Shenzhen Knives. White Ceramic 6' Chef's KnifeI've been waiting for ceramic knives to come into the consumer price range, and the Shenzhen product is a great tryout for those who wonder if they'll like ceramic better than metal. (Ceramic blades tend to be a little thicker than their metal counterparts.) I've been comparing this knife to a similar product from Kyocera which costs about twice as much, and so far, I like how the Shenzhen holds up. I may even like the Shenzhen handle a little better, as it encourages a better and more functional grip than the home cook normally uses.

For the usual sorts of kitchen duties it works as well as any other knife in my collection, with the added benefit that the ceramic doesn't discolor the foods that a metal blade might. It doesn't have the same weight as some chef's knives--and to be fair, I favor those that come out a little more on the light side anyway.

My Victorinox Fibrox chef's knife is still holding sway as my favorite, but this may change soon.

(Yes. You can't put it in a dishwasher. It's not hard to clean--90 seconds at most, including drying it. Why would you ever put a good knife in the dishwasher?)

Remember that there are still some reasons you need to have steel blades around. You can't use this to pry bones out of sockets, or cut frozen items, or smash garlic with the flat of the blade. Zirconium oxide makes a very sharp blade, but a brittle blade. (That's chemistry. No way around it.) Nevertheless, I'm pretty sure you'll find yourself reaching for this for a lot of kitchen cutting tasks. I know I do.

I recommend for anyone who's looking for a ceramic knife

and does not want to pay $75+ for 1 knife.

What I like:

Sharper than steel knives, and holds edge longer (since I bought it

earlier this year I have not needed to sharpen it)

Ergonomic and comfortable rubber handle

A bargain!

What I did not like:

If I do need to get it sharpened, I have to take it to a professional

knife store to sharpen it with a diamond wheel

Do not drop it! As it may snap the tip.

I really like cooking for friends and hosting dinner parties, and I've been reading a lot about ceramic knives since I was looking to add to my kitchen knife collection. From my research, the ceramic blades hold their edge for a long time and are beneficial for cutting fruits and vegetables (as they do not leave any metallic aftertaste or react with the fruit). Unfortunately, because the manufacturing process to make ceramic blades are complex, the knives can be cost prohibitive (Kyocera knives can run $80-100 for one knife!).

During my research, I came across this Chef's knife and decided to buy it based on its reasonable price. For less than half the price of a Kyocera knife, I got this Chef's knife. I figured that the worst case scenario would be that I wouldn't like ceramic knives, but at least I wouldn't have spent twice the amount of money on a Kyocera knife just to try out a ceramic knife. All I can say is that I made a good decision and that I LOVE my Chef's knife. I use it for practically all my slicing tasks. The ergonomic rubber handle is very easy to hold, and it reduces hand and wrist strain when I'm cutting a lot of ingredients (especially handy when I have dinner parties!). I know being a good cook requires having good tools, and I'm glad I got the Chef's knife because it just makes tedious slicing and cutting tasks easier and go more smoothly.

Cutting some hard vegetables on a plastic cutting board has caused the blade to chip, albeit the chipped areas are small. After spending $40 on this knife, it is disappointing to see that this is so impracticle for everyday use.

I am currently in the process of returning it. Will update with my experience.

I bought this cutting board for my husband. Our old board that was four years old was looking a little worse for the wear, so I thought we would upgrade. Was I mistaken. The board looked okay when it arrived although there were a couple of rough edges. But my husband loved it and he oiled it and treated it as instructions recommended. After just four months, the board is warped and splitting in two spots. I don't want to say Boos boards are junk, but this one certainly falls below their purported standards.

I contacted ABestKitchen through their site and have received no response. The Boos company site suggests contacting them if one of their authorized distributors doesn't respond. I guess that is the next step.

