I had this knife for about 7 to 8 years. This is a workhorse. The steel is impeccable and its easy to sharpen if you use the sharpening stones; oil based or the DMT diamond based ones. It keeps its edge for about 3 weeks and then I just do some touching up with the stones and a honing steel or a ceramic honing bar. Viking products in general are built to last a lifetime and there is not another knife that I prefer. I have some very good global japanese knives but take some time to sharpen properly. I also have Tojiro japanese knives which I also love. But for longevity and the ability to have even a novice sharpen these, it can't be beat. If you need a santoku 7 inch knife get this. I have NOT tried this sharpener, review is based on the available YouTube vid from the company:1. Because it sharpens both sides of the knife at the same time, you cannot raise a bur, which means you are kind of flying blind.
2. For the same reason, it cannot be used to sharpen single-edged Asian knives, because obviously you only have one side to sharpen, and this would ruin the knife.

Kapoosh Knife Holders
When we moved into our new apartment, we went to IKEA and bought all sorts of furniture and household goods. This included an assortment of their knives. The only problem -the standard knife block that they sell would have had too many unoccupied slots; and the knife sharpener would not have fit into the block.I read the reviews of other models of the Kapoosh knife block, and decided that it was worth a try. I am glad -it works very well. My overall experience is positive, but I have the same gripe that a few other reviewers have had: the knife block is only tilted by about 25 degrees, so that when you want to pull out a longer item (the aforementioned knife sharpener, or the 8" chef's knife), you need to move the block out from under the cabinets. I never had such problems with conventional knife blocks (or with the "Ex" knife block that I bought for my mother-in-law).
The knife block feels a little weird the first couple times that I used it. The gripping action of the plastic rods (bristles) is strange. I found that the best way to put the knives in is to turn the knives sideways, and then let the knife settle into its final resting place as you push it down (instead of trying to push/guide the knife to go down straight).
I reconfigured my items many times before I finally had them ordered the way I wanted. As it stands now, the upper area holds 5 knives, a pair of scissors, a knife sharpener, and a pair of chopsticks. The lower area is still empty right now -the steak knives will go there when I get around to buying them.Having a number of santoku knives, large chef's knives, bread knives, etc. meant we needed several wooden knife blocks on the counter since none had more than 3 of the large slots. The Kapoosh holds everything we had in 2 large blocks -even my husband loves it. This purchase was a winner!Works as advertised. I have a variety of mismatched knives without a knife block, and this block allows me to store them all, regardless of their differences in size and shape.

This knife block has been driving me crazy for years. I am finally going to get rid of it and get another one.The problem is that there is not enough space inside to insert long knives all the way in.
If you could remove some of the little black things to make more space it would be perfect.
But as it is, the 3 long knives (that came with the block so you'd think they would fit) can only be inserted about halfway, leaving the top half of the blade sticking up out of the block.
That makes the whole thing so tall it won't fit underneath our cabinet. And, every time you try to put a long knife in you have to really jam it down to get it even partway inserted.
So stupid that the knives that COME WITH the block DON'T FIT INSIDE IT.
also, it is not true that you can take it apart to clean it. The insert simply will not come out, even after unscrewing the screw in the base (which was not easy since there isn't really room for a screwdriver) it does not come out. Even after banging on it with a hammer.

I love the versatility of this and that I'm not restricted to predetermined slots. Since I don't have an entire set of knives, but a hodge podge of single knives, this was the perfect solution for me. I really wanted a magnetic strip for my knives, but with three small children, it didn't seem to be the safest way to go without a locking cabinet around it and I couldn't find anything that was within budget that was like that.The Kapoosh is nice in that you can put any assortment of knives in varying lengths and shapes and handle styles and they all fit. I haven't run out of room in it yet, but from reading other reviews, if I ever fill it up to the point where no new knives fit, I'll break off a few rods to make room.
It's probably not possible, but it would be nice if it wasn't so extremely bulky. I can't picture how it would look if it was a bit more compact for the amount of knives it holds, but it seems like something could be done to lessen its girth a bit or at least offer more space for the overall footprint of it.
That being said, it's still a great item and far better than my old method of tossing all my knives in to one drawer, which is not exactly the safest thing to do!

