Shun DM0500W 8-Inch Ken Onion Chef's Knife

Shun DM0500W 8-Inch Ken Onion Chef's KnifeI'd had my eye on this knife for a while. The minute it went on sale I bought it. It is now, by far, my favorite knife, so much so that I went back and bought the 6". It fits the hand better than any I've ever used and it cuts well, like butta.

This knife is wonderfully sharp! It really feels great in the hand too. I had always wanted quality knives and finally too the plunge over the Holidays when I was able to purchase these knives as a "lightning deal" and saved alot of money. Even still at full price I would be very happy with them. They make me want to cook more at home to because they are such a delight to use. The only down side I thought was that the end of the blade where it goes into the handle is so wide that it won't fit in most knife blocks. In fact I have regular Shun classics that I also purchased and the Ken Onion series won't fit in that knife block either, not a big deal really I just leave it in the sleeve it came with untill I'm ready to use it. Eventually I will get a magnetic knife holder and stick it to the wall or something.

My wife and I are loyal Shun knife users. That is a disclosure of bias. We were converted to Japanese steel and design via Shun. I had always owned excellent German knives, with their heavier, traditional designs--different--but neither demonstrably better or worse overall than Japanese knives. Clearly both are used by professionals. We simply changed our preference to Shun. My wife has small hands and was less comfortable than I was in terms of the build, weight and balance of our German knives. We both love the simplicity and ease of use of lighter, possibly somewhat sharper, Japanese knives. (That itself is a contentious issue but overgeneralizing is too easy to do). One of her favorites, a combination of Eastern and Western influences, is a Shun DM0707 Classic 10-Inch Chef's Knife. The corresponding traditional German knife is too heavy for her. This is basically about one's personal taste. I do not think it can be otherwise. It might take a trial and error process to find what you like best as it was for us. You probably know what both nations' alternatives offer in their distinct advantages. Sometimes the two traditions are combined like Ken Onions's designs. I will discuss our first Ken Onion designed knife for Shun in this light.

Shun knives are costly but we employ them so frequently and truly enjoy using them that they have proven to be good value--to us. We also see them as tools with a job to do. That can be done better or worse according to each individual. Having preferences, even strong presences is not a problem; just find out what works best for you. We try to judge them in both their handling and in food preparation results.

This 8-inch Ken Onion Chef's knife is a very different design both in the handle and blade--radically different--from Shun's Classic and Premier lines as examples. You pay a premium for the difference in his design. Depending upon the specific technique(s) you are used to or were taught, this knife, and how & where you are used to holding and using it, you will likely have a strong opinion about this one. Slicing and dicing with it can be fast and efficient. That is best if you feel comfortable and know how to efficiently direct your force. What is most fundamental for me is that we might differ about just how comfortable or effective it is to hold this knife but it certainly can function well. It should or at least could, offer most of us the control we want. A professional would do wonders with it although that is not a relevant point. We must match as best as possible our own limited level of technique with an array of very fine knives. Unfortunately, ultimately one needs to actually use it. No doubt there is a suggested technique encouraged for this line of knives but that does not guarantee if it will be personally compatible or preferable for you. The single biggest advantage to me is that left handed users can have equal access to this design compared to choosing either of the two versions, left and right, of specialized "D" handle knives available for their regular lines. If your household has both left and right-handed persons in the kitchen this could be a crucial factor.

Initially it took a while to adapt to the Shuns and so it could simply take more time to adapt in reverse to the Ken Onion design. The differences in the handle should be obvious but if you are new to these knives please note the very thick, and prominent bolster on this knife. Compare that to Shun Classic 10-inch Chef's knife which lacks this feature except where it meets the handle. The blade and especially the heel are quite different from Shun's other knives. In practical terms the Ken Onion bolster offers quite a different feel if you usually like to hold that part of the blade. Of course it will have an effect over time when sharpening and at least for me, not a good one. I do not miss a Western bolster when easily sharpening Shun knives at the heel. Of course a prominent bolster like this is clearly a Western convention that you may already use daily. But in the meantime, I prefer the Shun style of knives that I have grown accustomed to already. Since I disclosed from the start that I already chose to leave my German style knives I prefer classic Shun Japanese knives' weight, straight handle and blade. Conversely, if you love German knives but want to try Shun steel, here you have it. There is nothing intrinsically wrong with Ken Onion's design and indeed, he has purposely redesigned his line as a Westerner using this fine steel. The right thing to do would be to report back later if this largely subjective evaluation changes. It is a reasonably well balanced knife with the sharpness I know and appreciate, with the same hard clad steel, just rendered in a different shape with new emphases for Shun. The sculptured forms of wood and metal are relatively thicker and/or more undulating. They combine in delivering something new in appearance and relatively unfamiliar.

