Yamazaki Old Denmark 3 Piece Serve SetI love Yamazaki, especially this Old Denmark pattern. Hafnia is also fantastic. These are made in Japan and the quality shows. Handles are a tad short by 1/2 to 1 inch but overall, this is a great set. I just wish they would stop selling the butter knife as it is not required.

Chicago Cutlery Forum 5-3/4-Inch Veggie Knife, Sheath PackagingI bought the knife from Wal-Mart, so I can only assume it's the same as this one. My excitement for having a dedicated "veggie" knife quickly faded after having cut my first tomato. Then any enthusiasm that was remaining has completely died in the few uses after that.

My biggest gripe with this knife is in the way it is sharpened. The blade is only sharpened from one side. It is very sharp; however, the sharpened portion is shaped like a wedge. I'm not sure if this is standard practice for veggie knives, but it makes it extremely hard for me to use. The knife drifts horribly to the right while attempting to cut things. I can't cut anything straight. I've tried it with tomatoes, potatoes, carrots, apples, onions, peppers, and pineapples. Everything I try to cut suffers from the same drifting problem. I get the feeling that if I were left-handed I might be able to use this to my advantage, but alas I am not a lefty.

This is the best knife I have ever known to cut vegetables and fruits. Makes cutting easier and quick and you don't have to strain while the knife does its part. Excellent buy!

Wusthof Culinar 8-Inch Carving Knife

Wusthof Culinar 8-Inch Carving KnifeIf you frequently carve roasts or poultry, and have some extra money lying around, then this is the knife for you. Although not quite as sharp as the Shun Stainless slicing knife, the Wusthof Culinar carving knife is better balanced than the Shun Stainless or the Henckels Twin Select, and it is sharper than the Henckels. Although some might find this knife pricey given that it may not get used as much as a cook's knife or a santoku knife, neither of those will carve meat as easily as this knife. I have tried carving a turkey with a cook's knife, and it just is not a good idea. The stainless handle may be slippery for some to use, but I find it more comfortable to use than the handles on the Wusthof Classic and Grand Prix knives. With all said, this is a great knife that has encouraged me to buy more roasts and whole poultry by its ease of use.

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove).

This particular model, the 8 inch carving knife, is a good knife, but I find its uses to be few. For chopping, the chef's knife or utility knife are more useful. This knife is too long and thin for chopping; its balance isn't right. Therefore, this knife is really limited to carving meats. For most cooks, this is an expensive knife for a rare job. If you are completing your collection, I recommend this knife. If you are starting a collection and looking for an all-purpose knife, I would recommend the 8 inch chef's knife or the 4 ½ inch utility knife.

Knife arrived very quickly and packaged well. This knife is very well made with great attention to detail (fit & finish). Light weight and great balance will make this effortless to use. Grind is very good no over grind to be seen and it should take a wicked sharp edge once it meets the stones. I have other Japanese knives and this one will be used often. I spent hours searching different knife dealers online looking for the best knife for my dollar. I had not heard of this brand before. So I was a little worried at first. After reading pages and pages of knife nerd forums, I made my choice. Trust me when I say that you will not find a 10.5 inch Japanese gyuto for a better price. And this is not a cheaply made knife. I use Wustoff knives and a variety of other Japanese style knives at work. And the quality of the Yoshihiro is superior.

I'm really happy with this purchase.

Unless you want to spend $350 or above on a Japanese knife, you should search no further.

And it's nice to know that I'm not giving my money to some "knife factory giant".

Zwilling J.A. Henckels Four Star II 2-Piece Carving SetReceived this as a gift to add to my existing set of Henckels Four Star II knives. Have used it to carve turkey, ham, pork, and beef. It's the best carving knife I've used. Good weight and easy to grip also.

I was shopping for a a nice carving fork, and carving knife and not a set. This set popped up in my search and it didn't have any negative reviews. All glowing reviews and the price was reasonable at $135. The first thing I carved with this knife was a pork tenderloin, and it didn't slice thru the 1.5 pound lean, long, marinated tenderloin with one swipe. I washed, and dried it and honed it on my steel. Gave it another try with the same results. I had my husband give it a go when I cooked a rump roast and he asked if I got the knife at good will. We went shopping at W-S at the mall to purchase a better knife, and ended up getting the Wusthof Classic Ikon Carving Knife Wusthof Classic Ikon 8-Inch Carving Knife, Black plus some other goodies.

After running this Henckles Carving knife thru my new Wusthof knife sharpener, it did bring a new edge to it and make it much more useful. It's still far behind in quality compared to the Ikon.

I love the fork that came with the set. Holds the roast securely for carving and is also useful for turning steaks. Sold, sturdy and easy to clean.

I guess it's possible I got a bad knife.

We purchased the J.A. Henckels Professional "S" 10" Hollow Edge Slicer and my husband just had to have the Shun DM0720 Classic Hollow-Ground Slicing Knife, 9-Inch. Of course it's a no contest with the surgical, razor sharp edge of the Shun. But most large Shun knives make me nervous. Their bread knives and pairing knives I adore. The Henckels 10" Slicer does a beautiful job making thin slices of roast beef, prime rib, ham, pork roast and tenderloins and even hard salami and pastrami. Our neighbor turned us on to this slicing knife and I love it.

The Wusthof Classic Ikon Carving Knife is still my preference for poultry...my husband uses the Shun of course.

