I bought this knife for its carbon steel blade, which should retain its sharpness better than stainless steel knives. The knife arrived with a very sharp blade; its handle is a comfortable shape. However, the knife is very light in weight, which makes it feel unsubstantial. I admit that, because it's a paring knife, functionally it probably doesn't need to be heavier. Still, I'd perceive the Dexter-Russell as a higher quality tool if it had more heft.In fairness I should include also my wife's opinion: "I love the knife--it's so sharp." She notices the light weight, but it doesn't bother her.

The block contains a nice mix of steak knives, scissors and utility knives. The handles are lightweight plastic, so the knives don't contribute much to the cutting action you'll get a good workout cutting up lots of fruits and veggies with these. The knives seem to stain and spot pretty easily, as do most cheap utensils. If you have deep pockets, you're probably looking at brand-name cutlery anyway, so you'll give these a pass. However, if you're looking for an inexpensive set of knives to "make do", these will do nicely.
Calphalon Contemporary 8-Inch Bread Knife
A bread knife is a specialized tool -you really can't use it for much other than cutting bread. It's tempting to purchase just any bread knife. But this is forged, rather than stamped, and the reduced flexing of the blade goes a long way towards making the slice the slice you wanted rather than what you happened to get. Functionally, this knife is beyond reproach. Even with crusty breads, the crumbs are minimized.It does not use the traditional three-rivet handle -the handle is molded. But it is a full tang, and there's no reason to expect any loss in longevity.
I gave this four, rather than five, stars primarily on the basis of the appearance of the blade -but this is a matter of personal taste. Unlike knives used in the kitchen (where getting the job done is the job, and the appearance is not particularly important) a bread knife is likely to be used before guests. The utilitarian appearance of the blade is entirely appropriate to my tastes, however it may not appeal to those who expect a highly-polished appearance. Also (and this is visible from the photos) this bread knife does not have an offset handle, which may be awkward with large cutting boards.

I researched all the knives the experts recommend Henckel, Schilling, etc. and found myself totally confused. I didn't need a full set of knives and only wanted a 8 to 10 inch chef's knife so buying a set seemed a waste, yet purchasing even 1 chef's knife from a big name brand would run me $80-100 with shipping. When I made the decision to upgrade my kitchen knives I had a difficult time settling on my large chef's knife or cook's knife as Dexter Russell calls this. I read as much as I could about kitchen knives at discussion forums like Chowhound and after reading the original review here and the handful of reviews of some of the similar models I rolled the dice on this.I really like the light weight of this knife and having used a smaller 7" chef's knife for many years appreciate the nimbleness. The white handle provides a natural grip that gives you solid control over the knife. This cook's knife just has a substantial feel to it while not feeling heavy.
Update: The knife stained after cutting my first onion with it. Have since learned that carbon steel knives naturally stain to prevent rust. The product description describes this knife as stain-free and I ended up returning it. I stand by my comments as far as the handling of the knife but the staining may come as a surprise to some people who buy this.

I actually bought these knives from Target for a few bucks more. So buy them here and save. I absolutely just loves these knives. They came out of the package sharp as can be. They are soo sharp and cut with such ease. I use them to cut vegetables. And I just love that I have a protective cover for them to store them safetly. The holster fits very snug over the knives, no jiggling around. I rated them four stars because I think the only improvement would be to have a 7 inch knife too.

I don't understand some of the reviews on these knives. Mine are well made, sharp and just the right sixe for a smaller hand. The sheaths are a plus to help keep the edge sharp and from cutting yourself when reaching for the knife. I am thinking of buying a few more sets as hostest gifts and wedding presents. Kitchenaid always produces a quality product.

I bought this knife to replace a cheap "birds beak" knife that broke while I was using it. This knife is a 1/2" smaller than the one I replaced, but I love this knife because of that. This knife is much easier to handle for me. It is great for cleaning shrimp!!!On this knife, the tang goes right through the handle (full tang), so the blade will not break away from the handle (as did the one I replaced).
The knife arrived much earlier than expected!!! I was surprised that it arrived so quickly!!!

