I bought this because I knew Henckels wouldn't be junk and that it was stainless. It is truly solid stainless design and dishwasher safe. It isn't perfect, hense the 4 stars. spoon part of the scoop is surprisingly thin (it is still very strong). The result is that scoop freezes almost instantly in ice cream. When the scoop freezes, the ice cream freezes in the scoop so it is hard to make a nice round ball of ice cream. You may have to get another spoon to pry the ice cream out or continually warm the scoop in hot water as you serve.It gets high marks for durability and rigid strength to pry out ice cream but it suffers when trying to serve nicely formed balls.Oh jeeze...I should NOT have bought this ice cream scoop!
It looks GREAT, hanging with my other stainless steel utensils...Henkles, Rosle, Wusthoff. It looks so good in fact, that I never want to touch it. It's a little piece of art, dangling on my utensil rail happy as can be.
...unless I've been drinking... Then it calls to me. It asks me quietly (at first) to come take it off it's hanger and run it under a little warm water. It tells me to walk over to the freezer and get out a pint of Häagen-Dazs...The vanilla with the dark-chocolate covered almonds. It tells me that I'll only need a little bit, and that I will feel SOOooo much better after I eat it. The scoop tells me that I can stop after a 2 or three bites. Seduces me into believing that it will help me resist over-indulgence.
The bastard scoop lies. It tells me all these things because I swear it works in concert with the ice cream. Maybe freakin' Häagen-Dazs even bought these scoops from Hell's own William's Sonoma in order to distribute the innocent looking little scoops to unsuspecting customers like me.

Do not buy this knife at full price. If this retailed for $54 on Amazon the price was inflated. The knife is thinner and quite lightweight compared to the other Wusthof knives I own, without the flared bolster that is usually between the blade and the tang on a Wusthof knife which gives the blade its weight and heft. The tang is a full tang from end to end, but not top to bottom in the handle. The Gourmet line looks as if as if it were stamped out of a sheet of metal and sharpened. I was at an upscale kitchen store today and they had this style of knife from a higher-end Wusthof line full price for only $44.95, with a flared bolster and full tang. Although those knives are pretty sharp and functional, they became rusty within a few days of use! When they claim it's dishwasher safe, well, you think it's true, but that's not the case!I guess a rule of thumb for knives is to never put them in a dishwasher, rather just hand wash them and dry so they can last as they should.Within a year of purchasing these knives, most are either wobbling in their sheath or have come apart. Lifetime "guarantee" for $3 plus postage to send it in for replacement. In my estimation, not worth the money at all.I have purchased Ginsu knives before and have always been happy with my choice.....and this time adds one more satisfactory purchase.

Before I bought, I read a lot of Amazon reviews on the 10.25 inch Victorinox 47547. I have an old, 8" Chicago Cutlery bread knife that is kinda dull. I wanted a new bread knife, and I thought I wanted a longer blade. Two things in those otherwise great reviews caught my attention: the blade "was not too rigid," and it "was sharpened on only one side." (The reviewers said the knife being sharpened on only one side would cause the blade to drift offline during a cut--and I thought I was a perfectionist!). This "offline" complaint drove me to seriously consider the Wustoff (the $126 model--so I wouldn't have to put up with those aggravating offline cuts). But before I spent that much money, I went to see one at a local store. Lo and behold, the Wustoff blade--the $126 one--is sharpened on only one side! (My guess is, all wavy-edge, serrated knife blades are sharpened this way... so much for perfect cuts.) Once I found out about one-sided sharpening on all the blades I was considering, the $26 Victorinox models were looking very good. Because I've noticed that my knuckles get in the way when I slice, I ended up getting the Victorinox 9-Inch Wavy Edge Bread Knife, with the offset handle. Its blade is plenty thick and stiff, and very sharp. I now enjoy slicing bread without having to manipulate a straight knife because of my knuckles. And, at this price, I can afford to buy a new knife every time one gets dull. PS: My freehand, thin bread slices are an even thickness from top-to-bottom and side-to-side.Six Months Later: for the first time I used the knife on something other than bread, a raw potato. Lo and behold, the blade does drift offline as you cut, it pushes away from the sharpened side. Can't imagine where this is a big deal (I didn't really notice it slicing bread), and it seems to be able to be controlled if you try.It's the best I've ever owned. The Z shape helps keeping your knucles off of the cutting board and the blade can handle any job with maestry!

