The rivets on all of the handles are not ground flush. They stick up. I have purchased and used Chicago Cutlery Knives for over 30 years and never seen inferior quality such as these. I wasn't allowed the 30 days after I received it. The 30 days from the date of purchase was used. It is still new and in the orginal package. Please advise. I would like replacements. Thanks, John

J.A. Henckels International Fine Edge Pro 8-Inch Stainless-Steel Chef Knife

J.A. Henckels International Fine Edge Pro 8-Inch Stainless-Steel Chef KnifeI bought this knife because I love my other, more expensive Henckels, and needed something in about this size. I figured I'd try the low-priced model to see how it compared.

Out of the box the knife had a great edge, and worked exceptionally. After a couple weeks of heavy use, however, the edge was all but gone. A quick run through a Henckel sharpener, however, and the great edge had returned.

You'll need to sharpen this knife a lot more than the more expensive versions, but if you don't mind taking the 10 seconds every other week to do this, you should be very happy with this knife.

When I walked into my local Meijer's I was looking for an inexpensive knife to beat up on. Allow me to clarify... I sharpen my own knives of all varieties. Kitchen, utility, tactical... You name it, I sharpen them. I like to be able to put a razor sharp shaving capable edge on all of my knives. I was looking for a very cheap knife to use as an instructional tool for my wife. I wanted to teach her some basic sharpening skills, and she needed something to practice on. As a cutlery enthusiast, I enjoy doing research on varying knife steels, buying knives that use them, and then testing their qualities and performance. So, when I purchased this knife for under $10, I wasn't expecting much. I was looking for a straight edged bolster-less 8" plus chef's knife, but aside from that, I really did not expect to like the knife. However, after testing it straight out of its package, I was very impressed with how well it performed. This knife is an excellent slicer for fruits and vegetables. Instead of having my wife mess up the finish of this blade, I decided to add it to my collection.

Here are the reasons why I have rated this product 5 stars:

1. Even though its thin blade profile may give the impression of being cheap, it actually makes this knife an excellent slicer, outperforming heavy more expensive German knives, Henckels or otherwise.

2. Because of the thin blade, even though it is a full tang handle design, it is very light weight. For someone who may have wrist issues, carpal tunnel, tendonitis, etc, this knife will feel very good in hand. I have found no balance issues either. It is perfectly balanced at the hilt, which also adds to the in hand feel.

3. It is very inexpensive!!! Did I mention I purchased the knife under $10? This is the biggest selling point. I wouldn't expect a whole lot from a knife at this price point, but if you understand the limitations of the steel at this price point(i.e. needing to be re-sharpened more frequently)then you will be very happy with its performance. Also, as an aside, I have re-sharpened this knife once since I bought it, and it was very easy to put a hair shaving sharp edge on it after a few minutes on my water-stones. So, I suppose the final selling point would be...

4. Ease of re-sharpening. Even though it won't hold an edge as long as a knife with a premium steel such as vg-10(which would also cost 8~15 times as much), it was very easy to re-sharpen.

In summary, I think this was an excellent purchase for the money. It outperforms some of my much more expensive chef's knives when it comes to slicing. It won't hold an edge forever, but neither will any other kitchen knife. If you never want to have to re-sharpen your knives, but just want them to have a sort of blunt edge that stays the same for years...then get a butter-knife instead :)

Also, I just remembered, the handle isn't the most comfortable thing in the world in terms of its shape(I can't use the same "pinch" grip I use on my more ergonomically designed knives). It felt a little blocky in hand, and I had to modify my grip a little to make it work. But, again, for the price, I really don't find it to be a show stopper. Once I fixed my grip to accommodate the shape, it performed very comfortably and beautifully. Honestly, if you don't already have a different grip that you are accustomed to, then you may never even notice. And to be sure, I actually change my grip slightly when switching between knives with different handle shapes, so it really wasn't that big of a deal.

I would definetly recommend it for the casual home cook, it is a very reliable knife, but if you are a cooking student invest more money you will want a more professional knife in the future

I paid about [$$$] for this knife and have used it for a month now. it's a very good knife for this price. the blade is thin at the sharp edge and is thicker that the top; so it is sharp and strong at the same time. it's not carbon steel, so it will need sharpened once in a while but it doesn't take much work since the blade is thin. I use this knife all the time and i like it.

I don't cook much, so I needed an inexpensive knife which would be sharp and reliable. I've had it for several months and have not had to sharpen it once, but I use it only a couple times a week. It's nice and sharp, relatively well-balanced and comfortable to use, and cleans easily.

