Shun DMS284 Classic Knife Set, 2-PieceThese are probably the best and most useful knives I have ever bought. I have come around to realizing that I don't really need a big knife set, because in the end, I end up using the same two knives for 99% of everything. As it works out, for me, a good small chef's knife and a great utility knife fulfills all my needs.

I have been using these knives pretty much daily for close to a year now, and this has been my experience:

They are razor sharp even today.

I use them on wood and plastic cutting boards only.

I always immediately hand wash after use, wipe dry, and put them back in a wooden knife rack in my drawer right after using.

These are sharp sharp. Remember all of your safe knife handling rules, these won't give you a second chance. (Hasn't happened to me, but I came close, once.)

I haven't had a single rust spot on these knives.

I haven't had a single chip on the blades.

I don't cut bones with these... I have other, heavier, cheaper knives and if needed, a hacksaw, for that!

My experience with this set has matched up with my experience with my other Shun knives (I also have three others not from this set), carefully taken care of, these are a lifetime purchase. I haven't had to sharpen these yet, and it seems I probably won't have to for a while, but when I do, I plan to send them to Shun for sharpening.

These ARE a significant investment in knives, but I believe if you take the time to take care of them, you won't have to purchase another set of knives for life.

Form and function in one. When my knives are sharp as a Shun knife, it's sharp, like a razor. Perfect cutting tools.

It is a very well made knife. Stylish, sharp, motivating cutting...

But the wooden handle is not care-free~~~ I have to rinse the knife every time I used it and wipe it down with a dry kitchen towel, since nearly $200 for a nice knife is still not everyday purchase for me and I want to keep it neat for quite a few years.

Ultimately, these area a great set of knives that are extremely sharp and look very nice. However there are a few things that I think should be noted:

1.) You're paying a lot of money for knives that are mass produced. They are very nice, however they never really feel like "your" knives, because you know many other people have the same ones. For the amount of money you're spending on these knives, you're reaching a price range where you could buy knives from a custom knife maker, and then have knives that are truly YOURS.

2.) Because they are thin, extremely hard, and extremely sharp, they are somewhat fragile. I was cutting something with the chefs knife and accidentally knocked the paring knife off the counter, and the tip of the paring knife broke off. Luckily I was able to round the end by sanding with a water stone, so the knife still looks good, but it is something to keep in mind. Again, this is to be expected when you buy a knife of this quality, but its something that should be noted; these knives might not be for everyone.

Ultimately I really enjoy these knives and I use them often. I do catch myself looking at custom knife makers, and sometimes wishing I saved the money to ultimately go custom.

Chroma Haiku 10-Inch Carving knife

Chroma Haiku 10-Inch Carving knifeI recently picked up this carving knife and have used it for a week now.

First off, the price paid for this knife was $44 and in the world of "You get what you pay for" I would not have even considered making this purchase; I got it anyway.

The balance of the knife is very blade heavy. Overall it is a light knife, but it is not well balanced and is tiresome after a long day. The handle is extremely light and lacks enough weight to balance the knife. I therefore assume this is only a half tang design.

The fit and finish on this blade is bad. The handle is oversized and bulky. Semi-ambidextrious handle favoring the left hand slightly more. (I'm right handed)

The blade was very dull out of the box.

The blade is stamped Made In Japan so I assume this is true (although there is a Chroma Haiku China which may be a knockoff?) The blade shape is good, slender and food doesn't stick to it; excellent texture. The blade thickness is a bit wide, but a good trade off given the superior blade stiffness. The soft metal is easy to sharpen and frequent sharpening is required.

It arrived 1 day early and have been satisfied with it so far. I am definitely going to replace this one with another I have my eye on once it goes on sale.~$200 range.

The Haiku is not up to par to do delicate work that requires feeling the blade. However, I find that for $44 it is good insurance for your nice gear. I use it as a eveyday beater knife that i can throw around the kitchen and not worry about rust or chips on the blade.

If you are a hobby cook this may work for you. Definitely not professional caliber.

***UPDATE***

The furrle has come loose and mekugi *sp? (wooden pin in the furrle) has fallen out. The plastic furrele could be repaired with some epoxy... the mekugi has no real function at 3mm in length. The handle is still firmly attached to the blade and this is mostly a cosmetic issue. None the less this is still a mediocre purchase at best and probably wouldn't recommend this line to anyone especially for $90. Take that kind of money and buy a Fujiwara and never look back!

