J.A. Henckels International Forged Premio 8-Inch Chef

J.A. Henckels International Forged Premio 8-Inch ChefI bought this knife to replace it's relative, one that was just in the price range below this one. The difference is obvious in the heft and balance. A good weight for some serious chopping time without wearing out your arm. Durable blade, has survived the dishwasher, cutting through smallish bones (chicken, rabbit) and it still sharp as ever.

Excellent knives with a reasonable price. I bought five of the same type (Forged Premio) bread, 8-inch chef, 6-inch utility, 3-inch, and 5-inch santoku. Every one of them is amazing, very sharp, a pleasure to work with. A 3-inch may be a little heavy to do a lot of peeling.

You can't go wrong with a JA Henckels knife. This is my second knife from them (I have a smaller chef knife) and the quality is superb. Keeps a good edge, weighted well and is very substantial.

Weston 61-0901-W 9 Inch Heavy Duty Food Slicer

Weston 61-0901-W Heavy Duty Food 9-Inch SlicerIt's a geat meat slicer. The 9" blade makes slicing large pieces of meat a breeze. The suctions on the base keep it from moving while it's running. Also, the clean up takes minutes. Thank you Weston for a great product.

Looked all over for a slicer wasn't impressed with what I saw.

When this slicer arrived it looked very good and when I put it to work it did the job just as I wanted. Cleanup is a snap and it doesn't take up the whole counter.

Looks like the person that designed this machine had actually used one and tried to make it the best he could. For the money it is a five star machine and I am impressed.

I bought this food slicer due to it's large blade size and it's claimed more powerful 150 watt motor. When I received it I let the unit warm to room temperature and tested it. The motor growled loudly and the blade spun slowly at about 40 RPM. I called the included manufacturers 800 number to report this. The CSR said they would send a replacement and a pickup slip for the defective unit, which they did. The only problem there was it was a residential pick up which still cost me $9.00 freight to exchange. When I received the replacement I tested it right away. It seemed to work properly until I put it to the test. I had prepared, the night before, a 5 pound sirloin roast beef to make Chicago style Italian beef sandwiches for my super bowl party the next day. Even though the meat was well chilled and tender the slicer could barely cut a clean slice. About a third of the way through slicing the roast the blade slowed considerably and then the drive mechanism broke. The price paid for the ordered pizzas for my guests exceeded the price paid for this slicer. Needless to say it was two strikes and Westin was out. I returned the unit to Amazon and received a full refund. I would advise not buying this slicer as it's quality is dubious.

Only have had for a week sliced some deer up for jerky worked great on slightly frozen meat(makes i easier to slice that way). easy to clean up. Watch the blade when cleaning is very sharp a fillet glove would be a good idea for the hand that handles it and holds the meat. Only thing is the motor could use a little more power it got slightly warm cutting up 8 lbs of meat 1/4" wide for my jerky. I would recommend it for anyone. Have about 40 lbs of deer left to do any problems with it i will post them.

I've had two slicers before this one and both worked well, for what I paid for them. This one has a great motor and a belt drive, stainless steel food tray tilts for easy cleaning. I love the adjustable thickness control for slicing from deli-thin to over 1/2-inch..., Best Part, it does not move well slicing the meat as my other two did. On/Off safety switch is covered BIG PLUS and cleans up very well...

The one VERY BAD THING is the press that goes between your hand and the food you are slicing. It does not have a track to hold (LOCK) it on the sliding carriage, so when you are pushing the carriage forward, you have to hold down the food press while you are pushing the food into the blade. If you forget to do this, you will find your hand in the VERY SHARP BLADE!!!

If you have used a food slicer before, this is a very good one, for the money. I have no problem using it, and like it very much, but I warn you, IF THIS IS YOUR FIRST SLICER..., BUY A BETTER ONE!

Look at the photos very closely and read the reviews! This is a great food slicer for the money it costs. I also highly recommend you get kevlar gloves for your hands if this is the first slicer you are buying, they come in very handy when you are cleaning the blade also!