Have been looking for ages for the perfect silverware, and I have found it in this set. Simple and timeless, but not devoid of style. Perfectly weighted solid in the hand but won't jump out of the bowl or off the plate and hit the floor. The smaller spoons are perfectly sized for cereal and the smaller forks are not puny (why is this such a rarity?). This means that all of the pieces in the set are usable, and won't just camp out in the drawer as the soup spoons and small forks in my current set do now. Also: since it is not listed in the description, I want to mention that they are made in Japan. WMF makes very nice flatware. When we decided to upgrade, we checked some brick and mortar stores and found a style we liked (Nortica). I bought the service for 4 at Amazon because it was quite a bit cheaper than the local C&B. At the time, the supplier was Goodman's in Miami. The product was received and was exactly what was ordered. I would also say it was packed better than Amazon usually does.I note that Amazon is now the supplier, and the price is some $40 more than I paid in Jan. 2012. If you don't mind spending more, hit that one-click button and your job is done. But if money is important, shop around.
On the positive side, we love the flatware and have purchased more.

We got these originally in 1996 for our wedding from Crate & Barrel. Since then we have lost some pieces. I tried to locate them through C&B but they discontinued them. Luckily these are the exact same item. Let me just say that having used these for 16+ years they have held up great. The only thing over time is minor scratches in them and the matte finish gives away to a more shiny surface. Shun DM0750 Honing Steel
The amount of bad information here is unbelievable. This is not a sharpener. It doesn't have a hand guard or a slot. This does not have a plastic handle and isn't made in China. It will not scratch your knives if you use it correctly. It is not too short for a 12" blade.To my surprise it is capable of turning a chefs knife into a boning knife rather quickly, but if one follows the instructions on the box and uses a VERY light touch for stroking at the correct angle this high end tool will do you right. The handle is the same as on all classic knives. It is made for honing, not removing metal like a ceramic stick.
The angle guide is not to rub your knife against, just to help you get the right angle before you move down & stroke it. Holding it correctly, you do not have to change hands, just spin the steel 180 degrees. The flat part of the angle guide is 16 degrees for Shun knives. The rest of the angle guide is 20 degrees for the cheaper European steels and don't bother honing grocery store steel just pull it through a $1.29 sharpener.
This is a great tool if you learn how to use it the correct way.
HilditchI recently purchased this honing steel and perhaps I can sort out some of the confusion. In short, it does not damage your knives (unless you don't know how to use it), it is for honing (not sharpening), and my box says Made In China. The handle looks and feels exactly like the handles on the knives, and according to Shun's website, is made of the same material.
First, the steel performs like it should, and I have no problems with it's performance, design, or construction. I give it 5 stars for these reasons. The guard is handy for its flat side, helping to correctly angle the blade to 16 degrees--the angle at which the blades are made.
This is a honing steel, not sharpening, as has been said before. When a knife is used, the blade begins to develop small bends in the blade. A honing rod simply straightens out those bends, putting the blade back in alignment again. Of course, eventually the blade will no longer have the perfect edge it once did, and will need to be sharpened (that is, removal of material to make a new edge). This steel does not make your knives dull, jagged, ugly, or otherwise damaged. Unless I suppose, you don't know how to properly use a honing steel.
The box I'm holding here clearly says Made In China. My Shun knives are marked on the blade as made in Japan. That being said, I don't believe that it's of an inferior quality--if you handed me the steel I'd have no reason to believe that it was of a lower quality in things like the handle or craftsmanship as my knives at first glance. Also, I can't say for certain, but perhaps different runs of this product were made in different places. That would at least explain the confusion over where this product is made.
According to Shun's website, this handle is made of "Ebony-black PakkaWood". If it's truly made of some sort of plastic, it's indistinguishable from the look and feel of the knives. The only discernible difference I found is that it sounds different when tapped on, but that may very well be from a different size or shape of tang. There is however, a steel on Shun's website with a Co-Polymer handle. It's product number is 9990, and the handle looks very different from this one, almost like a big black plastic piece. The product pictured is a DM0750.

