I own Chef Works pants and I was due for some new ones. After looking at the Chef Works website these were the ones that I wanted to purchase. I wanted the extra back pocket because when I am working I have my wallet in my back right pocket and I like to have a towel in my other back pocket. These pants are durable, lightweight, and cool. The material used in these pants are much lighter than the Baggy Chef Works pants that I own. The sizes run large though, my "Baggy" pants are an XL but my "Professional" pants are a L and they fit the exact same. Will buy again.

Sabatier 8 Inch Forged Carbon Steel Chef Knife Made in FranceFirst let me say the price of $55.00 was the best I found and these were shipped fast. (The name Sabatier is not protected by patent. Sabatier knives are made by a number of companies including China and really the 4 Star Elephant brand are the nearest in quality to these). I bought a set of 4-6-8-and 10 inch. These knives do have a slight curve to the edge so you can dice or slice with them. I liked these well enough to buy my daughter a set. These knives have a RC of 54-56 and while may be considered a soft steel it's also easier to sharpen, plus holds an edge pretty well. These are carbon steel (not stainless) and will develop a patina or will also rust If not hand washed and dried, then vegetable oil applied. Truthfully I believe any good knife should be hand washed, even stainless can rust and handles crack. I prefer carbon steel knives for kitchen work . Now I'm 69 years old and own 200 plus knives (stainless and carbon steel) for hunting and kitchen work (some hand and custom made), plus own a number of sharpening systems. Many stainless knives sold today are junk (cheap ones won't hold or take an edge) and good stainless knives will be harder to sharpen due to the alloys used. I'm not a novice when it comes to knives. I'm very satisfied with this brand of Sabatier, have found they do take a good edge and hold it well. I also have three 4 star Elephant Brand Sabatiers, two of steel forged in the 1930's (sold as historic knives) and one of new forged steel. The two historic older forged will match these in edge holding, but the modern one doesn't match them. I really didn't expect that and I know a lot of people like the Elephant Brand, so many will disagree. (Both brands in my view are better than the German Knives, yet generally cheaper in price) Fit and finish on these are good, did notice one had slight grind marks on the top edge, but not bad. Most wouldn't even notice it. But one of my Elephant Brand historic knives did too. That doesn't effect use though. The blades are thinner than some Chef Knives, they are lighter than many, well balanced, but for most of us in home kitchen use, these are great. Handles on the smaller knives are larger than most making them easy to use too. The only kitchen knives I have and rate better are 40+ year old Carbon Steel American made, Wear-Ever and some Clyde Knives. I don't believe anyone has ever matched those in quality, nor do they now. This review is just my opinion and some will disagree and that's OK and why we have many knife companies. Hope this review helps someone and I tried to be very honest.

I have a fondness for old carbon steel knives, and was intrigued when I saw these K Sabatiers listed as such a great price. Based on research, and on the reviews on the 10-inch version of this same knife, I bought a 4-inch, 6-inch, and 8-inch version. I am VERY pleased with these knives, and will probably go ahead and order a 10-inch as well. They were fairly sharp upon arrival, but a quick trip to my professional knife man for a pre-use touchup turned them into razors. Care must be taken, remember, to wipe these occasionally during use, to wash and dry immediately, and even wipe with a bit of oil, as they WILL rust and discolor.

If you like carbon steel knives, trust these. These are the real K Sabatier. You won't be disappointed.

This is the only reasonably priced well-made carbon steel knife available ANYWHERE, including France (where it is made)--yup, even including Dehillerin. I've ordered several of these in different sizes now, for myself (US) and sister-in-law (France). There are some very high-priced "celebrity chef'" ones out there, with damascus-steel blades, exotic wood handles, etc., but for everyday use by a good but unfamous cook, these are perfect. Lovely edge, weight, and balance--everything you'd expect from a real carbon steel knife.

This knife is not the knife that is advertise. The knife I received was made in China not France, like the one I purchased and was described on the product information. I hope that this will be corrected either sending me the correct item or refunding my money, since I did not get what I thought I was paying for.