I would have given it 5 stars but the food press does not lock on the carriage!

Rösle 12724 Cheese Knife

Rösle 12724 Cheese KnifeExcellent cheese knife. I have many Rosle kitchen utensils and they are all wonderful. Quite pricey, but in my opinion worth the money, as you'll have them forever. I've had this knife for years and it is still extremely sharp and looks in perfect condition, due I'm sure to the high quality metals they use. Recommended, no question.

One of the few knives that really does what it is supposed to do: cheese doesn't stick and you can cube cheddars, slice Brie, etc. easily. Buying more as hostess gifts.

This is the best cheese knife we've ever owned. It stays sharp and it's great for other things like tomatoes and fruit. It slices through cheese very easily because of the large cut outs. It's an excellant marriage of form and function. It also makes a great gift and emulated the high quality of the Rosle brand.

Zwilling J.A. Henckels Twin Four Star 6-Inch High Carbon Stainless-Steel Chef's Knife

Zwilling J.A. Henckels Twin Four Star 6-Inch High Carbon Stainless-Steel Chef's KnifeWe got one as a wedding present ten years ago. The quality is superb. With a twice-a-year honing, this knife remains incredibly sharp, is well balanced in your hand, and slices with ease even the toughest meats. With careful handling, the blade and handle have not worn at all, and will probably outlive me. One caveat for those who do not have high-carbon steel knives: they do require more care (ex. don't put in dishwasher, don't let blade touch other metal, don't use crude electric sharpener). Don't let the babysitter try to pry-off bottle caps (sadly, the matching 3" paring knife met its end this way). If you appreciate fine quality in this age of throw-away, this is a knife one could be happy with forever.

I bought this one today, my first high-end cutlery purchase. It's so worth the price. I spent a lot of time in the store handling the different brands of knives, getting a feel for their construction and how they sit in the hand, and this one was definitely the best. The blade is a thing of beauty, and the handle is incredibly comfortable, not likely to hurt your hand a bit after long periods of continuous cutting. When I got it home, it performed just as beautifully as I expected. I'll definitely be saving up for more Henckels Four-Star knives.

Buy Zwilling J.A. Henckels Twin Four Star 6-Inch High Carbon Stainless-Steel Chef's Knife Now

This has been my favorite knife for years -I had it so long I can't recall when I got it. I already had an excellent set of Sabatier knives, but the handles were a bit thin and had somewhat sharp corners. One day I had occasion to use a Hencklels Four-star, and instantly fell in love with the voluptuous handle. It felt soooo good in my hand. Note that I have largeish hands, if you have smaller hands this might not be the knife for you.

I already had a 10" chef's knife, so I chose this 6" "sandwich" knife (that's what they called it back then). It has been my workhorse for years. I can put an edge on it that will shave hairs off my arm (but not quite off my face :-). Alas yesterday the blade snapped while cutting a sweet potato. No bending or twisting, just pressing down pretty hard, and bing! Mind you it had received daily use for well over a decade, if not two.

Now that I have to replace it, I think I'll go with an 8" blade. This 6" size was just a tad small for general purpose use, and I have plenty of other smaller knifes. I may get the 8" equivalent of exactly this knife, but am also considering the W'sthof Grand Prix II 7-Inch Fine Edge Santoku Knife. I'm hoping that design will keep my knuckles from bumping into the cutting board.

Here's a free tip: when pushing food around on the cutting board, use the BACK side of the knife. Don't drag the sharp edge across the board.

I just wanted to write this review to let everyone know that this knife is very good and worth the money you'll spend, however in my opinion Henckel knives have one flaw. I can't stand the little metal piece at the bottom of the blade. It's a sort of finger guard they built into the design. I cooked for a living for three years and had the opportunity to use everything from a 25.00 plastic grip knife we used to bust up lobsters all the way to hand forged Japanese $500 knives. If you are super picky about your knives that little piece of metal will drive you nuts because it hinders the sharpening of the last inch or so of the blade. Overall I would get a Global knife if your looking for something in the same price range. It is a lighter knife but excellent quality. If your looking for something with enough heft to chop a Volkswagen bug in half the Henckel still might be for you.

