The Miyako is a very nice knife. The blade is very shiny, almost a mirror finish to it. The handle is very soft to the touch. It's hard to describe, you need to touch it for yourself. Annnnnd, it's dang sharp! Awesome knife thank you!

I bought this to complement the 3 piece set. It's perfect. Now I own a 4 5 6 and 7 inch set. These ceramic knives have become my "Go To" knives when I cook. It handles everything without problem. I can't cut through bones with them but who does anyways? That's when butchers are for.

This is sold as a Chef's knife but the literature that comes with it clearly tells you how NOT to use it as a typical knife (due to the possibility of breakage)

This product can at best be sold as a "slicer" as that is literally what it is restricted to doing.

Either that or placed on the wall as an expensive conversation piece.

Kuhn Rikon 4-Inch Nonstick Colori Paring Knife, PurpleThis is the best paring knife I have ever used. The blade is incredibly sharp and the handle is comfortable. And of course the color is fun and makes the knife easy the find in the drawer or the dish water. The case protects the blade in the drawer and makes it easy to take camping. The blade doesn't stick to anything, not even soft cheese. I have two myself and bought one as a gift. I would highly recommed this knife to everyone.

When I first received the product it appeared by looks and touch to be dull BUT I bought it originally to match my kitchen. I was out of clean knives so decided to try and WOW or WOW what an amazing product. On the expensive side yes..............but as long as they continue to cut like they do now........they have become the favorite knives in the house by the entire family. Wusthof Classic 3-1/2-Inch Paring KnifeThis knife is good for everything from mincing herbs to slicing fruit to filleting small fish it even makes a pretty good steak knife. I finally broke down and bought a second one, so my mate and I can cook together without fighting over it.

Like all the knives in the Wusthof Classic line, this knife is fully tanged and bolstered. The tang extends into the handle and offsets the weight of the blade, and the bolster sits on your index finger to provide the fulcrum point. The result is a knife that is remarkably responsive and balanced. Some reviewers prefer the larger utility knife to this 3.5 inch parer. This knife is lighter and shorter, and therefore provides a balance point that is more comfortable for a smaller hand.

If you want the full arsenal of Wusthof prep knives, get the bird's-beak parer for digging the eyes out of potatoes and the stems out of peppers, get the serrated utility knife for slicing citrus and tomatoes, get the trimming knife for cutting off stems and boo-boos, and get the utility or boning knife for for slicing and meat prep. But if you just want to buy one, get this one.

I strongly advise people to get GOOD knives. You don't end up with a drawer of junk, and you will grab for this one probably more than any other in the kitchen. This is my workhorse, and I love Wusthof knives. I've had a set for 20 years, and only replaced my paring knife because it was missing from my set after a move. I do everything with this, peel vegetables, cut dice, slice or dice onions.

I received this paring knife (included in the course fee) when I took a Wusthof knife skills course at a local shop. It's everything a knife should be sharp, solid, well-balanced, and a comfortable fit in the hand. Wusthof got the proportions of the classic-style handle about right; not too fine, not too chunky... just right for comfort and control. After the course I gave it to my mother, who was surprised at its sharpness. (I already owned a Henckels Pro-S 3" paring knife, which has a slightly longer handle... IMO the two knives are similar in quality.)

This is also the knife that inspired a friend who finally bought one to exclaim, "I'm surprised you didn't say, 'You call that a knife????? THIS is a knife!' when you were using my (old, stamped, serrated) knives!" She now understands my addiction to forged German steel.

As always, it's best to try several knives in person and see how they fit your hand before buying, but it would be hard to go wrong with this one.

Chef's Choice M450 Diamond Hone Manual Straight Edge SharpenerI've had one of these for a year or two, and it works great. It puts a sharp edge on every (non-serrated) knife I've tried, including my Swiss Army knife. The edge seems to last a reasonable length of time, I don't find that I have to use the sharpener all that often. But when you want to slice tomatoes, you need a good edge on your knife, and this sharpener fills the bill for me.

Now, I'm no chef, I'm a rank amateur when it comes to sharpening knives, so if you're very picky, or a pro, or just very well educated in sharpening knives, then this may or may not be for you.

