This is big, thick, heavy board. It's not the biggest they make but it's right on the edge of huge. If were any larger my wife would have a hard time moving it. So when doing small jobs, we tend to grab one of our smaller boards. Now before this scares you off you need to consider that this may be one of the most used and underappreciated tools in your kitchen. When making a big meal, or when cooking all day, we take this board out and leave it out all day. The groove is deep and ample enough to catch the drippings from a turkey or a large roast. Flip it over and you can chop veggies on it all day. It's been really nice on my knives too. Treat this board well by giving it a light coat of mineral oil and I bet it will outlive you.Possibly. I find myself caressing it now and then, and pay much more attention to its care than other cutting boards. The 1-1/2" thickness is just right for us, not too heavy and doesn't add too much to the counter height. We've been using both sides, with one side for vegetables and the au jus side for meat and fish. The gutters on the au jus side can probably hold 2 cups of liquid from cutting up BBQ, tri-tips or a turkey. The 18x24 on the island is big enough for 2 people to work on at the same time. I have started noticing the Boos boards on cooking shows and noticed Paula Dean adding another cutting board on top of her 2" Boos. Is that for protection or added height, I wonder... :-)Buy John Boos Au Jus 18-by-24-Inch Maple Cutting Board Now
WOW. I have heard about these boards for a while now but thought what could be different. Well seeing is believing. This is a great board. I used it throughout Christmas Eve and Christmas day. One side for chopping and the other for carving a prime rib.One note this is a huge board. Make sure you have room for it. I measured out the smaller one and did not think it would work; I thought I ordered the next size up (thinking they would be small jumps in size). This thing is HUGE. Not a major problem for me but I could see someone with a small kitchen having trouble.
I have a feeling I will be ordering another "small" one for daily use.

This is a great cleaver. It is very inexpensive but you get a lot for the cost. The cleaver is heavy and easy to work with. It's large size makes it great for getting the job done. I have seen cleavers for many times the price that I didn't think were nearly as good as this one. Overall, I would highly recommend it even against the expensive cleavers.Nice and heavy. Bigger than available in stores. We are so happy with it. Came quick too. A great buy.Buy ALPHA Heavy Duty Meat Cleaver - 9" Cleaver, Stainless Blade Now
***this item, available directly from amazon, arrived fairly quickly but not adequately padded to protect it from rough transit.
despite the fact that it was in a seemingly never-opened blister package, quality of the cleaver was very poor: the blade had a number of smudges and scratches and even one small rust spot.
so back it went to amazon for a credit.

We bought two, and these are the best knives for spreading sandwiches, bread, bagels, or muffins. The serrated edge is great for slicing after you've spread it with whatever. Unlike a wooden handle, this is long-wearing and easier to clean. This is a classic institutional grade sandwich spreader with an ambidextrous grip and quite a nice serrated blade for cutting. It is dishwasher safe and should last just about forever in the home environment. I used this exact knife in the kitchen of a restaurant I worked at for years. I was hoping I would run across it somewhere and leave it to Amazon to carry it. A great knife at a great price. Durable and very utilitarian.Victorinox 12-Inch Chef's Knife, Rosewood Handle
Nice to see the Fibrox 8 version of this terrific knife getting such wide recognition. Astonished no one has even reviewed the Rosewood 12 yet.The 12 is made from the same "Swiss Army Knife" steel as its smaller siblings. But the longer blade means longer cuts, and a further drop of the bottom third of the blade while rocking it, so you can slice up bigger and more stuff. I do a big onion with an X pattern with this instead of trying to cut horizontal layers, etc.
The blade takes a wicked edge, which is easily maintained between sharpenings with a steel hone.
With the 12, there's so much more blade area. It's long and heavy enough and sharp enough to drop straight through most anything.
Do not be put off by the thought that it is too big for your hands. Some of the best prep cooks I have ever known have tiny hands. Sara Moultin of PBS is an example. She does her whole show with a 12, never hurrying, never straining. Practice with it carefully for a while and you'll be fine.
The rosewood handles mean hand washing only, while my 8 and 10 with their Fibrox handles go straight into the dishwasher. They are, after all, kin to the NSF blades that commercial kitchens run through their dishwashers 500 times. I use the Fibrox ones for the really messy jobs. But for 95 percent of my cutting, this is my go-to knife.I own an array of chef blades, as i am a chef professionally. Although i own a few expensive blades, i find that for practical daily use, these Victoronix blades suit most tasks admirably. They arent very expensive, and for larger scale production, they hold an edge quite well. Eventually, they do wear down, and especially with the wooden, Forschner style handles, the metal tends to raise out from the handles eventually, which doesnt make for comfortable use, but....for everyday use, and for the price, i consider these to be pretty much top line. I see no reason why you wouldnt want one, i would recommend these over more expensive purchases like Shun or Wusthoff any day. 12 inch blades are typically used for larger scale, less refined work, and you really dont need to spend $200+ to accomplish this task. So, i typically get a year or so of daily use out of these before i find the handle has worn enough to be relegated to home use. Anyways,
Enjoy

