But this works great for filleting any fish that requires a flexible blade. came out of the box sharp enough to start it on the job, and touches up nicely. It is a bit too flexible to skin any fillets over 5 or so inches because the tip of the blade starts to bow up. but for this price i can't complain! great knife recommended to everyone.

Japanese Combination Knife Sharpening Stone K-80

Japanese Combination Knife Sharpening Stone K-80These King Stones are legitimate Japanese Water Stones made in, you guessed it, Japan. They are extremely versitile and are the highest quality stones I have used. However, there are a few more good companies out there. Water stones are true to the craft of knife honing and sharpening and is a useful skill to teach yourself. I highly recommend watching virtuovice (YouTube Name) on YouTube for excellent tutorials on how to sharpen with stones.

The lower grit stones like the 250 and 400 are great for taking out chips in the blades or reprofiling the edge to fit your needs or preferences. As a camper who beats on knifes and axes, I really need this benefit to take out those chips and these stones do so beautifully.

A good stone grit to breach the gab between the lower grits and the finishing stone is the 1000 grit. This will help smooth out the edge and give it some great sharpness. It also makes finishing the edge with a 3000 or 4000 grit stone an easier and less time-consuming step in the process. Finally, you should use a leather strop with a green and black compound to really get a good edge.

Bottom Line and Reccommending Sharpening System:

1.) 250/1000 grit King Water Stone

2.) 3000 or 4000 grit King Stone

3.) Leather strop with compound

You only really need the 250, 1000, and 3000 (or 4000) grit stones with the strop. I have seen the strop put a better edge than 8000 grit stones. Keep in mind a strop is only 30 bucks or so, and you could almost spend $100 on an 8000 grit stone. This reccommended sytem will make a butter knife scary sharp if you wanted it too. However, the stones are expensive and will loose shape over time depending on how much you use them. But the time you use them will definitely yield better results than a spyderco Sharpmaker (I have one). I also reccommend some sort of a stone holder like the Steelex Sharpening Stone Holder. This works well and makes it easier to work with.

Nice stone for the kitchen. I use the #1000 side to keep my chef's knives razor sharp. Lay the stone on top of a damp towel, sprinkle with water, and working a knife is a breeze.

As a professional chef, I would not use any other sharpening stone. One can access videos on-line on how to properly use a stone if feeling intimidated. I bring it when I visit my family members so that I may sharpen all of their knives as well!!!

Zwilling J.A. Henckels Twin Pro S 12-Inch Honing SteelOh, I can't tell you how happy I am to have this well-made honing steel--it feels so good that I don't even have to force myself to go five strokes on both sides of the blade before I start chopping (as Dinosaur Jr. would have it). This is a very nice and solid piece of equipment, it looks pretty good, and it does what it's supposed to do very well.

Now, for those who say "it's not a sharpening tool!"--you're right. Then again, since I got this thing, and have started using it very regularly, I have not had to sharpen any of my knives, and yes, even blades that seemed all too dull were not beyond salvation. I cannot tell (though I know the definitions) were honing stops and sharpening starts, but I have the feeling that if your knives aren't in too bad a shape they might well benefit from a serious application of the steel. Don't offend the purists and call that 'sharpening'--but as long as your knives cut better as a result, who cares what the purists call it?

One final thing: as with many tools, size counts: 12 inches seems, to me, to be some sort of a minimum length for a honer--this one is long enough, and I certainly wouldn't consider a 10-inch steel.

You'll need one of these bad boys if you want to keep your knives in any sort of sharp condition.

I hone my knives on this steel a couple times before using my knives, and a couple times after using, to maintain a sharp edge. Periodically, every 6 months or so, I break out my Chef's Choice Diamond Sharpener to really sharpen my knives.

I have Wusthof Classic and Henckels Pro-S knives, which work fine with this steel. There may be other knives which have a hardness rating higher than that of this steel. This steel has a hardness rating of 66, so keep that in mind when you purchase your knives. And, Japanese knives must be sharpened at a different angle than German knivesI think it's ~10 degrees vs. 22.5 for ze Germans.

