Global G-61 Hollow Ground 8' Chefs KnifeThis is a great knife for a cook who cares a lot about quality and blade design. It has the Japanese angle (which I believe is a 15 degree compared to German much more abrupt), so it is very very sharp. It's ready to use straight out of the box, but you might want to give it a rinse to get any packaging gunk off of it. It uses great steel, and I grew up using a lot of different hunting knives, so I care a lot about the quality and grade of steel that is used. This is a very light and well balanced knife as well. I highly recommend this knife if you want to break away from the heavier German knives.

As a Food Service professional I always need sharp knives in the kitchen with me. Whether it's cutting tomatoes or dicing raw sweet potatoes. It the best knife I've ever owned. My German knives can't top this and I've been using German steel for years.

I wanted a smooth, round marble cheese board to fit inside a round, domed cut-glass tray (I keep cheese, crackers, and fruit on my kitchen table), finding this product also came with a lovely Arthur Court designed cheese knife (conveniently matches with a few other Arthur Court items I own). This 7-inch marble cheese board perfectly fit within my dome, leaving a wide enough area around its perimeter for arranging fruit and crackers under glass as well. I like that this board is slightly raised on small legs, keeping the food items more separated. While I will employ this cheese board for everyday use, it will also be great for entertaining guests and for use at holiday get togethers/dinners/parties, etc. This lovely and practical cheese board and knife set would also make a wonderfully thoughtful gift.

I will start with the best part of this set...the marble cheeseboard. It is roughly 7 inches across and about 1/8 of a inch thick. The coloring of the marble is stunning. The one I got has no grey in it (the picture description shows some grey streaks), mine is white in color only with glistening irridescent flakes in it that shine like diamonds. It is really pretty. On the bottom of the cheeseboard are three black rubber stoppers to hold up and keep it from scraching surfaces. The included knife has a total length of 7 inches with just under 3 of those inches being made up of the blade. The blade is stamped stainless steel. The handle of the knife is quite pretty and detailed. The grape bundles on this look realistic. The only issue I have is that the knife handle feels very light. It just does not have the heft and weight that most other Arthur Court pieces have. I am not sure if it is hollow or what. It also seems that the joint where the blade goes into the handle is a little loose. I just hope that it lasts as long as the other pieces I have from this collection. Other than that this is a great set and gives an elegant look to your decor.

Zyliss Melon Slicer

Zyliss Melon SlicerI recently bought a blendtec (but that's another review)so I've been making a ton of fruit smoothies. I found this melon cutter at T.J. Maxx and bought it. It slices melons great, the tip has a slight lip which allows you to scoop out the seeds. Well this is my tool of choice for all the fruits now, it slices my bananas, pears, peaches etc. I especially love it for the mangoes, I cut into the mango, and with the tip I scrape off all the insides from the peel. It also cuts spinach n lettuce, without the leaves turning brown, and finally once I take out the big seed from the avocados, the knife is good to scoop out all the insides also. This is one of the best purchases that I have made, kitchenwise, the handle has rubber edging around it, that makes it comfortable to hold. It's super easy to clean, haven't put it in the dishwasher, I just try to clean it as soon as I'm done. I just bought one for my mom also. It's a great buy.

I bought this to get the cantaloupe flesh out of the rind more easily. Bonus features were that it claimed to cut the cantaloupe and seed it as well.

I was dubious that a plastic knife could cut thru the cantaloupe but it actually did that very well. The serration was very effective and penetrating the rind. Once the knife was about halfway thru, sawing it didn't work anymore but putting my hand on top and pushing down finished the job. It did the job more or less as well as a sharp knife.

Scooping out the seeds: This knife is clumsy. It is too long for effective manuevering and the tip is too broad for getting in there to scoop. I did it but it took 3 times as long as using a spoon and messier.

Cutting the flesh off the rind: Well, I had seen pictures of using this knife to cut flesh directly out of a half melon. I don't know how they did that. The big rounded tip can't pierce and it doesn't have a sharp blade so it can't cut even if you do get it in there. The slight lip (for seeding) doesn't help at all. I persevered but mangled the cantaloupe and made a mess on the counter.

