Swiss Rex Vegetable PeelerI purchased a peeler similar to this one about 15 years ago, it finally bit the dust last month. I couldn't find a replacement in any of the retailers so I settled for the typical peeler every kitchen place sells. I paid more money for a piece of garbage that was dull and made peeling potatoes and carrots impossible. I finally found the Swiss Rex veggie peeler on line (which is the same one I originally had), purchased it for way less that the one I bought which was useless. I got it within one week and it works just as well as the one I originally had. Why people settle for the typical store bought ones, I don't know...

Bought two of these peelers about 20 years ago at a home show. Our church was just getting into free community feeds on Christmas Day, and I was doing the butternut squash about 40# at the time. Business has picked up over the years last year we did 250# of squash. Currently we purchased the squash peeled, but the quality varies all over the lot from OK to rotten. Squash is very perishable once peeled. If you've gotta have a good squash, peel it yourself.

Anyway, back to the peelers. Put #1 in the kitchen drawer, put #2 on a nail in the floor joists in the basement over my workbench. Peeler #1 has been used to do Christmas Squash (hundreds of pounds), plus the normal potatos, carrots, etc. for 20 years! Peeler #2 is still hanging from the nail.

Recommendation? Buy two see how long it takes for you to use your second one! Yeah, there's no ergonomic 'cushy' grip and how to hold it is kinda an individual thing but it peels like a champ.

This peeler slices thru potato skin like butter! It's 10x better than any old "regular" peeler. I will use these until the day I can no longer cook! :D

I have had one of these peelers for more than 10 years now. My brother brought it back from Switzerland for me. They peel virtually everything. I regularly use it for carrots, apples, and potatoes. It also works well for tougher skinned vegetables like butternut squash. Most peelers can't handle a butternut squash, but the carbon steel blade of these works very well, and they are constructed to be sturdy enough to handle the job. I bought new ones so that I had a backup for my old one and I wanted one for my neighbor because she didn't have anything that would peel a butternut squash.

The only negative of this peeler is that you should only hand wash it and dry the blade off soon after washing. Leaving the blade wet will cause it to rust, which can be cleaned off with a scouring pad if necessary. With the proper care this peeler will last many years.

I wanted something I could place on my fridge and use as a shopping list/memo pad. After reading a few bad reviews of some other similar products on Amazon, I was hesitant to go this route but decided to give it a try. It was worth it!

The magnet is very powerful and sticks to the fridge with no slipping or movement. The white marker that is included with the purchase works great. It doesn't drip or run when writing and easily wipes off with just a damp cloth or paper towel. As I've read from some other product reviews, it doesn't leave any ghosting behind and cleans completely off with no hard scrubbing or chemicals.

I highly recommend both the chalkboard and the marker and will be looking into getting additional marker colors from this same brand.

Sticks to the fridge and doesn't fall off. Fine to write on, but takes some effort to erase. I have to take it off the fridge and wash it in the kitchen sink. If I use a wet wipe, prominent white streaks are left on the board, which looks messy and makes it difficult to see anything else I write on top of it. Also, please note that this surface does not adhere to regular chalk! Only the chalk markers will show up. For the price, I'm willing to make these adjustments. Plus, it's been very useful in our house for keeping up with the chores.

Miyabi Morimoto Edition 10-Inch Chef

Miyabi Morimoto Edition 10-Inch ChefI use it all the time. Chopping, and dicing vegetables mostly but it's an overall chef's knife. Good quality. I wouldn't take it to a restaurant as a professional tool for fear of someone walking away with it if you left it unattended. The workmanship is pretty to look at. Keep it sharp and don't ever put it in the dishwasher. Manual cleaning only, and drying off.

I like this knife and i got it in couple days from the date i purchased.

Shun Premier Santoku Knife, 7-Inch

Shun Premier Santoku Knife, 7-InchLike almost everyone who buys this kind of implement, I have many examples of quality cutlery including Wusthof, Henckels, Shun, and Kyocera as well as assorted Chinese and German examples. As this was a birthday present for myself, I wanted something really special. I was first attracted to the Ken Onion Santoku and then to the Shun Premier 8 inch chef's knife. The Ken Onion design is obviously beautiful, but I found its balance awkward and its handle surprisingly small and uncomfortable. It came down to the Premier Chef's Knife and the Premier Santoku. It was a very close call, but I found the santoku to have a slightly better balance. The hammered finish on top of the blade is not just attractive, it effectively releases thin slices from the side of the blade as you work. The handle is also very distinctive and beautiful, slightly bulkier and more contoured than the Classic Shun and providing excellent comfort and control.