Norpro KLEVE 7 Inch Carving Fork

Oak and Walnut Steak Knife Block

Oak and Walnut Steak Knife Block, Cherry and WalnutI purposely chose this knife block because it was made in the USA. While the workmanship is adequate, I do have to admit that I'm a bit disappointed it was not made better. When laminating sheets of wood together, there should be no gap between laminations. This has some minor gaps. The finish is a bit on the thin side. Had a finer saw-blade been used when cutting the block to size, the finish would probably have looked better. Unfortunately, either a dull blade, or a course one was used and saw marks can be seen beneath the finish.

While this steak knife block is attractive looking and quite serviceable, I pay a bit more for American made products because I expect superior quality. Mine didn't have that. I hope that was a fluke.

I bought two of these steak knife blocks and really like them. You can tell right away that the blocks were carefully handcrafted, the slits are all even and appropriately vertical. The price is a bonus because one would expect these to cost much more!

Wusthof Gourmet 23-Piece Block Knife Set

Wusthof Gourmet 23-Piece Block Knife SetBought these as a step up from the crappy Pinzon knives we bought from Amazon years ago. They were shipped from Macy's and Yay! they shipped to APO addresses. Let me tell you, when these things arrive they are SHARP! However, these aren't Wusthof's top of the line by any means. Some of the steak knives were full tang, some only partial. Most of the blades are pretty thin, with the exception of the larger blades (santoku, cook knife, cleaver, etc.). And the included block clearly wasn't intended for this set. It's short two slots, so I had to double up on some of the knives, while the slots for the smaller knives are too big, leaving way to much wiggle room. But using these knives is a dream. They glide through produce and veggies with nary an effort. I've been using them for over 4 months now, and they still seem as sharp as the day I got em. Been using the steel only when I felt I needed to, and have used the provided Wusthof pull-through "sharpener" as sparingly as possible. Would I buy this set again? For the price I paid (on sale) yes. But I do think I'll spend the extra money and get Trident Classics or their Grand Prix2.

Jamie Lynn Elegant Metal and Frosted Glass Vine Cake Knife and Server Set

Jamie Lynn Elegant Metal and Frosted Glass Vine Cake Knife and Server SetThe picture and reviews gave me high hopes for a decent product. The design looks elegant from far, but the quality is very poor. The blade of the knife and server seem like they are made of plastic and coated with metallic film. Both items have dull edges. Mountain Woods Adjustable Fiddle Bow Knife Oak (Right Handed)

Mountain Woods Adjustable Fiddle Bow Knife OakI have had one of these for nearly 10 years, and it works beautifully. I don't understand the other reviewer who said it tore up the bread, except to say that just baked loaves of bread hot (or warm) from the oven do not slice well. Experienced bread bakers all know this. Always let loaf bread cool off completely for the best slicing. Then you can always re-warm it. If you want something hot from the oven, make rolls or biscuits, something you don't slice!

It does exactly what I need and It also excedes my expectations. I can slice everything the exact thickness I need.

I just can't understand the negative reviews on this product; I have had mine for 9 years now and have NEVER had a problem with it. In fact, I came across these reviews because I am looking for one to give as a gift. I presume the negative reviewers must not be using this tool correctly; let bread cool completely and lightly saw back and forth --no force is needed, even in thick breads with raisins and nuts. That is unless the company changed the blade in favor of a cheaper version, but I doubt it.