MinoSharp 220/GB Ceramic Wheel Water Sharpener, Grey/BlackThis is a great aid to sharpen Global knives. I disagree with the review that said it dulled the knives. The tool has ceramic wheels set at the proper angles to get the correct Japanese set to these knives, which have different angles to each side of the blade. After 8-9 passes with no pressure on the knife through the rougher and then the finer wheels, the knife is ALMOST back to factory condition. Then, it is necessary to use a fine DIAMOND hone to get that last degree of razor sharpness. And make no mistake, a properly sharpened Global knife is that sharp, and this tool makes it easy to keep them razor sharp. Instead of a diamond hone, you can also use a very fine waterstone to hone them, but trust me, the diamond hone is easiest, although it does not leave the edge quite as polished as the finest waterstones. This tool and a diamond hone let me return my Global knives to scary sharp in less than 5 minutes each. They are so sharp that whenever I sharpen them, I warn my wife that they are super sharp (as opposed to very sharp!), just to make sure that she is extra-careful when she uses them.

Now, having said that, the package states that it is recommended for Global knives, and no one should use this tool on anything other than Global knives, or similar Japanese-style knives. It is not meant for European-style knives, whose blades have a different set.

I'm not sure how people are banging up their knives using this simple, effective sharpener. Slow down, folks. Take your time.

I own a number of Global knives, and sharpen them all using the MinoSharp with tremendous success. I've even had luck sharpening Henckel and Wusthof knives with this. I enjoy using it, and when I'm done, my knives are like new.

Before you buy the Shinkansen Sharpener for your Global knives you must understand that it doesn't return the blades to their factory sharpness.

When I first bought my Globals I was warry of using my old ceramic stone on their extremely acute edge, so I bought the Shinkansen Sharpener to go with them. When they arrived, the knives' sharpness lived up to everything that's said about them, but after I ran the chef's knife through both slots several times... the knife got DULLER! Repeated use did not do any more harm to the blade, but it never improved either.

It seems that, because of it's simplicity, the Shinkansen Sharpener is best for returning very dull blades back to a servicable edge, but it will never get them really sharp.

I picked this up as a quick and easy knife sharpener for work. It managed to scratch up the side of the blade of one of my Global knives with the plastic guide.

the slots/guide to run your knife blade through are narrow, some larger knives may not fit into it if the blade is thick.

after about 1 year one of the stones broke, however you can buy replacements.

For the home user, this will suffice. If you use your knife all day long like I do, I recommend the good old tri stone instead. Ok to have as an emergency knife sharpener in your knife bag.

I was never was able to get a good enough edge with this product to do fine chiffonade and other cuts that require good knife skills.

I bought this to sharpen several Global knives after comparing it to the confusing and expensive arrays of sharpening stones out there. The sharpener is easy to use and made of high quality materials. To operate Simply fill the small tray with water and run the knife thru the offset grooves over a course and fine ceramic wheel. After a minute i was done with several knives. Comparing the globals afterward I had mixed feelings because the knives were already pretty sharp to begin with. The revelation though was how well it worked on my Wusthof Grand Prix Knives. In fact they restored them to better than new as i was always dissatisfied with them because they were never very sharp which led me to Globals to begin with. Now the Wusthof's are of comparable sharpness. This is a great item and well worth the price.

Swiss Army Brands 40019 Boning Knife, 6-InchI bought this on the recommendation of my brother-in-law (an artisanal butcher and formerly sous chef at a Michelin star restaurant). He uses this as part of his daily butchering kit. Since good knives are a critical part of his trade, I trusted his advice and couldn't be happier with the decision.

For the last two years I have participated in small scale hog slaughter with friends and family. The Victorinox Forschner knives paired with a good steel (F. Dick Multicut) made a huge difference the second year; breaking and butchering 5 pigs in about half the time we butchered 4 pigs the year before. The flexibility is great for maneuvering around bones and executing a clean cut, even in novice hands.

The rosewood handle soaks up fat, preventing the handle from getting slick thus preventing dangerous situations. I was worried about the clean-up with the soaked up fat, but had no problems cleaning with soap and water. While fibrox may be slightly easier to clean, I'd rather spend an extra minute cleaning than hours in an Emergency Room waiting to get stitches from an accidental cut.