In my judgment, the Premier Shun santoku is just about a perfect chef's knife. Is beautifully made for practical use. As a bonus it is simply beautiful to look at. I have plans already to buy a slicing knife in the Premier line.

The Shun Premier Santoku Knife is a great knife. It is well built and very high in quality. I bought it to thinly slice items like onions--and it works well. I can make near paper thin slices that fall right off the knife. It is exceptionally sharp, which for me is great. My wife, however, nearly cut the end of her finger off because she didn't give this knife the proper respect. So, like all great knives, you need to be careful.

First off, let me start by giving a little background on myself. I am a chef by hobby and a tech guy by trade. I did extensive research into German or Japanese knives and I am very glad I went Japanese! This knife is AMAZING! It is extremely sharp, right out of the package. For the 4th of July I made my first gumbo which took A LOT of slicing and chopping. This knife glided through everything I threw at it. I am in love. This knife will be an heirloom I will pass on to my children.

I also highly suggest getting the Shun honing stone because it has a guide that helps with honing it. The Shun knives are angled at a 16 degree edge where most other knives are at a 22.

BOTTOM LINE

This knife is made with the similar technique as traditional samurai swords. After months of moderate use on the toughest items, my Shun Premier Santoku hasn't dulled, chipped, scratched, or otherwise marred its initial perfect finish. I know what I want daily in the kitchen and by my side in the Zombie apocalypse. However, consider looking for a better price elsewhere.

SHARPNESS AND STRENGTH

I use my Shun Santoku to debone poultry, and it cuts through skin, muscle, and ligaments with ease. I also use it on harder to cut things, such as pineapple, which I would normally use a serrated knife for. Cutting through the outside of a pineapple is like cutting through wood, and this does it with only gentle application of force no sawing required. After months of use on only the touch stuff (I use different knives for pairing, etc), this knife still hasn't dulled noticeably.

BEAUTY

This knife is a thing of beauty it has a beautiful wooden finish on the handle, and the knife has this pretty blotted ink look, referred to in the description as Damascus. I love to show off my $160 knife to all of my friends.

PRICE

Surprisingly, the price on Amazon is not the best price I've seen for the blade. You may want to check your local high-end home-goods or kitchen-goods store like Crate and Barrel. I received mine as a gift, so I don't know where my sister bought it, but I've seen it for as low as $160 or possibly even $150. Still, I would consider ordering from Amazon, simply because shipping to my door is so convenient.

SHARPENING

Shun allows you to sharpen their knives easily by sending it into a discounted, professional service center for professional sharpening and restoration. The price is cheap (25% off of $3 per inch of sharpening). Just google "Shun Sharpening."

I won't risk sharpening my knife at home because I don't know how to properly use a whetstone. I have a Zwilling J.A. Henckels Twin Sharp Duo Knife Sharpener for use on my cheaper knives, but the instructions on the Shun recommend you don't use that kind of sharpener, since this knife is sharpened to a different degree than European knives.

ZOMBIE APOCALYPSE

I'm so impressed with my knife's ability to cut through poultry, ligaments and all, that I'm already planning on how to adapt my knife for the zombie apocalypse. Considering this thing is made like a samurai sword, I'm confident I'll be more well-equipped than my regular knife wielding buddies when we're out of bullets and the zombies are inevitably bearing down upon us.

I purchased this knife in the summer of 2011. Loved it right out of the box with it's wonderful aesthetics and decent edge. I have always used Japanese gyutos and decided to purchase this knife on the Lightning Sale. After about 3 months of use, which included three touch-ups on #4,000 & #8,000 Glass Shaptons, I decided to retire it from work. It would not keep an edge for very long. Also, if are planning on moving from an 8-Inch Chef knife to this, I would advise you not to in a professional kitchen. Eventually, with day-in and day-out use, the natural comfort level with larger knives will happen. Since then, I have been using it only at home with moderate use and it has been great with it's short length, comfortable height and light weight. With all that being said, I would definitely recommend this knife or any Shun to the average home cook, as these knives will keep an edge for a good while in that setting. In a professional kitchen, there is a ton of real Japanese cutlery out there to choose from, Shun not being one of them.

