I have been searching for the knife that creates the long strips of lime/lemon that go in a martini. This is supposed to be that knife but I found it very difficult to use and would not recommend it. There were no directions. I purchased two knives one for a friend and had to alert her that I couldn't get the knife to work properly.

Wusthof Classic 10-Piece Knife Set with BlockThere are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This set includes an 8 inch chef's knife, a 3 ½ inch paring knife, a 6 inch sandwich knife, 8 inch bread, a 5 inch salami, a 2 ¾ inch trimming knife, a sharpening steel, and an oak block

The 8 inch chef's knife is a great knife. Wusthof offers four sizes of chef's knives in the Classic version, 5, 6, 8 and 10 inch. For most home cooks, I think the 8 inch knife is the best choice. The 6 inch is a bit small for bigger jobs, but the 10 inch is too big for most jobs. While the 8 inch isn't perfect for all uses, if you are only buying one size chef's knife (and most people only buy one), this is the one I would recommend.

As for the 3 ½ inch paring knife, this knife falls into the category of overkill for me. Most cooks will get by just fine with the 4 ½ inch utility knife. There is really no notable difference in size for the vast majority of applications between the 3 ½ inch paring knife and the 4 ½ inch utility knife. I prefer the 4 ½ inch utility knife, but the 3 ½ inch paring knife will do the trick.

I have found very few uses for the 6 inch sandwich or 5 inch salami knives. I prefer the larger size of the chef's knife or the smaller 4 ½ inch utility knife. These knives are just the wrong width and length for most tasks, and falls into the overkill department, except when part of a set.

The 3 ¾ inch trimming knife, however, is a good length for small tasks, like trimming fat from cuts of meat.

The bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy. However, I prefer the 9 inch knife over the 8 inch included in this set.

When it comes to sharpening steels, I have found very little difference between Henckels and Wusthof. As long as you buy a high end steel, you really won't go wrong. Therefore, I shop for this item on price, and Henckels has a price advantage. However as the steel comes with the set, you won't go wrong with this steel.

This set is a good deal as far as price. However, keep in mind you really only get 7 knives. Adding the set of steak knives (which I consider a luxury, and not a necessity), will fill the remainder of the block.

Finally, I would recommend you compare this set with the 10 piece couple's set, listed as ASIN: B00005MGKD. That set replaces provides a second chef's knife, a longer bread knife, and deletes the 2 ¾ inch trimming knife. It is more expensive, so compare your needs, and see my review of the other set.

I love these knives. They are truly amazing. My wife and I did a fair amount of research before we bought our set (comsumer reports, etc..)and we concluded that Wusthof knives were the best. You might think that they are a bit pricey, but the are worth it. If you have never prepared a meal with a truly fine knife such as a Wusthof, then you are in for a treat. Use these knives once, and you will never want another.

When buying these knives, our biggest problem was deciding between the Classic and the Grand Prix. Although the Grand Prix is slightly more comfortable, I prefer the construction of the Classic. If you inspect the knives, you will see that the Wusthof Classic has a full metal tang with 3 rivets. The Grand Prix, although having the same blade, has a smaller, cylindrical tang that runs the entire handle of the knive. This tang is secured by a single large rivet at the end of the handle. Although I'm sure the Grand Prix is well built, I bought these knives for a lifetime of use and heartier construction of the Classics just appealed to me more.

So, In a nutshell, if you buy Wusthof, you will not be disappointed.

ForkChops, Honey Beewhy can't I give a product zero stars, if it's an utter failure in its advertized purpose?

product is made of acrylic which means:

1. brittle, so the knife & fork need to be thick; so thick, they're useless for foods requiring knife & fork. Fork tines are so short, it's hard to use even as a scoop to lift food: forget about trying to pierce a piece of food!

2. also, being so brittle, it is ridiculous that the pieces are so long. Almost long enough for cooking.

3. top heavy, so chopsticks are very tiring to use. I believe most people would not be able to use such an unbalanced set: I happen to be a whiz with 'sticks, both Chinese & Japanese, table and cooking sizes. NOTE: These are Japanese style; if mfr had put any thought into it, they would have made them in Chinese style which most people find easier to use.