Hampton Forge Table Setters Stainless Steel Fanfare Flatware Set, Service for 4I assumed, given the price, that this silverware would be higher quality than Walmart junk, but I have found it to be flimsy, easily bent, and pathetically thin. Shappu 2000 Stainless Steel Professional Cutlery Set, 10-Piece

Shappu 2000 Stainless Steel Professional Cutlery Set, 10-PieceThe moment I opened the box and held one of these knives I thought they were flimsy but I shrugged it off and didn't think much of it, 2 days later the first steak knife broke by a week after we got this set we had lost two more. It's only a matter of time before they all break so do yourself a favor spend a little more on a set that will last longer then a month.

These knives are a joke! They are so bad in quality you are unable to cut anything! It actually becomes very dangerous to use them because the blade is soooo thin it flops all over when you're cutting. The first (and last) time I used one was cutting cabbage and the knife kept sliding off the cabbage because it wasn't strong enough to cut through. Very dangerous! Do NOT waste your money!!

Joyce Chen 33-0022, Sushi Kit

Joyce Chen 33-0022, Sushi KitI experimented with making sushi this past weekend, and used this set to do so. I used the rice paddle to turn and vinegar the rice, as recommended in "Sushi For Dummies." The mat made rolling the maki rolls a breeze I was expecting it to be MUCH more difficult than it was. I would recommend that you purchase more than one mat if you are not making sushi alone. There were two of us and it would have been more fun (and productive) to each have a rolling mat.

Word of caution though: If you are making sushi for the first time, consult a reference other than the pamphlet included with this set. It is not detailed enough to use for a first sushi attempt!

I bought this last year for my husband and it is great. We use it quite often. The only problem we've had recently is we can't get the mat clean, but I figure after a year of use it's time to get another one anyhow. The book is simple but it has a sushi rice recipe which is the most important part. I really like it!

Buy Joyce Chen 33-0022, Sushi Kit Now

I was pleasantly surprised when I received my Sushi Kit. The mat is of good quality. The spoon will work well for making sushi rice and it even comes with a little pamphlet with some basic instructions for making sushi. The pamphlet although small had some great tips and pointers that my other sushi books have failed to mentioned. For the price this is a great deal!

Read Best Reviews of Joyce Chen 33-0022, Sushi Kit Here

First time making sushi, and I've been addicted to making it ever since! The mat does what its supposed to do, I see no reason to spend more money on a "better" sushi mat.

Interesting tip for those that like to make sushi with the rice on the outside: Most people wrap their mat in saran-wrap so the rice doesn't stick. The problem with this is that the saran-wrapping part is actually sort of a pain and often comes off in the rolling process. My solution: Get a big, ziploc freezer bag and put your mat in it. Not only does it do the same thing, its easier to deal with and never comes out of the bag. Also, you don't have to waste plastic because you can just wash the outside of the ziploc bag.

Want Joyce Chen 33-0022, Sushi Kit Discount?

Sushi rollers are pretty cheap in general, but I was too lazy to go to Chinatown and pick one up so I thought I'd try my luck online. I was surprised that the roller is bumpy on both sides, and the string holding it together is very loose. I've made sushi before on better rollers of the same price, decided to go to chinatown to pick one up instead.

That said it's not unusable, but you need to put a layer of cling wrap on the roller if you don't wanna get sushi rice stuck between the bamboo. Also you won't get very tight rolls, but with a little practice it'll work.

In general I was pretty disappointed, probably will just give this away.

Wusthof Classic Knives Cutlery Set with Storage Block, 12 Piece

Wusthof Classic Knives Cutlery Set with Storage Block, 12 PieceWUSTHOF TRIDENT. This German firm, headquartered in the knife capital of Europe, in Solingen, has been in business since the early 1800's. Over time, Wusthof ascended to the pinnacle of knife manufacturing by innovation, the use of the highest possible quality steel alloys, and impeccable craftsmanship. Attention to detail is almost obsessive. Wusthof knives are the benchmark, the reference, in professional culinary knives...the gold standard by which all other kitchen knives are measured.

