I'm kind of surprised that this set carries the Wusthof name. For the price I paid I wasn't expecting much, but figured if it was a Wusthof set it had to be decent. I have a couple other lower-end Wusthof knives and these knives are several notches below my other Wusthof's. The blades seem to be sharp but the handles are really flimsy and made out of rough plastic. There isn't much "heft" to these knives at all and they don't balance well in my opinion. Gourmet magazine recommended this fine Brazilian knife. Only $24 for the plastic-handled one and about $42 for the nicer fused wood handle, but they are the same knife. You can get them slightly cheaper at other sources, but there you have to pay shipping, so Amazon is the best bargain!It is sharp and easily sharpenable, good thickness of steel for this sized blade.The upper edge of the blade has quite sharp 90 degree corners, so you may want to do as I did--grind off the sharp corners and polish it more rounded to allow comfortable left hand pressure on the blade while cutting.
A great knife for the price!I got this knife for my nephew who is in his last semester of culinary school. He saw it feature at the Bon Appetit Magazine recently and while he like it and says it works great, he was not expecting it to be so big. Like it says, the blade is 10" but the handle adds another 6"7". It looks like a machete.
The box it came in was also huge. I will be happy the day amazon do a better job boxing stuff in better packaging instead of sending single items in outreageusly big boxes, full of air bags or extra brown paper.

First off, the size noted, 10-inch, is the BLADE! Not the overall length. My bad. That means it's BIG. But boy, is it SHARP! I'm getting used to the large size but kind of wish I'd purchased the 8-inch instead. I definitely should have noted the dimension of 19" on the product site. Regardless, chopping veggies or slicing meat is WAY easier (and more fun!) now that I have it. It seems well made and is comfortable to hold so I'm not concerned about slipping and shortening a finger or something. Classic 10" Chef's Knife
My dad owns a broad assortment of knives: some German, some Japanese, some chinese. One of his santoku's is sharper (though more plain in appearance) than his Shun santoku, but it was a gift from a Japanese business partner and the guy who sharpens his knives was jealous and wanted to know where it originated. Ultimately, he has quite a hodgepodge collection of knives that have been accumulated over the years some nice some not, some even falling apart from wear.I'm a pretty young guy (22), but came into an absurd amount of money recently. When it came time to look at buying some knives I decided to buy something I'd be able to enjoy for a very long time (hopefully my lifetime) and to do it before I crowded my kitchen with knives I wished I hadn't purchased. Shuns aren't the nicest knives under the sun, but in the retail market, they're the best you'll find.
Having used my dad's single Shun Classic 7in Hollow Ground Santoku for some time, when it came time to invest in a nice set of edges, I thought of Shun first. Then I went out and researched all the main competitors and tested their knives, Henckels, Wusthofs, and Calphalon. I only tested the high end knives from these respective companies, so I have nothing to say on their cheap counterpart editions.
Compared to Henckels and Wusthofs which are still very fine knives I prefered the edge and construction of Shuns. Shuns are just that extra little bit sharper. When you go to slice into something with a mild skin you notice the difference. When you touch a tomato with a Shun it just slides right in, no sawing, no pressure. The same is true for things like sausage, the outer wrapping cuts before you apply any pressure. Other than that slight bit of cutting power, you probably won't notice the difference. I also tried out some Calphalons which I was actually quite impressed with. They're every bit as sharp as Shuns and quite a bit cheaper. If you're on a budget, but still looking for a great set of knives, seriously give them a look. The only reason I picked Shun over Calphalon was aesthetics. If this isn't important to you, by all means buy the Calphalons.
The first thing I tested this knife out on was some green onions, and what a world of difference between it and my bargin bin Henckel. No effort perfect slices.
This isn't the ideal knife for this purpose, but my Santoku has yet to arrive so I gave this blade a go at mincing garlic. With something as sticky as garlic, the blades steel didn't help at all with keeping things from sticking, so while the design is great, don't expect miracles. This still went very well and I appreciated that a 10" knife can still be so light weight and quick for this kind of work.
Next I used it to score a flank steak to prepare it for a marinade. I actually had to be very careful not to put any pressure on the knife and pull very gently to keep from slicing too deep. During this process I must have accidentally knicked the ziplock I was using to marinate in because it kept leaking all over the counter and I thought I just hadn't shut it, turns out I put a half inch slit in it without even realizing by accident while the knife was just sitting on the cutting board. BE CAREFUL WITH THESE KNIVES THEY ARE SCAREY SHARP!
Finally I used the knife to slice the cooked flank steak nice and thin on a bias. This is the perfect job for a knife like this. Flank steak can be quite tough, but this was done without excessive sawing. The blade made quick easy work of my steak (another first in my kitchen).
These are expensive knives, and compared to Calphalons, overpriced. The blades are beautiful and among the sharpest you can find anywhere. If you have the means I recommend them, you won't be disappointed. I was amazed by the quality from the first cut wich slid through a bannana like a gentle breeze. Did a comparison on a cucumber with a Kyocera ceramic blade and an inexpensive pairer. The high grade knives are worth the extra money. And this one is great looking too!

