Mercer Cutlery Genesis 4-Piece Forged Starter Set, Steel/BlackIf you are searching for fully forged, qualities knives on a budget, I highly recommend the Mercer Genesis series. I am a bit of a foodie and have used ceramic blades, Wustofs and Henkels in the past. On a functional level, these knives pair right next to those. Used in culinary schools, the blades are of top quality and the knives are well balanced in the hand. Some who I have shown my knives to have objected to the synthetic "soft" handle, but I think they were mostly just mad at the price I paid when they compared these to their much more costly German ones. Are they as pretty as a set of Global knives? No. But they are sharp, durable and won't break the bank. If you are looking for a show set, you might want to look elsewhere, but if you have some cutting to do, these knives should please.

Bought this as a gift for a friend for Christmas and he loved it. I'm a culinary student and I think my Mercer Genesis knives are great.

An excellent kit with most of the tools needed to mix all types of drinks. High quality tools easy to clean and easy to use. The biggest flaw was the plastic jigger in the kit, which did not look and feel as nice as the rest of the steel tools. There was an easy fix, just buy a steel jigger and remove the plastic one. Strongly recommend.

Purchased this as a gift for a new "mixologist"..and it is beautiful. Pricey, but beautiful. The items are all very nice quality, with the exception of the dual shot, which is plastic, but who cares, purchased another. The "kit" has a place for everything, rolls up to be carried, seems to be a very complete set. Really nice and highly recommended.

Bag's zipper didn't last a week. Did not think the C press was constructed as well as the rest of the tools. If it would of included a microplane it would of been the complete professional bartender's roll. Knife sucked. Best spoon, strainer, muddler, and channel knife I have used in my 10 years of bartending. Love the wine key. I recommend to anyone who shakes, stirs, and muddles for a living.

The package I received was larger than I expected and what a great surprise. I had assumed this was a smaller travel sized set but it wasn't. It is a complete set and it is about half the size of a rolled up yoga mat. It's a beautiful set of tools and every piece is quality. They've really thought about the products, what we bartenders need to perform our jobs well. There is even a pocket for the shaker, which for some reason I didn't know it was included. If you'd like to have a mini chopping board for cutting garnishes, they have another set of tools on Amazon that is a snap close case. Something to consider as well. It's definitely worth the price. No buyer's remorse here.

Messermeister Angle Guide for Sharpening StonesAs soon as it came I had to try it out. I used an old kitchen aid chefs knife I had for years and didn't care for anymore, needless to say I have new knifes I don't want to touch and hoped I wouldn't have to with the help of the guide I just bought. I did my best to do the guide justice, and it works well. I ripped out a page of a magazine and tested it out, and it went though clean.

The only thing that bothers me about the sharpening guide is that it does have ceramic at the bottom to prevent the bottom of the guide from scratching your whetstone. There is a small divot in the center of it that separates it into two pieces so when I do my sweeping motion, it has a slight drop in between the two pieces, however how minor it is it reflects on the knifes profile. It seems to be made for chef knifes only 7 to 8 inches, not fillet or some kind of a deboning knife.

All in all I am very happy with it.

I bought this angle guide for my Shun knives. As some of you may know not all the brands out there have the same blade. Shun (and most Japanese steels) are sharpened at 16 degrees, while many German steels, and others, at around 20 degrees. While reading the product description ("the guide will allow you to initiate the stroke at approximately 15-20 degrees") I was hoping to get the 16 degrees that my Shun deserves. After measuring the angle with a digital instrument (see pix) I got the bad surprise. To make a long story short: the angle guide works ok, but not on my Shuns.

You'd probably do better with a protractor, a pen and piece of paper to establish a real guide to the proper 17 and 20-degree angles used in most kitchen knife sharpening. Won't fit medium-to-smaller knives properly, and especially if there's any curve to the cutting edge or spine. The "instructions" are scant, to say the least.

The best thing about this product is that it is plastic and a great item to start to teach you the angles needed when honing knives. Eventually you should do away with a product like this however to get started this is a great product.

Cons: Product is not for intermediate or advanced honers.

Great for a 20 degree angle on knives. Slides smoothly on the spine of a knife and allows you to focus on sharpening properly with either back and forth or one sliding motion along the edge. Now I'm confident I don't accidentally blunt the knife with my less than dependable technique. This complements a good waterstone or continuous diamond whetstone. With thicker knives like cleavers or longer knives like slicers you may have to change your technique slightly to ensure the guide actually touches the whetstone.

If you have a Japanese knife, get the Minosharp guides as the angle is completely different.