Shun Sharpening SteelI use Japanese, French and German knives in my kitchen as well as a well known German brand's sharpening steel. I was constantly frustrated by it's inability to hone a blade and assumed I was using it incorrectly. I viewed video after video of correct honing techniques to make sure I had it right but to no avail.
I heard that Shun produced a good sharpener-honer so decided to purchase one. I have never looked back! The minute I put a blade to it, I could feel the difference. It realigns and maintains the edge on both the Japanese and European blades every time I use it.
One word of caution, it has a slot to guide the 15% angle required for Japanese blades, but this can scratch your knife and spoil it's aesthetics.
Otherwise, go and get one, you won't regret it!

Great honing steel that is a bit longer than others I looked at (seems to help a bit for the bigger knives) and an attractive taper (not sure that matters, but it looks nice). I've had it for a while now and use it frequently. Despite an occasional clumsy collision, this steel slides smoothly and shows no nicks. It straightens the edge on my (mostly) mid-grade knives with ease.Another reviewer claimed the handle was plastic. Perhaps he was mistaken, or perhaps he had a different version. It does almost "feel" plastic due to the hard resin finish, but mine appears to be the same pakka wood as on my Shun knives (though the steel lacks the metal endcap the knives have).
Aesthetics are open to debate, but I think it looks much nicer than most, and performs better than any other I've used for daily straightening.

I bought my 'Santoku' knife made by Sekiryu at an Asian foods store. It is a real Japanese-made knife at least, I see no made-in-China labels. The package instructions are all in Japanese, but there are some helpful pictograms on blade-sharpening profiles and knife care. No dishwashing machines, OK?While listed as a 7-inch blade, the Sekiryu Santoku knife actually has a 170mm stainless steel blade (6.75 in.). It uses a thinner, stamped blade stock (unlike the forged construction of more expensive knives). So it flexes a bit more, though not to an excessive degree, in part due to its limited length. Steel appears to be a decently tempered 420-series stainless steel, probably 420J. Its edge is thin, hard, and after a bit of sharpening very sharp. Instead of the flat ground blade profile (progressive taper from spine to edge) of most santoku designs, the Sekiryu Santoku's blade has a hollow machined section ground along its length on the lower third of the blade. It is a partial tang knife; the handle is of lightweight wood instead of heavier Ho wood, and it has a plastic bolster instead of horn, so its balance is a bit blade-heavy, and not at the rear of the blade as with most full-tang Santoku. This does not impair its general performance, and the symmetrical handle allows it to be used by both right and left-hand users (not always the case with traditional designs).
Once sharpened and honed to improve the factory edge, the Sekiryu Santoku still cuts and slices very well, much like a short slicing knife, probably due to its rather thin blade. While it takes a very sharp edge, the blade steel isn't terribly hard and so keeping the blade steeled and occasionally resharpened will be required, but then it doesn't cost $80, either. You will want to restrict it to lighter veggies, fish, and chicken it's definitely not for tasks like butchering thick cuts of meat or careless chopping on hard surfaces (always use a wood cutting board). Overall fit and finish are good and the knife has held up well after two years of use.
While it's certainly no Hattori, I would easily recommend this budget stamped-blade knife over some of the U.S.-brand name (but made in China) 'Santoku' copies. Sekiryu put its money where it needed to be in a budget knife in the steel and heat treatment instead of the looks.