Bottom line: Use a sharp knife to cut the melon in half. Use a spoon to seed. Use the knife to cut into slices and then cut the flesh off the rind. Zyliss Melon Slicer can only do the first task.

The knives are very nice, I was actually surprised at how sharp they were right out of the box. They are well priced for what they are. Unfortunately I decided to test my luck and put them in the dishwasher once, I was shocked at how many rust spots appeared just after the first use. When I soak these knives along with other steak or paring knives in soapy water, these start to show rust spots fairly easily, while my other knives rarely do that. I'm not sure if it's due to the quality/composition of the stainless steel (chromium content), or if is because my other knives have a more polished finish on them. Still, this is a decent low-cost set for occasional utility use.

YOSHIHIRO- High Carbon Hagane Wa Gyuto Chef Knife 10.5' 270mm - MADE IN JAPANOver all this is a wonderful knife. The out of the box sharpness is easily the best I've ever seen. Balance and weight are fantastic. Extremely light and delicate for such a big knife. My only issue is cosmetic. The fit and finish is really well done except for a small gap on the top where the blade meets the handle just enough to fit a fingernail in. Not enough to be any real problem but for the price I expected better.

I will order more Yoshihiro knives in the future but I'll make sure they are their higher end Hongasumi series.

If you know how to care for carbon steel, This is a nice knife that will serve you well if you take proper care of it.

This knife has a forward balance (blade heavy)that allows for effortless slicing through most anything. Don't think that this has a bulky or awkward feel to it. It fits nicely in my hand using a pinch grip and is very light for a 270mm blade.

The fit and finish on the handle is acceptable. Not done poorly at all, however for $240 it honestly could have been a tad nicer. I would like to try their Yo Gyuto (western) handle 270mm gyuto just to examine the handle quality.

The blade is where your money goes. It has a terrific profile. I was concerned from the pics that the blade height would be to low. This gyuto stands tall enough to mince anything. It can become very sharp on whetsones and has good edge retention.

*** Don't Forget This blade has a clear coat of lacquer out of the box. I removed this with

1. acetone to create a haze to better see clear coat during removal

and

2. 1500 grit wet/dry automotive sand paper (use it dry)

The saya comes with the blade which helps to justify the price. Saya fits well and the pin is wooden which also fits well.

Overall, great knife! This may not be the "Best Value" but if you know what you're looking for, (and willing to put in the work) I recommend give this or possibly the Yo-Gyuto a try.

The corn zipper is limited to taking off only about 2 rows of corn. For me, it seems a little slow. I also find it awkward. However, your fingers are well protected.

To-Go Ware RePEaT Bamboo Utensil Set

RePEaT 4 Piece Utensil Set Color: MulberryI have two sets of these utensils, for taking my lunch to work. I especially like soups and stews, so the spoon gets the most use. It is a lovely set, and very handy to have everything together. But I've found that, even with hand-washing (of course!), the spoon has cracked a little, and took on a slightly whitish sheen. Last time I cleaned them, I rubbed a bit of vegetable oil on each utensil, and that took care of the discoloration. But I'm disappointed that the spoon cracked so soon (I've only had it about a month or so).

I love these so much I even used them at home instead of the metal utensils. Metalic utensils leave a slight metal flavor with every bite, but we're so used to using metal utensils that most of us don't even notice that taste. I didn't notice until I went back to using metal utensils after a year of eating only with wooden chopsticks. I was delightfully surprised that this bamboo cutlery set does not leave any flavor behind. If there is a flavor it's so subtle and clean that I can't detect it. It definitely has less of a flavor than wood does (Though I happen to like the slight wooden flavor that comes with using chopsticks). Unfortunately this set met their match when they met up with some indian curry. The curry permanently stained the bamboo. I have some bamboo plates also and whenever they happen to get stained with tomato sauce I just soak in a bit of lemon juice and the stains disappear... Not so with this cutlery. The curry stains are still there. So I guess when it comes to spicy foods metal utensils are still the way to go.

I bought a few of these sets for traveling and for taking my lunch when I go to the office. The knife is hard to use. It has an odd bend in the blade, so it's hard to use for spreading and cutting. And what else is a knife for? The fork is essentially flat, so food falls off it pretty easily. The tines are also not sharp enough to spear or stab your food. The bowl of the spoon is quite shallow, but it does kind of work for soup.