Ken Onion knife is yet another example of a variation of Western design using Japanese materials. There is obviously a market. To some this design might offer the best of both traditions. Certainly others have experimented with exactly that both in Japan and Europe many times before with which you can compare. So far, I can mainly appreciate its potential but I do not deny its quality. I deducted one star for my individual, hands on experience.

Unfortunately, it appears that the plastic packaging was crushed either in transit or in storage at the warehouse, as there is some slight marring of the handle surface. It's not bad enough to send it back but was a bit of a letdown as most people expect something to be "perfect" when it arrives in the factory sealed packaging. On the bright side, these knives are a dream to work with... they cut thru everything like a hot knife through butter, even when the knife is cold and the 'butter' is something tougher like a lime.

The blade was a thicker steel than one purchased a few years ago and quickly rusted. It now sits in the back of our drawer.

Purchased these to replace several that broke on an original set. Excellent product. Nice look , durable easy to handle. And at a great price too. I recommend this product . This is made of quality materials . Reminds me of the swords used in Pirate movies. Makes a wonderful sound and give my kitchen an elegant look too. Not like the cheapy knives you buy at the dollar store.

I did not buy this knife from amazon, but target. I think I paid 12$ for it. I bought this knife because I had a different style of kitchen aid paring knife, and loved it. I'd had that one for 2 years. Got it as a gift and always had my eye out for another one like it. I never could find it, so I bought this red one. The knife it's self is nice, very sharp works well. BUT, big BUT, that red coating chips off. I guess within a month of purchase (we were out of town for 1 of those weeks) so after 3 weeks of use the red coating began to chip. It's only getting worse...much worse.

I have contacted kitchen aid to see if they'll replace, or refund or something. I haven't had a final response from them, I did get a response and have replied but haven't heard back again. Hopefully they will resolve the issue.

I would recommend purchasing a kitchen aid knife that has a different handle. Not just a coating over the stainless steel.

Chicago Cutlery Metropolitan 8-Piece Block SetBest buy by Consumer Reports but quality disappointing. After only a couple of months there's space between the blade and handle of a couple of the knives. Would not order again.

This set is a steal at under $50US and they cut very well and got great remarks in consumer reports. However, they certainly arn't a Henckels and feel light in the hand.

If you want a basic kitchen set, this is the way to go. If you appreciate finer things, buy Henckels or Wüsthof

Excellent razor sharp knife set. This set is not drop forged, but is very well made and holds a razor edge with just a little sharpening once in a while. I bought this set because it was highly recommended by Consumer Reports Magazine, and I was not dissapointed in its performance. I gave it four stars because it is not drop forged and the balance is not great, but I still highly recommended it.

I've had a Chicago Cutlery set for 21 years, and it's been great. I've lost about three of the knives in that time, but the others still work fine. When I wanted to replace the set, though, this was the closest I could come to the Walnut set I had. I'm okay with the black, and the knives I received are quite sharp. But I was sent a 9-slot block for 8 knives, and the biggest disappointment is that there is no bread knife. So I am keeping my old set on the counter, something I'd wished to avoid. Also, the black knives are just not of the same quality as what I received for my wedding over two decades ago. Still, they are better than other knives I've tried, and if you don't mind unused slots in your block, this set is a good as any other.

Dexter-Russell Paring Knife, Cook's Style Parer, 3-1/4' Blade. Whitei was tired of my henckel paring knife. no matter how often i honed or sharpened it (on a whet stone) it did not cut well. it was actually a nighmare to use it. i still have it and i hate it.

i watched a show on TV and they were talking about dexter-russel company. they showed the knives used in a butcher shop, so i thought "if they are using them, it should be good for me too".

so, before i bought it from amazon, i happened to find a local restaurant supply store that carried it. better yet, the local store sells them for $4 each.

i bought 2, gave one for my mom and i kept one.

i really like it. it's sharp, i have had it for 2 months now.

the only issue i have with it that the handle does not "tell" you which side the blade is pointing towards. i have found myself trying to cut something and when i look down, i am cutting with the "wrong" side. Essentially, without looking at the knife, i could be using the spine side without even knowing it.

but that's a minor issue. i'd get another one simply because it's so cheap. and so far, it works great!!

