Calphalon Katana Cutlery 3-1/2-Inch VG Paring KnifeThis is a very nice mid-level damascus paring knife. Is very sharp and holds an edge nicely.

The handle has a very unique feel and does sit different than other knife's that I have owned, but that is not a bad thing. The tang runs at right angle to the handle as opposed to parallel, which is normal. It is well worth the price and for those who would like to upgrade their kitchen this is a good step.

originally received this as part of the large set, but someone used it to try to slice a 1/2-day-old bagel and it slipped onto the granite countertop, totally bending a good portion of the tip, which is surprising given the umpteenth layering process for "hardness". nonetheless, i'm very happy with this knife.

I think this knife is ok. I feel for a little more money i would have been a lot more happy. But i went in fully knowing what i was getting into. The construction of the knife feels hallow and lacks personality that you would expect from Damascus steel. I don't quite have buyers remorse but I do think a little more quality could be added. The only thing saving this product from a one star review is the price.

Chef's Choice Electric 3-stage Knife SharpenerThis sharpener works great. Just don't go crazy with the first stone because it will grind your knife down. But that was really good when I had to reshape a knife that had a chipped blade, I ground it down till the chip was gone and then moved on to the other two grinding wheels. I would recommend this product for anyone who likes sharp knives but does not have the time to do it by hand on traditional grindstones.

It take less than a minute to sharpen my knives, and the are sharper than the factory blade. It is impossible to mess them up because the sharpener does all of the work, all you to is pull. You just want to make sure that you hone your knives so that you blade is straight, or you will mess your knife up, But you have to do that will every knife sharpener.

This device has ruined a lot of knives; several of mine, victims of my own stupidity. Frankly, you're better off sharpening your fine cutlery on the curb of the street in front of your house. Anyone who endorses this trash knows nothing about putting an edge on a good knife. The instructions are confusing, the damage done to my Forcheners and Wusthoffs is incalculable. I ended up buying a Lansky kit...a great way to reset the edges on the cutlery that the Chef's Choice system had ruined.

This "knife sharpener" does not sharpen knives. After reading and following the instructions, I tried it on several knives. It leaves the knives much less sharp than they were before being "sharpened". The product is completely unacceptable. It creates a "burr" on the edge, which then folds over immediately the first time it touches anything. The product description is plainly false.

I owned an old Chef's Choice sharpener, a model 110. That unit wore out after ten or so years of infrequent use. This unit was to replace that one. I will instead just keep a pair of Crock Sticks that I have had since I was a Boy Scout, and an old-fashioned grinding wheel.

Unique and artsy serving set with reasonable quality. I ordered 2 sets as gifts. Do not get these gift wrapped; one set arrived with the fork and two of the serving pieces, but no knife. I wouldn't have known if i had had them gift wrapped. Plus they will present better if I wrap them in a nicer box and not in platic bags (great for shipping, but not for presenting). The handles are beautiful but the stainless areas had some pitting and other minor flaws. I did chose to have the set that was sent incomplete replaced though because overall I haven't found any set as interesting for the price.

Shun Steel 9-Inch Slicing Knife

Shun Steel 9-Inch Slicing KnifeIf you are shopping for a Shun, I assume you are already familiar with their reputation for razor-sharp edges, so I will address this knife itself.

This slicing knife is a great addition to your set. I recently used it to carve up some beef roasts and I was able to carve paper-thin slices. I didn't experience too much sticking either, this may be due to the Damascus-style pattern that creates micro air-pockets. Therefore, I think this version without the scallops will do just fine.

The knife has a good length that's great for most roasts, a tip that makes it easy to maneuver and a sturdy construction that feels balanced and comfortable. The handle is sturdy and has a slight matte finish that keeps it from being too slippery.

On another note, I have seen this knife advertised on Amazon for about $60 (which is the price I bought it for). It was first listed at $110, then went down to $60, and now as of writing this review it is back up to $110. I am not sure if it's a supplier issue, but you should constantly monitor the prices of the Shuns sold on Amazon due to these fluctuations. In any event, I still think this knife is worth $110 and I believe you will like this knife as much as I have.

Perhaps not as good looking as the paka wood classic version, this knife is nevertheless a superb slicer -just what you'd expect from the first rate Shun knife manufacturers.