Calphalon Katana Cutlery 8-Inch VG Chef's KnifeMy name is Dave, i have been a professional Chef for the past fifteen years, in that time i have used about any high end knives you can think of. This Katana series really does keep pace with the best of them. I spend six to ten hours a day cooking or prepping food in a high end restaurant so this knife has seen some serious use (far more use in a few weeks than a home cook could put in if given a year), and hasn't let me down yet. I've been primarily using these knives at work, (they don't offer a ten inch chef, so i have to use my Miyabi 7000d 10" chef for some of the bigger jobs) and haven't had to do any real work on the edge of the knife except to use the ceramic hone before each use, just one swipe down each side of the blade at a twenty five degree angle. This knife has been used enthusiastically in my hands for about four years now. I also bought the 3 1/2" parer, but wound up only really using the 8" chef as I can easily use it for all my chefly duties. The steel sharpens easily and holds an edge well. After much heavy usage the edge only has some very minute nicks. I have always washed and dried it by hand. A couple of times it was left dirty for a long while that caused a bit of pitting, typical of any steel and easily cleaned using lemon juice.

I have large hands (to match the rest of me, I'm 6'2") and this is the most comfortable grip I have encountered on any knife. Recommended!

Mac Knife Superior Santoku Knife, Set of 2For many years I did my chopping with a high-quality Henckels Twin chef's knife. I had received an Anolon Advanced 5-Inch Santoku as a gift, which was so bad that I dismissed the value of Santoku knives for a long time. Boy, I didn't know what I was missing! Santokus are incredible, as long as you buy the right one.

The MAC Santoku has an incredibly sharp and narrow blade. It requires so much less effort to cut up vegetables than a chef's knife. It also makes it much easier to hold an onion together while chopping, as you don't have a thick blade pushing the pieces apart. The MAC also holds its edge very well, and only requires occasional sharpening.

This isn't appropriate as an only knife. The thin blade means that it's really not useful for anything where the blade might get bent or hit something hard. It's not for jointing or boning poultry, cutting super-hard cheeses, getting chunks off of thick blocks of chocolate, etc. However, for chopping and slicing vegetables, this works so much better than a chef's knife to be well worth the money.

America's Test Kitchen rated this #1. I bought it even though I have the Shun knife which cost more than double what this knife does. Well, the Mac knife is amazing--it is hands down my favorite knife and I have many. Buy the Mac ceramic sharpening steel as well. This knife should not be sharpened with an electric knife sharpener.

Also, the blade is very thin so don't use it to try to cut off a wedge of Reggiano cheese---you can break the blade.

I bought this knife after doing lots of research because I wanted one good knife that would do the job and would be built to last. After a recent trip home to my parents house, I realized I made the right choice. They have terrible knives. I will be buying them one of these for Christmas this year.

This knife is fabulous. It cuts well without needing any of my strenth to force it to do so, which I believe to be the true test of a good knife. You shouldn't have to force it to cut. It works well on everything! I can't imagine owning anything else.

About 45 years ago, I purchased this knife in a neighborhood cooking shop. I asked the salesman about sharpening and he showed me that I could pass its blade gently on the rough ceramic base of a coffee mug. I have used and abused this knife for years and it has never failed. A few weeks ago, it was misplaced by houseguests who were cooking in my kitchen. After frantic searches, I ordered another Mac knife, the mac MTH 80 8" version. By the time it arrived, I had found the smaller one. Now I have two great knives that will certainly outlast me. I think I'll put them in my will for future generations.

I first tried a Mac side by side with a Global and a Forschner. A professional chef laid a piece of red bell pepper down and filleted the meat off the skin. I tried the same with all three knives. I came home from that knife skills class and ordered my own Mac santoku. Cutting is effortless and a pleasure. Even thick carrots and potatoes offer no challenge.

Also, the scissors come apart pretty easily (I assume this is to clean them but still annoying) they are easy enough to put back together, but for the price of this set, you'd think they'd be a bit sturdier. If you want decent knives, a good set, but if you want something that doesn't look so cheap, this isn't the set for you.

The materials used are quite cheap. It looks like a grade schooler's craft project. I am sure that if you were to carry the T knife in this, it would cut through the bottom of the case in no time. The seller also does not issue refunds, only store credit and that is if they decide to take it back in the first place. Be sure to read their return policy and watch out for their ridiculous shipping costs.

It is light in the hand and looks cool with its logo and dragon engraving. It slices effortlessly through meat and fish. It has a thin edge so be careful not to try cutting through bones or frozen foods because you may chip the blade. Other reviews of this knife express concerns that, because of the carbon steel, that it is overly reactive and can rust. You can expect that the blade will start to take on a patina right away. I have owned mine for around 10 years and it is now completely gray-blue. I think this adds character and does not affect the performance of the knife at all. I take proper care of mine and rinse and dry it after use. This is all you need to do to avoid rust. I'm really not concerned about the rust situation and have really never seen any on my blade. The patina now protects the steel. This is a $200 knife so give it the proper respect. No dishwasher, keep it dry and touch it up on a sharpening stone now and then and it will serve you well for generations. You will be happy with this knife as a sashimi knife as well as a carver. I highly recommend it.

Wusthof 7-Inch Double MezzalunaBought this after a trip to an Italian cooking school where they only use Mezzalunas to chop food. Figured two would go twice as fast as one. Wrong. Food ends up stuck between the blades and it is such a hassle to get it out that I went back to my trusty cook's knife. I just received a single-blade mezzaluna as a gift and the knife is back in the drawer. Two is definitely not better than one in this case.