I was extremely disappointed with these knives. When I purchased these, I purchased what was advertised French Laguiole Stainless Steel Steak Knives. But they were FAKES! THey were NOT laguiole, and they were most certainly not stainless. In fact, they came with rust on the edges of the handle. This made my experience even worse, since I obviously bought the knives new. I had to send them back immediately and will most definitely not buy from this vendor again.

It fits my 10" Chef's knife, 7" Santoku (w/ a little wiggle room), Henckles bread knife, 4 1/2" utility knife, 6 Steak knives, Kitchen Aid kitchen Shears, w/ 6 empty slots remaining to fill. However, I was a bit disappointed that their didn't seem to be a slot that fit my Santoku or my Steak Knives perfectly. I just thought it odd since the brands matched.

I am happy with the overall look and organization of the slots. Prior to purchasing I reviewed the Henckles blocks, but found there slots and layout a little odd. It might have worked, but I had the money and figured I go with the matching brand. If I had to do it all over, I would have bought the Block w/ the matching set. Prior to buying my first two Victorinox knives, I didn't know I was going to like this brand that much.

After receiving the rose-handled Victorinox steak knives as a wedding gift, I wanted to upgrade our storage block as well. I shopped around and couldn't beat the price, the storage capacity and the attractiveness. I would have purchased one from a different maker if made better sense. It looks great-very eye-appealing. I would recommend on the factors stated above.

The slots are too narrow to hold other than 2 8" Victorinox knifes.

I can't fit my 7" santoku, 10" bread and 8" chef into the block at the same time.

Save your money and buy the snap guards or find another block.

I don't have room for a mag-strip or I'd go there. I figured this block could

accommodate at least 3 top end knives from the same vendor but that's not the case.

It is well made and works for knives that fit. Maybe it's perfect for you if you

don't have any large knives but I can't really recommend it to anyone.

The quality of the spoons is horrible. They really feel like those you get at 4/1$ at the dollar store. The edges are randomly serrated and they feel like they are going to bend when trying to tear some grapefruit fibers. They are NOT thick at all.

Had these for a short time. One of the spoons broke while I was stirring my broccoli rice casserole. I only had 1 package of broccoli and a can of soup at the time. And, they're still new in my eyes. It's sad because they are an adorable set of cutlery. But, I don't know if the others will break, too or if that was a fluke.

Chicago Cutlery Woodworks 19-1/2' x 13-1/2' Cutting BoardThe board is the right size for carving up a whole chicken and the "moat", while modest in width/depth, kept the counters clean. Another plus is that it is reasonably light for its size. The one small surprise for me is that the wood is so very dry. It soaked up two very generous applications of mineral oil very quickly. If it doesn't come with oiling instructions, you'll still want to oil it as soon as possible and perhaps with multiple applications each spaced out by a day.

After seasoning the board, hand washing, and 6 months of happy use, the board split along a glued joint. This happened after it had been sitting on the counter for a week under the weight of a homemade loaf of bread and a medium-weight glass cake cover. My best guess is that the board had become just slightly (and most imperceptively) warped and the constant distributed weight provided enough stress to crack apart the glue overnight -6+" of it! I know nothing about woodworking but I doubt that seasoning alone can strengthen a joint or prevent minor warpage. So I'm lowering the product to a 3 star rating.

1/17/08: Maybe I need a life but I just thought I'd add that there has been no further splitting after 1.5 years of use. I guess nothing is perfect and I certainly still enjoy using the board very much.

I just recently ordered and received this item (with lightening fast speed) and I am really impressed. I won a set of nice Chicago Cutlery knives in a survey contest and started doing some research on how to keep them nice and sharp for the longest time possible. I found out a nice good board of maple or cherry that was at least an inch thick was the best bet. I am following the oiling instructions since before I didn't do that and all of my cutting boards would split. Also, not allowing my hubby to put them in the dishwasher is a good idea as well. It looks like it will stand up to the job and it is big enough to carve a ham or roast so we love it!

This cutting board is the right size and has the right "ergonomics." Though it could easily be a "both sides" type cutting board, you'll likely only use the top side with it's perimeter juice groove (sorry, don't know what it's normally called--perhaps PJG will catch on...) and the classy "Chicago Cutlery" moniker burned-in to the face. But, hey, we just talking about wooden cutting boards, right? What besides good size, the right weight, and a PJG do you need? Well folks, this board has got it! It's beautiful cherry color--not pine or plastic-colored but truly gorgeous cherrywood coloration. And after seasoning my new board with mineral oil before first use the deep color was only enhanced. This board is a fine product.

