Bambu Cheese Knife.This classic cheese knife is well made. The 4 1/4 inch handle will fit large hands, and the lightly serrated 3 13/16 inch stainless steel blade extends through the length of the knife. The wooden handle panels are secured with what look like metal pegs. I keep this knife in my toolbox for projects like lifting driveway paving stones and digging out the grass and weeds growing between the stones. (I use a garden hose to spray away the moss growing between the stones). I suppose this attractive knife would also suffice for cutting cheese on a cheeseboard.

Chinese chef's cleavers are somewhat a mistranslation, as they are not true cleavers. It is actually used for as a slicer and chopper. Much like a French chef's knife or a Japanese Santoku bocho, a Chinese chef's cleaver is an all-purpose knife with a medium blade. It is known as "vegetable knife" to Chinese. This is not a thin blade slicer, nor a thick blade meat cleaver. Chinese chef's knife sits between the Chinese slicer and the Chinese cleaver. It is not designed for hacking through big bones, though thin chicken bones are acceptable.I bought this knife on March 2009. Dexter-Russell Chinese chef's knives are highly regarded among Chinese chefs in America. This particular model S5198 is the best selling of them. Its blade is 8 inch in length and 3.25 inch in width. It spine is 3/32 inch thick, which is 1/32 inch thicker than my previous Sekizo Chinese chef's cleaver. The thicker spine gives the knife a sturdier feel and a heavier chop. The 3-1/4 inch walnut wood handle is nice. A wood handle is warmer to hold and allows a non-slip grip compared to a steel or plastic handle. I oiled the handle with tung oil to prevent it from absorbing too much water. The tang extends 40% into the walnut wood handle and can stand up to 500 pounds of pull. According to customer service, this Dexter-Russell S5198 is constructed out of 420 stainless steel and harden to Rockwell 54-56 HRC. Because normal 420 cannot be harden much above 50 HRC, this knife must be made of 420HC and not the normal 420. 55 HRC is normal for kitchen knives, but soft comparing to hard steel Japanese knives, like Shun or Hattori cutlery. For a given steel, there is a trade-off between strength and toughness. A very hard knife is resistance to low level impact, but will chip/crack when the force is great. A softer and tougher knife tends to give and have its edge roll up easier, but has greater resistance against chipping and cracking. As Chad Ward pointed out, "The most extreme examples of both would be the extremely hard, yet shatter-prone ceramic knives from Kyocera compared to very tough, soft stainless Chinese cleavers". Chinese chef's cleavers often are made out of softer and tougher stainless steel due to their all-purpose function. This is a stamped knife with no bolster, finished with a saber grind profile. I ground mine with a 15o back bevel and a 20o on the edge face. Finally, this knife is made in USA by Dexter-Russell, the largest and oldest American cutlery manufacturer. I rate this Chinese chef's cleaver between a 4-star score and a 5-star score. I am quiet happy with this knife and it is certainly a fine cutlery for its $30-40 price, so it deserves at least a 4-star rating. I am just not sure if it is exceptionally great given its 420HC stainless steel grade is rather common.
I have now moved toward the Chan Chi Kee (CCK) thin blade chef's knife due to its thinness.
*Skip the bottom if you already know how to hold a Chinese cleaver.*
Some of you probably are Chinese cleaver veterans, but for those of you who are not, here are some suggestions for holding a Chinese chef's cleaver. It is a pinch grip just like a French chef's knife. Hold your knife with your dominant hand. Have your thumb and index finger hold on the spine (slightly passed the bolster section), while the other three fingers wrap around the handle. Alternatively, have the thumb, index and middle fingers on the spine, and hold the handle with ring and little fingers. Both grips are acceptable. Hold your foods with your other hand with your fingers tips curl inward, allowing your minor knuckles or your joints exposed. Lean the side of the cleaver blade against your knuckles or your joints and you are good to chop, cut and slice, but never lift the blade edge above the knuckles/joints. In other words, your knuckles/joints will guide your cutting motion and preventing you from cutting yourself. I have uploaded a photo of this in this review.Calling this a 'cleaver' is a bit off. motion to break or separate bones. This knife, on
the other hand is intended for all the cutting
tasks that one does in a kitchen with other knives.
What makes this the almost perfect knife is the width
of the blade. At over three inches, it provides a lot of
control surface in relationship to its edge. So the
cook who has learned to chop by guiding the knife
with his or her knuckles is almost immune from accidents.