With the vast array of polymers, resins and alloys out there (PLUS composite construction), using this completely unsuitable material seems like an act of malfeasance to me.

Recieved this item very quickly. it works great. and is very sturdy. he is teaching his wife how to use chopsticks so this helps a lot for both of them. I bought two pairs and love both

This product is quite expensive for its size. Yet, the quality just doesn't justify the price.

I got this on Jan 3, 2013. It's a little heavier than I expected, but overall it felt solid, and I was happy with the purchase. I used it for only three weeks nothing heavy duty, and I applied the board moisturizer that came with it weekly. However, I noticed a crack yesterday (will upload picture later).

Initially I was upset, and submitted a request to return the board. But then I thought the better of it, since this already dealt with food, I might just keep it. But anybody who is considering getting an end grain chopping board, skip this one. It's not worth the money.

I've owned this 18 inch Boos round maple chopping block for about two weeks and so far I'm very pleased. First off, it is beautiful to look at. You can tell by the weight of this item it is designed for real use. I've had several other wooden cutting boards. They have split early on in use. This board came oiled but I did purchase the board butter to keep it moisturized. If you are going to invest in this piece you need to keep it oiled. Its also important if you will be using it to chop or cut meat to seal the wood from bacteria. I love using this. Somehow the round shape, while large and spacious to use while chopping, seems less bulky than the square boards. Like another owner said, you can hear the quality of this board while you are chopping. I own mostly Wusthof knives and they work fabulously w new board. I have moisturized it 3 times but I do use it heavily. I do not feel I got ripped off at all. You get what you pay for. Do not hesitate to buy if you own nice knives you want to keep nice. Just a word of advice to new board owners, do read the care instructions. How you care for this item determines how it will wear.

My wife gave me the John Boos 12x12x3 End Grain Maple Chopping Block for Christmas 2012. The block has a very nice size, heft, and stability. It is a delight to cut on. The recessed side grips are very convenient. I applied John Boos Board Cream to the block that evening. However, small gaps between the little blocks making up the whole chopping block began appearing almost the next day. I purchased a 5-oz tube of John Boos Board Cream with Beeswax and gave the chopping block several applications of it over the next few weeks. Unfortunately, the separations between the little blocks did not close up, and some new gaps opened up. I live in a very dry climate, and winter is the driest season. However, the chopping block should be better constructed so that the little blocks do not separate (especially after only a day).

Ontario Knife 7065 4-Inch Paring KnifeThis is many times better better than every other knife in my kitchen drawer, and didn't cost more than any one of them.

I bought the Old Hickory after a minor epiphany. It began when I was trying to sharpen a paring knife that I use all the time in spite of the fact that it's almost dull to the point of uselessness. It's a Chicago Cutlery knife which is made from some mysterious stainless steel, and needless to say I was just ripping minute chunks out of the blade without really improving the edge a bit. It occurred to me all at once that I would never tolerate such poor quality in a camping or hunting knife, but I have never questioned the overt lousiness of my kitchen knives.

Part of the reason for that is that I see no need to spend a ton of cash on something for chopping vegetables and cutting sandwiches. I looked around, and saw that the Ontario Old hickory knives were pretty cheap,and made from 1095 carbon steel. I had used that steel extensively in the field, and knew it would take both a harsh beating and an razor's edge, so I figured I'd give one a try. When I got the Old Hickory, I spent a few minutes on it with an Arkansas stone, and sure enough I was cutting paper with it in no time. For kicks, I tried that with the Chicago cutlery, and it just tore the sheet. You can see the results in my customer image.

Nothing is perfect. Old Hickory knives look awful. They won't be shiny like stainless unless you polish them all the time (and you shouldn't do that). They will rust if you don't wash and dry them after you use them. You will have to touch up the edge once in a while, and the handles are uncomfortable.

