Wusthof Silverpoint II 7-Inch Hollow-Ground Santoku Knifea few things to consider 1. this is not the top shelf Wusthof, this is an economical line, and as such the quality is above most knives but if you are looking for the best break out you checkbook because they cost alot more. 2. You should use an asian blade sharpener for sharpening this and other asain style blades you have. the angles are different and the blades are thinner so it dulls more easily but also sharpens faster. 3. overall I love this knife and even though I have more expensive blades I reach for this one first. I use it everyday!

Know what you are buying and don't blame a product for not doing something it wasn't designed or intended to do. This blade is not a cleaver and it is not a can opener. Wusthof makes GREAT knives and this is an inexpensive way to get a great blade.

I was recently introduced to the Wusthof Santoku knife while visiting my daughter. It didn't take much time for me to use this as a "go to" knife while helping in the kitchen. I was so impressed with her Wusthof knives that she purchased with gift cards as wedding gifts (5 years ago) that I decided to treat myself to a set after 40 years of having misc. knives in my own kitchen. I purchased a block set of Wusthof Silverpoint 2 knives and added to my set this wonderful Santoku knife. The Silverpoint 2 knives are not as heavy as the standard Wusthof knives but I feel that they are equally good. I decided on these knives because the handles are comfortable to hold, they quality of the steel is good, and their weight (slightly lighter than the upgrade models) makes it a lot easier to spend time in the kitchen preparing meals without fatigue to wrists. I would not be afraid to buy these knives. I personally felt that they were so good I purchased a set as a gift and added the 7 inch Santoku knife to go with it.

I absolutely love this knife. I have other knives, but this is the one I use most of the time. I like the way it feels in my hand. It is a good fit in that regard and it the lenght of it is perfect for me. I love it for chopping up veggies and meat.

Watch out, however, it is very sharp. I accidentally cut my finger slightly with it because I was careless. You don't want to be unattentive while using this knife.

I would highly recommend it as a gift for yourself or another.

I think reviewer Pam from Nebraska perhaps clicked the wrong star rating since her text provides a glowing review, with which I agree, but her star rating is a one! This knife is razor sharp and makes mundane salad ingredient chopping easy and fun. One side benefit is that the knife is also adept at slicing cheese. I own the Wusthof Classic 3.5 inch paring knife and this Silverpoint seems sharper, although its size makes it a little less maneuverable. Great knife at a very reasonable price compared to other similar Wusthof models. Highly recommended!

This knife comes shaving-sharp, and the steel will hold an excellent edge, but it's nothing like the solid, forged knives Wusthof is known for. The blade is thin, light (4 oz/113g), and clearly stamped; if you expect the heft and durability of the look-alike Grand Prix II, you will be sorely disappointed. The handle is lightweight plastic, which was brittle enough to chip slightly in shipping. The blade-heavy balance leads me to believe the knife uses a small rat-tail tang, which means the handle may crack and separate from the blade.

This is definitely a cut above the cheap stainless knives which plague many home kitchens; the razor-sharp edge and quality X50CrOMoV15 steel merits 3 stars, but the Victorinox 47529 Fibrox 7-Inch Granton Edge Santoku Knife is a much better buy. Both use stamped blades and plastic handles, but the Victorinox knifes are full-tang, and the plastic used in the handles is denser, more durable, and grippier. Finally, the Victorinox knives have excellent balance, and can survive a remarkable amount of abuse in professional kitchens.

In comparison, the Wusthof Silverpoint II product line comes off looking shoddy... and at a slightly higher price, to boot!

I am a college student and bought this because i was looking for an inexpensive knife set i wouldn't mind if it got damaged.

It is greaet for everything i need.

The only problem is all the knives are serrated, i wish the big knife wasn't, but oh well.

Hagerty 19100 6-Piece Place Setting Roll, BlueWe purchased our solid silver place settings and serving pieces in 1998. At the same time, we purchased Hagerty bags for most, but not all pieces. These bags do a very good job of keeping the silver safe from tarnish, oxidation and corrosion. Three years ago (12/10/07) we purchased additional bags for 4 place settings and 4 service pieces. About a year and a half later, we were appalled to find 4 place settings and 4 service pieces not tarnished (dark brown), but corroded (greenish blue patina), whereas 8 place settings and 4 serving pieces kept in the older bags were pristine. We did not track which bags were related to the corrosion at that time, but suspected the new bags (all with a "made in China" tag). We carefully polished and stored all the silver. On opening them for use for Thanksgiving 2010, 4 place settings and 4 serving pieces were corroded again, this time we know for sure they were stored in the new bags. Needless to say we are very disappointed in the 2007 purchase and Hagerty's failure maintain a quality product.

