Messermeister 8' Chef's Edge-GuardI bought this with a set of Messermeister knives. I am a lead line cook and I use my knives and guards all day long for kitchen saftey. In time the guard starts to loosen up, I even had the guards slip off to the point where I had to use tape to secure my knife. In my opinion, get guards that have un/lock clips.

I've been using these for years and am very happy with these. They cover the knife blade very closely which keeps out dust nicely. They are very durable and I can't imagine them breaking anytime soon. Just make sure your knife is completely dry before covering. You should get years and years of use out of these.

Actually I am surprised with the quality and durability of this chef's knife guard. Notice that this guard is not closed from all directions but allows the top part (not the blade) of the knife to go a bit outside if required. It is a light magnetic feeling so it grips the knife very well. Protection is 100%. Great.

The only place for my Joyce Chen cleaver is in a drawer. I recently lost the guard I was using. A quick search of Amazon turned up this one. It fits perfectly and is sufficiently tight to hold it on the blade in the drawer. Just what I needed.

This cover is NOT 2" wide. It will not fit a blade more that 1 3/4" wide. Even the outside width is only 1 7/8". Worthless for my needs.

Shun DMS0910 Classic 9-Piece Block Set

Shun DMS0910 Classic 9-Piece Block SetThese Shun knives are really great for the kitchen and I have been using this set for years now (the verified purchase is for knives I have bought for others). I was introduced to them by a chef who will use nothing else and from that time I have been hooked! I have introduced these knives to four other people who now use nothing else as well. The reasons I like these knives are as follows:

Ease of cutting the Shun range has quite thin blades, allowing an easier cut. Add to that the extremely sharp edge you can get and these make easy work of most tasks.

Comfort I am quite a large guy (6'5", 230lb) and was initially worried the knives would be too small or light. Happily, this is not the case and I find them easy to use, with great balance.

Edge retention I will caveat this by saying you need to use the honing steel regularly or you will not see the results.

Quality I have had no issues with the knives for the four years I have used them. Despite losing the new shine, they still look fantastic and have not gained a 'battered' look prevalent in cheaper knives.

Aesthetics as mentioned above, these knives look great; not a deal breaker, but a nice to have!

I upgraded from Global to get these knives and can tell you that though the Global's are good, the Shun knives are far superior. They feel more solid, cut better, retain an edge far more efficiently and are, in my opinion, better looking. Do yourself a favour and buy this Shun knife set along with Shun DM0718 Classic 7-Inch Santoku Hollow Ground Knife and you will have a very good start to the collection (the only other expansion I have found a need for is a Shun Ken Onion 7-Inch Cleaver as I have a need to cleave meat).

Also, retain your other knives in the kitchen draw. Often, you will have use for knives that involves potentially damaging the cutting edge. Old knives are perfect for that, Shun knives are not!

I love these knives. Love them. They are sharp as sharp can be. They are also quite lovely looking.

Although my review is and remains 5 stars regardless, i do offer these caveats:

The cutouts in the block are a bit big for most of the knives, giving them a tendency to be kind of wobbly in the block and not line up perfectly. This is nit picky beyond belief i know, but it is worth mentioning because it drives me 1% crazy.

Additionally, the packaging for shipping though extensive and seemingly excellent is not enough to contain the sharpness of these knives. Even after reading other reviews of people who cut themselves unpacking the knives and therefore being super super attentive as i unpacked my knives i STILL managed to slice the heck out of my thumb (the bread knife had just barely cut its way through the cardboard sheath it was packed in and i did not see it as i removed the bubble wrap around the cardboard).

This is a great way to start or fill out a collection of Shun knives. They are extremely sharp, durable, and attractive. Beware that Shun no longer provides free sharpening and some places charge more to sharpen Asian style knives and the nonstandard angle.

I purchased these because my hard working wife was complaining about the full set of Wustofs I had previously given her. They could not hold an edge the way she wanted. A dull knife really bothers her, so I thought I would try these Shun Classics. They are much, much more beautiful knives. They truly are a work of art. Great knife it was recommended to me by a friend who is a chef and I love it. I have had mine for a few years and it makes cooking so much easier. I have bought them for gifts for at least 5 of my friends and they all love them. The utility knife and paring knife in this series are also great.

