Mercer Cutlery Genesis 4-Piece Forged Starter Set, Steel/BlackIf you are searching for fully forged, qualities knives on a budget, I highly recommend the Mercer Genesis series. I am a bit of a foodie and have used ceramic blades, Wustofs and Henkels in the past. On a functional level, these knives pair right next to those. Used in culinary schools, the blades are of top quality and the knives are well balanced in the hand. Some who I have shown my knives to have objected to the synthetic "soft" handle, but I think they were mostly just mad at the price I paid when they compared these to their much more costly German ones. Are they as pretty as a set of Global knives? No. But they are sharp, durable and won't break the bank. If you are looking for a show set, you might want to look elsewhere, but if you have some cutting to do, these knives should please.

Bought this as a gift for a friend for Christmas and he loved it. I'm a culinary student and I think my Mercer Genesis knives are great.

J.A. Henckels International Fine Edge Pro 13-Piece Knife Set with Block

J.A. Henckels International Fine Edge Pro 13-Piece Knife Set with BlockAfter using a friends set of Henckels, I thought I'd grab a set for myself. What I've discovered in my research is Henckels now makes some cheaper quality and cheaper priced knives as well as their high quality stuff. Fortunately, they have an easy way to identify which is which. The higher quality knives have the original "Twins" logo (looks like two little stick figures side by side) where the cheaper sets have just a single little stick figure man. They still make some very nice sets, this particular one isn't one of them. Just look for the twins and you'll get a much nicer set.

The short story:

Pay a little more money and buy Wusthof cutlery,

and get a lot more bang for the buck.

The long story:

J. A. Henckles make different lines of cutlery. Their

"International" line is lower quality and less expensive

than their top lines "Pro S" and "Five Star."

(The only difference between the "Pro S" and "Five Star"

is the handle. The "Pro S" has a full-tang riveted handle,

and the "Five Star" has a bigger, synthetic handle. Some

people claim the full-tang riveted handles have better

balance.)

Though, Henckels name is more well known than Wusthof

and they sell more knives to the general public, people

who have used the two brands, for the most part, agree

that Wusthof is the better knife. Also, Wusthof seems

to employ much better quality control than Henckels.

Henckels cuts corners when it comes to their sets.

Henckels supplies a relatively small, low grade

sharpening steel with their top line "Pro S" and

"Five Star" sets.

In their top line 18 piece sets, their steak

knives come from a lower line.

Henckels has a recommended retail price and a sale

price on their cutlery. Just about all vendors,

sell Henckels knives at the "sale" price. Henckels'

warranty department will only give you credit for

the sale price of their product, even if you pay

more, and have a receipt to prove it.

On the other, hand, Henckels warranty department is

generous when it comes to replacing old Henckels knives

damaged due to consumer misuse. I thought knives

completely submerged in salt-free water would

not corrode. I thought corrosion needed salt or

air. Wrong. My Henckels knives corroded even

though I just left them submerged in soapy water.

The most popular knife today is the Wusthof

Grand Prix, Santaku knife with a granton

edge. This is the knife used by Rachel Ray

and other chefs on the Food Network. "Granton"

means the knife has semi hollowed-out ovals on

its sides. Granton edges may provide a smoother

cut, with less drag. Vegetables may stick to

their sides less. But knives with granton

edges are not supposed to be sharpened at home.

Moreover, they have very little edge to sharpen

and so have much less life expectancy than an

Identical knife without a granton edge.

I have owned these knives for two weeks and they were everything they said they would be. I found them to be well balanced between blade and handle and the seraded edge on the steak knives made for easy slicing. Although not their most expensive set, I don't think the average user could tell the difference.

I've owned this set for over a year now with no real complaints. The knives have performed beyond my expectations. They keep an edge despite daily use and abuse.

If I could improve anything at all about the set it would be the steak knives. These are thinner than the rest of the knives but are more than adequate to the task.

My Wusthof knives have an easily-achieved, very sharp edge again. Since I was already comfortable using a steel, switching to a diamond steel was easy. Albeit, I do use the diamond steel more slowly, keeping my knife blade at the recommended angle, and I use it only when necessary. I still use my regular steel whenever I pick up a knife to do a cutting task. The only -minor -concern I have is that this diamond steel has a plastic handle that may not last for many years, although it seems sturdy.