UPDATE March 2011. The President of Hagerty responded to a letter with an apology and advised me that they no longer use Chinese suppliers for these bags. She sent me replacements for all the subject bags. I have put some silver in the new bags. If these are the same as the older bags, I will be able to report success in about a year.

UPDATE November 2012. Thanksgiving 2012 was the first opportunity to use our silver since using the replacement bags. I am pleased to report that there was absolutely no sign of discoloration on any of the pieces. Hagerty now again has my complete confidence.

These cutlery rolls are absolutely the only way to store your silver flatware. Instead of stacking your cutlery on top of each other as happens in storage boxes, each item goes into its own storage slot and each pouch holds an entire place setting all neatly rolled up in silver cloth.

Wooden storage boxes are pretty, but this method has truly helped prevent scratches caused from "stacking".

Instead, I simply place all the pouches in the drawer of my china cabinet and next time I am setting a formal table, I simply reach in an pull out how ever many pouches I am going to need.

I absolutely love this method of storing my silverware. My set was brand new in 1965 when I got married. I love to entertain and I am one to use my good china and silver as often as possible. Yet despite the many uses over the years...storing each place setting in a separate storage pouch has helped to keep my set looking "gently used" over the years.

Now I will soon be purchasing a set for our daughter's silver set.

I am writing to confirm Aquanut's findings.

I bought this setting roll at Bed Bath & Beyond, in order to ensure I recieved a "Made in USA" roll. My sterling silverware is made by a highly reputable producer (Reed and Barton), and all cleaned at the same time, using Hagerty silver polish.

It has been about two weeks, and the silverware stored in this roll is already noticeably tarnished. By contrast, in the same cabinet drawer, wrapped in a no-name microfiber cloth, the silver was pristine.

After checking the Amazon reviews on the Hagerty zippered hollowware page, I noticed this defective cloth problem seems to be widespread, and common to both the USA and China versions.

Update: Hagerty replied to a letter I wrote them earlier, and sent me a Made In USA replacement roll. I will update here in a few months with any findings since then.

Update (6 months later): Silver in the new roll looks good so far. No noticeable corrosion at all! Bumping up the stars to reflect the new roll.

Update (1 year later): Silver still looks good. Bumping the stars. Great roll, and the company clearly stands behind their products. Just be sure to double check your silver and make sure you get one of the new Made in USA batches.

Swiss Diamond 10 Piece Set: Ultimate Kitchen KitI really wish that people would not leave comments on cookware that they have had for less than a year. Of course when it's new, it's great. However, please note that the reviewers who have had theirs for more than a year are telling you it DOES scratch easily. This is a very expensive set for nonstick. I took very good care of mine because it was so expensive, I always handwashed my cookware and did not abuse it. But it still scratched after 3 months. Fortunately the company that I bought it from stood behind it and took it back, because Swiss Diamond's warranty is awful! Look at some of these reviews and you'll see that people who had to deal with the company are saying that Swiss Diamond keeps claiming "abuse". How convenient and shady of the company. The nonstick was great and it cooked nicely, but when mine scratched, I contacted the company and was given, in an email, "this warranty does not cover stains, discoloration, scratch marks, or dents". HUH??? What DOES it cover then? And once a pan is scratched it's ruined. So since it scratched so easily and the company does not stand behind their warranty, I decided to return the entire set rather than get stuck with a $500 set that will be just like any other nonstick set within a few years. Don't listen to reviewers who have only had theirs a short while look at the reviewers who have had theirs for awhile or have had to deal with the company. They are all saying the same thing it DOES scratch, get pits, and stains and the company does not stand behind it.

We spent a lot of money ($150) on the 12-inch sautee pan which is advertised as "virtally indestructable". We have been very careful with the pan. We don't use metal utensils, put it in the dishwasher, or use abrasive cleaners or scrubbers. The non-stick coating is pitting, flaking and coming off after only eight months.

The company told me that we could send it back (at our expense) and someone at the company would examine the pan and decide if they would repair the pan, give us a replacement or return the pan as is.

