Color Coated Santoku Knife

Color Coated Santoku KnifeI got this as a gift for my husband and he really likes it! The knife is really sharp and cuts through fruits and vegetables very easily. It's not really an issue but the knife is fairly small and probably works better for smaller hands. Would recommend this knife.

The knife is sharp and cute but it is very small. The handle is even small and doesn't fit me very well.

I ordered this for my wife after she used one on a visit to our friends in Arizona. Perfect tool to slice tomatoes for sandwiches. Smooth cuts without crushing the tomato makes thin slices a breeze!

This is a fantastic knife! I must admit that I have become a total Pampered Chef snob in the last six months or so as everything is just so worth the price. This item is no exception. It is the perfect size and works wonderfully. I have just ordered an extra one as my husband gets cross if our current one is in the dishwasher when he "needs" it.

Wusthof Classic Gourmet 3-Piece Knife Set

Wusthof Classic Gourmet 3-Piece Knife SetThere are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This set includes an 8 inch chef's knife, a 3 ½ inch paring knife and a 6 inch sandwich knife.

The 8 inch chef's knife, is a great knife. Wusthof offers four sizes of chef's knives in the Classic line, 5, 6, 8 and 10 inch. For most home cooks, I think the 8 inch knife is the best choice. The 5 and 6 inch are a bit small for bigger jobs, but the 10 inch is too big for most jobs. While the 8 inch isn't perfect for all uses, if you are only buying one size chef's knife (and most people only buy one), this is the one I would recommend.

As for the 3 ½ inch paring knife, this knife falls into the category of overkill for me. Most cooks will get by just fine with the 4 ½ inch utility knife. There is really no notable difference in size for the vast majority of applications between the 3 ½ inch paring knife and the 4 ½ inch utility knife. I prefer the 4 ½ inch utility knife, but the 3 ½ inch paring knife will do the trick.

I have found very few uses for the 6 inch sandwich knife. I prefer the larger size of the chef's knife or the smaller 4 ½ inch utility knife. This knife is just the wrong width and length for most tasks.

This set is a good deal; however, if compiling a set myself, I would include the chef's knife, the 4 ½ inch utility knife, and the 9 inch bread knife. Judge for yourself.

Wusthof makes the best knife blades in the business, and in my opinion the best quality knives. Cheaper knives generally dull more quickly, and some never get truly sharp at all. Wusthof knives, in contrast, get clean, exact cuts every time, and are a joy to use.

The "Wusthof Classic" style of this set, with the three rivets attaching the black composite handle pieces to the full length tang of the blade, used to be the only style of handle Wusthof made. Wusthof now makes several other styles, including the slightly less expensive "Grand Prix" line with a molded handle, and the much more expensive "Culinar" line with stainless steel handles. If you have money to burn, you might want to look at the Culinar line, but for most people, the Wusthof Classic knives are likely the best tradeoff between money and quality.

The three knives in this set are the ideal knives for a brand new cook with no existing kitchen equipment. The chef's knife and the paring knife are needed in any well equipped kitchen; the "sandwich knife" is a compromise that can substitute, albeit imperfectly, for any of three or four other special purpose knives.

Amazon currently lists the Wusthof classic chef's knife in six different sizes; the 8" blade size is one of the sizes I own, and it works well for almost any cutting task in the kitchen. There are times when it feels like a larger size might work even better, such as when dealing with a large roast or turkey, but the 8" always seems to be sufficient in the end; there really aren't any times when I want a smaller chef's knife for general purpose use.

Paring for example, peeling potatoes is more of a special purpose task, for which a specialized knife is really superior. The 3.5" blade length in this set may seem short, but it's short for a reason. Often while one is using the paring knife in one hand, one is holding the object being cut in the other. The short blade length makes it easier to avoid stabbing oneself while maneuvering both the knife and the object.

