F. Dick Ergogrip 7' Fillet Knife, Flex.The title says it all. Bought this knife a few months ago and just got to use it. Filleted a salmon caught just this weekend, and WOW. Dangerously sharp, flexible (but not too flexible), excellent handle size and grip. Was worried about the point not being "pointy" enough to start filleting or getting under the skin. No worries now. Although the blade curves to a point, it is definitely sharp enough at the point to do the task.

Will probably buy two more one for a gift and one for the camper!

The product arrived promptly and proved to be a wise, frugal purchase among the myriad offers which are far more expensive.

Swiss Rex Vegetable Peeler

Swiss Rex Vegetable PeelerI purchased a peeler similar to this one about 15 years ago, it finally bit the dust last month. I couldn't find a replacement in any of the retailers so I settled for the typical peeler every kitchen place sells. I paid more money for a piece of garbage that was dull and made peeling potatoes and carrots impossible. I finally found the Swiss Rex veggie peeler on line (which is the same one I originally had), purchased it for way less that the one I bought which was useless. I got it within one week and it works just as well as the one I originally had. Why people settle for the typical store bought ones, I don't know...

Bought two of these peelers about 20 years ago at a home show. Our church was just getting into free community feeds on Christmas Day, and I was doing the butternut squash about 40# at the time. Business has picked up over the years last year we did 250# of squash. Currently we purchased the squash peeled, but the quality varies all over the lot from OK to rotten. Squash is very perishable once peeled. If you've gotta have a good squash, peel it yourself.

Anyway, back to the peelers. Put #1 in the kitchen drawer, put #2 on a nail in the floor joists in the basement over my workbench. Peeler #1 has been used to do Christmas Squash (hundreds of pounds), plus the normal potatos, carrots, etc. for 20 years! Peeler #2 is still hanging from the nail.

Recommendation? Buy two see how long it takes for you to use your second one! Yeah, there's no ergonomic 'cushy' grip and how to hold it is kinda an individual thing but it peels like a champ.

This peeler slices thru potato skin like butter! It's 10x better than any old "regular" peeler. I will use these until the day I can no longer cook! :D

I have had one of these peelers for more than 10 years now. My brother brought it back from Switzerland for me. They peel virtually everything. I regularly use it for carrots, apples, and potatoes. It also works well for tougher skinned vegetables like butternut squash. Most peelers can't handle a butternut squash, but the carbon steel blade of these works very well, and they are constructed to be sturdy enough to handle the job. I bought new ones so that I had a backup for my old one and I wanted one for my neighbor because she didn't have anything that would peel a butternut squash.

The only negative of this peeler is that you should only hand wash it and dry the blade off soon after washing. Leaving the blade wet will cause it to rust, which can be cleaned off with a scouring pad if necessary. With the proper care this peeler will last many years.

Tojiro-DP Gyutou 9.4" (24cm)

Tojiro-DP Gyutou 9.4'I love this knife, it's sharp right out of the box. It's inexpensive and does its job. Although I prefer the Wa-handle over western style handle, but it does not make really much of a difference. At first I was hesitant to buy this because the Tojiro isn't widely known compare to Global, Shun and other Japanese Knife Manufactures but it's highly quality and decent pricing should sway you from making this decision. In fact I actually bought two Tojiro knives both of them 24 cm, one Wa-handle and the other western handle. Before this knife, I typically used Chinese Clever and Sashimi knife as I worked in a Buffet restaurant where constant cutting, chopping and slicing are required. Moreover, sharpness of the knife is essential to all chefs and cooks. This knife is very light, don't use it to chop bones and/or frozen stuff as this will dull the knife and loses its sharpness.

I did not purchase this product off of Amazon but the knife is lying to my left. That said, this review is only about the knife. I'm no chef but I've been using this knife at work for almost two months now.

Out of the box: Very sharp (yes, it will shave armhair and glide through paper). Fit and finish issues around the handle, particularly behind the bolster and along the handle. Pretty much where the handle meets the tang. This in no way affects its performance.