Most of us know the importance of sharp knives for proper food preparation and gracious serving. Of course, I had to learn the hard way by mashing a tomato instead of chopping it, by "sawing" a roast rather than slicing it, and by cutting and pulling off a plump roast turkey leg rather than carving it. Those are just a few of the reasons I'm such a fan of my Henckels Sharpening Steel.

After trying both a stone and steel, the steel is my favorite for ease of use and appearance. This steel is not only utilitarian but handsome with a ribbed handle that's easy to hold and silvertone handle guard and hanging ring. First off, a good way to test whether or not your knives are sharp is to hold a piece of paper by the top corner and then attempt to "slice" it. If knives won't do this head for the steel! You'll be amazed sometimes it takes only a few strokes on the steel to make your knife sharp, sharper, then sharpest.

Remember to place the metal end of the steel on a sturdy surface, such as a butcher block table or cutting board then position the base of the blade on the steel and begin. This Henckels sharpening steel is certainly a cut above any other. Gail Cooke

This 12" steel performs its job admirably, providing a nice long surface to stroke a blade across and developing a distinctive ring characteristic when the blade is struck across correctly.

I've been maintaining my blades for about six months with it and have had no need to pursue any further sharpening as of yet.

I got one of these with an Oxo bagel holder, and frankly I don't use it all that often. My kids are another matter. They tell me this is MUCH easier to make PB&J sandwiches with. They use it for jelly on toast, making sandwiches, putting cream cheese or butter on a bagel, etc. If you're an adult accustomed to just grabbing the nearest table knife, I wouldn't bother. But if you've got kids, you might want to consider it. The smaller size and grippy handle seems to be easier for smaller hands to handle and hey, they can make their own sandwiches to take to school!

The design,mfg. and usage are excellent but the choice of material is not. Since when is it OK to use recycled stainless steel in food products, this means the stainless steel they used contained scrap iron,steel, aluminum, motor oil,etc. This is indicated by rusty spot and staining on the blades. Why does made in USA have to follow USDA,NSF guide lines for our health but made in China does not, once again high profit margins are more important than our health.

First time we washed these in dishwasher rust appeared on blades. The blades are marked "stainless steel".

Very disappointed, other OXO products we have purchased were of good quality.

I have had this spreader for several years now. I really like it, but you have to take REALLY good care of it, or buy a new one every year or so. You must dry it immediately after washing, so that it won't rust (I wash mine in the dishwasher sometimes, but make sure to pull it out right away when it's done). Also, the grip at the bottom became unglued shortly after using it. This is possible due to me washing it in the dishwasher though.

Now when I wash the spreader, I remove the handle (water will get into the handle and you don't want that), wash it by hand and dry it off. Then I let it set a few hours more, and put the item back together again. If this sounds like too much hassle for you, then you might look elsewhere.

Kuhn Rikon 6-Inch Nonstick Colori Kulu Herb & Vegetable Knife, GreenI saw this and bought it because I've always wanted an herb chopper,I noticed right off the bat that you cannot use it like a regular straight edged knife, so if you're trying to chop up and down, you won't like it, it's more like a rocking motion, because of the circular blade. I went to the williams sonoma website and they have the knife plus a video, (just search for kuhn rikon herb) There's a woman demonstrating the knife and 3 different ways to use it. Holding it normally, 2nd, placing your hand on the inside lower part of the handle (my favorite because it gives more leverage) and thirdly using it backwards. Just look at the video, it's hard to explain. Positive points, it's very sharp, it does work. I minced garlic and cilantro with it. Negative points, it's supposed to be nonstick, but I had to wipe off garlic bits, and I could definitely live without it, it's cool but not indispensable.

I bought this mainly for cutting basil, but it's great whenever you need to chop vegetables or herbs. It doesn't "bruise" the tender herbs.

It is VERY comfortable in the hand and the blade sheath is necessary as the edge if VERY sharp.

i loved it when i saw it at William Sonoma. when i received it, i was very excited to use it. but the knife isn't that sharp, so the 'rocking motion' really didn't function that well. it's a great concept, had the knife been sharp. i ended up using it once, and gave it to my brother. he likes these fancy useless things.

