Chicago makes a large variety of knives. Some are pretty cheaply made and some are wonderful forged steel that cut like a dream. The landmark 25th anniversary knives are the superior quality and came out years ago. So now they are a real bargain. I damaged one and they sent out a replacement no questions asked. Perfect! 1. To my understanding, cutco uses 440A stainless steel in their blades hardened to 56HRC. 440A is such a cheap steel, there is absolutely no justification for the price point. There are a plethora of knives made by reputable knife companies(using far superior steels over 440A)selling at a much lower price point than these exorbitantly expensive cutco knives. The wonderful Wusthof Gourmet 3" paring knife is one such example:Wusthof 4022 Gourmet 3-Inch Paring Knife
2.Also, 56 on the rockwell scale is way too soft for a decent kitchen knife. You really want something at least approaching 59 or 60 for it to have decent edge holding capabilities. And no, it will not be impossible to resharpen at this hardness.
3. Cutco kitchen knives are hollow ground. This edge geometry is not ideal for the average slicing task in the kitchen. A fully flat ground profile is much preferred(the only better edge geometry, other than a fully flat ground blade, would be that of the traditional Japanese single ground edges as seen in the usuba or yanagiba as used by sushi chefs). The advantage of a hollow ground knife is that it allows for a thicker spine(thickness = strength) relative to the fine edge. However, this quality is completely unnecessary in a kitchen knife, unless you plan on using yours to dig a grave or pry open tin cans.
Aside from these 3 basic criticisms, the price point of cutco knives is an enormous turn off. Honestly, the quality of the steel used in them is no better than what you will find in the cheapest knife available at your local wal-mart. As I mentioned above, there are so many good knives made with decent and superior steels(x50CrMov15, aus8A, vg10, etc...), why would you buy a knife made with such a cheap underwhelming steel for the price that they are sold for? The price tag that should be placed on this cutco paring knife? I do think that the construction and handle materials are decent, so, for that alone, I suppose it might be worth 5~10 dollars. However, since the knife won't perform well, that really doesn't matter... so, to me, its not even worth a couple bucks...
Update:
The cutco pairing knife uses 440A steel and the wusthof pairing knife(mentioned above) uses a steel called x50CrMov15. Here is further clarification as to why the Cutco pairing knife loses when compared side by side with the wusthof:
To start with, I must go into a little detail about the steels employed in both knives.
440A tends to contain impurities such as sulfur and phosphorus which make the steel more brittle. X50CrMov15, as far as I am aware, does not. If it does, the quantity is much less. X50CrMov15 has a roughly .15% vanadium content. Vanadium is a carbide former and increases wear resistance and hardenability. Also, vanadium refines the grain structure of the steel, which aids in its toughness and ease of re-sharpening; this means it will allow the steel to take and hold a sharper edge. This is the biggest difference between 440A and x50CrMov15. Although 440A has a higher chromium content, which may give it better corrosion resistance, since chromium forms large complex carbides, it tends to hinder sharpenability. Since any steel with 11~13% chromium is considered "stainless," the 16~18% chromium content in 440A compared with the 14.5% in x50CrMov15 is arguably too much in the application of a kitchen knife(also, I have seen rust spots on many cutco knives...and though this is easily removed, as it is with any "stainless" steel, the increased chromium really does nothing but harm).
Now, depending on the heat treatments/temperings and such there can be a certain amount of difference from one knife with the same steel to another, as it is with all steels. For this reason, please be advised that all pairing knives using x50CrMoV15 may not perform identically one to another. However, in the way that wusthof has treated the steel in this knife, x50CrMov15 seems perfect for a pairing knife because of the following reasons:
1. Ease of sharpening. The wusthof pairing knife I own is one of the easiest knives to re-sharpen. It doesn't take very long for me to touch it up.
2. Excellent sharpenability. In addition to its ease of sharpening, the sharpenaibility means it can take a scary sharp edge.
3. Though x50crMov15 is not the toughest steel out there, in its application for a paring knife, it is perfect. Since a paring knife rarely touches a hard surface such as a cutting board(wood or otherwise) and is primarily used for peeling or detailed work against a relatively soft media such as a fruit or vegetable, it really doesn't dull quickly even when the knife is so thin(which makes it an absolutely magnificent slicer/peeler etc... it just cuts through so easily).
