Chef's Choice 120 Diamond Hone 3-Stage Professional Knife Sharpener

Chef's Choice 120 Diamond Hone 3-Stage Professional Knife Sharpener... I don't find the sharpener to do that great a job. I have used Lansky sharpeners for years and recently acquired a Chef's Choice 120. Here are my impressions:

PROS:

Does an OK job for the person with no sharpening skills whatsoever.

CONS:

You have to get the timing just right when drawing knives through the unit, otherwise the grind is uneven.

If you accidentally allow the point of the knife to dip down upon withdrawing, it will excessively grind the tip.

The rubber feet do not do an adequate job of stabilizing the unit. It will creep when it is in use. I had to place mine on a piece of latex drawer liner.

Finally, and this is what I dislike most of all it leaves longitudinal scratches along the length of the knife. The scratches are not deep but they ARE noticeable.

My advice Get a sharpening stone and learn to use it or if you don't feel comfortable with establishing sharpening angles, get a Lansky or Gatco sharpener. Stay away from this unit.

Over the years I've used Chef's Choice sharpeners with excellent results. Currently I use the 120 model and it produces superb edges on top of the line Henckels knives. It takes about 15 minutes for six knives. When I used stones each knife would take 10 minutes or more. The stones may have produced a slightly better edge but, as a working dad, saving an hour of time is a blessing. Three observations: The usual professional criticism of this system is that it takes off too much steel. I've never found that to be the case. Second, do follow the instructions. Third, different tasks require degrees of sharpness: For some tasks, such as cleaning and cutting a number of fish, a razor sharp edge, without "toothiness," doesn't work for me as well as a slight toothy edge (one with micro-serrations). So experiment.

I have always sharpened my many good knives by hand with only the best stones. I am considered to be excellent at sharpening knives by hand. I would never have considered an electric sharpener, or worse, a scraper on a fine knife, but many knives, six children, canning, cooking and commitments have resulted in my not having time to keep the knives as sharp as I would have liked. The reviews on this sharpener persuaded me to spend the money to try this machine. I sharpened every knife in the house in short order. Even the old steel butcher knives stored in the basement which would have taken over half an hour each if sharpened by hand were perfectly sharpened in just a few seconds. The edge when viewed with a good magnifying glass is scratchy, but the cutting edge is smooth which being the only important part, was smooth. This machine is more consistent than sharpening with a stone by hand and produces as good an edge in a fraction of the time. I give the "Chef's Choice 120" knife sharpener my highest rating and recommend it to anyone wishing to maintain a fine edge on their professional knives. The book must be read before using! You must be able to follow directions when using a machine of this type!

I have a new model 120 and have had excellent results for kitchen cutlery. The device takes about a few practice knives to get used to, but once you become accustomed to how much pressure to exert on knives when sharpening, how far toward the hilt or back of blade to insert the knife, and the action of each stage, you will be able to produce razor-sharp kitchen blades, this includes serrated knives and Santoku blades.

I purchase a series of new Cuisinart kitchen knives that were dull; in fact, the blade steel had a burr on it, a sign of an unfinished sharpening process. The knives are made well and use good quality steel, but the company's sharpening process was sorely lacking. No problem, thanks to the model 120. I sharpened several paring knives, two Santoku blades, Chef's, long meat slicing, serrated bread, and a serrated fruit/veggie knives with exceptional results. The blades were able to slice through paper after the process, much like a quality sports knife. No need to spend more for an exceptional sharpener.

I even restored the edges on three knives that a previous sharpener, the CC Trizor XV, had 'butchered.' The Trizor XV puts a 15-degree edge on knife blades. I found the device took too much material of the blade and produced unacceptable edges, not all of which were evenly ground and sharp. The 120 is doing a far better job of sharpening. The CC120 did an excellent job of restoring those blades, making them, too, razor sharp and once again useful. This is a product that is worth the money. At about $5.00 to $7.00 to have each knife professionally sharpened, two more sharpening sessions and the CC120 will have paid for itself. For kitchen knives, this is a great product. And to hone the blades between sharpening sessions, stage three can be used to hone knives. Take the time to read the instructions and you'll save time on new-product R&D and better understand the rationale for each of the three stages.