I bought this knife for slicing meat into thin slices. Turns out, it works great for sashimi as well. This knife is sharp and cuts through raw or cooked meat effortlessly. It was the best $62 I ever spent. If you are cutting meat with bones in it, get the boning knife. This knife is great for boneless meat and raw fish.

Two minor complaints:

1) Made in China (I prefer to buy U.S. built products whenever possible)

2) center hole for apple core is a little small. Even if perfectly centered on apple, I occasionally have to dig out pieces of apple seed from the apple segments.

I've tried many of these slicers and the plastic ones will usually break st the handles after some use. This one is made from cast iron and is solid all the way you can feel the difference just by picking it and it has a protective blade cover. I've been very pleased.

This apple corer is very well made; maybe a little too well made. The blades are very thick and not as sharp as I would have expected. When coring an apple you need to push down very hard and fast. It definitely slices and cores, but it spits apple juice all over the counter and into my face.

I can't complain about the quality or the function, but it is a little messy.

I chose to buy the Amco because it was made completely from metal and not plastic. It requires some force to use, but it slices well. If the apple is not uniform, you may have to trim some seeds. Overall, I am happy with the purchase because my kids want to eat more apples now that we have this corer.

The knives:

Steak knives: these are the main purpose we bought this for. They are good, cut through steaks like they ought to. The grip feels nice and the edge has held for the first few months.

The cook knives: these are not as good as another brand bought at a local warehouse club. The balance feels off. If some highly skilled person takes offense, it may be that I am used to a brand bought at a local warehouse club and those are wrong...but these feel like the weight comes back too much to the handle.

The edges are good. The handles feel solid but not comfortable. Consistent use across the past few months has dulled them somewhat, but they have sharpened easily.

I bought this knife as a primary cutting/chopping/carving knife and I've been VERY pleased with it. It is forged to a very fine edge with a very slight taper out to the wider back edge. Jaccard Ceramic 3-Inch Paring KnifeI bought this knife just because i wanted something other than metal to cut my garlic, but now I use it for pretty much everything. I mean I dont know anything about knives but I know this is now my favorite knife I own. It cuts every kind of food perfectly and smoothly, and I noticed especially it makes meat a lot easier to cut. ONly downside is that it has the potential to break easily, seeing as the tip of mine is already chipped a bit after a few weeks, so you have to be careful with it and keep in the case, also since it is so sharp. But that aside I wish I could afford to have a drawer full of these knives.

It is my favorite knife...it slices items as thickly or thinly as you like....it doesn't rust....if used correctly it will last a long time...don't try prying a jar lid open....I know better but in a hurry I tried doing that with my previous Jaccard and totally ruined it....make sure to follow advice on suggestions of how to care for this product....hence, no lid prying!

The handle failed on this knife today, after about 8 months' use. I used it several times a week for that 8 months, usually for chopping vegetables. The knife has never seen the inside of a dishwasher, so it's not a heat or soap related failure... the plastic material just parted, along the edge of the handle, in the part parallel to the tang.

I was slightly disappointed by how fast the knife lost its factory edge. It remained sharp enough to chop celery, tomatoes, potatoes, carrots, but it wasn't really sharp enough to easily slice meat anymore. Had the handle not failed, I would have given it a 3-star or 4-star review.

I wish I could post a photo of the failed handle... but if you extend the backbone line of the knife down onto the handle, imagine a rectangle about 1.5" long and 0.25" wide breaking off... the knife blade coming out of the handle... That's where it failed.

I guess the lesson is to buy the famous brand name? Not be beguiled by a lower quality option?

I'll try to track down the manufacturer and see if they'll replace it. But not holding my breath.

I bought two of these, based on the fact that I have one from 2001 that I really like. I used mine all the time until I tried to split a squash with it and snapped the blade off....not smart. Before I found this replacement online, I settled for the colorful thinner ones being sold in stores now but could not use them. They were so flimsy they almost felt like those cheap pumpkin decorating cutters you get for Halloween. This is the best which is why it is called the "classic".

It looks like my current parer, but doesn't cut properly at all. I tried cutting an apple, but the blade won't cut straight. It cuts at an angle and no matter what I try, won't cut straight down. This may be a new knife, but isn't at all what I wanted.

