Calphalon Katana Cutlery 3-1/2-Inch VG Paring KnifeThis is a very nice mid-level damascus paring knife. Is very sharp and holds an edge nicely.

The handle has a very unique feel and does sit different than other knife's that I have owned, but that is not a bad thing. The tang runs at right angle to the handle as opposed to parallel, which is normal. It is well worth the price and for those who would like to upgrade their kitchen this is a good step.

originally received this as part of the large set, but someone used it to try to slice a 1/2-day-old bagel and it slipped onto the granite countertop, totally bending a good portion of the tip, which is surprising given the umpteenth layering process for "hardness". nonetheless, i'm very happy with this knife.

I think this knife is ok. I feel for a little more money i would have been a lot more happy. But i went in fully knowing what i was getting into. The construction of the knife feels hallow and lacks personality that you would expect from Damascus steel. I don't quite have buyers remorse but I do think a little more quality could be added. The only thing saving this product from a one star review is the price.

Zwilling J.A. Henckels Twin Four Star 7-Piece Block Set

Zwilling J.A. Henckels Twin Four Star 7-Piece Block SetThese were a Christmas gift from my parents. I requested these specifically after doing several months of research on knives.

Many knife manufacturers come up with so many different 'lines' for their knives that the consumer has no idea what the hell he's looking at. It took me months to research these knives and determine they were the best value. Why?

Henckels has two major lines: 'Twin' and 'International.' Twin are made in Europe, International are made in China. Within the 'Twin' classification are about five or six different lines, from 'gourmet' to 'pro-s' with a lot in-between, but only two types of blade construction are found within this line!

Basically, when you buy a knife, you're either buying 'forged' steel--a blade produced all from one piece of metal in a multi-step process that requires much skilled labor for every blade--or 'stamped' steel, a mass-production method where the blade is cut from a sheet of cold-rolled steel. Needless to say, forged is better. And anything from China is almost certainly going to be a 'stamped' blade.

But Henckels is spreading two types of blade construction across five or six different brands, each more expensive than the last. They differentiate their knives by more ergonomic handles.

Seriously. That's the difference. This $170 kit contains all but two of the most fundamental cooking knives (what's missing is a slicer/carver, steak knives, and a bread knife). These can easily be added to the kit and still yield a much lower price than the 'full' kits of more expensive lines. It is the absolute cheapest set of FORGED Henckels blades, anywhere. The exact same blade can be purchased with a slightly different handle in the Five Star, Pro-S, and even Four Star II sets (that's right--Henckels made a new line that is much more expensive to replace these and doubled the price. The difference is a metal cap on the handle).

The 'Gourmet' and 'Signature' lines are, frankly, a waste of your time. They are stamped blades.

Henckels' forging method is spectacular and they are a company worthy of your business. But you are a customer who deserves to get the right value. This is the right value. And it's probably discontinued by Henckels now in lieu of the much more expensive Four Star II line, intended to replace these and give them a much better margin on their sales.

After spending weeks going between the Calphalon Katanas, Wustofs classic, and the plethora of Zwilling knives I finally made the decision to purchase this set. I didn't choose the Katanas because they didn't seem to hold an edge very long and it didn't feel that great in my hand. The Wustofs I decided were too pricey because after all, I am not a professional chef, but I still want a quality set of knifes that will last me a long time.

After looking through the various Zwilling series, I discovered that there is very little difference between this older model of knife compared to the newest lines out. Here is a breakdown of the differences in the lines:

TWIN Professional `S' full tang, three rivet traditional handle

Four Star original molded handle knife

Four Star II updated version of the four star upscale knife, original molded handle with a metal cap on the end.

TWIN ProfectionFull tang, three rivet design of the poly handle is ergonomic, fitting the grip perfectly.

The new bolster design provides solid, balanced feel giving a full cutting edge.

The blades are the same on all of the above. One is not considered better than the other all have special formulated steel made to Zwilling J.A. Henckels' specifications and all are Friodur® ice-hardened, a process of heating, cooling and re-heating that changes the molecular structure of the blade for optimum no-stain features and an extremely long-lasting edge.

So when you see that the new 7 piece Four Star II set is $299 and the other sets are even more expensive, you can see the value in this $169. I purchased mine at Bed Bath with a 20% and the matching steak knives. It's a sweet deal.