These will certainly work well enough, but they are a lot thinner than my old ones. I will not put these in the dishwasher because I am afraid they will warp. They tend to move around on top of my counter when I use them because they are just too light. I am going to keep them, because I already tossed my old ones in the recycle bin. Next time I will pay more attention to the thickness and most likely I won't purchase these again. If you want something that is not too expensive, and will get the job done, these are fine. If you are looking for something better or thicker, you might want to keep shopping.

I own a Gerber Chef's knife. It is no longer made. The Gerber food knives had the hardest steel and were a devil to sharpen. Because it was so hard, I could not get this knife sharp so it just sat in the knife safe. In less than five minutes, this sharpener made my old Gerber sharp enough to shave my arm. I am somewhat of a craftsman and have been addressing knife sharpening with stones (manually) for many years. This was an arduous task as honing is an art that requires time, patience, and most importantly, precision to maintain a 20 degree angle. To be frank, I elected to give up knife sharpening by hand. I did my homework and read many product reviews before purchasing the Chef's Choice model 1520. It was expensive but, no more so than buying multiple stones of varying grit plus my time.

Upon sharpener arrival, I immediately went to work on our knife sets. Was I impressed with this tool yes!! It was fast. The sharpener took only 20 minutes to do my entire drawer. It was precise as it held both the 20 degree (German knives) and 15 degree (Soduku knives) angles by virtue of the tool's design. The finishing hone provided the edge which the diamond faced stone had prepared. I warned my wife that the paring knife was sharper than new but, she cut herself anyway.

I also had a Gerber 7" knife which was 10+ years old. Gerber is out of business now but, they were renowned for manufacturing knives which had the ability to retain an edge. That is, their knives were made from very, very hard steel. However, all knife edges succumb to time/use and my knife died years ago. I could not sharpen the Gerber knife with my stones so it mostly sat in the drawer. The Chef's Choice made short work of the Gerber's dull edge by returning it back to the sharpeness I remembered and wanted.

I then did my neighbors knives and, on the following weekend, my daughter's household knives. Very fast, very sharp. I justified the sharpener as an heirloom for the daughter. In the meantime, I will keep the neighborhhod sharp.

I have Henckel knives in both the American/European and Japanese knife angle and after reading Cook's Illustrated review of knife sharpeners, I decided on this recommended model. I have always sharpened my knives manually on a stone and never believed that an electric sharpener could get my knives as sharp as I required them to be. Boy was I wrong. After reading reviews about electric sharpeners I decided on the Chefs Choice 1520. The vender that I purchased it from was very prompt in shipping this to me and it arrived in excellent condition. This sharpener exceded my expectations. It is very quiet, and with just a few passes, the edge on all of my cutlery, even the longest filet blades, was razor sharp. Global G-668/16 - Knife Roll with Handle and 16 PocketsFor it to be a Global product I was kind of disappointed. The fabric/material the roll was made of was great. The design works in theory. However, where it fails is its knife pockets. The pockets are way too small and close together. Keeping the knives bunched up. Overall its fine, but not worth the high cost.

This is a very good bag. Very sturdy and resistant. It has 16 pockets varying in size. The only problem is it is far from being a bag that you can quickly reach into and grab a knife. It folds out into a 2'x 2' square. You then unzip the protective cover and fold that over. This leaves you with the need to have an area of 2'x 4' unless you allow the flap to hang over the edge of the table. All of this just to grab one knife. If you are working in a tight kitchen you should make sure to take out all the knives you will need at once.

I love this case. It's sturdy with plenty of room and slots for pens, business cards, bothers along with a mesh pocket for peelers, small offsets, spoons and anything else under 7 inches. The only reason why this case doesn't get a five is that the mesh pocket doesn't have a velcro closure like my Wustof case did. Excellent case and in my opinion much better than the Wustofs.

Zyliss Smoothglide Peeler

Zyliss Smoothglide Peeler, GreenThe ergonomic handle of the Zyliss Smoothglide peeler, may be a little large for some with smaller hands, but if your hands are big enough, you should have pretty good control of the cutting blade, which has a normal straight cutting edge. Zyliss's Soft Skin Peeler, is a very similar product, except that it is red, and has a blade with a serrated edge. The serrated blade is much sharper, and has a fantastic bite! If you don't mind some curved edges, the Soft Skin Peeler is more reliable, and does a better job. It is simply wicked at shredding.

If you prefer straightedge cuts, this peeler is pretty good, although the blade could stand a little sharpening. The handle has a rubber grip strip that helps with traction, particularly when the handle or your hands are wet. There is also a cutting tip for digging out potato eyes, seeds, or other imperfections. Both the Smoothglide, and the Soft Skin Peeler, are eligible for Amazon's 4 for 3 program.