Bottom line, this is a relatively inexpensive way to sharpen my knives without the damage that a bad electric sharpener can do. I'm pleased and would recommend using a diamond steel to anyone with expensive knives and concerns about keeping them sharp.

Guide Gear 6 Piece Stainless Cutlery SetI am by no means a chef or expert on knives. I use them on rare occasions for things like cutting open a fruit or opening a package. For this purpose. they work better than other knives I have used. I also like their coloring and design. I don't like the way they fit into the holder. The pictures show the knives all aligned an even with each other. The actual unit doesn't look like this, with the knife handles and different heights and up/down angles. I put my handles in upside down to minimize this. I don't consider this a major issue, so I gave 4 stars.

Bought this as a gift. When I opened it to make sure it was what I wanted, I was impressed with the quality of the knives. They do not seem cheap. I like the fact that they are all stainless steel knives. The only difference between this set and some of the higher priced ones, was that this one did not come with a set of steak knives. I did not use them however, so I don't know for sure how they will hold up. I bought them for my husband's nephew who is training to become a chef. They look very nice and he was excited to receive them.

This product is on clearance for a reason. Junk... I hate complaining, but the "knife set" came with the base busted. The worst "woodwork" I have ever seen. The stainless steel cap on top fell on the ground when I opened the package. There is an insert that flopped on the floor too... I could not have ordered a worse knife set. There are many options, this should not be one of yours. FYI, I used heavy duty caulk to reaffix everything. It looks terrible, but I wasn't going to pay for return shipping on a $20 item... What a joke. Grab the $30 Ginsu set instead!

Farberware Ceramic 3-Piece Set, Includes 3-Inch Paring Knife with Sheath and a PeelerI love the paring knife! The peeler, however, does not do the job. I have an old Farberware peeler and I expected the same quality, but this ceramic peeler is not good. It doesn't work both ways; you can only use it in one direction. Also, it is not sharp at all. It cuts little thin pieces at a time, so instead if five seconds it takes a minute to peel a carrot. They sell the paring knife without the peeler; I recommend buying that.

This set of ceramic knife and peeler is the perfect complement to the ceramic knives I already owned. Sharp and stylish, and the peeler was an unexpected delight (I knew the knife would be fabulous!). They do the job with half the effort of a regular knife or peeler!

I wondered why this knife was so cheap compared to other ceramic knives, but i bought it anyway. There is no issue with the build quality, i know how to use and take care of ceramic knives properly, so i have not damaged the blade yet. The problem is the cutting edge is just a sliver. You can seriously cut alot of stuff with such a small edge on the blade. Oh it's sharper than heck, but i want to be able to cut through a chicken strip in one slice, and this doesn't cut it, literally. Also Ceramic blades are supposed to prevent food from sticking to the blade, but i got lots of cheese stuck to this one.

I have wanted a ceramic knife for some time. I finally decided it was worth the splurge as I am cooking a huge meal for my relatives this weekend. This knife is really nice. It is extremely sharp and durable. I didn't stab anything terribly hard, but it performed the tasks I was doing very will. I plan to get a few different ceramic knives to replace my steel ones I have now.

This is a great set!!! Value priced and good quality. Be very careful as these knives are very sharp. The tips break fairly easy and cannot be used to pry with. Great paring knife, the only one I use now. Would purchase as gifts or for anyone who spends time in a kitchen.

J.A. Henckels International 3-Piece Paring Knife Set, Multicolored

J.A. Henckels International 3-Piece Paring Knife Set, MulticoloredSeveral years ago I bought the 4-pack set of these knives, manufactured by Zwilling-Henckels. I was so happy with them I bought some for others in my family. We use them almost daily, so I wanted to get another set. While looking around on the site, I noticed this 3-piece set which cost 1/2 as much as the 4-piece! What a deal I thought! The only knife missing was the red-handled one, which I use the least anyway. Unfortunately, I forgot to do my homework. Yes, these ARE Henckels knives but NOT the same Henckels knives I have and love. Henckels has two lines, the "premium" brand and the "value for the money" brand. The first set of knives I bought was the "premium" brand and this set from Henckels, International, is the "value for the money" brand. These knives are very similar to the first set I bought but they are not the same. The handles are slightly different, the blades are different sizes, the knives aren't as sharp, and I have already noticed some small rust stains on the blades, though I was able to scrub them off. These knives are ok for the price, but they aren't as good as the set from Zwilling-Henckels, which I would have given 5 stars.