We are planning to return the pan, but we aren't too hopeful.

Having recently read quite a few reviews of other companies' non-stick cookware, it seems that this is a common problem. Caveat emptor!

I contacted their Customer Service Department who seemed VERY interested in helping me decide whether some of the set needed replacement. I was asked to send pictures online and full documentation on when I bought them etc. etc. I responded immediately with what they asked for!

THEN, NO RESPONSE! I even sent an email to the person who originally contacted me...NO REPLY!

This cookware is VERY EXPENSIVE! I do NOT recommend it because NO ONE FROM THE COMPANY answered my questions regarding whether it was SAFE TO USE IN REGARD TO WEAR!

I've been bragging to everyone about how lovely this 8.5 qt. stock pot is because clean up is a cinch and the non-stick quality is superior. Recently, after cleaning the pan I noticed a scratch that revealed the silver-colored metal underneath the non-stick surface as well as several other aggravated areas on the rim. I couldn't imagine how that happened. After examining its glass lid, I noticed the metal band that goes around the circumference of it (and comes in contact with the pot's rim) joins together and creates an unconnected, albeit close, seam. When I touched it, it felt sharp. Ah-hah! This must be what caused the damage. It seemed logical to me. The representative from Swiss Diamond looked at it and claimed it was caused by a metal utensil being banged against the rim. User error. Needless to say I'm disappointed. I don't recall banging a metal utensil against the rim. It seems obvious to me that, as absurd as it may sound in theory, practically speaking, the pan damaged itself. I sure hope the damage doesn't spread. The other thing I've noticed is some of the non-stick surface on the bottom is pilling. I'm bummed out. I feel angry, but I can't fight "city hall". I just hope this isn't the beginning of further degradation of the pan I love so much.

I've been cooking for 50 years and have tried them all. This is the best line of cookware ever. It has all the right features: can be used in the oven, proper balance, excellent conductivity, totally flat bottoms, great non-stick (both inside and outside), the handles stay cool, just the right weight. However, don't believe the claim that you can use metal utensils. They can be scratched if you don't use wooden, silicone, or plastic utensils. Treat them with care and they'll be your favorite cookware.

Since I store my cutting boards upright in a slide out drawer the thinness was much appreciated. Very strong and easy to clean. Bamboo really is standing up to the hype. Love the size. Surface large enough to contain loose rolling pieces of veggies as I chop them. A word about what I learned about oiling your cutting boards. This is very important to prevent drying out, warping and splitting of your investment. Oiling helps seal the surface (a good idea to prevent small bamboo splinters from shedding in this case) and makes your board surfaces much easier to clean. But the 'key' is to only use food grade or pharmaceutical grade "mineral" oil that is available at any major drug store. Not baby mineral oil, motor oil or anything else. Ever..... This oil will likely be found in the 'laxative' aisle. Just ask if you have to. This lable will state 'USP' on it somewhere. Never, ever use any vegetable oils. They eventually become rancid and nasty gummy on the wood. Never allow the wood to sit waiting to be cleaned in a damp area or sink. Now I know better after having to sand down the surface and cut the split edge off of an expensive cutting board to order to save it. Scrub your boards clean with dish soap and a small brush. Rinse well and allow to air dry. Pour a small amount of oil in the palm of your hand and slather the board on all surfaces. Even the sides and handle. Prop it up somewhere overnight to let the oil soak in. Wipe off excess oil with a paper towel and store. Re-oil periodically when any surface starts to appear a little dry. Your board will last many years and while you are at it, just get two boards. Mark one for veggies/fruits and one for meats. I like to use a spray bottle of bleach and water on the meat cutting board immediately after its use just before soaping and scrubbing with a small hand scrub brush. Much safer that way.

I bought this when it was 50% off (and the next day it was back to regular price, how lucky was that??). Anyway, I like this board because there's a handle where I can hang it to dry. I was hesitant about the thickness of the board (3/8") since it is thinner than the other bamboo boards I looked at. I've used it for a month and so far, the board has not warped. There are three layers of bamboo stalks pressed together so that each layer runs perpendicularly to its adjacent layers, to prevent warping. It is resistant to knife cutting marks compared to my previous wood board (which warped and became pretty cut up very fast). Overall, it's a good quality board that's beautifully made. I wouldn't hesitate to serve food on this as well.

