Bunmei 1802/180 - 7 inch Usuba KnifeI recently began working in a Sushi Bar, where I was required to invest in my own knives. I purchased this Bunmei Usuba Knife and have found it exceeded my expectations. The blade is constantly exposed to moisture from fish, vegetables, fruit, and cleaning, and is rust free. It's easy to care for, and holds a great edge.

I use this usuba bocho for chopping all manner of things, from fish, veggies, etc, and I also use to to slice and dice. It cuts effortlessly through most things and the grip is comfortable. As a bonus it arrived with a mean factory edge! I didn't even have to pre-sharpen it. Highly recommended for the price (I paid $77.99).

I'm a professional chef, and just picked up this knife. When i opened the box, i noticed there was almost no edge on it. I think the back of the knife was actually sharper. I do all my own sharpening but after a few swipes on the stones, i noticed the blade is not only bent, it has a "wave" to the edge. Making it impossible to sharpen. it's a useless knife without having it reforged. if you want good japanese steel, stick with shun, i've never had any problems out of them. the only thing good going for this knife, is it's actually a very nice mix of steel with just the right about of carbon so that it isn't too hard or too soft. To bad the manufacturing of it is horrible.

I used whetstone 5 hours but still blade was not sharp enough.

this knife quality is home cooking level not for professional.

my head chef said that shun pro is only export item the company does not sell in japan because japanese chef does not pay for this quality.

Amazing! This knife is one one the best I've bought, perfectly balanced and extremely Sharp! A must buy but get while you can because it is a discontinued Shun product.

This is a very amazing knife. It's design purpose was for fish but I enjoy using it to peal tomatoes and other fruit. The weight, length and balance of this knife make it a must have for the serious cook. Like all good knifed, this is a lifetime investment.

This set is the biggest rip off I've every experienced when dealing with a company. I'm out nearly $400 dollars. Just two people using the set for approximately one year. A fine set if you like throwing away your money.

My wife and I spent over $300 on a full set of the Ivory Colored set. They do look and feel great, but unfortunately they will no hold up to very light everday usage. Even the serving pieces will crack.

We now have 9 pieces that have cracked outsides after fairly light usage. I contacted customer service and this is the response I received:

I can understand your frustration, but at this time there is nothing we can do. The set you purchased is not a Laguiole set so it is comparing apples to oranges in terms of the pricing and quality of what you had purchased.

My response is actually it is not Apples to Oranges, I paid almost $400, so how exactly is that nothing. BTW, thanks for nothing, YOU'VE LOST A CUSTOMER FOR LIFE. I'd even be surprised if you leave my very negative experience and review on your site, but it shall remain on Amazon since you have no control over here!

I also wanted to add, that I will soon be posting pictures of the 9 items that have already cracked. In addition to Cracking, some of the items are showing rust and on one the metal ornament on the handle fell off.

These are not full tang, meaning they metal from the utensil stops as the plastic part. This means that in addition, to cracking and rusting; you can expect all your utensils to eventually start wobbling.

I had different expectations than the other reviewer. I bought a set of 12 place settings and serving pieces two years ago but I use them only occasionally. These pieces look gorgeous on the table and feel sturdy in the hand. The knives are nice and sharp and cut meat easily. For this reason I'm back to buy more place settings for a buffet.

Because of the wear and tear that daily use wreaks on tableware, I choose not to use resin as my everyday set. We tried it years ago with a DuBost set from Sur La Table with mixed results.

The Comptoire set doesn't have a full tang and probably will eventually wobble. For this reason I hand wash them we have other resin Laguiole cutlery and have noticed that over the years even they don't stand up to the dishwasher for a sustained period of time. We've had not cracking, chipping or metal erosion at this point. They've worked well for us.

Sure you can buy grilling tools through some of the high end chef's tool websights but they mostly come in sets and cost more than some grills. This LamsonSharp turner is a bit on the high priced side but it is well made and functional. The finish on the handle is a bit on the rough side and the end required some sanding and finishing in order to smooth it up a bit.It is made from quality dense rosewood though and nice and long to keep you clear of the heat. The real workmanship is in the forged mirror finished stainless steel business end. Nicely made, tapered to a feather edge and large and rigid enough to flip two big burgers at once or a 24 ounce T-bone with no problem. No silly slots, cutting edges, bottle openers or other useless frills. Just a high quality heavy duty commercial grade tool for the grill, plain and simple. Looks like it should last a lifetime or at least until your brother-in law borrows it.

