I LOVE LOVE LOVE this knife! It is the best one I've ever owned! I'm so happy that I invested the time to research knives and ended on this being my final choice. It is the best knife I've ever worked with, and I've been thru culinary school. I love the Santoku knives better then a chef's knife. And Wustof is one of the best commercial knife makers, only a few brands are at the same level as far as quality. Also, the Ikon line (in my opinion) is better then their Classic line, the handles feel better in my hand. I thought I was quite a knife expert, having practised using a two sided stone at a cooking store where I purchased the first of my fine chefs' knives. I would use the stone every month or so and then follow with periodic fine tuning with a steel. I have been following this routine for twenty years and I thought my knives were getting the best treatment. Well, that was until I found the manual 440 two stage. I believe that only a manual can sharpen and protect a knife because overheating is known to change the temper of high carbon steel. After I got married my wife had this 440 sitting in the cabinet and I gave it a try. Not having the instructions, I used the philosophy that less is more and only pulled a few strokes through the 1 side and a few through the 2. The results were amazing! This inexpensive device preserves the hollow ground and it is almost impossible to do damage to a quality knife with this sharpener. I immediately sent one to my mother and she is getting excellent results now too. Providing that the knife is quality to start with and has not been abused by cutting on hard surfaces or clanging against metal and plates in a dishwasher, you will experience a knife that is sharper than a barber's razor. Here is a case where easy and cheap beats all other options.The set of knives we had received as a wedding gift had grown dull because I foolishly used them on a tempered glass cutting board. As the edges dulled, so did my interest in the art of food preparation. Eventually, I was reduced to mincing garlic and chopping onions in a food processor.Then I began watching "Iron Chef" and its American cousin "Iron Chef America" on Food Network. The skill of those talented men and women lit a spark inside me. I longed to take that big chef's knife in hand once more and send its blade through a big juicy onion.

Now that my knives have been resurrected, I give them a quick sharpening after I wash and dry them, and before I put them away. When the cooking muse stirs, I can get right to work without pausing to sharpen up.
At this price, it can't hurt to find out if all your knives need is a good sharpening.

I purchased a super-duper knife set form a t.v. shopping network that starts with a "Q". When they arrived they were so-so
sharp. In a coulpe of weeks I was sorry I bought them. Lucky
for me I kept my old set(Chicago Cutlery). I then discovered
this sharpner and WOW. It brought my old set back to a very
sharp edge and the "super-duper set back an edge that would
cut tomatoes with out squashing them. Lesson: Don't buy knives
that have composit blades and claim to be ever-sharp. Also

Product seems to provide a fool proof method for sharpening knives and they are sharp after you use this product. It has to stick around for a couple of years to get a 5th star.I had previously bought a Presto electric sharpener, which is good for getting a reasonable edge, and for grinding out bad knicks. But the Presto left a rough edge. I used a microscope and the edge looked like jagged hills and valleys at high magnification. But with the Chef's Choice 440 the edge looks almost perfectly straight under the microscope, and the blade is literally shaving sharp. The description of the scissors is, unfortunately, wrong, both here and on the J.A. Henckels website. These 7" scissors are actually only 7.5" from tip to the end of the handle instead of the 10.5" described. Thus, the cutting blades are only 3.25" long. These are the usual high quality Henckels scissors, but if you are looking for longer cutting blades, try the longer 9 1/2" model, model 41300-251.The scissors are just OK. 1)Inferior tempering. Cutco is stamped instead of forged. All best knives are forged (with the exception of Henckels Twinstar which is using a new technology called sintering) because forged knives make a better edge among other reasons. All the worst and cheapest knives are stamped because it is cheaper and easier. The forging process randomises the metal particles for a slightly tougher knife. It also permits the differing thicknesses of metal which is necessary for a heavy raised bolster between the knife handle and knife blade. Forged knives have more metal than stamped knives and thus are heavier. The forging process enables extra metal proportioning to give the knife perfect balance. Most prefer the weight of a forged knife. It feels heftier and more substantial. Forged knives generally are thicker, have more heft, hold an edge better, provide bolsters which brings better balance and safety, and obviously have been made with a lot more care and craftmanship. The forging process enhances the flexibility (making it less likely to snap to break), density, and hardness, and better solidifies the structure of a knife.