I received two pieces from this set for Christmas. They are nicely lightweight, since the handles are hollow.The soft cheese knife cuts fine, but the hard cheese slicer takes a lot of force to cut through harder cheese like mahon curado. Even on not-so-tough cheeses like gruyere, I have to struggle to get nice big shavings.
The biggest problem is the quality of the stainless steel: it rusts very easily. I left it on the dish rack to dry after washing it, and when I returned a few hours later, I discovered rust stains in several corners. These knives are beautifully designed, but I wouldn't recommend them if you plan to actually use them.The design is very modern and the quality seems high, however the cheese slicer has developed some rust stains on it, which I've been able too polish out.

I purchased these guides to sharpen KAI Seki Magoroku series knives. I have never used a water stone before, so I thought these guide rails were necessary. I followed the directions on the package for attaching and using these guide rails, but their corners were leaving deep scratches on the water stone, so I stopped using them after just a few passes. I ended up sharpening knives without any guide rails, and, I think that I did a pretty good job.Nice tool for accurately sharpening Japanese and other chef knives. Actually works very well by maintaining a 15 degree angle, which is very hard to do by hand. Contrary to the previous review on this item, this is an excellent cheese plane that I would recommend to anyone that likes hard cheese, as I do. In fact, its excellent for the specific fact that it's so hard and rigid. Most cheese planes (basically, every other one I've come across) is cheap and floppy when you want to cut really hard cheese like aged Gouda or Parmesan, the plane practically falls apart before the cheese does. Not this one, which is as sturdy as it gets. It is, without question, the most useful cheese implement that I have in my collection.It's not perfect; I don't care for the handle (or in general, Swissmar's handles in general). They're a bit lightweight and unimpressive; not molded at all, feel a bit flimsy in the hard. Compare these to the J.A. Henckels cheese knives, for example, which feel a lot better in the hand and more impressive to look at (hey, if you're entertaining people, that's important!). Oh, and its true that they're made in China. Pretty disappointing for a company named "Swissmar".
Despite imperfections, though, I wouldn't be without it.I have been looking for a good cheese plane, and this one isn't it. It works fine for rubbery semi-soft cheeses like swiss, but not for harder cheese like cheddar, which tend to crrumble before I can finish a slice. The problem is that the plane it too thick and rigid. It should be thin and flexible.
Also, don't let the name fool you. This utensil is made in China, a country which consumes very little cheese.

I've been using these knives for years for camping/car camping. There are three different knives: Green, straight 3 5/8" blade 8 1/4" OAL (over all length), good for pairing knife or cheeses; Yellow, serrated 4 3/4" blade 9 3/8" OAL, good for breads; Red, straight 6" blade 10 3/8" OAL, good for misc slicing and chopping. Very light weight sturdy design, the sheaths fit snuggly and ventilate the knifes if still wet. The blade is extremely sharp, and stays very sharp (I use a nice set of Wusthof knives in the kitchen, and would compare their performance to these). I've already have had friends that have camped with me buy a set. These shears quickly became one of my favorite tools in the kitchen. They are very sharp, quite sturdy, comfortable in the hand, and come apart for cleaning. (I have never had them come apart while in use.) I hand wash them and have never had problems with rust.They have not needed sharpening despite using them for several years. There is a plastic button but the actual connecting piece that takes the force and wear is a metal pin and neither is removable. The handles have a fine non-slip texture but are still easy to clean. The tips are not sharp like a knife tip but are very slightly rounded making them safe to use while holding something in your hand but still pointy enough to do delicate tasks.
You can use them to cut up chickens, trim fat from meat, chop herbs like cilantro and green onions, de-core lettuce and cabbage, trim artichokes, de-stem strawberries, open plastic bags neatly to make them easy to re-close, cut foil, milk jugs, string, parchment, and blocks of chocolate, make baskets out of orange peels, cut soybean thread. I have even used them to cut paper and cardboard on occasion. The hole in the middle is supposed to be for opening bottles but I use it to crack walnuts, pecans, and brazil nuts. The other day I used them to cut up frozen asparagus, much easier than using a knife on a cutting board.
I really don't have anything negative to say about these, they're good quality and a good value and definitely a "best buy" kitchen tool.
They also make a great gift for someone starting a household or for anyone who doesn't have a nice set of shears, twice I have used them for gifts and both times they thanked me several times over the next few months.They are really very sharp compared to the last shears I've owned. The color matches my kitchen motif and I can take them apart and use one side to open a package.

