As a chef, I have had the opportunity to use many types of sharpening systems over the years. In my opinion there is no competition when it comes to sharpening stones. The Norton stone is easy to use and keeps your cutting edge razor sharp with little effort. A multi stone allows you to repair damaged blades (coarse stone), rebuild your blade with the medium stone and finish your edge with the fine stone.

If you are considering a knife sharpening system I highly recommend Norton stones over electric sharpeners. The stone takes a minimum amount of steel off your knives compared to electric sharpeners. An electric sharpener takes the same amount of steel off the blade every pass. You will replace your knives much quicker with an electric sharpener. Protect your investment!

I have been working in the professional kitchen for a few years now, and I have used these exact items both in culinary school and in restaurants. I love it, and it's well worth the investment.

A steel merely HONES the edges of a blade, aligning the feathered bits of steel that get ground into the edge of the blade over periods of use or sharperning. This tri-stone truly sharpens even the dullest knives to a razor sharp edge. I use this for my home knives, as well as my pro kitchen knives. It does take a little bit of time to get used to, to get the right angle, etc, but is ultimately easy and self-explanitory. The safest knife is a sharp knife.

the 3 way sharpening stone is great for putting a new edge on your culinary knives. The only downside is you have to be trained in using the stones as sharpeners. There are very little directions in using this product.

This is a must have for any chef. Everywhere I have worked I have had the privilege of using these stones and they work great. I do not have one for the home yet but after the Christmas season I plan on getting one. I must also agree with the reviewer who stated that you must have knowledge on how to use this. If you are new to this then you will have a difficult time.

Kikuichi Cutlery Elite Warikomi Damascus Tsuchime Santoku Knife 7-in.This is an amazing knife; it is a beautiful piece of craftsmanship. I almost feel guilty using it in my kitchen, except that it does the job so well. Be warned, this is a fine steel product that requires careful handling -it is extremely sharp and light, so you have to pay attention to be sure you're not cutting something other than the food. It also needs to be cared for -washed by hand and thoroughly dried before putting it away. I don't find that a hardship, anymore than I'd mind caring for one of the beautiful fighting blades made for centuries by this company.

Having pursued the perfect kitchen knife all my adult life my quest has ended. A pleasure to look at. A delight to use.

Having used this knife now for a few months I'd like to say that it cleans up easily even when left over the weekend. Sharpening is a delight as you just swipe one side on the stone. Smacking garlic with the back side of the blade does the trick to finish off skinning.

If your a professional just do it and get the big knife. But for home cutlery, this is the best there is.

One last thing. Slicing and cutting are one thing. But a knife does more. It picks up food that has been cut and transfers it to the cooking surface. Magic is in your hands when your do this task.

I have had one of these large Boos butcher blocks in my kitchen for about eight years now, and it has been worth every penny. It is fantasticallly solid, like chopping on the Rock of Gilbraltar. I've used it for chopping, cutting, as a giant trivet for hot pans, and nothing has fazed it. I've been so pleased with it, I'm going to splurge the extra bucks to get the Boos mezzaluna, just because it's a Boos.

Wusthof Culinar 7-Inch Hollow Edge Santoku Knife

Wusthof Culinar 7-Inch Hollow Edge Santoku KnifeI've owned this knife for several months and am pleased with it -it certainly is good-looking. The santoku blade is great for chopping veggies -I think the hollow (Granton) edge is well worth the small increase in price over a flat blade.

The only drawback to this knife -as it is with competitors' steel-handle knives, is that most cooks will not feel as secure holding it, particular if your hands are a little slippery or greasy. It just feels as if it might slip. For that reason, I think the Wusthof Grand Prix version of this knife would be a slightly better choice. But hey, if you have a zillion-dollar kitchen and a zillion knives, this series is the prettiest to display that you'll find anywhere.

We bought this knife for our son. He has been helping in the kichen since he was three,and is training as a professional. He says this is the best knife he has ever used and is very easy to keep clean.

I purchased this along with the Wusthoff Culinar 10-piece knife block set. The Santoku knife rounds out the set nicely. I use this knife for just about every cutting task. The offset handle makes slicing/chopping really simple without banging your knuckles. I wish the chef's knife had the off-set handle.

I bought this knife 4 or 5 years ago off of amazon, and it is still my favorite knife. I use it for all sorts of vegetable chopping, and it never lets me down. I sharpen as needed. It fits nicely in the hand, has a perfect weight, and if I ever need to replace, I will definitely buy again.

I owned this knife for about five years and could not be happier with it. The edge holds very well but we do a quick sharpening every 3-4 times it sees moderate use. Almost everyone who uses it is surprised how sharp it is compared to their own knives. We have purchased 3-4 more of this and the classic version for family that left our house wishing they stuffed it in their pocket before leaving.

The Culinar look is excellent, definitely an upgrade over the classic and just has a feel in your hands that surpasses normal knives. I don't know if it's worth the extra price but our main two knives are both Culinar while the rest are Classic. I guess my point is, if you want just 1 goto knife that looks and works the part, get this one.