I've read comments about similar models to this one, and I'm surprised at some people's complaints. First of all, take a minute to read the directions, and you'll be glad you did. Secondly, there are two wheels which you're suppposed to hold the knife against while you draw it through the sharpener. Ideally, they both turn as you draw the knife through, but DON'T WORRY if they don't both turn all the time! They're there as a guide to how to orient the knife, that's all. If you're close, it still works just fine.

This is a quick and easy way to sharpen most knives but does not work too well with my vegetable knives those I still sharpen with a whetstone. Incidentally sharping with a whetstone gives me a better edge but this is good enough for everyday use.

I've had this item for about 4 years and just bought one for my brother after visiting him and trying to use his very dull knives.

Overall it works very well. If you are good with a stone, you can get a better edge, but for 95% of your cutting the edge on this knife sharpener works very well. I also like it better than some of the electric sharpeners. The electric devices can really chew up your knife if you aren't careful.

The trick to getting a good edge with this device is to follow the instructions. I know this sounds obvious but I had this thing for several years and didn't quite use it correctly. I found a couple of videos on YouTube that showed the correct way to use this sharpener.

I might as well just lift it like I was doing. Very simple roll-out design that doesn't stop if you are not careful. I think $10 would be a reasonable price. Not $30!

I like the looks of this, however it is very easy to pull the top sliding part too far so it comes off the track. I know this but still end up pulling it too far out very often. Also, there are four or five little soft round disks on the bottom of this that I believe are meant to pad it and protect your counter; they fell off within days and I have tried to glue them back on with superglue but they continue to fall off.

Really like the quality of this caddy. I use it to place my coffee pot on that sit on the kitchen counter but under the cabinets. Easy just to pull it out to make coffee than to pick it up each time. Matches my cutting board and saves the wear and tear on the counter top.

This is the best pull-out caddy I found for my Keurig coffee pot. I ordered the other black ones and they were okay eventually the wheels wore down and left a black roller mark on my white kitchen counter. I found I was constantly trying to remove these black roller marks each time I used them. This one was a little more money but so worth it. My coffee pot just glides in and out from under my cabinet with ease and without any marks. I would hightly recommend this over the other caddies.

Its a great set that includes a lot, and my fiance is using it regularly (mainly spatula, tongs, and wire brush). Wish he would also clean the items and put back into the case for next time, but instead he uses them every other day and leaves them out in the rain for cleaning. One day I know that case will come in handy! At least it keeps the items we are not regularly useing together and clean!!

I purchased this item a few months ago and did not write a review at that time. I decided to write it now because it so infuriates me whenever I use it! Why? The noise level is terrible the cutting blade likes to catch the paper on each can which means the paper gets stuck & I have confetti the magnet is choosy: some tops it holds others it won't. I had not had an electric can-opener for years but back 3 decades ago when I did have one it worked beautifully. If I had kept all the paperwork I would have sent this one back. SO do remember to do that else you'll be stuck like I am.

It is, however, stainless steel, not carbon steel as stated in the title and description. If I wanted a stainless steel knife, I would have bought one of the Victorinox knives with a plastic handle so I could run it through the dishwasher. For me, this is sort of the worst of both worlds -it can't be put in the washer, and it doesn't have the sharpening benefits of carbon steel. That being said, it is very attractive, and it works fine for boning. I would have given 4 stars if I wasn't mislead.

Victorinox 59216 8-Inch Swiss Army Fillet Knife with PouchWith Costco here in Seattle currently selling twitchy-fresh Alaskan Sockeye fillets for $9/lb and whole fish for $5/lb, this Scotsman decided he needed a long filleting knife. At the knife shop, the best one I was shown was this Global, but I couldn't bring myself to spend that much, and I dislike the Global handles, especially when wet as would happen while filleting.

So instead, for chump change I got this excellent knife with a far superior handle. A short detour to Youtube for salmon filleting videos (recommended: the hilariously-unhygienic one that has chickens wandering all over the filleting table) and I was in production, with the freezer and the stockpot quickly filling up. I figure that with the Global's extra flexibility, I could get about 5% more meat off the bones, but none of it is going to waste, so I don't mind. A shorter knife wouldn't work nearly as well.

