Chef's Choice 130 Professional Knife-Sharpening Station, PlatinumI am an Executive Chef and have worked in a kitchen for over 25 years. I purchased this sharpener about a month ago and so far I am very satisfied. If you read the manual, it is very easy to use. I was at first worried about taking too much metal off of my kinves. As long as you don't over use the first stage that should not be a problem.

It put a good edge on my knives quickly and easily. I have a 10 inch wusthof that is my main kitchen knife. I put an edge on it with stage 1 over a month ago and it has remanined very sharp since. All you have to do is run it through stage 2 ( which is just like a steel) every once and a while and it maintains it's sharpness.

So far I am very satisfied.

As a user of Chef's Choice model 110 and 120 for over ten years I had greatly anticipated the release of this new model.Unfortunately some poor design choices prevent me from fully recomending this product.The older M120 provided 3 stages and created a triple bevel edge.The new M130 can create at best two bevels and only one if you use the sharpening steel.The first stage creates a single edge that can then be steeled with the second stage.If the third polishing stage is used the steeled edge is ground away.That being said the number of bevels is secondary to sharpness of the blade.In comparing the sharpness of the two machines they are very similar with the new 130 seeming slightly sharper.The major issue with the machine is the need to have it out on the counter at all times.The whole point of a sharping steel is to hone your knives each time you use them in order to maintain an edge.This means you need to lug out the box every time you cook, or to have it out on the counter taking up space.If you are model 120 owner looking to the M130 as an upgrade you are much better off buying the Chef's Choice 470 SteelPro.That way you only need to have the larger machine out for major sharpening and can quickly grab the small steel for honing.You'll also notice the M470 has two steeling rods versus the M130's one rod.

I would like to add one note of warning to anyone new to the Chef's Choice line.If you have a collection of knives with heavy bolster heels, know that Chef's Choice models have problems with sharpening all the way to the base due to the heel not fitting into the sharpener.Most Japenese(Shun,Global,MAC, etc) knives aren't effected since the blade extends the full lenght of the knife.Many European(Wusthof,Henckels,Sabatier) knives have the heavy metal heel, and will over years of sharpening develop a gap as the metal from the blade is ground down and the bolster remains.meaning the base of the knife will no longer be flush with your cutting board from the heel extending below it.

When I bought my Henckels (not the el cheapo Henckels International, mind you) knives I was looking for a sharpening steel but ended up with the pull-through gadget they call a "sharpener". Someone's already pointed out the difference, that the device is a "honer" that merely sets the blade straight. It returns usability but doesn't actually SHARPEN, i.e, shave off metal and recreate the edge. After reality set in that I could keep running my knives in this honer until I was blue in the face and never increase the sharpness but merely prolong it, I decided to look for a way to really sharpen a knife.

Local and mail-order services didn't appeal to me because I didn't want the knives out of my hands or tested on stuff I wouldn't cut in my kitchen. So I went looking for sharpeners I could use in the home.

As I read opinions, the whetstone seems to be the best possible way. The electrical sharpeners are about the only alternative that actually re-create an edge, so I thought if the best of them doesn't satisfy me I'll have to go with a whetstone. And I bought this machine.

As one reviewer pointed out on a slightly different model, READ THE INSTRUCTIONS. If you think you'll simply get an edge by running the blades through the six grooves in order, you will be sorely disappointed.

The first and second pairs of grooves are for different knives and the third works with the first, maybe the second too. And that's not all.

You have to run the knife, test for a good burr on the new edge, and polish the edge straight to get your razor sharpness.

Don't forget to wash the knives, before and after the sharpening. You don't want food or moisture in the sharpener, or microscopic metal in your cut food.

Big question: is it razor sharp? Yes, but under some conditions. I tried this with five knives: Four Henckels five-star blades, and one some-other brand blade. On one Henckels santoku, I made do with a minimum burr and got a sharp blade, but it wasn't razor sharp. This will be done over. The other brand blade got a nice burr and everything, but never got razor sharp, though it was sharper than it had ever been. The three other Henckels knives, they are as close to razor sharp as anything.