J.A. Henckels Twin Pro S 8-Inch Chef's Knife with Hollow EdgeThis knife is a true work horse. All block sets include the 8" Chef, but not the hollow edge version. To me, and I have professional culinary training, this is a more versatile knife with the hollow edge. Professional quality knife that is balanced and designed to fit your hand if hold it correctly and when you use it properly. And to those that say the knife is not sharp, learn how to sharpen it correctly as these knives periodically require that and you should not expect the best edge on anything that comes from a factory. However, mine did have a pretty sharp edge on it.

I got this knife last christmas and am very happy with the quality and durability of the edge. The hollw ground fullers dont work as well as I had hoped for making sliced things fall away from the blade, but they don't hurt.

I only use the steel rod on occasion, to return the edge to true.

Personally, I never machine wash my knives and I store them in a knife block.

Now this length was a perfect fit for my hands, meaning that the blade wasn't too heavy towrds the end of the blade; I'm about an average sized person. The blade was well balanced but the hollow indents are right next to the edge so putting a tighter edge to the blade will affect the depth of the spaces. The blade feels solid and stays sharp for a while. Enjoy everbody

Maybe my expectations were too high since this probably isn't a super-duper top-of-the-line quality knife, but it was still a substantial investment for me and I'm not exactly wowed. The knife did not arrive very sharp, and while I have been able to get a decent edge on it with my whetting steel, it doesn't hold its edge much better than the cheapo department store brand knife I had before. Unless I whet the blade before every use I still get some resistance from vegetables with skins (such as tomatoes and peppers), and cutting raw meat off the bone or the skin off a fish is still frustrating (I know this isn't exactly the right knife for it, and my still-rudimentary skills don't help matters, but it still seems like the blade should slide through the meat more easily than it does).

This knife gets the job done but I'm not convinced it's truly worth the price.

I'm just a amateur cook that does some cooking at home. Since mum has always told me to eat my veggies, I have been heeding her words since I've gotten older. I've noticed that chopped veggies taste way better than whole ones, so a trusty knife is important. I chopped the common stuff that we all know and loved: onions, carrots, celery, cucumbers, shallots, etc etc. This Henckel Pro "S" 8-in chef knife with hollow edge is adequate for the job. Angle of the cutting blade is about 40degrees. Steel quality is good and heavy, but not the best from what I've heard (Global steel and Shun steel are noticeably harder).

A couple of things that I'm not impressed by:

1) Hollow-edge scallops don't really seemed to help when cutting onions; I still get onion slices stuck on the side.

2) I bring my knives to sharpen at a shop, the owner said that the hollow-edge scallops are too low on the blade (see picture). Eventually, after enough sharpening, the cutting edge will eventually hit the hollow-edge, thus rendering this knife entirely useless. This will lower the knife's longevity. Not a big deal for those who doesn't sharpen, but I've seen Global knives with higher hollow-edges location.

3) Edge retention is better than most sub-$40 chef knives, but I don't think it's as good as knives in the same price range ($80-$120). After about 2 months of chopping and cutting veggies, and honing regularly, I'm losing the edge. It can't cut thin slices of roast beef like before. From an overall value position, I think this knife is slightly over-priced for it's edge-holding ability, which means more money to sharpen. Professional sharpening costs me $15/knife.

4) IMHO, if you spend a little more up front, you can get a Global or Shun 8-inch with better steel.

MAC 4 piece Knife Set #GSP41My father-in-law gave us this exact set of knives 35 years ago because he said we needed good knives, and MAC was the best he had ever used..........He was a butcher with his own shop in N.J. For 45 years. I use the knives daily, and they are indeed exceptional. I am now purchasing a set for my son. He can't have mine!

If you don't like to have to frequently sharpen your knives, then try out a Mac knife. They stay sharp for a really long time and cut like laser beams through food. They feel great in the hand, and they're nice and light. The only disadvantage (and this is a minor one) is that they're not dishwasher safe (but neither are most quality knives in this category).

