This is the first ceramic knife I have ever owned and so far, I'm impressed. My first job was as a prep cook, so I've done a lot of chopping and mincing of vegetables and fruit, and endless hours prepping meats for cooking. Here's what I have found:1. It's sharp, really sharp.
2. The Nakiri shape works well for everything you'll need the knife for, so don't worry if you think it looks a little odd or would handle differently.
3. You'll be paranoid about breaking it the first few times you use it, but you'll get past that.
A note on that last point. All the reviews I have read about ceramic knives say the same thing. They're really sharp and they're really fragile. i.e. don't cut bone and don't throw it down onto a hard surface. The knife itself is thick enough to hold up to some banging around, but you will want to be careful about hitting the blade against hard surfaces. If you treat the rest of your knives like an adult and don't use them for stupid things i.e. knife throwing contests, you don't need to worry about breaking a ceramic knife.

I work as a chef, and so i keep an eye out for any kitchen equipment that might be useful at work or at home, or that are interesting for some reason. This knife fits the bill for home use, and is interesting to boot. It is true that the ceramic diminishes the amount of bruising/browning from fruit and veggies. I believe that is directly due to it not being metal, which seems to brown things cut more quickly (chemical reaction? I'm not sure). Although a sharp edge also reduces the rate of decay, as it were, this is the same whether metal or ceramic, so that isnt a direct reason. Anyway, the knife does stay sharp a little longer than, say, a Wusthoff, but not so much so that it becomes a deciding factor.Okay, now that we've gone through the advertised benefits, which are real, but not so much so that it should be a true deciding factor (unless this is going to be the only knife you use), why buy this knife? For me, the knife is a well balanced blade that is easy to use. It isnt very large, so it fits well in your kitchen drawer when not used (and comes with a sleeve). In fact, the overall feel of the blade becomes the deciding factor for me. It is comfortable and, as i said before, well balanced. With that, the lasting edge and reduced bruising can then become a factor. At a little less than $40, it is very reasonably priced for a quality blade. If you cook frequently, you will still want to have a few other knives on hand (at least a paring knife and an 8 or 10 inch blade for larger scale prep work). Either way, you will find this knife to be handy, and a worthy addition to your personal kitchen (i dont see it as a practical blade in a work setting however).
One further note: ceramic blades are notorious for shattering. So far, i haven't had any issues, but just be aware of this. If you have butter fingers, you may want to avoid ceramics.

I got this on gold box special the other day. The knife is great for cutting vegetables, and makes a gentle push cut almost effortless. It's also very comfortable to hold for a person with smaller hands. But when I tried to slice the ends off a particular sturdy garlic clove it refused to cut. To be fair, my 8" Forschner chef's knife couldn't do it (where did this garlic come from?). But it ended up producing 3 tiny chips across the blade. They don't affect the cutting ability, but at this rate the edge won't last very long. And although they stay sharper longer, you generally have to send ceramic knives away to be sharpened. So I'll probably end up returning this one.A couple of things to note this knife is sharp, but also a bit fragile so be careful with it in all counts. Also it is made in China not France. Saw this initially in an email I received from Food Now and decided to look online for reviews. After reading nothing but good things, I decided to check out amazon to see if they carried it--and they did! Ordered it as a stocking stuffer for my husband, as he is an avid soup maker and is always complaining about knives not being sharp enough. I was very disappointed when I received this knife at first. It seemed used it has many small scratches all over the blade on both front and back sides. Moreover, it has some tiny unknown black rocky things stuck on the coating of the blade. I tried to remove one of them but ended up making more scratches, which made me wonder about the quality of the coating. I thought of returning it. ( By the way, their customer service seemed rather good because they tried to communicate with me and to understand whats going on in the first place.) However I did not return it in the end because later my wife found it perfect for cutting lettuces, onions, and some sorts of vegetables and we started to use it everyday. Even though the unknown black rocky thing still stays on the blade, it seems okay. I love the entire line of Kuhn Rikon knives with nonstick coatings. And this knife is no exception. It is very thin, slices like a dream, and has the built-in spatula feature.Because it is so thin, it's not great for hard vegetables (winter squash, large onions, etc.), but hey, it's not made for those anyhow. It's made to thinly slice cucumbers, tomatoes, small onions, and the like. You'll be amazed at how easily you can thinly slice food!