Overall solid knife. Great for cutting large slabs/ wheels of hard cheeses such as parm and gouda. As well as large sheet cakes. Mine came with a minor chip in the edge. Great thing about victorinox is they comeke with lifetime warranty on factory defaults. Could have sent it in but chose to worke the chip out on my whetstone instead. I am very happy with the consitent quality of this line of khives. They are milled from a solid-steel blank and have a full tang. The handle is ergonomic and the blade holds a good edge.
F. Dick knives are made in the same factory in Soligen Germany and can be interchanged with these knives without question. I prefer the Wustoff Classic line but my son likes the Shun Ken Onion knives better. (I'm a much better cook so go with what fits your hand.)

Pure Komachi 2 Series 8" Chef's Knife, Fuchsia
This is a versatile knife that I use from carving meat to slicing vegetables. The blade is very thin, so if you're looking for a knife to cut through bones or a whole pumpkin, this may not be the best knife, but it'll easily slice paper thin garlic and mince shallots. The curved blade works great for chopping herbs and the sharp tip allows precise control over carving meat and fish.I've been using this knife everyday for about 4 months now, and the blade is not showing any signs of dullness. I am planning on getting other series from this line.We received a Shun santoku and this fuschia-colored Komachi last Christmas. The Shun is fantastic, but this knife gets used just as much. For some things, like cheese, fruitcake and other sticky foods, the Komachi is much better slices thinly and cheese doesn't cling. It's lightweight and easy to control. We now have a few knives in the Komachi line and just love them (especially the bread knife) in spite of also owning and using the high-end Shun knives. At first, the bright colors of the Komachi were somewhat off-putting, but once we started using them we found them to be great, supersharp knives and there's no picking through the rack to find what one is looking for!

First off, I read through the positive and negative reviews before placing my order, and the general concerns seemed to be that the handle felt cheap, was smaller than ideal and that the knife was too sharp. If you're concerned the knife might be too sharp, maybe this knife is too sharp for you. It's very sharp, and that's exactly what my wife and I were looking for. The furnished apartment we just moved into came with knives, but nothing you can cut a tomato with, let alone peel a fruit or vegetable with. When we moved, we sent our belongs by boat, including several nice, sharp Japanese knives, and this knife honestly seems as sharp and as good at cutting as our nice Japanese knives that cost several times what this cost.
Regarding the handle, yes, it is a cheap plastic handle, and as a tall man with large hands, I can say that if I was the primary user of this knife, I'd like a larger handle. That said, my wife, who has slender hands but long fingers, has no problems with the knife handle size, and neither of us expected anything nicer than this for the price of the knife.
The knife coating actually does make rinsing food off the knife easier. If you rinse the knife as you're cooking with it, it rinses clean even when I wouldn't expect a standard knife to rinse clean. That's a nice bonus, and not something I was specifically looking for when I was shopping for this knife. If you let food dry on this knife and come back to it later to wash it, expect to have to scrub the food off just like you would with any other knife, but if you rinse right after you finish using it, it really does rinse clean, which makes cleaning it much easier. I'm not sure how the coating will hold up after repeated cycles in the dishwasher, so like many other things, we wash it by hand, and it looks and cuts great after dozens of uses and washes.
Honestly, as someone who really appreciates a nice and sharp knife, and who was happy to see "too sharp" as a complaint, I expected less from this knife, and was very pleasantly surprised by the job it's done. It was purchased to fill a short term void, as we expected it to be relegated to a spare when our belongs arrived from Japan, but this knife will continue to be one we regularly use, and it was a bargain at the price we paid.