On the other hand, the cheapest knife in my drawer is now razor sharp. When it gets a little dull, I'll run it across a stone a few times and be good to go. Now that my expectations have been met by this unassuming paring knife, I think I'll buy a full set of Old Hickories, pitch out my other knives, and call it good.

I got this knife, along with a couple of other Old Hickory knives, about ten years ago and have kept it with me ever since. It is a great knife and it sharpens quickly and holds an edge very well. These were the first knives I owned that had high-carbon steel blades. This kind of steel is harder than stainless steel, will hold a sharp edge longer, and costs much less than most stainless knives of equal quality.

But high-carbon steel has one big drawback-it rusts in water. These knives will also stain and discolor with over time due to use and cumulative exposure to acidic foods (like tomatoes or oranges). The discoloration is harmless, the rust is not (tetanus concerns).

So, Rule #1 when caring for these knives is: DO NOT PUT THEM IN THE DISHWASHER! THEY WILL RUST!

My wife has put these knives into the dishwasher a couple of times by mistake and the blades were orange when I fished them out. Trust me: It is not fun to scrub the blades of sharp knives with steel wool to get the rust off of them.

To properly care for these knives, hand wash them with soap and warm water as soon as you can after slicing and cutting, always being mindful of the very sharp edge. Dry the blade thoroughly and put a very thin film of cooking oil on the blade with a paper towel. This will help to minimize rust and staining. A good way to remember this look at the handle of the knives:

Wooden Handle = Wash by Hand.

If you care for it properly, this knife will reward you handsomely with a lifetime of slicing, chopping and cutting at a minimum of sharpening and out-of-pocket cost. Those are the reasons why I love these knives.

If, however, you just want some knives that you can throw into the dishwasher when they get dirty and have them come out clean, this is NOT the brand of knives for you. Go spend your money on a set of premium-quality stainless steel knives. They will be much more expensive and will not hold an edge as well as these, but they are easier to care for and you won't worry so much about keeping current on your tetanus shots.

The knives are impressive with their sharp edges & the Block they come with. My wife was cutting a squash with the Chef's Knife & it broke off at the handle in the squash, so if you stay with softer foods, they will probably be OK. If you try cutting harder foods like melons, squashes & etc, they will probably break.

We bought these knives nearly a year ago and they are still quite sharp. I got tired being unable to get a good edge on my steel knives and thought to try ceramic while not wanting to invest a great deal in the experiment. We don't treat these roughly, but use them daily for cutting just about everything except frozen foods or around bones--they are great on fruit, veggies and for slicing unfrozen meat. The knife block keeps them from being damaged in the knife drawer. We hand wash. Just don't bang them into metal objects and do not hack or pry the way you might with a big butcher's knife. Over the year we have managed to put a couple of very small nicks in the largest blade, but it still is the sharper than a new steel knife. Yes, I would buy this or a similar product again and did buy another set to give as a Christmas gift.

UPDATE: In daily use for a year and a half and still sharp.

This is my first ceramic knife set and I have to say that I am not disappointed at all. I love the 3 different sizes, and I really love the holster for them because I already have a knife block and this takes up hardly any space. The knives were quite sharp and work very well on a wide range of items (but I won't use them on meat, only fresh veggies and such).

I got a ceramic knife years ago, and after using it EVERYDAY for about 5 years the handle cracked and the blade came out. I was really upset, and immediately began looking for a replacement. I don't know what brand of knife I had, and I'm not even sure where I got it (But I think it may have been QVC). So after a few days of looking online I decided to give this set a try. The blades of these knives are noticeable thinner than my original, so I didn't imagine they would last long before breaking. And within just a few weeks, the blades started to get dull. I had trouble slicing a ripe tomato, and that NEVER happened with my original knife even after years of use. And now one of the blades has a small chip, and I can't recall how it was damaged. Overall, these are just kinda cheap. I'm going to have to keep looking for a quality replacement. In the meantime, I'll just keep using these until they give out (which shouldn't be long from now). I am please that I didn't waste too much money on this set.

