Wusthof Grand Prix 10-Piece Cooking Couple's Knife Set with BlockThere are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Grand Prix line is a more modern design than the Classic series, with a simple black handle. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.

This set includes an 8 inch chef's knife, a 3 ½ inch paring knife, a 6 inch sandwich knife, a 6 inch chef's knife, a 9 inch bread, a 4 ½ inch utility knife, a 5 inch salami knife, a sharpening steel, and an oak block

The 8 inch chef's knife and the 6 inch chef's knife are great knives. Wusthof offers three sizes of chef's knives, 6, 8 and 10 inch. For most home cooks, I think the 8 inch knife is the best choice. The 6 inch is a bit small for bigger jobs, but the 10 inch is too big for most jobs. While the 8 inch isn't perfect for all uses, if you are only buying one size chef's knife (and most people only buy one), this is the one I would recommend. Adding the 6 inch makes the set almost complete.

The Wusthof 4 ½ inch utility knife is a great all-around knife. This is the knife I use for the majority of my small chopping work (when I don't use a Chef's knife).

As for the 3 ½ inch paring knife, this knife falls into the category of overkill for me. Most cooks will get by just fine with the 4 ½ inch utility knife. There is really no notable difference in size for the vast majority of applications between the 3 ½ inch paring knife and the 4 ½ inch utility knife. I prefer the 4 ½ inch utility knife, but the 3 ½ inch paring knife will do the trick.

I have found very few uses for the 6 inch sandwich and the 5 inch salami knives. I prefer the larger size of the chef's knife or the smaller 4 ½ inch utility knife. The knives are just the wrong width and length for most tasks, and fall into the overkill department, except when part of a set.

The bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy.

When it comes to sharpening steels, I have found very little difference between Henckels and Wusthof. As long as you buy a high end steel, you really won't go wrong. Therefore, I shop for this item on price, and Henckels has a price advantage. However as the steel comes with the set, you won't go wrong with this steel.

This set is a great deal, and includes just about the right assortment of knives. Adding the steak knives fills the block perfectly.

Messermeister Angle Guide for Sharpening Stones

Messermeister Angle Guide for Sharpening StonesAs soon as it came I had to try it out. I used an old kitchen aid chefs knife I had for years and didn't care for anymore, needless to say I have new knifes I don't want to touch and hoped I wouldn't have to with the help of the guide I just bought. I did my best to do the guide justice, and it works well. I ripped out a page of a magazine and tested it out, and it went though clean.

The only thing that bothers me about the sharpening guide is that it does have ceramic at the bottom to prevent the bottom of the guide from scratching your whetstone. There is a small divot in the center of it that separates it into two pieces so when I do my sweeping motion, it has a slight drop in between the two pieces, however how minor it is it reflects on the knifes profile. It seems to be made for chef knifes only 7 to 8 inches, not fillet or some kind of a deboning knife.

All in all I am very happy with it.

I bought this angle guide for my Shun knives. As some of you may know not all the brands out there have the same blade. Shun (and most Japanese steels) are sharpened at 16 degrees, while many German steels, and others, at around 20 degrees. While reading the product description ("the guide will allow you to initiate the stroke at approximately 15-20 degrees") I was hoping to get the 16 degrees that my Shun deserves. After measuring the angle with a digital instrument (see pix) I got the bad surprise. To make a long story short: the angle guide works ok, but not on my Shuns.

You'd probably do better with a protractor, a pen and piece of paper to establish a real guide to the proper 17 and 20-degree angles used in most kitchen knife sharpening. Won't fit medium-to-smaller knives properly, and especially if there's any curve to the cutting edge or spine. The "instructions" are scant, to say the least.

The best thing about this product is that it is plastic and a great item to start to teach you the angles needed when honing knives. Eventually you should do away with a product like this however to get started this is a great product.

Cons: Product is not for intermediate or advanced honers.

Great for a 20 degree angle on knives. Slides smoothly on the spine of a knife and allows you to focus on sharpening properly with either back and forth or one sliding motion along the edge. Now I'm confident I don't accidentally blunt the knife with my less than dependable technique. This complements a good waterstone or continuous diamond whetstone. With thicker knives like cleavers or longer knives like slicers you may have to change your technique slightly to ensure the guide actually touches the whetstone.

If you have a Japanese knife, get the Minosharp guides as the angle is completely different.