This is a cladded stainless knife with a VG-10 core sandwiched between softer stainless. Sharpens easily and holds its edge well. If you prefer a lighter knife, this one may not be for you as the handle is a little hefty. I have handled the Tojiro DP 240mm wa-gyuto (same knife, Japanese-style handle, ho wood and plastic ferrule I think...) and it is much lighter. Despite the longer handle, I feel a pinch grip is more comfortable with the wa-gyuto. The 240mm length is nice to have, especially when tackling multiple heads of lettuce, cabbage, or hakusai (nappa, chinese cabbage, whatever you wanna call it). If you plan on using this knife at home or in a cramped kitchen, you may want to consider a 210mm. Personally, I'd go with the 240mm and then buy another knife or two for other specific tasks rather than rely on one knife for everything.

All in all, I'm very satisfied with the knife. When it comes to Japanese knives, it's nothing fancy but you get what you pay for. What you're paying for is a no-nonsense, hell of a deal that is suitable for professional use. If you're avid about maintaining your own knives, doing so with this blade should be a breeze.

I am a rather large fan of this knife. For those of you who like to cut things like you can't believe, this knife will knock your socks off and then slice them in half! You will have to put on new socks because of this knife!

On a more serious note, this knife style is essentially a Japanese interpretation of a western chef's knife. It's not exactly the same shape (otherwise it would simply be a western chef's knife), but it's close. Other than that, it's Japanese through and through. The blade is narrower and the metal is harder. It can take and keep an edge so sharp it can cut through even the strongest of excuses for your poor behavior.

Compared to fancier Japanese and German knives, it might not be as smokin' hot & sexy in the looks department, but that's because it's too busy being a superior knife.

Also, this bad boy rusts, which forces you to take care of it.

I fell in love with this set when I saw some of the pieces in a local restaurant. Reasonably affordable, considering what you're getting --a truly unique collection of flatware. It's a rare visitor who doesn't marvel at its sleek design and whimsical touch. Just one word of warning: if you don't have a dishwasher, and you are an "air dryer" like I am, be sure to dry the pieces with the stems in the air. Otherwise, they will start to develop slight rust because water gets trapped in the swirly part (which has a matte, NOT STAINLESS finish!). This is not a complaint, but rather a warning, as the problem is easily avoided by keeping the stem out of standing water.

My husband and I registered for the Pottery Barn Fiddlehead flatware when we got married 10 years ago. To my horror, a spoon got thrown away at Thanksgiving a few years ago. Pottery Barn stopped making these and they have no way to get replacements, so I assumed I'd never replace the spoon. When I saw these, I figured they were worth a shot, especially at 1/3 of the Pottery Barn price. I am thrilled to report that the two sets of flatware look identical.

These are oversized, as one reviewer noted, which might be a downfall, unless you're trying to match a Pottery Barn set, in which case they are the perfect size. As a bonus, this line also makes a variety of serving pieces (Pottery Barn only had a 2-piece serving set), as well as a line of mini forks, spoons and knives which I bought for appetizers and condiments.

I am completely pleased with this set. It looks much more expensive than it really is, and it matches my current set perfectly. I love the look of these pieces, and I am very glad that I gave them a try.

Nenox G-Type GyutouHands down the finest knife I have ever owned. I used to get a lot of flack from people for using a "demo" knife for everyday usage in the kitchen. It is worth the investment , the price is steep but for a serious chef it is an investment, I have never had a problem with this knife holding it's edge. Needs little to no sharpening, I sharpen mine once maybe twice a month, and steeling the knife takes some practice since it's an 80/20. I sharpen mine on 11 degrees and 15 degrees. I also use a jewelry polishing cloth to keep it like new. If you get any stains on th knife a little ajax or comet will remove them with ease.

The GOOD

This kit has the perfect blend of quality and selection you could want.

Handles quality with a solid ring to keep out unwanted food.

Blades have a great out of the box edge.

Scissors, contoured cut a chicken into a quarter with no effort at all.

Great Case

I have not used the filet knife yet but think it will be good also.

The BAD

Cutting board is nice but if you cut any meat or fish on it you really cant just throw it back in the sleeve.

These are good scissors. I don't think the grip is not the best but they do get the job done. Blue color is more toward the purple side, but they cut fairly well. Not the best scissors but far from the worst.

Giesser 6' Granton Curved Boning Knife, PrimelineI was turned onto Giesser knives by a professional butcher on Youtube who has been practicing his craft for 30 years. The point of his video was how to process a deer. Due to popularity of the video and many questions that he received, he did a follow up video where he briefly explained the tools he had used in the process. Long story short the knives were secondary and were not presented like an infomercial.

THE KNIFE

The knife is the highest quality. Construction is impeccable. I love two things in particular. First the handle has an amazing rubberized feel that gives good grip that should be helpful when things get wet and messy.