2)Steel. Cutco claims they use the highest quality steel money can buy. They call it high carbon surgical grade steel. While this is subjective Cutco uses 440A grade steel while most top of the line knives (which is where Cutco is priced at) uses 440C, which is higher in carbon. 440C is more expensive to make, buy, and manufacture with. 440C also makes a sharper edge, and holds it better. Because of it's grain structure 440C is also more stain resistant. And while 440C steel is generally only found in top of the line kitchen knives, 440A is often found in the cheaper, run of the mill type kitchen knives. Where they got the surgical grade label is beyond me, 440A steel doesn't have a regular grade and a surgical grade. When you think of surgical instruments you think sanitary, expensive, and high qualityit's just sales hype.
3)Lack of bolsters provides for inferior balance and less safety.
4)Double-D edge. Most cooking enthusiasts prefer a straight edge which the double-d is not and you cannot sharpen Cutco edges yourself whenever you please. Salespeople use the ol' rope a dope trick when giving a presentation because the serrated pattern cuts tougher objects better, but any chef or cooking enthusiast will tell you that kitchen knives are made to cut through food like meat, bread, and tomatoesnot rope or leather. For that a utility knife is bestand there's are plenty of utility knives that cut through rope and leather better than Cutco's.
Cutco's salespeople swear up and down double-d edges are neither straight, nor serrated but unique (don't all salespeople?). The Double-D edge is in fact another type of serrated edge. Cutco calls their serrated edge "Double D" just like Spyderco calls their serrated edges "Spyderedge." Except Spyderco isn't trying to fool anyone and markets their as a superior serration pattern while Cutco tries to claim theirs is different.
But anyone who knows anything about knives can tell you the ^^^^ pattern on the edge (take a look at the cutco.com website for an explanation and drawing, currently at: makes it a serrated edge. The whole double-d thing is just hype like everything else about the knives. The Double-D edge is not patented and never was.
The problem with the serrated pattern is that it doesn't make a clean cutlittle nicks and tears in the food is made. Serrated knives are generally only good for fibrous vegetables and breadwhere it is needed. Cutco reps may claim that it makes a clean cut, but this is only true for cutting stuff you can press straight down on (like butter), but for things you need to slide the blade back and forth on (like meat) the teeth will tear it up. Serrated edges are also somewhat more difficult to clean.
As for sharpness, you may think they stay razor sharp but in reality only the crevices of the blade edge are. You see serrated edges like the Double-D's look like this: ^^^^^^ when contacting the food the points get worn down rather quickly but the crevices stay sharp, so it may seem like it is razor sharp but in reality only the crevices are. It can never be as sharp as a well maintained plain edge, the edge preferred by cooking enthusiasts and professionals. Maybe a serrated edge is better at cutting rope (the rope a dope trick), but the best kitchen knives are not made to cut through rope, they are made to make a good, clean cuts on food. Master chef Wylie Dufresne just recently told GQ magazine in their Sept '03 edition, "I have plenty of friends whose parents have Cutco in a knife block. You pull them out and they're all as dull as can be."
Other knives you can sharpen yourself whenever you want, but with Cutco knives you need Cutco to sharpen them for you. I will refer you once again to Cutco's own website: at cutco.com, currently here:
"For resharpening of Double-D® or straight-edged knives, send them along with a return shipping and handling fee of $5.00 (1-3 items) or $8.00 (4 or more items) to the CUTCO address below."
You have to pay for them to be sent in and sent back all the while without your knives. I've heard of representatives of the company coming out and sharpening them for you, but this is by no means guranteed to happen so there is obviously good reason they don't state this on their website.
