Premium Suction-Base Knife Sharpener Tungsten Carbide

Premium Suction-Base Knife Sharpener Tungsten CarbideReally bad copy of a good product! I purchased two of these. Took one out and tried to get the suction cup to hold as designed. It would not hold very well if at all. Tried the second one and the same was true. These are actually dangerous! If you get them to hold it's only going to be for a very short time and when you go to sharpen your knife it lets loose as you are pulling the knife through the little sharpening blades!

Spend more money and get the good one.

Does not work package say toy will not sharpen anything its a ripoff don't lose your money this is a peace of junk!!!!!!!!!!!

It is similar to one I have, but doesn't seem to be the same good quality. I will still give them away.

If I had the resources, I'd test the blades to see if they were really Tungsten Carbide or just High-speed steel. They certainly dulled rapidly against supposedly softer stainless steel. I won't buy this product again. I won't recommend it to anyone I know. I won't buy anything that looks like it was made by the same manufacturer.

Kuhn Rikon Mini-Pro Knife Sharpener

Kuhn Rikon 2940 Mini-Pro Knife Sharpener, BlackI have a bunch of Kuhn Rikon knives. I wanted to spend a fortune on high end knives like Shun, but the the Kuhn Rikon knives did such a good job that, with an entire set costing less than a single Shun, I quickly abandoned "status" and bought the Kuhn Rikons.

No matter who makes a knife or how well the knives are treated, they will eventually need sharpening. Since the knives carried the Kuhn Rikon label, I decided the sharpener should, too. The sharpener does not disappoint! Just a few strokes and my knives are just as sharp as the day the were unsealed! The sharpener is virtually idiot-proof since all one has to do is pull a knife through a few times.

The one odd thing about the sharpener is that it's awkward to open at first. It was a bit sticky. However, the sharpener does such a good job that I decided not to take off any stars. DEFINITELY recommended!

I have several Kuhn Rikon knives, and love them. They are so much better than the more expensive knives that I own. So, when I saw this sharpener advertised on TV, I came to Amazon to see if I could find a better deal (which I did), and ordered it. It arrived within a few days, and I immediately sharpened all of my knives. I can't really say that I saw much of a difference in the before and after sharpening. I have another knife sharpener that seems to work just as well, and cost half as much. I am giving it 3 stars because it is OK...but wouldn't recommend or buy again.

Buy Kuhn Rikon Mini-Pro Knife Sharpener Now

I'm not a knife snob. I can't afford the really top-notch blades, and I've never taken the time to learn how to use a whetstone or a sharpening steel. But I do like the Kuhn-Rikon and Pure Komachi knives I have, and when their edges finally dulled, I wasn't thrilled at the prospect of buying all-new blades.

I took a chance on the Kuhn-Rikon Mini Pro, and it's great! 20 swipes through the disks, and I can cut through an orange without putting any pressure on the knife handle. The sharpener is small and tucks away nicely. It may not be the connoisseur's choice, but it works for me!

Lekue Twin One Utensil Set, Green

Lekue Twin One Utensil Set, GreenThe chop stick part probably will have to wait a little longer for the kids to use, but the fork and knife is definitely good to train kids to eat properly at table. There aren't many fork/knife combo out there for kids, mostly fork/spoon. It's great to be able to train kids to use fork and knife properly, just no "stab and saw."

Kind opf cool, kind of geekey, not very sturdy but should hold up with hand washing and a little TLC.

Yes you get 4 awful utensils in one over priced package ... save your money... this is the stupidest product on the planet.

The utensils barely fit together.... then they just barely work that way as chopsticks ....

Why not just order some Chinese food and get some free chopsticks !!!

J.A. Henckels International Fine Edge Pro 8-Inch Stainless-Steel Chef Knife

J.A. Henckels International Fine Edge Pro 8-Inch Stainless-Steel Chef KnifeI bought this knife because I love my other, more expensive Henckels, and needed something in about this size. I figured I'd try the low-priced model to see how it compared.

Out of the box the knife had a great edge, and worked exceptionally. After a couple weeks of heavy use, however, the edge was all but gone. A quick run through a Henckel sharpener, however, and the great edge had returned.