Swiss Diamond 10 Piece Set: Ultimate Kitchen KitI really wish that people would not leave comments on cookware that they have had for less than a year. Of course when it's new, it's great. However, please note that the reviewers who have had theirs for more than a year are telling you it DOES scratch easily. This is a very expensive set for nonstick. I took very good care of mine because it was so expensive, I always handwashed my cookware and did not abuse it. But it still scratched after 3 months. Fortunately the company that I bought it from stood behind it and took it back, because Swiss Diamond's warranty is awful! Look at some of these reviews and you'll see that people who had to deal with the company are saying that Swiss Diamond keeps claiming "abuse". How convenient and shady of the company. The nonstick was great and it cooked nicely, but when mine scratched, I contacted the company and was given, in an email, "this warranty does not cover stains, discoloration, scratch marks, or dents". HUH??? What DOES it cover then? And once a pan is scratched it's ruined. So since it scratched so easily and the company does not stand behind their warranty, I decided to return the entire set rather than get stuck with a $500 set that will be just like any other nonstick set within a few years. Don't listen to reviewers who have only had theirs a short while look at the reviewers who have had theirs for awhile or have had to deal with the company. They are all saying the same thing it DOES scratch, get pits, and stains and the company does not stand behind it.

We spent a lot of money ($150) on the 12-inch sautee pan which is advertised as "virtally indestructable". We have been very careful with the pan. We don't use metal utensils, put it in the dishwasher, or use abrasive cleaners or scrubbers. The non-stick coating is pitting, flaking and coming off after only eight months.

The company told me that we could send it back (at our expense) and someone at the company would examine the pan and decide if they would repair the pan, give us a replacement or return the pan as is.

We are planning to return the pan, but we aren't too hopeful.

Having recently read quite a few reviews of other companies' non-stick cookware, it seems that this is a common problem. Caveat emptor!

I bought a Swiss Diamond Cookware Set about five years ago and some of the pans that I use daily are really starting to show "wear and tear." I contacted their Customer Service Department who seemed VERY interested in helping me decide whether some of the set needed replacement. I was asked to send pictures online and full documentation on when I bought them etc. etc. I responded immediately with what they asked for!

THEN, NO RESPONSE! I even sent an email to the person who originally contacted me...NO REPLY!

This cookware is VERY EXPENSIVE! I do NOT recommend it because NO ONE FROM THE COMPANY answered my questions regarding whether it was SAFE TO USE IN REGARD TO WEAR!

I've been bragging to everyone about how lovely this 8.5 qt. stock pot is because clean up is a cinch and the non-stick quality is superior. Recently, after cleaning the pan I noticed a scratch that revealed the silver-colored metal underneath the non-stick surface as well as several other aggravated areas on the rim. I couldn't imagine how that happened. After examining its glass lid, I noticed the metal band that goes around the circumference of it (and comes in contact with the pot's rim) joins together and creates an unconnected, albeit close, seam. When I touched it, it felt sharp. Ah-hah! This must be what caused the damage. It seemed logical to me. The representative from Swiss Diamond looked at it and claimed it was caused by a metal utensil being banged against the rim. User error. Needless to say I'm disappointed. I don't recall banging a metal utensil against the rim. It seems obvious to me that, as absurd as it may sound in theory, practically speaking, the pan damaged itself. I sure hope the damage doesn't spread. The other thing I've noticed is some of the non-stick surface on the bottom is pilling. I'm bummed out. I feel angry, but I can't fight "city hall". I just hope this isn't the beginning of further degradation of the pan I love so much.

I've been cooking for 50 years and have tried them all. This is the best line of cookware ever. It has all the right features: can be used in the oven, proper balance, excellent conductivity, totally flat bottoms, great non-stick (both inside and outside), the handles stay cool, just the right weight. However, don't believe the claim that you can use metal utensils. They can be scratched if you don't use wooden, silicone, or plastic utensils. Treat them with care and they'll be your favorite cookware.