What do I consider razor sharp? I ran an edge across a small part of my arm and it took off all the hair. THIS IS NOT SAFE I have shaved with a straight razor so I didn't cut myself. DON'T DO THIS, read on: I used the same blade to cut a slice off a vine ripened ripe tomato without using a chopping board, and established this test: The slice comes off with no skin left on the end of the slice where the knife finishes the cut. That is razor sharp. Vine-ripened, ripe tomatoes tend to have a skin that is almost like plastic wrap thin and very resilient to the sharpest blade.

None of my newly bought knives were able to pass the hand-held ripe tomato or hair-on-arm test when they were new. So the sharpness is better than the factory blade.

The second groove can put a microscopic serration on the edge for better cutting in some situations. Or sharpen a serrated edge. I haven't tried this yet, will update the review when I do. But I'm very happy with this product.

Criticism that won't take away a star: Reading the manual in this age of short-attention can be painful because the text is small and the lines too long. Paragraph breaks are scant. More pictures, narrower columns and some white space couldn't hurt, especially here where reading the manual is a requirement (not just an overload of warnings or obvious, unnecessary direction)

All this seems long and tedious the way I describe it, but once you've read the manual, you will have your knives sharp in minutes. So sharp you may be tempted to try to work on the factory edge of a newly bought knife. Just remember, it's important to start with a reasonably good quality knife whose metal can stand up to a fine edge.

I just finished sharpening the knives in my knife drawer with the M130. Some of the older knives took a while to get a burr in step one but once the burr showed up even my older dull knives were sharp again. My every day knives sharpened in less than a minute. My best knives sharpened in a few seconds.

The middle position is not motorized. It is a quality sharpening steel like you use by hand but this position keeps the knife near the optimal angle so the steel works optimally. You don't turn the motor on to use the middle position so you can walk over to the sharpener and put a quick hone on your knives without using any electricity. This is the big difference between this model and the Chef's Choice M120. For the extra $10, I prefer the sharpening steel over having a second grinding wheel. The third position is a "polishing" wheel which is similar in effect to the old barber shop razor strap which smoothed and polishing the knife edge.

I like the 20 degree grind used by the Position 1 wheel and see no need for an additional wheel used to change the grind angle in the Trizor system used in the M120.

I have a wide range of quality in my knives and this system seems to work well on all of them. I don't have serrated edge knifes since a well steeled knife works as well for me. I won't spend hours using an oil stone to sharpen knives any more. Also at 55 years old I don't see as well as I once did and can't hold a consistent angle using the stone. This system gives you a consistent sharpening angle.

I sharpened 10 knives in less than 15 minutes with some them being quite dull. I thought about giving the M130 4 stars based on cost but it saved me so much time, the cost was worth it.

UPDATE: I've been using the M130 for two years now. I use it daily (sharpening steel plus polishing wheel) on my best kitchen knives (Calphalon Katana Series) and they remain super sharp under constant use for about a month before I do a touch up with a single pass under the grinding wheel. I don't hand sharpen any of my knives now.

For an electric sharpener, this one is nice. I've used it on five knives now, and all of them are sharp enough to slice a tomato without any pressure from me (just run the knife across the surface under its own weight). So I'm happy. I know that on reviews of the previous models some people complained that the sharpener didn't get their knives razor sharp. This one doesn't either. But it gets them plenty sharp enough for cooking! And much sharper than the knife vendor here in town does...

The only serious negative is that I'm not very impressed with the manual. While it does give instructions on how to sharpen your knives, I didn't think it did a good job of explaining the different types of edges this sharpener can create.

The intricate pattern is one that requires some skill in finishing, and when I make a purchase of this size and expense that will live on my table forever, it needs to be one that I would rate five stars. The order also needs to be filled competently by the retailer with no quality control assistance from me.

This product was purchased on the 4-for-3 promotion offer, and it arrived contemporaneously with other defective items purchased from Amazon. I called Amazon to discuss my concern about the quality of merchandise I had been receiving, and was advised that items sold on the 4-for-3 promotions are not seconds, nor are any other items sold on Amazon.

Ricci has the reputation of producing high quality stainless steel flatware, and many of their designs are beautiful. I don't know whether this flatware was the same quality I would have received if I had gone to a brick and mortar store to purchase it, but what I received from Amazon just doesn't meet my high standards. If you're not as picky as I am, this is lovely flatware at a good price; just be sure to inspect it thoroughly upon receipt!