I cannot recommend another knife over this one based on my wife's and my own experiences. I'm over a foot taller than my wife and we both hold and use this with ease.

Global GSF-17 - 2 1/2 inch, 6cm Bird's Beak Curved Peeling Knife

Global GSF-17 - 2 1/2 inch, 6cm Bird's Beak Curved Peeling KnifeAmong my assorted bird's beak paring knives, this one has a special place. There's no hiding place for any transfer of salmonella bacteria from poultry to produce, for this knife is made of a single piece of steel, and the solid handle has good weight. (Not all knives in this line have a solid handle.) Furthermore, it stands up to use and abuse, unlike any other knife I've ever had.

I bought mine in a specialty knife store (which has since gone out of business) close to ten years ago. After a nameless family member helped out in the kitchen, it seemed to have disappeared, and I mourned for this little knife. Turns out said family member had accidentally dumped it in the composter, along with a small mountain of vegetable waste. I boiled it and it rejoined the household.

Comfortable to hold, it does a variety of paring tasks well in the kitchen. Slipperiness mentioned in reviews of other knives in this line has not been a problem. Weight and balance are excellent. I like the completeness with which it can be cleaned.

If you have a kitchen or flower garden, you'll find good uses for it outdoors as well. I grow edible ginger, as well as the kind with flowers. For cutting the rhizome from the plant, this can't be beat. I also use it when it's time to thin the heliconias and strip old leaves off lilies.

In perusing reviews about other knives in this line, there appears to be concern about sharpening the Japanese-made steel. I use a Chantry knife sharpener and find it brings this knife back to an acceptable edge.

BOTTOM LINE: If you like the bird's beak style of paring knife, you are likely to find a use for this one. Amazon's price is excellent. I paid about twice the amount and would recommend it even at that price. If you've never tried a bird's beak paring knife, this one is reasonably priced and especially versatile for the reasons mentioned.

First thing to note, if you've not used a bird's beak before, is that this is a specialty function knife. Don't buy it before you get (at least) a few other kitchen knives, especially a parer/utility and chef's knife. Some relatives have come over and tried to use it in conjunction with a cutting board and quickly set it aside--which is fine because they were getting ready to slice a finger off.

I've used it for fluted mushrooms, which is still more work than I'd like, and it does the job fine. It also works well with paring hand-held fruits and vegetables, but not being an expert, I still prefer the conventional gizmos for that.

Where it excels for my wife and I is in cutting up poultry. We usually buy our birds whole. The only time we carve is Thanksgiving. The rest of the time, whether before or after cooking, the knife of choice is this Global bird's beak. It is a veritable joy to disencumber our fowl of their appendages and such. "A hot knife through butter" as the saying goes, applies perfectly here. A whole bird is easily sectioned into six to twelve pieces in seconds. A cleaver can work as fast, but we're more joint-finders than makers, and the small knife and no-cutting board approach works great for us--less space taken, less washing, less mess. The curved point and shorter blade make the non-cutting-board approach such a good choice--I sure wouldn't recommend this technique using those 10-inch "broadswords." Of course a good chef's knife can work well too--you gotta have them, but this Global is perfection.

Sharpening takes extra time and care, but it rarely needs it--keeping a razor edge for at least half a year with about once-per-week use.

I'm not going to spend a lot of time discussing this knife as it is very much the same quality of knife that you would expect from Global. Just like all Global knives, it is a solid, one piece knife that has a razor sharp edge that stays sharp longer than most other brands of knives.

I originally bought this knife for use in culinary competitions, and it's one of those knives that really doesn't get a whole lot of attention, but sure is handy when you need it. I use it primarily to tourne potatoes. The shape is designed for that purpose, and the knife is therefore often described as a "tourne knife". Sure, you could use it to complete many different tasks from food to general house hold needs, but I wouldn't pay $30 to use it as an all purpose knife when there are so many cheaper options out there.

If you're less interested in the uses of the knife and more curious of the quality of the knife, feel free to read one of my other reviews on Global knives. I use them every single day at work, and I have very little interest in exchanging them for any other brand.

The tip is more rounded and the blade is a bit smaller than expected, which is why I rated it 4 stars out of 5. I purchased this to match our other knives but ended up purchasing a peeling knife from Wusthof as well that I prefer to this one. We have a full set of Global knives and love them, this is just the runt of the bunch.

LamsonSharp 3' x 5' TurnerGood points:

* Flexible blade does indeed slide under things.

* Useful size for eggs and grilled cheese sandwiches.

* Dishwasher-safe-ish.

Bad points:

* Handle is made of a plastic that melts at surprisingly low temperatures--the side of a frying pan even at moderately low heat.

* Handle is riveted to blade quite loosely--there is play when the handle flexes. It feels like something is shaking loose, even though this is functionally irrelevant.