You'll need to sharpen this knife a lot more than the more expensive versions, but if you don't mind taking the 10 seconds every other week to do this, you should be very happy with this knife.

When I walked into my local Meijer's I was looking for an inexpensive knife to beat up on. Allow me to clarify... I sharpen my own knives of all varieties. Kitchen, utility, tactical... You name it, I sharpen them. I like to be able to put a razor sharp shaving capable edge on all of my knives. I was looking for a very cheap knife to use as an instructional tool for my wife. I wanted to teach her some basic sharpening skills, and she needed something to practice on. As a cutlery enthusiast, I enjoy doing research on varying knife steels, buying knives that use them, and then testing their qualities and performance. So, when I purchased this knife for under $10, I wasn't expecting much. I was looking for a straight edged bolster-less 8" plus chef's knife, but aside from that, I really did not expect to like the knife. However, after testing it straight out of its package, I was very impressed with how well it performed. This knife is an excellent slicer for fruits and vegetables. Instead of having my wife mess up the finish of this blade, I decided to add it to my collection.

Here are the reasons why I have rated this product 5 stars:

1. Even though its thin blade profile may give the impression of being cheap, it actually makes this knife an excellent slicer, outperforming heavy more expensive German knives, Henckels or otherwise.

2. Because of the thin blade, even though it is a full tang handle design, it is very light weight. For someone who may have wrist issues, carpal tunnel, tendonitis, etc, this knife will feel very good in hand. I have found no balance issues either. It is perfectly balanced at the hilt, which also adds to the in hand feel.

3. It is very inexpensive!!! Did I mention I purchased the knife under $10? This is the biggest selling point. I wouldn't expect a whole lot from a knife at this price point, but if you understand the limitations of the steel at this price point(i.e. needing to be re-sharpened more frequently)then you will be very happy with its performance. Also, as an aside, I have re-sharpened this knife once since I bought it, and it was very easy to put a hair shaving sharp edge on it after a few minutes on my water-stones. So, I suppose the final selling point would be...

4. Ease of re-sharpening. Even though it won't hold an edge as long as a knife with a premium steel such as vg-10(which would also cost 8~15 times as much), it was very easy to re-sharpen.

In summary, I think this was an excellent purchase for the money. It outperforms some of my much more expensive chef's knives when it comes to slicing. It won't hold an edge forever, but neither will any other kitchen knife. If you never want to have to re-sharpen your knives, but just want them to have a sort of blunt edge that stays the same for years...then get a butter-knife instead :)

Also, I just remembered, the handle isn't the most comfortable thing in the world in terms of its shape(I can't use the same "pinch" grip I use on my more ergonomically designed knives). It felt a little blocky in hand, and I had to modify my grip a little to make it work. But, again, for the price, I really don't find it to be a show stopper. Once I fixed my grip to accommodate the shape, it performed very comfortably and beautifully. Honestly, if you don't already have a different grip that you are accustomed to, then you may never even notice. And to be sure, I actually change my grip slightly when switching between knives with different handle shapes, so it really wasn't that big of a deal.

I paid about [$$$] for this knife and have used it for a month now. it's a very good knife for this price. the blade is thin at the sharp edge and is thicker that the top; so it is sharp and strong at the same time. it's not carbon steel, so it will need sharpened once in a while but it doesn't take much work since the blade is thin. I use this knife all the time and i like it.

I don't cook much, so I needed an inexpensive knife which would be sharp and reliable. I've had it for several months and have not had to sharpen it once, but I use it only a couple times a week. It's nice and sharp, relatively well-balanced and comfortable to use, and cleans easily.

If you aren't serious enough about cooking to want more than one knife to use in the kitchen, this is an excellent choice.

Jaccard Ceramic 3-Inch Peeling Knife

Jaccard Ceramic 3-Inch Peeling KnifeI've used plenty of ceramic knives before, although this is the first ceramic bird's beak (BB) and my first Jaccard. This knife is pretty bad. It has a number of problems:

(1) The ceramic blade isn't nearly as sharp as I'd expect remember, this is a brand-new factory blade purchased direct from Jaccard (via Amazon). The whole point of ceramic materials is that they hold their edge perfectly over time... well, this edge started out crappy so it is going to stay crappy. I find it very hard to cut into a fresh cherry tomato, where I can do this easily with my 20 year old $10 Henckels knife with old crappy steel that I've sharpened hundreds of times.