John Boos Chop-N-Slice

John Boos Chop-N-Slice 20-by-15-Inch Maple Cutting BoardI received the Maple Chop & Slice 1 1/2" board for Xmas '09, and despite all the hype, I am disappointed with it. It began to split within a few weeks and now has several splits. As a home chef, I use the board daily, it is not allowed to remain 'wet' (such as with fruit juices), is wiped clean after each project and is wiped clean and dried, not immersed. It was conditioned before use and regularly since. Therefore, the three stars. Otherwise, the size and weight is great. If I had to buy one (which I probably will sooner than later) again, I would opt for an end cut and thicker board.

BTW, anyone know if there is a warranty on their products? I emailed BooS customer service but never received a reply.

The John Boos Chop-N-Slice cutting board is a very good board that exceeded my expectations. Over the holidays, my in-laws were staying with us and did most of the cooking. I was worried that my brand new board would not survive the abuse because of the way they cleaned and used it. Normally, I would clean the board with a wet soapy towel and immediately rinse and dry. My in-laws on-the-other-hand would wash it in the sink with copious amounts of running hot water and lots of soap and let it air on the dish rack. The cutting board held well despite this repetitive cleaning, and I didn't notice any warping or splitting which I noticed on my previous wooden cutting boards. I did see some splintering on the corners which is expected since this board's edges are not rounded.

This is a decent cutting surface to be used as a back up or if you cook with others and want a second surface or have very tight kitchen space. It is fairly small, but since I have a large end grain board, it is sized right as a small backup board for me. I will use one side for small cutting jobs and the other surface as a cheese and cracker/appetizer board for get togethers.

I have a few issues with the board at the price. The edges have no radius on them and are uncomfortably sharp. They need to be sanded round before use in my view. This should be done with an 1/8" or 1/4" machined radius on all corners during manufacture.

Secondly the board came with a plane mark stripe (done when planing the surface in manufacture) across the entire width of one cutting surface. The stripe is brown which leads me to believe it was burnt into the surface by the cutting blades as the board stopped moving through the planer for some reason.

Finally, the the other side had two noticeable compression dents right out of the box. Rock Maple is not easy to dent. This board was not packed well and the board was loose in the box with no padding on the interior of the box on the bottom surface. Sure enough, there were two impact perforation dents on the bottom of the box that convince me improper packing & shipping resulted in the compression dents.

That said, at this price a plane mark across an entire surface width, and the sharp edges add to my mark down of two stars. It is functional, but at the price with shipping, these finish issues are not acceptable in my book.

I looked quite a long time for a cutting board to use on my kitchen island and finally decided on the Boos 20" x 15" x 1.5". It arrived extremely well packaged and in perfect condition.

The actual thickness was 1.25", but this didn't detract from its usability. I chose this size because I wanted something substantial enough for usual cutting chores, but also something that would still fit (mostly) into the sink for washing/rinsing. This fit the bill perfectly.

It first appeared that it would slide around the counter a bit while being used, but I actually haven't found it to be a problem (and I use it a lot now).

Quality is very good and on par with what one would expect from a John Boos product. Care is typical and I also highly recommend using the Mystery Oil initially and regularly to keep your board in top shape. I believe reports of splitting or drying are directly related to a lack of care.

I'd buy this again highly recommended.

I'm a big fan of Boos traditional butcher blocks, but this clearly does not live up to the standards of Boos. I picked this up for my short stint in a small apartment where my butcher block was not practical. I oiled regularly, but the board developed a rough texture and begin to warp after a few weeks. I was useful for what it was, but will not make the trip back home and will find itself in a landfill.

Do yourself and stick with the thicker, end grain butcher blocks.

Be aware this is a regular cutting board, cut perfectly to size, has a drip guard, with a full sized piece of waffle-type, beige, non-slip rubber material on the bottom, and comes with a free thin plastic cutting mat that you can really use for cutting on. Our new wood board needed some light sanding and oil, and, it is so nice looking it will probably be only used for counter space, not for cutting on. It can be cut on but the free mat will be fine. It fits perfectly and has some weight to it and it does not move during travel on curvey or bumpy roads. Core Bamboo 1007 Classic Bamboo Pin Stripe Cutting Board, SmallI have a 3 piece set of these, sm, med and large that I bought else where because they were a good price. It was great to have the variety of sizes and they were light weight which I enjoyed. These cutting boards are quite thin compared to the other bamboo cutting boards I have as they are only about 1/3 of the thickness. But be careful because they weaken at the seams where the wood color changes. After wiping them off with a damp cloth followed up with drying them with a dry towel I have to lay them flat until they are completely dry becasue they are so thin they easily warp when places standing up leaning against the wall. In about a month I've had 2 come apart at the seams where they color changes, one I only used a few times to cut lemons on it, split in as I was cutting a lemon. The one I have left is warped from being stood up on it's side. Maybe if I had a space where I could always lay them flat to store them between uses warping wouldn't be an issue. But once again, my other bamboo cutting boards do not warp from being leaned up against the wall.