Friedr Dick Soft Cheese Knife
I gave this item four stars only because it's the first cheese knife I have ever owned. Perhaps other, more expensive, cheese knives might perform better. The knife is a bit lightweight, although it performs very ably on all but the hardest cheeses (I switch to a chef's knife to cut those). This shouldn't be surprising, because F. Dick calls this a "Soft Cheese Knife." But from my experience, this doesn't mean just Brie or Camembert. I use this knife to slice cheddar, co-jack, gruyere, etc. This knife feels a lot like my Victorinox 6" utility knife--especially the plastic handle (that's not a bad thing for me; I love my Victorinox 6" utility knife). I bought these knives as extras for when I have people over for a BBQ. The serrations are very large,the blades are dull and just tear the meat rather than cut it. For the price they work with some extra effort and as basically throwaways they meet the need, but if I was looking for day to day steak knives I would have sent these back.As other reviewers have noted,these are large German-style steak knifes. The handles and blade are about 2x as wide as a typical steak knifes and about 1/8th longer; the blade thickness is the same as a typical steak knife but the handle is about 1/3 thicker I still find them comfortable to hold even though I have very small hands, but I would think these would be too big for most kids under 12. They have nice, smooth contoured black wooden handles with full tang blades with 3 rivets. The blades are stamped stainless and look and feel like good quality high-carbon stainless steel, which is what it also says on the box they came in. The curved portion of the blade is serrated from 1/2 inch below the point through the curve of the blade and the rest is just a straight edge (except there is about one-third inch of the bottom of the blade with no edge, which is typical on most steak knives I believe this is a safety feature so you don't cut yourself if you grip the handle too high). These were a little dull out of the box, but sharpened easily and seem to hold an edge well. I've had them about a month and so far I like them a lot they are surprisingly comfortable to hold and use, cut decently, wash easily, look great and seem to be wearing well. I've had guests over a few times and used these the size got smiles and laughs every time, followed by exclamations on the nice quality, how comfortable and easy to use they are and where did I get them, lol. So if you want a bigger, more substantial steak knife, these are a good choice. Others have written how good these knives are. Presumably one of three things happened in that case. 1: I did not get the same knives they did, 2: they got good versions of the junk I got, or 3: They were not honest about their comments. I do not know which it would be, but I can state, categorically, that these knives are pure junk. Not sharp, rip meat, loose handles that allow matter to seep under them, and leak water after the knife is dried. Two handles really bad, with cracks round the rivet and rough edges.If you receive the same knives I did, you will be truly sorry, even if they were inexpensive.

I purchased this set for my wedding. When it arrived, it looked quite nice and the 2 pieces felt decently solid. We used it to cut the cake and fortunately it did not break then. Once we went home and used it for the FIRST time after the wedding, the handles from both the server and the knife came off and I could tell from the construction that it is of very poor quality. The "crystal" is cheap glass, so don't expect much. Bottom line, if you want something that looks decent from far away and don't care about tossing it in the trash right after the wedding, then the $15 is not a bad investment. I use these guards for my Wusthof 10" Chef's (x2), 3" parer (x2), and 10" Santoku (x2) knives. I place the guards inside a travel bag for my Wusthofs to prevent the knives from cutting up the bag or piercing the bag. The inside of the guards have a velvet-like material in order to prevent scratching. As long as you place in the guards when they are completely dry, it works great. These guards stay sharp due to the plush lining and the fact that I have sharpener, I'm not worried about knife dullness. These guards do not stick to the knives or have any type of locking mechanism to prevent the knives from slipping out, so be cautious as to keep them in the sleeves of your case, if you use one. If you are looking for a guard that locks the knives in, then seek another product. I purchased these to prevent the knives from piercing my travel knife bag (I keep the guards in the sleeves of the bag at all times), so the ease of getting the knives in and out of the bag is simple and easy. This knife protector fits the Santoku knife perfectly as well as the 8" Chefs knife. I purchased different sizes for use intraveling. They fit perfectly without fear of slipping off the blade. Of course, we put them between clothing in
the luggage. The Wusthof blade protectors can also be used for protecting your blades in drawers. However, Wusthof
makes an in-drawer knife holder that is perfect for storage. It holds three long blades on the bottom and four
shorter ones on top. These single holders are a must if you have invested in good knives.
The worse thing you can do to a knife is throw it in a drawer without protection. It will destroy the blade.The felt inside is easy on the knife and nicely cushions a global pairing knife. However, if it ever gets dirty (and what doesn't get in a kitchen), I see no way of properly cleaning this device nor did it come with any cleaning instructions. So, it seems like it has a built in limited life.I bought a set of 8 Wusthof steak knives a while ago and the set didn't come with a storage box. So I had put them all in my drawer organizer. It was horrible. The blades weren't protected and they just banged into each other all the time. But I didn't have another option at the time. Until I saw these blade guards. They work perfect in my drawer. The blades are snugly protected and so are my hands. Plus, using blade guards take up far less room than those in drawer knife blocks. I don't have enough drawers to devote one whole drawer just for knives, so this was a great solution!