I bought these knives back in October and they started rusting almost immediately. If you allow them to soak before washing or let them air dry, they will most definitely rust. You must wash and dry these knives immediately after using to minimize rust.Although I'm disappointed that my knives are already rusting, I'm not too upset or surprised since I didn't spend a lot for them. If you're looking for a cheap knife set they're not bad, but if you expect to have nice knives for years, this is not what you're looking for.
For the price, they're really not bad, but unless you're broke, spend a little more and get something that will last.

Wusthof Classic 8-Inch Wide Cook's Knife
I prefer the eight-inch knife over a ten for weight reasons and the wide series gives lots of knuckle-slide area for repeated chopping tasks. I've owned Wusthof-Trident knives since before graduating from culinary school over ten years ago. In fact, I still own all but one that I still use daily (One was stolen). The knives hold an edge better than any other I've used (and I've tried 98% of what's out there), stand up to continuous use and are comfortable enough to use all day long. You'll never be sorry owning Wusthof-Trident knives.I have a good collection of high-end knives dating from 10-15 years ago, and in my opinion, this is one of the best 8" cook's knives on the market. I prefer the extra width and heft of the 4584/20's wider blade over the narrower and lighter 4582/20 model. This knife has good heft and the handle is very comfortable and I prefer this handle over the Grand Prix's Also, because of the extra width of this knife, the edge is very thin, and that makes the blade feel very sharp when cutting vegetables.There are knives on the market today with fancier steels, such as VG-10 on the Kershaws and "Trizor 10X" on the Chef's Choice. I have not tried these other fancy knives, and I am even comfortable in believing their claims that these new steel formulations will hold an edge much better. The fancy steels have a Rockwell-C hardness of 59-60, compared to the Wusthof's 56, but when it comes to balance, feel, and just plain old cutting performance, I doubt the Kershaws and the Chef's Choice knives can beat this Wusthof wide blade 4584/20.
As for this knife's edge-holding ability, I do pamper my knives and I don't dump them in the sink or dishwasher. I am careful with using knives on only wooden cutting boards. As such, my knives stay very sharp for a long time. A few seconds of touching up on the steel once every couple of weeks is all that's required to keep it ultra razor sharp.
Maybe the VG-10 and Trizor 10x steel knives don't need to be touched up once every couple of weeks to stay sharp? Somehow, I doubt that.

This knife is the real deal. I purchased mine at a knife store. It was recommended very highly by the shopkeeper who was an avid knife enthusiast and cook. He told me it was his favorite and as soon as I held it, it quickly became mine. I previously own Henckels 5-star which are also very nice, but his knife surpasses the Henckels in quality, weight, and balance. The extra wide blade is the kicker, it really allows for some some serious slicing and rocking of the blade without busting my knuckles. The downside to this however, is that it won't fit in my knife block, as others have mentioned.Talk about sharp... Sure, every quality knife is very sharp when they are brand new, but this thing?! I was playing around slicing an orange so thin you could see right through each slice. I mean, this thing was cutting the atoms in half! Also, I really like the angle of the edge. At the top, it is thick and manly, and then it tapers down to a razor edge, seriously. Handle is comfortable for me. I am a big guy. I must say, this knife might be a little too big for a very small person, it really depends on your preference. This knife will definitely be in my collection forever.

A year and a half later and it's still a dream to use. Still sharp, everyday use. It's the only knife I use. I cook every meal with fresh veggies and fruit and it just keeps going. Incredibly sharp, incredibly balanced, incredibly smooth surface feel, incredibly weighted, incredibly smooth rocking action/blade taper. Fits my hand so well around the smooth bolster. The extra width is so much nicer for keeping the fingers out of the way. The heft makes the job that much easier. Smooth as silk rocking motion. Yes, the cutting board required clean-up after use. I'm replacing my wife. This is so much nicer than the Henckel's chef's knife I've used in the past. I do hope and expect it to hold an edge as long as the Henckels. In all other respects of the handle and bolter feel and rocking motion, this thing leaves the Henckels kicking its can down the block. Not even close. The bolster and spine are smoother and shaped for a better grip angle. The handle shorter in transition with the perfect taper for a comfortable grip. It leads you into a proper pinch grip whereas the Henckels pulls you back onto the handle and makes the pinch awkward, unsafe, and even painful along the spine. The Wide version here is the proper depth that all chef's knives should be, about 1/2" taller than my previous chef's knife. Cut a carrot so thin you can see the logo, over and over again. So glad I spent the money, and the extra on the wide. You won't be able to pry this thing out of my hand. So stoked with an awesome new Boos board, a new Wusthof GP paring knife, and this Chef's knife. Wish I would have done it sooner. I would have been eating healthier more often and enjoying the process.