In contrast, the hollow ground profile of the cutco pairing knife combined with its thicker spine do not suit its intended purpose, and if you use them side by side, the difference is astounding. Also, as I mentioned before, the Cutco pairing knife is really hard to get razor sharp..., and when you get it, my experience is that it doesn't maintain that razor sharpness very long.... Which goes along with the analysis of the steels I provided above. I'm just not happy with the steel or the blade geometry. Also, the cost makes the wusthof pairing knife a much better buy in contrast to the cutco. The wusthof is a better knife, it works better, is significantly cheaper, uses better steel, has a better grind for its purpose... what more can I say? That's all...just one user's opinion. Your experiences may very, and I respect those that would rather purchase a USA made product. I hope my data points and opinions have been informative to some:)

I was thrilled to find a replacement Cutco paring knife after mine disappeared and I felt lost in the kitchen. Best knives ever!The paring knife is beyond awesome. It keeps the edge for a super long time, and the handle feels great in my hands compared to the normally short and stubby paring knife handles. If you're of a certain age, you probably remember the ultra-cheesy Ginsu commercials from the 70s and 80s, full of soda-can slicing and wood hacking and the like. I must say I hesitated to buy these because I still associate the Ginsu name with tacky infomercials. However, I needed steak knives and, frankly, the less you spend on steak knives, the more you have left to spend on steak. So I took a chance on a set of these. They're great! They feel good in the hand, they look nice, they're sturdy, and they're sharp as anything. I just put another set in my shopping cart, in fact.Incidentally, my last set of steak knives was a fancy Henckels set. They were nice; they were sharp; they lasted a few years. But the fact is, none of these newfangled serrated blades can be sharpened, and the Henckels eventually got too dull to handle a sirloin. These will get dull too, I know, in a few years of hard use. But it won't hurt so much to pitch 'em when they only cost me $2.50 per knife.Absolutely 5 Stars for this set...sharp as a razor, fits the hand perfectly, full tang for strength, and comfortable handle...dishwasher safe.....and CHEAP..!!!
Only drawback it doesn't come with a wooden storage block....am VERY satisfied...!!These knives are wonderful. They are always sharp and work well for all kitchen jobs, as well as for cutting meats. So far I haven't had any problem with the sharpness of each knife. They still seem to be as sharp as when I first bought them. Be careful around children-they could really hurt themselves, because these knives are super sharp.I felt compelled to write an interview on these knives because of how awful they turned out to be!! I bought them exactly TWO MONTHS AGO and they are already showing rust signs on three out of four of the knives!!! I am sure the fourth will begin to rust soon. As for the Ginsu "warranty", it would cost more to file the warranty claim then to just buy a new set. This buy was horrible for meWe bought these to replace our aging everyday knife set. I had purchased serveral inexpensive knife sets before buying the Ginsu's and returned them all. We use our steak knives for slicing up everything from carrots to cheese for our kids. The big test for me was how well a knife could cut cheese. If the blade is too flimsy, you can't control the cut. If the blade is too thick it makes it difficult to cut through the cheese. These Ginsu's passed the test with flying colors and the price was right. We've had the knives for a couple of months and are still happy with them. I'm sure they will eventually dull with age, but we haven't seen any signs of that yet.

5/5 Stars I seriously love this knife. But no knife will ever be perfect ;)-The balance on this knife is extremely well done. Very comfortable to hold and use for extended periods of time. Though the handle seems a little larger than most others it feels nice once you get used to it.
-the blade comes fairly sharpened out of the box. very short work on the whet stones yields very pleasing results compared to my other white steel knife. *warning* The very tip of the knife is very thin and looks like it will break off quite easily. (by tip i mean the very point... about 1mm)
-Saya -A little disappointed in the saya, I wish it fits a little bit more snug; however, it gets the job done. I don't transport my knife around much so this isn't a big deal for me.
-Damascus layering is a little "in-your-face" at first but it gets less prominent as i have been sharpening and cleaning and I like it much better.
-Overall it is holding up to the use/abuse I put it through daily. I use this knife as my primary work knife so it sees 50 hours a week at a VERY high volume sushi bar/restaurant.the knife is ok.service is perfect. so ,we satisfied our purchse.if the brand have some promotion,just let us know~ thank u~

I purchased this knife because it was supposed to be ceramic with a sharp point. The ad showed a picture with a sharp point on the knife. I was extremely disappointed when I opened the package and saw that the knife had a rounded point. Nowhere in the ad was there any mention of the point only the picture. I will not be returning the knife because I will not pay shipping to return it and have nothing to show for my money. The handle is too big and it does a horrible job in peeling potatoes and other vegetables, when it does work it throws the peels all over the counter and it does not allow you control of where they go. These days, most kitchen knives look very much alike, but it is not until you actually start to use one for day-to-day kitchen tasks, that you realize some of the differences between them. Most of the low priced ones either do not hold a sharp edge, or they fall apart not long after first use.This Wüsthof 4" Utility Knife #8060 made in Solingen, Germany, the home of most world-class cutlery, can be described with just one word: PERFECT! I have owned many knives over many years of working in the kitchen, and never have I owned a small paring knife that was as well made as this one. It will surely outlast me. MAC 4 piece Knife Set #GSP41
My father-in-law gave us this exact set of knives 35 years ago because he said we needed good knives, and MAC was the best he had ever used..........He was a butcher with his own shop in N.J. For 45 years. I use the knives daily, and they are indeed exceptional. I am now purchasing a set for my son. He can't have mine!If you don't like to have to frequently sharpen your knives, then try out a Mac knife. They stay sharp for a really long time and cut like laser beams through food. They feel great in the hand, and they're nice and light. The only disadvantage (and this is a minor one) is that they're not dishwasher safe (but neither are most quality knives in this category).I started my quest for a quality kitchen knife about 3 years ago after I noticed that my Henckels Professional S knives were getting dull pretty frequently. My first Henckels was a Pro S 7 inch santoku that I was so pleased with at first that I decided to get a matching Pro S 5 inch santoku, a paring knife, and a very expensive 10 inch chef's knife. And then they started getting dull. My first reaction was to get some whetstones and do some sharpening. I tried a few Japanese stones first and then moved on to some USA made diamond ones before finally settling happily with a Spyderco sharpening system. Long story short, I discovered that sharpening is a chore I'd rather not have to do at all, muchness frequently, so I decided to check into some other brands that I would not have to sharpen as much as my Henckels. Believe me, Henckels Pro S series get dull constantly. It's incredibly frustrating how often you have to find yourself sharpening them. And this was after I spent countless hours researching and finding out everything I needed to know about using whetstones effectively. If you sharpen a Pro S, if you're lucky, you might be able to get through 3 meal preps before noticing that it's not as sharp as it used to be. And yes, I did wash them immediately after every use and store them properly, that that isn't the issue. They are just simply junk knives at a premium price.