If you aren't serious enough about cooking to want more than one knife to use in the kitchen, this is an excellent choice.

I was really suprised the first time I used this sharpener. It worked great on my Henckels International Classic knives. What really suprised me was that it only took several strokes to get the blades razor sharp. Previously, I used the steel to reset the blades, but could not get the sharp edge on them that this sharpener accomplished. I will continue to use the steel to reset the blades (I don't want to wear them down too much), but using this sharpener instead is really tempting.

Construction: Think of two wagon axles, where, on each axle, the wheels can slide and bang in to each other. Then position one axle close to the other such that all four "wheels" inter-lace. The first set of wheels are dark, the last white. There is no way to hone only on the final stage. It's an all or nothing deal. The blade must pass through all four inter-lacing discs.

This thing is OK as a free gift with purchase but I wouldn't buy it. I had one very old Japanese steel blade parring knife. I used a steel to set the edge and ran it though. I got a decent edge with only modest effort. Next was an 8" Chinese "Titanium". Got an edge of sorts on that. Finally, a Chicago Cutlery 8" stainless steel chef's knife. Set the edge on a steel. Could not get an edge, the knife's poor grade steel was probably the cause. >>> Do not be tempted to run your better knives though this or they may be ruined. Not for Santoku style 15 degree blades.

Pros:

Sturdy footprint, good grip, and fairly idiot proof. Did sharpen several very old, abused blades that now can slice ginger paper thin.

Cons:

I don't expect this thing to hold up to more than a couple of dozen sharpening before the ceramic discs need replacing. Of course, you can not replace the discs because the body is glued. If the discs were replaceable, then I would have given this another star. Make this eco-friendly by include spare ceramic discs and I'll recommend for common knives for ease of use. Spend a few more bucks and get something with replaceable ceramic honing rods and with separate course or edge setter. Also, wheels can chatter and take chips out of some types of steel. I woulds, under no circumstance run a fine blade through this.

Global GF-27 - 7 inch, 16cm Heavyweight Butcher's KnifeGlobal's Butcher's Knife has been serving me quite well for some time now. It's been used for, unsurprisingly, some butchering, but at my last job it's main purpose was to break down lobsters. I forgot it one day and used my chef's knife, which now sports two cracks perpendicular to the edge from that one day. This guy, on the other hand, never suffered any damage (not, of course, counting dulling, which lobster shells are wont to cause). As with other Global knifes, the handle is comfortable, and in particular with this one, the handle is quite long which can be rather helpful with certain jobs (like trying to get into a joint without unnecessarily compressing the surrounding meat). Overall: very happy with it.

I use this knife to process deer meat and it works very well. Has good balance and holds an edge for a long time.

This is the most recent addition to my small, yet growing Global knife collection and I definitely have enjoyed using it so far. I personally don't like using my chef's knife for raw meat and then having to wash and sanitize it before using it again for other tasks while cooking so I decided to get a knife strictly for meat. This knife was an excellent choice! It is perfect for trimming and prepping all types of raw meats and its unique design has proved to be very beneficial in a variety of tasks that I have had trouble with in the past using my chef's knife. I have found the 7" blade on this knife to be the perfect length to give you enough blade to work with good sized pieces of meat while not sacrificing any control so you can really have some finesse in your work.

As with all the Global knives I own and have come across, the quality of this knife is just stunning. They are absolutely beautiful knives and perform so amazingly well day after day. If you have been considering getting a Global I urge you to do so...they do not disappoint!

Japanese Combination Knife Sharpening Stone K-80

Japanese Combination Knife Sharpening Stone K-80These King Stones are legitimate Japanese Water Stones made in, you guessed it, Japan. They are extremely versitile and are the highest quality stones I have used. However, there are a few more good companies out there. Water stones are true to the craft of knife honing and sharpening and is a useful skill to teach yourself. I highly recommend watching virtuovice (YouTube Name) on YouTube for excellent tutorials on how to sharpen with stones.

The lower grit stones like the 250 and 400 are great for taking out chips in the blades or reprofiling the edge to fit your needs or preferences. As a camper who beats on knifes and axes, I really need this benefit to take out those chips and these stones do so beautifully.

A good stone grit to breach the gab between the lower grits and the finishing stone is the 1000 grit. This will help smooth out the edge and give it some great sharpness. It also makes finishing the edge with a 3000 or 4000 grit stone an easier and less time-consuming step in the process. Finally, you should use a leather strop with a green and black compound to really get a good edge.