Well, Now I bought this after reading plenty of reviews and I am only a satisfied customer. I still feel I could have made a better choice. The product turned out to be just ok. It bent after couple of months of use. I followed all the instructions of care before using it but in 2 months I saw a dent and it was slowly bending. But after 6 months, I see it is coming back to its shape. I don't know how it is possible but it happened.

It is large board. You can cut couple of onions, couple of tomatoes, 3 potatoes, bunch of cilantro and still find place to chop up garlic and ginger. That's something I figured out!! But one thing that didn't go well with me were the corners. For some reason I wish they were fully flat without having those ridges. Food gets stuck in between them and clean up becomes a hassle. And if you want to slide off the veggies from the board to your hands it becomes quite hard since it gets stuck in those ridges.

For the price it is ok!! but I would still look around for something better! Final wordI am not ecstatic about the buy!!

The block itself is beautiful and holds both sets of my knives, the Guy Fieri and my calphalon, however, the first one sent had imperfections where the seams were not mesh on one side and the paint didnt cover it. Amazon was very very quick to send another one and this one looks great. I do expect to have some paint chipping etc after some use since it is painted but it still looks great and holds it all!

Forschner Fibrox 7-pc. Cutlery Roll Knife Set

Forschner Fibrox 7-pc. Cutlery Roll Knife SetI bought this for culinary school last September so I've had lots of time to really evaluate the set.

chef knife I'm a 6' 200lb guy with big hands and I find this knife unwieldy. 10" is just too big for my taste and I think many people would find it clunky. 8" would have been a much better size for the majority of buyers. The quality of the knife is fine, the edge comes sharp, has decent curvature for chopping and steels well and is easy to resharpen on a stone.

paring knife too long for a paring knife. It extends an inch further than you want for most paring operations (peeling, turning). It's nearly big enough to be called a utility knife. Luckily I also bought the 3 piece Victorinox paring set, which has a shorter paring knife. The knife quality is fine again but why did they choose this length?

boning knife this would be classed as "stiff", which is great for stuff like beef, veal and lamb. For chicken it's ok. For fish it's fairly useless. You need flex to fillet and it's not long enough. Get a longer, full flex knife if you need to do fish. It sharpens well, holds an edge somewhat well. I'm not amazed by this knife for butchery work.

bread knife great edge for bread. This one would actually benefit from being 2" longer, whereas the chef/paring above are too long. A little more curvature would have been useful too. A pretty good knife for slicing bread, trimming sandwich crusts, etc.

carving pretty decent and reasonably good length. Longer would be better but it's acceptable. Good edge and good geometry for it's intended use.

steel works fine with these knives, a bit short especially for the carving knife. Watch it with the longer knives.

the roll it's light, the pockets for the knives are just ok. Paring knives fall out while some other knives are too hard to slip in. It has a few pockets inside for spoons, peeler, etc. You can't expect much for a roll that basically comes free with the knives.

So overall, chef and paring are overly long whereas the bread isn't long enough. The carver is acceptable, the boning knife is maybe too stiff for broad use. A semi-stiff would be a good compromise since most people don't need a full stiff boning for beef but do need some flex for chicken and fish.

The knife quality is excellent for the money, some of the knife selection is questionable. If you are comfortable choosing each knife I would suggest that instead.

This is a great set of kitchen knives at the price. Forschner Fibrox knives have been top-rated by a lot of different groups, including Cook's Illustrated; I liked them even before I knew that, just because of the "Victorinox" stamp on the blades, just like my childhood Swiss Army Knives.

These knives handle beautifully and cut amazingly well; I've bought five or six of the "paring' knife in this set over the years (my dog likes to chew the handles up, for some reason). When I wanted to upgrade to a full set of kitchen knives and get a honing steel, I got this set, and it was a perfect purchase: the boning knife made dismembering my first whole chicken an almost comically easy process (although the directions in the Joy of Cooking helped too).

The knives are light and somewhat flexible, and they're made with stamped rather than forged steel, but they still function excellently despite that -they give forged function at stamped price.

Drawbacks:

Some people may find the largest knife in this set, the 10" Chef's knife, a little big and a little lightweight for the size -a slightly heavier, slightly shorter knife might be a little bit more easy to use.

The set also comes with a portable "knife bag" which is probably useless unless you're part of a traveling chef's road show, but if you're using a magnetic knife strip or buying a non-traditional knife block (like the Kapoosh brand knifeblocks, though the 10" chef knife might not fit into those), and don't want the wooden knife block most other knife sets come with, this set gives a great selection of excellent-quality basic kitchen knives at what I found to be an unbeatable price. A perfect choice for a first knife set if you don't want a wooden knife block for whatever reason.

