I was scared of them (don't want to loose a finger making dinner). I have used the 8" chef's knife to dull it enough to not be scared, haven't used the rest, but when iI dull them down I will. The steel seems good quality, not very thick and yet still strong. Buy it, yet BE VERY CAREFUL.

Solid set of knives for $20. Four months in and still sharp. Odd that it includes a deba bocho, as it is only a four-piece set.

I bought the 3-piece set. Mine doesn't come with the small wedge shaped knife.

Came pretty shape. Bergoff's own X40cr14 with stamped steel. Made in China.

I didn't give it 5 stars because I haven't use it much. I'll give the extra star when I get more use of it.

I like the Santoku the best but it's not as sharp as the other knives.

Another thing about the Santoku is that the long ridge in the center of the blade doesn't serve any purpose. I don't see any high-end knife use that design. It might actually make the knife harder to cut things with.

Shenzhen Knives. White Ceramic 6' Chef's KnifeI've been waiting for ceramic knives to come into the consumer price range, and the Shenzhen product is a great tryout for those who wonder if they'll like ceramic better than metal. (Ceramic blades tend to be a little thicker than their metal counterparts.) I've been comparing this knife to a similar product from Kyocera which costs about twice as much, and so far, I like how the Shenzhen holds up. I may even like the Shenzhen handle a little better, as it encourages a better and more functional grip than the home cook normally uses.

For the usual sorts of kitchen duties it works as well as any other knife in my collection, with the added benefit that the ceramic doesn't discolor the foods that a metal blade might. It doesn't have the same weight as some chef's knives--and to be fair, I favor those that come out a little more on the light side anyway.

My Victorinox Fibrox chef's knife is still holding sway as my favorite, but this may change soon.

(Yes. You can't put it in a dishwasher. It's not hard to clean--90 seconds at most, including drying it. Why would you ever put a good knife in the dishwasher?)

Remember that there are still some reasons you need to have steel blades around. You can't use this to pry bones out of sockets, or cut frozen items, or smash garlic with the flat of the blade. Zirconium oxide makes a very sharp blade, but a brittle blade. (That's chemistry. No way around it.) Nevertheless, I'm pretty sure you'll find yourself reaching for this for a lot of kitchen cutting tasks. I know I do.

I recommend for anyone who's looking for a ceramic knife

and does not want to pay $75+ for 1 knife.

What I like:

Sharper than steel knives, and holds edge longer (since I bought it

earlier this year I have not needed to sharpen it)

Ergonomic and comfortable rubber handle

A bargain!

What I did not like:

If I do need to get it sharpened, I have to take it to a professional

knife store to sharpen it with a diamond wheel

Do not drop it! As it may snap the tip.

I really like cooking for friends and hosting dinner parties, and I've been reading a lot about ceramic knives since I was looking to add to my kitchen knife collection. From my research, the ceramic blades hold their edge for a long time and are beneficial for cutting fruits and vegetables (as they do not leave any metallic aftertaste or react with the fruit). Unfortunately, because the manufacturing process to make ceramic blades are complex, the knives can be cost prohibitive (Kyocera knives can run $80-100 for one knife!).

During my research, I came across this Chef's knife and decided to buy it based on its reasonable price. For less than half the price of a Kyocera knife, I got this Chef's knife. I figured that the worst case scenario would be that I wouldn't like ceramic knives, but at least I wouldn't have spent twice the amount of money on a Kyocera knife just to try out a ceramic knife. All I can say is that I made a good decision and that I LOVE my Chef's knife. I use it for practically all my slicing tasks. The ergonomic rubber handle is very easy to hold, and it reduces hand and wrist strain when I'm cutting a lot of ingredients (especially handy when I have dinner parties!). I know being a good cook requires having good tools, and I'm glad I got the Chef's knife because it just makes tedious slicing and cutting tasks easier and go more smoothly.

Cutting some hard vegetables on a plastic cutting board has caused the blade to chip, albeit the chipped areas are small. After spending $40 on this knife, it is disappointing to see that this is so impracticle for everyday use.