The 6" knife is a little different. Unlike the other two knives in this set, the 6" knife is really only perfect for a very limited set of tasks. Its strength is that it can substitute, if a bit imperfectly, for a variety of other knives that may be missing from the kitchen of a brand new cook. For example, it can be used for utility tasks that require more than the 3.5" blade length of the paring knife which is to say, most utility tasks if the cook doesn't already have a 4" or 4.5" utility knife. It can also be used, in a pinch, when what the cook really wants is a second chef's knife for example, to cut fresh vegetables for a salad when it wouldn't be hygienic to reuse the big chef's knife that was just used on raw meat. The 6" knife won't be perfect for these tasks, but it will work, and will be much better than no knife at all.

As the new cook collects more knives, the 6" knife will likely be used less and less. It won't ever become completely unused I just used mine this evening, despite having half a dozen other Wusthof knives to choose from, because the 6" length is perfect for slicing a tenderloin roast but eventually it will become one of the lesser used pieces in the set.

That may make the 6" knife less than cost effective for a cook that already has an established set of kitchen tools. For such a cook, one of the other sets might be better perhaps the two piece "starter" set with the chef's knife and the paring knife, along with perhaps a Wusthof sharpening steel. For a brand new cook with no kitchen equipment, though, this three piece set is close to perfect, and it is the set I started my Wusthof collection with, 20 years ago.

I loved these knives right out of the box. They came sharp and feel great. I was finally moving out of the parent's house and needed some knives. With the free block and steel from Amazon you can't go wrong. I looked at all the sets for weeks and in the end decided that I would rather just buy what I needed, instead of settling for what came in the sets. I have found that I am rarely happy with prepackaged sets of anything. Therefore, this was a good starting point to which I added a bread knife and plan to add pieces if I need them (I doubt I will, but I may just fill the block :). I bought these sight unseen from Amazon and could not be happier.

Update! June 2011 and still going strong! Daily use, occasional sharpening, wow.

I got so tired of dull knives, I took the plunge and got Wustof. I was surprised how often I use the paring knife. These knives are perfectly balanced, and made with the best construction. The blades are chromium/molybdenum steel, probably the best knife steel available.

I trusted this tried and true brand, and it paid off. These knives stay sharp. They feel like a natural extension of the hand. They're beautifully finished. I was so excited to use them. I took 16 random poor quality knives to the church thrift shop. As it turns out, these three knives are all I need for cooking.

These are lifetime investments. I wish I hadn't have been so cheap for so long.

If I could, I'd give this product 10 stars, or even 20. I bought these knives for my boyfriend for his birthday, we are both in college and have recently gotten very involved in cooking. We did much research and found these to be the best cooking knives (we watch Food Network and virtually everyone uses these knives) and, we were definitely impressed. They are nothing short of amazing! They cut through everything like butter, it makes cooking such a breeze, they are easy to handle, and I've heard they last for forever, judging from everyones reviews on here. I only reccommend these knives, they are lifesavers and make cooking that much more enjoyable. I will never own any other knives other than Wusthof. Also, this set is a GREAT price for what you are getting! Absolutely amazing. 10 stars if I could.

UPDATE: I have had these knives for over a year (I know it isn't a super long time, but it's enough for an update) and they still look brand new. We use these knives daily and they work wonders. The only thing you need to do is get them sharpened every once in awhile, depending how often you use them.

These are serrated steak knives that work very well. They are more like a table knife than a sharp pearing knife. That said it is very sharp and cuts through meat well. If you are looking for something that will slice extremely thin and clean and can be sharpened this is not your knife set. But if you are looking for something better than a cheap seak knife set and can go in the dishwasher these are just perfect. I am very pleased, we have been using them for over 6 months now and they still look and cut like new.

Alton's Angles by Shun Angled 5 1/2 Inch Santoku Knife

Alton's Angles by Shun Angled 5 1/2 Inch Santoku KnifeThe knife I received is not the knife shown on Amazon.

It is a very nice Shun knife, but it is not an Alton's Angles

knife. The knife shown on Amazon had Alton Brown's logo on it, this one does not. I bought this gift as a birthday present for my husband who is a huge fan of Alton Brown's. I was told by customer service the Alton's Angles knife is not available anymore. If so, Amazon should not show his image on it.