I treated myself to this vegetable peeler after having used the old, metal kind for years. I've purchased other Zyliss kitchen tools in the past and they do make excellent quality items. Check out their ice cream scoop.

I first used this over the holidays when peeling potatoes for a large group dinner. It was very sharp, had good balance, and was comfortable in my hand. It seemed to take a slightly thicker slice than my old peeler, but was not excessive, and, in my mind, the job being much faster and requiring less effort was a fair trade off. It has the metal "eye" removing tip which is very sharp and works slick. There is also a plastic blade protector on it when new that doesn't stay on well. I'm not sure if it's meant to but it would be nice as it would be easy to slice your finger while searching through the drawer without it being in place.

I highly recommend this vegetable peeler, and Zyliss kitchen tools, if you're looking for an upgrade to your existing ones.

The narrower grip is not an asset in this tool. Suppose you're making punch. As you hold a lemon to peel it (to mix the peels with sugar, yum), your steadying thumb will lie farther forward on the fruit, directly in the path of the blade, which is exactly how I cut myself.

With the Oxo Goodgrip peeler, the wider handle leaves your thumb a little further back, not completely out of danger, but a whole lot less likely to be cut. I've never had a cut from the Oxo; the Zyliss got me but good on its first day.

The Y-peeler from Zyliss does not have this problem. Again, your thumb winds up closer to the end of the blade where you're more likely to be able to get it out of the way if your stroke slips.

... I stumbled across this one at Sur la Table. It fits my hands perfectly and allows for a very comfortable grip due to the curved handle. I like that the peeler is stabilized at both ends due to the handle extension and additionally has the sharp top edge for removing bad parts of the vegetable. The sharp peeling edge also has more support behind it, thereby making short work of a tricky potato eye.

For many years, I used an old fashioned simple and cheap all-metal peeler. It wasn't the most comfortable to grip for long periods of time, but it was by far the best functioning peeler. Unfortunately since it was rusting, it needed to finally be replaced.

After trying three other peelers including ones by Cuisenart and KitchenAid, I found not all peelers are created equal. With many, I was struggling just to peel on tougher skins like sweet potato, mostly because only one side of the peeler was reinforced with the handle. The Zyliss is reinforced on both ends and removes every peel I've attempted smoothly and cleanly. We still have our KitchenAid peeler, but Zyliss is my go-to. It is extremely sturdy, comfortable to use and the best functioning peeler I've used to date.

To keep the blades sharp, I always hand wash!

UPDATE: 12/8/11 --> This peeler is still working wonders and has not dulled a bit. :-)

Norpro Tin Mini Muffin Pan

Norpro 12 Cup Tin Mini Muffin PanThis product feels kind of cheap and lightweight, but it was the perfect size for making mini-quiches so I gave it a try.

I washed it and left it to dry on the dishrack. I came back later to find it was rusting! I thought that tin was not supposed to rust...

I scrubbed off the rust and used the pan successfully, but even after washing and hand-drying it continued to rust quite badly. I tossed it out and bought a heavy-duty nonstick Chicago Metallic version. Amazon sells it here: Chicago Metallic Professional Nonstick 24-Cup Mini-Muffin Pan. No fuss, no rust!

This muffin tin rusted out the first time I washed it. I wasn't aware that tin rusts, but it did completely.

its a muffin tin and the same as any other i have, except smaller. you still need to grease it or line it like any other. cook time is less. its sturdy.

I know it was cheap but I didn't use anything metal on this pan and it has rust spots after only two uses. I should have gotten the other one.

These knives appear at first like Pacific Palisades yuppie display pieces, purchased to never be used, highly crafted but without mind towards function. Nothing could be further from the truth, however; these knives mean business. Built with Japan's modern chefs in mind, they have the balance of a Katana, highest quality steel and a wicked edge. They're suitable in construction and balance for everything from sashimi to butchery.

This heavy knife (Global actually refers to the heavier knives as "forged", probably because their lighter knives have ground hollow handles) can deftly mince shallots or rip apart a chicken in the same breath. The balance is so perfect that it really feels like nothing at all in your hand.

Care and feeding are trickier than a Henckels or a carbon-steel knife; the molybenum/vandium alloy is extremely hard and hard to influence outside of a full grind. I'm using a ceramic finishing stone to hone the edge (which does slip around; a downside of the extremely acute angle of grind), and I expect that I'll have a professional grind it when needed, something I don't do with my Henckels knives.