Arguably, this is one of the better chopping, cleaving, broad utility kitchen knives on the market. It's thin enough to slice very well, and broad enough to act as a scoop to place diced herbs where they need to go. Like all Victorinox / Forschner knives, it's easy to sharpen and maintain. It's weakness, if you want to call it that, is a walnut handle held on by one rivet. (It's a narrow stick tang with solitary pin point if that means anything to you.) Other than that, it's one marvelous example of minimalist extravagance. It'll do what you ask of it, so long as that doesn't require heavy chopping. It's a natural slicer, not a hacker. Learn to choke up on this thing and it becomes a total substitute for a classic 8-10" French Chef's knife. This identical model was my first kitchen knife 25 years ago. I used it for everything, as I taught myself to cook through my batchelor days. This new replacement has the same balance and control of my original, but the metal is a bit thinner and lighter. I always had great experience with Victorinox knives. This chinese cleaver was very sharp like all Victorinox knives. It cuts through carrots like butter. The blade is very thin so it might appear to be flimsy. The thin blade makes it very light, which is great if you do alot of chopping. Do not use this knife to cut through bones or other hard substance. It is great to chop vegetable and slicing meat. When you wash it, water tend to collect in the handle. the handle needs to face up in order for the water to drain. Overall, this is great value for everyday chopping and dicing. It may appear not well constructed but is comfortable enough to use. It has not fallen apart on me yet. If you like a lightly constructed knife with a very sharp edge, this is the knife for you. For the price, this is a good starter knife for someone new in the usage of the chinese cleaver. Once you get use to it, this maybe the only knife you will be using. The blade is strong, light, easy to sharpen. Overall, very well balanced and easy to handle. The handle is solidly attached to the blade and seems as if it may last that way. This may seem like an odd comment, but you'd be surprised how shoddy some of the handle-blade attachments are. This is lovely flatware. The oversized handles are not heavy and feel comfortable in your hands. But the same oversized handles make it impossible to store them in the flatware organizer in my kitchen drawer. I'm going to have to locate a basket or tray to hold the flatware between servings.I purchased this set on Sept 2006 and while it "was" a beautiful set, it is beautiful no longer. Over the past two years, the pattern has completely worn off half the pieces. The silver rings at the top of the handles have broken on several pieces with a few having been lost, leaving me with an ugly incomplete piece. Two pieces have handles that have cracked.These have never been in a dishwasher and while used regularly, have never been abused.
I am extremely disappointed with this set and after reading reviews on similar styles of flatware from Pfalzgraff, it appears they have serious production problems with these sets.
I do NOT recommend you buy this or similarly made flatware items from Pfalzgraff.
MIU France 10-Inch High Carbon Stainless-Steel Stamped Chef Knife
If you're looking at this, you're probably familiar with the Forschner/Victorinox/Fibrox chef's knife. It seems this style of knife has become quite popular since Cooks Illustrated/America's Test Kitchen gave it a glowing review.The gist of their review is that they're pretty rigid, hold a good edge, comfortable, doesn't slip when wet, low-maintenance, and most of all, cheap!
With increasing demand, comes increasing price. The Fibrox costs more than some of my nice forged carbon-steel designer knives!
This MIU 10" chef's knife is a near clone of the Fibrox. It has the same antimicrobial polymer handle. Yes it feels cheap compared to wood, but so does the Fibrox which costs more than twice this price. More importantly, its ergonomic and won't slip from your hand even when wet. Notice the ergonomic shape and how the base of the grip hooks inwards. Plastic aside, this is a very comfortable and practical handle.
The blade is stamped high carbon stainless steel. It holds an edge very well. I use this knife every day. So much so, it stays out on the counter 24/7. (no children or pets in the house) Even after 5 months of extensive use, it only needs an occasional hit with the honing steel to get right back to razor-sharp.
Stamped is generally considered inferior to forged because it flexes more, but stamped is just fine for the home kitchen. In fact, a little flex in the blade is great when you're filleting meat/fish.
Bottom Line: This is every bit as good as a Fibrox. 4 stars because it's not the very best I've ever used, but it works well. I use it more than my so-called "nicer" knives. And they're cheap to boot.Part of my job requires me to do real heavy chopping jobs. I was using a forged 10 inch and found my hand hurting after each use due to the heaviness of the knife. A co worker let me try out his 10 inch stamped victorinox fibrox to see if it helped and it did. I had to get a new knife at that point. I was on a bit of a budget, so I didnt want to cough up $30 for the fibrox. I came across this MIU and decided to go for it due to the price. Best decision I've made. I even like the handle of the MIU better than the Victorinox. This knife is extremely light weight and I no longer have issues with my hand hurting after heavy chopping. 5 stars