Do not believe the review here alleging that Wusthof QC, Quality Control, "QA" as he calls it, just sucks...well, ain't true folks. Wusthof has A+ Quality Control. View the Wusthof website video showing all the manufacturing and quality control steps taken in making fully forged blades, beginning with forging and ending with packaging and shipping, including obsessive quality control checks at each and every stage of craftsmanship. An outstanding, informative video.

Wusthof knives are still forged in the traditional manner, gaining the respect of culinary professionals. Cheaper methods can be used, such as the sintered construction of Henckels. These are the CLASSIC design preferred by so many chefs. Inroads by Japanese makers of Japanese blade styles are giving Wusthof some tough competition, so Wusthof has responded by making knife lines incorporating Japanese styling with German precision in manufacture...so you might want to shop the Wusthof Ikon line as well.

I can only review what I actually own and use, this Classic line, regardless of how many are in a set. These Wusthof Trident Classic knives have been in my possession, in a more complete set than that offered here, since 1991. These knives are my old friends, and I am on intimate terms with them. To proceed...

PROS:

*HOT DROP HAMMER FORGED. Stubbornly refusing to change to cheaper, lower-quality methods such as stamping or sintering, these knives are still hot drop hammer forged, fully forged blades. The metal used is a fine quality, highly unique carbon stainless steel alloy similar to, but superior to most top tier German knives such a Henckels, Victorinox/Forschner, and F. Dick.

*FULL TANG, RIVETED HANDLE PREFERRED BY MOST CHEFS. The handle is of commercial quality and strength, full-tanged and securely triple riveted in the traditional style preferred by most chefs because of its strength and universally comfortable grip, with sanitary POM synthetic scales (what the handle itself is made of).

*HAND-FINISHED. Each blade and handle is hand-finished to a high standard, by HAND. New knives arrive razor sharp, so learn to keep them that way.

*HUGE RANGE OF KNIVES, I MEAN HUGE. No other knife manufacturer offers so many different shapes, sizes, lengths, widths, and styles...a mind boggling array of choices. See the online Wusthof catalog: Santokus, both flexible and stiff fillet and boning knives, hollow edged "Granton" or dimpled blades are available in many styles. Wusthof Trident offers various sizes of offset bread knives, salami knives, cleavers, and hard-to-find very long salmon and ham slicers. The selection of blade types is too extensive to list here...go to the Wusthof Trident website.

*NEW, 14 DEGREE ANGLE BLADES: A huge improvement over the old 20 degree angle blades of the past Classic series. More in line with 15 degree angle Japanese knives, the sharper angle slices much easier so instead of an "axe-like" wedge you get a thinner, much sharper, easier slicing blade...more ergonomic and less fatiguing. I am so glad to see this change...it is about time.

*AT HOME, EXPECT A LIFETIME OF USE. A chef goes through knives far faster than any home cook. For the rest of us, expect decades of use. It is a cheap investment, a pittance, spread over the years. Will the set to the kids.

CONS:

*COST IS HIGHER THAN AVERAGE, BUT THE QUALITY IS MUCH HIGHER THAN AVERAGE. These quality blades are actually lower in price than much of the Japanese competition. They are a joy to use, and make cooking preparation enjoyable. You look forward to facing the cutting board, at least I do.

*HARD TO DEMO IN STORES. Most people like to handle a knife, to try it on the store cutting board to test the comfort of the handle, the balance or heft, or the rocking action of a chef's knife. A few kitchenware stores like Williams-Sonoma or Sur La Table might let you try out knives on their cutting board. Whatever the case may be, make certain that the return policy allows returns if not happy. The comfort and performance of most knife shapes and sizes are important, but not extremely critical, though the chef's knife IS of critical importance. When you receive your knives test your chef's knife with various cuts, if not happy then return them. Or order the chef's knife first and test it. If you like it then order the other matching knives.

WHAT KNIVES DO YOU REALLY NEED?

Speaking from experience, from someone that over-bought (I have the Wusthof MegaBlock filled with 17 knives (including a cleaver, steel, shears, and carving fork) plus 8 steak knives, I can recommend buying open stock so that you only buy what you REALLY need, and what you REALLY will use 99% of the time, what most chefs lug to work in their Knife Roll.

