J.A. Henckels International Fine Edge Pro 13-Piece Knife Set with Block

J.A. Henckels International Fine Edge Pro 13-Piece Knife Set with BlockAfter using a friends set of Henckels, I thought I'd grab a set for myself. What I've discovered in my research is Henckels now makes some cheaper quality and cheaper priced knives as well as their high quality stuff. Fortunately, they have an easy way to identify which is which. The higher quality knives have the original "Twins" logo (looks like two little stick figures side by side) where the cheaper sets have just a single little stick figure man. They still make some very nice sets, this particular one isn't one of them. Just look for the twins and you'll get a much nicer set.

The short story:

Pay a little more money and buy Wusthof cutlery,

and get a lot more bang for the buck.

The long story:

J. A. Henckles make different lines of cutlery. Their

"International" line is lower quality and less expensive

than their top lines "Pro S" and "Five Star."

(The only difference between the "Pro S" and "Five Star"

is the handle. The "Pro S" has a full-tang riveted handle,

and the "Five Star" has a bigger, synthetic handle. Some

people claim the full-tang riveted handles have better

balance.)

Though, Henckels name is more well known than Wusthof

and they sell more knives to the general public, people

who have used the two brands, for the most part, agree

that Wusthof is the better knife. Also, Wusthof seems

to employ much better quality control than Henckels.

Henckels cuts corners when it comes to their sets.

Henckels supplies a relatively small, low grade

sharpening steel with their top line "Pro S" and

"Five Star" sets.

In their top line 18 piece sets, their steak

knives come from a lower line.

Henckels has a recommended retail price and a sale

price on their cutlery. Just about all vendors,

sell Henckels knives at the "sale" price. Henckels'

warranty department will only give you credit for

the sale price of their product, even if you pay

more, and have a receipt to prove it.

On the other, hand, Henckels warranty department is

generous when it comes to replacing old Henckels knives

damaged due to consumer misuse. I thought knives

completely submerged in salt-free water would

not corrode. I thought corrosion needed salt or

air. Wrong. My Henckels knives corroded even

though I just left them submerged in soapy water.

The most popular knife today is the Wusthof

Grand Prix, Santaku knife with a granton

edge. This is the knife used by Rachel Ray

and other chefs on the Food Network. "Granton"

means the knife has semi hollowed-out ovals on

its sides. Granton edges may provide a smoother

cut, with less drag. Vegetables may stick to

their sides less. But knives with granton

edges are not supposed to be sharpened at home.

Moreover, they have very little edge to sharpen

and so have much less life expectancy than an

Identical knife without a granton edge.

I have owned these knives for two weeks and they were everything they said they would be. I found them to be well balanced between blade and handle and the seraded edge on the steak knives made for easy slicing. Although not their most expensive set, I don't think the average user could tell the difference.

I've owned this set for over a year now with no real complaints. The knives have performed beyond my expectations. They keep an edge despite daily use and abuse.

If I could improve anything at all about the set it would be the steak knives. These are thinner than the rest of the knives but are more than adequate to the task.

I was so happy with the tomato knife that I bought a 2nd one, the steak knife set, and the carving knife. Love them all, except: Just be aware that (now that I've had them for several months) the handles are brushed aluminum which gives a good offsetting weight in the hand, however, the shiny silver color turns dingey gray. If you don't mind that-especially bec now they don't match the silver color of the blade, then they are a great buy. I would give 5 stars if they didn't discolor. NOTE: I NEVER ONCE PUT THEM IN THE DISHWASHER.

Needless to say, I've found my knife...it is a godsend to anyone who works with fish, chicken, meats...the blade is flexible enough to make skinning fish like salmon, halibut, haddock, snapper, etc. an absolute breeze, but stiff enough to make boning chicken & other meats very very easy!

I do recommend only handwashing this knife, however...it says dishwasher safe, but I wouldn't risk the high-heat of the wash cycle...

All in all, a GREAT addition to ANYONE'S kitchen.

We bought this knife to trim tenderloin, after being inspired by a televised cooking show. This was my first investment in a really good knife and I had a hard time believing that it would be worth the price. Once the knife arrived, I became a believer. This knife has great weight, balance, and a fantastic blade for meat (just enough flexibility to trim bits of fat and gristle without cutting into the good meat). It was worth every penny.

It's really amazing how much easier it is to work with a good professional knife. We later got a (not quite as expensive) set of Henckels and, although they are good, they are not quite as nice as this particular model. This Pro S series has a better handle and a nicer weight. If you need a good boning knife, this is the one to get.

