I would call this a commercial or restaurant grade cooks tool, for someone who appreciates function over looks. Not a fancy shmancy German brand or designer knife with Elk horn handle. Why waste your money? Very sharp and ready to cut out of the package. Please don't put it in the dishwasher if you want the maintain the cutting edge. Just wipe it down with a paper towel and put in back in the wooden rack or blade guard. This is true for any quality knife. The length is good for a full loaf of bread, and the raised handle is neat for keeping your knuckles off the cutting board.

Good knife and a great price. Makes a great gift for someone who appreciates good cooking tools.

Back working in a restaurant many years ago we used knives like this all day on the sandwich station. I've missed a good serrated blade where I do not have to drag my knuckles near the cutting board.

I decided to get one as a utility tool because I got tired of finding/rescuing my good knives in the dishwasher before I could hand wash them.

You'll get great performance and you don't have to pay >$70 for it. It comes razor sharp, and from experience these things hold a good cutting edge for a long time provided you do not abuse it.

I got the 9" size so I can cleanly go down through a sandwich in one or two strokes, not have to saw through something like I've been doing with a 6" Henkel tomato knife.

Its not fancy, but it works!

No, it wont, my knife now has a nice ding in it. But if you dont use it on bones, it works very well. It will go through semi frozen meat and chicken easy. I have used it to quickly halve, peel and cube up cantalopes, pineapples, honey dew etc. Nicely balanced, doubled sided edge.

Cutting into squash and cutting through bones used to be difficult. Everyone should have an Asian-style cleaver in their kitchen. This one is good quality and is made in Japan. I almost feel like it should be on display, it's so pretty.

This is the knife that I always reach for when chopping vegetables. It has a good weight to it and it is not too large. It is so much easier to chop when using this knife. I'm glad I purchased it. It did not disappoint me at all.

I didn't try that to cut thick bones like leg bone but its absolutely a sharp one so you must be careful while you're working with. It's wooden handle is also good and made from a quality wood. Since the blade has decent height even my wife uses that frquently for normal kitchen usage like chopping grocers and so on. I reckon it's quite pricy but worthes to get a quality made in Japan cleaver.

I love flexible mats for cutting since they make transfer of prepared food to your bowl or pan so easy. These mats definitely fulfill that purpose. My main concern is that knives cut into the mat a little more easily than some mats that I have previously used; therefore, extra care in cleaning may be necessary. All-in-all I am reasonably satisfied and would recommend them.

I like the flexible mats because they make it easy to scoop chopped stuff into a pot, then are easy to thorougly wash. I am using a second one under my tea kettle as an easy clean beverage prep area. The one I cut on is starting to show scratches, but then I have had it a few months.

Chef Works ECHR-WHT Madrid Egytian Cotton Chef Coat, Size 40This is the perfect Egyptian Cotton Jacket for when you need to look extra nice in the kitchen. I have two of them that I maintain and use when I stage (work a night for free to experience the culture in a certain kitchen and learn their techniques or as a second step to an interview). They're great for that as they look very professional but don't have any colored trim. I think that trim makes you look like your competing with the head chef.

These jackets are the perfect weight to stay crisp and remain light enough to keep you cool. You will need to starch and iron them, and when you do please keep an extra eye on the details. They will give you that extra push that you're dressed well without showing off.

The only bad thing is that they are spendy and they will stain. Of course the finer the cotton the harder it is to get stains out but I've found that dropping them in an oxyclean soak as soon as you can after use and working them a bit over a couple days in the soak will prevent almost any food stain. Of course there is no cure for a metal stain from your honing steel or for carbon.

Overall great jacket. Every cook should keep one pressed and ready for that impromptu opportunity in your dream kitchen or the brunch that you have to cut prime rib in the dining room.

I love everything WMF, but this one was a disappointment. I have had a peeler from WMF for over 2 decades, and thought to simply buy a new one. It is a waste of time, and money. It is very hard to use, and semi works to peel Tomatoes, but if the tomato is not firm forget it. I will keep my old one for 2 more decades.