Oh yeah, it comes with instructions saying that you should oil the board every once in awhile with their special bamboo oil. I've just been using my regular cooking oil and it's fine so far. Maybe I'll update this post in a year with the results.

When this board arrived it was way better than I thought. It's a great size for chopping multiple items (no crowding) and it cleans off easily. Also bamboo is the best you can get for your good knives. I couldn't believe it said dishwasher safe. For me it was a sign from the company that they stand behind the product. I don't see a reason to toss the board in the dishwasher because it is so easy to clean. I recently soaked it with a good food grade mineral oil and it looks great. I hang it on my cabinet near the sink for easy access. I get lots of comments from folks who see it or watch me use it. Great product,great price.

I'm a knife enthusiast and have many knives both forged and stamped high end and low and I can say every Wusthof I have purchased have been top quality regardless of the series or price. People that don't understand cutlery may say this knife is thin and flimsy but leave out how well constructed and razor sharp it is and the fact that the lightweight reduces fatigue in the kitchen. If you prefer a heavy knife then pass on this but you like super lightweight performance you'll be very pleased with it as I am. Happy Cooking!

Hampton Forge HMC01A002C Magna Black Chef KnifeThis knife is substandard for professional kitchen work. The blade was not sharpened evenly, so veers to one side. Additionally, the handle is poorly designed. The handle tapers before it gets to the blade, so when gripping the knife to prepare for high volume chopping, there is no buffer, or finger guard, between the blade and the handle, forcing one to rest their hand on raw metal. This results in small cuts and eventually callousing on the hand with high volume work. The blade also dulls very quickly, and has had to be sharpened about four times since we purchased it, about a month ago. Overall this might be a good knife for light work in a home kitchen, but definitely is not the product to go with for high volume professional kitchen work.

I decided to get this cutting board as it looks so much like the ones used on the Food Network by all of the chefs. Although this one is round and theirs are rectangular, I like the round one better on my counter. The end grain Teak is so cool in it's display of grain and feature. Slicing, chopping, cutting, all with SHARP knives and no scars to be seen. Plus my knives are happy and seem to be staying sharper than when used against a plastic cutting board. I don't think I am going to use this for cutting/serving meat as I don't want to worry about having to sterilize, I'll stick to my plastic boards and the dishwasher, but for everything else, this one is doing the trick!

Wusthof Grand Prix 10-Piece Knife Set with BlockAfter using a set of Henckels that I gave the folks, I found that my Gerber knives were too thick and didn't cut nearly as easily. Then I started researching the differences between the two top brands, Wusthof and Henckels. The knives are both nearly perfect in balance and cutting ability. The main differences are in the handle preference and finish. The Wusthof have excellent finishing, with no observed flaws. The handle design on the Classic Henckels isn't as refined as that of the classic Wusthof. The Grand Prix knives are razor sharp, wonderfully crafted, beautiful, and a real pleasure to use. They are pricey, but well worth it!

Shun Steel 9-Inch Slicing Knife

Shun Steel 9-Inch Slicing KnifeIf you are shopping for a Shun, I assume you are already familiar with their reputation for razor-sharp edges, so I will address this knife itself.

This slicing knife is a great addition to your set. I recently used it to carve up some beef roasts and I was able to carve paper-thin slices. I didn't experience too much sticking either, this may be due to the Damascus-style pattern that creates micro air-pockets. Therefore, I think this version without the scallops will do just fine.

The knife has a good length that's great for most roasts, a tip that makes it easy to maneuver and a sturdy construction that feels balanced and comfortable. The handle is sturdy and has a slight matte finish that keeps it from being too slippery.

On another note, I have seen this knife advertised on Amazon for about $60 (which is the price I bought it for). It was first listed at $110, then went down to $60, and now as of writing this review it is back up to $110. I am not sure if it's a supplier issue, but you should constantly monitor the prices of the Shuns sold on Amazon due to these fluctuations. In any event, I still think this knife is worth $110 and I believe you will like this knife as much as I have.

Perhaps not as good looking as the paka wood classic version, this knife is nevertheless a superb slicer -just what you'd expect from the first rate Shun knife manufacturers.

I bought this knife for slicing meat into thin slices. Turns out, it works great for sashimi as well. This knife is sharp and cuts through raw or cooked meat effortlessly. It was the best $62 I ever spent. If you are cutting meat with bones in it, get the boning knife. This knife is great for boneless meat and raw fish.