This is the knife that most cutlery sets leave out (oh, and the Santoku as well), and I highly recommend getting one. It really makes deboning so much easierespecially on chickens and turkeys. I deboned a turkey in no time, especially appreciating the extreme sharpness and flexibility of the blade.

I have a mix of Wusthof Classic and Grand Prix knives, but settled on this to 'match' my Classics. There's no difference between the Pro S and Wusthof Classic in terms of performance, but I preferred the lower price tag and shorter length to its Wusthof analogue.

Whenever you buy Henckels Pro S knives you know you are getting the very best. They have other types (Four Star, Five Star, etc.) but the the Pro S handle stands out simply due to the construction of the handle, the only one that is a harder type of poly PLUS the handles are RIVITED, giving it a toughness second to none. The Five Star knives have the same good knife edge (don't get the Four Star...the edge isn't as good and doesn't hone as well) but lack the rivited handle as the Pro S. True, the Five Star is more "ergonomic" in handle shape, so if that is what you are after, go for it. But I don't see THAT much difference...I want the rivits!

I have tried the other names and Henckles beats them all so don't try to save a few bucks.

As for this particular knife, if you can only spend the money for ONE good utility knife, go for this knife. I use it for paring as well as for all other kinds of uses except for things that require a chefs knife or cleaver...it isn't only for boning and filleting. In fact, I don't think I have ever boned with it, (I own three of them since my husband and I both cook together and we are always fighting over who is going to get this little knife, so here I go getting another one. Hopefully the fighting will stop now!

You should always invest in the Henckles honing/sharpening stone when you buy your first Henckels knife...DON'T EVER GET ANY OTHER STONE...they are totally inferior, trust me. And don't get fooled into buying any other device for honing either.

When you first receive your stone and knife, give the knife a few long strokes (both sides) on the stone to get it at top performance from the start, wipe with a clean, damp cloth, dry and you are on your way.

...Get this knife and you will NEVER look back...or purchase any other type of kitchen knife again. I would rather have one of these than ten of any other brand names.

Villeroy & Boch French Garden  5 Piece Place SettingI am from Germany and love Villeroy & Boch which is a German company and very popular for its tableware (mostly for its dishes, not so much for its flatware).

When moving to the United States I was surprised that the selection of silverware is more limited than the one in Germany.

The silverware available in the U.S. is mainly produced in Vietnam, only one set I am aware of is made in Indonesia ("Mademoiselle", I think). This would not be a problem for me if it was actually mentioned in the product description or was visible on the amazon photos or on the official website on the Villeroy & Boch website. However, the print "Vietnam" has been removed from the photos with photoshop and the photos do not reflect the actual silverware you will receive. The silverware you will receive has a "Vietnam" print on the kife. The print makes an otherwise nice flatware set look cheap, visible for all your guests.

I expected high quality silverware made in Germany (unless mentioned otherwise), but received somewhat quality made silverware made in Vietnam... I am disappointed.

I uploaded some photos to get you a better idea what you will get when ordering this set.

Excellent quality flatware, well designed and good looking---and dare I say, not made in China (made in Viet Nam). I would have preferred the flatware to have been made in the USA.

I cannot say enough about this knife! I use it far more than my classic chef's knife. It takes just a few minutes of getting used to how it handles. It can be 'rocked' like a chef's knife, just not quite the same way. Once you get used to this you'll love it. It cuts very cleanly and smoothly. Treat it properly and it will last a lifetime.

A well made knife is an essential cook's tool. And this in my book is one of the best made out there.

love the blade. the handle, not so much. got the 2 knife set about a year ago (this one w/ the paring knife.) the blades are great, super sharp and cut well. however the handles on both knives cracked in several places after only a few months of TLC care. (hand washing only, handled carefully). I love henkel knives and have used them for years, I will just get them with a different kind of handle in the future. also with this particular model it took me a few weeks to get used to the handle-heavy balance.

My husband bought me this knife for Christmas a few years ago. It immediately became my favorite knife. It's the first knife I reach for every time. The blade is heavy and sharp and has held up well to at least five professional sharpenings in the interim.

(Note to other knife-users. Spend the five bucks and get your knives sharpened regularly. If you're on here looking for a new $100+ knife, it may just be that your current good quality knife needs a $5 sharpening.)

So, it's my favorite knife. I love the ergonomic shape of the handle. Do not ignore this feature, it makes a world of difference to cut or chop with a knife that feels comfortable in your hand.