I recently bought a set of these Sabatier-K knives a 4" paring, as well as the 6, 8, and 10 inch chef knives.

I'm very pleased with them. As I read on some reviews, most needed some slight sharpening, except my 4 inch was quite sharp out of its shipping sleeve. I like their light weight, feel, and balance. They are fairly thin compared to most German chef knives. The 8 inch chef only weighs about 6.4 oz... The spine did have a relatively hard 90 degree edge. I sanded one down a bit with a little sand paper, but decided why bother on the others, at least for now, my hand is never there. I also noticed the rare, odd grind mark on the spine, which tells me they are hand made, something I like in this day of robotic automation. I am using DMT 8" diamond block to sharpen, which are scary fast. Overall these K Sabatier's fit and finish is top shelf. You do need to take care of them drying, occasionally oiling, but don't fret over common patina spots that develop, its normal. Just don't let them rust!

It is a bit hard to find such well priced, quality high carbon steel knives these days, but these are the real deal, along with their brass riveted POM handles. And I prefer the brass rivets to the stainless steel ones pictured on the Sabatier-K (Aine Perrier) website. The handles are a nice size, even on the small four inch. I think my six inch is my favorite, perhaps the eight, I can't really decide. I enjoy looking at them on my wall magnet and watching their patina grow. They are real pleasure to use... You won't be disappointed.

One last thought... I would use a smooth, polished sharpening steel, not the coarse one. F Dicks makes an inexpensive one (Pack House) with nice german steel. One is suppose to very gently, slowly steel these carbons, at an angle a few degrees over their edge angle. One or two strokes (alternating on each side) is all that is needed, and you might steel them everytime or every other time you use them. I recommend not using a diamond or ceramic sharpening steel with these authentic Sabatier knives.

I have found they are the best knife for the price both in the kitchen and at the fillet table. They not only feel right but also hold an edge even when cutting thru bones. I would rate most of them a five. That said though, I feel this one though is too wimpy for filleting most fish and I base this on my experience as I fillet hundreds of fish a year both in Michigan and Florida. The knife seems to bend too much when I apply a small amount of force to feel and ride on the bones as I remove the fillets from the fish. It does do a good job of skinning the fish though.

Great knife! Sharp, flexible, and processes fish with the greatest of ease.... but didn't come with a sheath, I assumed it would as a fillet knifeso if your out there and (like me) don't read the details... don't be surprised...

Kuhn Rikon Nonstick Small Santoku Knife Colori

Kuhn Rikon 5-Inch Nonstick Colori Santoku Knife, Blackknife works well, sharp out of the box. Color is nice for seperating meat and vegtable knives. nonstick coating is ok but not great. I would buy again.

This knife was rather disappointing to me as I found it rather dull (had to hit it with my sharpener) and even after that it did not work as "designed." That is to say the food does not necessarily fall away after cutting. Again, you get what you pay for and these knives were very reasonable, but not so useful to me.

I bought this knife to replace a cheap "birds beak" knife that broke while I was using it. This knife is a 1/2" smaller than the one I replaced, but I love this knife because of that. This knife is much easier to handle for me. It is great for cleaning shrimp!!!

On this knife, the tang goes right through the handle (full tang), so the blade will not break away from the handle (as did the one I replaced).

The knife arrived much earlier than expected!!! I was surprised that it arrived so quickly!!!

I was very excited about these cutting boards when I bought them. They were quite thin when they arrived but that didn't really bother me until...I put them in the dishwasher after using them ONCE (the description says 'dishwasher-safe' however no actual instructions were included in the pkg) for the first time and when I took them out they were all sort of 'warped' and now they don't lay flat AT ALL. I was very bummed and thought maybe all the flexible board were liked this, however...

The next day I was at a major discount retailer and saw a much thicker, sturdier pack of FOUR cutting boards for $5.xx! I bought them that day and haven't used the other cutting boards since! They are SO much better! So, I recommend you buy the 4-pk of flexible boards I mentioned at your local retailer NOT these poor quality ones.