First off...take the stock picture of this knife off the web

my wife is a huge fan of alton brown even has his shun logo tattooed on her four arm

i bought this knife thinking it had alton browns signature on it.

i just got it today beautiful knife but, no alton brown im very unhappy about that.

Shun presents the Alton Brown Angle santoku knife. It is very well crafted and rivals my Henkels in heft and feel. The blade is beautifully crafted steel, and has ridge lines embossed that give it the look of folded damscus steel. This is an extremely sharp blade. The angle of the handle keeps your knuckles from hitting the cutting board. I look forward to a lifetime of use from this quality piece.

Great utility knife for everything from dicing onions and julienning vegetables to trimming meat.

Use it much more than my 7-inch Shun Santoku.

Keeps a sharp edge, but needs a sharpener designed for the different edge angle of Japanese knives.

Arcos Maitre 7-Inch Granton Edge Santoku Knife

Arcos Maitre 7-Inch Granton Edge Santoku KnifeReally good product from a good company. It's not heavy, actually even lighter than I expected. The grip is good and comfortable even for people with big palms like myself.

It's not forged so it's probably not the best chef's knife you can find but it's very decent for the price and fun to use.

One thing I noticed and was weird but honestly I don't know if it's me or it should be like that the grooves on the knife are on the left face of the blade and if you're right handed then you should hold whatever you chop with your left hand. since the grooves are on the left face then the "non sticking" benefit happens in the side you don't need it... Again, I don't know if it's a problem or not but I got used to it and I enjoy working with it.

Would definitely recommend it to friends and family.

Lansky Sharpeners (LANLSTCN045) Sharpener/ Knife Combo

Lansky Sharpeners Sharpener/ Knife ComboWe bought this Lansky "Quick Edge Sharpener and Knife Combo set" locally for about what it is being offered here on Amazon (before shipping) and, for the amount, it is a good value. Here are my observations:

* Sharpener

+ Works Well; just a few light passes produces a very sharp edge on most knives

+ Safe; almost impossible to cut yourself if using this correctly

+ Reversible\Replaceable Carbide Insets

* "Free" Knife

+ Good Quality; actually much better than I expected

+ Holds An Edge; good blade stays fairly sharp

+ Lock Blade; nice because I like to keep my fingers attached to my hands

+ Small Size; 3.25" closed, 5.5" open

+ Pocket Clip

The sharpener was the main reason I picked this up, but the knife turned out to be a good bonus.

Alaska ULU Knife Cultured Moose Antler Handle w/DVD

Alaska ULU Knife Cultured Moose Antler Handle w/DVDThis Ulu is much more of a display piece than a cutting tool. It looks nice but as a usable knife there are two serious design flaws, 1) the steel used to make the blade is so soft that it cannot be sharpened at any angle without leaving a huge wire edge (the sharp edge curls over leaving a lip on the blade instead of a sharp edge), 2) the blade is only single ground (beveled ground on only one side, flat on the other) which means when you cut anything firm or thick the cut will veer to one side instead of cutting straight through. The single bevel is done to save cost and makes proper sharpening impossible. It is so poorly made (soft steel and cheap single bevel) as to be useless as a cutting tool. I am only giving it two stars as a display piece, but as a tool it would receive only one star (lowest rating).

Very nice.It was the perfect gift, exactly what my uncle wanted. He lived in alaska and really liked the handle.

Magnolia Yanagi Knife Sheath 270mm (10.6")

Magnolia Yanagi Knife Sheath 270mmHandsomely made and a perfect fit for my 270mm Yanagi even though it was from another manufacture. Best way to protect the oneself from the razor-sharp edge of a Yanagi and to protect the edge from damage during storage.

Excellent value!

Pure Komachi 2 Series Scalloped Sandwich Knife

Pure Komachi 2 Series Scalloped Sandwich KnifeI have a four different Pure Komachi knives. This sadwich knife is the most unusual and practical. It just can't be beat for slicing bagels. After cutting the bagel it serves as a fine spreader for the cream cheese. It's also great for narrower breads like baguettes.

Mine is not purple, but I dig the purple color and sent a few to my family members, who use them with delight.