Sage 12 by 18-Inch Pizza Peel, NaturalI got this peel a few months ago and have used it a number of times. I was initially attracted to it because of the FSC certification and the size but really like how thin it is. When the pizza is done it slides under without shaking off any of the toppings. I will be getting one of the cutting boards soon.

You could probably find something cheaper but this pizza peel is very nice and does the job perfectly. I use it for loaves of home-made bread, sprinkling it with cornmeal so the dough slides right off leaving almost no sticky residue. It only needs a wipe with a damp paper towel for cleaning.

I would definitely not buy this again! It's a nice enough peel but I did not think this one through properly at all. 10" is too small unless you are making little mini pizzas or flat breads. Overall quality of the peel is good; it is very sturdy & feels like it will last a very long time.

I purchase this peel along with a pizza stone and found both a bit on the pricey side but wanted to give the whole thing a try. Have only made pizze once since receiving them and spread out the pizza dough on the peel and then added the toppings. When I went to slide it off on to the pizza stone (that was preheating in the oven), it was sticking to the peel and spilled sauce and toppings onto the stone. I did use flour on the peel before stretching out the dough. I think next time I will try making the pizza directly on the stone without preheating it and hope it doesn't crack. The directions that came with the stone recommend leaving it in the oven and preheating, but a few reviewers did not preheat and made the pizza directly on the stone, using the peel just to take it out of the over. The 14x23 size is a bit large for what I normally need, but will be fine. Any suggestions, please feel free to comment.

Somewhere between a chef's knife and paring knife in size and shape and multifunctional. We reach for this one when in doubt about what knife to use. The longer version is better for slicing big roasts, bread loaves, etc. but this is perfect for working with fruits, veggies and meat portions. So well priced in comparison to similar knives.

I recently bought this knife along with some bigger, or longer Santokus. If you have never used a Santoku, I highly recommend them over any paring knife for smaller jobs, and the larger ones for just about anything else. Their design is perfect for either chopping, dicing, or doing just about anything else with your various herbs and veggies that comprises the greatest amount of work you do with a knife in any kitchen. And, the cleaver like design makes it a fairly efficient chopper for anything that requires that kind of muscle. The larger Santokus can cut any roast or piece of meet down to size.

At 4 inches, this Oxo model is just about the smallest Santoku you will find on Amazon. But size certainly hasn't come at the disadvantage of strength and quality. This knife blade is a thick as they come full tang design that holds a fine shaving worthy edge easily and quickly with just a hand held sharpener. And at a full 7/8 of an inch diameter, its handle is as big, round and solid as any I have ever felt. It gives the user of this knife absolute command over any job of slicing or chopping that you may require of it. The quality of this knife is so fine that you may find yourself using it for every job in the kitchen that you would need a knife for. I particularly like its 4 inch blade that is much more versatile than a 6 inch, or even the 5 inch model. If you do a lot of cooking with fresh ingredients that need slicing and dicing, than you already know the advantages of a knife that is just right in its design, length, and balance. This knife is superior in all three of those categories. The only thing I may mention as to recommending this knife is that if you are someone with very small hands, you may find the handle a little hard to grip, or comfy. It really is a very solid handle that most people with average to large hands will find a pleasure to use.

In conclusion, although their are many Santoku style knives being offered on Amazon in sets, this is the best one that I own that came alone. I have three other Santokus of different sizes, and this one is not only my favorite but most versatile as well. I highly recommend it for your very own gourmet kitchen...

This product does all it claims. I have arthritis in my hands and usually find it difficult to chop veggies, etc. This knife makes chopping quick and easy. With a gentle rocking motion of the blade, preparing a salad is no longer a "big deal."

As long as a knife is sharp and has a good feel, I'm satisfied. I've never felt that a particular knife was my "favorite." But that's changed with the OXO Good Grips 4-Inch Mini Santoku Knife.

It's razor-sharp, has those indentations that help things not stick to it, a very good rocking curve on the blade, and a grippy handle with a very pleasing shape. But the best part is the proportionately very wide blade (1 5/8"), which gives you great control. You can cut a truly straight line through anything, for example an onion or tomato or salami, where a narrower knife, say a paring knife, might veer off. The Japanese-style blade is also thinner and has a more acute angle than a conventional knife, which allows you to cut very thin slices.

great for cutting steak. i use it to slice avocados, tomatoes, oranges as well. i've had mines for 3 years now and they still cut very well. i also like how they have a round tip compared to the regular sharp/pointy ends which sometimes poke your hands or fingers if you're not careful.

i purchased these knives a while ago and i have never been happier with a purchase. they glide through meat, veggies, cheese, whatever (oh yeah! and tomatoes, no matter how ripe). most serated knives rip and tear but these are without a doubt the best. you can't go wrong for the price. even though they are catagorized as steak knives, you will find that they serve as utility knives as well. you gotta get a set of these!!!