Lastly, do these things cut! I used to have the Henckels International line. There is no comparison between the two. The balance, edge, and sturdiness of these are fantastic.

I was a chef for 11 years, and early on I learned the necessity of owning top quality knives.

I purchased a set of J.A. Henckels Four Star knives in 1987, and I am still using them today -a quarter-century later. They have survived two divorces (not my ex's fault; the knives were far sharper than I was), a dozen moves back and forth cross-country, and most important: daily use, week in & week out, in professional kitchens and at home.

I bought these knives for my first-time homeowner son, as a housewarming gift, because I had accumulated a number of the 4-star knives for myself.

As I told my son the musician -a good knife is like a musical instrument, you have to keep it "in tune" (sharpened) for it to work at its best. A good, sharpened knife can be poetry in motion, for those who like to cook. But it has to be sharpened to stay like that -otherwise, the "never need sharpening" knives would be a better choice. I run my knives through a two-wheel manual sharpener about every 2 or 3 times I use them. I use an electrical knife sharpener about once or twice a year.

The handles on the 4-star can discolor (whiten) if regularly washing in a dishwasher with powdered detergent. I usually wash mine manually, but I will put them in a top rack occasionally, and I use a gel detergent.

This is a great set of knives for those who don't mind sharpening frequently. I hang mine on a magnetic knife holder, I don't care for a block on the countertop. I am a bit envious -there is a Santoku knife in this set that I don't have. Because I have small hands, I use the 6" chef knife instead of the 8". I have the 3" paring knife; the 4" would be a good addition to my set.

This set seems to be discontinued, and has been replaced with the Twin Four Star II line of knives. I'm not sure what the difference is the only thing I can tell is the handles on the new II series have a metal cap on the end of them which to me seems merely cosmetic. Regardless, these are some of the best knives I've ever used. Granted, I'm not a chef, and I've never owned anything nicer then a Calphalon knife, but these things are amazing. They feel like a precision tool in your hands, cutting through anything you throw at it smoothly and with ease. I recently visited family for the holidays and had to cook for a week with an inferior brand of knife, and it amazed me how spoiled you get with Henckels knives. I'll never use anything else again!! For $169 these are a great value and I would highly recommend them to everyone considering a good set of knives for their kitchen!!! I'm feel like a chef in the making with these!

Hamilton Beach 74275 Chrome Classic Electric Knife with Case, BlackI shopped at many places and saw many electric knives before I decided to buy this set. I am so glad I waited to make my purchase. The knife is beautiful, and it makes a clean smooth cut. I am impressed with the quality for the price. I loved getting the matching serving fork as an extra in the set. I have used this knife on brisket, ribs, and a prime rib and I am totally satisfied. I highly recommend this set to any and all in need of a beautiful set that works.

I used it to carve a boneless cooked pork roast, turkey and pre-sliced ham. I didn't attempt to cut through bone or gristle.

Design: ergonomically poorly designed; poorly balanced, heavy in weight without being sturdy in performance or power; blades wobble even after being inserted properly and then reinserted just to make sure. The more you use it, the more they wobble.

Motor: Gives off a tremendous amount of heat making the unit almost difficult to hold; seems motor is underpowered.

On Button: If your hands get the least bit greasy it's very easy for your trigger finger and supporting fingers to slip dangerously close to the blades. I attribute this to the poor balance of the knife and poorly designed handle.

Recommendation: Don't buy this. Consider the Black & Decker slim line model, which I have owned in the past and intend to purchase again. My old B & D gave up the ghost after many years of service, primarily since I cut through some frozen desserts.

Although this knife looks good and cuts well, the trigger you pull when cutting is quite awkward and I found it difficut to cut any meat without feeling strain on my hand and arm. After carving a large roast I was exhausted! I don't recommend this product to anyone and threw it away.

Best looking knife that doesn't perform to suite me. Purchased as replacement for 15 year old knife worn out knife and saw a good review. Trigger is very awkward. If you have very large hands, you may like the size. It is good looking and has nice case but I do not reccomend for use.

I am a woman, and found this knife bulky to use, my arm was exhausted when cutting a roast. This knife has the knife release on the top, so when you are trying to cut, 1 finger is on the trigger, and your thumb fits right on top of the knife release, you had to think about moving your thumb away from that buttom, so it would not release while you are cutting. I may just throw it away and buy a more user friendly model.