I have tried many different devices, this is the best ever. Yes it is expensive but if you want an easy way to make your knives razor sharp this is the device.

I have had mine for going on 6 years, it has worked flawlessly and still sharpens my knives perfectly. In fact it may be cheaper now than it was 6 years ago!

Shun Ken Onion 3-Inch Paring Knife

Shun Ken Onion 3-Inch Paring KnifeI have been hooked on Ken Onion knives since I first bought a Ken Onion Blur tactical folding knife. The lines are both attractive and functional on his knife designs. I then splurged on an 8-inch chef's knife about a year ago. That knife quickly replaced almost all my other knives for most tasks. The handle is perfectly designed to promote a pinch grip that gives you tons of control.

When I saw this knife come across on a lightning deal, I had no choice. For the first time I caught a glimpse of what the characters of Sex in the City felt like when seeing a killer pair of shoes on sale (never seen the show, but I assume that must have happened). Even though I had three paring knives, I had to have this one.

Glad I bought it. This angle is unique, for sure, but it's nice in that you can still get a nice full grip of the substantial handle while avoiding banging your knuckles into the cutting board. Years ago there was a line of Shun knives called Alton's Angles; this seems to be the rebirth of that concept, although Ken Onion gets the royalties this time rather than Alton Brown. This knife is great for handheld paring tasks, as well as work on a board. It quickly became my favorite paring knife.

Let me address the sharpness issue in a couple of negative reviews. If you're comparing this to a victorinox forchner (great knife, no disrespect) or a Wusthof or a Henckels, you probably already have an appreciation for great knife design. However, those are german-designed steels with Rockwell Hardness scores in the high 50s (58 or so). This means they will hold an edge reasonably well, but will also be reasonably easy to sharpen. They are ground to about a 22 degree bevel.

These Shun knives (and Globals, as well as certain Henckels lines, MAC, etc) are made from a harder steel. They have a hardness rating over 60 (as high as 63). This allows them to be ground to a sharper edge (around 15-17 degrees). That means they'll be less adept at crushing bones and processing whole chickens, but you'll get paper-thin slices of tomato or sashimi. You'll also mince ginger or garlic or shallots or chives with ease. However, with a harder steel comes more difficult sharpening. Once sharp, though, it will hold its edge longer.

I highly recommend this knife, and any in the Ken Onion line. I also recommend getting a magnetic strip MIU France Stainless Steel Magnetic Knife Holder, 20-Inches or knife dock The Container Store Knife Dock to hold them securely and avoid banging around in the drawer. I also recommend a wood, end-grain cutting board Proteak Teak Cutting Board Rectangle 20-by-14-by-2-1/2-Inch Hand Grip and Juice Canal, End Grain or polypropylene one OXO Good Grips 10-1/2-by-15-Inch Utility Cutting Board, Black Edge (the OXO fits in the dishwasher). Hand-wash your knife and dry it before storage and you won't have any issues with rust. Unlike carbon-steel knives, this is a very low-maintenance blade.

Lastly, to maintain your blade, I recommend using a honing rod after every use or at least every few uses Shun DM0750 Sharpening Steel the Shun has an angle guide for both german and japanese angles. Note this is a honing rod, and not a sharpener, although most honing steels are still marketed as sharpening steels, unless they are diamond or ceramic, they won't sharpen. I also recommend a dedicated sharpener for use once every 6-12 months. I don't like the rod idea for taking off metal to restore a blade too much room for error. I like one that gives you good control and low risk of damaging blades (i.e. a manual one) my favorite is this one: Spyderco 204MF Triangle Sharpmaker.

This is an extremely well shaped knife, nothing like your average paring knife. It is more like a mini santoku knife in the way it operates. It chops, dices and pares with ease and is extremely easy to handle. I had thought the weight of the knife would make it less capable, but it does not. It cuts through everything with aplomb.

As far as the rust report by another individual. We have not seen that at all. We, of course, do not wash it in a dishwasher. Not sure if they did. But ours shines like new.

Note that at times, some rust can poke through on a knife made of carbon steel. Usually a good scrubbing gets rid of it. But we have not seen that at all on these knives.