Victorinox Cutlery 4-Inch utility Knife, White Polypropylene Han
For many of my cooking tasks, I find I need a sort of "in between" knife. I love the Victorinox chef's knife, but often the task at hand doesn't require a knife that big. I love the paring knives, too, but often am chopping or slicing, so the paring knife is not quite enough. The 4-inch utility knife is my Goldilocks knife -just right!The first time I used it, I was chopping sweet bell peppers, something that's often frustrating; if the skins are just a little bit tough, many knives don't deal with them well. I end up having to rearrange the slices I've cut with the inside facing up to chop through them readily, a hassle and a time-waster. Not so with this knife! Its super-sharp blade sliced through cleanly and quickly with almost no effort. It was also a handy size for cleaning and cutting up the peppers to prepare them for chopping. From there, I moved on to the onions, then to the finely chopped garlic (I was making chili), and it performed equally well with all. The handle is a little small and light, but fits comfortably in my hand, and in combination with the thin blade, it makes the knife very maneuverable.
At first I wasn't sure I liked the white color, but now I appreciate it because it makes the knife stand out among all the black handles in my knife block, which is just what I want, since it's become the first one I reach for almost every time. For the money, you really can't beat this knife. Get it along with the Victorinox chef's knife and you just might find that instead of a drawer full of so-so knives, you can become a 2-knife cook. I bought three Victorinox knives based on a recommendation from "Cooks Illustrated" magazine. I am so pleased! I got the 3" and 4" utility knives plus the chefs knife. All three are the best of their kind I have ever used, and I have always considered myself a bit of a knife snob. The polypropylene handles are very comfortable and non-slip, and the blades are just right. They are really sharp and they stay sharp. What happens when you take razor sharp, tempered, high-carbon steel knives to wood? Well duh, the knives cut into the woood. I'm so tired of hearing complaints about wooden cutting boards showing knife marks. I read one review where the writer complained that they would probably have to replace the board after a few years. This is natural. If you don't want to see cut marks or replace your cutting board ever, get a slab of marble. It's bad for your knives, but these people seem not to care about that.This Farberware 3-piece cutting board set is great. For the price, it's fantastic. These are the only cutting boards your average home cook should need. They are reversable (though only one side has grooves) and offer three various, useful sizes. The large is about the size of two sheets of paper side by side; big enough yet still managable in the sink to wash. The medium is about the size of one sheet of paper. The small is about the size of your avarage hardcover book. All are about as thick as the handles of your knives.
They are hard wood providing a nice cutting surface. The wood is well oiled to help protect it from water damage. After a while, your bound to have many cut marks, but so what? Take a look at the price again. You buy cutting boards so they take the damage, not your knives (or your counter).
The boards I received were all smooth and straight (not warped). None have any signs of cracking and seem well made. They are easily worth two or three times the price amazon.com sells them for.If this seems like a ridiculous deal for three hardwood cutting boards, well it is. Only problem is two of the boards have split since I bought the set six months ago. I don't know if the wood is not cured correctly or what, but I have certainly not abused these cutting boards, nor have I subjected them to extreme temps or soaked them in water.
If I had it to do over again, I would get one good cutting board that would last, as these will have to be replace as they continue to split.

Just wanted to update with a note that for $10 I bought a huge heavy-duty wooden cutting board at a certain Swedish superstore. Buy the mineral oil that comes with it and treat it once a yearhaven't had any issues with it.

I think it must be clear from the cost (and other reviews) that these are not what one would call "quality" cutting boards. Some of the flaws right out of the box were:1. The largest had splinters (actually shavings half attached to the surface which would create an irregular surface once I'd pull it off.) The smaller ones have some irregularities too.
2. Also, they're coated with some sort of a material so that they don't absorb oil when trying to oil them initially. Dunno if that's good or bad, though.
I was not under any illusions when I bought them, but I'm giving them four stars because they serve the purpose I had in mind for them. I actually use them under flexi-plastic cutting sheets. Why use both together? Well, the flexi sheets let me transport the cut food to the stove (or wherever) easily, are cheap enough to replace periodically, and are dishwasher safe. The wood cutting board provides a surface underneath the flexi-sheet that is not as hard as my counter, thus protecting my knives' edge. And as I don't use the wood surface directly, I don't have to expose it to moisture etc. Sometimes stuff does trickle down to it, but that's different from cutting ON it, and can be taken care of by wiping it off. Hopefully, this will prevent the board from splitting apart, and the way I use them, small cracks won't bother me too much.
As an aside, I find the smallest board too small to cut anything on, so I usually use it as a trivet.

