These knives are great for cooks. They keep a sharp edge and they are easy to handle. I enjoy the balance of the knife and how it fits in my hand. I own 3 of Yoshihiro brand knives and I would like to get a few more soon. This particular knife I tend to use for slicing a variety of grilled meats. It is a must have. i was really impressed with the quality and workmanship of the knife. i have had this knife in my possession for less than 4 months and the tip has broken off. I am a morning prep chef and this knife does what it does well and more. I mainly use it for prepping Ahi Tuna loins, but it serves me especially well for butchering a whole salmon or just slicing portions of prime rib for service. Reizen Pro Knife with Slicing Guide
My knife work is not chef quality; with this type of knife I don't have to wait and work years to gain those skills. I've used other better quality serrated knives with guides, they're excellent for repetitive or very fine slicing of meats and vegetables. This one, not so much. The guide is stamped, not forged or cast, and the guide adjustment set screw is threaded into plastic, so I don't have much hope for it lasting long. Because of those to factors, when set to slice very thin, the guide and blade are not parallel, resulting in slightly wedge shaped slices. Of course, the knife I would buy instead is $85: Amazon.com: Victorinox Cutlery Precise Slice Knife, Right Hand: ...You can't cut anything with the guide attached because it sticks down lower than the blade. We've tried many configurations to make it work. Including having what we're cutting hanging off a chopping block, but we don't have a chopping block tall enough (it sticks way below the blade). We have a full line of Fiesta dishware and thought having the matching flatware would be nice. After a year of standard use and dishwashing, about 1/3 of the flatware is unusable. The upside is that it is cheap and replaceable. But count me among those who would rather pay more for something that lasts. We are in the process of ditching the Fiesta flatware line and moving to something more robust.PROS: Retro Stylish. Inexpensive compared to quality flatware.

I saw the other review here, and I felt I should put in my two cents, as my experience as been so different.Perhaps the lots of flatware vary radically, but I've had flatware in eight different colors for about six years now, and have had absolutely zero problems, except the plastic on one fork is starting to come loose. No splotches, no breaking, nothing.
I will note that I DO NOT have a dishwasher. Perhaps that makes the difference.

I got service for 8 as a wedding present. That was 5 years ago. There are rust spots all over the steel and the plastic has broken on almost every piece. It started the first year I had them. I finally got new flatware this X-mas and am so happy to be rid of the bulky broken Fiestaware.This is the ONLY Fiestaware I've been unhappy with. My 18 mo. old son "helps" me with putting the dishes away and though something gets dropped everytime, nothing has broken.

I saw this flatware and just had to have it because of it's style. It's very well made and the knives have no "seams" like my old knives; the blade and handle are made as a single piece. The pieces and long and elegant and well-balanced. The only drawback is that the teaspoons do not fit into a container of Yoplait yogurt because of their width, so I did not get rid of my older spoons. That is the only reason I give this 4 stars instead of 5. They come out of the dishwasher beautifully clean. I just love them!I was looking for a modern design set of flatware without spending a fortune and I found it. After falling in love with several modern flatware sets, including Dansk Odin, which costs about $100 for one 5-piece place setting, I decided to give this set a try. If I didn't like it, it could be relegated to my beach house which has become over the years a receptacle for purchases I'm not crazy about. Much to my surprise, this set is much nicer than it's price indicates. The pieces are the larger continental size, they are heavy (I don't care what any other reviewer says, I know what I'm talking about), and they have a mod look that usually comes at a much higher price point.The negatives are, the wedge shape of the knife blade seems a little awkward, as most modern cutlery does. The handles may be thin for persons used to traditionaly designed handles. Although people who are used to the modern handles will find them comfortable and quite manuverable. Some people (those who don't know how to use a spoon properly) wont like the large circular spoons. But if you do know how to properly use a spoon it wont be an issue.
All in all, it's a very nice set at an unbeatable price for what you get. I've lived with mine for a month now and I will be purchasing another 20-piece set to make 8 place settings in all.