EDIT: After having used these knives for about a year, I have to say that everything above is still valid, but they do dull a little quickly -you might want to grab an electric knife sharpener to keep them well-honed. Alternatively, if you want to teach yourself how to hand-sharpen knives, these would probably be a good set to practice on.

My son finished culinary school and needed a new set to start work. He was looking at all the recommened high priced knife sets. I found these and looked at reviews not only on Amazon but other web sites. After seeing soo many positive reviews from professionals I bought these for him. He was very impressed and really likes them. He says they are comparable to the more expensive ones and makes a great started set.

I have thoroughly enjoyed owning and using a this matching set of knives over the past few months. My prior set was simply a hodgepodge of marginal quality blades we've acquired since our marriage 20-odd years ago. I waited to review this set because I wasn't sure how they'd hold up after a few uses given the price, but I've been pleasantly surprised.

They don't hold an edge indefinitely, I've had to sharpen the blades I use most often a couple of times so far. I have used the included sharpener for the longer knives, but use my Furi for the smaller ones, and I prefer the edge it gives me.

This is a great set for someone in their first apartment, or a good inexpensive wedding gift that will be appreciated by a couple that isn't looking for something that is chef quality.

The knives feel good in your hand, and are relatively lightweight without feeling cheap. The scissors are also very nice and work smoothly.

Customer review from the Amazon Vine Program I picked up this knife set along with Ginsu Koden Series 14-Piece Cutlery Set with Black Blockshortly before the holiday season. I used both sets during the holidays and I have to say that the Chicago Cutlery set is a better value for the money. The blades are sharper, there are six more blades in the set and the block is better quality.

To give you a better idea of what you can expect I will breakdown the two sets. Please note, my review is for those consumers looking for a relatively inexpensive set of knives. Neither set is truly "professional quality"; the company's claims that they are should be taken with something less than a grain of salt. If you want/need that grade of knife you are going to pay quite a lot more for a single knife than you are paying for these two sets.

Contents:

Ginsu 14 piece set with 3.5" paring knife, six 4.5" steak knives, 4.5" utility knife, 5" boning knife, 8" slicer, 8" chef's knife and 7" Santoku knife. Scissors and plastic covered wood block.

Chicago Cutlery 20 piece set with 2.75" peeler, 3.5"parer, eight 4.5" steak knives, 4.75" partoku knife, 5" boning knife, 5.5" utility knife, 6,.75"santoku, 7.5" chef's knife, 8" slicer, 9" bread knife, sharpening steel, kitchen shears and hardwood block.

Design:

Ginsu All blades, with the exception of the santoku, are serrated and never need to be sharpened. This is supposed to prevent the tearing of food and eliminate the hassle of keeping the blades in good order. The blade handles are stainless steel and there is a black end piece with the Ginsu logo imbedded in it. The knives fit well in the hand, feel a bit light and are not especially sharp. (There is no comparison between the Ginsu bread knife and the Chicago cutlery one the Ginsu flattens fresh bread and tears the skin of tomatoes, the Chicago Cutlery knife glides through both. The santoku knife in this set is the exception it cuts very well but does need to be maintained. The knife set itself is pleasing to look at and would be a sharp addition to those kitchens with stainless steel appliances.

Chicago Cutlery The non-serrated knives have a tapered edge on the blade for optimal sharpness, they also have the typical hollow ovals seen on most santoku knives to help food release from the knife. The metal tang extends from the tip of the blade to the end and this strengthens the knife and also gives it balance in the hand. The scalloped edge blades have the full tang as well. Both styles have a triple rivet securing the handle to the tang. The handles are black plastic and are formed to fit the hand. The knives slice well, fit nicely in the hand and have a pleasing weight to them. The knife set will look appropriate in most kitchens.

As noted above, I would have no qualms about recommending the Chicago Cutlery set to the typical weekend warrior cook. It is a very good value for the money. The Ginsu set I would recommend only for those who like a bit of flash, very little hassle (with sharpening), a smaller unit and don't mind mediocre performance.

*For purposes of this review I am putting these knives in the dishwasher and seeing how they hold up, so far, so good, if I note etching, water spotting or other undesirable effects I will update. (Side note: years of experience and advice have taught me to keep my sharps out of the dishwasher.)