When I worked at a restaurant, all our knives were Dexter-Russell knives and they worked well day in and day out. I got sick of dealing with paring knives that never seemed to stay sharp for very long and decided to see if one of these works as well as I remembered it from a decade ago. For less than ten dollars, this knife has been great. The plastic grip is comfortable and works pretty well even when wet. It has kept its edge very well, it's easy to clean and it is extremely functional. I'll leave my Henkel in the knife block because it matches my other knives, but this is the one that I'm going to pull out to use when I actually need a reliable knife for something more than cutting a sandwich.

While I'm sure there are better paring knives out there, for the price, it's definitely a five star purchase.

I keep this knife in a sheath on the deck of my kayak. It is always in easy reach in event of an emergency, or I just need to cut something. Great little knife.

It will rust, and it does bend easily so don't use it as a pry bar.

This knife is so sharp I'm afraid of it. It works super and I highly recommend this brand for anyone who likes a good knife. They are worth the money. I have several different Mundial 5100 series knives now, and I love them all. They do not recommend that you put them in the dishwasher, but I sometimes do with no problem so far. I think maybe the handles will discolor after a while, but the knife should still be fine.

I bought this knife with a full set of Mundail's (Brazilian steel).

The paring knife is the hardest to keep sharp with a steel, needs frequent stone grinding resharpening, and doesn't keep an edge well.

Spend the extra money and buy a Wustoff for the paring knife for your knife assortment. I give my other Mundail knives four stars (I like the fatter handles than the Wustoffs), but at this size for some reason the forging is not well executed and the edge just won't keep. It works, but is frustrating, so I'd recommend avoiding it.

Have been looking for ages for the perfect silverware, and I have found it in this set. Simple and timeless, but not devoid of style. Perfectly weighted solid in the hand but won't jump out of the bowl or off the plate and hit the floor. The smaller spoons are perfectly sized for cereal and the smaller forks are not puny (why is this such a rarity?). This means that all of the pieces in the set are usable, and won't just camp out in the drawer as the soup spoons and small forks in my current set do now. Also: since it is not listed in the description, I want to mention that they are made in Japan. Hard to find these days.

WMF makes very nice flatware. When we decided to upgrade, we checked some brick and mortar stores and found a style we liked (Nortica). I bought the service for 4 at Amazon because it was quite a bit cheaper than the local C&B. At the time, the supplier was Goodman's in Miami. The product was received and was exactly what was ordered. I would also say it was packed better than Amazon usually does.

I note that Amazon is now the supplier, and the price is some $40 more than I paid in Jan. 2012. If you don't mind spending more, hit that one-click button and your job is done. But if money is important, shop around.

On the positive side, we love the flatware and have purchased more.

We got these originally in 1996 for our wedding from Crate & Barrel. Since then we have lost some pieces. I tried to locate them through C&B but they discontinued them. Luckily these are the exact same item. Let me just say that having used these for 16+ years they have held up great. The only thing over time is minor scratches in them and the matte finish gives away to a more shiny surface. We never even realized this until we got these new ones and compared side to side.

These will give years and years of reliable service.

Zwilling J.A. Henckels Twin Pro-S 4-Piece Steak SetOh, dear God, I love these knives. Their weight in your hand is hefty without being tiring. The blades are sharp, precise, and easy to handle. And do they slice? I mean -and do they SLICE!!!

After each meal, I hand-wash these instruments and give them a quick touch of the sharpening stone. I then gently, very gently, place them back into their case for safekeeping. Is it any wonder my fiancé is jealous?

I do have one complaint -I only have four of these knives. I'm going to need at least eight more for the grilling I plan to do next summer. I mean, it's going to take a big patio party to properly show off these fine blades.

The bogus MSRP price in this listing aside, the $99 is the typical street price for this set and it's not cheap but so worth it. Very good quality in blade and handle. The knives make eating steak a special event ... well, almost. But it's a serious step up from the Eversharp knives, where the serration is great but rips the meat rather than cut (as the smooth edged Pro-S). Would buy again, even if the price is a bit high.

Splurged three years ago and got 2 sets. Love em. They are still sharp and can draw a thin slice off the end of a New York Strip with ease. Guests love them too. That's why I need 8 more. Our backyard grilling events are getting more popular and I really hate to give some guests the second string knives. I am sitting here pondering the expense. Some things are worth the extra money though and this is probably one of them!

Wenger Grand Maitre 4-Piece Cook's Set with Swiss Army KnifeI am very pleased with this knife set. They are scary sharp, comfortable and safe to grip, and hold an edge.

They are also a very good deal. They are nearly identical to the top rated R.H. Forschner/Victorinox knives, but the Wengers are much harder to find in the U.S. and only sell in sets.