I started my quest for a quality kitchen knife about 3 years ago after I noticed that my Henckels Professional S knives were getting dull pretty frequently. My first Henckels was a Pro S 7 inch santoku that I was so pleased with at first that I decided to get a matching Pro S 5 inch santoku, a paring knife, and a very expensive 10 inch chef's knife. And then they started getting dull. My first reaction was to get some whetstones and do some sharpening. I tried a few Japanese stones first and then moved on to some USA made diamond ones before finally settling happily with a Spyderco sharpening system. Long story short, I discovered that sharpening is a chore I'd rather not have to do at all, muchness frequently, so I decided to check into some other brands that I would not have to sharpen as much as my Henckels. Believe me, Henckels Pro S series get dull constantly. It's incredibly frustrating how often you have to find yourself sharpening them. And this was after I spent countless hours researching and finding out everything I needed to know about using whetstones effectively. If you sharpen a Pro S, if you're lucky, you might be able to get through 3 meal preps before noticing that it's not as sharp as it used to be. And yes, I did wash them immediately after every use and store them properly, that that isn't the issue. They are just simply junk knives at a premium price.

As a result, I did a lot of research before deciding to buy a Cutco and a Mac. I know there's a lot of Cutco haters out there who consider Cutco to be like the Bose of the knife world (overpriced for a mediocre product). I heard all the stuff about how they use inferior grade steel and this and that, but I decided to try them because they had a lifetime guarantee, free professional lifetime sharpening, and they were dishwasher safe. I decided to get a Mac because I found a few reviewers online by some people who worked in restaurant kitchens.

I have been happy with the Cutco, but I've been even happier with the Mac knives I've bought. The Cutco vegetable knife has stayed nice and sharp for a year and a half now without any trouble. I love that I can just throw it in the dishwasher which is great when you're entertaining company and don't want to be bothered with washing your knives off by hand right after using them. But two things keep me from grabbing the Cutco most of the time when I'm cooking: it's heavy and the steel blade is a somewhat fat so it does not glide as effortlessly through food as I'd prefer even though it has maintained such a sharp edge. From my experience, Cutco makes a pretty decent knife that they stand behind with a great warranty, so I would not consider them the Bose of kitchen knives; if anything Henckels, with their overpriced, overhyped, and overexposed product, is the Bose of kitchen knives.

I digress. The Mac succeeds where the Cutco left off. Weary of wasting money, I decided to be conservative with trying out a Mac knife for the first time, so I went on google shopping and found Sonoma Cutlery, a retailer that sold single Mac knives at a very reasonable price--much less than a Henckels Pro S or Cutco, and I bought a single Mac Original 4 inch paring knife. The steel is nice and thin, so it's not only light, but also glides effortlessly through food (you'll see what I'm talking about if you try one out and compare it to a thicker steel blade when cutting something like a large onion). I fell in love with it, and decided after a year of use without needing to be sharpened to get a second Mac, so I got an Original series 6.5 inch chef's knife. It's my absolute favorite knife in my block. Mac does not get the exposure it deserves, and it seems that only a few people who are "in the know" (e.g. Gordon Ramsay) have discovered how great Macs are. It really is a shame that big retailers like Bed Bath and Beyond and places like that tend to push hyped, shoddy, overpriced German brands like Henckels when they could instead be selling better quality knives like Mac. I have since sold my used Henckels, and I'm keeping my Cutco and of course these awesome Mac knives. I'm sure that there are several other quality brands out there who make knives that are very good too, but my great experience with these very reasonably priced Macs has made me a loyalist, and my quest for the kitchen knife I've always wanted is finally over. If you've found yourself on a similar quest, save yourself a lot of time and grief and just buy yourself a single Original series Mac chef's knife. You'll be glad you did.

I just purchased as a wedding present the same 4 knife set that we bought shortly after we were married 44 years ago. This is a great set of knives. They are kept sharp by a few swipes along the back of a plate of china. However, I see they now sell a ceramic shapener that I assume will work just as well. If you want to give a wedding gift that people will thank you for many times over the years, I recommend this set of MAC knives. Each knife is simply perfect.

I have a set of these that are at least 30 years old. I use this sharpener on them and it keeps them razor sharp. Fiskars 7861 Axe and Knife Sharpener German steel? Wusthof Asian Edge Knife Sharpener, RedThis sharpener sharpens at 17 degrees, which is perfect for my Wusthof Classic Santoku and Wusthof Ikon knives. It can be used on other Japanese knives as well (though truthfully, you should be using a stone to sharpen your nice Japanese knives).