The large knife block set shown above has too many open slots. This is offered to encourage you to fill them with knives you will rarely need, unless you just like collecting knives, or there is a blade or two you need for your personal preferences. This is why I prefer a large, long Magnetic Knife Bar to a Knife Block...more flexible and versatile.

This cost-cutting set's knives are mostly too short. The set could be markedly improved with a longer 9"-10" Chefs/Cook's, a longer 9"-10" Slicing, and a longer 9"-10" Bread, while the 5" Boning could be swapped for a longer 6" Flexible Boning Knife (works for filleting too)...the 3.5" Paring is just fine as it is, but you might also look at a 3.5" Micro-Serrated Paring Knife (micro-serrations on the rear of the blade, non-serrated on the front 2/3rds, for tough-surfaced fruits and veggies...very versatile).

Perhaps now you can see why buying open stock is so much better...YOU decide which blade is best, piece by piece, NOT the manufacturer. As you read the long review below, I hope to convince you to take the minimalist fork in the road, as would most professional Chefs. Many consumers, not knowing any better, not knowing how to select each blade, just buy all of them and be done with it, as I did when I was blade-ignorant years ago. Why waste money and counter space with a huge knife quiver? Save your money and apply that to some exquisite All-Clad cookware.

A MINIMALIST KNIFE SET is just three Essential Knives: When you are certain you have all the knives you want, then buy a knife block. Or, buy an even larger block then slowly fill it over time if you like collecting knives. Some folks like a magnetic knife bar mounted on the wall above the cutting board.

You might begin your knife assortment with just the three most essential blades: a Chef's/Cook's Knife, and a Paring Knife, and a Serrated Bread Knife. A more useful, realistic selection is about double that...consider going with following six blades. Anything more than the six knives listed below will seldom be used, unless you have some very specific needs If so, you can always buy that needed blade at the start, or at a later time as the need keeps arising, rather than buy a large quiver of knives, most of which just sit there year after year, seldom, if ever, being needed or used. Buying only the knives you need, is buying smarter It means you can afford the cost of a few high quality, durable, and super performing knives. Before going into more detail, let us start at the beginning...

THE THREE ESSENTIAL KNIVES

1) 10" CHEF'S KNIFE: An 8" Chef's Knife is a bit short for a pile of veggies; most chefs use a 9"-12" blade. Jacques Pepin urges a 10" blade for home use even if you are short in stature or have a small hand; you soon become accustomed to it...never go smaller than 9" if you only have one chef's knife, in my opinion. Do not buy a Granton blade model...the plain edge lasts longer.

2) 3.5" SPEAR POINT PARING KNIFE: for peeling, slicing, garnishing, eying, and stemming of veggies/fruits. After

your Chef's Knife, the Paring Knife is the next most useful knife in your knife quiver.

3) 5" SERRATED UTILITY KNIFE or 6" "SANDWICH KNIFE: serrated edge with a sheep's foot tip, or perhaps the somewhat specialized fork-tipped, serrated Tomato Knife. This smaller, precise serrated blade is superior to all others for fruit/citrus, tomatoes, sandwiches, rolls, and smaller, precise slicing jobs where a slippery, tough outer surface, or hard crust must be dealt with. Of course, it also cuts softer surfaces too, and can do anything a plain edged Utility Knife can do.

This knife is also popular with bartenders when making drinks needing citrus slices. The Scalloped Utility Knife is an always useful, often overlooked blade. Many chefs or home cooks might prefer a 5-6" "Large Utility" or "Sandwich Knife" instead of the serrated version, using the serrated Bread Knife instead, as clumsy as a long, thicker blade is for slicing small fruit and tomatoes where serration is called for.