I think I had a brown pair for about 15 years that we used for every thing and everywhere. They cut through chicken bones and all of my other kitchen and garden needs. I wanted to get my friend/colleague a new chef's knife for his birthday. Amazon had this set on sale and I got three knives for the price of one. I've seen reviews saying that the handles are plastic and seem cheap, I disagree they are very nice in the hand(I kept the other two.lol). My colleague loves his chef knife. These knifes were purchased as holiday gift for my wife. I read several reviews of other knifes stating "just as good as a Wusthof". That's usually clue to purchase the original item. The Amazon description says "Every piece of Barenthal Laguiole is exclusively handcrafted in the Alsace region of France using time tested methods and the unique savior faire of old world artisans."The label on the box says "Made in France, assembled in China". Look closely at the photos, this is extremely poor quality cutlery at a vastly inflated price. Cheap plastic handles, poorly stamped bolsters. Yet the blade says France. Apparently Barenthal was fined $10,000 euros in 2005 for fraudulently labeling knives made in China as Made in France, but they don't seem to have learned their lesson.
Read some of the other reviews, these knives are being passed off as other manufacturer's products as well.From my understanding in the name Barenthal, Laguiole, are two places in France and is not something that could be a trademark or is a trademark on something. I guess it would be similar to the name Champagne, France. Anyone in the world can make the knives would I guess.
I bought mine from the, "you might be getting something broken department" or as Amazon calls it warehouse deals. The price was okay in W.D. and it was packaged and sent to me broken, one bee missing so I have a good five-piece setting. I get the sixth one if I ever set them out for a six-piece setting. As I write this there, are two reviews both having some truth to them? They're not inferior knives when comparing to their class of cutlery, but they're not the real deal either. They would cost five times as much for the handmade French Laguiole knife; it is an artwork in cutlery. I guess my point is if you've ever had a glass of California champagne and enjoyed it and drove to the store to buy it in a vehicle that was replicated from some one else's design then enjoy the knives if the words assembled in china is not a deal breaker for you and yours.
I humbly have some plastic handled punched out picnic cutlery from Italy that I use more than any other table knife in the kitchen until this recent purchase. I'm okay with it.

Wusthof 4013E Emerilware 3 inch Paring Knife
I bought these as I used to have a set of Emerilware Wusthof knives that I adored! My fav was the 3" paring knife which I just now chipped after 8 yrs. So I bought these... I am sooo unhappy with them, although through no fault of the seller. What I got was cheap, flimsy knives with plastic handles. Since the handles are plastic I can not see how far the tine goes, but I am positive it is not all the way through. The blades, while sharp as all NEW knives are sharp, are extremely thin and can easily be bent. Not happy at all, but this was what I ordered, so I will keep them... but I would never recommend these knives!I had one of Emeril's paring knifes and found myself reaching for this knife first. i make my own va style country hams and a couple of spanish or proscuttio hams a year.. they are tough to slice razor thin with even with a great sharp slicing knife.. I have a very very sharp knife, but this knife is longer so i dont have to saw as much.. Granted it isnt the 200 ham knife you can buy, but really i slice the hams maybe 3 to 4 times a year so i dont need a 200 dollar knife .. this knife is sharp and if you use it when you need it and take care of it. it should stay as such.. besides you can buy like 12 of these before you spend the 200 on a fancy ham knife.. Shenzhen Knives. Ceramic Knife Set - 3-piece (6" Chef's, 4.8" Slicing & 3.2" Paring)
These are excellent knives for the price. Being a bit of a knife nerd, here is what I've found:First, these are ceramic knives, and all ceramic knives have a classic trade-off they are hard but delicate. They will slice effortlessly though anything softer than the knife, but will break if you force it against something harder (bones, coffee mugs, diamonds). That being said, because they are so hard, they will hold a professional-quality edge no matter how unprofessional you are.
The edge on these knives is comparable to some of my top-end Japanese knives, and whereas my Japanese knives require regular sharpening and oiling to keep them sharp and rust free, the ShenZhen ceramic knives are practically idiot-proof.
The best way to think of these knifes is as the lazy-man's carbon-steel super-fancy $1000 Japanese Chef's knife. You wouldn't use those knives to bone a chicken, and you wouldn't cut on a hard surface with them, and you certainly wouldn't drop them. Ceramic knives are no different, but unlike carbon-steel, they require absolutely no maintenance. You can leave them wet, you can cut through acidic foods, you can buy new ones for cheaper than it costs to get them sharpened.
The best thing about this item is that it comes as a three-pack, with Chef's, slicing and paring knives. If you use the right knife for the right task, you're less likely to break it or chip it by using it incorrectly.
The knives are light and quick, and the handles are good whether you like to grip the knife or pinch the blade. The one ding I have is on the handles they look a bit cheap since they're made of non-slip rubber, but this seems to be a consistent characteristic of ceramic knives you can't affix them to a wooden handle because you can't drill holes into the tang.
Oh, and all those people who say "These knives are so sharp you might cut yourself LOL" have no idea what they're talking about. A dull knife is the most dangerous thing in the kitchen. A sharp knife goes where you want without having to force the cut, and without having to hold your fingers so close to the cutting zone to stabilize the food you're cutting.
Bottom line: Buy these knives. They're cheap, they're good, they let the little guy slice sushi like the big boys.I have been adding to my Global knife collection throughout my life as I could afford them. Then I recently received one of these knives as a gift. I was immediately sold on them and quickly snatched up this 3-piece set. I still cannot believe the price. Highly recommended.

