Red Color Cutting Board Non-Skid Surface 18'x12' *NSF Listed*OXO and another brand's were useless after first use. This one was like the older plastic cutting boards it is replacing. Un-honed knife only put light scratches into surface as expected. The others suffered deep cuts that actually created strings of plastic that could get into food. Bought all same day, same order and only this one survives.

Follow-up:

Type of plastic used in the construction is the reason for my issues. Not being an expert I will just say that all Polys are not created equal and caveat emptor.

It doesn't have a rubber grip as I thought it did but it was half the price as those that did and still fit in my holster. My hands are usually wet in a cooler for extended periods of time and the handle despite the lack of rubber has enough grip to keep working with numb hands.

The color is no doubt tan. Its a little more intense than the picture shows.

Very sharp knife that requires only occasional honing(the edge will last years even with almost daily use in a work environment).

Chicago Cutlery Landmark 8-Inch Chef Knife, Sheath PackagingI love Chicago Cutlery's Landmark series. The knives are extremely sharp, and rarely need sharpening. I have an entire set of the wooden handled, original Chicago Cutlery knives, which were never even close to this sharp, even though I thought they were OK (I didn't know what I was missing)! These are exceptional, as is the price for this kind of quality. The black and silver look is elegant. I own the 5-inch slicer, 8-inch slicer and chef's knife, and bought the larger knives because the 5-inch slicer had become my main utility knife that I used for almost everything unless it required a parer. Highly recommended.

I have owned this knife for 4 or 5 years now. It is a wonderful addition to the kitchen. Previously I had a semblance of a chef knife that was part of a set we received as a wedding present. As I started cooking more seriously a proper knife for the work was needed.

Having worked a bit in a couple of industrial kitchens and learned a few things from the chefs and my own methods of trial and error here's the short list:

First, the knife handle has to be comfortable, balance is important, but so is the shape of the handle. Many knives out there have blocked handles, which are squared off and after cutting/chopping for a while they tend to be uncomfortable in the hand. Believe it. We chopped and cut a lot of veggies and if the handle is rounded and ergonomic it really does make a difference.

Secondly, 12 inch vs 8 inch blades...the knife has to be easy to work with. I have tried 12 inch knives and they were too long. I have a 12 inch poly handle which is now used to cut pizza; it is just too cumbersome to effectively manage on the cutting board. The 8 inch model is perfect for me and something that everyone should at least try. Now a 12 inch knife delivers good results cutting up bulk material but... the blades on 12 inch knives are usually thinner to keep the weight manageable and the length of the 12 inches does not lend itself to the cutting boards that are generally sold. The 8 inch Chicago Landmark has a good weight which is desirable and actually safer as you use as the weight to drive the blade and not physical force. If you have to use force or bear down on the knife to make the cut, you are asking for an accident to happen. Weighty, stout blades are safer! Believe it.

Third, the cost. This knife is very affordable. After making my collection of Chicago Landmark's I almost scoff at those "premium" knives that are over One Hundred Dollars. I don't think they're worth it, paying for the signature name usually drives the cost beyond affordable.

Fourth, and this is a safety warning. Have good lighting, a good poly cutting board, concentrate on what you are doing, get rid of distractions like kids running around, or watching TV, or jiving to the tunes on the radio, AND WEAR SHOES. These knives are SHARP, if you are not paying attention you WILL cut yourself in a split second. Drop the blade on an exposed foot and you are going to draw blood. I cannot stress this enough, culinary arts textbooks talk about it, and the pros know all about this and exercise caution around kitchen tools.

Fifth, buy a quality "steel" to keep the edge up; at least 14 inches with a hand guard. This are not sharpeners, the steel is used to take the "roundness" out of the edge. As you cut the edge rounds out a bit; steel brings the edge back into shape. And I would not recommend a miracle knife sharpener, use a stone or diamond flat and work the blade correctly. Consult a Gisslen textbook or some other text that will show you how to put that knife edge back into proper form. To be perfectly honest, I have stoned my Landmark 8 inch only once in the 4 or 5 years I have been using it. I use the steel almost anytime the knife comes out.

That should do it from me. I sincerely hope this has been helpful. BTW I know a few really good cooks out there who have spent some time in the industrial side of the business and have switched to this particular knife after using mine. They are wonderful, dishwasher safe, durable, and hold a good edge.

This knife is the ONLY knife I need in the kitchen. It's not so big that I ever want to use a smaller one. It stays sharp for a long time, in this house in a busy week I have to sharpen it weekly. But that is the equivalent of about 3-4 solid hours chopping & cutting with it! It cuts right through frozen foods (bananas, steaks, chicken), fresh vegetables & fruits, I use it to slice pizzas, and for just about EVERYTHING including butchering & piecing whole chickens. It's excellent for free-hand drawing of lines in pastry dough because it is light and precise with a thin grip. Because of the grip design it cleans SO easily I have no worries about debris being stuck in the hilt, it's smooth and sleep and still has a good grip. The weight is heavy enough to work with you making your cutting easier but not too heavy to wear out your wrist with long chopping sessions.

