subject to getting dirty and if you don't clean it at the restaurant, so's your pocket. Carrying it out of your pocket gets you more notice than I want from those who see the blade exposed.

Kuhn Rikon 11-1/2-Inch Serving Knife, Red
This is one versatile piece of cutlery. I appreciate the sturdiness of it, which makes it nice for handling a lasagna or other 'heavy' casserole. I originally bought it to slice and serve desserts, and it works perfectly for that purpose. I didn't expect to use it as often as I do, though. Being able to slice a dish, then flip it over and serve with it, is very convenient, and the cutting edge is sharp enough to make clean slice without having to saw through you food. This knife is one of Zwilling Henckel's updated generation, with an arched (or shortened) bolster. The shape of bolster and handle makes it very comfortable to use a traditional "pinch grip" with the the thumb and index finger gripping the blade heel. Because the bolster is shortened, the entire length of blade is accessible and easy to sharpen from front to back.The blade shape on the updated Pro series Chef's knives is fairly distinctive; being wide almost all the way from heel to tip, with a less pronounced point... the blade tip seeming to ride higher than usual. The result is a more pronounced curve at the front third of the blade, with a long nearly straight back half. The back half of the blade, rather than angling slightly upward from the heel toward the tip as in most other chef's knives, instead runs nearly parallel to the spine for several inches before finally curving upward toward the tip. Because the overall blade geometry is wider/taller than many traditional chef's knives, someone with large hands may find it gives them extra space they need. The weight and heft of the knife feels very good, substantial but not too heavy. Fit and finish were superb, and it came out of the box razor sharp.
Although I liked the knife, in the end I returned it and purchased a more traditionally shaped Wusthof Classic 10-inch Chef's. The width of the Pro's blade bothered me somewhat and I decided I preferred a more pointed shape and less width toward the front of the blade (I'd like to have kept it but as an amateur I can only justify keeping one 10-inch chef's knife). Despite my own preferences, it's a good knife, and the blade shape and width may suit some much more than it did me. Kudos to Henckels for the new shortened arched bolster... very comfortable and usable.