09/14/09 Here it is, 5 years later, and I'm thinking of buying another set of Henckels paring knives. I will buy the Henckels Twingrip set of 4 rather than these, in spite of the higher price. (If you knew me, that fact would astound you!) If you are confused by the similar names for the two sets of knives, see if you can find a close-up picture. The better quality knives have two little 'men' on the blade, as opposed to one 'man' on the lower quality merchandise.

If you are wondering why I would consider buying yet another set of paring knives, it is for this reason: I find myself washing the dirty, yellow H. Twingrip knife over and over rather than reaching for my clean, yellow H. International blade!

These are *extremely* sharp, really high quality knives for the price. I have a really good, really expensive set of knives that I use for "specialty" tasks, but I find myself grabbing these little knives for my normal day-to-day use.

I also have the other inexpensive Henckels set, the one that includes these three knives plus a red-handled longer knife. It's not worth the extra money, in my view. That little red knife has a rounded tip, is serrated, and the only thing I ended up using it for was slicing sandwiches. For the money, this set of three knives is an outstanding value. I just bought another set to have a spare.

They cut sharp enough, it's just they're very light-weighted so they don't have the stability feeling which I think the only drawback if you expect something decent. Otherwise the price is right, you'll be happy with the well functioning colourful little knives!

Colorful handles stick out in the drawer. I find these paring knifes generally to be incredibly useful in food prep for everyday dinners and bag lunches for school/work.So they last about a eightteen months without sharpening even if you throw them in the dishwasher. However, I would never pay more than ten dollars for the set. These are NOT a replacement for your good knives that need to be sharpened and handwashed (which I use when preparing food where appearance and consistency of cut size is important). They are just a good extra set of paring knives the price of which allows you to abuse them and not feel guilty when you dispose of them down the line.

even though the description wrote they were made in Germany, they were actually made in China. These knives are light, easy to use. the blades looked like white color but are actually chrome like other knife. having them for a month or so, they have been worked well for me.

I couldn't find my tried and true Farberware peeler for a few days. I've had my Farberware peeler for about 8 years, recently the blade is dulling a bit, but it is a workhorse! The label had worn off a while back.

I couldn't find my peeler, and since I peel fruits/veggies daily, this was a big problem. I picked up the OXO Softworks Swivel peeler at the grocery store thinking it was the same as my one at home. Not so!

The OXO peeler has a much smaller swivel capacity. A small amount of swivel makes it difficult for the blade to rotate enough to peel something round, like an apple, peach, radish or even mango. My old peeler, the Farberware, has a blad with a greater swivel radius, making easier work for peeling fruits and veggies of various sizes.

I used the OXO immediately after buying it to peel an apple and it was very difficult. Despite being known for comfort, the OXO brand was very uncomfortable for me to use. Since the blade didn't rotate enough to peel the apple well, I was tryint to twist/turn the whole peeler, tweaking my wrist in the process.

The Farberware is quite comfortable to use, easy on the hands and wrist. The finger grips allow for easy holding. So if the OXO comfort is a big selling point, this product is still quite comfortable.

Thank goodness I found my old peeler shortly after! I'll be returning the OXO.

When I first tried it I was really disappointed. Then I realized that I hadn't removed the thin protective plastic that was covering the blade. Works great now.

I ordered two products from the "Nightshade series" (Tanto & Tai Pan) and was very diappointed. I tried to use it to cut paper. The edge was so dull that it tore the paper rather than cutting it. I realize it is plastic and will never match up to steel, but I did expect it to be a knife and actually have a cutting edge. When I called Cold Steel to complain the CSR I spoke to was no help. I explained that it couldn't cut paper and she said it wasn't meant to. I said when I buy a knife (even a plastic one) I expect it to cut things. She resonded that that it was not possible to get plastic sharp enough to cut things. I immediately took exception. From that point on she referred to the products as "not knives" but instead as "Personal Defense Items." I am dissapointed that no where in their literature is there a disclaimor that says "these are Personal Defense Items."