I've been using this for 2 years now, it has a special place in my cutting board drawer to protect it. I have been writing a cookbook for almost a year now, and have put in hundreds of hours chopping, cutting, dicing and all sorts of smither-eening with this knife and I certainly can't live without it! I feel it's as good as the first day I got it still and look forward to many years to go.

I love shrimp but don't like the pre-peeled, frozen variety.

Shrimp shells yield a wonderful broth for seafood dishes.

I get my shrimp fresh from ethnic stores.

So, the OXO shrimp cleaner really does reduce the 3 steps

in shrimp cleaning to 1.5. The 0.5 is for the fastidious

in me that wants to get every little bit of the vein (or digestive

tract yuck) out. I also remove the vein on the underside.

Faberware Barberry Mirror 45-Piece Flatware Set, Service for 8We got these as a wedding present a year ago and so far so good. This is a 45-piece set that has two spoons, two forks, and a knife for 5 place settings. They are made of 18/10 type stainless steel and are polished to a mirror finish.

After living with these for a year, I have been pretty happy with them. The finish has held up good with minimal scratching, and is still bright and shiny. There were some quality issues. I noticed that the finishing steps are missing. You can still see the marks from the stamping machine that cut out the fork's prongs, areas where food particles can accumulate and cause rusting. The steel they are made from isn't very thick either. The fork prongs and spoon handles bend easily under moderate stresses. The knives are just fine though.

I have also noticed rusting on some areas, especially in the serrations in the knife blades. Some rust has accumulated in between the serrations on several knives, and I noticed some small spot rusting on the blade shanks and on some of the forks in between the prongs. I looked into it and found that it wasn't food particles missed by the washer. That being said, the rust cleaned easily with my Dremel tool and polishing wheel.

Overall, you get what you pay for. My Ginko set is much better al around, but it's more expensive (almost twice as much). Every piece works good, does what it's supposed to, and I like the finish.

A nice product for a good price. It came in a timely manor undamaged. Not as high quality as some, but a good option for a small investment.

This is an excellent tool. However you need to start with a nearly perfect blade. If you start with an unsharp blade this fine tool will be unable to help. You should use a regular steel or even better a more coarse sharpening stone/steel then follow by this for final honing.

It does give a really fine edge to knives and the few that are sharp enough to take it in my house really show a difference in use against typically difficult items like mincing really fine onion.

First the good....this rod keeps my edges like razors.

The bad....

I was somewhat disappointed with the quality of the materials used in construction....everything from the plastic used in the handle to the grit itself. The entire piece just feels flimsy in your hand and i feel like if it slipped away from me and hit a hard floor it might break. The abrasive surface does an excellent job on my blades but for what little I use this piece, I already feel like it is wearing out and don't expect this tool to last long. And no...I don't abuse it when I use it.

I don't want to be too negative. This rod does do a good job, there just might be better out there. It looks a little out of place in a block of high quality blades and will probably wear out sooner than you wish.

For home use, I've used many of the top brands including Henckels, Wusthoff and Kershaw. The Calphalon Katana Santoku is simply the finest kitchen knife I've ever owned.

The razor sharp blade retains its edge amazingly well, with minimal sharpening steel work. The knife is well balanced and light and a joy to handle.

Hand washing and drying are a must with a tool as fine as this.

As a dentist, my hands are very sensitive. I'm also familiar with the sharpness of a fresh scalpel blade. (Ok, I know some of you out there aren't liking this opening.) So, I'm very fussy about my kitchen knives.

Simply put, this Santoku knife is my favorite, by far! The feel, balance, and sharpness are fantastic. I have owned it for a year now, and it cuts like it did on day one. It stays sharp with just an occasional touch-up with a sharpening steel. While my German knives are good, I wish I had an excuse to buy more of the Calphalon knives. After use, clean it and dry it right away. It's less "stainless" than my Wusthoff knives, but the advantage is that the metal is softer, therefore easier to sharpen and enjoy using.

If you're serious about your cutlery, I can't imagine not loving this.

I have two of these knives. They are the best knives I have, and I have a lot of knives. The problem is the handle. I have had to send them back three times for cracking of the top handle. They have never seen the inside of a dishwasher, so heat is not the problem. I would still buy them again. They are that good.

Update: I have had to send the knife back for the sixth time for the cracking of the top handle in exactly the same place every time. I think this is a materials problem. I have other knives that are 30 years old and still have good handles. What's wrong, Calphalon?