I am currently in the process of returning it. Will update with my experience.

Waring KS80 Knife Sharpener, Black and Brushed StainlessAfter my wife complained that our kitchen knives were getting too dull to use, I set out to find a good knife sharpener for household use. I researched a bit and found several options both manual and electric. One name that kept popping up was "Chef's Choice" and I noticed very few negative comments on their models. Having both a discount coupon and gift certificate from Bed, Bath & Beyond I decide to make my decision there. Unfortunately, there wasn't any sales staff knowledgeable about knife sharpeners and I had to go it alone. It was there that I first noticed the Waring KS80 Professional Sharpener. With it's black and stainless finish it was definitely more attractive than the plain white Chef's Choice but, it was somewhat more expensive retailing at $100. I settled for the Chef's Choice 110, took it home and was promptly disappointed. On the expensive chef's knife I first tried it on, it left a decidedly sharp but ragged edge on the blade. It looked as though I had tried to sharpen the knife on the sidewalk! I didn't dare try sharpening any other knives and risk leaving such an ugly edge on them. Bed, Bath & Beyond gladly made an exchange for the Waring and I was much more pleased with it's final results a sharp blade with a more visually-pleasing edge. It even cleaned up the rough edge left by the Chef's Choice. The only disadvantage I have found is that, with most knives, the inch or so of blade nearest the handle cannot be sharpened since the hilt of the knife keeps it from being placed into the sharpener's slots. This, however, is not a major drawback since this area of the blade is not frequently encountered in most uses. The Chef's Choice will cover the entire blade length but with a very rough finish. I recommend the Waring over the Chef's Choice without reservation but the Waring is probably a bit too expensive for an appliance that will likely see only a very few uses a year.

This product works much better than I expected. It gives a very clean and fine edge to all of the knives I have used with it. I will never use another brand. Buy it you won't be sorry.

I have a manual sharpener, but in reality almost never use it. The electric sharpener makes keeping my knives sharp a no-brainer. There's a coarse grinder for knives that are dull. For most knives the fineand polishing-grinder works just great. If you have inexpensive knives, the coarse grinder will chew them up, but if you have well-made knives the Waring will work well. I've had good success with the Waring.

I received my knife sharpener very quickly and when I opened the box, I was very impressed; this was no rinky-dinky machine. I read over the instructions which were very simple, then using just a few at a time, over the course of 3 or 4 days, I got all my knives sharpened to a beautiful edge even some that looked hopeless. For years I've tried to learn how to sharpen knives the "old-fashioned" way. Pooh. A couple of minutes and my knife is sharpened to look better than it did when it was new. When they were all sharpened, then the machine went into the cabinet til needed again, whenever that might be. It does heat up and has to rest occasionally, but the instructions warned me of this. I love this product!

Sharpens medium to long knives. Short knives only part of the blade. The first two stations are very powerful and will remove a lot of metal and should only be used if the knife has nicks and no edge at all. The honing stage is best for most of my knives. I suggest using an old knife which you don;t care about first. to test all three operations.

Stainless Steel Mezzaluna with Wood Handles, 10 InchI've made pesto with this twice, using a recipe I'll link to below. I was pleased to note that when they said 8 inches, it was 8 inches from handle to handle so the blade was actually a bit bigger than I expected! It's sharp enough to mince basil leaves, pine nuts, garlic and parmesan, and that's really all I need. I would not recommend getting a fancy cutting board to go with it, unless you plan to invest in a really amazing mezzaluna somewhere down the line. A large wooden one (I nabbed a cheap one from a grocery store) should be fine, and having a bowl to "contain" stuff doesn't really matter much as long as you're not a violent chopper.

All that said, this is a very average sort of knife. Eventually I will get a a really amazing mezzaluna and this is not that knife. It's excellent for the price, though, and has so far kept an edge for the few weeks I've had it. Perfect for a non-professional chef on a budget (who still wants quality).