PROS:

This is a good general-use knife and is sharp enough to chop most vegetables and meats... It also has a pretty good and comfy handle.

Easy to resharpen and remove dings on a whet stone due to soft metal.

CONS:

Very flimsy and soft metal is used in the knife's construction. I have seen this knife's blade dent because of cutting a simple thing such as a prailine (which a standard Whustof or Henkels would not do for not much more money).

OVERALL:

This is absolutely an ameture housewife knife. NOT good for industrial work at all. It is, though, a decent "back-up" knife if there is something to hack-up that you dont want your more expsneive knives (assuming the reader works in an industrial kitchen) to touch or possibly get damaged.

My advice, pay an extra 20 bucks and buy a low-mid range Whustof or Henkels... something that is not stamped steel and has a full tang.

Global GF-27 - 7 inch, 16cm Heavyweight Butcher's KnifeGlobal's Butcher's Knife has been serving me quite well for some time now. It's been used for, unsurprisingly, some butchering, but at my last job it's main purpose was to break down lobsters. I forgot it one day and used my chef's knife, which now sports two cracks perpendicular to the edge from that one day. This guy, on the other hand, never suffered any damage (not, of course, counting dulling, which lobster shells are wont to cause). As with other Global knifes, the handle is comfortable, and in particular with this one, the handle is quite long which can be rather helpful with certain jobs (like trying to get into a joint without unnecessarily compressing the surrounding meat). Overall: very happy with it.

I use this knife to process deer meat and it works very well. Has good balance and holds an edge for a long time.

This is the most recent addition to my small, yet growing Global knife collection and I definitely have enjoyed using it so far. I personally don't like using my chef's knife for raw meat and then having to wash and sanitize it before using it again for other tasks while cooking so I decided to get a knife strictly for meat. This knife was an excellent choice! It is perfect for trimming and prepping all types of raw meats and its unique design has proved to be very beneficial in a variety of tasks that I have had trouble with in the past using my chef's knife. I have found the 7" blade on this knife to be the perfect length to give you enough blade to work with good sized pieces of meat while not sacrificing any control so you can really have some finesse in your work.

As with all the Global knives I own and have come across, the quality of this knife is just stunning. They are absolutely beautiful knives and perform so amazingly well day after day. If you have been considering getting a Global I urge you to do so...they do not disappoint!

This sharpening steel was by far the lowest quality product I have ever ordered. The rod was not even round, as there were dimples along the body where apparently the grinding process to get it round never even touched. This produced a very uneven surface that was at one point fine, then coarse, then fine again which would play hob with any knife edge.... not to mention the changing of angles as the knife moved down the rod. Nor was the rod straight. It looked as if the rod was warped in the manufacturing process. It's too bad because this sharpening rod is a great idea that could have worked very well, but the quality and manufacturing process was the worst I've seen to date and the rod I received was totally unusable. A sad reflection on how cheap this coutry has become.

However, Amazon was very helpful and polite, and made arrangements for a return and complete refund.

Global G-668/16 - Knife Roll with Handle and 16 PocketsFor it to be a Global product I was kind of disappointed. The fabric/material the roll was made of was great. The design works in theory. However, where it fails is its knife pockets. The pockets are way too small and close together. Keeping the knives bunched up. Overall its fine, but not worth the high cost.

This is a very good bag. Very sturdy and resistant. It has 16 pockets varying in size. The only problem is it is far from being a bag that you can quickly reach into and grab a knife. It folds out into a 2'x 2' square. You then unzip the protective cover and fold that over. This leaves you with the need to have an area of 2'x 4' unless you allow the flap to hang over the edge of the table. All of this just to grab one knife. If you are working in a tight kitchen you should make sure to take out all the knives you will need at once.

I love this case. It's sturdy with plenty of room and slots for pens, business cards, bothers along with a mesh pocket for peelers, small offsets, spoons and anything else under 7 inches. The only reason why this case doesn't get a five is that the mesh pocket doesn't have a velcro closure like my Wustof case did. Excellent case and in my opinion much better than the Wustofs.

Zwilling J. A. Henckels Miyabi 5000S Chutoh  Mid-size Utility KnifeThis is a very versatile knife to have in any kitchen.