THE NEXT THREE MOST IMPORTANT KNIVES

4) 6" FLEXIBLE BONING KNIFE: for separating the bone from the meat, AND for filleting fish; separate boning and fillet knives are then not needed. This model has a dual-purpose flex. If you do a great deal of meat/poultry boning, or filleting of fish, buy separate knives for each function, such as a 5"-6" Stiff Boning Knife, and a 7" Flexible Fillet Knife. Most people can get by with this single somewhat flexible blade unless you often fillet fish which requires a dedicated, very flexible Fillet Knife; or if you frequently bone meats which requires a stiffer, dedicated Boning Knife.

5) 10" ROUND TIP HOLLOW EDGE SLICING KNIFE Granton Edge: dimpled edge; a more stiff blade for slicing larger beef cuts and and hot meats. Some chefs also use it for poultry; to slice chicken or turkey breasts and de-boned thighs instead of using the more flexible Spear Point "Carving" Knife discussed below. The Round-Tip Hollow Edge Slicer is often used in delicatessens and sandwich shops to thinly slice large cuts of meat.

Some home cooks prefer an 8"-10" Spear Point "Carving" Slicing Knife, for versatility, instead of a 10" Round Tip Hollow Edge Slicer. Research this for yourself if you have not yet decided. Longer blades make thin-slicing easier, shorter ones cut more precisely to match small meats, poultry, or medium to large fruits and veggies. The Slicer can also be used for salmon, but salmon lovers will eventually buy a specialized, long and very flexible, much thinner bladed Granton Fillet/Salmon Slicer. Some chefs use this Round-Tip Hollow Edge Slicer lacking a true butcher's knife for fabrication (breaking down a side of beef or very large cut such as entire loin or a full rack of ribs).

6) 5" SERRATED UTILITY KNIFE (or "sausage knife"): serrated edge with a curved-down sheep's foot tip, or perhaps the somewhat serrated Tomato Knife with a forked tip for lifting the tomato slices. Some Chef's would not include this blade, but I do. This smaller, precise serrated blade is superior to all others for fruit/citrus, tomatoes, sandwiches, rolls, and smaller, precise slicing jobs where a slippery, tough outer surface, or hard crust must be dealt with. Of course, it also cuts softer surfaces too, and can do anything a plain edged 6" Utility Knife/Sandwich can do. This serrated knife is also popular with bartenders when making drinks needing citrus slices. The Scalloped Utility Knife is an always useful, often overlooked blade.

(7?) 7" GRANTON EDGE SANTOKU KNIFE: a possible 21ST Century candidate as a seventh essential knife (see below).

SPECIALIZED or OPTIONAL KNIVES (Here is where you get into trouble...over-collecting, cool it)

* 2.75" BIRD'S BEAK PARING, PEELING, OR TOURNE KNIFE: for peeling rounded foods, "turning" or "shaping" veggies and small fruits, stemming or fluting mushrooms, scoring, and several other garnishing tasks. Always included in a culinary student's knife roll, but not often used in home cooking except, on occasion, by advanced home cooks.

* 8"-10" SPEAR POINT "CARVING" SLICING KNIFE: Granton Edge: spear point with dimpled edge; more flexible than the Round Tip Slicer. For deft carving, especially if you cut up poultry very often; for turkey, chicken, duck, large fruits and veggies, and for general slicing buy the 8" size. This Slicing Knife is the ideal poultry slicer, but it can slice beef or ham, but not as well as Round-Tip Hollow Edge Slicing Knife.

Some chefs use an 8" "Carving" Slicing Knife for small-to-medium boning and slicing, as a large Utility Knife/Carving Knife (most Utility/Sandwich Knives are 4"-6"). If you intend to buy no other slicing knives than this Spear Point Carving Knife, opting not to buy the 10"Slicer detailed above, consider buying a longer 10" Spear Point Carving Knife (longer blades make it easier to slice more thinly, but if buying both, buy the 8" Carving Knife and the 10" Round Tip "Beef" Slicer).