Will gladly buy more Victorinox Forschner knives in the future.

Victorinox Cutlery 3-Piece Chef's Set, Black Fibrox HandlesCustomer review from the Amazon Vine Program In my kitchen, I try to practice the buying philosophy of "buy for quality ONCE". Yet somehow I have ended up with a drawer full of knives of varying quality, and I really only use 2 the most:

1) A surprisingly affordable (under $125) Santoku

2) A serrated 5 inch utility knife (indispensible for slicing tomatoes)

So I was a wee bit curious to try this Victorinox Black-Fibrox Handled 3-piece Chef's Set as part of Amazon's Vine Program. They are a Swiss Army Knife product (and thus there is an assumption of quality behind this brand name), yet their price was really affordable. Could these knives really live up to their name for the price? Would they knock my higher quality knives out of the park AND out of my knife drawer?

Here's what I like after using these knives for a week:

1) The blades are strong for being very thin; despite not having a full tang, they do not twist or flex very much.

2) The black Fibrox handle material has a grainy texture, making it easier to securely hang onto when it is wet.

3) The Fibrox material is highly sanitary, according to National Sanitation Foundation.

4) The Swiss Army Knife branding.

5) The lifetime warranty!! (Return to Connecticut for US customers or Ontario for Canadian customers.)

6) The price; If you wanted a 3-piece forged set with a full tang, you would expect to pay 3x the price of these knives (based other options on the Swiss Army website).

7) Of the 3 knives, the 8-inch Chef's knife is the most balanced in my hand, and most likely the only one of all three I will ever really use.

Now for what I do not like about this set, and why I felt I could not rate them more highly. (Please note: I feel it would not be fair to rate these harshly by comparing them with much higher quality knives that are forged and have a full tang; they are just different animals in my mind.)

1) The handles feel hollow, contributing to the imbalanced feel.

2) The thin blade's ultra-light-weightedness does not feel secure in my hands; I foresee a few accidents due to slippage and the occasional flailing and wringing of hands that occurs in my kitchen. (I tend not to flail as much if I have something heavier in my hands.)

3) The 4-inch parer is more handle than blade; it just feels silly and far too large in my hand to easily pare an apple. (I tried.)

4) The 8-inch Slicer is more blade than handle and feels ungainly in my hand, not at all well-balanced.

Neutral Observations:

1) I tried to cut into an acorn squash with the Chef's knife; no luck at ALL. Then I tried the slicer same problem. So before I attributed a negative rating to these knives, I also tried to cut the squash with my best knives still no luck!! So, the acorn squash is getting the negative review here.

2) These are steel, and steel can rust if damaged, so it is important to take special care of even your cheapest knives. Buy some good knife guards for each of them; these can be found in most kitchen stores and are cheap.

3) These knives should never be dishwashered, as with any other chef's knives. This is not uncommon; it is just a fact of life for users of kitchen knives. (Not only is dishwashing bad for the knife and handle but also potentially unsafe for your DW.)

4) At the time of this writing, the Swiss Army website does not seem very responsive to customer comments or questions. There were some questions posted 6 months earlier by other customers which have gone unanswered. I also have not received a response to my question as to how this product (identified on the box as # XS47892) differs from the earlier product incarnation # 46892. I consider this a neutral thing because the manufacturer has answered some, just not all, questions on their website.

UPDATE 3/1/2011: Swiss Army Customer Service responded to my question from 2010. Here is that emailed answer: "After reviewing the 2 different Chef's Cutlery Sets we have available, I found that 46892 which has the Fibrox handle has a paring knife of 4", a chef's knife of 10" and a slicing knife of 8", while the 47892 with the Fibrox handle has a 4" paring knife, a 8" chef knife and an 8" slicing knife." So, the different SKU is due to the size difference in the chef's knives.