I guess you could call this the lazy man's sharpener, for those of us who don't have time to learn how to use a whetstone. It's cheaper, and more compact than a Spyderco 304, which I was also looking at (but can only be found on eBay these days, and costs twice as much). But it works well, and creates a sharp knife in just a few swipes.

Now my sharpening is complete. For my regular German knives, I sharpen every 6 months 1 year with the Chef's Choice 120 (sharpens at ~ 25 degrees), and I steel everytime before use at about 22-25 degrees. For my remaining knives, Ikon, Santoku, I just use this Wusthof Asian Edge sharpener (using the fine ceramic) every so often, and the coarse ceramic at most 1x or 2x a year.

I would not use this sharpener on Shuns however, since Shuns may sometimes have a one-sided bevel edge that may be destroyed with this type of sharpener. Consult your knife manufacturer's recommendations for best results.

**EDIT** After having owned this device for nearly 2 years, I can attest that it's just as handy as ever. I use it to sharpen my MAC MTH knife, and it works beautifully for this purpose. My MAC knife chops through watermelon rinds/butternut squash/taro roots like a hot knife through proverbial butter, after just a few sharpenings.

I purchased this santoku sharpener at Amazon and have been very satisfied with it's performance. It maintains the 16 degree angle required on all german-made santoku knives and most other similar asian knives. Routine honing with the finishing stage will maintain the ultra sharp edge of a new blade for a long time.

Have not used the course-stage sharpener because I do not allow the knife to become dull. However, a dull knife usually requires removal of metal to become sharp again, and I don't believe this sharpener removes metal. It is great for its intended purpose though, maintaining the near-new sharpness of a high quality santoku knife, and maintaining the 16 degree angle without scaring the edge when sharpening.

I highly recommend this sharpener it does a better job on my Global, Wushoff and Calphalon knives than any other sharpener. Including Global's recommended Minosharp with the two wet sharpening wheels, which does just an ok job in comparison.

It performs excellently on straight blades you need to curve the knife a little for best effect if the knife's blade is curved near the top.

I think it loses some of its effectiveness after about 6 months of moderate to heavy use, but at this price I think it's well worth getting a new one if you spent on premium kitchen knives.

Also, it is impossible to cosmetically scratch your knives with this sharpener it will touch the blade an nothing else...

Henckels Twin Pro-S 18-Piece Knife Set with BlockI have used my new knives for about a week now and am extremely impressed with how easily they but through whatever I'm trying to cut through, and how perfectly they feel in my hand. Their weight, and extreme sharpness, allow you to exert very little effort in slicing through food. I compared them side-by-side to my other store-bought set of knives, and even after using the sharpening steel on the old set, I just couldn't achieve anywhere near the same degree of razor-sharpness as have the Henckels. Not that it matters to me, but the 8 steak knives are stamped, rather than forged, but they are still extremely sharp none the less. Unfortunately, however, the knives do not comes with any care instructions, nor instructions as to how to use the sharpening steel. It took some Internet research and some practice on my old knives to begin to feel comfortable sharpening these. In any case, you can't go wrong, albeit the price is pretty high for this set of knives.

I take exception to Mr. Michael George's (Scottsdale, AZ.) reveiw of this knife set, Henckels Pro "S" series and forged, bolstered knives in general.

If he has been a professional for 14 years then he should have learned the term "bolster" by now...and he should have been able to sharpen his knives properly without wearing the edge out...he's probably using an electric sharpener or sending them out. The culinary school reference is questionable also...Le Cordon Bleu uses Mundail knives...etc.

This a top of the line set and shouldn't be maligned out of ignorance. If you learn how to use the steel that is provided and a good fine stone then these will last you a lifetime.

The main knives in this set are advertised... from the Pro S line, beautiful and excellent quality.

However, nowhere in the product description does it say that the steak knives are not Pro S knives, but in fact serrated much lower quality knives from the Gourmet line.

I had gone back and forth in my mind between buying Henckels or Wusthof knives, and was incredibly impressed with some non-serrated Wusthof knives the other night at a nice steakhouse. To find out that I had inadvertently bought a set of lower-end serrated knives was a disappointment. I would have willingly paid more for an all Pro S set of knives, so this is unfortunate.