If you're looking for an all around knife I would more then suggest the Chutoh from Miyabi. The length is perfect for any job. The design not only looks beautiful hanging up on my magnetic knife rack, it is also amazingly comfortable to hold in my hand. The knife has the quality you can trust with a Henckels Two Man, and for this price really, what are you waiting for.

I'm not a professional cook but as the person in my household who enjoys doing the cooking, I've formed some opinions on this knife. I have several other Henckels knives but this is by far the thinest and sharpest blade in my collection. The asymetric handle is contoured to fit the curvature of your palm and fingers, reducing fatigue and making it easier to be accurate with the blade. The 6 inch length is perfect. Craftsmanship and finish is very high, all the way to the kanji character engraved in the end of the grip. Nice touch for a sushi knife.

I haven't found the need to sharpen it yet as it has kept the factory edge, even after several months of fairly moderate use. This knife holds an edge! And the stainless steel makes it easy to care for, unlike high carbon steel blades which can stain or rust unless immediately dried and oiled.

This knife is ideal for fine cuts to thawed meat or poultry without bones, vegetables, and anything else that doesn't require a lot of cutting force. While sharp enough to do most of that, cutting requiring heavier force would best be done by a heavier butcher knife or a cleaver. This has become my favorite kitchen knife but IMO the slender, thin design of the blade might limit how one is likely to use it.

I bought it a few weeks ago. I guess it's a good knife except that the package of it has a few of scrapes.

The design for the knife is great. The blade is made of special formula steel. The knife can split a paper easily which shows the quality of the blade is very good. The part which is close to the handle has a radian and is smooth. This is good for washing tiny scran and help with cleaning germs. The hand feeling is also good! I like the design of it. There is a elegant kanji at the bottom of the handle. The knife is awesome!

It has a raised lip around the edges and the handle that keeps juices from running onto the counters, which our other boards don't and the 15" by 12" size is great for whole chickens, roasts and larger cuts of meat. The handle makes it easy to pick up off the counter with one hand and take out to the BBQ. This is a very good tool that will replace almost all of our current cutting boards. It washes up quickly and easily and that's an A+ coming from one who thinks everything should go in the dishwasher! Oh and my husband LOVES the handle!

Chef's Choice 300 Diamond Hone Knife Sharpener, WhiteI have Chicago Cutlery knives. First I used the Steel that came with the knives. After about 3 years, the knives would not sharpen very well.

Then I got a "set" that used 4 ceramic rods to sharpen the knives. They did a very good job, but it was a LOT of work.

After using that set for about 5 years, I tried a real "cheapy" electric sharpener and returned it after one use. It just did not sharpen. -Back to the rods.

I finally decided to give the 300W a try. It works just great. The knives get much sharper than any other method I have tried and they stay sharp much longer. For my purposes, this is an excellent sharpener.

I don't normally write reviews, but this time I will as I think it might help others who have been searching for a decent and reasonably-priced sharpener. Four months ago I had about 14 utility and steak knives sharpened by an upscale store in Santa Monica. The price? $35.00. Now, I got the 300W for $34.88 all in. I sharpened the knives according to the instructions, and they came out sharper than the "professional" store job!

Granted, this isn't the most expensive thing in the world, but I was looking for better results more quickly than I could achieve with a manual sharpener. As the company's website claims you can have sharper than new edges, I decided to put that boast to the test with my set of brand new Henckels. Not only was the process tedious and quite demanding of technique, but I never got edges as good as factory (which were, admittedly, near razor sharp to begin with.)

The magnetic guides work OK close to the bolster, but as the blade narrows and your hand is farther from the guide, it becomes very difficult to maintain alignment. On curved blades, you have to bring the handle up carefully during the stroke while unable to see the exact portion of the blade you are sharpening. It must be done by sound and not sight. Also, while inserting the blade into the sharpener, care must be taken for exact alignment or the diamonds will grab and kick out the blade somewhat. I never detected any damage, but it doesn't inspire confidence.

I imagine that while the more expensive models with wheel type sharpeners and a different style of guide might work much better, I'm just not going to pay $100 for a knife sharpener. I will stick with my manual diamond hone. I returned the 300W.