I had been looking for 18/10 flatware for some time. Many brands which were once thought of as excellent brands were problematic in that the flatware would get brown spots or rust if put in the dishwasher. I wanted to find flatware that was beautiful but not plagued by this problem. I have found it in the Ricci Meridiani flatware. I have owned it for 2 or 3 months now, put it in the dishwasher daily and I have not had any problems with rusting or spotting, even on the knife blades which are often the most problematic because they are not 18/10 on any flatware. (This is because they have to have a different composition to make them strong enough for cutting.) The added bonus is that this flatware is beautiful in design and execution. Contrary to what another reviewer said, I find that this flatware is indeed heavyweight as compared to other flatware brands, but not so heavy that it is uncomfortable to use. I find the weight and balance to be perfect in every way. I own 16 place settings and although I examined it thoroughly on receipt due to another reviewer's report of flaws, I have not found any. This pattern is very beautiful, highly polished and would be a welcome addition to any dining table, formal or informal. We use it every day. The design is executed on both sides, giving it an extra nice touch. Don't be fooled by pictures, this flatware is much more beautiful in person. I feel that you can't go wrong with the Ricci flatware, no matter what pattern you choose.

Waring KS80 Knife Sharpener, Black and Brushed StainlessAfter my wife complained that our kitchen knives were getting too dull to use, I set out to find a good knife sharpener for household use. I researched a bit and found several options both manual and electric. One name that kept popping up was "Chef's Choice" and I noticed very few negative comments on their models. Having both a discount coupon and gift certificate from Bed, Bath & Beyond I decide to make my decision there. Unfortunately, there wasn't any sales staff knowledgeable about knife sharpeners and I had to go it alone. It was there that I first noticed the Waring KS80 Professional Sharpener. With it's black and stainless finish it was definitely more attractive than the plain white Chef's Choice but, it was somewhat more expensive retailing at $100. I settled for the Chef's Choice 110, took it home and was promptly disappointed. On the expensive chef's knife I first tried it on, it left a decidedly sharp but ragged edge on the blade. It looked as though I had tried to sharpen the knife on the sidewalk! I didn't dare try sharpening any other knives and risk leaving such an ugly edge on them. Bed, Bath & Beyond gladly made an exchange for the Waring and I was much more pleased with it's final results a sharp blade with a more visually-pleasing edge. It even cleaned up the rough edge left by the Chef's Choice. The only disadvantage I have found is that, with most knives, the inch or so of blade nearest the handle cannot be sharpened since the hilt of the knife keeps it from being placed into the sharpener's slots. This, however, is not a major drawback since this area of the blade is not frequently encountered in most uses. The Chef's Choice will cover the entire blade length but with a very rough finish. I recommend the Waring over the Chef's Choice without reservation but the Waring is probably a bit too expensive for an appliance that will likely see only a very few uses a year.

This product works much better than I expected. It gives a very clean and fine edge to all of the knives I have used with it. I will never use another brand. Buy it you won't be sorry.

I have a manual sharpener, but in reality almost never use it. The electric sharpener makes keeping my knives sharp a no-brainer. There's a coarse grinder for knives that are dull. For most knives the fineand polishing-grinder works just great. If you have inexpensive knives, the coarse grinder will chew them up, but if you have well-made knives the Waring will work well. I've had good success with the Waring.

I received my knife sharpener very quickly and when I opened the box, I was very impressed; this was no rinky-dinky machine. I read over the instructions which were very simple, then using just a few at a time, over the course of 3 or 4 days, I got all my knives sharpened to a beautiful edge even some that looked hopeless. For years I've tried to learn how to sharpen knives the "old-fashioned" way. Pooh. A couple of minutes and my knife is sharpened to look better than it did when it was new. When they were all sharpened, then the machine went into the cabinet til needed again, whenever that might be. It does heat up and has to rest occasionally, but the instructions warned me of this. I love this product!

Sharpens medium to long knives. Short knives only part of the blade. The first two stations are very powerful and will remove a lot of metal and should only be used if the knife has nicks and no edge at all. The honing stage is best for most of my knives. I suggest using an old knife which you don;t care about first. to test all three operations.