This is the only knife I know of that really achieves that effect without needing sharpened regularly. It is good for all soft or semi soft foods. You can use it to cut seeded oranges and use the forked tip to pop the seeds right out.

I have one that is now ten years old with daily use. I have *never* sharpened it, and it still "floats" through overripe tomatoes. :)

This tomato knife is awesome, it slices through tomatoes with the greatest of ease. I was initially concerned about it being serrated (i equate serrated with cheap), but this knife has not lost any sharpness and still slices tomatoes as nicely as the day it was first used. I have not regretting spending a little more money to get these quality knives, I will be a lifelong Wusthof customer.

Swiss Army Brands 40192 Cheese Knife, 12-InchI have owned the 14 3/4" version of this knife for longer than I can remember. 25+ years. This is the only knife I own that isn't a Dexter-Russell knife. I'm prompted to write this because 8 months ago I was forced to put my stuff into storage and yesterday I got brought some of it home again. I was thrilled to see this knife. We've been together a very long time. I can't say anything negative about this knife. Not one thing. It's sharp, it takes an edge easily, it's strong. It's indespensible for cutting cheese prints, watermelons, pineapple, pizza, lobsters, anything that's big and unweilding in the kitchen. As a Chef, I've carried this knife to many jobs and many venues, used it to cut frozen food, even driven it through some frozen products over time with a hammer. It's a really tough knife. It has really stood the test of time. It's my friend! lol! The one thing that really amazes me about this knife is in all the places I've used it nobody has ever stolen it but everyone I've worked with has used it and been awed by how much easier life can be when you have double handled knife on board. To all you aspiring Chefs out there, I say this is a great, basic knife to add to your collection. It's served me well for a very long time. This was the biggest that fit my price range and was from a brand I knew of from my days in culinary school. He was thrilled with the gift. Unfortunately the company didn't have the guts to raise the price directly, so instead they've cut costs by making 'em much thinner and much thinner thereby increasing their profits-'cuz they charge the same amount! If I'd known I certainly wouldn't have bought 'em.

I would not recommend this product. It splintered after one use, not exactly a safe product for a toddler. In addition, the tines of the fork are far too sharp. It's a shame but I would stay away form this product.

Now they've graduated to metal, but for the first year of feeding, these are wonderful! They did splinter after a couple of years, and then we tossed them into the compost.

To summarize:

Nice spoons. Useless forks. Use wood conditioner to make them last.

The rest:

I ordered this Bambu set (2 spoons, 2 forks) on Amazon 3 years ago for my first child. I've used them for 2 children so far. I wanted something softer than stainless steel that didn't involve plastic. The spoons were great for most things, but the forks are pretty much useless...they won't pierce anything and so we hardly ever used the forks.

After constant use, the spoons did get rough and sharp around the edges although they didn't totally splinter. To prolong their life, I occasionally buffed them with a generic food-grade wood conditioner that I use on my wooden cutting boards. The more frequently you use the conditioner, the more it helps smooth out the roughness. Bambu makes a wood conditioner called Bamboo Goo (Bambu Bamboo Goo 8-Ounce Nourishing Oil, Natural) that you can use on these utensils, but any food-grade wood/bamboo conditioner should work.

The spoons also occasionally served as teething toys when the kids were sprouting teeth. Now that both children are using stainless steel utensils, these Bambu spoons and forks have become part of their play kitchen toys.

All in all a nice purchase although I would recommend only the spoons and not the forks.

The spoon of this set is perfect for little onesnot too much volume in the payload area, and a good shape. I haven't tried the fork, but it seems like it would be able to spear or pierce soft foods (cooked veggies like potato, pumpkin, etc) but I don't know about harder foods like a veggie with a membrane or meat. The handles are curved and seem to be a good shape for little hands, and don't seem flimsy. They are meant to be handwashed, so those who say they splinter may be treating them roughlymine are ok after months.

I'm glad I didn't listen. I don't know what knives that person received, but it definitely wasn't the Ginsu Hanaita series.

These knives are solid, sturdy, sharp and durable. They are most definitely genuine damascus steel. Mass produced, machine made damascus....yes. But still very good steel. For this price I wasn't expecting hand forged knives. I paid half of what I would have paid for a six piece set of Shun knives and feel like I got an excellent value. Much better than the comparable Calphalon damascus knives.