5)Handles. Of course this is subjective but the handles are different from any of the others and some people find them uncomfortable (especially those with extremely large or small hands since they were designed for the average hand), some others find them dorky looking and wouldn't want to set them out on the dinner table. Sure the handles were designed to be comforableall handles are designed that way! And like all good salepeople, Cutco even has a good story to tell about it. That doesn't mean they actually ARE comfortable. Consumer Reports, the leading consumer magaine, also found the handles to be uncomfortable. The handles are made of what Cutco call "Thermoresin" and thermo=heated and resin=plastic, injection molded plastic is the absolute cheapest material cost and method possible. And the type of plastic the handles are made out of, celluloid plastic, is highly nitrated and self-oxidizing like the gun cotton in smokeless gun powder (to a lesser extent) thus highly flammablenot good for a kitchen knife. Although the rivots are made of what they call "nickel-siver", there is no silver in them. They call it nickel-silver because it has a silver color to it. The handles have no current patent on them, other companies could copy them but choose not to. Wear Ever cookware had handles designed by the same person in the 30's and 40s, they have since dumped this design.
6)Corrosion. Many people (including Consumer Reports magazine) believe that Cutco blades corrode a little easier than most. Consumer Reports seemed to hint that it may have to do with the type of metal used, polishing, or coating.
7)Restrictions when buying. Since you can only buy from a Vector rep, you are forced to select your rep with care because a flock of amateur sales reps can and will include a range from the best professionals through the worst rip off artists.
8)Price. Many will agree that Cutco is not best for commercial use but it is priced for commercial use. You can get a 7 piece block of top of the line hand-forged, bolstered, well balanced Wusthof-Trident Grand Prix for $249. A similar set of Cutco can easily run you $300-$400. Tramontina Professional is supposed to be the best value having the same features as the best knives but at about 1/3 the price. There may also be hidden costs added (such as shipping & handling, C.O.D., sales tax, etc.) that make the actual price much higher that the displayed and originally discussed price.
Cutco is sold at prices very similar to knives that are top of the line yet are not as good as them in almost every way except they do have comparable rockwell hardness, are full tang, and have a good guarantee. I wouldn't spend my hard earned money on guarantees though and the other qualities you can find in much cheaper knives.
The average household has very cheap, low quality knives that generally only last 5-15 years. So when they hear there is a forever guarantee it becomes the main selling point. What they don't know is all knives in that price range are built to last a lifetime and with proper care they definately will. The only way they won't is if you abuse them, which Cutco's guarantee doesn't even fully cover. Also, in case it doesn't last a lifetime, many top of the line knives carry a lifetime guarantee.
Cutco's money back guarantee is for 15 days. Most large retail chains like Sears and Walmart carry a 30 day money back satisfaction guarantee. The forever guarantee is nice, but a couple nitpicks: "Should you damage your CUTCO through misuse or abuse, we will replace the item for one half of the current retail price." it needs to be sent in to Cutco "with an explanatory note" and Cutco is the sole determinor of what is misuse or abuse (such as chipping your knife), also the "guarantee is intended solely for consumer/in-home use." Don't believe me? Check out the Cutco website yourself:I you are looking for the guarantee, Henckels Twinstar and Messermeister (among many others) both offer similar lifetime warrantees and are of better quality (in many people's opinions). If you must have the best kitchen knives available, Wusthof Trident Grand Prix is highly regarded as the best kitchen knives money can buy and the prices are similar to Cutco's. If you are looking for brand name, Henckels is considered the #1 selling brand in the world, been in business since 1731, and they will replace their twinstar knives that have a "diamond edge" with new ones if they get dull. For the best value, you can find high quality, forged, full tang knives with bolsters at a very reasonable price (about 1/3 that of Cutco's) you might want look into the Tramontina Professional Series which is regarded as the best value in the knife industry. If you don't want to spend very much money on knives, the Forschner Victoronox is made by the same people who make Swiss Army Knives and considered the best of the very cheap kitchen knives. If you don't want to sharpen your knives, you might want to look at the Regent Sheffield Infinity Edge or Henckels Twinstar depending on how much you want to spend. My opinion is that Cutco is not worth their price and I'm sure most professionals would agree. In fact you would have great difficulty finding one culinary arts school, master chef, or knife expert that recommends this brand. Norman Weinstein, a nationally recognized knife skills instructor who's taught since 1995 at the Institute of Culinary Education was quoted by the Baltimore Sun newspaper as saying "Why, why, would you buy such a knife?"