This is the best peeler I have ever used for peeling yams and potatoes. I struggled to peel tough Garnet Yams using a paring knife or other peelers I tried. It took a lot of force which increased the risk of slipping and cutting myself. With a sharp serrated blade this peeler just glides through yams and removes a thin shaving. All you need is a light touch and very little effort. Since it's all stainless it's easy to keep clean and rust free. Expensive as peelers go, but well worth the price.

Fleur de Lys 6 Laguiole Rosewood handle knivesFirst of all: a true laguiole knife has three distinctive features: 1) the bumble bee on the top, 2) the letter L enclosed in a circle near the heel of the blade and 3) the rivets in the handle are in the shape of a cross. These knives are not laguiole knives though they are made to look like them. That said, these knives are decent. The rosewood handles are attractive though it lacks any burl and knots; the wood is pretty basic and plain -higher end knives use wood with more variety and grain. These are pretty much the straight grain running from blade to butt of the handle. The steel blade is average, reasonably straight, sharp and polished. I thought these were fine until I happen to handle a set of higher end steak knives in a store over Christmas. The polish and shine on the $200 set of knives I looked at is far greater and more reflective than these.

Overall, these are fine if you 1) need a lot of knives or 2) don't really want to spend the bucks to get a more decorative set or 3) don't know where Laguiole is and don't care! In my case, I got what I paid for and what I wanted. My comments are basically to say if you want high end knives, these are not for you.

I bought the knives after reading that a chef who used them personally recommended them. The knives are elegant and very sharp.

We were disappointed to see the "Made in China" sticker on the box and feel the very light weight of these knives compared to those that we bought in Thiers, France. The design is similar but they are a dramatically inferior product. They are probably only somewhat overpriced for what they are, but they're not Laguiole knives.

I had pretty much the same experience as Kecia Kesler. The knife case was coming part on two sides of the bottom edges. The craftsmanship was so so. And originally I was led to believe that the product was French made, but when I received the item, there was a made in China sticker on it. I am returning the item, I don't think it's worth the ~$100 I paid for it.

Furi Rachael Ray Gusto Grip Basics 3-Knife SetI'm not sure why a couple of people said they're not sharp... perhaps it was a fluke in the product they received? They are extremely sharp, and the case that they come in is very nice, although I wound up purchasing a 12 inch magnetic knife bar to display them on because the case just took up too much space in my tiny apartment's tiny drawers. They are also very comfortable to use, the material the handles are made of is very nice. I use the Santoku far more than the other two, but they are perfectly nice as well. I plan on purchasing Furi's knife sharpener to maintain them. Overall, it's a very nice set at a reasonable price, and I would definitely recommend them.

I'm a cook, and I like these things. I've had no trouble keeping an edge on them, I like the grip, I like the magnetized case, and I like the fact that if someone walks off with one, if someone uses one incorrectly and damages it, or even if some well meaning soul trashes one in the dishwasher ar work, I can either bring it back nice and sharp again, or I can get a new one for just a couple of bucks. They're not really like my old Forschner or Wusthoff "Work horses," but for what they are, they're a nifty little set, and they're FINE for any kind of home kitchen use. I'd buy my Mom a set... and I don't let my wife touch mine. 'Nuff said.

The factory edge left some to be desired. After a few hours of grinding and honing I was able to get a razor edge that holds up. VG-10 is hard steel but can be worked with. I used a "Lansky" system that keeps the stones at a constant angle. I had to use 20 degrees because that was how the blade came. Had I lowered to 17 degrees it would have taken much longer. This is good Japanese steel but the knife was built in Taiwan. The blade pattern is good, allowing clearance for one's fingers and the knife has a comfortable grip for long term slicing and chopping. The extra width makes it a scoop as well. Once I got this blade tuned in, I now like it a lot. A good buy for someone who likes a project, probably not so if perfection is expected out of the box and one is not skilled or inclined to put in some work.