(2) The blade is a bit large for a BB. I measure it as 82mm from base to tip (linear, so add a bit for the true arc-length). My Henckels is 68mm, which is a much better size. To be clear, this has nothing to do with my hand size, or the handle size, or the combination of the two (both knives fit well in my hand, which is average sized). What sucks is that the blade itself is larger than lots of things you'd want to pare with it. FYI the Jaccard's maximum arc is 3.5mm and the Henckels is 4mm, so the Jaccard also has a pitifully wide radius of curvature.

(3) The ceramic blade is fairly thick stock (measured at the back, not at the blade edge), which is especially bad on a knife meant for fine-paring as it means there's a fair amount of pressure and drag when you're trying to slip the entire knife inside something being pared. My Jaccard is = 1.80mm, Henckels BB = 0.71mm. For reference my Wusthof Grand Prix I (not II) regular paring knife is = 1.24mm and a relatively even thickness, my Global 20cm chef's knife = 1.75mm and a slightly tapered material ("Japanese style" thin for a full size chef's knife) and an old Henckels 20cm heavy "German style" chef's knife (from the same set at the BB) is = 3.15mm (this material is very tapered so it has a very thick feeling spine). On the cutting edge the Henckels BB goes gradually down to 0.38mm, where the Jaccard has a wedge-grind about mid-way and still only gets down to 0.64mm near the sharpened grind. I think a good BB knife needs very thin and flat material, so this Jaccard doesn't seem great.

(4) The blade has a very inconsistent radius-of-curvature. This is going to be hard to see in my picture, but it basically *looks* like this knife was sharpened free-handed by an unskilled laborer. I'm fine with handmade products, assuming of coure the craftsman doing the hand-work is better at it than a machine, which clearly isn't the case here (or the machine has really bad tolerances). This may sound nit-picky, but when you're trying to make a precision cut in a piece of food by drawing the knife along it, even a fraction of a millimeter change in the curvature is very noticable and annoying. This particular point is the main one I'm citing with the company to try to get them to give me a new and better knife.Pros:

knife came with a custom-made sleeve

medium price *for ceramic* (as opposed to real expensive ones)

Cons:

#1 above

#2 above

#3 above

#4 above

#5 above

Unknowns:

I haven't had this long enough to know how well the ceramic holds up to chipping or staining.

This knife takes some getting use to as the blade seems to be on the wrong side. I am use to using the Bird's Beak blades.

Victorinox 48042 Cutlery 3-Piece Paring Knife Set

Victorinox 48042 Cutlery 3-Piece Paring Knife SetI almost didn't buy this set because I figured I'd have no use for a gimmicky curved knife and a serrated blade, I only wanted the normal paring knife, but the set was only a little bit more expensive than an individual paring knife. As it turns out I use the curved knife more than any other knife I own, and the serrated one more than the normal paring knifeI was fully prepared to hide those two knives in the back of my drawer and never look at them again, but they are really great. I'm sure you can get better knives somewhere, but not at anything remotely close to this price. I am pretty picky about knives, and Forschner's are definitely the best I have used. I also strongly recommend the 8 inch chefs knife. I guess the best way to sum up my feelings about these (and the 8 inch chef's knife) is that I would have happily paid 4 or 5 times what they cost.

I've ordered this set and other Foschner knives and I highly recommend them.

They are reasonably priced, keep their edge, and are balanced.

I think they are better than my high-priced, over-rated Henckels knives.

It's great to find a reasonably-priced quality product.

I purchased these on somewhat of a whim as my older paring knives were getting worn. They have quickly become the first knives I reach for. The varied selection fulfill most of my daily needs. They are sharp and lightweight which is especially handy for a woman. I'm very satisfied with my purchase and it didn't "break the bank". I think they will sharpen easily when needed and last for many, many years.

10/09I've used these knives now for over a year and they sharpen up quickly and easily with this handy little sharpener: http://www.amazon.com/gp/product/B0002JENO8/ref=cm_rdp_product I am very happy with both of these purchases and recommend them.