Cutco is able to sell their knives at such a high price because they are being sold to people by their sons, nephews, and granddaughters (basically people who care for them and trust them, or their friends, and know very little about knives). Consumersearch.com looked over all the professional reviews available and while 11 professionals liked Wusthof Trident the best, only one liked Cutco and that one only liked Cutco compared to other stamped knives:The bottom line is that no brand or set is best for everyone and you should check them all out and compare to decide which is best for your needs, wants, and preferences. The retail store is probably the best place to do this, unfortunately Cutco is not sold there.

These knives could be worse, but given the fancy name and reputation, they could be a lot better, too. The blades are not as stiff as you might like. Flexy blades scare me not out of fear of breakage, but rather that they are harder to control and more likely to cut something you don't want cut. Also, the Chef's knife has a pretty shallow blade, and you can't do the cool chef-chop without rapping your knuckles on the cutting board. For the money, there are better (though less prestigious) knife sets out there.I don't even feel these knives are worth the advertised price. I have used these for about 5 years and have been thoroughly unimpressed. I gave these one star because Henckels should be ashamed to put their name on these knives.pros: They work (sort of), they are relatively cheap, and you get the Henckels name. I have washed mine in a dishwasher for 5 years and they still hold up.
cons: The steel is poor quality (doesn't hold an edge well), the fit and finish is poor, and the set is over priced for their underwhelming performance.
bottom line: You can get an equivalent set of knives for less money that performs better, you just won't have the Henckels name.
I sharpen these knives and they are dull within just a few uses. The stainless steel is soft and unimpressive. The honing steel needs to be used frequently with these knives to keep them cutting well.
I think most people will find much better performance from a high carbon stainless knife set from most other companies (like Chicago Cutlery's Forum line), you just have to put up with a little staining.
I have been slowly building a professional level knife collection. Start with a high quality chef's (or something like a santoku), bread/carving knife, and a paring knife and work up from there. I couldn't tell you how happy I have been moving to "real" knives, the difference is amazing. If you buy Henckels make sure to buy the ones with the 2 stick men as they are higher quality (non international). The Wusthof Classic set is also a good starting point for good knives. My current set contains an Al Mar paring knife, a Fallkniven chef's knife, and a Wusthof Classic Santoku along with all these Henckels that I am replacing.
If you want cheap but very functional knives, I would recommend Forschner knives. They aren't pretty, but they function as well as any of the good Henckel's or Wusthof's.

I have owned these knives for approx. 4 years, and I think they are great. I agree that the are thin and light weight, but unless you plan on hacking through bone often, this is an impressive little set. I use the 8" kitchen knife almost everyday, and it is still as sharp as the day I bought it. (I also use the honing tool every time I use it to keep it's edge). The two smaller knives couldn't be handier, from slicing 1" thick steaks into strips to slicing tomatoes into paper thin slices. I don't use the serrated bread knife too often, but it does the job like it is suppose to. The only bad thing I have seen about these knives so far is that the finish on the handles dull if you put them in the dishwasher, so hand washing is best. Going from being a kitchen manager at a 700+ plate a night restaurant and having a knife service, to a daily dinner cook at home, I am proud to say these knives will last me for years.Want J.A. My sweet son gave these to me, so I keep the ones which haven't fallen apart yet, but I have purchased a good set of Classic Wusthof knives.Henckels 'International' line (Asian made) ARE genuine Henckels, but you only get the name and not the quality that most people expect from this brand; the 'Classic' line of Henkels knives are much better (but I prefer Wusthof Classic knives--German made). In all fairness, Wusthof has a bottom line, too--the 'Gourmet' line--don't buy it either.
1. All knives should be hand washed immediately after use, dried and put in a safe knife drawer or block; Never soak or put knives in a dishwasher. Wash with dishwashing liquid (no abrasives) and dry with a soft cloth.