Got one of these cause there are no review and

This is a very amazing knife. It's design purpose was for fish but I enjoy using it to peal tomatoes and other fruit. The weight, length and balance of this knife make it a must have for the serious cook. Like all good knifed, this is a lifetime investment.

In fact, I'm going to order replacement pieces for the ones that have disappeared over the years, and expand our original set. The weight and balance feels very comfortable in your hand. They are easy to clean. Our pieces have been washed by hand and in the dishwasher, and though they now have faint scratches all over from use, they still shine and look beautiful, just as stainless steel should.

When we got married 2 1/2 years ago, this was the "everyday" set that we picked out. Since then, we have gotten daily use from them, and it is this amount of usage that I base my review on...

Pros:

1) dishwasher friendly

2) scratch resistant (for the most part but don't scrub the life out of it!)

3) great for everyday use, but stylish enough for formal entertaining

4) the knives are sufficiently sharp for most meat dishes

Cons:

1) they hold heat extremely well, so watch yourself after they've been run through the d/w or been accidentally left in a pan that you're stiring

2) if you eat spaghetti like a true Italian (which I'm not, but I still eat this way), and wind your noodles around your fork by using a spoon, there is something you should be aware of: The spoons' bowls get scratched by the fork tines too easily and you end up with a dull-looking finish. To minimize this, just use the same spoon each time you need one for this purpose (unfortunately, you WILL know which one that is). Otherwise, this set is pretty scratch resistant.

Overall, we are very statisfied with this set as a whole. They have gotten daily use for the last 2 1/2 years and have served us well. Even the specialized serving pieces (sold separately)get frequent use.

Mac Knife Chef Series Hollow Edge Chef's Knife, 8-InchI have this knife and Shun 10". I prefer the MAC for everyday tasks. It the perfect size and balance. This model is a bit more durable than the MAC mth-80 model. Remember, there is always a tradeoff between sharpness and durability. If you want the sharpest knife, go with the mth-80, but don't cry when you chip the blade. The sharper the knife, usually the harder the metal, hence it is more brittle, but will retain an edge longer.

Of course, you can avoid chips by using the correct tool for the right job, but most people only learn this after they have chipped a couple nice knives. My Shun is definitely a harder and sharper material than my Mac, but it also has a couple large chips from friends.

If I could only take one tool from my kitchen on a desert island, it would be this knife!

My mom has had her MAC knife for over 25 years, it is beat, but still her favorite knife.

THE best knife! Use it for just about everything, except boning. Wound up buying another MAC knife for paring, and will purchase one for cutting chicken, etc., because I love THIS knife SO much!! I have been cooking most of my life. I have purchased numerous quality knives at various prices. All the gimmicks, all the "best", all the Top Chef recommended. $600 plus for one. And what knife has lasted and been used over and over with minimum care and attention? This one. A quick honing before and after each use, and I can run down a rack of ribs, slice a tomato, chop and onion, carrot celery and herbs, and turn a pork tenderloin into medallions without ever changing the knife while prepping. While serving I can use it just as easily to carve a bird or roast beef or pork.

When I guest cook or cater this is one of three knives I never forget. The other two are just about any bread knife or paring knife.

I bought this knife as well as the santoku knife a year ago. They are wonderful to use and I would recommend them to anyone who spends enjoys cooking. My wife thought I was being extravagant when I got them, but she has now made the santoku "her knife" and left me with the cooks. They are both wonderful to work with. We do a lot of chopping. We have a large organic garden and I also like to stir fry. One of our favorite salads is finely chopped lettuce, red sweet pepper, apple, carrot, cucumber and feta cheese. With these knives it's a joy. Do yourself a favor and get at least one MAC knife. In order to keep them at peak sharpness I recommend the porcelain sharpener as well. Remember to clean the sharpener or it stops working.

I decided to spend big bucks and buy one knife to improve my cooking (and make it less of a chore). This knife does the job. Excellent quality, not too heavy or too light. I'm able to chop any vegetables as finely as I want to. It is very sharp right now, but I plan to regularly take it to a professional knife sharpener in the future to keep it well-maintained.