As a result, I did a lot of research before deciding to buy a Cutco and a Mac. I know there's a lot of Cutco haters out there who consider Cutco to be like the Bose of the knife world (overpriced for a mediocre product). I heard all the stuff about how they use inferior grade steel and this and that, but I decided to try them because they had a lifetime guarantee, free professional lifetime sharpening, and they were dishwasher safe. I decided to get a Mac because I found a few reviewers online by some people who worked in restaurant kitchens.
I have been happy with the Cutco, but I've been even happier with the Mac knives I've bought. The Cutco vegetable knife has stayed nice and sharp for a year and a half now without any trouble. I love that I can just throw it in the dishwasher which is great when you're entertaining company and don't want to be bothered with washing your knives off by hand right after using them. But two things keep me from grabbing the Cutco most of the time when I'm cooking: it's heavy and the steel blade is a somewhat fat so it does not glide as effortlessly through food as I'd prefer even though it has maintained such a sharp edge. From my experience, Cutco makes a pretty decent knife that they stand behind with a great warranty, so I would not consider them the Bose of kitchen knives; if anything Henckels, with their overpriced, overhyped, and overexposed product, is the Bose of kitchen knives.
I digress. The Mac succeeds where the Cutco left off. Weary of wasting money, I decided to be conservative with trying out a Mac knife for the first time, so I went on google shopping and found Sonoma Cutlery, a retailer that sold single Mac knives at a very reasonable price--much less than a Henckels Pro S or Cutco, and I bought a single Mac Original 4 inch paring knife. The steel is nice and thin, so it's not only light, but also glides effortlessly through food (you'll see what I'm talking about if you try one out and compare it to a thicker steel blade when cutting something like a large onion). I fell in love with it, and decided after a year of use without needing to be sharpened to get a second Mac, so I got an Original series 6.5 inch chef's knife. It's my absolute favorite knife in my block. Mac does not get the exposure it deserves, and it seems that only a few people who are "in the know" (e.g. Gordon Ramsay) have discovered how great Macs are. It really is a shame that big retailers like Bed Bath and Beyond and places like that tend to push hyped, shoddy, overpriced German brands like Henckels when they could instead be selling better quality knives like Mac. I have since sold my used Henckels, and I'm keeping my Cutco and of course these awesome Mac knives. I'm sure that there are several other quality brands out there who make knives that are very good too, but my great experience with these very reasonably priced Macs has made me a loyalist, and my quest for the kitchen knife I've always wanted is finally over. If you've found yourself on a similar quest, save yourself a lot of time and grief and just buy yourself a single Original series Mac chef's knife. You'll be glad you did.

Excellent set of knives given to my daughter, for her birthday. The set covers all her needs and are everything she hoped when she sent me the link to them. She works with Chefs that advised her Mac knives were a great investment if she is going to be serious about pursuing the culinary arts. She likes the light weight and ease of cutting with this set. She will use a knife bag for transporting them, and the rounded tips make that practical.I just purchased as a wedding present the same 4 knife set that we bought shortly after we were married 44 years ago. This is a great set of knives. They are kept sharp by a few swipes along the back of a plate of china. However, I see they now sell a ceramic shapener that I assume will work just as well. If you want to give a wedding gift that people will thank you for many times over the years, I recommend this set of MAC knives. Each knife is simply perfect.I have a set of these that are at least 30 years old. I use this sharpener on them and it keeps them razor sharp. Fiskars 7861 Axe and Knife Sharpener German steel? These Japanese beauties laugh at German steel. If you want to chop down a tree, grab your Henckels. If you want to cut food in a kitchen these are the way to go.