Oneida Camlynn 53-piece Flatware Set, Service for 8

Oneida Camlynn 53-piece Flatware Set, Service for 8I looked and looked for months trying to decide on new flatware and finally decided to give this set a try. Amazon's price and the bonus 24-piece set I got for free made it hard to turn down.

When I first opened these, my immediate reaction was , "Whoa, these are HUGE!" I wasn't sure about the continental size, it made our old stuff look like toys... my teenage son, in his usual cynical manner, commented that these must have been designed for "ham-fisted eaters."

It's now a couple of weeks later, and I can say that we've all adapted to the size, and I'm growing to enjoy this set more and more. It suits the large Dansk dishes we have, and really does look nice on the table. We always use a dishwasher and they come out perfectly shiny and spotless, as long as they haven't been "over-crowded" with too many pieces crammed into the basket. When we had a particularly large load, a few had waterspots, but they immediately went away when I handwashed and dried them.

If you're looking for exceptionally heavy flatware to accompany large dinnerware like Dansk or Fiesta, this set is a great option. The extra teaspoons are wonderful, too, if you're like us and use them constantly for making coffee and tea.

As other reviewers have noted, the pattern is rather large and sturdy in its construction. Great for a larger set of dishes. The pattern is also rather sleek.

Some of the cons that I see are:

1. The brushed part of the pattern scratches a bit, which leaves a new-looking shiny line in between a slightly scratched surface.

2. Watermarks are left on the brushed metal sometimes when they come out of the dishwasher, but not on the shiny part.

3. The manufacturing of this product was inconsistent.

#3 explained:

The pattern has slight grooves between the shiny line and matte sides to make the difference stand out. However, the set that I initially received had some pieces with the groove, some with none at all, making a smooth transition from the shiny portion to the matted portion. Even some individual pieces had one side with the correct pattern and the other side with the defect.

I investigated using the 25 year warranty from Oneida to replace the defective pieces or to just replace the set through Amazon. Oneida requires you to deal with all the shipping charges and details of replacing pieces, whereas Amazon makes the process quite simple, so I used Amazon's exchange service. The next set that I got from them was much better, though still not perfect in the manufacture of the pieces. I am not sure if this particular pattern was difficult for Oneida, but I do know that I would be reluctant to try to get new pieces from them due to this problem with the manufacturing.

This flatware is very high quality. The pieces are heavy weight and solid with a satin finish that is even and smooth. They are truly oversized, European scale pieces: the salad forks in this set were as big as the dinner forks in my old Oneida set. I expected something more delicate and was a bit surprised by their size and weight but have decided to keep them because the quality is obvious and the pieces have a nice, substantial feel in your hand.

The design is simple and attractive. It is versatile and would compliment all but the most geometric tableware patterns. The price is outstanding for the set. The weight and quality were so much greater than the sets I had seen in stores for the same price that I was truly surprised when I unpacked the box. If I had not known the price of this flatware I would have guessed it to be far more expensive than it is.

I ordered this set to replace our older silverware, which after 3 children, is down to 6 spoons and 10 forks and 8 knives (Is there a utensil monster my mom forgot to tell me about?)

When I ordered this set it seemed like a nice classic-style set with some european flair, right up my alley. Upon receiving it, I was amazed at how truly beautiful this pattern really was. The quality of it was more than I had anticipated and put my old Oneida to complete shame. Heavy pieces, well balanced, very nicely crafted. The knives and forks and spoons are longer than in a traditional set (especially the forks!) however you quickly adjust to eating with them. Truly a nice statement at the dinner table. Beautiful serving pieces, I especially liked the fact that it had 1 slotted serving spoon and one regular. Very Nice. 5 stars all the way!