Beware I got this as a gift and it worked beautifully for three months. Only sponge cleaning, no bones (we rarely even eat meat). Then, after cutting some fresh brussel sprouts, a section of the blade edge broke off! Total waste of money and serious disappointment.

Core Bamboo Magnolia Collection Cutting Board, Largei just received this product. i researched to try to determine its origin. the company boasts about its "social responsibility" but fails to mention where the products are produced anywhere on its site. upon receipt, i saw on the label that it was made in china. what a bummer. many people may not care, but many people do. i wish the company would be more up front about where the product is made. also, when unwrapping it i found it to be frayed with many small "splinters" of wood sticking up from the surface. maybe this will fade with use and mineral oil maintenance, but i'm pretty bummed about the chinese production. with that said, the price is right (should have been a warning sign) and it's lightweight.

When shopping for a cutting board, there are several factors you want to consider: Material, Size, Shape, Upkeep.

Material:

There are several to choose from, but Wood is the best if you care about your knives and your chopping arm. Wood is the easiest on your knives because the blade will sink into the wood instead of dulling on it (as if you were on granite/glass). It absorbs the shock of the impact, unlike granite/glass, which can be quite jarring to cut on. Wood also has natural antibacterial properties. There was rumors going on for awhile about the dangers of wood harboring bacteria, but after extensive research, they found out the wood actually seems to kill bacteria naturally. Scientists were not able to recover bacteria on a wood board after an hour, yet they could recover bacteria from plastic after days... There's extensive material on this, so I'll let you research more of it on your own as I continue the review of this board.

The advantages that a plastic cutting board has over a wood board (it's easy to clean, dishwasher safe, light, easy to store) goes downhill over time whereas the advantages of a wood board deteriorates very little over time. The biggest reason for this is that a plastic cutting board is only "cleaner" than a wood board when it's brand new. As soon as it gets knife scored, those little crevices harbors bacteria. People say that can be taken care of by scrubbing with soap but think about it, you can't FULLY clean your teeth by just brushing! Why? Because brushing does not get into the crevices between your teeth, that's why it's crucial to floss. Now think about how much smaller a knife cut in plastic is than the crevices between your teeth. Microscopically smaller, yet large enough for lots of microscopic bacteria to live in. Then some people say to soak the plastic board in bleach water. This doesn't work either because of the vacuum effect and water's surface tension. You'd need to be able to force the bleach water INTO each knife score to rinse out the bacteria in there. Water will not force it's way into a vacuum like that on it's own (what you're doing when you simply dunk it into a container of bleach water). Bottom line when it comes to plastic vs wood wood has natural anti-bacteria properties that does not diminish over time, and a knife scored plastic board does not. Even all studies and people recommending plastic over wood tell you to toss the plastic board when it becomes badly scored.

Size & Shape:

I think that this 18 x 12 x 1.5 size is the smallest board you can consider if you prep meals for 2 people. I like having a board that is large enough to chop on, and then move items over to little piles off to the side while I chop something else. The rectangle shape allows me to do this better than a square or circle. An oval shape might work, but it would be harder to store since you can't stand it on it's side. There are larger and smaller of these John Boos boards so there's plenty of choices. I would say this size is the smallest to consider for a main prep board. I prefer the 20 x 15 x 1.5" as my main board as that board is just about the topmost limit that my kitchen countertop can handle, along with my sink to wash the board in). This board is also 9lbs, which makes it manageable. A smaller board would not be sufficient for my chopping needs. Consider making a simple meal with onions, garlic, parsley. That's 3 piles, while leaving room to chop some more that's what this sized/shaped board can do well. These boards also comes in 2 thicknesses: 1.5" and 2.25" thick. I think if you buy a wood board you want it at least an inch thick. Thinner boards warp/break easier. You need it to be hefty. The 1.5" thick of this board is perfect. The 2.25" thick one is good for heavy chopping as in bones, and is more in line of a "butcher block".