Bottom Line and Reccommending Sharpening System:

1.) 250/1000 grit King Water Stone

2.) 3000 or 4000 grit King Stone

3.) Leather strop with compound

You only really need the 250, 1000, and 3000 (or 4000) grit stones with the strop. I have seen the strop put a better edge than 8000 grit stones. Keep in mind a strop is only 30 bucks or so, and you could almost spend $100 on an 8000 grit stone. This reccommended sytem will make a butter knife scary sharp if you wanted it too. However, the stones are expensive and will loose shape over time depending on how much you use them. But the time you use them will definitely yield better results than a spyderco Sharpmaker (I have one). I also reccommend some sort of a stone holder like the Steelex Sharpening Stone Holder. This works well and makes it easier to work with.

Nice stone for the kitchen. I use the #1000 side to keep my chef's knives razor sharp. Lay the stone on top of a damp towel, sprinkle with water, and working a knife is a breeze.

I got this for my giant Chinese cleaver so my kids won't slice their fingers when reaching in the drawers. This is the 3rd one I've ordered for those oddly shaped knives that don't fit in the knife blocks. It is a little long for the cleaver but that's ok.

Rada Cutlery Tomato Slicer Knife, Made in USA, Aluminum HandleI love this knife. For years, my most unfavorite part of making a sandwich or burger was slicing the tomatoes. I tended to cut the tomato unevenly, to make the slices way thicker than I wanted them, etc. This knife has completely changed the way I make a sandwich. It's so painless. Even the most unbelievable klutz (me) can slice a tomato well with this thing. As a bonus, it's made in the good ole' USA and it's amazingly cheap. At this price, even if the knife dulled out in a year or two, I would simply buy another one--it's a great bargain. The last knife I tried to slice a tomato with was a much pricier one from Chicago Cutlery, and it didn't do half as good a job as this thing.

It's been two years since I purchased this knife, and it's still the only way I can slice a tomato without frustration. Surprisingly enough for a knife at this price point, it has maintained its sharp edge.

These are truly very sharp, good working knives. I was so happy with the tomato knife that I bought a 2nd one, the steak knife set, and the carving knife. Love them all, except: Just be aware that (now that I've had them for several months) the handles are brushed aluminum which gives a good offsetting weight in the hand, however, the shiny silver color turns dingey gray. If you don't mind that-especially bec now they don't match the silver color of the blade, then they are a great buy. I would give 5 stars if they didn't discolor. NOTE: I NEVER ONCE PUT THEM IN THE DISHWASHER.

I started buying Rada cutlery at one of the big Home & Garden Shows because I was tired of cheap knives and of peelers that just didn't work. This tomato slicer is simply the best for the price you don't need to spend a fortune on the German brands this U.S. made knife is every bit as good at a fraction of the price. It does a superb job slicing delicate tomatoes and other fragile foods.

The knife stays extremely sharp I've nicked myself a number of times when I got too close to what I was cutting.

The only drawback, if you are into appearances, is that the handle will discolor if it is not dried after washing or if you allow it to sit in water. Also, these knives should not be put in the dishwasher if you care about appearance the handle will get darkened and somewhat pitted.

Okay, for those of you who critique reviewsyes, I know I'm using the same basic information for all the fabulous Rada products. If it really bothers you, please don't read any more Rada reviews I've written.

Gunter Wilhelm Executive Chef Series Model 201 11 Piece Knife Block SetWe bought these knives from a local Warehouse club store when Gunter Wilhelm (GW) had a booth set up. They caught my eye because they looked identical to my wife's x-favorite knife made by Hammer Stahl (HS). It turns out that GW were the original inventor of these knives and HS copied them. When you compare the 2, the GW knives are bigger, heavier, heftier, more solid and made with better materials. GW knives are incredibly made, very sharp and high quality. They allowed me to trade the old HS knife with a GW knife. These are the best high quality knives you can get for the $. I have to say GW is ' a cut above the rest'. Sorry..

My only complaint is that they have to be hand washed, but most high end knives have the same requirement.

This set of knives is heafty, high carbon stainless steel, and carefully constructed. They have a rich feel in your hand and hold an edge for a reasonably long time. The company backs up their product. We purchased the set at Amazon after purchasing an individual knife at Costco. Amazon shipped quickly with good packaging. My wife does a lot of cooking and uses these knives constantly and she is very happy with them. We've had them about two months so this review is over a limited time period. We hand wash the knives and they seem to be holding up very well.