Unfortunately, I paid twice the www.Amazon.com price from a local store several years ago, and I must say it is one of the few kitchen appliances I have been disappointed with. It takes a long time to get all the knives honed to the angles of this sharpener. Then keeping them sharp seems to take a long time and they never seem to get as sharp as one would expect. The motor heats up quite easily after a few knives and begins to smell like it is overheating. I think the product has always been over-rated. I might buy it at this price but a simple non electric works just as well at less money.

Starfrit 93169 Rotato - Manual peelerI got my Rotato in May of 1999 when I had a serious kitchen accident,(the only one in 40 + years of kitchen work. I couldn't get my left index finger wet for at least 6 weeks and had to apply daily dressings to boot. I was the only parent in a home with three kids. I needed to be able to peel potatoes and other foods for cooking and keep my finger out of the way. In the almost 11 years since I am only on my third blade. We use this about three times a week at a minimum. I have even peeled apples for apple pie. When I married my husband 10 years ago he thought it was hilariously silly that I had bought this thing. Two days ago when I cleaned out my kitchen he came in to make sure I didn't get rid of the Rotato. In fact, he wants me to buy another one for insurance that we will never be without. Obviously, my finger has healed and the initial reason for getting this is long past. I still use it since it works so well and so fast. My youngest, now 15, grew up using this and peeling potatoes for Mom. I let her use it without reservation. As for the reviewer who mentioned arthritis, you're dead on. My arthritic hands do not stiffen or weary even when prepping large Thanksgiving meals. It's a good, durable product and I didn't spend much on it.

Seems to be a good product, and this is not my first peeler of this type. The only problem we have with the peeler is the build up of peelings in the blade and they are somewhat difficult to clean out. Other than that we are well satisfied. Good product for the price.

I have an older peeler and love it using it all the time. So bought several of these online as gifts for Christmas. I was a little disappointed that the lever holding the potato, apple, etc. down is rather flimsy not like the older version.

I really loved my first one. It lasted for about 7 years. I replaced it with this one. It's heavier and easier to handle, however, the blade pops out very easily at the start of the peeling. I still think it's easier than peeling with a knife. I have broken both wrists so peeling with a knife is difficult. I would recommend this product for anyone who has arthritis or carpel tunnel.

My husband got this for me as a stocking stuffer. I was quite skeptical at first, it looked like a lot of trouble just to peel a potato! But I have to say, this is a fun way to peel potatoes, and makes quick work out of getting dinner on the table. I can't put peelings down my disposal, it clogs it every time! So I do the rotato on my island and feed the peel strip into the trash, so easy and quick. I am not usually a fan of kitchen tools that do only one specific job, but this is worth having.

The "small" chef knives I found were still too big--it's just me and my cat; I only need something to cut small amounts of vegetables, meat, or pizza--so I took a chance with this set. I bought it mainly for what they're calling the "utility" knife. I was a bit reluctant because I wanted something with a solid steel handle since the handles on my last sets kept coming off. Wood and plastic handles just don't seem to stay secured well.

However, I was very pleased with this set. The handles are attached very well; I don't think they will ever come off. The blades are nice and sharp, and although I bought it mainly for the utility knife, I'm finding I'm using the others just as much. The bird's beak parer works great for cutting cheese. The other is great for cutting small vegetables, such as mushrooms. The one disadvantage I did find is it's not so great at cutting meat, and I have to be very careful so the blade doesn't slip and get me. Fortunately, I don't cut meat very often, and when I do, I can cut it when it's still a little frozen and easier to slice.

It does a great job of cutting pizza. Since it is just me and the cat, I can save money by buying regular size pizzas, cut off a couple of slices, and stick the rest back in the freezer for another meal. This allows me to stretch the cost of a good quality frozen pizza over three or four meals.

My wife would prefer that this would disassemble more for cleaning. It sometimes comes out of the dishwasher with egg on it if it isn't thoroughly cleaned. Other than that, it works as advertised and slices eggs and strawberries well.

So disappointing!! I too was fooled by the sturdy look of this product. Now what do we do with this?? If so many people are having trouble with the wires snapping, Amco should offer to fix them for free! What a rip off!

Bought this to replace an egg slicer of similar design which had lasted for many, many years.

What a mistake.

As with others, the wires broke within several uses, and it's never seen anything other than eggs, strawberries, and mushrooms.

Avoid, and go with the much sturdier all-metal version.