3/11I still have and use these knives daily. They hold their sharpness quite well for my needs, (though I am not a professional chef), and are very comfortable to use for me. I am an average sized, middle 50's woman, and use these knives for a multitude of tasks.

Want Victorinox 48042 Cutlery 3-Piece Paring Knife Set Discount?

The standard paring knife included here is wonderful. It's thin, lightweight, flexible, and sharp. It slides through vegetables as easily as it does through butter. It neatly conforms to the contours of what you're cutting, if you so desire. I cored some tomatoes last night, and didn't have any issues. Great, too, for mincing garlic.

Honestly, I haven't really found much use for the other two knives in this package, as they're specialty knives, and I don't do a whole lot of the peeling which they're useful for. The normal paring knife is fine for most non-peeling sorts of tasks.

But, for $10, you're not going to find a better paring knife. The only way you're going to get something better is to spend four or five times as much, and I'd rather just buy a new one of these every few years (under heavy use). (As another reviewer said, they're quite thin, so sharpening would be a pain -I haven't had to do so, yet.)

Zwilling J.A. Henckels Twin Signature 7-Piece Knife Set with Block

Zwilling J.A. Henckels Twin Signature 7-Piece Knife Set with BlockI have a set of mid-range Henckels that I bought some years ago, and they are -muchbetter than this. I bought this set for my daughter because they were a good compromise between quality and price, and she won't ruin then in the dishwasher. I would have thought that Henckels wouldn't make any actual crap, but this set comes awfully close. The good thing is, boy are they sharp. But there's bad things too. Only the 8" chef's knife and the shears have any feel of quality at all, the rest are -verythin and flimsy. 'Laser-cut' edges are overrated make them another millimeter thick please, so they can make a precise cut without the blade bending and taking off in an unintended direction. A good knife is an extension of the cook's intention it does what you want, and does NOT require thought and pre-conception and compensation in every cut. (...)is waaay too much for one adequate chef's knife and some toys. Very disappointed in Henckels, and in Amazon too, I don't feel I got what I ordered.

Henckels Twin Signature 7-Piece Block Set is exactly what I'd hoped that it would be: a quality set of knives that is ideal for the home.

The set of Henckels that I've owned since the mid-80s finally gave in to a lot of use, sharpenings and dishwashings (dishwashing a good knife is a nice way to shorten the handle's life expectancy!). But 20 years of great service from my previous set of Henckels certainly warranted a loyal update/upgrade to another Henckels set.

And I am not disappointed. The new set is quite sturdy. Home users will be impressed with their strength; pros might be used to a higher standard, but I used to work in a professional kitchen and I can't see how these would not be as effective as anything a pro has.

These knives come out of the box SHARP too...a lot sharper than the sharpest that I've ever had my previous set sharpened to.

There were two descriptions from Amazon that tell you what you get; one of Amazon's descriptions included a carving knife (product description) and the other a peeling knife (what's in the box). Amazon seems to have corrected the error as of this updated 2-13-2006 writing. To be sure, here's what you actually get:

2 1/2" peeling knife

4" paring knife

5" serrated knife

8" chef's knife...this baby cuts through a roast like a hot knife through butter even though it's designed for chopping and dicing. In my opinion, it's better than a carving knife.

a sharpening steel

kitchen shears

and a storage block with 11 slots which is great because some of the knives, especially the serrated knives, from my old set are still in mint shape (like the 8" bread knife), so there's plenty of room in the block for knives in your current collection looking for a new place to sleep.

No 8" carving knife. But like I said above, the 8" chef's knife works better than any carving knife that I've used.

The only things missing from this set for the average home is a nice large bread knife (as I said this was not a problem for me) and steak knives (also not a problem as most households already have these). Plain and simple, this is a great set of food preparation knives that--if my previous set is any indication--will last for decades.

Bon Appetite.

A very solid knife set, especially with the extra slots for those who have a few "favorite" knifes left in the drawer. MAKE SURE when you buy Henckels to get the "twin" set instead of the single little henckel-man, that's a big upgrade in quality. Oh, and for goodness sake people, quit putting your knife set through the dishwasher and just clean them as you go.