Bottom Line:

1) These Victorinox knives are a pretty good entry-level set of knives, but not the best nor most complete option. They will probably get replaced by the user at some time, and supplemented with more useful knives (like a smaller parer, a really good 5 inch serrated knife, and an excellent Santoku)

2) Would I buy these for myself? No as mentioned I would really only ever use one out of the three knives, so this particular set is just not my ideal choice.

3) Would I buy these as a gift? Possibly, depending on the culinary aptitude of the recipient.

Customer review from the Amazon Vine Program Soon after I had the thought that I needed some new, better knives than the dull, not-so-great ones I have, this (Victorinox Cutlery 3-Piece Chef's Set, Black Fibrox Handles) popped up for me to try. How serendipitous indeed! As soon as I got them, I was surprised at the size of these knives, which are much bigger than I'm used to. I generally use a little paring knife for many things and the paring knife in this set looks gigantic next to it. I'm still getting used to the knives but the quality is remarkable and I have been very impressed.

Pros

* The three knives included: 8" Chef's, 8" Slicer, and 4" Parer are a nice selection and very useful.

* Very sharp, which makes them slice with very little pressure. I may start to actually cut veggies the "proper" way by using the Chef's knife now.

* The grip feels nice in my hand and doesn't slip, so there's less chance for accidents.

* I have nerve problems in my wrist and arm, so it's helpful that these are ergonomically designed to minimize tension.

* As far as knives go they are attractive looking, though not the best looking I've seen, but they have both substance and looks, which is preferred.

* Price seems reasonable, though I'm no expert.

* According to the description the handles have been approved by the National Sanitation Foundation.

* Made by the same company that provides Swiss Army knives, so you know this is a quality product.

* Lifetime warranty. Always nice to have.

Cons

* Purely a preference but I'm a vegetarian so I'm not sure how useful the slicer will be in the long run. I'll probably mainly use it for vegetables and odd jobs. For the average person and cook though, I'd say this is a good selection and a decent price.

* As mentioned above, the paring knife is pretty big and while I'll use this for some functions, I'll also still use my other paring knife because it's easier for smaller tasks.

Overall, I'm happy with the product and think this is a nice addition to my kitchen. I believe I'll be using these for many years to come and may even try out other Victorinox knives in the future.

You know the expression "You don't know what you're missing"? Well, I think that's an appropriate feeling about my Victorinox 8" Chef's knife, which is part of this 3-piece set, including a 8" 'slicer' and a 4 3/4" utility knife. On the positive side, the 8-incher is the perfect shape for a chef's knife and comes relatively sharp right out of the box with a killer "Fibrox" handle. No way, your hands will slip with this baby!

BUT, here's what I mean about my opening reference: For a chef's knife, I really miss the lack of weight. If you've ever owned a high-quality, German-steel chef's knife, you'll immediately notice that the Victorinox is a lightweight. For those of you who might tire easily, when having to dice those six onions for your gourmet dinner, the light weight is good. If you ever want to dissect a hard butternut squash, I think having a knife with some weight really helps. Again, if you've never owned or used one of these, you won't know what you're missing.

The 4 3/4 inch utility knife is very sharp, and makes for a great paring knife. In this regard, the light weight of this knife might be a plus. Easy to wield when coring an apple, I like it a lot.

Sorry, but I just don't know what to do with the 8" 'slicer'. It's not a bread slicer, as the edge is straight. It's not a meat slicer because it doesn't have the indented sides and thinness of a real meat slicer. I wouldn't use it for dicing anything, as it doesn't have the height of a chef's knife. I think Victorinox just threw this one in to make you feel better about buying the set!

I think in general, Victorinox kitchen knives just can't be beat for the money! But if I was just starting out, and had a limited budget, here are the Victorinox knives I'd buy:

1. The 8" chef's knife. Even with it's light weight, it's a no-brainer for those on a budget.

2. The 4 3/4" utility knife. Might be a little long for a paring knife, but it definitely does the trick.

3. The 6" boning knife. This isn't part of the set, but this is one killer knife! If you ever plan on butchering a chicken, trimming fat off meat, or working with delicate fish fillets, this baby is the ticket!!