We bought an entire set of these Knives. I read the praise from other Reviewers and they are right. These are wicked sharp and as careful as I tried to be, still wound up cutting myself while cleaning one.My gripe with these Knives are the Handle material. It is a Hard Plastic. It has no texture, design grip or rubberized coating, etc. It makes it not only feel super cheap, but outright dangerous for slipping when your hands are wet. I really was not expecting much for $8-10 a knife, but this is not something to overlook. The worst part is if the plastic gets a nick in it; you get a reminder of how cheap these knives are each time you use it, as the bur digs into you hand like a thorn. Sorry, Pure Komachi... I really wanted to like these Knives because the Blade is of fantastic high quality for the price.

WMF Profi Plus 11-Inch Cheese Knife
I used this knife on about 7 different kinds of cheeses (hard / soft) and it always gave me excellent slices. Not sure how someone would give it one star!I like my other WMF tools, but am very disappointed in this one. I have little experience in low-cost cheese knifes, but regret my purchase of this knife. The knife is steeply beveled on one side, which results in crooked cuts. Perhaps all cheap cheese knifes have this flaw? I don't know. What I do know, is that a bread knife does a better job of cutting semi-soft cheeses than this knife, and a more expensive cheese knife does a better job than both.
If you're looking for a cheap cheese knife, try a different one. Maybe it's better, maybe it's not. This one is no better than the bread knife you already have.

We have owned this knife for over 10 years and and gave us very good cuts with all types of cheeses. The one problem we had was the blade cracked through to the hole nearest the handle. Jamie Oliver Carving Set
Carving set is of acceptable quality, but not the same as a high quality German made set (as far as feel, balance, finish, and knife edge out of the box). Def a couple of grades up from most lower end Chineses made knives though. Knife feels hollow, which does not give it great balance. This set is more than acceptable for occasional use, but if your carving all the time I would recommend buying a better quality German made set......But these sets usually cost at least 3 times the price !!!. I seriously dought Jamie Oliver uses these knifes in real life, only for show on TV, there def not professional knifes. I would also buy a sharperner from Amazon at the same time (great prices), so you can get and keep your knife sharp.I would have given the product 3 stars, but with Amazon's (current) fantastic pricing at just under $28 I give this product 4 stars. I would recommend purchase for someone wanting a carving set for occasional use like Thanksgiving, the odd dinner party every once and a while etc :-). Looks stylish.
Pro's: low cost through Amazon, stylish, has the "look" of a high end knife, def does the job for occasional use, reasonably good stainless steel used, packaged quite well and could make a very presentable gift.
Con's: Handle and bolster of knive not a great weight leading to average balance and handling, handle feels "cold" , Knife blade is wielded together to the handle next to bolster, (unlike higer end knives that are one piece forged steel which equals better strengh and durability), not for high use or commercial uses. The set seems to be well made, good quality, and the knife is razor sharp as we had hoped it would be. For home use, can not really see why anyone would spend more money on a carving set unles they just want a particulr knife. They should last for many years. Glad we bought them.

I have to admit, my husband and I are both knife snobs!! We only ever purchase the top brands and pay top dollar.I was buying a block knife set and a carving set for my son-in-law and didn't want to disappoint him, but wanted to be frugal about it, therefore I did a ton of leg work before buying. I fell in love with the ones by Jamie Oliver. They have the strength and sturdiness of a German brand knife yet the flexibility of the Japanese knives. It allows for the best of both worlds. I settled on these and had them shipped to my son-in-law. They arrived so quickly and they were loved by their new owner. The weight has a perfect balance in the hand and they are strong and sturdy but also flexible. My son-in-law was really happy with them and I got some brownie points!! I have since then seen them for myself and have to totally agree. The knives are wonderful and this carving set is great. I know when I am in the market for more knives, Jamie Oliver's is the way I will go. I highly recommend them.beautiful set. My kids love it. My son said the knife slices through any kind of meat effortlessly. Must be careful, tho, they are SHARP!!!This product is good value for money. They are nice to hold, good balance and sharp. Just as I expect it to be.