What kept this in the 3-star range is the sleeve. Nice colors, handy design, and it contains all the pieces well. I'll probably toss out the bamboo cutlery and use the case for some of my old stainless steel tableware that's been consigned to the picnic box.

It would be nice if they sold just the sleeve. I wouldn't have wasted the resources involved in growing, harvesting, and manufacturing the bamboo.

I had high hopes for this as a set of easily portable, eco friendly cutlery I could keep in the car to replace the disposable plastic stuff. These are beyond cheaply made. I sent the first set back because the chopsticks were so warped they were unusable. I ordered two more, in the hopes that the first was a fluke. One had the same chopstick problem, plus a spoon that was misformed, and had almost no bowl. The other couldn't be snapped closed because the thin, cheap imitation canvas bag was missewn. It also had a fork with uneven tines. Stick with the plastic stuff, and just take it home and wash it...it's high quality compared to these.

I bought 2 sets of these at the Lilith Fair where there was a booth of 'sustainable' products. I LOVE them. I'm kind of a chopstick freak, so that's actually what I use the most. (1 chopstick also makes a perfect coffee stirrer for any size cup). I toss them in my backpack and take them to work or wherever I go. I noticed reviewers for some of the bento boxes complaining of nowhere to put the included spork and I immediately thought of these and the little carabener clip that comes with them. Perfect for clipping on your beltloop if you're camping or just out. You can stick them in your purse or a bag. I've had mine for almost 2 years and they're still great. I keep one in my motorcycle bag during the summer & take it with me wherever I go. I know that I've personally managed to not use dozens of disposable forks, spoons, etc. by having this item. They wash easily even in a bathroom sink with a little soap & water.

Chef's Choice M2100 Commercial Diamond Hone Electric Sharpener

Chef's Choice M2100 Commercial Diamond Hone Electric SharpenerThe 2100 is the top-end commercial version of the Chef's Choice electric sharpeners. According to the manufacturer (EdgeCraft) it is intended for "busy commercial kitchens." It is a bit larger (about an inch in each dimension) and heavier than the consumer models but still compact enough to leave on the counter top. The sharpening module is removable. It can be run through a dishwasher; therefore, if you sharpen a dirty knife, you can clean the sharpener. You can also purchase replacement sharpening modules.

I purchased this for home use, so I will compare it to the consumer models and comment on the price.

The 2100 uses a 3-stage sharpening system. The first two stages use diamond abrasives and the third stage uses flexible stropping disks. You can achieve several edge configurations by using or skipping certain stages. There is good information available on the Chef's Choice Web site () that I won't repeat here.

The sharpening unit itself appears to be about the same size as the consumer versions. The sharpening stages are like those on the M120 consumer model. Both have 2 sharpening stages and a stropping stage. (By comparison, the M130 has one sharpening stage, a stropping stage, and a steeling stage.)

The 2100, like the other Chef's Choice sharpeners does a very good job of sharpening knives. In terms of results, you just can't beat manual sharpening -that is, if you have the right equipment, you know how to use it, and you do use it. I have a good manual sharpening system, but it is a bit time consuming to set up, so I tend to do it only when I have several knives that need sharpening. The result is that at any given time, I may pick up a knife that is not quite as sharp as I would like. With an electric sharpener on the counter top, I can give a knife a quick touch up whenever it needs it. The result is that all my knives stay very sharp all the time.

The real question, I think, is whether the extra cost is justified for home use. Roughly speaking, the 2100 is four times the price of the M120 or M130. In fact, the cost of a replacement sharpening module for the 2100 is only slightly less than the cost of a new M120. I expect that the abrasives in the consumer units should last about as well as the sharpening module in the 2100, which is rated at 5000 sharpening cycles. If you sharpen 20 knives a week, that's about 5 years. I'd guess most people are more likely to sharpen 5-10 knives (or less) per week. That translates to 10-20 years. From an economic standpoint, it makes better sense to buy an M120 or M130 and send it back to EdgeCraft for refurbishment when the abrasives wear out or just buy a new one.