Rada Cutlery Tomato Slicer Knife, Made in USA, Aluminum HandleI love this knife. For years, my most unfavorite part of making a sandwich or burger was slicing the tomatoes. I tended to cut the tomato unevenly, to make the slices way thicker than I wanted them, etc. This knife has completely changed the way I make a sandwich. It's so painless. Even the most unbelievable klutz (me) can slice a tomato well with this thing. As a bonus, it's made in the good ole' USA and it's amazingly cheap. At this price, even if the knife dulled out in a year or two, I would simply buy another one--it's a great bargain. The last knife I tried to slice a tomato with was a much pricier one from Chicago Cutlery, and it didn't do half as good a job as this thing.

Updated 1/16/2012:

It's been two years since I purchased this knife, and it's still the only way I can slice a tomato without frustration. Surprisingly enough for a knife at this price point, it has maintained its sharp edge.

These are truly very sharp, good working knives. I was so happy with the tomato knife that I bought a 2nd one, the steak knife set, and the carving knife. Love them all, except: Just be aware that (now that I've had them for several months) the handles are brushed aluminum which gives a good offsetting weight in the hand, however, the shiny silver color turns dingey gray. If you don't mind that-especially bec now they don't match the silver color of the blade, then they are a great buy. I would give 5 stars if they didn't discolor. NOTE: I NEVER ONCE PUT THEM IN THE DISHWASHER.

I started buying Rada cutlery at one of the big Home & Garden Shows because I was tired of cheap knives and of peelers that just didn't work. This tomato slicer is simply the best for the price you don't need to spend a fortune on the German brands this U.S. made knife is every bit as good at a fraction of the price. It does a superb job slicing delicate tomatoes and other fragile foods.

The knife stays extremely sharp I've nicked myself a number of times when I got too close to what I was cutting.

The only drawback, if you are into appearances, is that the handle will discolor if it is not dried after washing or if you allow it to sit in water. Also, these knives should not be put in the dishwasher if you care about appearance the handle will get darkened and somewhat pitted.

Okay, for those of you who critique reviewsyes, I know I'm using the same basic information for all the fabulous Rada products. If it really bothers you, please don't read any more Rada reviews I've written.

Quikcut Paring Knife

Quikcut Paring KnifeI'm sure cutlery connoisseurs may raise an eyebrow at this knife, but for peeling potatoes and small jobs, it's just the best.

I've tried others' knives on many occasions, and often wished I'd brought my own because I can whip right through a pile of potatoes. I was raised using a peeler gadget for potatoes and never thought I'd want to switch, but I prefer the Pampered Chef paring knife.

Don't use it for big jobs--it's much too flimsy for that. While it's great for peeling potatoes, I don't usually slice or dice potatoes with it.

While this knife may be dishwasher safe, I always hand-wash mine and they have lasted a long time. I've purchased several of these over the years (every time I get invited to one of those parties, it seems, they're only a buck and change) and have given several away and have two in my drawer. I am browsing the catalog from a party this weekend and see they have a special deal in garnet to match my kitchen. Guess what I'm ordering? I just love these little knives!

September 2011 update:

While I still believe this is a good little paring knife for the price, I've found something I like better: Kuhn Rikon Piranha Swivel Peeler, Red.

I have used this knife for years and it is a small all purpose knife. It is sharp sharp sharp!!! My Aunt bought the first ones for everyone in the family and we have been using them ever since. They will retain the edge for quite a long time and for the price you can replace them as often as you would like so buy more than one.

Great knife. If you take care of your knives, and keep them in a case in the drawer, these will last forever. I only own two knives, this one and the 7 inch Santoku. I use the Chef's knife the most! Recommend getting the plastic cases which will protect them in the drawer. The handle and balance is great. Haven't even sharpened it yet. Washes easily. I have small hands which is why I went with the 6-inch as opposed to the 8-inch. Don't buy a knife block with 9 knives. Just buy a good chef's knife and a pearing knife and you'll be good to go.

If you only had one knife to choose this should be it. The size is perfect for most of your kitchen chores. I currently own between 15 and 20 henckels knives of differing sizes and shapes and i find myself using this one much more then alll the others. The quality is typical henckels.Perfect balance,easy to work with,durable,etc. ,etc.

If this one ever wears out i wouldn't even consider another brand or style but would immediately buy another

Good value for money. Very pleased. Forgot how the nickname "grain eater" got stuck to my name but when I carved into my Heritage turkey, I realized great turkey eats grain also. Happy Holidays were had all round.

I only use the carving set for Thanksgiving and big dinners. The knife is sharp, the fork is strong and the scissors are quite handy while trimming. The case is nice, if a bit large for the set.