I bought these thinking I was getting a high quality product.. These knives are worthless and dull after just a few uses. I followed their directions on how to properly handle and use and it matters none. The blades themselves are not made from Damascus, and the steak knives (i bought the 13 peice set) are so cheap they bend when cutting. I will donate these POS just to try and get some of my money back. Went back to using my 15 year old chicago cutlery knives that are much nicer even after 15 years of use. Ginsu you should be ashamed of yourselves for putting out such a shotty product for the price. I wouldnt pay 100 for the set.

Mrs. Anderson's Baking Chocolate ChipperI buy the big blocks (5 kg) of Callebaut dark chocolate for baking. Until buying this great little tool, I used a 10" chef's knife to divide the block and chop the chocolate as necessary. For the unskilled or inexperienced, this can be dangerous and a little scary, and while it gets the job done, it feels clumsy and is none too great for the knife, either. Combined with a rubber mallet or a plastic-faced hammer, this is the right tool for this particular job. Great price for it, too.

NOTE: When using on the thick blocks, the mallet is not optional; the chipper doesn't work without it.

I love to bake and make candy with bulk chocolate, but the one aspect of the process that I dread is cutting up the large chunks of chocolate. It is difficult to chop through the hard chocolate with a chefs knife. I find the job unpredictable and somewhat dangerous. This sturdy tool has resolved the issue.

I am a home cook, not a professional and I rarely have chunks of chocolate that weigh more than a couple of pounds. This tool permits chipping of the chocolate for melting in a manageable manner. I consider this method far safer than using the chef's knife. The chocolate flies around less, and to help capture the bits that leave the cutting board, I put a large piece of wax paper, or parchment paper under the cutting board.

The tool does not produce perfectly consistently sized pieces, like those bags of pre-made chocolate chunks for cookies, but for breaking down bulk chocolate to prepare for melting, this tool does its job.

This is a well made product that makes life much easier for bakers. It is perfect for chopping bulk chocolate and minimizes the time it would take if you were chopping chocolate with a knife. It is very sturdy and well-built.

Let me start with a brief explanation of my situation with this chipper: I am a home chef/confectioner that makes candy and chocolates on a fairly regular basis, and I needed something better than either store-bought chocolate chips (no cocoa butter to speak of) or $15/6 oz locally bought quality bars (only one place near me carries anything like Valrhona, Callebaut, etc and they are pricey). So I purchased a bulk bar online.

This thing is the only feasible way I've thought up for dealing with the mass of bulk chocolate I purchased. It does take significantly more work to make fine chunks, but it is doable. Moreover, I don't think there is any way I could have dealt with the 12lb bar I had.

Here's my current 'chunking' flow.

-Place bar in a large rubbermaid container on a solid surface. You generate a lot of 'dust' when you do this, and it's a shame to waste good chocolate. Also it's a real pain to clean up otherwise.

-Take a hammer, place chipper near the edge, start knocking off big chunks. I usually end up with fragments that span the whole length of the chunk (~4-6 inches) by 1-2", by .5-1".

-Break these up into roughly 1"x.5"x.5" chunks. That's about as small as I can get with this thing (which for a few minutes of labor and a starting piece 2"x6"x12" isn't bad!)

-Pour the resulting chunks and dust into a HEAVY duty ziplock. double bag it.

-Place something thick and soft (piece of leather, silicon potholder, etc) over the bag, and smash it a bit.

Now, I wouldn't really recommend this to make chunks for cookies, etc. The resultant bits are so variable that it'd be hard to get anything like consistency. If you want that buy grocery store bars and hammer them because that isn't what this thing is for. This is for taking large, heavy bars of bulk chocolate and breaking it down into manageable pieces you can melt easily. And not only does it do that very well, but I can't imagine doing it without this (or something nearly identical).

Melange Italian Villa Premium Porcelain 40-Piece Place Setting, Ivory, Serving for 8This dinnerware works perfectly for us and goes nicely with our Corelle glassware and our contemporary style stainless steel tabelware. It has a nice blend of casual, contemporary, and elegant, without being too much of any of those. The color is between pure white and actual ivory, and our Corelle pasta plates in Winter Frost go well with this set. If you are looking for "fine china," this isn't it, but you won't find any true "fine china" at this price! I think the irregularities make if feel more like hand thrown pottery and I am fine with that. It's almost like the living clay got frozen in time and one can almost sense its aliveness. Has the weight of dinnerware but the impermeability of china, which works well for us.