I purchased this set in December of 2011 for Christmas. It clearly states on the Amazon advertisement and on the Henkel website (at least before I contacted them) that this is a 18 piece "PRO S" set. No where did it mention, not even on the packaging that it was a 9 piece "PRO S" set and a 8 piece "Gourmet" Steak knife set! I contacted the manufacture about this and there answer was the following. "if you look at the picture of the knives, you will clearly see that the steak knife was stamped and not a forged piece". I do not know about you, but I did not and think that this set is clearly misrepresented. PLEASE NOTE, YOU ARE ONLY RECEIVING 9 "PRO S" KNIVES IN THIS SET!!!. The manufacture knows of this and still continues to market it as an 18 piece "PRO S" knife set. The interesting thing to note, if you refer to the Henkel website now, they made a change immediately after I contacted them which basically admits fault. Just on principle alone, I would not purhcase another Henkel product as they are clearly using a "Bate and Swith" tactic to sell their knives in some instances. I think the PRO S knives are fantastic but this set is not worth the money, even at the "Discounted" price they sell for. Why would you advertise a set as a "PRO S" WHEN NEARLY HALF OF THE KNIVES IN THE SET ARE NOT REMOTELY CLOSE TO THE QUALITY OF THE "PRO S" SERIES!!! As you can tell I am very upset by the whole issue and will not do business with the HENKEL company again. I used to have lots of respect for the Henckel company as they lead me to believe that they were above this type of tactic to sell a high quality knife but I think it is clear to me that in order to maintain their sales volumes,they have sacrificed on quality and have resorted to misleading customers. I completely respect the opinion of those who disagree and hope that you do the same for me. I just want all to know, this is only a "9 piece PRO S" and not the 18 piece PRO S set they advertise.

Assuming you have also read the other reviews (you should there's good info there) I must concur with Mojostarz. Although I am not a professional chef, I have used this set (completed by the 6" Meat Cleaver and the 7" Carving Flat Fork) for probably over 6 years now, every day. Sharpening knives is a serious hobby of mine. I have sharpened these blades many, many times on my stone in the years I have owned them. They are not bowed, nor are the blades edges at all noticeably shorter than the metal bands at the back. They still cut "all the way thru" just about everything. (So watch out, that means your clumsy fat fingers too.) I can even get the steak knives pretty good on the stone. You just have to ease off right before you feel the serrations on the right side. The steak knives are very difficult to sharpen because they have a kind of undulating shape to the blade, but I can get 'em pretty good if I concentrate.

I'm not going to re-invent the wheel, because a lot of good information has already been said. I will add this:

1) These Professional "S" knives are excellent. If you understand the very fine art of how to restore an edge with a fine grit stone and some oil (my preference) to a blade when the sharpening steel is no longer enough, you will be very happy with the way these Pro "S" series blades respond. I can get mine as good or better than new when sharpened, just wicked sharp. Especially if you have tried to sharpen cheaper knives and wondered why your efforts just don't seem to "take" as well. They are well balanced, the grips have the best ergos ...they're just a pleasure to use. If you don't know anything about sharpening a knife, at least learn how to correctly steel them. There are some excellent videos on YouTube. Maybe the Henckels site includes this in their "Instructional Knife Skills" web video. If you sport this kind of quality in your home, live it.

2) Don't put them in the dishwasher please.

3) The 19 slot wooden Henckels block looks REALLY LOPSIDED and "sad" without the carving fork and cleaver.

4) Don't pass them around with Hors d'Oeuvres or leave them all night on serving tables when you have big parties and everybody gets sloshed. Because when people think they're "helping" they may actually be dumping one of your prized knives into the trash.

Wusthof Gourmet 4-Piece Steak Knife SetI essentially agree with what other reviewers have written (except that Mn is molybdenumMn is manganese, Mo is molybdenum). Are they of the superior craftsmanship of the Wusthof Classic line? No, they are not. But at a fraction of the price of Classic, you already knew they wouldn't be. The plastic handle and thinner steel do feel a bit on the cheap size when holding the knife, but they look great alongside the rest of our Wusthof cutlery (which is why my fiance and I bought them). And don't worry about performance; all meats that I've cut succumb nicely to the straight edge blades. What I can't comment on is the blades' longevity. We've only had them a short while, and I don't know how they'll hold their edge.

My final word on them is that those who can afford the Classic line (and I truly wish I was one of them) should purchase the Classic. But for those who can't, don't be shy about purchasing Gourmet. You'll get what you pay for, and since you're paying for Wusthof, how disappointed can you be?