All the J.A.Henckels knives are great, but shop around and buy by the set if you can its much cheaper. Amazon is about the best price but compare sets, it can be confusing as to what your getting for the money. I bought mine at a Kohl's store and the set wasn't complete so I had to add these individually. For example the 6 or 8 pieces set has a couple of additional slots in the block for knives not included, hence I had to buy these on line at additonal cost. Just be careful. Oh and these knives are heavy, don't drop or your toes may be in the way. LOL. We weren't used to quality and dropped a couple times, no harm but lucky toes and dogs were out of the way.

Wusthof Classic 4-Piece Mignon Steak SetThe knives are made very well and look very nice but be carefull washing them. The wustof sysbol on the handels are just a sitcker and after being wased by hand about 18 times the label is peeling off from some of them. Why would the label on a $250 set of knives be made out of vinyl or some type of plastic? Still an excellent quality knife but what a cheap touch.

I have nothing but good things to say about these steak knives, which I bought from Amazon more than six years ago. They work perfectly for their intended purpose, and I sharpen them when it's necessary... but they don't lose their edge as fast as other knives I've used. I put them in the dishwasher every time, with no problems with handles or blades. When they're not in use, I keep them in the knife drawer -so they get used for a lot more than just meat. You can't go wrong with these knives, and they look beautiful, too.

Maybe it's just my sets, but they don't cut very well. I just love this product! Very much worth the price while on sale. A bit steep for me otherwise. I will be able to keep these for a very long time. Not too heavy since i am relatively short and taking very heavy dishes out of the cupboards can be a bit cumbersome. They are heavy enough to last and not so heavy i will need to get a chair to take them down!

Keep in mind wood and bamboo boards must be cared for. Get some mineral oil and wipe your wood boards down periodically to prevent them from drying out and cracking. If you aren't into maintaining quality products you probably don't need a good knife or board so just go to Taco Bell and save yourself some time ;)

I've had this cutting board 2 weeks now, and I'm thoroughly enjoying my first wood cutting board.

I had been happily slicing and dicing away on plastic cutting boards until I did a little research--shock, gasp, hand to the forehead--I discovered that wily harmful bacteria can get trapped in the small nicks on plastic boards.

This board is really beautiful to behold. Plus, it is large enough for me to cut up multiple veggies at once (Eureka! I can avoid overcooking the first veggies I chop since I always underestimate how long it takes me to cut up the next round). The lip around the edge seems like it will likely be handy at some point, but it hasn't mattered to me one way or another thus far. I do keep the board out on the kitchen counter since it is just so beautiful to look at it (and it seems too cumbersome and over-sized to store elsewhere).

I also bought the Howard Products Butcher Block Conditioner to use with the board. Despite my impatient excitement to use the board, I applied the conditioner and let it sit overnight when it first arrived. I also conditioned it after the first few uses.

I have noticed that it wobbles just the slightest bit on the counter, but not enough to be noticeable while actually chopping. I only wash it with hot water and soap in the sink and quickly dry it with paper towels after. It is definitely a labor of love keeping it in shape, but it's so worth it!

Summary: Simple bamboo cutting board. Large. Beautiful. Durable. Treat her right and she'll treat you right. Happy chopping!

I would recommend this one to anyone looking for quality. I like the groove around the perimeter for drainage. The size is perfect. I have a big one and what a hassle as it is always on the bottom this is perfect to leave out for my day to day chopping and nice looking. After rubbing oil on it (is required for all wood cutting boards) the wood is beautiful.

Kuhn Rikon Original Nakiri 5-Inch Knife Colori, RedI love this knife. It's sharp, neatly slicing through the vegetables. It is also super cute and easy to hold. The one thing that may come up is if you are slicing anything longer than the length of the blade (like today, a giant portobello), you may have to do two cuts then.