PROS: Washes up well, looks nice on the table, and food looks very inviting against the solid white background. The raised design on the rim sets it off nicely, so one feels one is sitting down to a treat instead of just a meal. A good value for everyday use at this price.

CONS: One of the dinner plates has small black flecks in the surface and one of the salad plates has something that got into the glazing on the underside (it doesn't show when on the table), so I would not consider this "premium" quality. There is a slight waviness in the edges and design, but for me that is like a handmade look. Again, I would not call this "fine china," but it still works well for us and our casual lifestyle. The dinner plates are a little too large to allow the door on our Cuisinart 6-slice toaster oven to close completely, but using the bake setting instead of the convection setting compensates for that.

BOTTOM LINE: Good value, nice feel, and expect to get a lot of use of these!

Everything we wanted. It replaces the old set we got that was getting long in tooth. It's elegant and simple.

This dinnerware is beautiful and will look classy either casual or formal event. Perfect weight, color and will look terrific with colorful side dishes.

I could of rated this 4 stars due to arriving later than promised, however not the company's fault, but a carrier delay to which I was notified. Perhaps the delay caused the double shipping boxes to arrive pretty beat up, which caused one broken dinner plate. Upon unpacking I did notice a small flaw in one serving cup. To be honest I wasn't worried about the plate or cup being replaced because of previously reading the many positive reviews about the company's service level! Within hours after notifying them I received notice that they would forward an extra place setting to replace my 2 damaged pieces! This company is amazing and so is their product!! I did a lot of research to find the perfect dishes for our family and this set meets every criteria, and even much less than I expected to pay! The quality was above my expectation. Looking forward to loving these for many years.

Wusthof Classic 2-3/4-Inch Parmesan Cheese KnifeI bought this knife for my husband for Christmas because he loves parmesan cheese. He says it's weighted nicely so the cheese cuts more easily than with a regular knife. He thinks it's wonderful!

I have the whole set of Wusthof Classic knives and thought this knife would be good for cutting very hard cheeses like parmesan, as it said it would do. Wrong ! Unlike the other knives, this one does not seem "sharp" and when I use it I am afraid it is going to slip. Would not recommend this one.

The flatware is of excellent quality and we love the elegant design -hence the 5 stars. However, we were shipped some incomplete place settings (not in manufacture's original packaging) with some items from another design by the same manufacturer literally thrown-in the box instead (most of these were badly scratched). Amazon's "customer service" from India was completely hopeless at sorting out the problem but once we got through to a representative based in the US it was soon put right.

My dad just bought these for my wedding gift. They are absoultely beautiful!! They have a great feel. I know it can be difficult buying things like this online, but you won't be disappointed. I recieved 12 sets and every one was perfect. Nothing was missing and everything was sparkling! I loved the contemporary design on this set too. Super awesome!! This knife falls in the category of "They don't make them like they used to," and "You get what you pay for." My old knife works great, nice and sharp. This one looks similar, but it saws, rather than slice. I bought it for our second home, so not using it daily. It works, and I'm making do, but if I had to use this one all the time, I'd try a different brand.

Wusthof Classic Ikon Cook's Knife

Wusthof Classic Ikon 8-Inch Cook's Knife, BlackI have knives from the Henckels Pro-S, Sabatier Grand Chef, Wusthof Classic, and Shun lines. I was curious to try the new Wusthof Ikon line, and I have to say, I'm hooked. There is a substantial premium over the regular Classic line of knives, but I'd have to say it's worth it.

Aesthetically, the new design is more pleasing, and has modern, flowing lines. The classic Wusthof red sticker is formed into the blade itself, so no more of the sticker coming off during washing! Also, the tang extends all the way to the bottom of the handle, ending in a sleek metal cap. Lastly, the bolster is much thinner, making the knife easier to sharpen.

Out of the box, my Ikon was as sharp as my Shun Nakiri. A few swipes on my steel made it even more so. After an hour of cutting, I greatly appreciated the new ergonomically designed handle. It really makes prepping much more comfortable. The overall balance is skewed slightly towards the handle, but not noticeably so.