When cutting, don't try to just push down the blade, instead use a sawing action.. it won't tug or pull the meat or sushi rolls when you do this... it will just slice right thru with ease.

DO NOT use oil to sharpen this knife. You must use a (water) wet stone. Depending on how much you use the knife will determine how often you need to sharpen it, however it seems to hold it's edge for a while.

Be careful of the blade as it can get nicks easily don't just throw it in the drain pan with your pots and pans. (I did this and wanted to cry.. but they rub out with the wet stone)

I don't know if this is normal for this type of knife or not, but the blade will develop a very light rust if you don't dry it off immediately and apply a very light rubbing of vegetable oil on it.

Overall, I just LOVE this knife. It has great balance and weight, the handle is incredibly comfortable and this knife makes everything soooooo much easier.

Well curiosity got the better of me and I discovered the following:

Yes, carbon blades have what is called a natural patina. AKA a natural very light/ orange rust is normal on carbon steel blades. Also, if you are like me and just don't want to see a "rusty" look, do as I suggested abovejust wipe with a little vegetable oil and you will have no visible patina to grate on your esthetic nerves.

I also learned that carbon steel is what allows the knife to obtain such an incredibly sharp edge and what makes them easy to sharpen.

In addition, carbon steel, white steel, and blue steel: no real difference except Blue steel does have a very slightly different composition that makes it marginally better quality. So don't be fooled by all the fancy jargon when shopping for your knife. Unless you are a professional chef who will use the knife 20 times in a single day, this is NOT gonna make the slightest bit of difference to any domestic user.

I also confirmed that the edges of the blade are indeed very prone to nicks b/c of the hardness of the metal (HRC 60-63) so yeah, you really do need to handle these kind of knives with care so that you don't nick the blade.

I even slide it in and out of the holder/sharpening blades a few times before each use but it doesn't help. It's no better than my other knives, which also need manual sharpening. Oh well.

Okay, let me say first that I'm a young man that knows his way around the kitchen. I'm also a young man who doesn't have a high opinion of Rachel Ray. My mom actually bought me this knife because she knows that I enjoy cooking. As soon as I saw Rachel Ray, I was skeptical. That being said, let me now tell you this; this knife has replaced my Henkel. I don't know what these other people are doing that dulls this knife...maybe they're using a glass cutting board or something. I've used this thing daily for about 7 months now and it is still razor sharp. If you're considering this item, buy it, you won't be disappointed....unless perhaps you're using a glass cutting board.

I was looking forward to getting a great knife and was excited when it finally arrived, but my delight turned into disillusionment when I opened the package. Although it was securely packaged, the self-storing stand was already cracked where the knife is inserted -obviously a manufacturing flaw. The plastic handle has a cushy grip, but when my hand got wet, the handle became slippery and hard to control -unlike my previous wood-handled knives. I have always wanted one of these since I saw Rachael demonstrate it on her show in "kitchen must-haves". I always had trouble keeping my knives sharp, even though I pride myself in my knife sharpening ability, someone else using my kitchen always threw my knives into the drawer with other knives and they would get knicks and dulled, (and I would be furious) I had a knife block for them to go into, but for some odd reason I am the only one in my house to get the concept that the knives GO IN THE BLOCK not in the drawer. With this knife... it has it's own stand/sheath, and it gets sharpened every time you take it out of the sheath and put it back in.

It can even get tossed into the drawer in the sheath and it will be protected and you won't get cut reaching into the drawer because it is safe.

It sits nicely on the cutting board or counter until I want to use it again.

It has a good weight to it, and feels good in the hand. It cuts beautifully and is sharp EVERY time!

I highly recommend getting one of these, it's expensive BUT WORTH IT!

This knife is a little pricey but worth it. It is extremely sharp (be careful when removing from holder). You won't have to dig through your drawer to find the right knife, this one will do it all. With the exception of a serrated knife and a small pearing knife, I got rid of all the other knives in the drawer that never cut right. You could keep it on the counter or put the entire piece in a drawer for safety, especially if you have children, you would not want to leave it on counter. Very sharp, very versitile.