Kotobuki Gyuto Knife
I like the knife just fine, it's for work so I didn't want anything too fancy. Seems defect free, the wooden handle is on the light side, but it's bolstered so the balance isn't too off center. Comes sharpened. I think it fits well in my large to average hand. If anything it would be small. As of now it does seem a little better than what I expected for the price. If this wasn't my third chef's knife, I would be a little bit more generous in my review. I have a nice Carbon Steel and another I generally keep at home, but they are also much more expensive. It's held it's edge for a couple weeks, and it's much nicer using this than anything work provides and they have theirs sharpened weekly. Hopefully some of the other chef's will see me using it, copy me, or borrow it, and get just as knife happy as me.i have had this knife for about a year now. it is a litttle UNDERpriced if you ask me, this thing has taken a beating and is still with me. i think it is a little on the lighter side, which is why i like it. i use it almost everyday, and i had it throughout culinary school as well. it hasnt stained, and it holds its edge very well. perfect knife for someone looking to get a japanese blade but doesnt want to drop 200 bucks.OXO Good Grips Spring-Loaded Poultry Shears, Black
The spring on my shears broke after several years of use. After e-mailing customer service they said that I could send a picture of the broken shears, which I did. I was informed that a new pair would be on it's way. After a few days they arrived and I have been using them every since. The OXO Good Grips Spring-loaded Poultry Shears are the only ones I have found that stand up to hard use of cutting chicken with bones. They come apart very easily for through cleaning and ease of sharpening. Great product that the company stands behind. The only reason I did not give 5 stars is that they DID break. I'm thinking there was a defect in the leaf spring.I bought these "good quality" shears after my last old fashioned pair fell apart, after at least 15 years' use. These shears came highly recommended by my favorite recipe blogger and I couldn't be happier with their performance. They replaced a pair of Henkel shears I've had for several years that I paid three times more for but just weren't that sharp, even the day I bought them. While you're supposed to be able to cut through chicken bones with most Chef Knives, I wouldn't dream of using my best knives on such as task as the nicks and dings on the blade that results, just aren't worth it . . .and the task is made so much easier with these. The soft, easy grip handle is very comfortable, though it's important to keep the hand in the grips from touching the chicken to avoid the handle becoming to slippery. The blades easily separate for cleaning and snap back together and have a closing pin on the handle to keep them closed for storage.
Aside from cutting chicken . . .they work great trimming artichokes as well. I'm very pleased with my purchase.

This knife was a gift from my daughter, and of the two small knives in my set, this is the one I reach for the most. Joyce Chen 34-4400, Bamboo Wood Oil, 8 Ounces
So called wood and "bamboo" oils are simply food grade mineral oils. You should use a wood oil in your kitchen instead of vegetable oil because mineral oil does not break down or become rancid. Wood oil gives sheen and water and stain resistance to wood items such as butcher block, cutting boards, pizza peels and wooden salad bowls. You can use wood oil to darken and restore the appearance of faded wooden knife handles or dried out wood cutting boards. This is a must have for any kitchen with wood items. If you buy any sort of wood gift this is a thoughtfull add on which will help your gift to both maintain its beauty and last longer. This product appears to be offered at the best price on Amazon. Add it to your next order.Snow River Wood Oil is an identical product but at the price of $6.99. The Snow River oil has also been available as a 4 for 3 promotion.
Wood and bamboo oils are much less exotic than one might think. I actually use mineral oil laxative on my wood kitchen items ($2 for 16 oz. at many drug stores) which is the same thing. Clearly the laxative bottle is less than aesthetically pleasing and is embarassing to leave around the kitchen. My wife keeps hiding the bottle in fact. But No it won't have a laxative effect if you use it on your cutting boards or knife handles.I ordered this for an old bamboo cutting board that was looking really drab and dried out. This food grade wood oil made it look brand new again. My husband thought I bought a new cutting board. I had to reapply the product after a few days because I use the board a lot and wash it several times a day. I found that when I applied a thick coat and let it sit overnight to absorb, the effect lasted a little longer. Since bamboo is a rather hard wood it may not get absorbed as easily as some softer woods. I also think that if I had used the oil from the beginning it may have helped preserve the wood better. Of course, the board was still completely functional, it just didn't look as nice before using this wood oil.
I bought a new bamboo cutting board since that time and use this product on it a couple times per week to keep it looking nice and new. Before storing the old board that is only used occasionally now, I covered it with this oil and let it sink in. The product doesn't have any odor and a little goes pretty far. The fact that it's food safe is very important to me.
Update 11/5/10 I did a video review of a knife block before and after using this product to bring out the wood grain. You can see the difference here: Shun 22-Slot Bamboo Knife Storage Block. The video is dated 11/5/10.