A very attractive set and a nice quantity for the price. I had problems with the durability of the pieces, though. I merely washed the set as I took it out of the box and some knife pieces showed spots of rust. I didn't even get to use it and it was back in the box for a return.

The instructions state how to care for the flatware; don't let the pieces sit in water, don't let foods stay on the pieces too long before washing, be cautious of the detergent used, don't let them air dry as that can cause rust, remove from the dishwasher when the cycle is finished. In my case I simply had to let them air dry for a short while because I had company in the house.

As I said it looks pretty, but it really loses out because it's simply not a functional set and it is inconvenient when one has to pay so much attention to caring for one's flatware. I don't really want to wash and dry each piece immediatly after using it. I remember seeing many a house where flatware was left in the sink with the dishes for quite a while before any one got to it. Just a little toughness is all I ask.

I also noticed as I shopped in stores that the frosted parts of flatware are very prone to scratching.

It's too bad. I'll be looking for something more durable.

Messermeister 4" Parer Edge-Guard

Messermeister 4' Parer Edge-GuardThese edge guards are a great, cheap way to protect the edge on a good paring knife. I wouldn't store my global knife without one.

I used this for a forschner/victorinox 4" pairing knife. It does not work very well for this product. The forschner doesn't have a bolster. Because of that, it leaves around a quarter inch of the blade exposed when the cover is on. I ended up cutting the guard to fit the contour of my pairing knife and now it completely covers the blade. It works as well as any other generic edge guard. If you used this on a Henkles or Whustof knife, I'm sure it would work without having to modify it.

This is a piece of plastic that will tightly cover the business end of your knife and prevent you from reaching into a drawer and slicing your hand open...what more can I say about it? It does what it's supposed to do. I think all of these knife guards are over priced for what they are. Buy a set of them if you want to save a few dollars.

Made of a hard, thick plastic these covers slip over the blade of a knife and pinch it's spine in order to stay on. If you're just using these to store your knives in a drawer I'd say it's just fine. For traveling it'll probably work just as well as long as the knives are wrapped in something. You see, the guards can slip off somewhat if they're moved too much (say, if I hold the handle and swing the blade a little). They are other edge guards that clasp shut and don't really have this problem, but that doesn't keep me from recommending this product especially given the price.

The knife pictured on Amazon looked to be just what I wanted. Unfortunately, the knife I received was a German style knife with a much more curved cutting edge, a forged bolster at the base of the blade and a two-piece handle attached to the tang of the blade with rivets. It doesn't seem to be a bad knife, although the finish was a bit rough, but was not at all what I was looking for or what was pictured on the site. I returned the knife and asked for a refund.

They work well, and hold up fine in the dishwasher. I don't use the stand, because I store them against a magnetic strip on the wall. The knives look good in the kitchen because they're colorful, but they're practical, too. The colored coating seemes to keep food from sticking too much to the blades. The only thing that I had a bit of trouble cleaning off was darker juices from red meats. When all is said and done, these knives do a good job under moderate use.

Colorful, practical, and economical.....a great deal for the price. We have a kosher kitchen so the colors make it very easy for us to separate the dairy knives (colors) vs steel for meat.

Cuisinart Bamboo 11-Inch by 14-Inch Cutting BoardThis board needs some non-slip feet, like stick-on rubber bumpers, on the bottom to hold it up off the counter and to keep it from moving. The bamboo picks up oils and smells from food you cut on it, like garlic or onions. Also, the board is only 5/8" thick and warped to where it is unusable. Maybe a thicker board, or end caps, would keep it from warping?

The board worked decently for about 6 months, but then began to warp and bend to the point at which it was unsafe and undesirable to use. We did not use it in any unconventional fashion, didn't soak it in water or run it through the dishwasher (we don't even have one) or anything, but moisture from fruits, vegetables and meats and fish cut on the board must have had a way of accumulating under the surface of the wood and cause it to bend over time, even though we wiped it after each use. I'm afraid I cannot recommend this to anyone unless you don't mind tossing it after 6 months and buying a new one. My wife wanted a wooden board rather than plastic, glass or metal due to the non-slip benefit that wood can provide. Fortunately, we have since found a quality wooden one when searching for a replacement.

I needed a wood or bamboo cutting board for my ceramic knife, but I'd rather use glass. I know, it dulls knife blades, but they're not porous and don't stain like this board did. Still the best cutting board I've bought in a while.