Just received these knives and they seem to be a fine set of steak knives. However, I noticed that these gourmet series (with the exception of the 8" chef's knife), use different steel than their more expensive classic series. Specifically, the classic series uses "X50CrMn15" material, whereas these gourmet series uses "X46Cr13". The major difference being that X46Cr13 contains less carbon (0.5% vs. 0.46%) and that it does not contain Mn (molybdenum), which is needed for knives to be totally dishwasher safe. ...

Wusthof is a producer of quality knives, but double check your order, especially if you ordered more than one knife at a time. I have read many consumer reviews on the block set where consumers found that only a couple knives from the set were quality while the rest were not. I received a block set (8130) of Wusthof knives for Christmas. After close investigation, I noticed that most of the knives were not what I ordered. While I ordered the Gourmet line, most of the knives received were of much lesser quality. Only three knives were the actual gourmet line of knives as they are stamped with serial numbers. If your knives are stamped with a number beginning with "8", then chances are you received the incorrect knives in the set. Wusthof quality knives begin with the number four (including Grand Prix, Culinare, Gourmet, etc). I have contacted both the Food Network and Wusthof to make them aware of this issue. It appears there has been a problem in the shipping area of one of the two. The Food Network has been great when speaking with them. I want to make sure everyone has actually received what they have paid for. As far as the three Gourmet knives I received, they are very good quality. I sent the entire block back (paid for by the Food Network) and am looking forward to "playing" with my new set of Gourmet knives.

I searched through Amazon looking at the different steak knives and their reviews. I decided on these because of the following: 1. They appeared to be of a medium vice entry quality; 2. They are non-serrated thereby allowing me to sharpen at home using my honing steel and/or knife sharpener; and 3. They go well with my mid-quality J. A. Henckels International Classic kitchen knives. I am not a knife expert, but an average person would be hard pressed to not like or find any material fault with these steak knives. I noticed one reviewer mention that they were a bit thinner than other Wusthof knives. However, I found them to be reasonably thick (they are not tinny) and quite satisfactory. They are steak knives, not kitchen knives. I feel this is a good quality product and am well satisfied with my purchase of them. I hope this review helps fellow Amazon customers because I know many of the reviews for steak knives are quite diverse.

These are by no means cheap knives. They are inexpensive relative to the quality they deliver. The knives I really wanted were also from Wusthof. Unfortunately, they were $180.00. So the decision was between a.) the best knives which will last a lifetime or b.) the best knives which will last 25 years for less than a third of the price.

The gourmet series knives cut through steak like "buttah". They feel good and well balanced in the hand. The fact that it's not a full tang has no effect on the usefulness or performance so I am happy with these knives and recommend them to you if you want the best and if money IS an object.

Kotobuki Seki 6-1/2-Inch Deba KnifeHeavy duty, works great, but I would recommend getting a Wet Stone as it gets dull after a couple of months of regular usage.

There are two reasons why I like and dislike this knife.

I like this knife becuase it feels sturdy in the hand, and it will cut through snapper,

shrimp, pike mackerel, and anything else you want (I put this product to work the

day it was shipped to my door.)

I do not like this knife, because it is stainless. I do wish it had a longer period of

sharpness. Also, the handle is unfinished; not that this is a problem cosmetically,

but when you are cutting up fish left and right, and all the water you have to use

to clean up gets into the wood, it feels very uncomfortable, almost like it would start

splintering-this should not hold a prospecting customer back from buying this blade,

however; just sand it and give a good dose or two of carpenter's wax, or finish it

yourself by dipping it into carpenter-grade polyester. (Of course, let it set completley

before usiing it again!)

I really wanted this knife to impress. I wanted to believe that you could maybe sacrifice a few frills and still get a quality kitchen tool for under $100. While the answer to that question still eludes me, I can tell you that this is NOT the knife I was searching for. Bladesteel is clearly sub-par, and while I understand the design is traditional, it still feels as though one good pull would easily leave this knife in two pieces. The unfinished wood on the handle was another thing I just could not get past. In the pics, I was assuming that the wood probably had some kind of clear-coat protectant on it, but this was not the case. Just because it is Japanese, does not mean that it is automatically a good knife. If you're looking for a good example of Japanese cutlery, keep looking.