I'm buying the lighter 8" knife as well, now that I've had my hands on it. I really think that between the two of them there's nothing you can't take down.

I bought this knife almost three months ago, and have been nothing but impressed. I am a professional chef and have used this blade almost non-stop since its arrival. Despite daily use and infrequent passes on a global ceramic steel, it still remains near razor sharp. The feel, the balance, the way the blade will hold an edge, everything about this knife is amazing. It has quickly grown to be my favorite knife, surpassing even my ceramic knife which cost me three times as much and hasn't held up nearly as well. Only complaint I have is because of its heavy weight, delicate cutting such as basil julienne (which I do frequently) are exceptionally difficult without bruising the herbs. Its possible to do the job with the knife, but not really what it was designed for either in my opinion. Every knife has its purpose, this is the best general purpose knife ive ever used.

I've been a professional chef for almost a decade now, and I've tried dozens of high-end and mid-priced knives including Shun, Calphalon, Henckels, Wusthof, Furi, and plenty of others. This is the best. Hands down. I had previously purchased the G-2 chef's knife and really loved it, but it just wasn't quite beefy enough to take down things like sweet potatoes, butternut squash, or cleanly cut through a chicken spine. The extra blade thickness (and weight) at the hilt is a huge advantage for tasks like shredding cabbage for slaw or finely chopping herbs. That being said, the knife is balanced so well it feels like a part of your arm, and is sharper than some of the ceramics out there. the steel is harder than all but the most expensive german lines, but it flexes more than the folded japanese knives. The result? The Global cuts smooth as buttah, stays sharp longer than a Pro-S Henckels, but doesn't chip or crack like a Shun. It's also just a really beautiful and elegantly designed piece of steel. Showroom-quality, as they say. The one real caveat is that you really need a ceramic honer to keep the blade in top form. Standard chrome or diamond steels just don't hold up. I recommend the Wusthof Ceramic Honing Rod. 5 years in, and it hasn't lost a bit of its grit.

Invest in this knife (and a good sharpening stone). It is heavy but with experience, that's a good thing. "Let the knife do the work" and all that. I got used to the weight quite quickly.

I have regularly used German, Swiss, and American steel blades and this Japanese Global puts them all to shame across the board. A bit higher on the price scale than some of it's "competitors" (if you can call them that), but it MORE than makes up for it in performance, durability, ease of use, comfort, and craftsmanship. Hands down the sharpest blade I've ever worked with. I highly recommend that you hone this knife on a soaked wet stone rather than a traditional steel though, as it takes a 10 degree angle on the blade edge, where most every steel is designed for a 40-45 degree edge. Probably the last chef knife I will ever need to buy.

The handle shows no signs of damage from rinsing and drying. It is a nice looking knife, and unlike any other parer with its distinctive red handle. This is a good knife. If you are looking for a paring knife, this is a good one.

Cuts well. Sharpens up very nicely. Blade and handle both gorgeous. Solidly built. The handle just doesn't have a good "fit" in the hand: too short and poorly shaped. In the end I use my older and larger knives that fit well in the hand, even if blades are too big for the job.

The problem I was solving was cutting large loaves of thick-crusted bread, for which the Wusthof 8" serrated-edge bread knife I already had just wasn't quite large enough it's best if the knife edge is at least 1.5 times longer than the loaf is wide. I wanted a knife with a full forged blade with bolster, the traditional pattern, as the stamped-sheet blades aren't quite as good, and I prefer to buy one good knife. Going to 9" was marginal and almost as expensive, so I opted for the full 10" blade. It works very well, and the 8" knife now gets little use.

I am very happy with this knife in use, looks and durability. The blade is slim but sharp and works wonderfully for paring and cutting fruits and vegetables. Emerilware by Wusthof knives are a lighter weight (value priced) line yet sturdy and well designed. I don't expect a knife in the $9 price range to last a lifetime (despite the warranty) but this knife is holding up fine for me over six months of just throwing it in the dishwasher. More expensive (over twice as much) forged knives have stiffer blades and are more durable however.

My absolute favorite knife (Wusthof) that I had for years went missing. I was happy when I found what I thought an exact replacement and I did. These knives are sharp, light and the best I've ever had. It's easy to use and not at all bulky, something I grew to value when my original went missing. I use this knife for everything from tomatoes to meats and all in between. It makes kitchen cutting chores a breeze. This is the knife to have.