And finally, the best pesto I've ever had, which requires a mezzaluna to make:

This tool reduces basil into pesto, roasted ancho peppers into chili, and whatever you want into whatever else you want with a minimum of fuss and bother. My sister turned me on to this a few months ago, and I must admit that I now reach for the mezzaluna instead of the blitzer when I need to chop small to medium amounts of stuff. You just grab the handles and rock it back and forth on your cutting board. Minimum effort and maximum results. Try making pesto with this, it really tastes better than pesto made in a food processor. I guess the Italians know a thing or two about cooking...

I recommend the 10-inch mezzaluna compared to a smaller sized one. We regularly eat at Chop't in DC, and were curious as to why we enjoyed their salad so much over other salad places in the city. I've needed a sharpener for quite some time. I knew my knives were in rough shape when I could use a cheap hand held and actually notice a difference.

I really didn't think I could justify an expensive sharpener when all I need to do it correct and them maintain the edges.

I was right, mine were rough!! It took a little more than the instructions said in order to get the edge corrected on mine, but since I did, I've hit them on the manual hone side for a couple of strokes and I'm slicing like a mad man!

For the home casual cook that isn't sharpening blades constantly and only needs to fix then maintain good edges this thing is great and at a price I almost passed on because it was so low!! I thought I'd still need to spend a lot more to get a good sharpener, even for my needs. At first when I realized what they meant by "hybrid", meaning what you use the most is manual, not power, I was disappointed, until I used it. It really does only take a stroke or 2 to touch up the edge and it's easy to do without having to pull it out and plug it in. It's not fancy looking but it's built really solid and easy to use and easy to store.

As the instructions will warn, it may leave faint rub marks on some blades and it did on 1 or 2 of mine. But they're faint and not a problem. It may also be me, using it for the first time.

I'd highly recommend this sharpener.

Bought one of these because my somewhat expensive knives were getting dull. It works great. I tried the "paper test" on an old Henckel knife I had. If you hold a sheet of paper in one hand a sharp knife should be able to easily slice it from top to bottom and you should be able to cut curves. My old knife badly mangled the paper before sharpening and afterwords it sliced with ease. This sharpener is also easy to use. I bought another one for our vacation house.

Wusthof Classic 6-Piece Steak Knife SetWe received these as wedding gifts in mid-2003. We have several other Wusthof Classic knives purchased as open stock. The steak knives we received as a 6-piece set. We treat these knives better than we treat our friends. They get touched up by the steel, they don't soak, they are hand-washed and they go in the block when not in use. However, last night an approximately 1 cubic centimeter chunk of the handle nearest the blade fell into my wife's dinner. She was shocked, as was I. Upon closer inspection, another steak knife from the set was about to suffer the same fate. I think it must have been a bad production run given all our other knives, received at the same time (and which get used about the same amount) all look fine. I sent them back yesterday so I'm interested to see how well they honor their warranty.

Update 1/23/07: Received replacement knives today. Putting them back into the block was bittersweet because I noticed another one of the original set is developing a crack, this time at the bottom. Not sure what the issue is...

Main point: They appear to honor their warranty.

Many people might scoff at a set of steak knives at this price, My only retort is to relate the story of sneaking around (because of my wife's non belief that there was a difference) and buying a set of the Wusthof Classic Steak Knives and using them for the first time. No matter what knife you have laying around and how sharp it is, the Wusthof is superior. It is the most obvious in steak knives because you use them everyday.

The edges are plain edged, honed by hand. These are NOT your STEAK HOUSE knives no serrations. Your SLICING fine meat not disposing of a lost tourist in Texas!