These products have no edge and very little durability. (I could break either with my bare hands without fear of injury). You would get better cutting results form a standard disposable plastic knife, like the kind used at picnics no exaggeration!

Cold Steel says they back only tested, quality products. My experience with this product line puts that claim in serious doubt.

send these knives in for "repair" and sharpening.

I did have to pay shipping to send the knives there,

and $8.00 to have knives shipped back. To my delight,

Cutco decided the knives were worn enough to be replaced

with brand new knives. This was a total of 9 knives that

were replaced. Cutco truly does stand by their product for

life.

I have other family members who have owned Henckels knives,

but Henckels didn't have the special edge that Cutco has on their

steak knives and many others. My family now owns Cutco, and can't

imagine having anything else. We are sold on Cutco!

Wusthof 5-in. Gourmet Sandwich Spreader.

Wusthof 5-in. Gourmet Sandwich Spreader.This Wusthof "spreader" combines a serrated bread knife with a spreader head. The knife edge side has serrated pointed teeth like a bread or tomato knife which makes it easier for me when I cut sandwiches, slice bagels, slice crusty rolls, and even slice tomatoes. The knife/spreader is just under 9 ½" long (from the tip of the blade to the end of the handle). The blade is both longer (just under 4 ¾") and the head of the knife is wider (just under 1 ¾" at its widest) than the spreader knife I use. There is just under 3 ¼" of serrations from the lower tip of the front of the knife going back to the handle. And the remaining edge is a straight knife blade that is a little over 1 ¾" long. Because this knife has no pointed tip, it takes just a bit of patience to carefully make that first opening in a bagel or roll before I can really begin slicing. Because this knife has sharp edges, use care if you have young kids helping to make sandwiches.

I prefer to put on spread using the non-serrated side of the knife but I'll have to keep the serrated side of the knife in mind when I put icing on things like cupcakes to put on fancy swirls.

This Wusthof's Gourmet knife has what I'll call a full half tang. Huh? I can see a full tang on top of the handle while the bottom of the handle has no exposed tang. I'm guessing this gives the knife strength and me control when cutting. I like the fit between the tang and the handle: there is no gap just like any better quality knife.

The instruction on the back of the blister package says they recommend hand washing the knife. Heck, it even recommends storing this knife in a knife block or basically treating the knife like it's a cutlery knife. So I wash this knife by hand and I use a knife guard to store this knife in my knife drawer.

PROS:

Combines a tomato/bread knife with a spreader so you can use one knife for making sandwiches or preparing your morning bagels.

A larger head means less scooping from a jar and fewer strokes to put on spread.

The longer blade means you can reach the bottom of most jars.

CONS

The wider head may make it difficult to get into some jar necks when compared with other spreaders.

If you look around, most sandwich spreaders are small, frumpy blades that are made for little more than buttering a muffin. Not this Wusthof, which includes its classic handle design along with a strong sharply serrated blade that flexes slightly. As usual, Amazon has the dimensions wrong. This knife measures 9.25 inches long and its blade is 2" wide. You're not cheated on handle length either; it's the same as other classic Wusthof knives. That means it can reach to the bottom of most jars with ease. If you've never had a spreader around the house, you're in for a treat. It's a tool you will use for the rest of your life, and one of these Wusthof spreaders will last that long. Don't leave them soaking in water nor submit them to the dishwasher; they clean quickly and easily, then wipe dry.

I purchased the Wusthof Gourmet block set and a few other Wusthof knives. I came across this sandwich spreader and it reminded me of when I used to work in a little deli in college so I purchased it. I have to say I use this for any spreading needs now, in place of using a butter knife. I have used it to spread butter, peanut butter, jellies, condiments, etc. It spreads better than a butter knife and the wider spreading area makes the job quicker. It is also serrated on one edge which allows for cutting toast etc. It is sharp enough on the serrated edge that I actually cut myself on it. I would recommend this to anyone who wants a new utensil for spreading that works better than a butter knife.

This little spreader makes spreading peanut butter, mayo etc so much easier and faster. The blade is short than a typical butter knife and certainly much wider so keeping the jam or whatever on the bread works very well. This certainly isn't a "need" item, but if you make a lot of sandwiches like we do in our household (peanut butter is food group for our boys) this little gadget will make life a little easier.