The wide blade also makes this great for whacking
a clove of garlic before mincing it and for scooping
up chopped food from the cutting board.
The edge is easy to maintain-not too hard or too soft.
I use a chef's choice sharpener and keep the knife
on a magnetic tool bar to avoid knicking the blade.
The only thing wrong with this knife is the handle,
which is in a barrel shape and uncomfortable and
insecure in the hand. I modified mine with a bit
of coarse sandpaper, making grooves where my fingers
wanted to land.
This is my most frequently-used tool and one that I
recommend to students and friends.

I own a full set of J. A. Henckel Professional "S" series knives, and I love those... but it's this Dexter-Russell Chinese Vegetable Knife (the technical name) that I use for everything. It is easily the sharpest blade I have ever encountered, and easily the longest lasting edge I have ever encountered. When I first used my Henkels, I thought "Okay, this is what a great knife is..." and yes, that was great. Although it is billed as a cleaver, I would not use it that way.It is a beautifully weighted versatile knife with a comfortable handle.
This is a wonderful implement for rapidly chopping, pressing garlic quickly, etc.
It is very easy to care for. We keep the handle out of the water & wash it with warm, soapy water. It is then left either to air dry or wipe dry with a soft cloth.
We've used this knife for 28 years & it has held up well. The handle NEVER became loose. The original one was bought in Chinatown in NYC for about $5.00 (1981). I've seen this same knife in stores for $58, so this price here is quite good.
We thought we had left the knife somewhere, & decided to check with Amazon if they had it. Great news, it was there! After 28 years, we didn't expect it to be $5. Got it to Alaska for additional S&H-about $51 all together. Still less than the price in the store, no gas, no poking around looking for it.
Well, the original knife turned up after all, so now we have two & are happy for that-it is that good a knife! Actually-gave the new knife away as a present. It is a beloved, useful accompaniment-no, A NECESSITY in that household, too.
The knife was shipped all the way to Alaska in great condition. It was well packaged. NO problems.

This particular knife was a present for my cousin who is just starting to get interested in cooking. I have many knives in my kitchen, most of them presents, and most of them junk. I use only two knives: this one and a 4 1/2" Wusthoff paring knife. Aside from specialty knives like ones to cut bread or open oysters, those are the only two knives you will ever need.This knife looks like a meat cleaver. It is not, and never use it like one. It is a Chinese chef's knife and is a precision instrument. You do not wrap your hand around the handle your thumb and forefinger should extend beyond the handle and end up on either side of the blade to guide it through its stroke. Draw the knife gently through whatever you are cutting. You will find it wonderful for cutting vegetables for salads, and after you have sliced or chopped your onions or peppers, simply tilt the knife until it is nearly parallel to your chopping board and slide the chopped food onto the blade to transfer it to a bowl or pot.
Always rinse and dry your knife immediately after use and store it in the box in which it comes or in a proper knife block. This knife hold an edge better than any other knife in your kitchen. Eventually, however, you will need to dress the edge of the knife. When it refuses to cut a tomato as a razor would, use a good quality diamond-hone electric sharpener. You should need only the "hone" part of the device you don't need to take off any metal.
Never use the knife on anything other than a wooden or polyethylene chopping board never on a hard or brittle surface.
If you follow these directions, your knife will last almost forever and give you years of satisfying service. Mine is over 20 years old.
The Ultimate Edge Model 2001-12BN 12 Piece Knife Roll
This holder for 12 knives does exactly what I want it to do. Safely transport very sharp knives back and forth to my church culinary chores without taking a chunk out of an unsuspecting colleague. I give it only four stars because it doesn't seem quite as good as some similar products I've seen on various Food Network documentaries, which seem to easily carry things which are a lot less flat than the average knife.But, if the price is right and carrying knives is what you want, get this product, it is especially good at being stiff, avoiding the risk of pushing a sharp tip out at you at an awkward moment.I am overall pretty happy with this case. It is so large though, that when you need to open it, it requires a large open area, and kitchens can often be short on that kind of space. I'm not currently doing any meat carving but this would hold a substantially large knife, perhaps up to a 14".
I do have issues: First, the velcro that folds over the handle was not sewn properly and will be a problem for me soon. It will be too thick for me to sew, so I will have to glue it on. The handle closure is necessary to keep the wrap from unfolding while you carry it. The only other issue I have is that the shoulder strap attachment points are awkwardly offset, so that it makes it odd to carry. One strap attaches at the handle side and the opposing end on the bottom of the roll.