I read the product description when I ordered this item, and compared it to the image, and must have assumed that the mistake was in the product description and not the product image---I was wrong. I think that this is rather misleading on the part of Amazon. The product image needs to be updated.

Towle Living Alpine 42-Piece Flatware Set, Service for 8

Towle Living Alpine 42-Piece Flatware Set, Service for 8I previewed these at a bricks 'n' mortar store first. They are heavy with nice rounded edges. The design is quite modern. The only drawback is that the two forks are almost identical in size. If the salad fork was just a tad smaller, I could have given five stars. Unless the two forks are side by side, they're difficult to distinguish from each other. If you don't care about that, prefer a modern look & like a heavy flatware set, you'll love these.

The flatware is not stamped stainless and I don't think that's an oversight. The knives rust at the serrations. They are well designed from at esthetic point of view.

Giftcraft Grape Cheese Pick

Giftcraft Grape Cheese PickI ordered three of these two for gifts, and one for us. The gift shop I used to work in sold similar cheese picks, but nice ones are so hard to find. It's always made me a bit squirmy to watch people use their questionably clean fingers to hold the cheese when slicing/cutting it. This pick looks so nice, and keeps those fingers off my cheese!

WMF Spitzenklasse 6-1/4 Inch Santoku Knife

WMF Spitzenklasse 6-1/4 Inch Santoku KnifeI enjoy cooking and a good knife is a joy in the kitchen. I initially picked up a WMF Spitzenklasse knife on a trip to Europe and after returning to the US it quickly became my favorite knife. Of all the German knives I have used, the WMF stands out. The only knives I have used which are better are VERY EXPENSIVE knives from Japan. There is nothing better in the sub $100 range of kitchen knife than the WMF Spitzenklasse knife.

They are well balanced.

They sharpen easily

They hold an edge

They will even hold an edge if sharpened to Asian specs

I grew up with WMF knives in Germany, my parents wouldn't get anything else. Upon moving to the US, I was happy to see I was able to get a few WMF knives on amazon (since I knew nothing about quality knives here and was comfortable sticking with my roots). I love this size and shape specifically. It's not too heavy, not too light, is perfect for chopping vegetables, fruit or anything you want really. After dealing with cheap knives for a few months, getting this was a life changer. Wouldn't want to go without it anymore!

Taiwon Metal Stainless Steel Modern Space pattern flatware, Butter Knife set of 12

Taiwon Metal Stainless Steel Modern Space pattern flatware, Butter Knife set of 12Exactly what I was looking for. Just small enough to sit on a butter plate and the price was not bad also.

The Modern Space series by Taiwon Metal is a simple yet lovely pattern with a simple rounded end. It's sleek and simple design make it a perfect for either restaurant use or to accompany intricate and beautiful china and crystal. This set is more than good enough quality for the average home, and it seems sturdy enough to hold up even in restaurants for many years. It does need occasional polishing but doesn't seem to easily scratch or bend.

The weakest part of this set is the absence of a few pieces: Appetizer Knife, Butter Spreader , and Bouillon Spoon (all of which are offered in the Baguette design) and a Fruit Fork, Fruit Knife, Fruit/Citrus Spoon, Oyster Fork (with three prongs), and Salt Spoon which are not offered in any of the Taiwon Metal patterns. But that only highlights exactly how perfect this set is for multi-course meals or restaurants with different dishes. One can easily built a 7-12-course meal with this set.

Mundial B5604-7GE 7-Inch Hollow Edge Santoku Knife, Blue

Mundial B5604-7GE 7-Inch Hollow Edge Santoku Knife, BlueI helped a friend at a commercial kitchen, and I loved their Mundial knives. I decided to buy one. I got a santoku with the hollow-ground sides.

It's a very well-made (inexpensive) knife. It takes an edge fast. It stands up to the dishwasher. The price is great. But there is something about the balance and blade shape...it just doesn't work for me the way a traditional chef's knife does. For this reason, I gave it four stars instead of five.

I also bought a 14" slicer. It's wonderful.

I may go ahead and order a Mundial chef knife. The knives I used in the commercial kitchen were huge chef models, and they worked better for me.