Maybe I'm not having luck with Amazon flatware sets. I returned two sets and this one also came with some defects. It had tough dark grey stuff on edges of many of the pieces. Most of them came off by scratching them with finger nail. But some of them were lodged in grooves and I couldn't get them off. They were grooves that weren't supposed to be there. (I posted the pic of it).Update: The replacement set also came with a few pieces with similar defects. Luckly I still had the old set, so I swapped out the bad pieces and returned the old set with all bad ones. If you are returning this set, hold on the the old one till you inspect the replacement set.These are nice. I bought 2 sets but I see they are rusting and chipping already. The spoons are sooo big you can't put them in your mouth!

I shuck 300 to 800 oysters a week. This knife does the trick. The New Haven tip cracks open the hinge and goes right into the muscle. Quick turn and the bottom muscle is cut. Role over the oyster and ready to serve. I do have to do a quick sharpening every other week. The handle is tought, sanitary and does not dig into the palm of your hand after shucking several hundred oysters.Overall I really like this knife. Just did a 100ct of James River Oysters (which I think are Med to Large) today for a party and found it much better than my previous knife. Someone recommended the curved tip "New Haven" style who had shucked at an oyster bar and it really worked well for these oysters. Granted, it think these are easier than others I have done in the past. Benefits of this knife include-non-slip handle, good handle size for my Med size hands, VERY solid stiff blade, curved tip that was thin enough to wiggle into the joint. Nice curve also helped cut the abductor easily. Broad enough turn the meat after cutting. Granted only one day of use so we will see how it holds up, but it still looks brand new and more importly still feels solid. I work at an seafood place/oyster bar that primarily serves oysters on the half shell and this blade has proven perfect for getting in the hinge quickly and cleanly. This is almost great beginner knife, the only thing that stops it from being all around perfect is also its biggest strength: the hooked tip. The hooked tip is awesome for serving on the half shell for most oysters, but isn't quite as versatile as Boston or Galvenston style knifes for getting into the really big oysters, clams, etc. If it's your first knife or your only knife I recommend the Boston style of the same brand, but that doesn't stop me from loving this knife!And this time I didn't kill myself with this Victorinox oyster knife. I just can't describe in words how shocked I was when I shucked my first oyster using this proper tool. My buddy and I shucked 100 blue point oysters that day with minimal effort. I received the Ozeri Elite Chef Black Ceramic 3-Piece Knife Set and I was AMAZED! I wasn't all that familiar with ceramic knives before using these! Boy, have I been missing out!! I only wish that they came in a block set! I'm officially addicted to ceramic knives though so they've done their job on that! I cut all sorts of things with them and didn't get any trouble with cutting anything. I cut steaks, chicken, and potatoes--none of them giving me any trouble on trying to cut with them! They were really sharp, but I suppose would have to be to cut so well through things that normally give you problems with ordinary metal knives! I can't really express of how much I LOVE these knives! I just wish I had more of them!! The only thing that seems off with them, but is NOT a problem for meit says that they're supposed to weigh less than other nights but to me they seem heavier. The fact that they're ceramic means that they will not corrode or rust with moisture, oils, and acids. I highly recommend these knives to anyone and everyone who has reason to use knives (if you cook at all or are in the kitchen even to make a sandwich)! Stainless Steel Sushi Sashimi Knife
This is my only review in years of using Amazon. This needs a review! I love to cook, and have owned many knives in the last 39 years. This is by far the most versatile knife I have ever used. Back to buy 2 more as gifts. Virtually the only knife I now use except when only a much smaller blade will do. Still sharp after a year of constant use, slice, dice, smash, carve. Yes, a set of specialty knives will do a little better, but not much. Oh yes, its great for cutting sushi as well!I just was back to get another as a present and saw the questions and review. A quick update from my usage. I am not any sort of knife expert, but an accomplished practical family cook with about 35 years experience. The bottom line is that its still the only knife larger than a steak knife I use. I have actually thrown out given the rest away. I have had to sharpen it two times with a inexpensive stone picked up locally, and I was surprised how well that worked. Its last major task was Thanksgiving when it chopped, diced, and carved up a meal for eight. I find the shorter size, and I believe slightly heavier blade than some sushi knives, helps to make it such a good all purpose knife. May not be the best at anything, still very good with everything I have tried. I am not easy on my tools and it has held up very well.
The blade on this one is 8.5 inches and it does look like the less expensive Seki Ryu brand yanagi bocho as mentioned. Since the one I purchased has different markings, an almost worn out komodo dragon engraved in a circlular pattern on the blade, I cannot be certain its the same as this or the other one pictured it arrives. I originally paid about and shipping, so either way it is the same or less as 2 years ago.I normally spend more time with my purchases before writing a review but in this case I want to make other shoppers aware of the fact that this very same knife is available on Amazon at a substantially lower price. Shame on the vendor for passing this off for something other, and tacking on a higher price, with no value added. In fact, the opposite is true, not only from the higher price, but from the misleading product name. They did not even bother to repackage the product--that is how I found out the original brand name. Now that I have the knife in my hand, I see that it is actually a Seki Ryu brand yanagi bocho.
For starters, this is *not* a Santoku and cannot be classified as a Chef's knife (gyutou) either. This is a yanagi-style sashimi knife. Blade length is 210 mm (8 inches) from choil to tip, which is very short for a yanagiba. The principle behind this type of knife is that from the sharpness and length of the blade one is supposed to cut fish meat with one clean stroke, no sawing back and forth, or the texture of the flesh gets ruined. Total length is 330 mm, and weighs in at about 77 grams! Spine thickness at bolster, about 1.78 mm. In any case, this is still a good buy, considering that the truly professional-grade yanagibas can cost up to a hundred times as much, or more.
The handle is wood, D-shaped and because of this, plus the single-bevel edge, is definitely not meant for the sinistral user. I doubt if you can find a left-handed version. The bolster is plastic, instead of the traditional water buffalo horn--but what can you expect at this price? Fit and finish is fair, a tad blade-heavy (balance at about 30 millimeters north of the choil).
To find the "cheaper" version of this product, just do an Amazon search for "sekiryu sashimi." I cannot determine what kind of metal they used for the blade, but for a single-bevel edge, it does not seem to be that sharp. Don't get me wrong--out of the box, it is still very sharp--sharper than any traditional western-style knife out there. The metal seems to transfer very easily onto a ceramic steel (soft?). I will see for myself how well it will sharpen, and how well it can hold its edge. Bevel angle seems to be greater than 15° (probably to protect the edge from the "average" user?), so it should sharpen to a much keener edge after I'm done with it. Despite the short blade, this knife should do very well for almost anything that your traditional slicer kitchen knife is used for, just not as rugged.
For the budding Japanese-knife enthusiast, this makes for an ideal "practice" knife. So, in spite of all my complaints, I can still give this item four stars!