This knife, along with all the other Pure Komachi 2 knives, are a great value. After using sub-standard knives for several years, I had $50 in birthday money to get one nice chef's knife. The kind sales associate steered me towards these knives. For my $50 I was able to pick up the hot pink chef's knife, the bright orange bread knife, and this lovely purple sandwich knife. I even had money to spare! I couldn't be happier with the sharpness, performance, balance, and sturdiness of these knives!

Think I bought this at Target, but it's hard to mistake the knife.

I love it! After tons of crappy knives it was so nice to have one that actually sliced bread without squishing it. It's easy to clean, just running it under the water is usually enough. And it's easy to find in a drawer or utensil stand. :)

Read Best Reviews of Pure Komachi 2 Series Scalloped Sandwich Knife Here

I have had a Pure Komachi for a few years now. Mine has an orange handle but it is essentially identical to this knife. I have never put it in the dishwasher as with any knife, from the cheapest to the best, dishwashers are not good for knives. At the very least the action of the water dulls the blades. I imagine that some people had issues with the coating wearing off as well from being less than careful when it comes to cleaning.

I have had no problems whatsoever. When we first got it, it was so sharp it was a little scary. After a year or so of regular use it dulled to extremely sharp but no longer scary. I have never had it sharpened and it works great on bagels, cutting sandwiches, long breads like Italian or French bread, all types of rolls, etc. Regardless of whether what you are cutting is hard or soft it does an equally good job.

It's very easy to clean so a little soap and water on a sponge, dry it with a dish cloth and in 20 seconds you're done. I found the size to be perfectly suited to cutting bagels without cutting yourself. I will occasionally use it to put mayo on a sandwich but then I have to wash it, so most of the time I just use it for bread and bagels so it gets washed only occasionally.

It's definitely our favorite knife. We use it all the time every day. Would I carve a turkey with it? No, but I wouldn't race in the Indianapolis 500 in a minivan either. Nothing is good for everything. This knife is excellent for a variety of functions. Use it appropriately, take reasonable care when cleaning it and it should last you 10 or more years. Ours is 3 or 4 years old and shows no signs of wear.

Want Pure Komachi 2 Series Scalloped Sandwich Knife Discount?

I just love this knife. I also have the 6 1/2 inch chef knife and these two knives are by far my favorite. How convenient and time saving for one knife to perfectly slice the bread, the tomatoes and any other topping as well as spread the dressing. I love the different colors as soon I open knife drawer there is no thought in picking the one I want. As someone else stated usually, if not using a spread a quick rinse is just fine. If I use a spread I just use a soapy sponge, never leaving any knife soaking. Washing sharp knives in the dishwasher can be hazardous to the knife, the dishwasher and the cook! It is too easy to reach into a dishwasher and get a nasty cut. Sharp knives can nick plastic-coated wire shelves and other utensils. The force of the water can dull knife-edges by pushing them against shelves or utensils. The combination of hot water and the chemicals in dishwasher detergent can leave stains on stainless steel cutlery that comes in contact with silver or silver-plated flatware or copper. (These stains don't effect the knife's performance.)

Dexter-Russell Chinese Cleaver (8" x 3 1/4)

Dexter-Russell Chinese CleaverThis "Chinese Cleaver" (as per Amazon's INCORRECT description, see below for explanation) popped up in the search for "meat clever" the type I wanted to get. I saw 5/5 rating based on 10 reviews. One review actually describes this as 'a heavier "meat" type cleaver, not a veggie one'. I guess this is why it popped up in my search. So I went ahead and ordered it.

Now I am creating this review to spare others this mistake: the packaging says "Traditional Chinese Chef's Knife", not "Chinese Cleaver". There is actually a label on the blade that says "this is a traditional style Chinese chef's knife! do not use as a cleaver! Avoid hitting hard materials and surfaces or the blade will chip and nick".

This is actually true: this knife is the type that has the blade that is about 2-3 mm on the spine, that is narrowed with straight sides to razor sharp edge. Due to this, it will be an excellent knife for slicing, but it is not for chopping chicken bones!!! If you want a meat cleaver, look elsewhere. If you know, master, and enjoy traditional Chinese slicing/dicing techniques, this is a great chef's knife choice!