Unfortunately, as other reviewers have pointed out, the handle is too fragile. My knife has never, ever, not even once been in the dishwasher. I am obsessive about taking good care of my knives. But despite my loving care and even conditioning the wood in the handle, it has cracked in several places. It's still usable, but I will clearly have to replace this knife soon.

For as much as I love this knife, maybe it's worth it to spend ~$150 every few years for a new one. But it feels wasteful and I'm sure I could do better. Too bad, this could have been the perfect knife.

This is just a quick warning about the Twin Cuisine design for all those that are interested.

Four star for the cutting ability of the knife, One star for the handles,(Because you can't click no stars)

I have been involved with the restaurant industry for some thirty years now as a Chef, management, designer, contractor etc... So I know good from bad when it comes to restaurant products.

About four years ago I decided to purchase a new set of knives. Henckel being one of my top choices, based on previous experience and ownership.

I settled on the Twin Cuisine because I liked the larger handle and overall weight of the knives and the look. Full length tang, no rivets and a more robust design of the handle. I purchased from various vendors on Amazon a compliment of around nine knives of various lengths and cutting styles. I also got two sets of the Twin Cuisine Steak Knives.

Speaking for the knife, (cutting portion) they are a great set of knives. They keep there edge, (as long as you hone them) and I think I have only had to sharpen them a few times over the years.

Now for the handles. Every one of these knives the handles are cracked, not cracking.... cracked. From my 10" chef knife to the steak knives. There is definitely a flaw in the plastic used to mold these handles. I have found references on other forums about this problem with the twin cuisine so buyer-be-ware.

Although they are warrantied for life the hassle is you have to send them in one at a time to Henckel, which frankly I have not taken the time to do, and it can take them up to eight weeks to deal with the warranty.

It is a wonderfully made piece of equipment....machined very well.....I wonder if you can find better !!

I bought this as a gift for my oyster loving husband and it's great! A quality knife... so well made in fact, it was difficult to get a deep engraved message into the strong steel handle!

I was extremely disappointed in this product. Although it is sturdy, and the blade well made, the absence of any texture on the handle makes it virtually impossible to use once the handle gets even the slightest bit wet.

The first time I used it, I brought it with me to our cooking club, where we were preparing 200 oysters Rockefeller for a charity event. It opened the first one without a problem, but once the oyster juice got on the handle it was too slippery to use. I had to resort to using one of the club's knives that has a wooden handle with a somewhat bulbous shape. No problem with that tool.

I have been able to use this knife but only after wrapping the handle in a thin sheet of rubber or plastic that's used to help get a better grip on jars.

This oyster knife make easy (well, as easy as it can be) work of shucking a pile of oysters. I recently made Oysters Rockefeller from 95 (yes, 95) large Louisiana oysters and I was finished shucking in just about an hour. I am not a pro and have never shucked an oyster before. The Rosle Oyster Knife gave me confidence after one jab....I knew the blade wasn't long enough to sever any fingers and it was strong enough not to snap off and take out an eye. There is something about it's heft that makes you know its there to work, no playing around. My only suggestion would be to make it with some sort of grip as the shiny stainless steel gets slippery. Just a slight indented grip would make for even quicker shucking. Give it a try, everyone will think you are a pro.

I have this place setting for no more then 2 weeks and they have been through two washes in the dishwasher. Already, there is rust showing on several pieces! I've never had this problem before and I certainly wouldn't expect it to occur on actual stainless steel. My last set was also made by Towle and I never had an issue with rust.

Other then the rust, the design is nice and good weight (heavier then most silverware).

The size of this board/knife combo allows it to tuck nicely into a drawer (just a bit larger than a sheet of printer paper), I found the bar sized cutting boards to be too small. This is convenient for cutting strawberries for my breakfast, slicing lemons, making a sandwich, etc. The knife slips nicely into the board and is of reasonable quality. You can use both sides of the cutting board. The edges are smoothly finished and I believe the knife can be easily sharpened. The slot where the knife rests is cut all all the way through to the end of the board so water will not get trapped in it after washing.