Upkeep:

Glass/Granite can break/chip, but otherwise can last forever. It's easy to clean, can be very pretty, and is dishwasher safe. It's just jarring to cut on and will dull your blades.

Plastic is superior on everything easy. Dishwasher safe. Light, easy to store, cheap, comes in different colors...but be prepared to replace it as soon as it's badly knife scored.

Wood. Of all the materials, wood needs the most to upkeep. You can buy John Boos Mystery Oil which is a mixture of Mineral Oil, Linseed Oil And Tung Oil. You can't just use any oil because it needs to be safe to eat in case of any oil transfer, and you don't want an oil that can go rancid. You just oil the wood every 4-6 weeks . Wood is not dishwasher safe. You want to avoid ever soaking wood in water, although a quick scrub and rinse through the sink, along with a quick and thorough drying with a towel will do the trick just fine. Yes, it's more work than the others, but it's not THAT much work, and I think it's defnitely worth it.

One more note about wood boards. Maple is the best material becaues of it's small pore size ratio to hardness of wood. You might think that oak is very hard wood, but it has bigger pores, so stick with Maple.

John Boos Cutting Board Conclusion:

I think this is a perfect cutting board. The material, size, shape, weight, is all right. John Boo has also been doing this since 1887, so it's a good American company that's been around long enough to know a little something about wood. The customer service is great as well. My only complaint is that it's not very pretty. It's quite plain looking. The wood boards are a gorgeous addition to my kitchen, warming it up and giving it a very earthy and real feel but being a girl, the cherry on top would have been if it were just "prettier".

One last thing, this board is reversible. I don't like when they put little feet on one side of the board that prevents you from using both sides. This extends the use and life of the board and I think it's a shame to take that away. You can always just place a removeable, nonslip surface under your wood board to keep it in place like silicone pad or a sheet of that non-slip drawer liner stuff.

This board is well worth the money. I have enjoyed and used it everyday. Cleans up well, I have had this item for 2 years now and it still does not show the cutting marks. Very little staining involved from berries and such.

You must invest in this board.

OXO Good Grips Dough Blender

OXO Good Grips Dough BlenderThe OXO pastry blender is, in basic shape, much like any other pastry blender: it consists of a handle with several rounded "blades" that you use to blend butter or shortening into dry ingredients such as flour.

There are a couple of differences. One is OXO's spiffy traditional "Good Grips" handle, a soft, thick rubber handle that's easy on arthritic (or otherwise painful) hands. The other is that the "blades" are more like the thick wire that you'll find in a whisk.

The handle is a great thing; certainly I find it easier on my tendonitis than an ordinary pastry blender. The wire-like blades have one good aspect: they don't have flat sides for butter and shortening to stick to, so it's a little easier to scrape chunks of butter and shortening out of them, and it's a lot easier to clean them.

There are a couple of down-sides, however. First, the wire blades are flexible enough that sometimes large chunks of butter push them aside instead of getting sliced up by them. Second, the handle on ours actually cracked through, and the wire blades have gotten deformed slightly so they're no longer evenly-spaced.

This is a common theme among the OXO items we buy. They have great design elements that make it worth it for us to continue buying some of their things, but they also lack a certain durability under heavy kitchen use. A number of OXO items have broken under our care. And while we unabashedly admit that we make heavy use of our kitchen items, we do not abuse them. We're careful to take care of them, and have few cases of things gratuitously getting damaged.

I bake many types of scones and pastries that demand perfect blending. That means the fat and flour must be blended well, but not overblended. This tool has taken a lot of the hard work and time out of the old way of using two knives in scissors action. The overall balance to weight ratio is excellent; the handle is a good diameter and width, and the tines are spaced apart nicely. The design of the tines makes reaching all parts of the bowl to pick up flour a breeze. Cleanup is easy since you can toss it into the diswasher without fear of rust. I highly recommend this product from novice to pro.

I bought this blender to make pie pastry, and I was thoroughly disappointed. The wires don't cut because they just widen and the pieces of butter slip through..I spent a lot of muscle to obtain a very poor result. The handle is nice but it just doesn't get the job done.