Next up: the same store is selling whole NZ lamb for $3/lb...

(Note: Every decent cookbook I've ever read says salmon carcasses make dreadful fumet. That's simply not true: salmon fumet is an excellent base for robust dishes like a Malaysian rendang made with unsubtle fish like mackerel or blues.)

A very well balanced blade. Though it hasn't been officially tested under fire, from experience the handle aught to offer a good grip even when the hands get gooie with fish slime. Lets go fishing.

MIU France Stainless Steel Magnetic Knife Bar, 20-InchI ordered two of these, and just put them up today. After reading other reviews of magnetic knife holders, it's clear that the main complaints are 1) the magnet is either too strong or not strong enough, and 2) some of them are just too flimsy.

This knife holder is perfect in every respect. Both the body and the mounting brackets are made from very heavy-gage stainless steel. It is easy to mount, easy to clean, and the magnet seems to be just the right strength, which is critically important. Either too strong or too weak would be flat-out dangerous!

Figure that the 15-inch model will hold 6 to 8 knives, depending on the size of the knives and how far apart you like them.

I have an incredibly small kitchen that's just finishing a remodeling two years in the making. Since no walls were knocked out, utilizing every square inch of space is still a priority, and this knife rack does it in style.

But since the kitchen's so small, you might be wondering why I went for the bigger knife rack. That's cause the place I intended to put it is on a cabinet that butts up against the cooktop. The cabinet's the traditional 24 inches wide, so this rack centered perfectly in that space, and enabled me to toss the counterspace-eating knife block.

Stainless steel's a big component in this remodel, so this knife rack fits in perfectly. I put it up myself, so let me warn you it's HEAVY. I drilled two holes at the right height, but for the life of me, I couldn't screw in the rack towards the backsplash. A hint you might helpful is to use masking or painters tape to tack up the center of it until you can drive the screws in (leave the easier screw out a bit so you have room to maneuver; when the back screw is in, you can tighten both.) See? All those hours watching home improvement shows weren't for naught!

The one thing I found a bit puzzling was the "S" design in the rack. I couldn't tell from the pictures if that was a recessed or raised design. Well, if you were wondering, let me tell you it's a cut-out S. At first I thought if it was raised, I'd only have enough room to store the knives between the raised design, but because it's just an incised figure, you can put as many knives on this thing as you can jam! (There are two magnets, the long, thin, horizontal strips that frame the S design.)

The knives are held firmly, but it's easy to remove them with little effort. I know some folks seem to be having a problem with it. I'm scarcely Superman, and I have no difficulty pulling them from the rack without beheading anyone.

If you have the space, go for the 20 incher. You'll save $20 over Amazon's suggested retail, and it's a better buy than the smaller model.

I highly recommend it, esp. if you want a design statement that adds to the appeal and space demands of a small kitchen.

Contrary to other information you'll find here, this knife bar is not too heavy, nor are the magnets anything but perfectly powered.

The mounting hardware provided will safely mount the holder to any horizontal surface, even drywall. All you need is a drill and a screwdriver. It takes about five minutes.

The magnets are strong, but not too strong. Weak hands can always slide a knife off instead of the brute force horizontal yanking method.

I purchased two of these and mounted them under my cabinets. One wouldn't be large enough to store all of my metallic goodies. In addition to knives and cleavers, I also stick accessories like my peeler on there. The knife bar is so stylish and its stored items so conveniently located that there's no notion of clutter.

These are a must-have for any kitchen.

My knives are a crucial part of my kitchen and I want only the best for them, so I wanted to go with a magnetic strip.

Hiding your knives in a drawer is a shame, can be dangerous if they're just free floating in there, and can also dull them if they bang around with other items. Not good

Keeping knife blocks on your counter eats up counter space and is just bulky. Many times I have to guess which knife is in which slot too, and if I have knifes that don't fit in the block, or more knives...I end up with knives in the drawer or multiple blocks. Not good.

My knives are beautiful and I love having them displayed out in the open. It also makes for easy retrieval. I hung this strip up right up above where I work, so when I need to switch from my Chef's Knife to a Paring knife, I just reach up, grab the handle and there it is! Very easy, no having to fumble to open a drawer or guess which knife it is in the knife block.