Bob Kramer 7 inch Carbon Steel Santoku by Zwilling JA Henckels

Bob Kramer 7 inch Carbon Steel Santoku by Zwilling JA HenckelsI had been knife shopping for a long time before I finally settled on Zwilling's Kramer santoku. I knew I wanted a santoku and I knew I wanted something I could count on lasting a lifetime. I don't tend to agonize much over any of my purchases but I found myself struggling to find the knife I wanted. The market seems lately flooded with a multitude of high quality knives featuring a bewildering variety of blade and handle designs not to mention different steel types! I was eventually drawn to this particular knife because the European style chef knives from the same line seem to earn such high praise. Oddly, Iv'e had little luck in finding many impressions of this particular model on the internet. I gambled that Zwilling had put as much care into the crafting of the santoku as apparently went into their other Kramer designed knives. I have not been disappointed.

This knife feels wonderful in my hand. It is well balanced and comfortable in any of the grips I normally use. The edge curvature suits up and down veggie slicing quite well and contrary to what some have found, I really like the way the blade rocks from tip to heel when I mince herbs. Of course, it is intimidatingly sharp right out of the box. I've only been using it for a few days now so the blade has lost none of that initial edge but I look forward to seeing how long it lasts. Straight carbon is well known for its ability to hold a sharp edge for a long time and to resharpen quite easily. I'd like to point out one aspect of the blade that is not at all obvious in any of the pictures or descriptions of it that I've found. The thickness of the blade tapers very evenly along its entire length to become very, very thin for the last inch or so. This is great for performing delicate work and is a testament to the attention to detail which went into this knife's construction.

I hope to update this review in the future and report how well this tool holds up to longer term wear and tear. I might even upload a few pics to illustrate how the patina develops.

There are 2 versions of the Bob Kramer 7 inch Santoku knife

1. Bob Kramer 7 inch Carbon Steel Santoku by Zwilling JA Henckels made in Germany: This a great knife but be aware that it has a Carbon Steel Blade and requires maintenance to create a patina and prevent rust. The blade keeps a very sharp edge longer.

2. Bob Kramer 7 inch Santoku knife by Shun made in Japan: This the knife I chose. I tried both at Sur La Table which is where I bought it. This Shun Bob Kramer knife is meticulously crafted by 150 expert artisans to achieve the precise heft, balance and shape of Bob Kramer's original design. The 3mm steel blade is composed of an SG2 core (64-66HRC) clad with true pattern-welded nickel and Damascus stainless steel for a beautiful, razor-sharp and lasting edge. The Handle is the same on both versions and is Gently rounded and richly grained red and black Pakkawood handle is crafted in Bob's signature contoured shape, and mirrors the curve of the palm for a wonderfully natural hand-feel. It was a financial stretch as I'm Irish and Swedish. This knife and the one above are worth there weight in gold. The Shun cost $40 more then the carbon steel but was well worth the cost to me. The Blade is a work of art and there is no patina maintenance required.

Brockenb, the fault is indeed yours. You DID misuse the knife. This kind of knife cannot be used for cutting bone and doing so will break the blade, which is what happened to you. Also, a carbon steel knife will acquire a patina, and requires proper care.

It sounds to me like you had no idea what you were buying, or how to use it properly. In the future, I suggest Target -they have some very nice knives for $25 or so that should be perfect for you.

I received my Kramer by Zwilling knife as a gift. It looked and worked great at first, but then it began to rust. I've never seen a knife rust before, but it looked awful. Then, while cutting through some meat, the edge of the knife caught on a piece of bone and a big chunk came out of the blade, totally destroying the knife. I contacted Kramer and received an email from Bob Kramer himself essentially blaming me for improper knife use. I'm very disappointed and will never buy a knife with the Kramer name on it.

I got this a few months ago, i never used it because i hated the way it felt in your hand. I didnt cut one thing with it, and I put it back in the box and returned it. 2 weeks later i get a partial refund ($150/$329), stating that i stained the steel with my fingerprint (if thats even possible.) So i had to open a claim with amazon which i won to get the rest of my money. Very bad experience and wont order from them again. I think this knife is very over rated and the paring knife i have of this brand has rusted and looks horrible and ive never dishwashed it and always cleaned it right after use. I since then got a Wusthof Chef Knife and i couldnt be happier.