2. Always use a cutting board and handle the knives properly to preserve their edges and tips.
3. Quality knives should be honed with a steel regularly--but only need sharpening infrequently. If you sharpen often, either your knives aren't high quality or you are inadvertently abusing them.
That being said:
A. My low-end Henkels' handles began to crack after about 2 months.
B. The rivets corroded and the tips bent.
C. They are not heavy enough for a serious cook.
D. They are sharp from the box, but are not able to hold an edge for long.
E. The bolster is part of the handle, not part of the metal of the blade and tang--annoying feel to it--not attractive.
F. Blade and tang are not forged, but stamped--not good.
I honestly don't know why respected cutlery companies make low-end knives. It can't be good for business--it only lessens their reputation.

This is the best knife and a must have for any kitchen. I not only use it for tomatoes...I use it for everything. A very sharp knife and one of my favorites. I love the tip as well. We have owned ours for several years and love it.Very sharp serrated blade out of the cardboard sheath. Not flimsy. Two pronged very sharp, pointy fork tip useful for moving sliced/chopped items around (into a bowl; off the cutting board). Blade is easily made razor/hair shaving sharp with a ceramic steel.I have 2 Wustof Santoku knives: gifts from family. This tomato knife is of similar quality except for the cheap red sticker. The knife itself is excellent, but to earn 5 stars for a $30 tomato knife, leave the sticker off and laser brand/imprint the handle or leave it off entirely. The blade is marked indelibly; no reason to cheapen it with a tacky red sticker that is starting to peel on the handle.

I was on a knife purchasing kick and ordered the block set of Wustof Gourmet knives, so I decided to purchase this tomatoes knife since I eat a lot of tomatoes and really just liked the idea of it. It's a good knife, it's sharp, and it cuts tomatoes well. I just don't know if it's necessary to have a separate knife for tomatoes because it does not do any different or better of a job than the Santuku knife that I purchased. Again, it is a good knife and does the job well, it just depends on if you have a need or want for a separate tomato knife. If you already have a knife that cuts tomatoes well I don't think this does any different or better of a job. Victorinox Forged 17-Piece Knife Set with Block
Incredibly solid, sturdy, well-balanced feel. As soon as you draw a knife out of the block it has your attention as a serious piece of workmanship. Without any introduction to the set my brother-in-law cut a slice of sourdough with the bread knife, took a long look at the blade, felt the balance a bit, and proclaimed "I think this is the first bread knife I've ever seen that I would actually use for self defense." Nobody's suggesting these be used as a weapon of course, but the comment does speak to the quality. Even the shears are really remarkable.The knives are wonderful to use as well. The factory edge on the blades is mind-boggling. They cut almost like straight razors but without the need for constant sharpening. When I first realized the steak knives weren't serrated I was a bit worried but having used them I can say they cut far better than any serrated steak knife I've used and will be easier to keep sharp.
The complement of included knives is very balanced. At first I thought the chef's knife might be a little too big for most tasks but it handles so supremely that it is still easy to use for any size job from chopping garlic up to slicing / dicing large onions. This was a big deal to me to be able to have a single go-to knife for general meal prep. I also recently used the boning knife for a bone-in honey baked ham and effortlessly had perfect slices down to the bone. My wife is crazy about the veggie knife. No matter what job you have there's a choice in this set to make your job easy.
The bamboo block looks surprisingly nice in person. I think bamboo can sometimes be written off as a cheap / eco-trendy option, sometimes rightly so, but this in no way feels like some temporary "oh that's the one that came with the set" block that I'll be replacing in a couple years. The bamboo is very well put together, very nicely finished, and very solid. And without the slightest hint of cheap about it the bamboo is extraordinarily beautiful. If you want oak and nothing can change your mind that's your opinion, but for my money this particular bamboo block leaves nothing to be desired.
I chose this set over similar Wusthof and Henckels sets when I found out they included stamped steak knives. I know there are some fine stamped blades out there but I personally see forged blades being in another category and although the sets with stamped steak knives cost less up front when I looked up the cost of the set of matching forged steak knives I would need someday if I got the other brand I decided it was silly to spend that much money on a knife set with the intention of having to buy part of the set over again.