I also like the offset blade angle that will let me get the blade in to work without needing to have my hands parallel and in the meat.

I will hopefully use it for a large processing job next week and I will do a follow up to this review about how it worked.

The picture could be updated. The knife I received had semi-circular scallops ground into the edge. I understand the use of them but I really didn't want them on the knife. It leaves more surfaces to clean and for fat and such to get caught on.

Winco High Carbon Stainless Steel Bread Knife, 12 inch -- 1 each.I needed a long, sharp bread knife for my Bread Pal Slicer, which is wide enough that an 8" or 10" bread knife just won't 'cut it', if you'll pardon the pun.

This knife, with it's 12" blade, is the perfect tool for the task.

Beware of one thing when shopping for 12" knives: A 12" knife is supposed to have a 12" blade. However, I've seen some [right here on Amazon] that claim to be a "12 inch knife"; but, in reality, are 12 inches in TOTAL LENGTH.

I highly recommend this knife.

In August of 1882, master German knifesmith Frederick Winwarre (pronounced VIN-varruh) came to this country with nothing but the clothes on his back and a small forge. The Winware 12" Bread Knife Stain Free High Carbon Steel lives up to its name and its reputation. I have poured literally gallons of ink upon the blade, with nary a stain. My own analysis of the carbon content in the steel blade was carried out in a home laboratory without proper equipment, but I can confirm that the carbon content is indeed high. The length is also precisely 12" -a traditional length, suitable for cutting the long hot-dog buns intended for foot-long Frankfurters. While I have only cut several hundred loaves of bread since my purchase last week, performance has been strong. I will think fondly of Frederick Winwarre and the American Dream as I slice bread in the years to come.

Finally, I can now slice my homemade bread without getting frustrated. I use one of those wooden slicing guides and my shorter knife was constantly slipping out of the guide slots. No such problem with this baby. It allows me to make long slicing strokes that feel natural and comfortable. The blade is a full 12" and the total length is 17 1/2".

Long Sashimi Rib Sushi Knifethe knife is great for the price, i do not like the raw wood handle but maybe thats just how these knives are? i cover mine in foil since while working with rice and raw fish my hands are wet. the knife needed a quick sharpening once it arrived. i will also be ordering a hone stone set to keep this knife sharp. it cuts threw fish VERY well. it cuts threw my sushi rolls nicely too. its not that great for cutting cucumber but, maybe thats just how sashimi knifes are. i will use this only for fish and cutting sushi rolls. it was a Christmas present and i love it.

So you basically get what you pay for. If you're looking to buy a memorable sashimi knife I encourage that you spend over $200.00. If you're a novice and you're just starting sushi, this knife is decent.

This thing Can CUT SOME FISH GOOD. Im able to slice the skin off my salmon with little to no effort.

Only down side is only one side actually looks like a knife. flip this sucker over and you have this flat peanut butter looking knife. And Im sure you can make some good peanut butter sandwhiches with it. But dont waste the use of this knife. The only reason why I dont give it 5 stars is because its like a one sided knife. Villeroy & Boch New Cottage Cutlery 5-Piece Place SettingI have always though very highly of Villeroy and Boch products. I ordered 6 sets of New Cottage Cutlery Setting. One set had a knife that had heavy staining of rust. I never seen a brand new set of flatware, especially Villeroy and Boch's price point, having rust in the flatware set. I return this particular set (Great Amazon.com return policy!) and waited for another set. Unfortunately, the set was temporarily out of stock. So I waited for about 2 weeks for the new set to arrive. And when I opened the new set, the knife also had a small rust spot where the blade meets the handle. I try to remove the rust with Barkeeper's Friend, then I found a small defect on the finish of the knife. This unfinished metal was the cause of the rust build-up. Then I finally found the country of origin of the knife. Guess where it's made??? China. I was very disappointed. So I return this set and was willing to wait for another set. Then Amazon.com wrote that most likely another set will have the same problem and won't bother to sent a replacement set for me. They will only credit me back this set. So now I only have 5 flatware sets. So should I keep them and find another set somewhere else? Or should I return all of them???

I love this set of flatware. I had none of the problems that other reviewer had. I've had them over a year and they are not rusting and I have no problems with any of them. I had ordered twelve sets and plan on ordering more in case they ever get discontinued because they are so pretty.