The ribs are just too bendy for my taste. I use cold butter and lard so I need something that won't slip around the edges of the fat instead of cutting through it. I always used two criss-crossed butter knives and don't find that this works as well. I'd prefer the similarly shaped nut chopper to this.

Each piece still has a nice shiny finish, no signs of rust. Each piece is nicely weighted and balanced in the hand. I drink quite a bit of tea, and that will stain the finish over time, but if you just rub a little baking soda mixed with some water to form a paste, the stains just rub off with no scratching to the finish!

After falling in love with Waterford's Carina flatware, I set out to find something of equal weight and beauty for a more reasonable price. I happen to come across this Wedgwood Oberon flatware when they were on clearance at $20 per place setting down from $65, a perfect deal so I bought 12 sets! I was a bit concerned that they wouldn't measure up to Waterford's heavy-weight beauty, but they are not only balanced and beautiful, but won't be bending like many less expensive flatware does. I use Ecover's powder dish detergent and plain white vinegar in the jet-dry dispenser and they come out sparkling and spot and residue free! As recommended for any 18/10 stainless, avoid the use of any detergents that contain orange or lemon as they tend to cause discoloration. Overall, I am very pleased with the quality and beauty of this flatware, and thrilled I got them at such a great price!

Kyocera Revolution 3 1/7" Paring Knife

I am not a professional chef, I'm just a guy that watches food network and tries everything. I have a fair collection of kitchen tools (a 7" Shun/Ken Onion knife, a wustof [however its spelled]), and I do like to cook.

This knife is insanely sharp. When I first got it, I was messing around with an onion to see how thin I could slice it and it was so easy. Its inert so theres no metal taste, and cake to clean. I've treated it well, and only used it for slicing/cutting.

You're not supposed to smash stuff with it, or use too much force. While I'm no expert, I've always understood that if you're using a knife that requires a crapload of force, you probably need to get it sharpened or get a new knife. I suspect the reviews regarding the chipping/breaking of these ceramic knives are probably due to heavy force use and ceramic or not, I dont think a 3" pairing knife is the right tool for such a job.

While I can't say that I use this knife 24x7, but it is definitely a great compliment to the other knives/tools/items in my kitchen and if you've got a knife block that you've added items to, you'll find this is an excellent addition for the money.

These ceramic knives are fabulous sharp, light, and durable. The only problem with the paring knife is that it is so small and light, it's easy to forget how sharp it is and cut yourself (voice of experience). Unbeatable for cutting soft vegetables, such as tomatoes.

WOW! This is my first Kyocera but it won't be the last. I just got it today and put it through it's paces.........a very soft tomato, went right through it, crisp celery, neat and clean, no strings, pared a tater in nothing flat. By comparison, I received a less expensive ceramic knife set for Christmas..........not nearly as sharp as the Kyocera. Can't wait to get a few more. The fact that you are even reading this suggests that you already know the arguments in favor of ceramic knives. Ceramic knives are harder than steel knives, can be made much sharper than steel knives, hold their edge ten times longer than steel knives, are lighter than steel knives, won't brown foods, transfer a metallic taste or smell, or rust.

You probably also know the disadvantages of ceramic knives. Unlike steel knives ceramic knives can chip or break so you want to avoid dropping them, tossing them in a sink or kitchen drawer, or arguably even washing them in a dishwasher. (Most ceramic knives come in fitted plastic packing material that can be saved, or you can store them in something like this Kyocera Bamboo 3-Slot Knife Block.) If you actually succeed in dulling a ceramic knife, it will need to be professionally sharpened, though Kyocera has come out with a sharpener for home use: Kyocera Electric Diamond Knife Sharpener for Kyocera Ceramic Knives. Unlike steel knives ceramic knives cannot flex without breaking so there can be no such thing as a ceramic boning knife, and you only want to use ceramic knives to cut boneless meats. Finally, although using a proper cutting board is a good idea with fine steel knives, it is an absolute requirement with ceramic knives; using a ceramic knife to cut something on a plate is an absolute no-no.