Again, this is not a veggie cleaver (although can be used as one), this is not a meat cleaver, this is a Chinese style CHEF'S KNIFE it is a replacement for your normal chef's knife, a primary knife for those who know how to use it.

A review is not a review without some feedback about the product. :) So here goes some more.

The knife is GREAT razor sharp, high quality, precision-crafted, and it looks great. It is made in the USA! I am contemplating keeping it as a spare chef's knife and veggie cleaver.

This cleaver IS as good as they say. Sharp, but steady. If you cook Chinese and cut things in the Chinese way this is the best! But a lot of Chinese don't know about it. After a chef friend tried mine, she ordered 4 for herself and friends. I'm ordering 3 or more for family and friends!

Buy Dexter-Russell Chinese Cleaver (8" x 3 1/4) Now

NOTE: these are original reviews

haven't tried cooking with it yet but as soon as i took it out of packaging (which consists of two pieces of brown cardboards by the way, kudos for the environment), I saw the problem with the handle. first off it's quite a small handle for a chinese cleaver, and it is also hollow. the blade seems to join the handle with a little metal clamp, and does not seem to extend into the handle. (If you're even half serious about cooking Chinese you should at least get a full-tang knife!)

this handle design not only creates an unbalanced weight, marginal handling, but also could prove fragile in the long run. the blade itself looks really sharp, albeit a bit longer and narrower than traditional chinese cleavers. i'll test it out later and conclude whether it's worth the 35 bucks I paid.

UPDATE: I'm sad to report that the steel is subpar as well. After two weeks of very moderate use (no cleaving) the edge went into jagged shape. Expect to whet it a lot if you're buying this.

Conclusion: those who rated this 5 stars know nothing about a proper Chinese cleaver. The unbalanced handle issue itself renders it useless for fast chopping because you're working your wrist than your arm. I am suspicious if some of them work for the sellers.

Thanks Tofu Jones from MV Trading for reminding me putting up an update

My husband has been looking for a Chinese cleaver for a while. I found this one on Amazon & we decided to purchase it based on the good reviews & the price. My husband loves it. He's very picky about quality so for him to be impressed is a good thing. We were also pleasantly surprised to find out it is made in the USA since that was not mentioned in the description. I have used the knife too. It was a little intimidating at first because of the size & weight, but my fears washed away as I realized how easily it chopped up the vegetables compared to my Wusthof santuko knife. I paid 3 times the amount for that knife! I highly recommend this knife to anyone on the fence about it.

This knife is big and heavy, which is a good thing when you're cutting all sorts of prep for a busy restaurant day or a large banquet. The knife is fairly inexpensive, so when it wears out, I'll just replace with another one or something similar; you can put a real good edge on it if you know what you're doing with sharpening and the weight allows me to carry on with a momentum and rhythm while prepping; you let the knife do most of the work and you just guide it along as you cut stuff up.

So yeah, I was using really light Japanese knives for a while, but they're expensive and, well, light, so I keep them at home and bring big honker knives like this Dexter cleaver to work; the added plus is that you aren't nearly as worried about them being stolen because they aren't all that pricey. Some people might have problems with the handle, but if you hold it in a proper pinch-grip, there should be no issues.

So yeah, this is my go-to knife. It also seems to make the servers more polite, which is a huge plus. Just kidding.

Zyliss Knife Sharpener

Zyliss Knife SharpenerIt's great for getting that extra fine edge to the Zyliss blade, but it doesn't hone and sharpen like other knife sharpeners. The two wheels inside are, I believe, porcelain, and works well with the Zyliss knives because of their thin blades. Still a good product for the price.

Kyocera Revolution Series 4-1/2-Inch Utility Knife And Peeler Gift Set, BlackThis is very sharp knife! Comfortable handle, useful shape of the blade, sharp, makes precise fine cuts. Everything one would expect from a ceramic knife. With all the pros and cons. Kyocera will resharpen this knife for a fee (around $10), but I can't comment on that because I didn't have the knife long enough.