This 3 inch paring knife is easily 5 stars. It seems a bit pricy when you realize that for only a few dollars more you can get the much bigger Shun Ken Onion knives, but this is a very handy size and much easier to manipulate and cut stuff than some of the larger knives. Especially if you have not been trained as a professional chef. The blade is very nice looking with the Damascus looking ripples in the blade. It has a 3/4 shank. The bolsters are very well made and fit both the blade and handles very well. The handle looks to made out of some sort of dark wood, possibly Ebony. The feel of the contoured handle is very comfortable and the angle of the blade to the handle seems well thought out. Over all this is a very good knife and I think if you do a lot of cooking this one is well worth the money.

I bought three Shun knives from the lower end of the collection just to see if all the hoopla about Shun was just that or if these knives are for real. They're for real. Great little knife that is very sharp and fits my hand nicely. I shaved a soft peach of its skin and did so removing a minimal amount of fruit while the skin came away effortlessly. Much better than my Wusthoff.

I already had two paring knives (one German, one Japanese) but when I saw this one I had to try it. I have two (different) Shun knives already and so knew the quality would be great and it is. I love the design of this knife because I can use it for all those little jobs that one is "supposed" to use a chef's or utility knife for but in reality a 3" blade is quite enough: slicing or chopping pitted olives, slicing a few strawberries, halving cherry tomatoes, chopping herbs, etc etc. It's especially handy when prepping a small quantity of something for 1 or 2 people. The handle is instantly comfortable -great little knife! I have a feeling my other two parers are going to sulk in the knife block for quite some time, LOL.

I'm new to ceramic knives, so I don't have a lot of experience with them, but I love using them. I wouldn't mind replacing all my metal knives with these, but I'm not sure how they're going to hold up. They're very sharp, and cut easily. I'd buy more. I read where you shouldn't cut on hard surfaces, they're more for slicing, but I use them for everything. We'll see how long they last.

Out of the 30 + Henckels I have this is my favorite knife. I use it everyday, 2 or 3 times a day. I keep reading about other knives being better than Henckel, but I haven't any complaints in my 40 years of using them. The secret with any knife is to run it across the rod several times, each time you use it. IF you do that, they will rarely need sharpening.

My only recommendation here, is to avoid using it in case you are a beginner in the kitchen. This knife is built to be used cutting while holding the vegetables / fruits / etc in your hand rather than on a cutting board.

Do yourself a favor, and in case you are not comfortable cutting while holding the subject in your hands, stick to normal knives.

Fiesta is just not a name you would normally associate with knives. The familiar china dinnerware, yes. But knives? Not so much. But this cutlery can carry the Fiesta name proudly. Although made in China, the knives seem well balanced and sturdy, with the right amount of heft and balance. The oak block was smoothly finished, with no noticeable burrs or splinters. And each knife comes with its own protective plastic sleeve over the blade. The 'Santoprene' handles are soft, but firm enough to be comfortable, although they seem prone to minor surface imperfections. The knives themselves are not exactly 'scalpel sharp' right out of the package, but this can be remedied very easily with a sharpening steel or stone. For some, this set may seem a bit large for steak knives (they're just a tad over 9 inches), but anyone who's ever tackled a big, meaty t-bone will appreciate the extra length. Last but not least, these knives come with a 25-year warranty. I'm very happy with the purchase, and would not hesitate to recommend them. Yes, you can find steak knives that are less expensive, but you get what you pay for. Chances are, they'll have thinner blades and/or flimsy plastic handles.

Bought this as I expect to actually catch some fish and have them for a meal. I understand from another review that you cannot buy this at the stores? It is what it is designed for, to sharpen your blades. Well, it does just that,"No brainer". I put it to use on my fillet knife and ended up with a razor edge. So proceeded to do about all my knives and the same results. Remember NOT to apply much pressure while drawing it across the blade. You will feel the cutting and just a light touch at the end will end the chore. Of course it's plastic but still nice quality and the safety strap will come in handy for those less challenged (who shouldn't play with sharp objects anyway) Still haven't tried it on a fish yet?