The only problem is that low height drawers will not permit taller knives like a Santoku to fit. I'm not prepared to sacrifice one of my few deeper drawers for my knives yet so this product may be limited in its applications.

Otherwise it works as intended... keeping my knives away from my cats and keeping the sharp edges away from blindly groping fingers.

We had a dedicated knife drawer in the Wood-Mode cabinets at our previous house. The drawer had a beautiful maple slab with slits for each knife and a fitted mat to cushion the handles. Nice, but a waste of space and ridiculously expensive. When we moved to downsize we got the Mundial unit. We were amused to see that the Mundial knife tray stored the same number of knives in less than 1/3 of the space, is just as easy to access and the cost is around 5% of what Wood-Mode charge. The quality and finish are excellent.

All in all this is a wonderful product which keeps the knifes nicely separated with handles at the ready and fits in a drawer. I don't like anything unnecessary on my countertops or blocks which collect dust...so again perfect. The wood is smooth and nicely finished...all around great product.

I bought this as well as the Henckel one. It is much easier to get the shorter knives out of this one than out of the Henckel because you can grab the knives more easily. Also, the large knives rest better in this model than in the Henckel one because of the gaps (the Henckel one has a solid, triangular block and the knives have a tendency to wiggle left to right a little.) I think both models are good but I would rather buy this one again.

Mundial 5100 Series 2-Piece Carving Set, BlackWell, I bought a Mundial 8" chef knife and was impressed. I added a 7" Santuko, 3.5" paring and then this carving set. All are fully forged except for the carving fork which doesn't need to be. Balanced well and nicely sharp. You can get better knives for sure but unless you live in the kitchen or at least semi-pro the cost rockets. Mundial, for those who don't know are a German knife-making company that moved to Brazil because of the high quality ore there. Furthermore Brazilian steel, while being such high quality is staggeringly cheaper than other western steels so to get an equivalent knife with a Henkels name on or similar you would have to pay a lot more. The clincher for me was this. Not only do Mundial have their own quality controls in place, but every year they send their knives to independent reviewers to get unbiased feedback. Each time they attain the highest standard from those reviewers.

Core Bamboo Pro Chef Butchers Block with Prep Bowls, NaturalI bought this monster brand new at a local store for less than 1/2 of what Amazon's price is! Guess it was a great buy, huh?

This was a present for my wife, who has bought board after board, all of which cracked or split (and we hand washed them, too). I loved how large this board is. For starters, it is bamboo, so it should hold out for a good, long time. It also seems to be extremely sturdy and well-made. It sets upon 4 round, bamboo feet, so the underneath will not get soaked with any liquids that may go over the sides and make a mess. The 3 stainless bowls are a really great addition. They hold quite a bit and are slightly recessed into the board. There is a cut-out area on the side of each bowl to get your finger beneath so that they can be easily removed.

After some use, it is holding up quite well. In fact, she is using it as I type. I have used it once, also, and am impressed.

The only downside is that we do not have a good place to store it. It is large and heavy. I will probably have to clear out a shelf beneath the counter so that it is accessible.

5 of 5. I will update after some use later in the year. No more crappy IKEA stuff for us!

Use per directions on bottle.

This is an awesome cutting board. Nice, hard bamboo and plenty of room. The little cups are very convenient for keeping the various ingredients. I love it.

I decided to go for this knife because I wanted something sturdier than you'd find in the "baking" aisle of your local supermarket. This definitely fits the bill. It is solid and really does a number on grapefruit. Probably the best grapefruit knife I've ever had (not that I've had alot, but it blows away the ones I grew up with and the ones I've had prior to it).

The turner works as advertised. The blade is flexible and thin enough to go under delicate fish without breaking it up. The only thing I don't like is that the handle isn't heat resistant. I have a tendency to lean my turners on the pan which in this case left an indentation where it melted.

Wusthof Culinar Chef's Knife

Wusthof Culinar 6-Inch Cook?s KnifeWusthof makes the best knife blades in the business, and in my opinion the best quality knives. Cheaper knives generally dull more quickly, and some never get truly sharp at all. Wusthof knives, in contrast, get clean, exact cuts every time, and are a joy to use.