My only partial complaint is that the tablespoons seem a bit on the large side. Everything else is perfect.

I like that thbis set came with some serving utensils as well. You can never have too many utensils around the holidays.

The tines on the forks seem a litte flimsy but I guess you get what you pay for. Better than others I have seen but not quite as strong as I would have liked.

Vidalia Slice-It Compact Slicer with 3 Blades & Storage CoverI got one of these at a thrift store more or less "on speculation" to see if it would work better than my plastic mandoline. Yes, it does. I just sliced up some vegetables for my stew and it went right through them: a couple of onions, some carrots, and a stalk of celery. I'm delighted with it. When this one breaks (thrift store, y'know) I'll be ordering a new one. And my mandoline is going out for the yard sale.

If you're running a commercial kitchen, this isn't your tool. But if you want to slice up some onions for the frying pan, or assorted veggies for the crock pot, it's more convenient than a knife and better than any alternative I've tried. Having the sliced-up vegetables land right in a measured container isn't to be sneezed at, either; it's easier than scraping up handfuls of veggies from the cutting board and dumping them into measuring cups.

It's not going to replace a good knife (and if you're buying kitchen knives, buy GOOD ones or eat out!), but it's a very fast, very convenient way to prep large quantities of vegetables at once. Definitely worth the money.

I love the Vidalia Chopping Wizard, so I bought this, but I'm very disappointed. It's hard to line up the pressing mechanism with the blades, and when you pull up on the pressing mechanism, it brings the blades and other things with it i.e. the whole mechanism falls apart, and you have to carefully put it back where it belongs without slicing your finger.

Chicago Cutlery Insignia2 12-Piece Block Knife Set

Chicago Cutlery Insignia2 12-Piece Block Knife SetI picked this set up recently on a lightening deal for $49 and that is why I give it three stars instead of two, which I would have if I paid the regular Amazon price of about $84 for the 12 pieces. I really like the heft and balance of forged knives, especially steak knives, so I was eager to give these a try. They arrived extremely sharp, no complaints there. The handles are thick and heavy giving these a very substantial feel. But, the three problems I found were:

1) Four out of the nine knives in my set had small chips in the cutting edge (two steak knives, the 5 1/2 utility and chef's knife). So I had a replacement set sent, which arrived before I shipped the other set back. Good thing I waited to send the first set back, as the new set had three knives with chips in the blades. These chips appear to result from grinding the soft metal too thin or aggressively at the factory. These are tiny chips, but they pose a potential rusting issue (see problem #3 below) as well as an aesthetic one. The utility knife also had some issues with the edge being rolled a bit along the two inches closest to the handle, further indicating just how soft this metal is.

2) The workmanship is shoddy around the bolsters and handles. If I hold the knives up pointing at the ceiling with the cutting edge facing away from me and look at the bolsters, I can see that the curved bolster is lower on one side than the other on about half the knives (easily an eighth of an inch or more on some of them). This is not a deal breaker to me as it is something I can easily live with-it just shows a lack interest from the people making these. There are also gouges and scratches around the bolsters and across the handle tangs on all of the knives, as well as on the plastic parts too. Almost all of the cutting edges are ground unevenly, with grind marks that have wandering widths along the edges much like my only other Chicago Cutlery purchase, a chef's knife Chicago Cutlery WSF 7-3/4-Inch Chef Knife, Sheath Packaging that I gave as a gift to my mother.

3) These can rust in a hurry! The very first time I used a steak knife it rusted in three places. While cooking up a huge meal, the original block of knives was sitting on the counter while I was mulling over requesting a replacement set and I used a couple of these. Later, I put four knives (two from this set) into some water in a dish in the sink to soak for a few minutes so I could clean them more easily. I forgot them until the next morning and was astounded to find the steak knife badly rusting along the chipped area on the blade, as well as on the bolster where the plastic handle meets it, and on one round spot on the side of the blade. One of the paring knives from this set was also soaked over night but it did not rust, so maybe that tells something about the varying quality among the individual knives.