In conclusiona great update on the Classic line, with functional improvements. This is now the first knife I reach for from my block.

This knife is ridiculously nice. It has seen use 4x per week, 30 minutes at a time on average, for 6 months now, and I've still not had to sharpen it. A minute or so of swiping on the honing steel keeps the edge super sharp. I've not had experience with other high end knives, so upgrading to this bad boy was truly a breath of fresh air. Absolutely with knives, you have to pay for the best.

That said, I happened to hear W&S had the Ikon Creme line on sale and this knife was a steal at 59 bucks!!!! With the matching 3 1/2 inch paring and the honing steel, I was out the door with two high end workhorse knives and a steel for about 110 dollars.

I have used the Henckels International line and Wusthof's Grand Prix and Classic lines, and the Classic Ikon line is the best of the best in German knives.

I'm a cook and this is definitely my favorite knife. The only one I really use at work outside of the occasional boning knife job. The handle is very comfortable and the broad curve of the blade combined with the nice weight of the handle makes the cutting motion very fluid and easy on your wrist. I took a long time to decide which knife I would choose as my main chef knife and I'm very happy with my decision. 100% recommended.

And if you cook a lot, that's what this fine knife is. The first things I noticed were the weight and the balance. This knife is heavier than knives of the same type and size from other manufactures. It is also very well balanced. The next thing I noticed was how well it fit into my hand; the profile of the handle is oval instead of squared off. This knife comes from the manufacturer very sharp, as you'd expect, but it is very easy to maintain the edge unlike previous knives we've owned.

Bottom line is if you cook once a week or less, this knife is really not worth the cost, but if you cook a lot and like to cook, this is a great investment.

I am a chef with VERY large hands. I always have problems with smaller knives. This 10-inch is great. There is enough blade depth and length so that I can cut with confidence. The balance is perfect, the blade is extremely sharp and easy to maintain, the tang and bolts are solid, and it is very, very durable. I cannot recommend this knife enough.

Shun 22-Slot Bamboo Knife Storage Block

Shun 22-Slot Bamboo Knife Storage BlockI would not ordinarily think of posting a video review for a knife block, but this one is so attractive that I wanted you to be able to see it. There are so many knife blocks sold by Amazon and I found it a daunting task to try to choose one. I had a couple of smaller knife blocks and then acquired another 6 knives Ginsu Shoku 05707 Japanese Stainless Steel Cutlery Set with Crimson Colored Handles and didn't have room for the magnetic hanger that came with them. I also didn't have the space on my counter for three smaller knife blocks. So I decided to get one that would replace the smallest one that I had, with enough space to accommodate the extra knives. I spent probably a week going back and forth between the different options, but I'm glad I finally settled on this one. (A knife block, after all, is something that I'll probably have for a gazillion years and have to look at every day!)

It has the little metal Shun emblem on the bottom that you don't see on the Amazon photo but you'll see it in my video. The color is pretty close to what you see here, but if you use just a little Joyce Chen Bamboo Wood Oil, 8 Ounces which is a food-grade mineral oil it just brings out the wood grain and makes it even more beautiful. Bamboo is so attractive to begin with, but the oil just brings out the patterns in the bamboo. I bought this oil to use on my bamboo cutting board over a year ago and it works very well. I think you'll see that it adds something to the attractiveness of this block. And you use so little that the 8 oz bottle will probably last like forever.

The slots are nice and wide (one of my old knife blocks, the one I re-cycled, had rather narrow slots which didn't work with the big knives.) I have a several little paring knives and little utility knives which I put in the bottom 6 slots, but you could just as easily use that for steak knives.

I hope the video gives you a better idea of what this block looks like and helps you to make a decision. After all that time trying to decide, I'm glad that this is the one I ordered.