So the only remaining question is whether to go cheap: Harbor Freight Tools Ceramic 3 Inch Paring Knife or expensive: Kyocera Revolution Series Ceramic 3 1/7 Inch Paring Knife Red Handle, and due to the fortuitous timing of a couple of good sales I can offer an opinion.

Blade: The Harbor Freight blade is double bevel ground while the Kyocera Revolution blade is chisel ground. Along with Kyocera's claims that its micro-grain ceramic is more dense than its competitors, this should result in a sharper blade, but any difference was too subtle for me to detect. Both knives will be MUCH sharper than any steel knife you are used to, cutting through citrus rinds (and even seeds!) like butter.

Handle: Both the Harbor Freight and Kyocera Revolution have superficially similar ergonomic handles, but I noted a couple of significant differences. In the Harbor Freight the finger guard is part of the handle while in the Kyocera Revolution it is part of the blade. Surprisingly, I found the Kyocera Revolution handle a bit slippery, which in light of the consequences of dropping it is significant. The tackier surface of the Harbor Freight handle provided me with a surer grip.

Sharpening: If you manage to dull your Kyocera Revolution knife, Kyocera will sharpen it in return for shipping and handling; if you manage to dull your Harbor Freight knife, you are on your own.

Price: This obviously varies but in most cases you can expect to pay between twice as much and four times as much for the Kyocera Revolution paring knife as for the Harbor Freight paring knife.

I have purchased several sizes of the Revolution knives, and found them delightful to use. But when you read some of the Amazon reviews, you have to wonder what's going on... reviewer's names like "Red," "Blue," etc. make me think the reviewer is just one person trying to pump up sales. Folks, this knife doesn't need goofy advertising; it just needs to be used once, and everybody who tries it wants one. The blade is extremely sharp, but honestly, picking up that "white knife" is not intuitive after a lifetime of metal. The knife is lighter, and you may begin to wonder if you've been sold a piece of plastic for a fairly significant amount of money. Fear not! Use the knife properly, and you'll be sold on the benefits of ceramic blades.

The blades are a bit fragile, certainly not meant for hacking apart joints or field-dressing a moose. They are best when cutting vegetables, or doing fine cutting work at the kitchen counter. If you don't use a cutting board (wood or plastic), you will ruin the knife pretty quickly. So invest in a wooden cutting board, or even a good plastic or silicone board. Again, you may feel that using plastic is, well, "plastic" as we used to say in the 70s as an insult. But plastic must have come a long way since then. We live in an age of LED light bulbs that cost $25 or more, and ceramic knives that are supposed to be sharper than expensive German steel. Hey, who knew?!

My advice is, buy one of these knives, give it a try on some vegetable prep, and see for yourself. If the knife works for you, keep it. Spread the word. But do NOT let the kids play with it, despite its kindergarten color handles and that innocent white blade. It could give a finger a gash that won't be soon forgotten! And keep the knives in a good knife block. They're available right here on Amazon. So what if it has the name of a German knife maker burned onto the front? Fill it up with your knifes, make it look like a grown-up's version of a Crayola box. But be mindful that you must use a cutting board, and you must not underestimate the sharpness of the blade.

One final thought ... as I mentioned above the knife is not for every possible use. It's not a cleaver, it doesn't do well with joints or rock-hard frozen food, and it's not meant to be used in a twisting, sawing sort of way. Maybe your current knives need that kind of cutting to get the job done. The ceramic knives are not the same! They do excellently when prepping vegetables, cutting tomatoes, and so on. Use them without being afraid of "hurting" the knife, but also realize it is better for some cutting tasks than for others. Good luck with your ceramic knife -the same way someone might have said, "Good luck with that new jet ski" or, "good luck with that new watchdog." Knowing that the knife has specific purposes, and using the knife to accomplish only those purposes, will be a pleasure. Smile and the world smiles with you -cut your thumb off and you bleed alone."