4. A honing steel, some kind of block for storage and a sharpener (NOT electric).

I recommend you forget about buying those 10-piece knife sets, as you'll find that at least half of them will look like new after a couple years. Why??? Because you'll never use them!

I'm not a professional chef, but I do cook a bit. If I only had the four items listed above, it would satisfy 98% of my cooking needs. I'd really like to give 3.5 stars but can't. So I'll raise it a half for the overall good quality.

Customer review from the Amazon Vine Program You're trying to chop something large and hard--an onion, a potato, in my case it was a turnip--and your knife gets stuck. Like an axe in a tree, you can't finish chopping and you can't even pull it out! What I remember is that I had bruises in my palms for days after that turnip chopping incident. That's when you know that you need newer knives, better knives.

Now, I would not describe these Victorinox knives as top of the line products, but they are head and shoulders above what I've been using. I'm a serious cook, but live on a budget. Fine knives are not in that budget. This three-piece set that includes an 8-inch chef's knife for chopping, an 8-inch slicer for cutting and slicing, and a 4-inch utility knife for paring and other smaller jobs is an excellent and surprisingly affordable option.

The blades are sharp and so far seem to be keeping their edge well. The knives are thin and light-weight, which Victorinox considers a selling point. I'm not so sure about that. If anything, they feel a bit TOO light for my liking. The Fibrox handles are comfortable and easy to grip, but they have a sort of cheap, plasticy feeling that I don't particularly like. But other than that, no complaints.

These knives have a lot of bang for the buck. They're a good option for a home chef on a budget.

I bought one of these bread knives in May, 2008, from Amazon, for twelve ninety nine. For that price, it is a great bread knife. I bake my own bread, and the knife gets a lot of use. It was extremely sharp when I first got it and it remains extremely sharp to this day. (I sliced a finger pretty bad with it shortly after I first got it because I wasn't as careful as I should've been when slicing a loaf of bread, and that was partly because I didn't realize just how sharp almost razor sharp the knife was. Since then I always take extra care when handling and using it.) I must wonder why, today (June 20, 2010), it is selling for twenty three bucks on Amazon. Today, following a link from the Chicago Cutlery website that leads to the World Kitchen website, I see that this exact knife is listed with a selling price of fourteen ninety nine.

I love it and expect it should last a lifetime (I consider the polymer handle a plus in terms of both longevity and hygiene), I would recommend it to anyone looking for a good quality super sharp bread knife for non-commercial use, but Amazon's current price is way too high. Caveat emptor.

Owned and lightly used the knife for 2.5 years, the blade broke. Used it about 3 times a year, so not great. Our previous knife was about 40 years old when the blade chipped (the Deglon snapped 1/4" from handle).

I had great success with this shucker with all oysters except gulf monsters, for which this little guy does not produce enough heft/leverage. Handle design is brilliant, and blade behaves much like a boston style design. For the big guys and troublesome oyster clusters that no knife can conquer, I recommend a King Kooker oyster opener machine (with simple do it yourself mods detailed in Amazon reviews), which will dispose of any oyster cluster or giant bivalve you throw at it.

In most cases a set of knives you get for this price in a set are usually "one time use products"

The GOOD

This kit has the perfect blend of quality and selection you could want.

Handles quality with a solid ring to keep out unwanted food.

Blades have a great out of the box edge.

Scissors, contoured cut a chicken into a quarter with no effort at all.

Great Case

I have not used the filet knife yet but think it will be good also.

The BAD

Cutting board is nice but if you cut any meat or fish on it you really cant just throw it back in the sleeve.

Oceanstar KS1187 Traditional Knife Set with Block, Natural, 15-PieceThe knives themselves are very sharp and I am pleased with their quality.

One of the holes designed for the larger knives had not been chiseled out well enough in the wood block so the knife did not fit. However I called the number on the warranty information and they gave me an email address to send a picture of the problem. Within 30 minutes of sending the picture they responded and had another block in the mail within about 4 hours.