I couldn't decide if this block or the Henckels 22 slot would hold my 2 long 11" Victorinox bread knives, 2 Wusthoff Santokus, and 2 small Chicago Cutlery Santokus plus a couple other knives. I ordered them both and compared them side by side. The back corner of the Henckels is "blocked" so it sits 1" closer to the back wall on the counter than this block. However, I found the Shun bamboo wood block more aesthetically appealing and a nicer finish than the Henckels block. Also, the BIG difference is in the width of the knife slots. This block consistently for just about all slots was wider by 1/8" to 1/4" than the Henckels. For me, this small increase in width made the difference in getting all my knives in the block or not. If you have serious knives, then most of them are probably wide, and need this block. If your knives are narrow then the Henckels block would work fine. Both blocks were identical heighth. The steak knives are stored in a horizontal orientation in the Henckels block compared with this block. The large cleaver slot is towards the bottom of the face with this one, and towards the top of the block with the henckels block. As an added bonus, the 4 slots across the bottom on the Shun block are slightly wider than the Henckels block and therefore can accomodate a knife a little larger than a pairing or steak knife. The Henckels block has the same size slots along the bottom as used in the bottom section for steak knives. The opening for kitchen shears is the exact same width in both blocks, however, the heighth of the opening is less in this block as compared with the Henckels block and fits my cheap shears from Walmart better than the Henckels block did although both worked fine. As far as packaging is concerned, the Shun block is packaged better than the Henckels block. Both blocks have identical rubber feet on the bottom (screwed into the block). I assume both are made in China, (the Henckels is for sure). The Shun block is more expensive here on Amazon but worked better for my knife collection.

I recently bought a Kramer knife that is 2 3/8" wide at the handle. I was hoping, partly based on the reviews, that this block would accommodate it -in addition to my cleaver. No such luck -the slots other than the cleaver slot are only about 2 1/8" wide. If your knives fit in this dimension, it's a very nice block, but I wish the descriptions would give the slot widths.

The product, the Shun22 slot knife block is superb. I do have to be careful entering the knife into the appropriate slot so as not to nick the surface of the bamboo finish. The even darker than expected color of my unit is most handsome. I think the slot numbers are perfect because any more onenings for smaller knives would be superfluous. It has been admired by friends.

Issues with the blocks I received:

The first one of these I ordered arrived with a crack above the kitchen shears slot between 2 of the bamboo-board-columns (for lack of better words) all the way down the back. I think the crack was large enough that you could slide a sheet of paper through it, but I didn't even take the block out of the plastic wrap since I intended to ship it back.

The second block also had a crack on the back above the kitchen shears slot, but this crack was only a couple inches at the bottom between two of the "bamboo-board-columns" and then another inch one column over above that. These cracks also weren't as wide as the crack on the first one. In addition to the cracks, this one also had a dent a few mm in diameter in the top left corner (by the honing rod slot). These are slight nuisances but are not so bothersome as the large crack in the first one. As such I plan to keep this one.

Slot widths:

(I won't make any garauntees on my accuracy)

5 slots are 2 1/8 in. wide

3 slots are 1 5/8 in. wide

5 slots are 1 3/16 in. wide

6 slots are 15/16 in. wide

1 slot is 3 15/16 in. wide

and the other 2 slots are the honing rod and kitchen shears slots

Issues with the block in general:

As mentioned by another reviewer, it would be nice if the slots were wider. I have the Ken Onion by Shun 7-Inch Santoku, and it only fits completely into the cleaver slot. This is frustrating because they could have easily made one of the five 2 1/8" slots another 1/8"-1/4" wider, and then it would have fit. If I end up getting a cleaver, I will probably take a power drill to the block so my Santoku fits in one of the other slots. the only other thing is that the honing rod slot is too close to the kitchen shears slot. A have the Shun Sharpening Steel and the Kershaw Taskmaster Shears, and they fight for the same space so that the shears must sit crooked. This isn't a big deal; it just doesn't look so nice. Since Kershaw and Shun are both made by KAI, I thought maybe they should fit better.(UPDATE: The kitchen shears do fit in fine if inserted with the bottle opener side facing right.)

With all that being said, it still basically does what block should do, and I don't expect it to fall apart.

My single complaint is that the marble center is too small for my personal wishes I love cheese! The entire tray is heavy and sturdy. It is a deep brown color with hints of gray and black veining. This matches the black marble. It cleans easily with a quick soapy rinse and an occasional smear with Boos wood lotion will keep the wood shiny and healthy. Everytime I use this I receive a dozen compliments. You will not regret buying this or giving it as a gift.