Plus they leave a little bit of salt & pepper behind every time we use them. I measured my grinders and found this product on Amazon (the 3x9 version). Both grinders fit great (see images) with room left over for various hot sauce bottles. Keeps the stuff organized, neat (it catches the excess salt & pepper) and makes it easy to transport everything to the table in one fell swoop. I like the quality, the look and the functionality so much that I bought another one in a different size.

This is a very nice bamboo drawer organizer. The quality is good. No funky odors, very attractive wood, and nicely finished corners (rounded and smooth). Actually a bit better than I expected at this price. I got the 6x15 size to hold some larger utensils and it works very well. I would definitely consider buying some of the other sizes now that I have seen the quality.

I'm using mine in a drawer, but it's nice enough that you could use on a desk or table as well.

Compared to other bamboo products offered by Amazon, these drawer organizers pale in comparison. They are quite thin and feel like balsa wood, instead of bamboo. Mine were just in a box without any packing material and I am thankful that they did not arrive broken. If you put them in a drawer and are careful with them, they might do well, but they are quite fragile and I am worried about handling them as dropping them on the floor might cause them to break in pieces. Not worth the cost.

Messermeister 10" Chef's Edge-Guard

Messermeister 10' Chef's Edge-GuardI tried Messermeister, Blade Saver, and Wusthof.

Messermeister was of the worst quality -very hard plastic, unprocessed edges. Also it was the most difficult one to insert a knife into.

Wusthof is the best. The soft inner lining is gentle on the blade. It holds tight enough, but not too tight -it is easy to put it on/off a knife.

I have a 10 inch Victorinox Fibrox knife, the guard won't cover the entire blade, but I just chopped off a corner of the blade guard. I suggest that if your knife doesn't have a bolster that is perpendicular to the knife edge that you purchase a knife guard designed for your knife, or chop off a corner. I personally prefer these types of blade guards. If you do decide to cut a corner off use either strong scissors or some sort of saw.

I found this edge guard to be okay. It leaves about 1/4 inch of the blade exposed if the knife has a bolster (like every german knife), or the handle extends over the heel of the knife (like a victorinox chef's knife.) It slips off easily, but isn't so good for a house with kids.

I have a couple of these, but I wouldn't buy any more.

Zhen Japanese Damascus VG-10 Large Slicer Chopping Chef butcher Knife 8'Background (1): I'm not Asian, but I've been using Chinese cleavers for over 30 years. I used to own a restaurant, and when I first started cooking I gravitated toward Chinese cleavers (somewhat unusual for a white guy); they just seemed to me to have a very practical, common-sense design when you pick one up and use it. (The wide blade makes it much easier to guide the blade on the knuckles of your food-holding hand so that you can't cut yourself; and it also allows you to scoop up what you've chopped so you can easily move the food wherever you want it to go.)

Background (2): I used a Dexter/Russell Chinese cleaver for many years. After that I bought a Chinese cleaver made in Japan by Mac, for Martin Yan (same approximate dimensions of the Dexter), which I really loved; but I broke the blade cutting frozen chicken and couldn't find another since they stopped making it. Since then I've purchased maybe 10 Chinese cleavers -Martin Yan; Joyce Chen; Messermeister; Forschner; a heavy-duty Chinese cheapie ($6) for whacking through bones; and a few others. But I've never purchased a super-expensive one (e.g., one of the Japanese ones sold at JCK, some of which sell for close to $400). The most expensive Chinese cleaver I own is the Kershaw Shun DM0712, which now sells for $200, more or less. The Shun is very finely crafted, but it's small, heavy for its size, and, because of the weight of the blade, not particularly well-balanced.

Now, as for the Zhen Damascus -My initial impression is: (1) It's very very sharp; (2) It's extremely and surprisingly light for its size -light to the point that I'm a bit worried that it might be fragile. (Only time will tell.) The blade is thin at the spine (less than 2 mm.), and narrows severely to the edge -almost like a straight razor. However, there is no taper on the spine, from the heel to the point. (3) The craftsmanship is good to very good, but not obsessive/perfectionist, like top-level Japanese craftsmanship is; (4) It's well-balanced and well-designed (assuming, again, that it holds up); (5) The handle is very comfortable -but this may be a matter of personal preference; (6) Over all, it's pretty much what you should expect it to be, given its description and price.

