I bought this Challah Board from The Judaica Store. Upon receiving the item, the salt receptacle was unattached from the board, while it was supposed to be glued to the board. This is not very good craftsmanship. The knife, too, broke after a mere few weeks of normal use. The blade partially unattached from the handle. I contacted The Judaica Store and they told me to return the item for a replacement. That incurs added expense on my part, because it would mean I would have to pay for shipping the item to the retailer, AND the shipping of the item back to me. I'm not a satisfied customer. This is my first time buying a High Carbon chef knife and I am not disappointed. It arrived extremely sharp. After using this knife at home and at work I couldn't be happier. It has already started to form a nice patina. I do recommend that follow the manufacturer's cleaning and storage instructions. The Korin website a video on how to care for this knife. Although I have not experienced any issues with rusting I have known others who have because they neglected their knives. I have always cleaned and dried all my knives after using them, and that is must for this kind of knife. It also doesn't hurt if you spend a little extra money and get the Wooden Saya Cover Gyutou 9.4" (24cm) and Tsubaki knife oil. I added this knife along with 2 other prep knives from Amazon (Yoshihiro's 5.3" petty knife & Wusthof's 5" Santoku) to my arsenal of kitchen knives and I'm now all set...Forever. I have an old Wusthof 8" Chef's knife and it always seemed too big for the style of prep work I like to do at home. So, I spent a month here researching all of Amazon's kitchen cutlery and settled on the 3 prep knives I'll ever need for prep work. {Scroll down for the review}There's a lot of hoopla out there about knives in general. There are fanboys aplenty for every brand from Ronco "Never-dulls" to the Shun culinaryphiles. Here's what you really need to know:
Mainstream knife blades are one of two types: European or Japanese. European style knives have a 20 degree edge and are designed for "Rocking." Additionally, the knife is weighted at towards the blade. Rocking is a style of cutting where the user doesn't let the knife leave the cutting board but allows it to pivot up and down. This is similar to kneading dough but not letting your hands leave the dough. Japanese style knives have a 10 degree edge angle and are designed for "Chopping." Chopping is where the user incorporates a quick "chopping" action to dice food. Conversely from the European style, these knives are balanced. This helps with the feel and quick movement needed for chopping. From here, it is easy to see why Japanese style knives would need a 10 degree edge as it allows for this type of action. Because of the blade angle, these knives tend to stay sharper for a longer period of time. However, they are a pain to sharpen.
With that said, this knife is European. I came from a Santoku Calphalon Katana series where I chopped everything (not that I knew what I was doing, but because it felt right). Switching to this knife, the chopping action did not work very well. When I switched to the rocking motion, this knife was amazing. Also, sharpening this knife is much easier to do (as compared to the Japanese style) as conventional pull sharpeners work really well. I also got a honing rod J.A. Henckels 9-Inch Poly Sharpening Steel. This is a MUST as it allows you to straiten the blade edge and keep your knife sharper for longer. You can also get Wusthof 10-Inch Sharpening Steel which I believe is sold by Amazon (at the time of post).

In short, this is a great little knife. It is balanced toward the bladed. This is sharp and has remained sharp even though I use it 3 days out of the week. I attribute this to the honing steel that I use every time I use it. It should be noted that the handle is almost as long as the blade. If you have small hands, you'll find yourself choking up on the handle. Additionally, the blade itself is not that wide. I would have thought that a chef's knife would be a little wider than this. As a reference, this would probably be 70% Chef and 30% slicer. Because of the width, I'm a bit more careful when smashing garlic cloves than I normally am, but this still gets the job done. The Blackwood handle isn't anything special. It's nice, but it's treated so that you really can't tell if it really is wood or not. This is because the handle can't be absorbent as it would foster bacteria. All in all, this is a great knife that has remained sharp.

I have purchased many Global knives and love them all. For the money I feel like they are hard to beat. However i am very disappointed with this knife. Out of the box this is the most dull Global knife I have ever used. I had a hard time pealing a potato with this knife. I will be purchasing more Global knives I am sure, but I will be purchasing them from a brick and mortar store where I can test the knife before I purchase it as I have my other knives.This is Ari Aroma, the Sage Chef of Sage Chefs,I endorse this product all five stars goes to global. I thought I wanted a "birds beak" shaped knife. However after using it, the curve is useless. There is nothing this knife can do that a straight paring knife cannot do. The turned blade makes it difficult to find the edge while cutting through a fruit or vegetable. Also, this design is very difficult to sharpen.Global makes a good product, and I have many Global knives that I love. However, this design of knife I would not recommend, pick out a regular shaped paring knife. You will be happier in the long run.