"Eh, is all I can say. They're sharp, but ridiculously delicate. I am NOT that much of a clutz, and actually enjoy taking care of my quality possessions, but these are just too much trouble. I don't mean in the oiling and sharpening sense (they're super easy to clean and wash), but I've chipped the tip off the small knife cutting through a pork roast (without any bone it) because of a less-than-straight pull through the meat as I was cutting, I guess putting a bit more torque on the knife than it's built for (and I wasn't even yanking the thing at all), and the medium-sized knife is now out of commission because the ceramic extension holding the knife into the handle has broken due to a regular, straight, clean cut through a steak. Only the large knife survives, and I'm not very confident that it will last that much longer.All in all, they were sharp and easy, but only while they lasted, which was NOT that long (purchased them maybe two months ago). I am going to go out and buy another set of decent metal ones again, and will not be purchasing any more ceramic knives."
After receiving a note from Shenzhen responding to my initial review, Shenzhen offered to either refund or replace my knives. I elected to have them replaced, and received the replacement knives maybe two days after speaking with them, and they threw in a free peeler as well. They were fast, genial, and understanding, and I wish more companies in the US would take a page out of their customer service manual. The fact remains that ceramic knives are quite delicate, but after such incredible customer service and a 'break-in' period (pun intended), I think I'm going to be happy with these knives. Thank you Shenzhen.After looking through many of the other ceramic knives out there, I decided to give this set a shot... and thank god I did. The ceramic blades cut through food like nothing, and the best part of it was that I got three knives basically for the price of one by other manufacturers! What a great purchase I recommend this product to anyone and everyone!

I was aware that ceramic knives are very fragile, as I had spent days reading reviews before I decided to get this set. Right out of the box, I washed them gently by hand and wrapped each one individually with cloth napkins. I went to use the paring knife for the first time; I very gently cut an orange in four, on top of a bamboo cutting board. I thought the knife was great, no pressure and it was cutting through like butter...then I felt something hard in my mouth as I was chewing a piece of orange. Shocked at what I was seeing, it looked like a ceramic chip! So I looked at the paring knife, and sure enough, it had a chip missing. I was appalled! The first time using this set, and it chipped inadvertently cutting an orange! Not only that, but the sharp chip went into my food. Now, I'm glad I felt it in my mouth and removed it, instead of eating it. But what if I had given that orange to my toddler?! What if she didn't feel the chip in her mouth and had swallowed a sharp piece of ceramic? This set seems very unsafe. If you have this or are going to buy it, make sure you always look at your blades before you eat whatever you have just cut! In addition, there was no phone number on the box/instructions to contact the manufacturer; there was only an address in Hawaii. Not good.