These Culinar knives are a cut above even the Wusthof Classic design on which Wusthof made their reputation. When one picks up a Culinar knife, it feels like the handle molds itself to one's hand, as if the knife is an extension of oneself, rather than a mere implement.

A close look at the shape of the handle will show why. Wusthof Classic and Grand Prix knives along with the knives of most other manufacturers have a traditional handle shape, thicker in the middle with a straight back. That does provide a good strong grip if your hand is the right size and they are pretty good for me, since my hands are of average size.

The gently curved shape of the Culinar handles, though, while providing just as strong a grip, allows more control over the cutting action and the precise angle of the blade. The convex back of the hilt fills out the palm, providing more contact for a more secure hold. The taper in the handle makes it a perfect fit not just for average size hands, but for any size hand: a smaller hand will stay toward the bolster, where the handle is thinner, but a bigger hand will cover the handle further back, where it is thicker.

The bolster the thick part at the base of the blade has also been refined for the Culinar line. The transition from blade to bolster is gentler, and rather than being cut straight across the blade, the bolster is angled slightly to facilitate the forward hold used by some chefs. In this forward hold, the index finger is angled down on the right side of the blade the left side for left handers just past the bolster and the tip of the thumb is on the blade on the opposite side from the index finger. The forward hold facilitates a rapid rocking cut where the edge of the blade near the tip is held in contact with the cutting board, and the rest of the blade is rolled down on the food to be cut. A rapid rocking action with one hand while feeding the food through with the other can reduce the food to the desired slices, strips, or dice in record time.

The Culinar chef's knife is available in several lengths. The 20 cm (8") length is the one most commonly used, and the one I have; it works well for almost any cutting task in the kitchen. There are times when it feels like a larger size might work even better, such as when using a rocking cut on a large vegetable, but the 8" blade length always seems to be sufficient in the end. Note that the length is measured along the cutting edge of the blade; the back of the blade is slightly longer in Culinar knives due to the refinements in the bolster shape.

When first introduced in 1999, Wusthof Culinar knives cost about double the equivalent Classic knives. They were worth it if you could afford them, but many could not. Now, though, the prices on the Culinar knives have been reduced to only about one third more than that for the Classic knives. If you are in the market for a chef's knife, stretch a bit and buy a Culinar. You won't regret it.

My husband splurged on this knife for my birthday this year and I love it! It has a nice weight and feel. I also like the all-metal design! I am looking forward to lots of great cutting and chopping with this great knife.

I have wanted the Wustof Culinar knives for many years, and finally decided to start with the 8-inch Chef's Knife and add as I go along. I have a fairly decent set of knives, but this has always been something I wished I had. I received the knife and was having a dinner party the next day so I got to use it to prepare for my dinner party and it was a dream! R & M International Oyster ShuckerI'll never shuck by hand again. This opens the oyster with some force and then you just cut the attached parts from the top and bottom of the shell. No more worries about getting cut. With a thicker gauge metal and longer handle, this would be perfect. All others I found were so much more expensive that I wouldn't buy them unless I was going to use for restaurant quantity production. Very happy with my purchase!

Update: after owning it for a while, I find that some oysters are too difficult and I nearly bend the metal lever trying to open an oyster. I'm still glad I bought it, but I'm dropping the rating from 5 to 3 stars.

Very disappointed...very flimsy! Broke after about a 10 oysters. Won't hold up to even the lightest of uses.

You do get what you pay for it's kinda flimsy but did the job. If you don't eat oysters ALL the time, this would be fine. If you shuck a lot of oysters, go for a better one :)

I have been on a diet, eating lots of salads, and have tried everything I could think of to keep the lettuce fresh. Even after purchasing a salad spinner, which I liked ok, I was still throwing a lot of lettuce away because it became wilted and brown. Then I purchased this salad keeper and the result has been a total turn-around in the condition and longevity of my lettuce.