The Victorinox selection is also a bit more comprehensive than the competition's in my opinion. I don't feel like I have to add a santoku or a nice chef's knife or a boning knife or have a couple more steak knives in a drawer because everything is included.
The only "con" to this set is the price. All I can say about that is that I think it's worth every penny.

I gave this item four stars only because it's the first cheese knife I have ever owned. Perhaps other, more expensive, cheese knives might perform better. The knife is a bit lightweight, although it performs very ably on all but the hardest cheeses (I switch to a chef's knife to cut those). This shouldn't be surprising, because F. Dick calls this a "Soft Cheese Knife." But from my experience, this doesn't mean just Brie or Camembert. I use this knife to slice cheddar, co-jack, gruyere, etc. This knife feels a lot like my Victorinox 6" utility knife--especially the plastic handle (that's not a bad thing for me; I love my Victorinox 6" utility knife). My wife and I have been using this 13-piece set of Forged Synergy knives for about 8 months, and we couldn't be happier with them. They are well made, well-balanced, have beautiful handles, a nice finish, and hold a very sharp edge--we've sliced tomatoes with all of them. If you're buying your first set of fine knives, these WILL hold up to the Henckels reputation for quality.Now regarding what some others have said, I'll just add my two cents. There is a "Forged Synergy" and a "Fine Edge Synergy" series, and the main kitchen knives in those sets are NOT the same (though the steak knives appear to be so). The forged series has a metal tine that runs all the way through the handle with the black grips riveted on. The J.A. Henckels International Fine Edge Synergy 13-Piece Block Set is totally different--see the Amazon photos and descriptions for yourself. Yes, this Forged Synergy set is also made in China (not Spain or Germany like some of the more expensive Henckels sets), but the quality is still excellent and should far surpass most users' expectations.
Regarding rust spots, we've had none. However, there are two main types of stainless steel: one is harder and slightly less stain resistant; the other is more stain resistant but slightly softer. That means that you give up a little stain resistance to have a knife that holds a sharper edge longer. I think that's much more important than having to clean an occasional rust spot off if it were to occur.
There are only two minor faults I find with this set (that didn't stop me from buying it, however). The kitchen shears are excellent quality and cut great, but the two parts should be easily separable for cleaning purposes. You'll see this in newer shear designs, and it's not a feature that would add to the cost. Also, the black finished knife block will eventually show wear and tear from missing when inserting knives into the slots. I'd have prefered a standard maple block. Lastly, for a few dollars more, I'd recommend the 16-piece version of this set which includes three more knives for about the price of one more (J.A. Henckels International Forged Synergy 16-Piece Knife Set).I've worked in professional kitchens in my youth, so I know good knives and what to expect from them. My wife and I received these as a wedding present after registering for them, and though we've only had them 6 months so far they have been awesome. The knives do fit in the block just fine, contrary to what I read in another review. They have not rusted, also contrary to what I've read. The have a great balance on the blade, they handle extremely well, and they hold their edge for a long time before needing sharpening. The only complaint I would have about the set is that it didn't include every knife I could ever need, but the block does have extra slots in it and that's why I'm looking at Amazon.com today to add some more knives to the set. I would suggest picking up a bread knife at the same time you get the set, it only has a short serrated utility knife in it. Otherwise, I would highly recommend this set.

I want a steak knife to cut well, which is a function of edge and ergo-dynamics. These deliver. The blade is great, and as i own other Wusthof Grand Prix knives, I know they will hold an edge and re-sharpen well. The balance, weight, and feel of the handle are just right for me. Finally, they just look good; clean and elegant design.There are more expensive steak knives, and there may be better ones, but these are plenty good. These steak knives are a tremendous improvement over our old set. They have a high quality and balanced feel and, of course, are very sharp. They nicely match our kitchen knife set of the same brand/model. Only issue (small) is that one has to look close to distinguish a steak knife from the 5 inch utility knife in the kitchen set.