Totally Bamboo 20-7930 3-Piece Cutting Board SetI have a set of these cutting boards. However most boards need proper care. Never put them in the dishwasher. I clean mine with a qt size spray bottle with 1/2 teaspoon bleach in it. I spray the board then sprinkle my cheapest salt on the board and then scrub rinse with warm water and then dry well with a towel. After dry once a week I wipe them down with food grade mineral oil on a cloth wash cloth. Not to worry as they have mineral oil in every grocery store or drug store. This will keep all of your cutting boards in good shape. I use certain boards for meat and others for veggies. I write with a marker on the side so I am never confused which is which. They will last for years and years. I have a board that was my Great Grandmothers that I use for veggies only and it still is a good board. I also have a board that I use for making bread pizza dough an pastries. This set I use for fish and one for sandwiches, one for one meat. They say we should do this and that is why I bought this set. Thinking of getting a few more sets to give as gifts. Hope this helps everyone.

I had never used bamboo cooking boards...so I used it for the first time...and the wood started peeling off! I washed it...and it shed worse. So I did some investigation. You have to cure the wood with mineral oil. When I say have to...I actually mean HAVE TO. BEFORE USE and often for the first month. Monthly after that. Wood is better for knives, which is why I got them, but be prepared. Use the mineral oil on it....before you use it.

Follow up: Over a year later...

I've had these for over a year now. They are doing well and holding up well. The first month was a little bit of work...but you can tell when they are starting to dry out and need to be re-oiled, I don't find it to be very high maintenance. I researched and from what I discovered, mineral in the drugstore section is the same things as the expensive ones made for curing bamboo. So I buy the cheap stuff and it works just fine. Just be sure to not leave the board submersed in water(my daughter did that on accident and the board warped, after a couple months it dried out and flattened again), and wipe off the extra oil after curing it.

We bought these and were pretty excited to get them. We are always cutting fresh vegtables and fruit and ended using these daily for a few days. We loved the handles and strudiness. However, after washing them a few times, they began to crack and spilt. Then they even deformed so they didn't lay flat. We ended up having to return them. I do agree with another customer review that the smallest cutting board is too small to really do anything with also.

Best set on the market-money wise, space wise, using wise, they clean up nicely & stack in the corner out of the way but handy when I need them. Light weight unlike the other boards I have owned. I just love them!

First time I washed these boards they started to splinter and warp. After a few weeks they were so warped they became dangerous to use and then just split in half. I know how to take care of bamboo boards, these are clearly bad quality. I never put them in the dishwasher. Total waste of money.

Kiwi 8' Chef KnifeGood starter knives. Very sharp. Be sure not to put in the dishwasher or leave in water as the handles are not durable. I keep my handle oiled. The blade is thin but cuts beautifully. I have not had to sharpen it yet.

The Kiwi & Kom Kom brand knives from Thailand have become so popular worldwide that they are now being copied in China and are very hard to discern from the original Kiwi brand. This is part of the reason that this Bangkok based knife company has come out with another line of higher quality knives their newer Kom Kom brand. The Kom Kom knives are of higher standard and quality and are not readily available in retail stores outside of Thailand. Temple of Thai, USA imports these knives directly from the Kiwi and Kom Kom Company to America.

There are 2 levels of this particular model of knife, the #21 the Kom Kom brand, which is more expensive and of better quality and also the original Kiwi brand (the one being sold here) which is cheaper and also a good inexpensive, everyday knife. When compared side-by-side the quality of the both the wood and metal used is higher in the Kom Kom brand. The tang runs down about 80% of the handle in the Kom Kom model, compared to half tang with the Kiwi. There are 3 rivets in the Kom Kom handle compared to just 2 in the Kiwi brand #21. The Kom Kom brand is slightly heavier then the Kiwi. And the blade is stamped Kom Kom (as opposed to just simply Kiwi). Compare to 8" Thai Chefs Knife, #21 (Kom Kom).

As per the Kiwi & Kom Kom company these are differences in the 2 brands which they manufacture:

Kiwi

· Cheaper than the Kom-Kom brand knives

· Kiwi passes through fewer production processes compared to the Kom-Kom brand

· For those who like to sharpen their knife frequently, they may prefer the Kiwi brand

Kom Kom

· More expensive then the Kiwi brand knives

· It passes through more processes of production compared to the Kom-Kom brand

· It stays sharp longer if kept in a good condition, so the user does not need to sharpen frequently

In addition, the Kom Kom brand knives are packaged in a retail blister packages.