This is the best peeler I have ever used for peeling yams and potatoes. I struggled to peel tough Garnet Yams using a paring knife or other peelers I tried. It took a lot of force which increased the risk of slipping and cutting myself. With a sharp serrated blade this peeler just glides through yams and removes a thin shaving. All you need is a light touch and very little effort. Since it's all stainless it's easy to keep clean and rust free. The Chinese vegetable cleaver is my favorite knife. It is very easy to sharpen, very easy to rapidly slice or chop vegetables, and very easy to slide the knife under the cut vegetables and carry them to the cooking pot. I consider the Chinese cleaver to be much more convenient than the typical Japanese vegetable knife because if has a much larger blade, which makes it so much easier to use. Even though the blade is large, the knife is not heavy. Sharpen it often and keep a film of olive oil on it. It will last and you will love it. (This is NOT a meat cleaver. I broke my first Chinese vegetable cleaver by using it to cut frozen chicken.)Lighter than the 8" chef's knife I usually use, but very sharp. Overall, I am pleased with this knife. It was the only major knife type I still did not have, and I like it very much for chopping carrots, celery, and other "short" vegetables (NOT including potatoes). I get a really bad callous on the side of my index finger when I use it for too long, but I really like the heft and balance, and the fact that you can scoop up your veggies all at once to put them in the pot or wherever. Ordered this and it arrived cracked. The problem with cracked slate is that even if you super glue it, it flakes off. So you will have slate flakes on your cheese! In addition, the "soap chalk" arrived completely crushed and unusable. It is packaged very poorly, which is probably why it arrived broken. In essence, this is what you get: a thin layer of easily-breakable slate (about the thickness of a CD jewel case) with felt glued to the bottom. No cleaning or care instructions are included or printed on the box!!! So, even if this arrived without cracks, we still wouldn't know how to properly use and clean it. You could probably go to a quarry and make this yourself for free. Crappy product, rip-off. You get what you pay for.The packaging seemed protective but the slate was broken off on one corner when received. Did not re-order but will shop around. It barely holds 2 different kinds of cheese, and if you want to use the chalk to write the name of the cheese you have to really be sure that the cheese doesn't touch the writing or it comes right off. I just did a review on the 8 in. version of this knife, and thought I would do one on this one as well.All I can say is WOW! I am a sushi chef that has used many knives, and the Kasumi line of knives is a very strong line of knives. (No pun intended)
I first bought the 8 in knife, looking for a new roll cutting knife (which it's the best decision I've made in knife buying), which led me to look and then purchase this one.
Personally, the combo of the 8 in. and this 10 in. is the best duo I've used standing behind the bar. This knife was exactly what I was looking for.
The 8 in. for rolls, and this one for just about everything else (not prepping but in the heat of things).
It's well balanced, feels good in my hand, beautiful, and retains a great edge (60 Rockwell Hardness rating).

Wusthof Grand Prix II 4-1/2-Inch Utility Knife
The Wuesthof Grand Prix II Utility Knife is for sure the most used knife in our kitchen. We have it now since over 6 years and I expect it to work for the next 20 or so more years. I use it for almost everything and it has the nick-name the mango knife. It works really well on all larger fruits and vegetables, meat and even on some fish. The utility knife is well balanced and very comfortable to hold even for longer working times. It kept its sharp edge for a very long time, but as with all forged knives they should be sharpened regularly.It is easy to sharpen again; I use the Wuesthof steel or my WMF sharpener (I love that one!) or my Wuesthof ceramic sharpener (I had to find out my favorite sharpener by trying them all).
I am hand-washing my forged knives right after use and I keep them well and dry stored in a wooden knife block. Forged knives should not be washed in a dish washer. The knives are expensive, but I do want to enjoy my daily work in the kitchen and I do not like messing around with dangerous blunt and cheap knives. For me every knife that is longer than a peeling knife should be a forged knife, with the only exception of a bread knife. My bread knife is over 30 years old and works like on its first day.
If a not used Wuesthof knife arrives dull I would send it back, it should have been easy to exchange the knife for a sharp one.My son is a chef. When he cooks at my house, he brings his own knives because he doesn't like mine. He recommended that I upgrade a few of my knives to WUSTHOF Grand Prix. I'm so glad I did. Cutting and chopping is a breeze with these knives. They are very sharp.