The peeler is also very good, with ceramic peeling blade.

I would definitely recommend this set as an addition to you fine-steel cutlery block.

Love the knife....stays sharp (forever), just not practical for twisting operation (such as deboning chicken), since the knife will break.

I just got mine in the mail today and the first thing I did is start cutting stuff.

I used all of my old cutting knives (7 year old cutco) and compared it against this one... HOLY C>R>A>P!!!!

I effortlessly cut through a raw potato!!! I cut a piece of the potato and laid it on its side (a circular cross section). Then i proceeded to make 1-2 MM cuts across the entire cross section. I had 50 mini fries that were super thin.

Then I started to cut apples the long way (if the core is North/South I was cutting east to west). Basically these slices look exactly what you get from "apple chips" bags. I bet if I let them sit out and dry they would taste pretty good. Also another cool thing: the apples were dead white, they did not start to turn brown and oxidize...this knife is amazing. I'm buying one for my dad for his birthday.

Read Best Reviews of Kyocera Revolution Series 4-1/2-Inch Utility Knife And Peeler Gift Set Here

The knife is great, but the peeler only peels in one direction so is unsuitable for lefties who peel using an outward motion. When I looked at the peeler I thought it would be simple enough to just flip the blade around to make it work for me. Wrong! Whoever designed the peeler designed it so that the blade cannot be reversed because the holes that the blade goes into are different diameters on each side. It's a terrible design decision that'll make me think twice about buying handed devices from this manufacturer.

Want Kyocera Revolution Series 4-1/2-Inch Utility Knife And Peeler Gift Set Discount?

I love these knives (this is my third). And the peeler is pretty incredible; this is the second one I've bought and couldn't be happier with the quality and sharpness. It only allows you to peel away from you, so it's a little tricky for apples but for straight veggies it's excellent.

Mac Knife Superior Paring/Utility Knife, 5-Inch

Mac Knife Superior Paring/Utility Knife, 5-InchI purchases a set of Mac knives about 1975 and we used them so much we wore them out. Ever since, I have been searching for them to replace them without luck until I found them on Amazon. This paring knife is the best I have ever used. We love it.

This is my favorite knife of all. In fact, we bought two of the 5" ones (because each of us always wants to use one, usually at the same time) and one 10" one, and I've given them as gifts too. I love the rounded tip and the overall balance. It does need to be sharpened quite frequently but when sharp is superb for dicing, peeling, and slicing almost anything. I can't imagine my kitchen without it.

We have had these knives for 12 years. They are wonderfully balanced and can stay sharp.

We have the paring knife, utility knife, bread knife and fileting knife. I wouldn't consider any others at this point.

Miyabi Fusion 600D 3.5-inch Paring Knife

Miyabi Fusion 600D 3.5-inch Paring KnifeI was worried about this knife, but it seems to be doing fine. Just to let you know why I was worried about it, I wanted Japanese style knives. I was doing some research and came across a great deal on some Miyabi Fusions. I wanted to buy all 4 Knives that I was looking at, but the Paring knife had a crack in the handle. This was on clearance at Sur la Table. So I was informed that another Sur la Table had one was well. When I went to grab it, it had the same crack. This made me worry about the quality of these Knives. So far they have held up, but one of them seems to already be losing it's edge after a week of use, but I guess that's what I get for buying clearance floor models. My Parer was bought from Amazon and is super sharp.

Shun Premier Essential 7-Piece Block Set

Shun Premier Essential 7-Piece Block SetYou could spend more for knives but few people would ever need anything better than these. They're super sharp, beautifully made and perfectly balanced. I'll enjoy these knives for the rest of my life, I'm sure.

This set of kitchen knives are truly in a league of their own. After having tried a multitude of Western and traditional Japanese knives, this is without a doubt, the MUST have addition to any kitchen. This adds a whole new dimension to cooking. With the right care and use, these knives are sure to last a lifetime. The blades on each knive cut effortlessly through any food item. Trust me, I have put the knives through their paces! Even surprised with the bread knife not a crumb is dropped slicing through it. I would challenge any review that has any fault with these knives. Even the price. You pay for what you get, and that is, an unrivalled kitchen utensil.