If you are cooking with wood or bamboo utensils, or using bamboo cutting boards, the manufacturer will recommend you treat them prior to using them with a wood oil such as this one (which is really mineral oil if you want to save money and buy a generic brand).I bought Joyce Chen's Bamboo Wood Oil to use on a beautiful bamboo cutting board, the MIU Bamboo Mini Butcher Board and on my Le Creuset kitchen utensils with bamboo handles.
I applied the bamboo oil using paper towels. It only takes a very small amount. Bamboo is a hard, nonporous wood and very little oil soaked into the cutting board. I gave it a quick wash with soapy water under the kitchen sink and immediately dried it to get rid of excess oil.
I recommend Joyce Chen's Bamboo Wood Oil as it is a high-quality mineral oil at a reasonable price. It will protect my cutting boards from moisture and lengthen their life spans. Treating with wood oil is also recommended in the board's care instructions. Use this product when your wooden utensils are brand new, before you have used them the first time.
Note: Don't use olive oil or other cooking oils on your wooden utensils as they will cause them to go rancid and will ruin them. Use mineral oil or a wood oil brand such as this one.

I like this oil a lot--low odor, absorbs into wood quickly, and extra wipes off easily. Over all this is a wonderful knife. The out of the box sharpness is easily the best I've ever seen. Balance and weight are fantastic. Extremely light and delicate for such a big knife. My only issue is cosmetic. The fit and finish is really well done except for a small gap on the top where the blade meets the handle just enough to fit a fingernail in. Not enough to be any real problem but for the price I expected better.I will order more Yoshihiro knives in the future but I'll make sure they are their higher end Hongasumi series. If you know how to care for carbon steel, This is a nice knife that will serve you well if you take proper care of it.
This knife has a forward balance (blade heavy)that allows for effortless slicing through most anything. Don't think that this has a bulky or awkward feel to it. It fits nicely in my hand using a pinch grip and is very light for a 270mm blade.
The fit and finish on the handle is acceptable. Not done poorly at all, however for $240 it honestly could have been a tad nicer. I would like to try their Yo Gyuto (western) handle 270mm gyuto just to examine the handle quality.
The blade is where your money goes. It has a terrific profile. I was concerned from the pics that the blade height would be to low. This gyuto stands tall enough to mince anything. It can become very sharp on whetsones and has good edge retention.
*** Don't Forget This blade has a clear coat of lacquer out of the box. I removed this with
1. acetone to create a haze to better see clear coat during removal
and
2. 1500 grit wet/dry automotive sand paper (use it dry)
The saya comes with the blade which helps to justify the price. Saya fits well and the pin is wooden which also fits well.
Overall, great knife! This may not be the "Best Value" but if you know what you're looking for, (and willing to put in the work) I recommend give this or possibly the Yo-Gyuto a try.