These are two very good knives for the money. A few strokes through a ceramic sharpener and the edges have a good sharp edge that smoothly slices tomatoes and tough meats. The stainless steel blades do not hold an edge as quite as long as a high quality carbide steel blade does, but these knives cost much less too. These knives work very well for meat and most vegetables. The knife handles are well shaped, I like them much better than any wooden knife handles I have.

The smaller partoku knife is handly for smaller items and for fine slicing. I haven't gotten used to using the larger santoku knife yet, I'm still used to using a chef's knife for larger items.

The plastic covers are great, they were an unexpected surprize! I've moved the larger cover to protect my favorite chef's knife.

That larger blade is awesome. Sharp and holds a edge well, but the handles are a bit small for my comfort. I can use them fine, but if I am chopping for 20 minutes it gets me. I am a guy, but I don't have "shaq hands" The little knife is my camping knife and it can do anything in a pinch. I dice raw potatoes with it (slowly, it's not made for that I know) I really like the cheap plastic sheaths. Makes them great to bring to remote BBQ. And for the price you won't cry if you leave one, but the quality you might... I love Chicago cutlery

Victorinox Cutlery 10-Inch Sandwich Knife, White Fibrox HandleI originally purchased one of these knives in 1962 while I was working as a professional chef, and used it commercially until 1970 when I tired of fighting with management over food quality.

For the next fifteen years, it received heavy usage around the home until we moved all of my professional cutlery disappeared while in transit with the moving company.

Basically, for twenty-four years this knife received almost everyday usage. It was never resharpened during this time and was either kept in a proper knife block or used only on a wooden cutting board. At the end of this period, I could easily remove a 1/16" slice from a very ripe tomato.

I recently discovered that this piece of cutlery was available on the internet and though disappointed that the "Rosewood" handle was no longer in production (Thanks NSF), and ordered a replacement.

While it has been my experience that a "factory edge" means that they at least tried to grind the blade, this is not the case with this blade. The 2" straight section nearest the handle will shave you as delivered, and the remaining 8" of "Waverly"edge is virtually surgically sharp.

DO NOT get stupid or careless with this knife!!!!!!!!!!!!!!!!!!

It cuts three ways DEEP, WIDE, and CONTINUOUSLY!!!!!!!!!!!!!

I have several of these choppers as my daughter needs her food chopped fine to be able to eat it. It can chop just about anything in just about no time. I've had one for 40 years and still use it with the many others I have. They do get dull with the chopping I do, but I use a knife sharpener and they are fine. These cutters are great. They chop up ground meat as small as you want. Particularly great for the meat in spaghetti sauce. One problem: Don't use them on Teflon. Otherwise, I strongly recommend them.

24-inch at $160? It does sound like a bargain. However like many things that's "on sale", it is for a reason.

I have just received this 24-inch model and I am not happy with it considering I have purchased the Boo's 18-inch "Walnut" model ($255) previously and it was up to my expectations.

Here's some facts.

First of all, the board is NOT shrink-wrapped (as it was with the 18-inch Walnut model which also had one pack of cream and instructions sealed inside together). This board comes in ONE piece of factory package (no extra outer box) with broken tapes and two thin slices of straps. Because it's not shrink-wrapped, the package has the finishing oil of the board leaking through all over (leaving the package oily and the block dry).

It has NO "Boos" logo engraved on the side of the board.

And most importantly, the block on the product page is NOT what I got. It is serious misrepresentation of the actual product! The one in the photo is nicely (and obviously) put together with evenly sized wood pieces. It gives you the impression as if the board is made out to be a 24x24 square at first with same-sized wood pieces and then sliced into a round block (even though it's not). The evenly distributed end grains was the reason that I made my purchase. However, the ACTUAL block that I have received was actually made with many much SMALLER pieces in VARIOUS sizes (very much like Catskill blocks but at what price?). There are (as I counted), 26 small pieces of wood in very different sizes along the single longest 24-diameter row of the board (just a bit more than the one in the photo with only 10 same-sized squares, right?)

And finally, this is an one-sided board. The bottom side has no polished edges. It is very sharp. (However the Boos' 18-inch WALNUT block is in fact two-sided despite one of the reviews saying otherwise).

With much disappointment, I am still keeping it. For one thing, Amazon does have something accurately described, it is indeed 53 pounds.