Prepare to laugh. I'm 66, was a workaholic, never cooked, now retired, live in mountains raising and showing dogs. My neighbors are hunters and give me Elk and Venison meat scraps for my dogs that require scraping the meat off the hide. After suffering through 2 seasons of this all-day-long scraping with a knife I probably picked up at the grocery store 20 years ago, I went searching for good knives. I spent a great deal of time searching and reading customer reviews. I finally decided this was the best bang for the buck. I cried the first time I processed these meat scraps....These knives are AMAZING! Next time I pack for fire evacuation, these are going with me!!!!

I've had a set of the Chicago Cutlery metropolitans for 10+ years. That set is great. I purchased this set for a friend......wow......what a difference. These knives are no where near balanced, the blades are much thinner, the handles are two pieces of presumably hollow plastic riveted to the tang. Just the chef's knife from my set outweighs three of these cooking knives. I was embarrassed when she opened it, handed me one, and said......."These are nice, are you sure they are the same ones you have?" Well "Chicago Cutlery" and "metropolitan" are embossed on the blade. That's where the similarity ends. So much for trusting in a great product line over time. I am saddened by this. Amazon was great about it though, and took them back with no fuss.

Customer review from the Amazon Vine Program Chicago Cutlery produces several lines of cutlery and Metropolitan is their budget line. I already knew this so I wasn't expecting fine knives, but these are surprisingly better that I would have thought.

Included in the set is a large, hardwood block, a honing steel, kitchen shears, eight 4.5" steak knives, a 2.75" peeler, a 3.5" parer, a 4.75" Partoku, a 5" boning knife, a 5.5" utility knife, a 6.75" Santoku, a 7.5" chef's knife, an 8" slicer, and a 9" bread knife. (The Partoku is Chicago Cutlery's name for this knife, which is a cross between a paring knife and a Santoku knife.)

The block is large, measuring 6 1/4"W x 12 1/2"H x 12 1/4"D, so it will take up some room on your counter. It's heavy and is one of the nicest components of this set.

The kitchen shears are exceptional! They are truly some of the best I've ever had.

The knives all feature a full tang meaning the blade runs all the way through the middle of the handle, which is attached with 3 rivets. The handles are nicely shaped and have good weight. The handles are a black, polymer material and are well finished.

The blades are stamped, high-carbon stainless steel. (Stamped knives are the most inexpensive to manufacture and unless the steel is of very high quality, they tend to dull quickly.) All of the blades are very lightweight. This may be a plus for folks who have trouble wielding a big, heavy knife. There are no bolsters on these knives, as bolsters are only on forged blades. (A bolster is a thick ridge at the end of the blade where it meets the handle. It is designed to prevent hand slippage and reduce hand fatigue.)

In my use of these knives, I find the steel to be a little soft and so the edge has a tendency to roll. I recommend using the included honing steel every time you use one of your knives. It only takes a couple of seconds and makes a huge difference in performance, especially with inexpensive knives. They arrive quite sharp and take an edge well. I suspect that they will need to be sharpened fairly regularly so I would purchase an AccuSharp Knife Sharpener With Replacement Blades to go with this set. I would also be careful not to put these knives in the dishwasher. The handles could probably take it fine, but the blades would likely suffer for it and might even develop some light rust spots due to the inexpensive materials used.

Chicago Cutlery also warrants their knives for life. It is a well-known brand that has been around for a long time so this warranty is likely to be upheld.

This set is sort of an entry level item, with some nice features. I would say it would be best for someone setting up a household for the first time or for someone outfitting a temporary living arrangement. These knives will not please someone who is used to high quality knives or who does a lot of chopping and cutting on a daily basis, but they are decent enough for starting out and they have a nice assortment.

I give this set 3 stars because the box and the product page claims professional quality knives, which is vague and misleading. If they advertised these knives as a budget or value package, I would enthusiastically give them a 4-star rating because it is quite a nice set if you know that these are not top-quality knives that will last you a lifetime.

Now I know I can scour them off, but can you really call it stainless when the rust pops on first washing? No, you can't.

All I can say is WOW! I am a sushi chef that has used many knives, and the Kasumi line of knives is a very strong line of knives. (No pun intended)

I first bought the 8 in knife, looking for a new roll cutting knife (which it's the best decision I've made in knife buying), which led me to look and then purchase this one.

Personally, the combo of the 8 in. and this 10 in. is the best duo I've used standing behind the bar. This knife was exactly what I was looking for.

The 8 in. for rolls, and this one for just about everything else (not prepping but in the heat of things).

It's well balanced, feels good in my hand, beautiful, and retains a great edge (60 Rockwell Hardness rating).