MAC brand Santoku Knife w/Bolster (#MSK65)
I am a professional cook and I LOVE this knifebut also, I can see why this knife might give some people problems. I love its extreme agilityit has a wonderful, lively action which is highly suited to very fast yet precise cutting. It is incredibly sharp, and the granton edge performs well. It is everything a santoku should be. I used a Shun for a long time until I realised that it was just too thick to produce the kind of precision cuts I needed to make. And this is where the problem liesits blade is VERY thin, and it needs to be handled with care. I baby mineI am ultra-careful about what I use it on, and when it's not in use it stays in a KnifeSafe blade cover. I have two ceramic rods and four different Japanese waterstones I use to keep it sharp. It's not an "all purpose" knife in any way, and I would not recommend it to anyone who is needing such a knife. And this includes professionals and home cooks alike.....anyone who is unable or unwilling to handle it with care. For more general use, I would recommend the Shun santoku with the granton edgeit is a thick, beefy knife that works well for most things. Or, for a more budget-friendly choice, try the Kai Wasabi santokuit's an excellent, inexpensive workhorse. My wife wanted a Santoku knife and after some research, decided on the MAC Santoku knife. Well balanced, light weight (compared to our Henckels series set), and so VERY sharp. It feels like I am using a razor. Slicing through tomatos, chicken, fruits, and the like are EFFORTLESS.
Using my older knives in the house feels awkward and clumsy compared to the Santoku. This knife is highly recommended since it feels great in my hands and does the cutting with minimal effort!

I got my first MAC knives back in the 70s, thin metal blades with a hole in the tip so they could be hung up on a peg. Those knives kept their razor edge with only an occasional drag along some unglazed pottery for about 10 years, and I'm talking about 10 years of hard use in a vegetarian kitchen. After that, they needed to be professionally sharpened or sharpened on a home electric sharpener with a diamond wheel. I've done this twice in 30 years.
I've since upgraded the original to this one, the Santoku with a granton edge. I can't praise it highly enough. The razor sharp edge glides through everything effortlessly, the balance is perfect for me and the construction is as sturdy as you'd ever want.

Compared to any other knife in this price class, this is the brand to inspect. I have tried many knives, cheaper and more expensive alike. this brand is priced in a range where we expect to find quality knives. I believe that MAC knives are no nonsense, well made top quality knives that outshine its peers in its price range.MSK-65 is very sharp, superbly balanced. And feels great. It cuts and slices where other knives pull and wedge. The hollow spots release food, even the super thin sliced stuff.
Great comfort. I am big man with large hands and do NOT like the knive handles with "ends." I find it compromises my grip. I don't want a knife maker to tell me where my fingers go. This knife is good with my hands.
Very strong. but thinner and lighter than many of its competitors. I trust this knife to last a very very long time. And it has the japanese edge, which is sharpened at a more acute angle than the standard German/American knife. This is similar to the Shun knivesvery hard steel, very thin sharp edge. But it is not damascus, so it's significantly cheaper. When it comes to cutting vegetables this knife it the best I have ever used. I love it! Just be careful how you store this knife so you don't damage the edge

Angel Food Cake Cutter
Excellent for cutting angel food cake which can be tricky with a knife. This tool helps to keep the cake nice and fluffy instead of smashing it.This is a nice sturdy angel food cake cutter. I used it for a recent birthday cake and it worked perfectly.Buy Angel Food Cake Cutter Now
As I now see others have said, I got a wire with two handles labeled as an angel food cutter. I'm sure it might work but it wasn't what was pictured! Amazon was great as always about taking it back but it seems if this company can't ship what's advertized it should be pulled. My husband ordered this cake cutter for us about a month ago. I love it. Actually, I haven't used it yet for an angel food cake but it is by no means limited to those. We've used it for a coffee cake and a Bundt cake as well as one other cake and I can't believe how much easier it is to cut and serve each slice. This last one ordered is part of a birthday present for a friend. If you are considering this cake cutter, then order it and try it out. I think it will become one of you favorite kitchen tools.I bought this because Angel Food cake is a family tradition for birthdays and special occasions in our family. I haven't yet tried it to see if it works as well as my mothers special knife, but I couldn't buy her knife anywhere. She bought it in the 1950's and has never seen it anywhere since. I hope this works well!