UPDATE! Ok, so I had these cutting boards stored in a cabinet next to the other thicker cutting boards I mentioned I bought. I had a heavy stone cookie pan laying flat against all of them...and good news!...the Norpro boards I bought on amazon flattened out and look good again! So, maybe it just takes a little more effort to flatten them after each dishwashing.

These cutting boards are less of a cutting board and more of a plastic funnel/mise en place tool.

After using them the first time they retain knife marks as permenant bends in the plastic, durability rating of .5 stars. They also do not retain their original flat shape in a reasonable manner.

MAC 4 piece Knife Set #GSP41My father-in-law gave us this exact set of knives 35 years ago because he said we needed good knives, and MAC was the best he had ever used..........He was a butcher with his own shop in N.J. For 45 years. I use the knives daily, and they are indeed exceptional. I am now purchasing a set for my son. He can't have mine!

If you don't like to have to frequently sharpen your knives, then try out a Mac knife. They stay sharp for a really long time and cut like laser beams through food. They feel great in the hand, and they're nice and light. The only disadvantage (and this is a minor one) is that they're not dishwasher safe (but neither are most quality knives in this category).

I started my quest for a quality kitchen knife about 3 years ago after I noticed that my Henckels Professional S knives were getting dull pretty frequently. My first Henckels was a Pro S 7 inch santoku that I was so pleased with at first that I decided to get a matching Pro S 5 inch santoku, a paring knife, and a very expensive 10 inch chef's knife. And then they started getting dull. My first reaction was to get some whetstones and do some sharpening. I tried a few Japanese stones first and then moved on to some USA made diamond ones before finally settling happily with a Spyderco sharpening system. Long story short, I discovered that sharpening is a chore I'd rather not have to do at all, muchness frequently, so I decided to check into some other brands that I would not have to sharpen as much as my Henckels. Believe me, Henckels Pro S series get dull constantly. It's incredibly frustrating how often you have to find yourself sharpening them. And this was after I spent countless hours researching and finding out everything I needed to know about using whetstones effectively. If you sharpen a Pro S, if you're lucky, you might be able to get through 3 meal preps before noticing that it's not as sharp as it used to be. And yes, I did wash them immediately after every use and store them properly, that that isn't the issue. They are just simply junk knives at a premium price.

As a result, I did a lot of research before deciding to buy a Cutco and a Mac. I know there's a lot of Cutco haters out there who consider Cutco to be like the Bose of the knife world (overpriced for a mediocre product). I heard all the stuff about how they use inferior grade steel and this and that, but I decided to try them because they had a lifetime guarantee, free professional lifetime sharpening, and they were dishwasher safe. I decided to get a Mac because I found a few reviewers online by some people who worked in restaurant kitchens.

I have been happy with the Cutco, but I've been even happier with the Mac knives I've bought. The Cutco vegetable knife has stayed nice and sharp for a year and a half now without any trouble. I love that I can just throw it in the dishwasher which is great when you're entertaining company and don't want to be bothered with washing your knives off by hand right after using them. But two things keep me from grabbing the Cutco most of the time when I'm cooking: it's heavy and the steel blade is a somewhat fat so it does not glide as effortlessly through food as I'd prefer even though it has maintained such a sharp edge. From my experience, Cutco makes a pretty decent knife that they stand behind with a great warranty, so I would not consider them the Bose of kitchen knives; if anything Henckels, with their overpriced, overhyped, and overexposed product, is the Bose of kitchen knives.