I have been using this knife set for a little over a year now. I purchased these to treat myself to a truly nice set of knives after years of using an "ok" set of knives. I almost always prize function over form when making purchases, but these knives are so attractive that I allowed myself to choose this set based primarily on looks. And I have not been dissapointed in that regard. After a full year of moderate use, they still look spectacular. These are beautiful knives. The chef's knife and the bread knife are the stars of this set. They are nearly perfect. The are both extremely sharp, well balanced, and comfortable in hand. The kitchen shears are also fantastic. They are very heavy-duty, very sharp, and the separable halves make clean-up a snap. However, these knives are not perfect and I do suffer from a bit of buyer's remorse. The blades on these knives are very, very thin. This is good for ease of cutting, but on the medium size knives (like the utility knife), I find the blades a little too flexible at the tip. I have bent the tip out of true on a few occasions. On the medium and smaller size knives, I find the handles a little too small for my hand (I'm an average size adult male). I also find it odd that the paring knife is shaped like a miniature chef's knife. It is good for small chopping tasks, but this limits its maneuaverability in delicate tasks.

Best Features:

-Beautiful knives with both Damascus steel and hammered finishes

-Pakka wood (resin-infused real wood) handles combine the natural look of wood with the easy maintenance of plastic and are more durable than either material alone

-Razor sharp blades ... so sharp that those who only cook occasionally may find them intimidating (like my wife, who does find them intimidating)

-Good edge retention

-Easy to maintain/hone edges (note that the 16-degree angle is different than typical western knives)

-Outstanding craftsmanship

-Very durable if properly cared for

Drawbacks:

-The blades on the medium sized knifes are too thin

-The handles on the small and medium knives are too small for my hand

-The miniature chef's knife shape of the paring knife limits it's usefulness

-Knife block doesn't seem to be designed for this set of knives

-Kitchen shears don't match the rest of the set (they are standard Shun)

-Expensive

Summary:

This is a very good knife set, full of beautiful knives. They are razor sharp and perform chopping/slicing tasks very well. I wanted to love them. But, there are enough drawbacks that I would probably make a different choice if buying again.

Pros:

Extremely Sharp (obviously)

Great craftsmanship (except... read below)

Beautiful knives (not as dark toned as the photos)

Good ergonomics

Wood block is heavy, sturdy, and aesthetic

Shears are fantastic and are separable for easy washing

Cons:

Shipped the chef knife with 2 obvious chips in it. I was planning to return it, but my girlfriend had already used and washed the knife, so I shrugged it off. After some extensive use (despite frequent honing), the chips are creating small snags in the blade which can only be made so right by honing. I will need to sharpen soon after 1 month of ownership.

The utility knife shipped with a bend in the tip, and a large scratch on the metal inlay. The bend was easily fixed, but nothing I can do about the inlay.

Recommendation:

I highly recommend this set for people that don't mind a little maintenance for a sharp blade.

I do not recommend these knives for households with touchy feely children.

I invested in a nice bamboo block and bamboo oil, I recommend owners do the same. I also recommend getting a few cheap knives for brute force, inedible materials and any harder materials one might use a knife for. Hone frequently.

For those of you who are a bit hesitant to own a sharp set of knives, I found one of the best features of this knife is that the sharpness gives you time to respect it. The blade cuts so easily and quickly, you can take your time with whatever you're cutting, and still cut faster than the average knife. Work slow. It will still cut fast and give you more comfort with the blades.

ONLY hand-wash these knives with a gentle citrus free soap.

These are first class blades. They are thinner than US/European blades I have used and this makes them more maneuverable. Thin slicing a tomato or onion is a breeze. Although the blades are thinner, the knives have plenty of heft are a extremely well balanced. Handles fit hands near perfectly. The photos here do give an idea of the beauty of these knives, but they are even nicer up close. The only drawback I see is that there are limited types of knives available in the "Premier" style.