I've been a knife geek and knife sharpener for almost 40 years. I have over 30 high end knives from single steel blade construction to 33 layers Damascus. I love all my knives but this knife is special. After all the research that I do and consistantly see this knife as one of the top rated production knife series made. I have to agree to the max. It is like no other knife that I own. It is the easiest knife that I have ever sharpened and you can work it like a dream. It has the right amount of flex and is a complete joy to use. First let me say that this product arrived to my home faster then I expected, especially since it was right before Christmas. The product itself is great. I had just purchased a new, very expensive wooden cutting board and I wanted to be sure to protect it. Someone at the store where I bought the board suggested that I get a "food grade mineral oil". I really had no idea about this type of product but once I started searching the web for info, I found that it is the best thing to use to keep your wooden boards like new for years. I was unable to locate any of this oil at the stores that I go to normally so I turned to my tried and true friend, Amazon.com Sure enough, they had this product. Once I began using it, I could tell right away what a difference it made in how my new cutting board looked. I typically use my board every day and have been using the oil once a week. The board has stayed "fresh" looking with no lasting cut marks and no water damage after wash ups.Boos Mystery Oil is not just typical food safe mineral oil. I have butcher block counter tops and the Mystery Oil helps keep them from drying and cracking and over time gives a warm shine to the butcher block. I purchased the recommended treatment for my counter tops and it was a mess, the Mystery Oil is far better. The best accidental discovery that I found is that Mystery Oil makes my stainless steel appliances look like factory new. I discovered this my first time out when I spilled some on my stainless steel cook top and went to wipe it up. The streaks from the cleaner and all finger prints just disappeared and the stove took on a deep rich shine. All you have to do is put a few drops on a paper towel and start polishing. Don't get it too thick or you just wind up wiping up way more oil than is necessary. Experiment with this a little. I use it on my fridge, dishwasher, ovens, everything to polish stainless. You do need to clean your stainless with Windex or other cleaner first to get any soiling off, then follow up with a light polish of mystery oil. You will be amazed at how beautiful your stainless will be. The only things really wrong with this are the suggestion that wood oils are a mystery and the price of this item. The oil is certainly fine stuff if you don't mind the price. Both Joyce Chen Bamboo Wood Oil, 8 Ounces and Snow River Wood Oil are a lower priced when you consider that they are available with free super saver shipping. Wood and bamboo oils are simply food grade mineral oils. You should use a wood oil in your kitchen instead of vegetable oil because mineral oil does not break down or become rancid. Wood oil gives sheen and water and stain resistance to wood items such as butcher block, cutting boards, pizza peels and wooden salad bowls. You can use wood oil to darken and restore the appearance of faded wooden knife handles or dried out wood cutting boards. Wood oil is a must have for any kitchen with wood items.I actually use mineral oil laxative on my wood kitchen items ($2 for 16 oz. at many drug stores) which is the same thing. Clearly the laxative bottle is less than aesthetically pleasing and is embarassing to leave around the kitchen. My wife keeps hiding the bottle in fact. But No it won't have a laxative effect if you use it on your cutting boards or knife handles.

The John Boos website says Mystery Oil is formulated from "...a mixture Of mineral oil, linseed oil & orange oil." I have no reason to doubt the statement. I can say it certainly isn't just food-grade mineral oil; I've used mineral oil alone on chopping blocks for 40 years. Mystery Oil is thinner, penetrates better, is less messy to apply and cleanup, leaves minimal oily residue, and looks great, with less yellowing than I'm used to seeing with mineral oil alone. I wish I'd discovered it decades ago. Like everyone else, I wish it was less expensive. I'm not sure I'd bother using it on a $20 cutting board made in China or Indonesia. Which leads me to observe that John Boos is an American company, in business in the same town in Illinois for 120 years. Explore their website. It's clear they're proud of what they make, and put quality and long-term value ahead of price. Frankly, I'm happy to they're still here to remind me that price isn't everything.I bought a Boos block about four years ago and didn't have the chance to buy the oil at the time. To save money I used some cheap food safe mineral oil. I noticed my board was drying out and I had tossed the mineral oil. After going on line and looking at all sorts of food safe block oils, I decided to go with one provided by the manufacturer of the board. They know what they are doing and they created an oil that will make their boards last longer and look more beautiful. It absorbs quickly, has no unpleasant odor, and makes my board look great. This knife is great when you want to trim the excess fat from any meat before preparation. Using any stroke, small or large removes fat effortlessly from roasts, chops, steaks, etc.. No 'hacking' necessary and the lightest of touches gets the job done. If you need sharp knives at lower, affordable costs, the Komachi line is the one for you. These are the makers of the Shun line of knives and you can send these knives in once a year for FREE sharpening. These are inexpensive enough to have 2 sets, one set to send in for sharpening and the other set to keep and use while the dulled ones are away for resharpening. These prices are less that the retail store, by about $3.00 each. Just keep in mind that these knives are razor sharp and fairly lightweight so you must be careful at all times.I'd say 4 inches of the blade are not serrated so it's good for slicing. The thin tip is flexible which enables you to remove the skin from fish easily. I also think this is an ideal knife for deveining shrimp. However, I don't think this knife is the correct size or shape for comfortably mincing vegetables. As long as you have a chef's knife in addition to this knife in your kitchen, you're pretty much set. These are decent Chinese reproductions. The originals were very high quality and made in Japan.The Modern Hollow Knife should have JAPAN printed on it and have a thin perpendicular join line just before it tappers into the flat surface of the knife. The knifes I received from Yamazaki Tableware Inc./Amazon appeared to be one solid piece with CHINA printed on it. The stamped branding on the forks and spoons was off a bit as well. The packaging looks like something you would buy at Target, not at all like the original packaging sold in fine silverware stores.
I think the design is great and this set is priced much lower than the originals that were of higher quality. If you're ok with decent quality Chinese reproductions the price is the best I've seen. I prefer the craftsmanship of the originals from Japan.

It is made of beautifully crafted bamboo provides an elegant touch to my kitchen. Even better, I now have all my knives at my finger tips.
I particularly like the the less used items such as the cleaver are at the top of the block and therefore out of the way.

This is a great knife holder for the Zwillling product line. It holds the smaller Zwilling JA Henckels clever perfectly which is why I bought it. It will also hold the International line too.It is very difficult to find in stores so Amazon came through with this one for sure!
The only complaint I have is with the sender or UPS because it came with a small ding in the side. Nothing too bad or noticable.