The knife area is beneath a zippered cover, and the zipper is fine. There is a net zippered pouch on the outside of the zippered cover for smaller utensils. There a pocket for business cards and two holders for pens etc, but they are not protected much from being able to slip out of the end of the wrap. The case holds the knives very securely though. I don't think this would be a good case for someone who would use it to carry other gear such as metal spatulas or whisks, it would be too cumbersome. I carry an 8" and 12" french chef, an 8" santoku, a large Chinese chef, a 12" bread slicer, a 6" boning knife, a 12" scimitar, a paring knife and a half dozen or so other small tools, and it fills it up nicely without cramping for space.

I'm a Sous-chef at one restaurant and a line chef at another so getting my knives back and forth is a big reason why I needed a knife roll. I have owned a Santoku knife for quite a few years. In my opinion it is the best, most versatile design in a knife thats available. They can either be used as a cutting, slicing knife for preparing your veggies, or as a small cleaver for the thicker cuts. I really don't know what the indents on the side of the knife are for, but they all seem to have them. I am sure there is a good reason for them, I just don't know what it is. Like just about everything else you can buy, these knives come in a wide array of prices and promises as for being called the very best. What I wanted for a second set was something that was quality made and would stay sharp, without spending the price of a new microwave. My old knife is a Chicago Cutlery, and it is a full tang very thick blade of good quality and a comfortable handle. I pretty much chose this set based on my old knife. When they arrived they had the very same blade design and insignia, but were definitely thinner than my old knife. Full tang, (meaning the knife extends all the way through the handle), but the blade was a good one third thinner than my other knife. Despite this difference, I still consider both knives to be well worth the price for the average home chef or homemaker. They arrived extremely sharp and can easily be made to stay that way with just a simple sharpening device. I would have to say that despite these being a definite cheaper version of my original knife, they carry an edge like nothing I have ever owned before. They are almost dangerous to use. Be careful and don't make any slip ups when using them. And one other thing, the larger knife is quite a bit thicker than the smaller one, but I feel you will have much more use for the 5 inch. Its just not that often you will need a 7 inch slicer/cleaver unless you cut a lot of big pieces of meat or anything else tough. If you feel the need to just own one of these knives, I would suggest the smaller ones available. However together these make a nice set that can handle just about anything your kitchen can offer up.In conclusion, you can definitely buy better knives for a lot more money. But unless you do a lot of cooking every day for a large number of people, these knives are a very decent price, quality made, and as noted before, carry and sharpen to a superior edge. It seems to be assembled well. It just takes a lot of elbow grease if your knives are dull. If they're somewhat sharp, it seems to do a decent job fine-tuning them.I found this sharpener to be a real disappointment. I had a smaller cheaper model from another company that did a much better job for half the money. After 30 hard pulls on the diamond rods I still needed quite a bit of pressure just to slice a tomato-not at all what I was used to from my old unit. This is a very good product and I use it often. It's convenient not to have to have two sharpeners, one for standard knives and the other for Santuko blades. This sharpener features sharpening elements for both, side-by-side. It creates a renewed, sharpened edge on any of the knives I've used it on in a few gentle pulls through the sharpening element. The only reason I don't give this product 5 stars is that I think it takes just a few too many pulls for the knife edge to reach the maximum sharpness. I have to agree with others, while it's a nice concept it works "ok" (at best) with cheapo kitchen knives, but it's quite terrible with good knives made of hard material. I _think_ (and can't verify this because they don't publish the specs) that the angle is not quite right. I used this unit on a decent set of Wusthoff's and it resulted it me having to take them to a professional sharpener to rectify the damage it caused. I purchased these guides to sharpen KAI Seki Magoroku series knives. I have never used a water stone before, so I thought these guide rails were necessary. I followed the directions on the package for attaching and using these guide rails, but their corners were leaving deep scratches on the water stone, so I stopped using them after just a few passes. I ended up sharpening knives without any guide rails, and, I think that I did a pretty good job.Nice tool for accurately sharpening Japanese and other chef knives. Actually works very well by maintaining a 15 degree angle, which is very hard to do by hand. I was skeptical of this device because I'm so jaded by marketing hype. This product, however, is just great. The screw is teflon coated, which makes it noticeably easier to screw into the cork. It also makes it easier to remove the cork from the screw.It also has a so-called two-stage hook (I have no if there's a proper name for the thing that hooks onto the lip of the bottle). If you use the shorter one first, it doubles the leverage, making it much easier to start pulling the cork. At around the halfway point, you can switch to the longer hook and finish the process.