These are truly exceptional knives. I have owned a few sets of kitchen knives, these are by far the best. I was able to pick up an 11 piece set at Costco for $220, which was a great deal. One of the knives had a scratch on it, I simply called the main office, without any hassle, they simply sent me a new one. What an amazing Knife set the Gunter Wilhelm (GW) Model 201 is. I also received a bonus instructional DVD on GW "Cookware & Knife Skills" when I purchased this at a local warehouse store. The GW Knives feel so hefty and natural, their sharpness is as good as it gets, and they stay that way. I have used Henckels for years, but keeping them sharp has always been problematic. The GW triple full tang construction provides complete confidence while holding the knife, and its Forged construction - unlike many major brands that are Stamped -provides a large metal bolster where the blade joins the handle. Each knife feels rigid, balanced, and virtually an extension of my hand.

I was so enthusiastic about and impressed with this set that I went back and purchased some additional GW items:

* 10" Boning/Filet Knife

* 5" Mini-Santoku Knife

* 10" Poultry Shears

* 12" Diamond Steel Sharpener

I am now set for doing virtually any knife task that a professional chef would do. The maple wooden block is spacious enough that I -with minimal woodworking skills -was able to drill a rounded hole and widen another slot to accommodate the shears and mini santoku, respectively. The other knives could be doubled up temporarily in a couple of the wide slots that other knives occupy; position them carefully with the top spines facing away from each other. As with any fine piece of equipment, you must handle the knives reasonably. They are not for banging or throwing around. It is best to hand wash and dry right after using.

The knives are a work of art. Handle them carefully and safely. They'll last as long as you are around! Their lifetime warranty is unbelievable -free replacement even if you messed up. Who else stands behind their product this way? If you want the best, GW is the brand to get.

Update 11/29/2012

I still love this knife set! At my suggestion and many other customers, GW went back and redesigned the wooden block from 11 to 14 slots. The replacement block now holds all my prior additions. There is still room to have one or two more knives, if the block were remodified. What would I first add? Probably the 6" boning knife.

If GW is doing a road show at your local Costco, it is hard to beat that costwise.

Not much heft, plastic handle feels like a plastic handle, not much to look at. The pluses: they cut great, didn't cost $275 which probably would have eliminated the minuses but I can live with that huge cost saving. If they hold up as well as a Swiss Army knife, they're a great deal.

I purchased 6 of these knives over 14 years ago in Europe. After years of being used every single day,(they are almost the ONLY knives I use in the kitchen), and being abused by cutting bags and boxes the 2 knives left were getting a bit dull even tho I could still cut tomatoes with them.

Bought these as a gift for my girlfriend's parents. They're not the most attractive thing out there, but they work extremely well and are very sharp (as are all Victorinox knives I've used). In fact, they are SO sharp that both of the parents cut themselves using these knives within the first week. This is only because they are used to having very dull knives and thus misuse their knives, not due to any fault of the knife or its design. Highly recommended.

I was looking for a set of knives for my butcher block knife set and these were the perfect size. You will never have difficulties slicing through anything with these. The plastic handles are a bit of a trade-off they don't feel as nice as rosewood handles but you'll never have to worry about tossing them into the dishwasher. Even Henckels offers a variation on this theme. But for my wife's money,(the chef in the family), why mess with a good thing. We've had Henkels Twin Four Star knives for probably 20 years and to her they just feel right, hold and edge, and are effortlessly sharpened. So why did I buy her a Twin Star II instead of the older Twin Star? I liked the SS end cap.

Upon inspection, the blade has been reshaped a little to be a bit broader toward the tip but otherwise it's a wonderful SLICING knife. It's the one knife she goes to more than any other; kind of a cross between a paring knife and a chef's knife, (so expect some fexability in the blade). The only thing I'd improve on is the length. 6" can be a bit short for some applications. So guess what I did, I bought her an 8" Twin Four Star II as well. Turns out she loves this one just as much :)

The 8" is more to my liking. I thnk the extra 2 inches are handy when trying to slice through a boneless ham for instance. But here again, the blade is flexible at 6" and even more so at 8". Not a chefs knife, but it does 99% of what we need it for in our kitchen.

The problem with knives in the kitchen is that you dont understand the value of a good knife until you have one! Its like when mobile phones first came out; no one thought they needed one, but now you cant live without them! I group gifted this knife on VenTribe.com with a friend for another friend's wedding. Its a great knife, sharp as you need, and comfortable in the hand. With Halloween around the corner, Im sure turkey's will be shivering at the presience of this swift slicer. I'd recommend it. Its just hard to decide how much to spend on a knife; you never really regret your purchase!