Hand washing only, even with today's more sophisticated dishwashers with knife compartments preventing dinging and other damage to the blade, the high water heat and chemicals in the diswashing soap will ruin ANY knife. Think of the glass that you've had for years that you've run through the dish washer. Look closely and you'll see the glass is actually ETCHED from the detergent. And the old wood handled paring knives. Notice how they are duller and harder to sharpen? The dishwater temperature and chemicals from the detergent have damaged the steel. By the way, there is no SUPER steel that isn't known to all knife makers. Metallurgy is an exacting science, a formula to be followed, not magic with the Sorcerer and Mickey Mouse as his apprentice. Wusthof PROUDLY stamps the which metal their knives are made of right on the blade. It may be heard in a sales spiel from the college kid selling complete cutlery sets, that knives can be dishwasher cleaned. Nope.I don't put my saw blades, drill or router bits in the dishwasher either. They are precision edged tools just like your knives.

I'm very happy with this purchase everytime they come out for a meal. They feel comfortable, familiar like an extension of your hand, as all the Wusthof Classic cutlery do.

Good weight, balance and excellent hand honed edge. This knife is the one my wife reaches for first for her needs in the kitchen. Never argue with a woman with a knife in her hand. Especially a Wusthof!!

I love all the Wusthof knives we have. Before we got married, we had a functional set and a really crappy set from lord knows where. We had no idea just how good knives could be. We were blown away when we tried these for the first time. We had these since July and haven't had to sharpen them yet (I was sharpening my last set all the time). When were were looking into the steak knives, we really couldn't see the difference between the expensive version and the cheaper ones. We went on faith that the expensive ones really were better. We got them, and tried them on some filets. Huge difference from our old set. Then I went to visit my father and found he had the cheaper Wusthof steak knives. They too were better than the crappy ones we previously had, but there is a significant difference in quality and ability to cut between the two Wusthof choices. If you have the money, go for the more expensive set. You won't regret it.

These are damn sharp knives, comfortable to hold, and of course they cut a ribeye like the proverbial butter. Heck, they cut an overcooked, leathery skirt steak the same way!

These were a follow-on to the complete Wusthof knife set. I'd recommend Wusthof highly to any halfway serious chefs out there. This is serious German steel at a reasonable price.

Ordered these steak knives to add to some Wusthof pieces we had recently purchased. As with the previous Wusthof knives, we are so pleased! These are excellent knives. They're a little larger than the 25-year-old steak knives we were replacing, but they don't feel heavier or cumbersome in any way. And they are unbelievably sharp!

For cleaning, the Wustof website states:

"If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel. Technically, WÜSTHOF knives are suitable for cleaning in the dishwasher (except knives with wooden handles), but there are a number of reasons why precious knives should not be cleaned in a dishwasher..." The website goes on to state the reasons why you should hand wash their knives, but I was happy to know the knives would be okay if they ran through a cycle in the dishwasher. In a busy household, a knife is bound to sneak into the dishwasher now and then (that's what happened to the old wooden-handled steak knives that we are replacing) and it's great to know we won't ruin the knives if it happens.

The only drawback is they're so darned expensive, but we think they're worth the investment. Would buy again, and recommend.

Im not really a kitchen knife expert or anything, but I do own a set of 4 star I. Everything I have ever read says 4 star is by far Henckels best line...its their flagship (better then the pro s, better then the 5 star). Anyway my 4star I santoku fell onto my tile and the tip broke off a few months ago. I decided to replace it with the 4star II model. I just got it. It feels pretty good and is way sharper out of the box then the 4 star I. The extra steel on the handle is obviously taken from the spine of the blade. Looking at the 4star I and 4 star II side by side from the top down, the 4 star I has a much broader spine making the knife feel more sturdy.

It is distinctively higher than most of those blocks that store the knifes in a 45 degree angle. But it is also distinctively less deep then those other blocks, contributing to a relatively slender footprint.

Because the slots for the big knives are not only on top of the block, but extend half down the front, it is a very different motion with which you pull a knife out not with one swooping pull, but kind of first straight forward and then out. After a few times, this motion becomes natural, though, and you should not have any problems with that. Our big chef knifes have about 5 inches room between the end of their handles and the cabinet floor when they are in the block, and that is ample space to put them into the block and pull them out.

The height of the block is sufficient to not let our big chef knives touch the counter-top.