In Europe, these same knives, with bright yellow handles are the top sellers to professional chefs under Wenger's SWIBO brand.

The 3 piece Wenger Grand Maitre and 3 Piece Forschner/Fibrox sets sell for $55-$60 on Amazon, so this 4 piece set with Swiss Army throw in is a deal.

On the down side while they are tough, they are very light weight/not full tang/stamped not forged. These attributes will effect aesthetics, not use, safety, or reliability. They are not nearly as pretty as my Wusthof knives, and the free SA knife is a small but handy pocket type. The box they come in is not fancy.

Note that the bread and utility knife are both serrated, the paring and chef are smooth blades.

At well under $8 per knife, a full five stars.

Got the set when they were on sale. I was amazed by the quality and sharpness of the knives when they arrived. As a matter of fact, the bandage on my finger testifies it.

Other than the bread knife, I have used the other three. The paring knife was good for peeling apples, a bit too sharp though. The utility knife was good for cutting oranges, although I would like it to be harder and thicker. The chef's knife was perfect for cutting vegetables and meat, and was super sharp, sharper than any knife I have used, so be careful when handling it.

Overall, super value for the price.

One more thing to add:

Be careful with the knife, I am looking at two new cuts on my finger when I am typing. They are much bigger/deeper than if I used my other, dull, knife. I will keep using the knife, but only when necessary.

Good starter set for newlyweds etc, light but looks very cheaply made with no tangs. Plastic handles. Really, if I could do over..I'd not buy this set but get something better. I don't need the serated blades much either, and straight heavier blades would be a lot nicer. Adios ....

These knives arrived as described. I have this set and a set of the Wenger steak knives. They are awesome. I cook all of the time, we frequently have steak and these have stayed sharp throughout daily use. If you are looking for knives, stop looking and buy these. They are a great value.

These were a Christmas present for a very close friend. She can't believe just how sharp they are (including when she sliced herself, and didn't even feel it).

It's only been 3 weeks, but they have been used every day, and we are very pleased with the quality of these knives.

A week later I went to wrap the other, as a gag gift, and it was not working. Then it made a few peeps, worked again, then stopped. I gave it a a gift and luckily it worked when it was unwraped. Do not purchase. I read the other negative review but went ahead with my purchase because it was so inexpensive. Still not worth the cost.

As another reviewer mentioned, this is made of plastic. However, it was plenty strong to cut cake and serve it without any problems.

Others have pointed out that there is no 'on/off' switch, but it's not designed that way. The music plays when your skin touches two different parts of the handle. The music stops if you

1) hold the knife in a slightly different position, or

2) put the knife down.

The kids loved it they all wanted to take turns using the knife to cut the cake! It was fun. It got old after a while so I just held the knife differently and it was great.

Kuhn Rikon Avocado Knife ColoriI'm not one to purchase single-use kitchen gadgets, but I had to try this one out of shear curiosity. I LOVE IT! It really cleans out the avacado flesh and leaves little to no waste. It's handy to use and easy to clean. Just get one, you won't be disappointed.

I rate this Kuhn Rikon Avocado knife "nearly awesome" if only for it's ability to get the entire avo half out with the cool curved blade! Do we get the pit out with it? No doesn't seem to work for us. Do we use it to slice the avocado? No, we have decent knives. But NOTHING we have gets the avocado separated from it's peel as beautifully as this little baby. I love avocados and often eat at least one every day. This is by far the best avocado scooper tool available.

While the serrated "blade" will cut the skin and the two prong will extract the pit, I find a knife works better for these functions. But as a "scooper" this tool extracts the avocado completely and leaves virtually nothing remaining in the skin, regardless the size or shape of the avocado. Nothing else I've tried comes close.

About every six weeks I purchase a dozen avocadoes and make up a huge batch of homemade guacamole, which I divide up into single portion (3 fl oz) cans for freezing. It is everything others have said: well balanced, super sharp, holds its edge. I also have to say that the black handled version is definitely the one to choose. I think it is the newer version and is an alternative to the brushed silver handle. Most reviewers criticized that handle for tarnishing. This handle does not have that problem, is solid (not plastic), and has a good texture for a secure grip. I would still not put it in the dishwasher but that is just to help protect the blade. My only complaint is regarding the size. It is a 'super parer' which means it is a little larger than a normal parer. Its longer blade makes it awkward to use as a parer but it is too short to be a full function utility knife. My recommendation would be to buy the regular parer and then a second knife for the specific other tasks you have. These knives offer great value for the money so don't bother trying to get one knife for two tasks.