Dexter-Russell Cook's Knife 10'I learned about this knife from an article in the NYT by Mark Bittman. It was poorly packaged and arrived with a bent tip. I emailed Amazon, they refunded my money and told me to keep it. I took it down to my shop and re-grounded the point. I own many knives and this is now my favorite. It sharpens easily with a conventional ceramic sharpener. The blade is thin and slices easily through tomatoes to cruciferous veggies. The handle is non-porous and cleans up easily. This blows the barn doors off my fancy and costly knives which require more pampering than my teenage daughter.

I don't mess around when I cook and have no patience for any knife that is less than excellent!

A knife Must be:

Quick & Easy to Sharpen. Many expensive knives are miserable to try to sharpen.

Have just a bit of flex to the blade, this helps when crushing garlic, cutting around bones etc.

Dishwasher Safe. I like the white plastic handle very ergonomic and easy to see that it's clean.

A knife must have a good blade design. This 10" size with a bit of a curve to the edge is perfect!

Dexter Russell 10" Cooks Knife Has Everything I require in a knife.

It's also a fantastic value. I have used many knives that cost ten-times as much that weren't half as good. This knife is so good that I take it when I travel.

I own several knives from this line including another 10" cook's knife that I bought years ago from a kitchen supply store. I love those. Even as I've added much more expensive knives to my collection, my old 10" knife with the white plastic handle is the first one I always reach for.

I recently ordered this one as a gift. When it showed up, the thickness of the spine was significantly thinner than the one I bought years ago. I assume the company has changed their design over the years. I wound up keeping it for myself and getting a different knife for the gift.

Now both 10" knives are in the knife block. Even though the handles are identical, I can immediately tell whether I have the old or new one just by how it feels in my hand. I would still reccommend the knife, but be prepared. If you're an old fan of Dexter-Russell, this is a cheaper version of what you bought 10 years ago.

I have tried many, many kinds of pocket knife sharpeners. Some are fragile, some tear off tons of metal from the blade, some are too large or complicated... so far this one seems the best balance of them all. It quickly puts a good, sharp working edge on blades and, although it is a little agressive, it's nowhere near as bad as the carbide "v"-type sharpeners that literally peel metal off your knife. I like this one and will put it in my bugout kit. This company also makes a "FireStone" ceramic sharpener that may be less agressive. I'll try that one next. Refunds are based on our return policy which states that the customer must return the product.

I have had initial conversation regarding your request with our management and they would have appreciated that you had contacted us prior to posting your negative comments and video in order to make us aware that you received what appears to be a defective product and fix your problem.

The product you received and the problem you had is not reflective of the true quality of a properly produced part under normal use. And thus the video and comments are not truly reflective of a the normal product and its performance.

I will continue to discuss the possibility of having my management pay for pickup, but my management has again requested that you kindly remove the video and negative comments until we review the returned product.

I am pretty confident that once this is done, and the product analyzed, we'll get you a product back at no charge that works for you.

Frankly, now I feel very stupid. It's plastic! of course it melts! It doesn't defy the laws of science. I was misled by the reviews here that seemed compelling that it was a fine product. Based upon Mavericks' repetitive requests for me to remove a video so that YOU can SEE for yourself what it looks like after one use, I would have to wonder if the other reviews are faked. I was duped. I am going to avoid Maverick most definitely. As Grandma used to say to me "Fool me once, shame on you. Fool me twice, shame on me."

I bought one of these cutters years ago in university... I loved it, used it for pizza, quesodilla, thin sandwiches, omelets, and a ton of other uses. Mine vanished in the chaos that followed the birth of our son. (I fear a well meaning grandparent tossed it in the recycling not knowing what it was.) I've been annoyed with every other solution we have at hand for doing those tasks for the last 10 months, tonight I finally said "I'm going to go find it at amazon." and sure enough, page 3 of my first search. This time, I'm going with Blue... though red might have been nice to hide that telltale tomato stain that everything seems to pick up. :)

This style is known as a HOTEL PARER.

The characteristics of that style are the large simple handle and the spear point blade.

Tramontina knives are known in the industry for excellent quality. Contrary to the only other review,

the 4" blade is, in fact, about the longest blade commonly used on a knife called a "paring knife".

It's a good size for its purpose, but the more common 3 1/4" blade is certainly more popular, but not better.

That is a matter of preference.

The knives are sharp from the factory, which is not always the case with many brands. They are also thin blades which are very easy to re-sharpen using a honing stone.