I purchased this knife because I wanted a dedicated sashimi knife for the sole purpose of slicing sushi rolls and ingredients for sushi. Japanese knives, such as this, are usually sharpened at a much sharper angle than traditional knives, so they are very sharp, and this knife is no different. It is very sharp, and has maintained its edge after 2 months of use. It is very inexpensive, but the actual blade seems to be of a sufficient quality to handle fish. The knife has a D-handle, which means the handle is in the shape of a "d" so that it is flat on one side and curved on the other, to fit into your palm. This means that the knife is designed for right-handed people and will feel odd in the left hand. The handle is very cheap, however it has held up and I don't really have a problem with it since I only use it for one purpose. The knife is sharpened on both sides of the blade. Traditionally, a knife like this for sushi should be single-ground (sharpened on one side), which it is believed makes cleaner cuts and doesn't tear the nori on the sushi. I have used this for dozens of rolls and don't have a problem with it tearing and not making clean cuts, provided I dip the blade in water first. I should mention that unlike the manufacturer's picture of the knife, the tip of the blade is rounded and not pointed at all.If you're not looking to spend a lot of money on a sushi knife, I would recommend this knife. However I do not think it should be used as an everyday knife and shouldn't be used for cutting things like beef or tougher foods which might dull the blade.
EDIT: 6 Dec 2011 Have to change my review from 4 stars to 1. After maybe one hour total use with the knife, the blade has separated from the handle (see my picture). Closer inspection of how the blade is designed to attach to the handle leads me to believe that this is likely to happen with other knives, since the piece that connects to the notch is just not long enough. I always washed this knife by hand and took care of it. It still has a decent blade, but that won't mean much when it breaks off while you're slicing. Buyer beware.