$130 for a knife is not cheap; but it's less than half the price of top-tier Japanese knives of similar design. And the Zhen is clearly a knock-off of the Kershaw Shun -similar metal in the blade; similar handle design. But the dimensions (of the Large, which is what I bought) are very different from the Shun; and the workmanship is not quite as good. The blade out of the box, while literally razor sharp, had tiny burrs on the side of the edge. I could feel them with my fingernail. They were easily removed with a honing steel or fine stone, but it's the kind of thing that a high-end Japanese craftsperson would never have let go. Similarly, you can feel just a bit where the rear bolster attaches to the handle -it's not perfectly smooth. And where the bolster is welded to the blade, it's not as uniform and nicely done as the Shun. I attribute these slight imperfections to the fact that this is a $130 knife, not a $330 knife. If I had paid $330, and the knife was made in Japan, I'd be seriously disappointed, even though none of these things affect the knife's functionality.

That's about as much as I can say after just a day's use. I personally like this particular handle design -I find it very comfortable (similar to the Shun, but without the bulge toward the palm). So far the knife has been easy to use, though I'm still adjusting to its dimensions. (It's about 8" x 4"; the other cleavers I own are about 3" wide; but many of the top-end and commercial Chinese cleavers are 4" wide, or wider.) My primary concern is that the blade will prove to be fragile. (While I don't plan to whack bones with it, I do expect it to hold up when used as intended. And I'm trusting Zhen that the knife is really made from first-class Japanese steel. I hope they are telling the truth, but how can one really know?)

[Regarding fragility of blades: I've been surprised before. I found that the blades on my Dexter/Russels were easy to deform and knick. But the blade on my Messermeister -which I bought on E-Bay for $40 a few years ago -seemed very thin and light, to the point that I was worried that, though made in Japan, it could be fragile. But I was surprised to find that that thin and innocent-looking blade was actually really tough. Since it was only $40, it became my work horse, and I kept pushing it to see what it could handle. I eventually starting using it to chop chicken bones (both raw and cooked), including leg bones -and the blade doesn't bend or knick or anything. Pretty amazing.]

Anyway, the bottom line for the Zhen Damascus is that it seems well designed; it's very very sharp; craftsmanship is fine but not perfect; it's too early for me to report on the quality of the blade; and finally, relative to high-end Chinese cleavers it seems to be reasonably priced at $129.

UPDATE 6/15/12

Well, I've been using my new Zhen knife for about a month now. Overall, I'm very happy with it. For the first couple of weeks I was very cautious; the knife and I were getting to know one another. Among other things, it's so sharp that it tends to catch on the cutting board when I scoop up veges. (The remedy is to scoop, spatula-style, at a very very low angle.) But just a few days ago I realized that I was becoming very comfortable with the knife. At first I would have been more comfortable using one of my old knives, because that's what I was used to. But I now prefer the new one to my other knives -a good sign.

As with any razor-sharp blade, the edge dulls with use. But I've been able to keep it sharp with a few strokes on a stone (my main stone is soft arkansas) or, my favorite, a ceramic sharpening rod.

I still find the handle very comfortable. And I'm liking the extra width -it's great when cutting something big, like napa cabbage, or watermelon. And it also means I can scoop up a larger pile of stuff in one scoop.

Having said all of that, if you've never used a Chinese cleaver before, but you're thinking of giving one a try, IMHO this would not be a good choice. I say this because a 4" wide blade is indeed quite big; and the width of the blade definitely alters the ergonomics. All of my previous chinese cleavers had 3" wide blades. If you're thinking of trying out a Chinese cleaver, I'd suggest getting one with a 3" wide blade first. There are plenty to choose from. Get used to that. The 4" wide blade makes for a big knife.

Ergonomics note: If you get a chance, watch some cooks and prep-cooks in a Chinese kitchen. Chinese kitchens are set up very ergonomically -but they are very different from standard western kitchens. With respect to chopping and food prep, the counters tend to be lower, to make room for (1) the big fat round of a fir tree that is the chinese chopping block, and (2) the wide chinese cleaver. With a standard American kitchen counter, you may find (depending on your height, of course) that the 4" blade of a big chinese cleaver requires you to raise your arm and wrist higher than you're accustomed to. To a certain extent, this can off-set one of the advantage of a chinese cleaver -which is that you don't have to "push" the knife very much, because the cleaver's weight does much of the work.