I read through all the reviews for this item before purchasing it. Since the positives outweigh the negatives I went for it. I have only used the big wood board three times and each time I washed it and dried it before placing it on a drying rack. Yesterday, I went to use the board and saw that it had warped and there was a huge crack running though the middle. I'm not a person who cooks everyday, but I use these knives for cutting vegetables, meats, and fruits several times per week. They work well, and hold up fine in the dishwasher. I don't use the stand, because I store them against a magnetic strip on the wall. The knives look good in the kitchen because they're colorful, but they're practical, too. The colored coating seemes to keep food from sticking too much to the blades. The only thing that I had a bit of trouble cleaning off was darker juices from red meats. Paring Pro Surgical Stainless Steel Paring Knife
As an engineer with a masters in mechanical engineering, I am very skeptical about any wild claims about materials and their strength and surface toughness(to a normal person this is called "durability"). I was shown this knife by a rep at a presentation at walmart, making claims that these "forever knifes" do not dull even when cutting steel. Lets just turn this into a list of impossible claims that I noticed with my Pro-Paring knife:1) An obvious rule of thumb, two materials made of the same material will when rubbed together, will result in degradation of both though at different rates. THEREFORE, STEEL DULLS STEEL and the claim made by the rep and the television where an aluminum can was cut are both false, as aluminum has similar surface toughness to steel
2) If there is even any "surgical stainless steel" in this blade, it is very minimal. Surgical steel will not bend but only 1mm when a force is placed on the end due to heat treatment, it will break. This is not the case with the Pro-Paring knife, I can easily bend it to 1cm with minimal force.
3) I have experience in machining, when machining is done right you cannot notice the individual machine lines on the blade, You can only tell that it is machined from the partially dull appearance of cutting portion of the blade. With this blade, I can literally count the machine lines on it, indicating a low precision and accuracy. Since blades cut by providing a moderate force over a minuscule area, this blade's cutting ability is limited due to its inaccuracy and varying areas of the cross section of the blade.
4) Claim to be dishwasher safe, I just have to laugh at this one. There is clearly just enough elemental chromium in this metal to consider this "stainless", but by no means is it stainless at the high temperatures from within the dishwasher.
LASTLY AND MOST IMPORTANTLY, DO NOT BELIEVE THE COMMENT THAT SAYS IT IS SO GREAT THEY BOUGHT SOME FOR FRIENDS. No one in their right minds would purposely give this product to their friends unless they weren't their friends. I hate that companies do this so I wrote this entire essay to stop consumer spending on TV products that are complete engineering failures, while claiming to be an engineering innovation.It was an OK little knife. It wasnt very sharp. The quality was lacking a bit. But it was OK!!! I peeled potatoes with it. I like the size and handle. I will use it but there are better knives out there. But for the price you can get by with it.

Wusthof Asian Edge Knife Sharpener, Red
This sharpener sharpens at 17 degrees, which is perfect for my Wusthof Classic Santoku and Wusthof Ikon knives. It can be used on other Japanese knives as well (though truthfully, you should be using a stone to sharpen your nice Japanese knives).I guess you could call this the lazy man's sharpener, for those of us who don't have time to learn how to use a whetstone. It's cheaper, and more compact than a Spyderco 304, which I was also looking at (but can only be found on eBay these days, and costs twice as much). But it works well, and creates a sharp knife in just a few swipes.
Now my sharpening is complete. For my regular German knives, I sharpen every 6 months 1 year with the Chef's Choice 120 (sharpens at ~ 25 degrees), and I steel everytime before use at about 22-25 degrees. For my remaining knives, Ikon, Santoku, I just use this Wusthof Asian Edge sharpener (using the fine ceramic) every so often, and the coarse ceramic at most 1x or 2x a year.
I would not use this sharpener on Shuns however, since Shuns may sometimes have a one-sided bevel edge that may be destroyed with this type of sharpener. Consult your knife manufacturer's recommendations for best results.
**EDIT** After having owned this device for nearly 2 years, I can attest that it's just as handy as ever. I use it to sharpen my MAC MTH knife, and it works beautifully for this purpose. My MAC knife chops through watermelon rinds/butternut squash/taro roots like a hot knife through proverbial butter, after just a few sharpenings.I purchased this santoku sharpener at Amazon and have been very satisfied with it's performance. It maintains the 16 degree angle required on all german-made santoku knives and most other similar asian knives. Routine honing with the finishing stage will maintain the ultra sharp edge of a new blade for a long time.
Have not used the course-stage sharpener because I do not allow the knife to become dull. However, a dull knife usually requires removal of metal to become sharp again, and I don't believe this sharpener removes metal. It is great for its intended purpose though, maintaining the near-new sharpness of a high quality santoku knife, and maintaining the 16 degree angle without scaring the edge when sharpening.