* 5"-6" STIFF BONING KNIFE: the stiff blade provides more control and safety when working around ribs and large bones, preventing slipping. The stout blade is also perfect for testing cooking meats. If you rarely fillet fish, then select this blade alone instead of the Flexible Boning Knife discussed above, or the Flexible Fillet Knife discussed below.

* 7" FLEXIBLE FILLET KNIFE: a very flexible blade, specialized for filleting fish, and for slicing poultry very thinly, such as carpaccio. If you very often prepare fish, it is best to buy a whole fish and fillet it yourself, because you can better determine freshness with a whole fish instead of a pre-packaged fillet. If you opt for this blade, then instead of the 6" Flexible Boning Knife listed above (used for both filleting AND boning), use this longer, specialized 7" Flexible Fillet Knife just for your filleting, then go with the more specialized 5"-6" Stiff Boning Knife just for the boning jobs.

* 7" SANTOKU KNIFE: hollow edge (Granton). This versatile blade often is selected in preference to a smaller 8" Chef's Knife. Use it for precision chopping and slicing; for the deft chopping of smaller amounts of veggies, and for exacting general slicing jobs. Perfect for mincing garlic and shallots as well.

* 6"-7" MEAT CLEAVER: this specialized design is needed if you often do small butchering, breaking down a large cut of meat(fabrication). It will chop through thick bone, gristle, and ribs that would chip and damage other knives.

ESSENTIAL KNIFE ACCESSORIES

1) 10" STEEL (honing steel): Absolutely required to keep your knife edge honed as sharp as possible. Always hone with your steel prior to cutting--get in the habit of doing so.

2) KNIFE SHARPENER: Buy the best you can afford. Arkansas stones are good...it pays to research the new sharpeners and knife sharpening websites. If you use hand held sharpeners it is critical that you ensure that the sharpener angle matches that of your knives or you will damage your blades.

3) CARVING FORK: Required to hold meat, poultry, or large fish securely while carving and slicing.

4) KITCHEN SHEARS: As you know, Kitchen Shears are endlessly useful for snipping string, opening packaging, and for cutting some foods. If you cut up whole poultry very often then Poultry Shears should also be bought to make cutting easier and faster than with a knife, in many cases.

I did my research and held off purchasing these for almost a year. Be cautioned that there's knock off set much alike at a much cheaper price. I'm not sure I would go for those. I'm so glad I coughed up the extra cash and got this set. Let me just start off by saying they are S H A R P! I've had a ton of different "cheap" sets. I don't think I've ever come across a sharper blade out of the box. Not that I really want to admit it being a knife guy and all. Of course after getting a set like these you have to start cooking dinner right away, right? As I was cutting and chopping I set the chefs knife down on the cutting board to do something else. I reached across to grab something and as I brought my hand back my thumb slightly, and I mean slightly brushed the blade that was laying on its side. I expected the blade to move before it cut my finger, but it didn't budge. Usually when you get a knife cut you end up with a little flap of skin hanging there. Not this time. It cut the tiny tip of my thumb clean off!! It's wasn't that bad, but it bled pretty good. As far as the craftsmanship goes these are of the best materials and you just know when you see it. I know they'll last a very long time. I find myself preparing more meals anticipating the use of these fine tools. Be careful washing them as well! One little slip and you could be finding yourself in the ER for some stitches! The scissors are top quality as well.

I am a general / home user of these knifes. Owned ~4months.

Review: the knives are as I hopedhigh quality and everything I hoped for in them. Very sharp and extra slots in the block for future additions. I cannot compare to other brands of similar style/quality but I do feel comfortable with what I got for the money.

Pros: Do a search for a local dealer / store that carries the knifes to get a feel for them. The knives speak for themselves.

Cons: This item came as a pre-boxed set with one knife being different than the description. Instead of the 8" carving knife it had a 5" santoku knife. This was not an amazon item, but amazon did give me good options to make it right. So bravo to Amazon for excellent customer service.

Summary: If this price range is where you are shopping, you will be pleased and stay pleased for many years. Get extra cutting boards.