This knife has nice balance and a nice big no-slip grip. The blade looks like a huge 'harmless' butter knife, but it works wonders with meats. It cuts smooth and easy and thin cuts are so much easier than with a chef, santoku or a heavy-bladed slicer. Cuts raw potatoes very well too.

It will slice your cheese and even comes with a replacement wire. However, overall the unit is cheap. For instance, the backside of the handle is hollow (i assume to save on material costs) and the adjustable bit is a bit flimsy. I'd recommend spending a bit more to get a better quality product. However, it does slice cheese and has not broke yet. Just feels and looks cheap.

Came with a loose wire. I tried to tighten the wire, with no luck. My husband also tried to tighten the wire and was unsuccessful. The screw used to adjust the width of a cheese slice does not stay tight. I would not recommend this item.

Eva Solo Angled Aluminum Knife Stand, SilverThis *seems* to be the perfect knife block. It's attractive, the size is perfect, and it holds my knives just right.. But even though I'd been warned about this by another amazon reviewer and had thought I'd carefully set my knives in it to make it balanced more heavily toward the back, one time when removing a knife the whole thing tipped forward, spilling all my knives out onto the counter. Thank goodness the knife block was back in the corner and not near the edge of the counter at the time, and thank goodness I'm fairly nimble & coordinated and managed to keep all the knives on the counter & none of them on my feet, without getting cut. I've got several very sharp knives.. this was a pretty scary moment! I am worried about the rest of my family if someone else gets hurt I'll feel somewhat responsible as I chose this knife block, nixing others as too ugly, too massive (well now I see why massive is perhaps a good idea for a knife block!) or not holding the right number of knives. This knife block is in every other way perfect for what I want but unless I can come up with a way to make it more stable, I won't be able to keep using it. I'm going to try making the back part of the base heavier. Maybe I can attach something at the back/bottom that will hold it down. If I figure something out that I'm happy with, I'll update my review.

The only other knife block that gives you complete control over the knife sizes is the Kaboosh, which I really disliked. This takes up minimal counter space, is easy to use and is easy to keep organized.

I just ordered a second one and I was a little frustrated that it is a slightly different angling than the one I bought last year. For the angles to match I needed to put 2 rubber bumpers on the bottom of the new one, but that is nothing negative about the block. It was so useful that I wanted a second one; I keep Kosher, and can have 2 knife blocks in less width on my counter than a single wooden one.

Easy to use and fully customizable to any knife size, and it takes up less counter space and the interior is washable if it gets grimy in the future. It is a bit pricey, ut the convenience is worth the expense, especially since it is a one time cost.

I've been looking for this knife block for years.

I have a number of knives from various makers, and they don't fit into a standard knife block. This holder has a fan-folded insert that takes any size of knife, and any number of them. The aluminum case has a nice solid weight to it (no risk of tipping and spewing out knives), and the fan-folded insert comes out for cleaning. I think it's a brilliant design and great looking, too.

I was excited to find a block that would accomodate all my knives without damage, and was attractive to look at and take up less counter space. When it arrived my first thought was that it seemed very lightweight and less than stable. For the price, I expected something sturdier. But, I went ahead and put in my knives (ten of them) and knife steel. I have top quality knives that are fairly heavy in weight. The information from most sellers as well as the maker indicates it will hold 40 knives or other utensils. It won't come even close to that unless you are storing tiny items (perhaps silverware sized). While it may technically have slots for forty items, due to needing some space for the handles to fit, as well as just allocating room for the thickness of the blades so as not to have to cram any in there, I could perhaps use every third slot or so. Having put all eleven items into the stand, I let go. It immediately tipped forward and fell onto the counter. All of the heavier knives were placed at the top, all the small ones at the bottom. After removing everything and putting them back, spacing the knives far more closely than I would like (makes getting them out and putting them back a hassle as the handles are now very close together), it will stand on its own, but I certainly wouldn't call it stable and it makes me a bit nervous. If I put anything in the lower quarter of the block (even a paring knife) it tips forward again. Maybe I can attach it to some sort of platform to stabilize it? Nice idea, poor execution, and definitely a case of form prioritized over function. If you want something pretty for your five lightweight knives, buy it. If (like me) you want something that is also functional and sturdy, don't waste the money.