A very nice feature of this block is its open construction, which lets the knives dry very easily should there still be some moisture when you store them away. With most 45 degree blocks, the moisture is trapped in the narrow slots and could contribute to forming mold there.

The block is also very handsomely crafted and seems to be very durable. Plus, I personally like the light wooden color, and that they use maple wood and not plastic, and mineral oil as surface protection instead of some form of paint.

This block is certainly not a cheap buy, but it's features and looks make it worth the price.

This block is designed to hold an assortment of knives. One word of caution is that the six sleeves for your smaller knives are open on the bottom. I definitely like the open design of this block. The first thing that came to mind is that it would be easy to clean and much more sanitary than the closed in blocks. Customer review from the Amazon Vine Program When I got this, I tore off the shrink wrap, took my knifes out of the drawer they'd been sleeping in and put them in this rack. First the big knives and they went in swimmingly, looked good.

Then I put in the steak knives in front and thunk, thunk, thunk, six thunks I heard as the knives dropped through their allotted slots and hit the marble counter under the rack. It was too short, the part of the rack for the steak knives was too short. Too short it was.

I got another set of steak knives, same deal, the rack was too short. You drop the knives in and they hit with a thunk whatever is below the rack. Somebody should have measured when they designed this thing.

And before you ask, I tried two sets of steak knives and both sets found this rack wanting. So I called my neighbor, asked her to bring over her steak knives, the ones that are in the knife rack by her microwave. And my rack was too short for them too. So, all in all, this rack was a waste of wood.

This items takes up the space of TWO of my smaller cheap-o butcher blocks, but only holds half the amount of knives. (it's footprint is twice as large as one old knife holder, so it takes up more of the premium counter space.

There is considerably less clearance above this item when beneath kitchen cupboards, than, compared to my old knife holders. That's why I say it is too tall. I'm used to being able to just stick my hand under the cupboard to get to my knives. This one would force me to leave it out on the counter closer to the counter's edge than the back splash, making it more possible that it could get knocked off by accident. With young kids in the house, the risk of that happening just isn't worth it.

There is hardly any room between the large knives for the smaller ones to fit in when full.

In a world of innovative design, this plain old wooden box with slits in it doesn't impress me.

Over the years, I've ended up with an assortment of extra kitchen knives that don't go in the knife block that came with my nice set. There's a bread knive, tomato knives, steak knives and more. For years I've had them in little bins in a kitchen drawer, but I like having my knives at more convenient reach, in a knife block.

The J.K. Adams 13-Slot Maple Universal Knife Storage Block seemed a good option to collect all of those loose knives into a block. When I received it, however, the block seemed oversized considering how many knives it holds, and is rather utilitarian in appearance, promoting function over form while I prefer a happy balance of both qualities. The wood is an attractive color and finish, but the shape is just completely uninspired. Worse, it is almost completely vertical with no slant to the unit. I prefer a knife block that has a bit of a slant and makes the knives easier to access quickly.

The block has 7 slots for larger knives and 6 for small knives. The small knives fit everything from steak knives to small tomato knives. The larger slots will hold butcher knives, bread knives, and more. Even still, the block takes up much more counter space than I would like for something that only holds thirteen knives.

This knife block works, but it isn't the best option I've seen.

It seems as if the notch that is supposed to connect to the bottle is just a bit off. Very ineffective compared to other similar waiter tool style corkscrews that I own and somewhat frustrating.

I purchased this item as a gift, and if the holiday wasn't so close at hand, I would have returned it. Overall, the style is cute and great for a man or woman, and it's completely functional & high quality. Unfortunately, the item arrived completely separate from the packaging & was not re-assembleable to look un-touched. MSR Alpine Chef's Knife

MSR Alpine Chef's Knife, RedI wanted a decent quality chef knife for camping. I purchased the smaller 6 inch version of this, but it was only useful for slicing. This is more like a traditional Chefs knife that I use at home. The balance is decent, and the handle is off-set enough so that you're not hitting your knuckles. It's also long enough that you can put the tip of the blade on your cutting board, and use it as a pivot point for mincing and so forth. Some people said that the sheath falls off easily, but mine seems to be snug, at least as new. I'm sure for the price this is not quality steel, but hopefully it can be sharpened easily. It comes extremely sharp. A couple of passes over my burnishing steel, and I could shave hair with it.