I digress. The Mac succeeds where the Cutco left off. Weary of wasting money, I decided to be conservative with trying out a Mac knife for the first time, so I went on google shopping and found Sonoma Cutlery, a retailer that sold single Mac knives at a very reasonable price--much less than a Henckels Pro S or Cutco, and I bought a single Mac Original 4 inch paring knife. The steel is nice and thin, so it's not only light, but also glides effortlessly through food (you'll see what I'm talking about if you try one out and compare it to a thicker steel blade when cutting something like a large onion). I fell in love with it, and decided after a year of use without needing to be sharpened to get a second Mac, so I got an Original series 6.5 inch chef's knife. It's my absolute favorite knife in my block. Mac does not get the exposure it deserves, and it seems that only a few people who are "in the know" (e.g. Gordon Ramsay) have discovered how great Macs are. It really is a shame that big retailers like Bed Bath and Beyond and places like that tend to push hyped, shoddy, overpriced German brands like Henckels when they could instead be selling better quality knives like Mac. I have since sold my used Henckels, and I'm keeping my Cutco and of course these awesome Mac knives. I'm sure that there are several other quality brands out there who make knives that are very good too, but my great experience with these very reasonably priced Macs has made me a loyalist, and my quest for the kitchen knife I've always wanted is finally over. If you've found yourself on a similar quest, save yourself a lot of time and grief and just buy yourself a single Original series Mac chef's knife. You'll be glad you did.

I just purchased as a wedding present the same 4 knife set that we bought shortly after we were married 44 years ago. This is a great set of knives. They are kept sharp by a few swipes along the back of a plate of china. However, I see they now sell a ceramic shapener that I assume will work just as well. If you want to give a wedding gift that people will thank you for many times over the years, I recommend this set of MAC knives. Each knife is simply perfect.

The Modern Space series by Taiwon Metal is a simple yet lovely pattern with a simple rounded end. It's sleek and simple design make it a perfect for either restaurant use or to accompany intricate and beautiful china and crystal. This set is more than good enough quality for the average home, and it seems sturdy enough to hold up even in restaurants for many years. It does need occasional polishing but doesn't seem to easily scratch or bend.

The weakest part of this set is the absence of a few pieces: Appetizer Knife, Butter Spreader , and Bouillon Spoon (all of which are offered in the Baguette design) and a Fruit Fork, Fruit Knife, Fruit/Citrus Spoon, Oyster Fork (with three prongs), and Salt Spoon which are not offered in any of the Taiwon Metal patterns. But that only highlights exactly how perfect this set is for multi-course meals or restaurants with different dishes. One can easily built a 7-12-course meal with this set.

Kyocera Revolution Series 3-1/7-Inch Paring Knife, Black BladeThe fact that you are even reading this suggests that you already know the arguments in favor of ceramic knives. Ceramic knives are harder than steel knives, can be made much sharper than steel knives, hold their edge ten times longer than steel knives, are lighter than steel knives, won't brown foods, transfer a metallic taste or smell, or rust.

You probably also know the disadvantages of ceramic knives. Unlike steel knives ceramic knives can chip or break so you want to avoid dropping them, tossing them in a sink or kitchen drawer, or arguably even washing them in a dishwasher. (Most ceramic knives come in fitted plastic packing material that can be saved, or you can store them in something like this Kyocera Bamboo 3-Slot Knife Block.) If you actually succeed in dulling a ceramic knife, it will need to be professionally sharpened, though Kyocera has come out with a sharpener for home use: Kyocera Electric Diamond Knife Sharpener for Kyocera Ceramic Knives. Unlike steel knives ceramic knives cannot flex without breaking so there can be no such thing as a ceramic boning knife, and you only want to use ceramic knives to cut boneless meats. Finally, although using a proper cutting board is a good idea with fine steel knives, it is an absolute requirement with ceramic knives; using a ceramic knife to cut something on a plate is an absolute no-no.

So the only remaining question is whether to go cheap: Harbor Freight Tools Ceramic 3 Inch Paring Knife or expensive: Kyocera Revolution Series Ceramic 3 1/7 Inch Paring Knife Black Handle, Black Blade, and due to the fortuitous timing of a couple of good sales I can offer an opinion.

Blade: The Harbor Freight blade is double bevel ground while the Kyocera Revolution blade is chisel ground. Along with Kyocera's claims that its micro-grain ceramic is more dense than its competitors, this should result in a sharper blade, but any difference was too subtle for me to detect. Both knives will be MUCH sharper than any steel knife you are used to, cutting through citrus rinds (and even seeds!) like butter.