I was introduced to these knives by a roommate in college. They are amazing, and I recommend them to anyone and everyone who likes to cook. Seriously though, don't bother buying them online when you can go to your local Asian market and get them for $3.50 (really). I took a friend to the local market down the street today and he bought three varieties of the larger knives, and three of the smaller (paring) knives all for under $15. I came back and decided to see if they sell them online,... only to be dumbfounded by the price.

For the price this knife can't be beat. After three months of daily household use it still is holding an edge and has never been sharpened. It's cheaply made, very light and the handle is essentially a block of wood, but it cuts better than most every knife I've had and definitely stays sharper. I wish they made an upgraded version same blade, better handle.

It's cheap, yet sturdy and SHARP.

This is my "go to" knife when cooking at home. I also own Wusthof blades (& Cold Steel, & Randall, & Al Mar, & Ecos, & Tramontina, & .....), yet I find myself grabbing this knife from our magnetic knife rack when prepping food.

The thinness of the blade helps it ZIP through anything you're slicing, whether it be veggies, meat, or bread. It is NOT intended for crunching through bones. Get a heavy cleaver if that's your intended use.

I like the wide blade's ability to function as a scoop. Chop your stuff, scoop it up on the wide blade, dump it in the cooking pot.

Kiwi blades are made from fairly soft steel, so do not hold their edge for a long time. That being said, get a cheapie Wusthof knife sharpener for 20 bucks or so. A few passes through that sharpener, and your Kiwi knife is as good as new.

This knife has a wood handle with brass rivets. If you (as I) dump your knives in the dishwasher, the rivets will eventually loosen. No big deal....put the handle on a flat, sturdy surface (like a wood board), and WHACK both sides of the rivet with a hammer. No more looseness.

I've used my Kiwi 8" chef knife for years and years. Despite use/abuse (dishwasher cleaning), the handle is still in great shape. Should the wood handle eventually chip/split, the knife is cheap enough where you don't won't feel too bad just pitching it & getting a new one.

No, it doesn't have the Wusthof/Henckels "name prestige". That being said, this knife is excellent in the kitchen, and I highly recommend it. Easy to use, easy to clean, easy to sharpen. All that, and dirt cheap.

The problem I was solving was cutting large loaves of thick-crusted bread, for which the Wusthof 8" serrated-edge bread knife I already had just wasn't quite large enough it's best if the knife edge is at least 1.5 times longer than the loaf is wide. I wanted a knife with a full forged blade with bolster, the traditional pattern, as the stamped-sheet blades aren't quite as good, and I prefer to buy one good knife. Going to 9" was marginal and almost as expensive, so I opted for the full 10" blade. It works very well, and the 8" knife now gets little use.

These half moon knives are so easy to control and are very easy on the hands and arms. They aren't a new concept. It's ancient design is still as superior today as it was so many generations ago. My first was one that was given to me and had a whalebone handle and my second had a moose antler handle. This handle is really pretty and easy to hold, but I just have to make sure that nobody leaves it in water too long as I'm afraid the wood might swell up. It hasn't, but that's one thing i don't have to wonder about with the antler and bone handles. It arrived from Alaska very fast, well before the indicated date. I'm gonna choose more ulus from this company and order. You can't beat the design and look how great it looks.

This is a very attractive caddy, except...They show the utensils in the front of the caddy, as I would have arranged it, but they put the seam of the mesh down the front, which is very noticeable! I have to have mine turned with the napkin side out to hide the seam. Now the height of the napkins hide the cutlery. Careless construction.

The caddy is a one piece plastic unit with plastic mesh (Nylon) glued to the outside of it. On the one I received the mesh was seamed down the front, and had nylon fringes hanging out around the top and bottom where it was cut and frayed. A little care would have made this much more attractive!

We have plenty of counterspace but get tired of opening/closing the silverware drawer. This looks great on the granite countertop (a veined brown/tan) with maple cabinetry. The quality is fine and should hold up well. Wipe it off with a rag, no soaking. It works fine for a servic of 8.