Just recently got this knife, and I've only got to use it once but i used it to slice potatoes onions and i also used it to cut up the meats. Very sharp and easy to hold and handl. I love it so far cant wait to use it again

great for chopping veggiesreally sharp and works perfect. im not a super skilled chef, but it chops quickly so i look more legit :)

ps they are magnetic so they work really well on my magnetic strip knife rack. seems silly to say, but i wasn't sure if they were Kuhn Rikon ceramic or not.. they aren't :)

This knife arrived in a nice carrying box with protective foam and padding all around for safe shipping. Shipped fast as always from Yoshihiro. The blade is rustic styled, and the kuro uchi finish is great. Came properly sharpened. The bolster is top notch and the handle is beautiful and finished. Fits great in my large hands and can knock through almost any task I lay on it. The maintenance required for this type of knife just adds to the appreciation of amazing craftsmanship most people overlook today when buying cutlery. As with all my Yoshihiro collection, this one impresses all and myself daily.

I've worked as a chef for 17 years and i tell ya, this is a great knife for the price.

Love my new knife. The shipping was fast and it came when they told me it would.

IT also came with a very easy to read instructions on how to use and,clean and maintain it, really helpful.

The only bad thing is that the handle was for a righty when it says it a chef knife. Chef knives are usually 50-50. it didn't say anything about that part. Im a lefty, but actually it doesn't bother me at all.

Ill prob get some more knives from these guys.

Mac Knife Superior Santoku Knife, Set of 2For many years I did my chopping with a high-quality Henckels Twin chef's knife. I had received an Anolon Advanced 5-Inch Santoku as a gift, which was so bad that I dismissed the value of Santoku knives for a long time. Boy, I didn't know what I was missing! Santokus are incredible, as long as you buy the right one.

The MAC Santoku has an incredibly sharp and narrow blade. It requires so much less effort to cut up vegetables than a chef's knife. It also makes it much easier to hold an onion together while chopping, as you don't have a thick blade pushing the pieces apart. The MAC also holds its edge very well, and only requires occasional sharpening.

This isn't appropriate as an only knife. The thin blade means that it's really not useful for anything where the blade might get bent or hit something hard. It's not for jointing or boning poultry, cutting super-hard cheeses, getting chunks off of thick blocks of chocolate, etc. However, for chopping and slicing vegetables, this works so much better than a chef's knife to be well worth the money.

America's Test Kitchen rated this #1. I bought it even though I have the Shun knife which cost more than double what this knife does. Well, the Mac knife is amazing--it is hands down my favorite knife and I have many. Buy the Mac ceramic sharpening steel as well. This knife should not be sharpened with an electric knife sharpener.

Also, the blade is very thin so don't use it to try to cut off a wedge of Reggiano cheese---you can break the blade.

I bought this knife after doing lots of research because I wanted one good knife that would do the job and would be built to last. After a recent trip home to my parents house, I realized I made the right choice. They have terrible knives. I will be buying them one of these for Christmas this year.

This knife is fabulous. It cuts well without needing any of my strenth to force it to do so, which I believe to be the true test of a good knife. You shouldn't have to force it to cut. It works well on everything! I can't imagine owning anything else.

About 45 years ago, I purchased this knife in a neighborhood cooking shop. I asked the salesman about sharpening and he showed me that I could pass its blade gently on the rough ceramic base of a coffee mug. I have used and abused this knife for years and it has never failed. A few weeks ago, it was misplaced by houseguests who were cooking in my kitchen. After frantic searches, I ordered another Mac knife, the mac MTH 80 8" version. By the time it arrived, I had found the smaller one. Now I have two great knives that will certainly outlast me. I think I'll put them in my will for future generations.

I first tried a Mac side by side with a Global and a Forschner. A professional chef laid a piece of red bell pepper down and filleted the meat off the skin. I tried the same with all three knives. I like these knives. They are large, hefty and have a sharp, serrated blade.

However, the set of four knives that I received consisted of two knives with dark wood handles and two knives with much lighter-colored wood handles. They don't match! This may well be a problem only with the one set I received, I don't know. But it would probably upset most buyers.

These knives were a gift for my brother who is blind. While the knife quality is fine, they are different than what I saw in the picture. The handles are WAY bigger than the picture would lead you to believe. Not a big deal for most, but my brother was wanting a thinner handle (not the type you get at the Outback Steakhouse) and for someone who is blind he could feel the difference immediately. OK knives, just not what is pictured.