When I ordered this, I thought both the board and knife handle were white. The knife is light gray. It looks terrific.

to be honest i thought it was going to be a bit bigger but the size is not that bad, it's very practical and you can carry it with you pretty much everywhere, not a bad purchase

I ran across this product when searching for a regular kitchen cutting board and just had to get one! On hiking trips, picnics and long car trips we often bring food that needs cutting, such as fruit, cheese, pepperoni, etc. and I find it awkward packing a regular cutting board & a sharp knife in a soft-sided cooler, backpack or lunch bag. This is a great solution! I haven't used it yet, but the product appears well-made. The knife stores safely/securely in the end of the board, and is easy to remove for cutting things. I imagine you'd want to make sure it's completely clean before replacing it in the board, so I'll probably pack some wet-naps for that purpose.

The board is sturdy and smooth on both sides. The knife is good-sized (3-7/8 inch handle, 4 inch blade), sturdy and seems reasonably sharp. I assume it can be re-sharpened when/if needed.

The board is just a bit larger than I'd like for portability, so I might try sawing off a couple inches -but I'll use it several times before I make that decision. It looks and feels very nice as-is.

Years ago a got a recycled paper cutting board (from a company that makes paper countertops) that I love and have been unable to find another of equal quality. This is pretty close. I like that its not plastic, which is worth every penny to me! It's a good size, slim for easy storage, washes well by hand or in dishwasher. Very happy I could find something even close to what I already have.

Yoshihiro Cutlery NSW Hammered Damascus Gyuto Knife, 8.2-InchAs a female chef it is not often that I have come across a knife that works well for me. I have very small hands and although I have been in the business for over 16 years I have yet to develop a knife callous. I typically use Japanese knives for this reason. The rounded handle is smooth and easy on my delicate hands (yes I am a chef with delicate hands) This knife comes out of of the box razor Sharp and it is absolutely beautiful. I also love that it is so light. It's like working with a light saber... No joke! There are downsides to the weight and his thin the blade is. If you work in a professional kitchen you have to guard it with your life. I have not dropped it but I can imagine it snapping in half the blade is so thin that I will not let anyone near it. I treat it like a new child. Coworkers have said that the weight is not for them because they need something heavier to balance out the rock of the blade... But for me its perfect!

So you're ready to pay premium cash for a premium knife... the most interesting bit is that, like other brands (Shun for example), this is a sort-of, yet not quite, traditional knife, in that it is treated to make the blade nearly stainless. That can't be said for other carbon-steel knives which have to be really well kept and dried etc.

The blade is beautiful to look at. Do not use a rod sharpener, you'll ruin your edge. personally I wouldn't even trust my neighborhood sharpening service unless they're definitely experienced with those kinds of edges. I've been using whetstones for years, so I'm okay I hope...

The blade is a bit thick and the handle a tad too light but I'm just used to cheaper knives. What makes the big difference to me is the hammered surface, which acts a little like a santoku blade, allowing cucumbers, tomatoes and other water-heavy things to fall off the blade more easily. Dicing garlic, however, is still a challenge with this, but that's probably also not the purpose of this type of knife.

Perfect, beautiful knife. I was looking to get a new chef's knife and this fit my budget perfectly. For the same price, I was looking at german branded knives but decided to get this one instead. Worth every penny. Love the weight and feel. Sharp out of the box though it is recommended to sharpen it further. I don't keep a lot of knives and didn't want to get a knife block. Since it came with a sheathe, I chose to get this one over a less expensive knife that didn't come with one.

Chicago Cutlery Metropolitan 7-1/2-Inch Chef's KnifeBought this knife a few months ago and have used it for just about everything. I bought it based on the price, brand name, style, size, and build quality.

It's a rather light knife, which some people may like, but I prefer a little more heft in a knife. Initially it was very sharp, but a few months later it needs to be resharpened. Cuts nicely when sharp, but with many knives, the vegetables stick to the knife and don't come off cleanly. Overall I would recommend this knife if you're on a budget and aren't terribly picky, but I would encourage looking around as well.

My mother asked for Chicago Cutlery for Christmas, so I got this for her. She says she's really happy with it.

Zyliss Paring Knife, 3.5-Inch, OrangeI have used my 3.5-inch paring knife several times already and I only just got it. It is nice and sharp and easy and light weight. The knife sleeve is nice because it stores easily and safely in the drawer. PLUS it's my favorite color, orange, so what's not to like.

First of all, I love the color of this knife! It's super easy to find and the size is perfect for my smaller hands. The knife cuts great so far. I have only had it a few weeks, but it's super smooth and perfect for cutting smaller items with difficult angles. Much easier to use than a traditional large chef's knife. I also really like the fact that it comes with a blade cover for storage purposes. I do not have any extra room in my knife block, so it works out great that I can keep the knife in a drawer!