I highly recommend this product and think the price is very reasonable.

I Look all over amazon for a good knife set for my new kitchen. i had recently moved out so money was a little non existent. It was the only knife set that had no negetive pics or reviews. I actual enjoy cooking now because of this set. try are so much fun to use.

Very good knives,sharp and at an affordable price. Block that they are stored in is very good also, keeps kitchen looking nice. We have mistakenly ran them through the dishwasher a couple of times and they looked just as good. We haven't had them very long, so will write update in 6 months.

The knives arrived sharp and ready to use. The block is sturdier than I though it would be for the price of the set, which was a pleasant surprise. They have a nice feel to them when you're chopping away. We've used them several times daily for over a month now and they keep their edge better than some of the expensive sets we've purchased in the past. I haven't had any rust spots appear either, but we always wash and dry our knives by hand immediately after use to prevent that from happening. We also only use solid wood cutting boards, which seem to be easier on the knives than the plastic or glass ones. Overall, it is a great set for a good price.

Two minor complaints:

1) Made in China (I prefer to buy U.S. built products whenever possible)

2) center hole for apple core is a little small. Even if perfectly centered on apple, I occasionally have to dig out pieces of apple seed from the apple segments.

I've tried many of these slicers and the plastic ones will usually break st the handles after some use. This one is made from cast iron and is solid all the way you can feel the difference just by picking it and it has a protective blade cover. I've been very pleased.

This apple corer is very well made; maybe a little too well made. The blades are very thick and not as sharp as I would have expected. When coring an apple you need to push down very hard and fast. It definitely slices and cores, but it spits apple juice all over the counter and into my face.

I can't complain about the quality or the function, but it is a little messy.

Cuisinox Stainless Steel Water Pitcher in Satin Finish - 2.1 QuartI got this pitcher because I often use one to serve beverages for dinners with company. My sons in law both commented that it poured a nice stream that didn't come back and wash down the side. It does seem to make a nice, even stream which does not dribble. I especially like that the pitcher is metal and therefore cannot break. The metal also has a buffed finish that does not show finger prints. I use it for juices in the morning, water, iced tea with dinner...you name it! Great pitcher!

Glass breaks, but metal rusts. Due to the thinness of the metal in this pitcher and the spot welding I can see this pitcher rusting sooner rather than later which is disappointing. Maybe it won't. The handle is hollow, not solid.

Other than that, the pitcher has good balance when filled: it won't topple over and it is easy to pour. The ice guard is handy if you want one but the pouring hole is smaller than I would like so you can't quite pour drinks quickly like a battle-tested trucker diner waitress but more leisurely like a country-club gentleman in waiting.

Metal pitchers are great for cooling down hot drinks...you dip them in cold water and the conduction rapidly cools off the liquid and you don't have to worry about shattered glass in your mint-julip. I wish it wasn't so expensive, I would give it 5 stars even with the thin metal.

This pitcher was kept in a cool and dry Connecticut home.What's more, it was never even used! My wife had it in a cupboard and was planning on using this for an upcoming family gathering.

This product only has a 14 day return policy and it's obviously because it's a lousy product and the seller knows it. I paid 37 dollars for this thing and it's not even worth what I could get for 10 dollars at the grocery store.

The pitcher is not the quality I was expecting. I needed a handsome stainless pitcher to use for BBQs on the patio as well as serving at the dining room table. By looking at the photo, it appeared to have all the qualities I was wanting. However upon opening the box, the pitcher is light weight and more troubling, the ice guard is nearly flat and with the small hole for the liquid to pour from, it is a normal reflex to tip the pitcher more which allows the liquid to pour over the ice guard (not good). In addition to the ice guard being nearly flat, unlike the photo shows, the guard is attached to the pitcher a little off center and the weld is not complete around the guard to the edge of the pitcher. Very disappointing, but I needed to use it so did not have enough time to return it and look for another. Disappointing, at best.