I have had many stainless knives over the years, including some incredibly cheap ones (Maxam brand, eight dollars for 14 pieces at my local hardware store) that have never rusted after much worse abuse than this. The two other knives that were accidentally soaked over night were Victorinox brand stamped steel knives, the (Victorinox 40520 Fibrox 8-Inch Chef's Knife and a paring knife from this set Victorinox 48042 Cutlery 3-Piece Paring Knife Set ) that have never hinted at rusting.

This Chicago Cutlery knife set is a low cost way to get the heft of forged knives without paying several hundred dollars, but the compromise is much softer metal that is more likely to rust than other cutlery and a lot of poorly finished parts. With the low price I was not expecting premium quality, but was still surprised by the chips and rapidity with which I found one rusting. I was able to put together a whole set without chips from the two sets Amazon sent me and shipped the worst ones back. Overall, I think I can enjoy these knowing I paid just fifty bucks for them but will have to steel them often and never, ever, let them be wet for very long. For the money, and after I combined my two sets to get blades without chips, I think I ended up with a three star product.

This knife block set is great for the average home cook! I use it all the time and each knife works well. The kitchen scissors is especially handy, and the knife sharpener is convenient. The wooden block looks really nice next to our wood cutting board. To keep these knives looking their best, try not to wash them in the dishwasher very often or the black handles will fade a bit.

Bought this same set almost 10 years ago and probably paid more for it back then. Reading the reviews I was concerned about quality and a careful inspection did find some cosmetic issues. I looked at my old knives and found they had some of the same cosmetic issues though in ten years I had never noticed them. The new knives feel good when handled, are very sharp and I expect will also last ten years. Simply put, a great value for someone wanting very good knives at a bargain price.

This set has just the right number and type of knives needed for our cooking. They are of very high quality, with all the best features from the blade to the handle. I was amazed at how well they handle. They are nice looking. I can not imagine another improvement they could make.

KV Undercabinet Pull Down Cookbook RackI am enjoying this product. It allows me to set the cookbook at an angle so I can read it from a few steps back. We had a great space for it to. It is rather large. It did not fit under our normal cabinets, only because we thought it took up too much of our counter space in our small kitchen. Instead we put it under a cabinet next to our stove, where there is no counter below. I do not think the price is right. It is stable and sturdy, but I think 50$ would be more reasonable.

Oneida Corduroy 62-Piece Flatware Set, Service for 12This flatware is awesome. The weight is perfect(not cheap feeling at all) and the shine is bright. I like that the salad fork is like a mini dinner fork. It's not one of those fat forks. The dinner fork is a nice big size which my guys like a lot. There aren't as many serving pieces as some sets but we never used the butter knife or gravy ladle in the old set anyway. However, this set can be used with any simple extra pieces you may have just fine. This pattern is a modern/classic style and will go with lots of different dishes as well. It really dresses up the table. Even my teen boys were impressed when they saw it for the first time. We use it daily and so far it is holding up to our abuse just fine.(like I said, teen boys!) Getting such a quality service for 12 at such a great price is one of the best deals I've made...and I love deals! You won't be disaappointed in this set.

I love this set. The pieces are large. When I first opened the box, I wasn't sure if I would like the size of the pieces, but once I used them, I knew they were perfect. Very nice quality and weight and it is easier to eat with the larger size. My husband is very pleased with this set. They are shiny and beautiful and the pattern isn't too fancy, but perfect for everyday or formal use. I use mine everyday. I am completely satisfied and happy I purchased it.

Relatively plain but a bit eleganr; can go with just about any placesettings; I really like them because the forks and spoons are no shovel sized and the prongs are sharp enough to actually grab food.

Attractive Cheese Board. Seems well made (only used twice up to this review). Cheese knives also nice and effective. Definitely quality packaging. My only complaints are one of the cheese signs came broken. I simply glue the post back on rather then hassle with a return. Also it was fairly pricey by comparison to others and is a bit smaller in size as well. Again slight knocks but overall pleased with the purchase