It arrived quickly, and the free shipping from Amazon included "Threshold Delivery" which meant two strong delivery people got the box inside my front door, and I just had to get it out of the box. It was packaged VERY well for shipping, not a scratch anywhere. It took me 30 minutes to get it out of the box and slide it over to its location, would be much easier and faster with two people working. It is VERY heavy and had Styrofoam blocks, the packaged granite board and shelves strapped to the underside, so get those removed before trying to move the island (I learned the hard way). I was concerned about the "some assembly required" but it was nothing screwing the knobs onto the drawers, unpacking and placing the shelves and granite board. On my island the drop-in granite board is on the left side, not the right as shown in the picture, but that's fine with me. The drawers have quiet, smooth slides and the red rub-through is done well. It feels and looks like a nice, solid, good quality piece of furniture. I am a happy customer!

UPDATE: Early 2012 the dreaded crack has hit my island top after just over 2 years of use. It has spread pretty quickly, too. However, I still love this island so much that I'll just find a way to get a new top (maybe granite or marble?) put on it once the crack is unmanageable. I still have no regrets and I'm still glad I bought it and I still feel like it is a great value!

UPDATE 2: Early 2013 filled the dreaded crack with wood putty last year and forgot about it no growth or recurrence of crack. Still a great value.

The finish on this island is just as good or even better then some of the custom made islands we were thinking of buying. I have been looking and contemplating ordering this island for the last 8 months but was concerned that it would not be exactlly as pictured. But it is even better than it looks . We love the island kitchen. Shipped in a reasonable time for such a large & heavy item. Final delivery was coordinated by phone to make a delivery appointment. Delivery is not "white glove"; had to beg to have the unit brought past the entryway into the kitchen. Actually, I ended up picking up one side and begging one of the other delivery people to help. Also, I had to completely remove the cardboard myself (no help) apparently for liability reasons. Helps to have tools and space available for the removal of the box. We had to remove the box since it was too wide to fit through an interior door space, so be aware of this when looking at the measurements online (measurements shown are accurate once removed from box, but packaging increases by up to 6"). Unit was undamaged, but missing the hardware to install the shelves. Powell was very good about sending these by mail using the included form to request replacement parts if damaged or missing (free of charge). Quality of build is great in my opinion. Drawer & door movement is solid. I could not have built a unit as nice myself. But if you have a high end kitchen, it may not be to that level. Island provides storage for pots/pans, silverware, utensils, small spice containers, and small appliances. We are completely satisfied with the unit and would recommend it to others noting issues pointed out in the review.

I debated on this purchase many months researching what I really needed and wanted. After reading reviews and testimonies from many websites, etc., I finally made the decision to purchase the Pennfield island. I have no regrets; we totally love this island. I actually purchased it to have more storage in my dated 70's kitchen, but we have come to use it for so much more. I pretty much prepare everything on the island. I have four children and they all love to hover around and sit at the island to talk to me as I work in the kitchen. I feel like we are actually bonding more all because I don't mind them in the kitchen as much because they are seated and not getting near the hot stove. This island is perfect! I love the colors, the design and the top looked lighter on the website, but it is somewhat darker. I did have to hire a local moving company to bring it up my stairs because we did not want to take a chance on it getting it scratched or drop it, plus it weigh about 278 lbs according to the packaging it came in. It was delivered by an ABF shipping company by one man, so he was unable to bring it inside my front door, plus I have a small entry and then stairs. They do not go up stairs, so I had him deliver it in my garage, no problem. The island is so nice and well constructed that having professionals deliver it upstairs for a fee of $100 dollars was worth it to us. I would definitely buy this again and I would definitely recommend it to friend. I can't say it enough, if you're debating on this island, Don't fret over it, you will love it! It's gorgeous and well worth looking at. You can purchase different barstools if you don't like the hard wood stools that match it, that's what we did. If you want to feel like you're sitting at a regular table, you would want stools that seat at 24 inches, but if you want to sit up high and use it as a bar, you would need 30 inch barstools, that what we purchased because the kids like sitting up high. We bought barstools that measure about 18 1/2 inches wide at the bottom, but you could probably purchase wider ones and just angel the legs to fit no problem. If you purchase 24 inch barstools, you could actually purchase ones with handles if you like using those, but the 30 inch stools, the arm handles would probably not fit underneath. The measurements for the space you have for seating is 40 inches wide and 33 1/4 in height. The actual height of the island itself is maybe an inch taller than our regular counters.