I first cut up (with a plastic lettuce knife don't use metal knives on lettuce), washed and spun my lettuce out in the salad spinner. I then put it in this salad keeper, opening the vents and putting 1/2 cup of water in the bottom as the directions state. The last bowl of lettuce was taken out for use about a week after it was first put in there and it was just as crisp as could be and only a few little brown spots. In fact, the first time I took the keeper out of the frig to make a salad the lettuce was actually more crisp than when I put it in there fresh.

If you like salads and want to keep your lettuce fresh, purchase one of these. I'll never be without it again.

This definitely keeps lettuce longer than in the store-bought bags or plastic clamshell casing. I haven't calculated how much longer in days, but I know I have been surprised when I dig in there to make a salad and realize the lettuce is still good! I make sure to fluff out the lettuce as much as possible when I put it in the lettuce keeper, otherwise moisture and condensation between the lettuce leaves can turn it into slimy gunk, even with the best storage solution. Yes, the top doesn't stay on really well and could probably have been better designed, but the keeper isn't meant to be put into the refrigerator on it's side. Keep it upright and everything will be fine!

We live in Hawaii. Since the climate is very warm and moist, most of our fruits and vegetables go bad within a week if they are uneaten, especially lettuce. This lettuce keeper has allowed us to keep lettuce for up to three or four WEEKS before it gets brown. Here are some notes about how we use it

1) We don't actually ever add any water. It's humid enough here that we don't need to.

2) You need to LEAVE space in the container. If you pack in too much, then the vegetables can't breathe, and you're defeating the whole point.

3) We have never washed this in the dishwasher, and the lid is fine.

I bought this impulsively and it spent a year in storage, never used. Then I decided to eat healthier, which meant more produce. I dusted it off and put it to use and was truly shocked by it's amazing performance. Generally speaking, lettuce seems to stay fresh only a matter of days without this lettuce keeper. So sharp that I have heard even if you barely knick yourself, you will bleed. So be careful. These knives are definitely not for a novice cook or a young person. And you need to use a blade guard for storage unless you have a knife block. That will protect your fingers and the knife blades. Hand wash also. That is the safest and will protect the blade. Global knives are unique in their design and I was concerned about the handle being metal, and therefore slippery. No problem. They fit in your hand so well that you have total control. And no seams to hold bacteria. If you can only own one knife...make it a Global. You won't be disappointed.

I love my new knives! They make prep work so much easier. I am so glad I spent the money on a good set.

The loaves are nearly 10 inches in diameter with a crispy crust and a moist interior. This incredible knife will cut these big loaves of bread even when they are still too hot to touch from the oven. A room temperature loaf can be sliced 1/4" thick which makes a see through slice. Hard crust, soft crust no matter what crust or interior, this knife slices bread like it was butter. The blade has micro serrations and larger serrations and is curved perfectly for slicing bread. This amazing Mundail knife has a large handle, sized to fit a man's large hand. The handle looks big and my wife complained about how big the handle was UNTIL she cut her first slice of bread. It instantly became "her" bread knife, the result of one slice. My wife would never have purchased this knife due to the lack of a wooden handle and no made in Germany etching. As for me, I would by this knife again even if it only came in pink. LOL Five other bread knives, all way more expensive, have now been retired permanently. What a slicer!

This one is going back. It had just a few reviews, though they were positive so I gave it a try. I wanted to like this knife, but I just can't. The handle is fine, the blade material is even fine, but the fundamental design is flawed. If it weren't advertised as a bread knife, it might even be fine. If you buy this for bread slicing though, you'll be disappointed. The pictures don't reflect it, and the "micro-serrated edge" is misleading. This knife is fairly thick for bread slicing, and the poor edge design more rips and tears than slices cleanly.

Their definition of micro-serrated is that one side of the blade has serrations (which feel more like protrusions from the edge, rather than being inset and ground into the blade) with scallops on the other edge. This causes your nice soft loaf of bread to be ripped and shredded, not a clean swift slice at all.