Of all the magnetic strips I've seen, this one is the largest, heavy, durable, great styling, and has the best quality. My only want for it is to be bigger...although, if it were any longer, I would have a hard time finding a place to mount it, so I think just buying another one would be the way to go.

It doesn't have to just be for knives either. I have many steel items that I think would be perfect mounted on this strip. The possibilities are endless!

Bottom line, I would definitely recommend a magnetic strip as a way to store knives. I would definitely recommend this strip over the others if you care about quality and looks.

This item is extremely well built, sturdy and very easily mounted, with easy removal should it be necessary for moving, remodeling, etc. Extremely good with holding lOTS of knives of all sizes. For lack of horizontal space to mount, I had to mount it vertically, and attach knives on an angle even with this unusual mounting, the knives are held very securely and do not shift or slip. I am VERY pleased with this product.

The size and balance of this knife are well suited to working with most vegetables, fruit etc. Cuts such as brunoise become much easier to accomplish using this knife.

As a first time user of a Global knife, it took me a few minutes to get used to how light it is. But once I got the feel of it, it became a real favorite.

Take the advice about care and sharpening this knife seriously. You can't just hone it on an average steel. Use the right stone and ceramic steel and you'll avoid ruining the edge.

I work in a banquet kitchen that produces high class cuisine on a very large scale. When it comes to chef's knives, I work alongside every brand of knife imaginable. I see a lot of Shuns, Henkels, Ken Onions, Globals, and one guy even sports his James Beard limited edition chef's knife. But the funny thing is, when it comes to an alternate knife for more precise cuts where perfection is mandatory, this is the knife in everyone's kit. I always have to be careful where I lay my knife so that no one confuses it as theirs, but it just goes to show you how great of a knife this is. The shape of the knife allows you to line up the food for a perfectly straight cut that is made simple with the thin design and ultra sharp, low maintenance blade. It definitely shouldn't be the first knife for your collection as it's not the best choice for the variety of tasks commonly associated with a chef's knife, but it sure makes a remarkable addition to any set.

This is one of my most used knives in the kitchen. It's the best from cutting garlic to slicing up melons. You'll find that the deep blade is a real joy to control, and that you can make short work of major chopping and slicing jobs easily.

The blade keeps its edge for a long time, but eventually you will have to sharpen it. I invested in a good coarse stone, a good 1000 grit water stone, and the $5 clamps you slip over your blade to keep the sharpening angle constant. Good stones are expensive though. I think it's worth it for such a fine knife!

This knife excels at slicing and dicing vegetables. Since I learned to cook, I had always used an 8-10" french chef's knife for this task, then about a year ago, my spouse bought a Global G-46 Santoku knife. It quickly became my "go to" knife for vegetables. I wanted a Global knife to keep in another kitchen and purchased this knife, based largely upon D. E. Hardy's Amazon review. I like this knife better than the Santoku for slicing and dicing; its ergonomics seem better, and I prefer the flatter angle of the handle relative to the blade. I also use Global's MinoSharp Ceramic Wheel Water Sharpener and keep one at each kitchen.

I love this knife but after a couple of years it needs to be sharpened and I don't know where to send it. The machines don't work on this metal. The only down-side to these knives. I use the Global diamond steel which is great.

I was disappointed with the quality. Very thin material. I think it will break if I apply any pressure while I cut my pasta. The wheel is not sturdy, and the handle is not at all comfortable.

This was a good buy...for what it's worth. It is made of a thinner metal than I thought, but it works well despite that.

Utensil Drying Rack, 3 Compartments, ChromeI purchased this utensil drying rack to go with the small stainless steel sink drainer. The size and appearance are perfect, but my spoons, forks and knives all slip right through the open slots on each corner, and pulling them back out is not easy. It's so aggravating I quit using it, and am looking for a different model.

I have had this for four months and while it fits perfectly it is already rusting at all the places where the metal crosses. Need to get another one that won't rust. Not worth the money.