Shun DM0517W 7-Inch Ken Onion Hollow-Ground Santoku Knife

Shun DM0517W 7-Inch Ken Onion Hollow-Ground Santoku KnifeThe Knife came today, it arrived razor sharp and beautiful.

The Cutting edge material is not VG10 as described, but the new propriatary VGMAX steel that Shun has been converting their knives to. It is supposed to be a bit less brittle, but based on VG-10.

I bought a Shun 22 knife Block from Amazon and was suprised to find that the knife did not fit the wide slots. .Shun 22-Slot Bamboo Knife Storage Block It would fit the very wide cleaver slot, but thats already taken with my cleaver. I do not want that edge pushing against the hard bamboo and getting dull or bent over.

There appears to be no good reason as to why there could not be a wider slot, there is plenty of room to have one, so I'll be getting out a saw and enlarging the appropriate slot. I'm not yet sure if I should make a keyhole shape so that all of the cutting edge will fit into the block, or just let it rest on the bolster.

At any rate, its a wonderful blade, and I love the handle, it fits my large hand

Update I took a meat saw to the slot in my Shun Bamboo block the one under the kitchen shears and it was easy to widen the sloot to almost 2-1/2 inches. (A meat saw is basically a giant hack saw with a blade 24 inches long) However, the blade of the knife does not fully insert into the block, so I need to make the slot keyhole shaped so the top of the knife bolster will slide into the slot until the blade is fully inserted. Its very sharp, and not good to have 1/2-3/4 inch of blade sticking out.

Another Update: After just one use, the edge of the blade crumbled and broke away. It was only used to cut vegetables (tomatoes, onions, carrots and celery), and only a small amount of these. I use a nylon cutting board, and the knife has been babied.

I suspect that the steel was overhardened, which makes it extremely brittle. I have ordered a replacement, so hopefully, its not batch related, but is a individual thing.

I've now had the replacement knife and used it for a few weeks with no further issues. I've had to hone it a few times, once it was so dull that it wouldn't slice tomatoes, just crush them, but a few strokes with a ceramic hone and it was back to full sharpness. I'm pretty sure that the first one had a issue with the metal, I have another Shun vegetable knife and its had no issues either, and its also the VG Max alloy.

This Santoku exceeded my expectations in all regards. A wonderful kitchen tool. Kudos to Ken Onion for this blade. I reach for it before my Global or Wusthof knives.

I had to buy a kapoosh holder to keep it on the counter, but this eliminated one of the blocks I had.

This is my go to knife for everything now. Nice and sharp, and balanced. I can see this knife getting years of use and handed down. It is very well built and feels very balanced.

I have several of the shun classic knives and I love them. This knife was my Christmas present to myself and it's wonderful! Its a great size, and I love the slight curve in the blade. Its different from the classic shun shape. The curve makes chopping herbs and mincing so easy! I've used many other knives and Shun is by far my favorite! Thin and strong with an extremely comfortable handle.

8" Chinese Cleaver with Wood Handle

8' Chinese Cleaver with Wood HandleCleaver is in between a big heavy cleaver and a thin slicing cleaver. I once had a Japanese slicing cleaver that was light and thin and nimble. This looked like it in the pic but when it arrived it was somewhat thicker and heavier. Though it is stout, it is fairly thin and easy to wield. It arrived very sharp. It appears to be nicely made. It feels good in the hand and handles tasks with authority. It works well on the cutting board. It can take on tasks like slicing vegetables, chopping up assorted foods, mincing, and cutting. It's sharp enough for thin slicing and heavy enough to go through tougher thicker slices quickly and easily. I think you could use it to cut up a chicken, dice up some onions, and slice tomatoes. It's a clean, balanced, sharp all-around kitchen knife, and the cleaver blade makes it nice for scooping up cut-up vegetables etc. It's a much better chef's cleaver than the stuff hanging off the racks in the chain stores like walmart etc. It has a well-crafted authentic feel in how it was manufactured, and that is satisfying.

The title says it best. I use it as an all around kitchen tool. This is my second Chinese Cleaver