Handle: Both the Harbor Freight and Kyocera Revolution have superficially similar ergonomic handles, but I noted a couple of significant differences. In the Harbor Freight the finger guard is part of the handle while in the Kyocera Revolution it is part of the blade. Surprisingly, I found the Kyocera Revolution handle a bit slippery, which in light of the consequences of dropping it is significant. The tackier surface of the Harbor Freight handle provided me with a surer grip.

Sharpening: If you manage to dull your Kyocera Revolution knife, Kyocera will sharpen it in return for shipping and handling; if you manage to dull your Harbor Freight knife, you are on your own.

Price: This obviously varies but in most cases you can expect to pay between twice as much and four times as much for the Kyocera Revolution paring knife as for the Harbor Freight paring knife.

Note: An inexpensive Kyocera Ceramic Y Peeler in all of the matching handle colors, is also available.

These knives are extremely sharp and seem to hold an edge but the blade is thicker than steel and consequently the blade tends to get stuck in food that doesn't just fall away. Other than that these knives are great. They slice a ripe tomato without crushing and raw meat with ease. I use these knives as often as I can.

I have purchased a dozen paring knives over twenty years and these do not compare to permanently SHARP, (just bought one $140 Shun, little different) ... I lost my last ceramic and boy, boy did I miss it, now I love to cut everything in sight again... cannot go wrong (do not buy with little kids, too sharp and might break) GREAT PRODUCT A+ buy three and leave them around for all tasks... lasts forever!

You won't be able to shave with this knife.

That being said, the knife is really sharp, so you won't have trouble getting transparent cherry tomato slices if you wish to.

It feels really good in the hand and being so light is an advantage for a pairing knife in my opinion.

It also looks good and makes you want to use it :)

While the directions are limited, it's pretty simple to install if you use the wall anchors or drill into a stud. It's a perfect size for about 5 kitchen knives with enough magnetism to hold them securely. Simply twist them toward the spine of the knife to release.

It looks good, works great, opens up drawer space and keeps my knives from getting banged up. Will get another one when I move again.

I think this is a great buy for the money, I looked around all over in stores in my area and was not satisfied with what I saw at all, all the magnetic knife holders were really plain or really ugly and I had also read that there was the potential problem of a magnetic being either too strong or weak. This one functions well and looks stylish in my kitchen and is large enough to hold all my big chef knives that don't fit into the block.

I bought the 15" MIU France Stainless Steel Magnetic Knife Bar (in Dec 2007 MIU France Stainless Steel Magnetic Knife Bar, 15-Inch) and feel certain it is the same model as this Norpro [ASIN:B00061N05U Norpro 15-Inch Stainless-Steel Magnetic Knife Bar]. Had second thoughts about where to install and finally found the right spot. Like Cookie (TX) in her 2006 review, I was initially stymied about how to install. As she says, there are no installation instructions inside, but the box (which has no brand name, just the words "Stainless Steel Magnetic Knife Bar", Art No. S-3527, UPC 8_06700 03527_0), instructs on one panel "Pull out the plastic end cap", then how to position and screw in. It turns out that if you push the black plastic end from the back, it will pop out the front and expose the screw holes for mounting. To uninstall, the black end cap can be pried out by using a slot screw driver along the flat end. I installed into the side of a wood cabinet. The bar is well designed and made -the magnetic strength is fine, the stainless frame is sturdy and looks modern but simple enough to be inobtrusive and blend in with most kitchen styles.

MSR Alpine Chef's Knife

MSR Alpine Chef's Knife, RedI wanted a decent quality chef knife for camping. I purchased the smaller 6 inch version of this, but it was only useful for slicing. This is more like a traditional Chefs knife that I use at home. The balance is decent, and the handle is off-set enough so that you're not hitting your knuckles. It's also long enough that you can put the tip of the blade on your cutting board, and use it as a pivot point for mincing and so forth. Some people said that the sheath falls off easily, but mine seems to be snug, at least as new. I'm sure for the price this is not quality steel, but hopefully it can be sharpened easily. It comes extremely sharp. A couple of passes over my burnishing steel, and I could shave hair with it.