We have a drying rack that fits in the sink, it has a coating on it. After a while of placing knives in it, it starts rusting. I found this rack, and ordered it not sure if the hooks would fit over our rack (since it has the coating). It fits perfectly. Things with thin handles (like shrimp forks) do fall through the bottom slots. For me, not a big deal, I've learned what not to put in there. It's also very sturdy.

I searched High and Low for this utensil rack. I needed EXTRA room for my utensils. I coated it with a clear protective coating to avoid rust. It works very well with the chrome dish rack.

Ok, so...what genius thought it'd be a friggin' great idea to create a utensil rack with giant holes and slits for everything to slide through? Are you kidding me? This is THE WORST idea. It's a test in frustration and patience. I mean, after I wash my forks/spoons/knives, I get to re-wash them because slip and fall right back into the sink. The designer who created this piece of you know what was also the designer of the first submarine with screen doors. This thing is a joke.

The knife feels very good in my hand and is well balanced considering the blade is so thin and narrow. I thought it would have felt awkward. Can't wait to use it!

The leather sheath is too thick and you may have to shape it to prevent from bending the blade. I don't use it because it doesn't securely hold the knife. I gave a 5* rating anyway because I store my knives in a different way.

Was going to get an electric fillet knife, but wife had purchased this for me.

Will now hold off on electric for awhile.

Haven't had the chance to use it yet, but this is the first fillet knife in this style that I own. I have one from culinary school that was the same style and size of the boning knife which I liked. This one is longer and thinner so only time will tell.

Paul Revere 20 Piece Set

Gwendolyn Kitchen Cart Wine RackThis is a solid wood kitchen cart which includes a knife box, a drawer, a towel rack, a cutting board, a wine rack shelf that holds 6 bottles, and a metal push handle. I purchased this product in April 2007 ($119/ + $34 s&h & tax) and received it in a relatively timely manner. It was fairly simple to put together, although the instructions were sparse (mostly pictures and hardly any text). Assembled in about 30 min once all parts had been accounted for. The only downfall was that it arrived with a damaged & unusable towel rack. Target sells the product, but the manufacturer is some place in Washington state. I tried to call them, but it was the weekend and they were closed. Notwithstanding that, this kitchen cart has performed well for almost 2 months. It is sturdy (except the chrome push handle is coming loose) and it has been used a lot. Works well as a table or counter extension, a vegetable cutting area (Although it comes with a wooden cutting board, I prefer to use one of those $3 thin plastic cutting sheets over a layer of newspaper -that seems to hand the mess much better!), wine rack, breakfast bar, serving tray, or even a smoothie preparation station! This item has 4 casters and rolls well on a flat surface (minimal effort to move it over a rug); two casters are lockable.

Finally, the appearance is aesthetically pleasing and its beechwood beige color is sure to match almost any color scheme. I highly recommend this item, but call the company for a refund if yours comes broken like mine did. Also, it might be wise to modify this unit with locking washers for the chrome hardware.

When I purchases the Beechwood cart a year ago, I would have given it a five star rating. It is attractive, versatile, easy to assemble, and a great bonus for those who have small kitchens and need a space for cutting and storage.

Though I still would concede that it is a good value, I have found it not to be especially durable. I live alone and rarely have company, so certainly my usage (cutting perhaps twice a week, storing a few wine bottles) would be relatively low (even if the cat tends to nap on the surface.) The nuts have become loose more than once, and I always need to keep the allen wrench close by. It is very unsteady. One of the casters broke in two.

It has many 'pluses' as long as I can get it to stand up straight.

I had to put the cart together. It was easy to put together but many of the parts were not made correctly. Some did not have drill whole and some did not fit the wholes correctly. I had to ask for parts twice. All in all the cart is not made well and is still shakey and the drawer does not fit well. I will never order from this company again and feel I paid too much for this product.

This cart is great. I use it as a microwave cart. I have a small kitchen so the paper towel holder, wine rack and extra storage on the bottom comes in very handy......but, the drawer is absolutely useless. It is not on any kind of slider rail (just wood on wood) so it constantly gets stuck or completely falls out. I don't use it at all anymore. I was lucky to get it back in place so I just leave it alone. I would have rated this item 5 stars if it wasn't for the hideous design on the drawer.