The metal handles are aluminum or stainless steel so they have not rusted however they have shown a minor tendency towards oxidation over the long-term, giving them a rougher powdery coating. Over 20 years this is only a minor gripe and even after sitting in my garage unused for 10 years, when I started using them the screw fittings were not seized, having only a little oxidation that snapped loose with a little effort. After using the knives for a very short time, much of the oxidation has rubbed off and they're starting to look shiny again where I grip them.

Even better, the wooden box and foam/plastic inserts have not degraded like you often see foam or plastic do. The foam is still springy and is not flaking away and the plastic tray has not cracked or discolored. The large-size red plastic handle has not cracked or discolored either.

The included blades were also good quality, and I have found that on occasion replacement name-brand blades are not as sharp as the blades that came with this kit.

So I recommend this set, at least the ones I got 20 years ago, as durable and long-lasting alternatives to other more expensive brand-name sets.

BergHOFF 8-Piece Forged Knife Block Set, BlackI bought these as a "Deal of the Day" for $99. The MSRP listed was (and is) 425, the ratings weren't bad and I figured $99 for 7 knives is not a bad deal in any event. And it isn't. They are fine. But they are NOT quality knives.

If you are expecting a heavy, durable knife.. this really isn't it. The weight is light (but they have a decent balance). The blades themselves tarnish easily. I have slight rust spots on the 2 knives I used and I had to buff them out.

All in all.. you can't really go wrong for $99.. but DO NOT pay full price or anything close to it. They are no better than a Chicago Cutlery Brand that you can pick up in Walmart or Kmart.

If you want quality knives, save your pennies and get a professional grade like Shun or Wusthof.

I got these as a lightning deal, so I can't claim to have paid nearly what they are supposedly valued at. I DO like them very much; they're super-sharp and actually cut right through raw meats without any tearing or pulling, which I've come to expect (I make dried chicken treats for my animals and had just gotten in the habit of freezing the chicken breasts, then cutting them when they were about half-way thawed no-longer a necessity with these blades). The wood block for them is a classy design, too. For all of those aspects, I'd give them a fairly high rating. Others complained about the weight they are lightweight, but I don't see that as a mark of poor quality or anything worth a negative rating. That actually is a nice benefit. If you aren't using them for throwing, these will be a great blade for you.

The point that made me take a star away is rust. After 2 washes, I noticed a rust spot on one of the knives. It isn't anything major and I haven't found it on all of them, but the fact that there's even a little rust after so few uses does concern me. To me, that should not be happening. Was it a defect with a single blade? Maybe I don't seem to be having a problem with the rest of them yet. However, it does give me pause. Would I recommend buying these at suggested retail value? Not a chance. If you can get them for a good price though, I don't think you'll be disappointed, provided that you take care to thoroughly dry them and aren't looking for a heavy-duty samurai sword as part of your kitchen cutlery.

While not something I like for myself, these seem like a nice set with knives that are a bit smaller than other knives I've used. For example, the 8" Chef's knife held next to a comparable Henkel or Saber Chef's knife comes up 5/8ths of an inch shorter in length. The 7" Santoku Japanese chef's knife comes up about 1/2" shorter. These are petite, light and easy on a smaller hand. No substantial handle guard (at the butt end) rather more of a slendering at the butt, which for my hands made me feel less secure with my grip. But for a smaller hand this may be welcome less weight, heft and possibly any resulting fatigue while using them.

Two other measurements that are off from the description in the BergHOFF Forged 8-Piece Knife Block Set are the "9-Inch bread and utility knife, this serrated knife..." comes in at about 7.75" from heel to point. And the "3-1/2-Inch pairing(sic) knife" measures about 3 and 1/16th. (very cute by the way, and seems a nice size for doing veggies one at a time in your hands).