I was expecting it to have scallops on both sides, or even just one side with smaller serrations or scallops within each larger scallop on the edge. This was not the case, leading it to be thicker than it should be (makes lots of crumbs).

I've always used the forschner/victorinox scallped bread knives as my every day tool for slicing breads and pastries, and many other tasks. The mundial was a disappointment and will be returned to amazon, in favor of another victronox.

Shun Ken Onion 7-Inch Santoku KnifeThis is an amazing knife. It was given to us by someone who got it new, but promptly cut themselves badly with it. They no longer wanted it in their kitchen as they considered it too dangerous.

As one who owns both diamond hones and Japanese waterstones for sharpening our kitchen knives and my chisels, gouges, and planes, I thought I knew what a sharp stainless chef's knife was. (Most our stainless knives lose a good edge fairly quickly--not this one--there is a huge difference in "stainless".) This knife with it's 16 degree bevel is so much beyond the rest of our knives that there is almost no comparison. As my wife can cut herself with a sharp paring knife--she is a bit "klutzy"--I have lovingly forbidden her from using "my" knife. I do not want to come into the kitchen and find she has accidentally lost pieces of her slender fingers in the stir fry. This is no idle comment...this knife will cut through meat like you cannot believe. The edge is so fine that it ought not be used on bone. Also, it requires plastic or wood cutting boards. The previous owner was a bit careless with this knife and bumped it into something hard and put a tiny notch (almost invisible to the naked eye) in the blade. If you want a truly amazing chef's knife, this knife ought to be on the short list. However, if you are clumsy with blades or just pile them in a drawer, think again. Also, if just anyone might be grabbing it and using it--be careful!

I have used the highest quality American and German knives but I have never seen anything like these knives. Never before have I found the term "razor sharp" to be more true. These knives are simply astounding. It takes almost no weight at all to cut through veggies, the blade just slides down through. I cut up an onion that was at room temperature and I did not experience even the slightest sensation of a tear. I used the knife to cut a whole chicken into pieces and the blade just sliced through the joints of the bones. These knives are so sharp that you quite seriously need to clean them with the greatest care. My wife wiped a blade and actually cut her finger. I tell you that you will be simply amazed by these knives and will wonder why anyone would ever pay for German or Swiss steel when you can get these for the same price or less. I guess that shows the irrational power of brands over reason.

I got my Shun Ken Onion 7" Santoku DM0517 from Amazon's lightning deals, received the knife in 4 days, pretty fast delivery.

I have some faith in Japan made products. But I have to say I am a little disappointed while unpacking and examing this knife. Please note, I said unpacking, not the actual experience using the knife. I am sure you will find plenty of people saying how sharp the knife is, I am just sharing my point of views and things I see but not mentioned from other reviewers.

While unpacking this knife, I have noticed few small things, maybe they aren't big deals for most buyers, but It's always nice to know more, that's why I am writing this review and uploading photos to share with you.

1. I wasn't sure if the knife will come with the bamboo stand since the product feature and the picture didn't say much, but at the very end of product description it did mention about the bamboo stand is included. And I am happy to see the stand is right next to the knife when I opened the box, but interestingly, the bamboo stand is different from what's printed on the box. It actually looks like the same holder as DM0523 Shun DM0523 Ken Onion Hollow-Ground Santoku Knife With Arch Bamboo Stand, 7-Inch.

2. The bamboo stand has a narrow bar at the bottom to stop the tip of the knife touching the counter top. I think the stick is too narrow, it can be a little wider for more blade tip protection.

3. The blade and bolster are not created as one piece, I actually see a small gap between the bolster and the back of the blade heel, so there are possibility of germs and residues getting stuck in the gap.

4. The tang doesn't go all the way to the butt. And I can feel the sharp edge of rivets and tang when I run my fingers through the handle, it's not like they can scratch my fingers, but I was expecting a smoother touch.

5. One nice thing about the knife is both side of blade are hollow edged, why does this matter? well, as a lefty, using a knife with hollow edge on the right side of blade doesn't help slices from sticking to the blade.

I will update when I learn more about this knife. Hope these are useful.