good handle, grips well, cuts cheese well, better is chilled a bit when cutting brie. Nothing bad to say about it.
This is a fairly large knife as cheese knives go it's a tad over eleven inches long. But the design ensures a good balance, and even my small hands are comfortable gripping it.
One thing I love is the blade: it's super sharp and will cut through semi-hard and even hard cheeses like pecorino romano with ease. I think the problem it has with soft cheeses is the blade needs to be ground more concave. The company makes a special knife for some of the creamier cheeses like brie and Camembert that may be better suited if that is the type of cheese you want to use this knife on: Boska Holland Monaco Collection Stainless Steel Brie Cheese Knife.
However, even the best cheese knife is going to have soft cheeses cling to it. This one minimizes the clinging, but certainly does not eliminate it completely. Personally I am pleased with the performance, but I can understand folks who will not be as happy. In fact, one of the reasons I am writing this review is to emphasize the limitations as well as why I personally love this knife.
Another thing I love is how easy it is to clean and keep sanitized. I never machine wash mine, preferring to submerge it in hot, soapy water made from antiseptic dish detergent, wipe down and thoroughly clean and hand dry. Do be careful because as another review warned the blade is sharp and you can easily cut yourself if not careful. When washing I always have a grip on the knife with one hand so I know where the blade is in soapy water.
Cheese aside, this knife is also perfect for thinly slicing vegetables and fruits. In fact, it is the knife I grab when I want to slice tomatoes even overly ripe ones thinly. I also find myself using it when I want to thin-slice red onions, which have always given me trouble. Not so with this knife.
Soft cheese may cling to it, but this is still an outstanding cheese knife that I use for much more than cheese. I am one hundred percent happy with mine.

Zyliss Knife Sharpener
It's great for getting that extra fine edge to the Zyliss blade, but it doesn't hone and sharpen like other knife sharpeners. The two wheels inside are, I believe, porcelain, and works well with the Zyliss knives because of their thin blades. Still a good product for the price.

Chicago Cutlery Walnut Tradition 7-1/2-Inch Slicing/Fillet Knife
I've had one of these knives in my kitchen drawer for 25 years and It's a great knife. However for filleting fish I prefer a more flexible blade. If you gut and clean your fish first, then fillet them, this knife is just the ticket. If you prefer to fillet the fish without cleaning, which involves cutting from the top of the back running the blade along the spine, and just over the ribs, this blade is too stiff. I can't feel the spine on a salmon or trout, and you'll leave a lot of the meat on the bone, or cut through the ribs and leave them in the fillet.My preferred knife for filleting is a Rapala6 Fish'n Fillet / Single Stage Sharpener / Sheath but caution mine is several years old and the quality may have deteriorated. For cutting up a raw chicken it's just the ticket. Nice thin blade, chicken bones are harder to cut, so you can follow along them easier.
Hence the 3 stars, because it doesn't do the job it's named for as well as it should.

I have quite a few Chicago Cutlery knives and always wanted the fillet knife. I finally got it and I love it. Does job my other knives can't do. I purchased these knives (and companion forks) during several visits to dehillerin in Paris in 2003 2004. Originally found them by chance during my annual visits to this culinary supply store on Rue de Toqueville near the Bourse in Paris. And we are still using them! They are very sturdy and the serrated edge blade retains its original sharpness. Following recommended directions, we do not put these in the dishwasher and wash them by hand. Diswashing sometimes causes stains on stainless steel flatware and I would guess that the diswashing detergent is not as kind as normal Dawn with regard to the knife blade cutting edge. We store the knives in an ordinary kitchen drawer wooden organizer by IKEA and have seen little scratching in use. Recommended! The set is available elsewhere with a wooden block at slight additional cost.

We had fun with the Walk 'N Cut, using it occasionally for about 10 months. When it didn't work one day, I charged it only to find that it still didn't work. Opening it up revealed that the batteries had leaked badly. I called Hamilton Beach and they said it was a discontinued item and could do nothing for me. It's disappointing to have to throw it away after such a short time with no recourse for a warranty replacement.
It opens any size can from a one serving juice can to a 16 oz. can of ravioli, and it has a removable cutting lever which easily lifts off for cleaning (no more dried tomato sauce stuck to your opener!).
The Walk 'n Cut is cordless and rechargeable. Put it on your counter, as it is an attractive implement, or tuck it away in a drawer.

Rada makes an inexpensive, good knife for everyday use. I like them because they can go in the dishwasher, feel good in my hand, and last a long time. I have had these knives over a year, and they are still my favorite everyday knives. How many times have you pulled your expensive Cutco or Henkels knives out of your drawer where and worried about using them, washing them, or damaging them until they are back in the drawer? Never the case with these knives. I use this knife professionally in a very busy NYC kitchen doing butchery of small and medium animals. The handle size is easy to grip, making for much less hand fatigue when you hold the thing for hours a day. The blade flex is perfect for skinning pork bellies, hams and shoulders. It takes a razor edge and holds it well. My last boning knife (a Henckels) wore out very fast, wouldn't hold an edge and had rather a blocky handle. No more of that! I own several Messermeister knives and they're probably the only brand I'll buy. If you're a professional I highly recommend this knife, especially for the Amazon price!

The wood is beautiful--nice enough to hang up in my dining room like a piece of art. The leather cord, which is attached through a metal grommet, makes displaying it easy. It's exactly the right size for the baguettes I buy and the guides make for perfectly-sized pieces of bread. Most of all, I like that all the crumbs from cutting remain on the tray so it's great for serving neatly at the table. I used to have to find a cutting board big enough to cut a baguette and then put the pieces in a basket, but this is easy and the pieces remain fresher since they butt up against each other until served.