Of course, there are those pesky non-economic factors. I am often willing to spend more money for something that will take more use and abuse and which is likely to last at least as long as I will. I am very happy with the 2100 as long as I don't think about how much I paid for it.

Just out of the box you are up and running. Sharpened all our knives(14) in less than 15 minutes. Blades are extremely sharp and no scratching of the surface.

Instead, the range of items we DO use it for is huge. Warming tortillas (flour or corn), thin chicken breasts or steak slices, english muffins and bagels, even french toast are things we've made on this. The lines give neat char marks, and it never seems to burn anything.

The floating lid matters if you have thick items, and since it cooks from both sides things heat up quick. It's actually easier to clean than the Foreman grill, with less moving parts. Cleans up very easily with a paper towel and water.

I'd have given it five stars if the temperature could be adjusted...that would have been a neat feature. Instead, it's a single temperature but it works well and feels solid. There are cheaper ones but they feel cheap...this feels solid.

I went though several knives in this category all others were dangerously thin with extremely cheap handles. Those that have a similar philosophy should wait, save up and buy this knife as a professional starter. It is extremely versatile and you know what you're holding with this. It's extremely well balanced and sharp for the long term. Yes it's sharp. Its gorgeous. It's not a toy and it let's you know. When you hold a good knife it needs to be part of you. If not it won't work for you and/or you get hurt. The reason I feel so strong about this... well hold a sub par plastic handle version in the same price range. Ok a bit lower in price range. I guarantee you'll be grabbing a bandage (if you're lucky). With this knife you know what you're holding. It also holds its sharpness for a long time (is it ok to say sharpness) again I'm no pro. I plan on building my collection slowly but this with carve and chop for years to come. A great start to my collection. Bon Appetite!

I bought this knife for my daughter, who is a sous chef, as an Easter gift. She absolutely loves it and uses it everyday at work.

Certain cultures prefer rounded tips on table knives as a matter of courtesy. Most won't ever think about this, but it's a nice gesture if your guests are picky about such things.

A simple detail that most manufacturers overlook is which side to put the serrations on. Having serrations on the wrong side can cause your steak knife to bind or leave jagged cuts in your food. Eating should be a pleasure, and struggling with your food is scarcely conducive to that. Thankfully, these knives have the serrations on the right hand side (which is the correct side if you're right handed. This will cause the smaller portion to fall away from the larger portion, rather than having the knife bind in your food. A small detail, but one that is easily overlooked.

Yes, these are great on the table, but they're also really quite handy in the kitchen. I find that I reach for these far more often than I would have anticipated. They're perfect for slicing a bagel/baguette, carving a cornish hen, butterflying/pocketing a fillet, and any other number of assorted tasks that you don't necessarily want a larger knife for.

The only failing of this knife is that it makes a terrible paring knife. This can scarcely be counted against it since this knife was never intended to be a paring knife. Nonetheless, several comments have mentioned using it as a paring knife, and I must disagree. The very same serrations that make perfect sense on the dinner table make no sense at all on the kitchen counter. The serrations are then on the wrong side (if you're paring towards yourself) and cause the knife to slip off of the food. If you're right handed, these serrations are great for cutting away from yourself, and terrible for cutting towards yourself.

I have had an identical set for some years now, and though a trifle flimsy, I have not noticed any wear and tear in the handles at all. I only bought another set because they were available at such an excellent price. I feel very confident that I will be using my original set for years to come. And should they ever become lost (which is a much greater danger than them ever wearing out), I will have replacements waiting.

There appear to be several identical sets on Amazon.com right now at different prices. I am unclear if there is any difference, but it would behoove you to search for every version of this set.

I was eating dinner on the couch and accidentally stabbed my hand with a pointed steak knife. About a week later I bought this set. The knifes are much lighter than what I've used at the nice steak houses. They don't appear that sharp but they're awesome for cutting through a steak. These are the only knifes I use for eating dinner.

Not particularly fancy or elegant but these knives get the job done very nicely. They make short work of even cuts of meat that aren't so tender. I like the rounded, blunt tips of this design as I don't see any advantage to the pointed tips most steak knives come with. As the other reviewer noted they are handy in the kitchen too for slicing smaller baked items that my normal bread knife would be too large for. Four stars because of the price only.