This is not a 5 star knife at any price, but for the price point it's pretty damn nice. If you're looking for a quick almost disposable blade, it's sharp, it's thin, and it cuts through fish like butter. The blade does not hold an edge for very long of course, but if you hone it before and after each use it will last you for a good amount of time. Handle leaves a -tonto be desired.But let's be honest, the best knives range from 100 dollars to the moon in price. You get what you pay for to some degree, but if you'll only use this knife once or twice a month, and know how to hone it, go for it. Can't beat it for 15 dollars.

These knives are amazingly sharp. They slice through everything with ease. Butterflying a chicken breast was a breeze, the knife sliced through like a razor blade. Even though the handles look like they could be uncomfortable, they fit your hand perfectly. I have also handled these knives wet and I didn't get the feeling that they were going to slip out of my hands. I beleive the pearl between the blade and the handle helped me keep a secure grip while the knife was wet. I got one of these at a thrift store more or less "on speculation" to see if it would work better than my plastic mandoline. Yes, it does. I just sliced up some vegetables for my stew and it went right through them: a couple of onions, some carrots, and a stalk of celery. I'm delighted with it. When this one breaks (thrift store, y'know) I'll be ordering a new one. And my mandoline is going out for the yard sale.If you're running a commercial kitchen, this isn't your tool. But if you want to slice up some onions for the frying pan, or assorted veggies for the crock pot, it's more convenient than a knife and better than any alternative I've tried. Having the sliced-up vegetables land right in a measured container isn't to be sneezed at, either; it's easier than scraping up handfuls of veggies from the cutting board and dumping them into measuring cups.
It's not going to replace a good knife (and if you're buying kitchen knives, buy GOOD ones or eat out!), but it's a very fast, very convenient way to prep large quantities of vegetables at once. Definitely worth the money.I love the Vidalia Chopping Wizard, so I bought this, but I'm very disappointed. It's hard to line up the pressing mechanism with the blades, and when you pull up on the pressing mechanism, it brings the blades and other things with it i.e. the whole mechanism falls apart, and you have to carefully put it back where it belongs without slicing your finger.

Very nice carving set I bought as a wedding gift. Slightly smaller than I would have preferred, but should work fine. Super sharp out of the box. There are criticisms on other sites about the size of the handle. After receiving it, I can definitely see where some might have an issue. This rigid paddle is intended for pastry use: for mixing batters, and for blending ingredients in a bowl. It is not a flexible bowl scraper spatula which does not mix as efficiently as this rigid one. Made in France, it is used by chefs, especially pastry chefs, on a daily basis. I own three sizes (lengths).I bought this for my daughter to replace the Matfer mixing paddle she also used on the stove, toasting this white paddle to a nice, toasty dark brown on the end. It was replaced for aesthetic reasons, not functional ones. The end of it remained un-melted because the item is made of Matfer's Exoglass that is heatproof to 450 degrees F, overkill for a mixing paddle used mostly at room temperature.
Excellent, commercial quality French specialty kitchen tool. Buy it in 2-3 sizes. It is almost indestructible. This is why I buy commercial, restaurant supply stuff for my kitchen...leave the glammed-look, over-priced stuff to Williams-Sonoma, and their ilk. Use what the chefs actually use.

Mug is good. Keeps coffee hot. Only fault is the lid. Cannot drink out of lid properly. Fits nicely in compartment in car.Great cup to go with my new Mr Coffee single serve coffee brewer. It fits nicely into the single serve and into my cup holder! Looking at some of these fancy coffee mugs I noticed the price can get up there in dollar signs...this was a good price for a fully stainless coffee mug. Good quality and keeps my coffee hot for a good period of time unlike the plastic "double wall" mugs.