I personally find the handle very comfortable on this knife. As with ANY knife, go to a good store and ask to demo it before buying -some people love the grip, some people hate it.

I find the weight and balance on this knife just right for my grip, and it holds its edge very well. I'd buy it again in an instant.

I own Wustoff and Henckel knives, and this is, by far, the best knife I own I use it for everything now. To be honest, I'm a bit put off I didn't save my pennies and buy the entire set instead of pieces/parting a knife set together.

The knife is extremely well-balanced, and the handle encourages proper cutting technique. The edge is exceptionally sharp and retains it's edge very well. This is a definite must for anyone who really enjoys cooking.

Fit and finish of the knife just a bit less than that of my old model 5614-8 knives made long ago, but still rather good. wish Mundial would make a sheath for this, with a sheath this would be a great " tackle box" fillet knife about as good as any and better than most knives sold to sport fisherman.

Shun DM0716 Classic 4-Inch Paring KnifeI bought this knife to complement the rest of my selection that I have been purchasing one knife at a time. I had tried Wustoff, Henckels, and Global before settling with Shun knives. I am a culinary student at the art institute and was turned on to Shun knives by my chef instructor who gave me a lead on certified Shun Dealer. I fell in love with these knives the first time I tried them. I knew I wanted the 2-1/2 inch bird's beak knife, which is why I decided on the 4" paring knife instead of the 3-1/2". If you are not pursuing the bird's beak knife then the 3-1/2 inch paring knife is great. Also, if you own any Shun knives, make sure you get the Shun Honing Steel with the built in angle. Shun knives retain their sharpness longer than other knifes in this category because they are fabricated with a smaller angle to make the blade than their competition. Most knives form a 45 degree angle to make the blade with two sides at 22.5 degrees each. However, Shun forms their blades with 16 degree angles on both sides to form a 32 degree blade. You should use the steel at least once a week and Shun offers "lifetime" warranty with free "factory-edge" sharpening any time you want. Depending on use, you should send the knives into Shun once a year for sharpening.

I own three knives: a Shun 8" bread knife, a German 9" chef knife, and this one. This is only one of the three I seem to use day in and day out. It's incredibly sharp, incredibly comfortable to hold, and is the perfect utility piece. I see no need to own a knife block full of specialty blades you'll never use. If you're just starting your set, start with this one. Highly recommended.

I recently purchased this Shun 4'' paring knife along with Mac 8'' chef's knife and a Global 5-1/4'' santoku, and this knife is every bit as sharp as the more expensive Mac and Global brands--scary sharp, in fact. Plus, the Damascus style steel is simply a work of art. I've used this knife for everything from apples to mushrooms to green onions, and it moved through all of them effortlessly and without damaging the food. I sharpened it recently--not that it needed it really but just because I wanted it as good as when it came--and it regains its original edge in a just a few swipes across a ceramic steel. Finally, the handle I think is the most comfortable of all the knives I purchased, long enough to fit easily in your hand but not so big that it reduces functionality. While Shun knives are certainly becoming very popular in the U.S., it's popularity well deserved, and this knife has found a busy role in my kitchen and was worth the extra cost over its inferior competitors. I'm glad I made the investment--there's simply no comparison between this knife and a Forschner paring knife, which I used previously.

The first one I got had a blade that was dented in one spot and bent in another. That would have been enough to send it back, but it was also overground in one place and underground in another. I can deal with undergrind, but overgrind basically ruins a knife (it creates a "hole" that is a huge pain to sharpen). It didn't help that the endcap was poorly finished. Naturally, I had Amazon replace it (very good service, by the way).

The second sample did not have the dent or bend in the blade. However, it had overgrind and undergrind in the same places as the previous knife, though not so bad that it was ruined. Finish on the endcap was worse than the first sample, but I can live with that so I kept it.

If you get one without these issues (or if you don't care about them), then I would give it 4 stars. Shun grinds their knives very thin behind the edge and usually has very good fit and finish. The blade is not too thick, and I really like the length. It is one of the better paring knives in this price range (~60). One thing I don't care for is that Shun's VG10 does seem to be more brittle than others (I have about a dozen knives in this steel from Spyderco, Henckels, and Tojiro). The other reason I docked points is that the Forschner/Victorinox paring knife is thinner, gets just as sharp, costs ten times less, and seems to have better quality control. Oddly enough, the Forschner also comes in better packaging (not that it should matter).

Like a previous reviewer, I don't believe in a huge collection of various knives. I only user a 9" chef's knife, a bread knife, a long pairing knife (occasionally), and now this amazing 4" Shun utility knife.

It feels great in my hand, is perfectly balanced, and its blade is so sharp it makes me think of a surgical blade. It's the knife that I reach for most often, and it's a pleasure every time. I've had it for about 6 months so far and don't feel the need to professionally sharpen it yet.