I highly recommend this sharpener it does a better job on my Global, Wushoff and Calphalon knives than any other sharpener. Including Global's recommended Minosharp with the two wet sharpening wheels, which does just an ok job in comparison.It performs excellently on straight blades you need to curve the knife a little for best effect if the knife's blade is curved near the top.
I think it loses some of its effectiveness after about 6 months of moderate to heavy use, but at this price I think it's well worth getting a new one if you spent on premium kitchen knives.
Also, it is impossible to cosmetically scratch your knives with this sharpener it will touch the blade an nothing else...

Came in sharp as a razor and held an edge through 3 180lb Ahi so far. Also bought this with a sharpening steel so using a stone wouldnt be nessesary for a while. What can I say? TOTALLY WORTH THE PRICE if you butcher/clean fish. This blade is sharp to begin with, but it is also re-sharpens quite nicely. I use this blade on wild game, such as snapping turtle, bullfrogs and catfish, though I must resharpen it often, due to the bones and tough skin, the shape of the blade allows me to get meat in tough areas that a regular filet knife would shred. Now that doesn't mean that I have stopped using the filet knife, as taking the filet off the skin of a catfish is still much easier with a filet knife. I find that having this knife as well as a filet, is the equivalent to having a phillips head and a flat head screw driver, as they both serve their own purpose.ya, crazy sharp. I kill 5 to 7 beef a day, hand skin. These knives are great just like outback steakhouse knives that people try to take, these are inexpensive and work just as well and look the same, very impressed.I personally felt these steak knives were great for the price. I was so happy when these steak knives arrived. They were the exact shape and feel I was looking for in a steak knife. Zhen Japanese VG-10 Light Cleaver Vegetable Chopping Chef Knife 7"
The Pros.The design, and ergonomics of this knife are superb. It is well balanced, with a very nice convex grind to the blade. The clip point is extremely useful, and on the other end, the flat heavy pommel on the handle is ideal for crushing garlic, etc. The steel is very hard, and maintains an edge well. The TPR covering on the sculptured handle provides a secure grip at all times.
The Cons.
The biggest design flaws are the so called non-stick texture, (the black band at the edge of the blade), and the awful hollow grind finish that is put on the edge.
My first tests out of the box were disappointing. Totally failed the tomato test, which is to draw the blade backwards 1/2" across a tomato with only the weight of the knife to make a cut. I stone sharpened the edge, and tried again. Nice slices, but the roughened area produces a lot of drag, and the slices stuck to the blade anyway. I also found that the surface is so coarse, that when I first washed and dried the knife, bits of towel fiber were stuck all over it.
I have removed the nasty non stick surfaces from my knife, (I am an amateur knife maker, so don't do this at home), and removed the hollow grind. It is now the best knife I've ever bought.
In retrospect, I would not recommend this version of the knife. I would have to suggest the more expensive Damascus model, which has neither the non-stick band, nor the hollow grind at the edge.What a quality knife!! It is razor sharp to say the least, the one-piece construction gives a sturdy-feel and good weight when cutting, very well made. The grip is comfortable and I am a big fans of the non-slip design, made it that much safer to use. Better yet, it is so versatile, I can cut meats, vegetables, fruits (you name it) without the hassle of switching back and forth on different knifes. Highly recommended! It will be awesome if I can find some steak knives from them.