Even the foil cutter is well-designed. It has a sharp serrated edge that makes cutting through the foil very easy. In contrast, I've used the straight edged kind and found them to be very difficult to use.
I've seen and used other two-stage corkscrews, but this one works well, doesn't slip and has a very solid feel. It's hand-friendly, meaning that there are no pressure points that make opening the bottle uncomfortable.
If there's any negative, its the price, which is a couple of dollars high as corkscrews go. However, I gladly paid for two more to give to my (grown) kids.
Update: When I said that this corkscrew was a couple of dollars high, I hadn't checked recent prices. Apparently, the price is now about two dollars less than I paid for it a few weeks ago. (I paid $10+ and it's now $8+). Rats!Not too shabby of a wine key. It's not as good as I expected since I have used others that were more to my liking, but it's pretty nice for the price. Only thing that I didn't really like was that the foil cutter was a little too big and huge serrations.

The eight inch chef knife and shears are great. I really just wanted an 8 nch Chef's knife but I found the set less expensive than buying the knife separately. My son is a chef and this is favorite knife. His Classic Wusthof 8 inch chef knife was damaged at work so this is a replacement. We have found the sharpener worthless but since it came with the set, we now have another one. I bought this set for my wife for Christmas, mainly because I was stuck on ideas as to what to get her. She spends a lot of time in the kitchen and she had been using an old set of Chicago Cutlery and several unbranded cheap giveaway knives for several years. None of those knives were that great or that sharp and I hated trying to put an edge on them even though I'm pretty good at sharpening knives.Essentially, knives are just sharpened pieces of steel that appear to be pretty simple, straightforward instruments that shouldn't be difficult to produce. But a little experience with some poor examples prove this to not be the case. Like most seemingly simple things, the simplicity is an illusion.
My experience has not been with kitchen knives but it has been with "working" knives. Pocket knives and fixed blade knives designed for hard use in the nasty jobs I have to do daily from removing staples in papers at the office to chopping down woody weeds in the backyard to cutting up boxes, rope, cording and thin pieces of aluminum. I know the value of a blade that can take a good edge and hold it through a lot of abuse.
I did a little research and found several brands of kitchen knives that had universal respect. Wusthof always was at or near the top of everyone's list. More often than not, it was number one in the reviews and surveys I came across.
My wife was a little apprehensive about the sharpness of the knives out of the box. She quickly realized the value of a really sharp kitchen knife and, in no time, she was commenting on how much easier it was to work with the Wusthof's than the cheapo knives she had been using. She has really been making good use of the paring knife and the chef's knife in the days since Christmas. My own limited use of the chef's knife from this set confirms how well it handles and cuts compared to the clunky Chicago Cutlery chef's knife.
After looking over more reviews, I've ordered the Wusthof 7" hollow edge santoku to go with this set. Designed for thin cuts, it will fit in well with the other knives. I'll probably also get a serrated edge bread knife in the not-too-distant future to round out the Wusthof set. This is likely to be a lifetime purchase for our household and that makes the high price more of an investment. I'm well pleased and so is my wife.A sharp edge , the ability to hold it, and balance are truly worth the price.
01/05/13 Update Rating changed from five stars to three. All of the knife handles have cracked despite careful use and hand washing. This is unsanitary and inexcusable in an expensive culinary tool. The blades continue to provide a keen, long lasting edge.

I actually like them better than my older longer knives because they are easier to control. Kuhn Rikon Colori Nonstick Paring Knife Set of 3These are the best knives I have ever used in the kitchen. I have purchased very expensive knives from home shows and high end department and kitchen stores but have never had a knife as good as these little $8.95 knives.
I bought one initially because I have a red accessorized kitchen and I wanted a red knife to match. So I bought it just because it was "cute". After using it I went back to the store and bought 11 more knives!! Now I have two of each color. Then I got worried that they would quit making them so I bought some spares for the future. Then my grown children used them at my house and wanted them so I bought more!! This is a truly great knife. Very sharp but with a safety sheath so you won't cut yourself while searching in the kitchen drawer.