* Blade is cheaply made--it is not smooth, but slightly pitted, at the business end.

Excellent turner, good size and flexibility. The only drawback is the material that the handle is made of. It will not sustain heat at all, so if it gets against the rim of a skillet or griddle it will melt promptly.

I live in a rural area and I couldn't find a decent turner in a store within a hundred miles, literally! All thick enough plastic to challenge a wheelchair from crossing, or silicone discs on handles. I went clear to another state to find a well-made turner the right size and made of real steel to no avail.

This turner is everything it should be durable but flexible, thin bladed to avoid injuring eggs, big enough for omelettes and burgers, rust-free, and a pure delight. It was a gift for my chef-esque husband and I had to buy several more in two sizes to make him even happier.

I am surprised to see there are very few reviews of this item, especially because I consider this item to be one of my favorite tools in the kitchen. My husband and I both love to cook, and even a year later, we still constantly rave about how perfect this Lamson Turner is. I love items that are engineered with thoughtfulness, precision, and perfection, and this turner is one of them. The sharp edge is absolutely perfect for flipping eggs (my easy over eggs are now PERFECT!). I love the precise feeling you have when scooping from under the egg, to find that not one bit has stuck to the pan. The sharp edge is perfect for getting under the thinnest items --crepes, eggs, etc., ensuring, a perfect flip every time. It's also great for scrambled eggs, as you can use the sharp edge to chop up the eggs as thick or as small as you desire. We used this for fried rice in the wok, pancakes, fish, etc. The 3x5 size is perfect for cooking in a fry pan from 8" to 12", or even a wok, and the handle is the perfect length to ensure full control over flipping. We use a knife sharpener to keep the edge finely pointed and it works fantastically.

I wanted a slightly larger than average turner for omelets, grilled cheese sandwiches (which I make on larger slices of bread) and my pancakes which I prefer much larger than the traditional "silver dollar" size. That is the only use I put this turner to, and it does quite well. The blade gets under the food fine, and has enough flex.

I was fortunate enough not to have the issue with a loose handle that others had. The plastic does indeed look and feel cheap, so I knew going in that I would hand-wash it, and never leave it leaning against a hot surface good habits to start early with, so you don't fall into the mentality (so common amongst American consumers) of "everything ought to be fool-proof, therefore I am going to treat my property like a fool,and then complain when things break."

I wouldn't use this turner for burgers or on the grill. It doesn't seem appropriate for anything heavy, and I wouldn't press down on it either (you're not supposed to press down on burgers anyway).

This turner is holding up fine under the duties I have assigned, and I see no reason why it won't last a long time with proper care.

All in all it's a fine product, I am satisfied, but considering the apparent cheapness of the build, it out to be a few dollars less $9.99 for instance.

November 2011 update: The handle has indeed become loose, and it feels even cheaper as a result, but ti still works fine.

Messermeister 7' Chef's Edge-GuardThis is my second purchase. Well worth the protection. I have a small kitchen cleaver which doesn't fit within my knife block. Using the Edge Guard allows me to safely hang the cleaver by the hole hook in the cleaver blade above the counter / beneath a kitchen cabinet. No worries about accidentally nicking something while the cleaver is displayed hanging. Why a second purchase? I had the original EdgeGuard for many, many years and recently replaced the original for asthetic reasons. Recently I tried to use the cleaver to crack open a coconut. I forgot to remove the Edge-Guard and made numerous hard whacks, wondered why the cleaver wasn't cleaving, then realized I hadn't removed the Edge-Guard from the cleaver's cutting edge. To my surprise, the Edge-Guard held its own. Although there were a couple of hairline cracks, the guard did NOT break through to expose the cutting edge--and I'm talking several HARD whacks! I could have lived with it 'as is' but decided to replace it anyway. It has a secure hold on the cutting edge. It would function very well for knife storage within drawers.

Actually I am surprised with the quality and durability of this chef's knife guard. Notice that this guard is not closed from all directions but allows the top part of the knife to go a bit outside if required. It is a light magnetic feeling so it grips the knife very well. Protection is 100%. Great stuff.

Works great. Although I've had some issues with the thickness of the knife. Sometimes they fall off sometimes it takes a lot of effort to get it off. But I'd rather deal with that then cut my hand digging in drawers or knife kits.

Zwilling J.A. Henckels Pro S Stainless-Steel 8-Piece Knife Set with Block

Zwilling J.A. Henckels Pro S Stainless-Steel 8-Piece Knife Set with Blockafter seeing the 7 piece set listed in consumer reports as their number one choice overall, I started to explore the market, online, at ebay, and then at amazon. I placed this set in my "basket" when they were $299, and this is an 8 piece set, with the extra santoku knife not listed in the 7 piece set that consumer reports listed. Well, checking back every day or two, I noticed that the set had suddenly dropped to $165. It doesn't take one long, when you have checked around, to recognize a good deal when you see it. I jumped on it. It took them 4 days before they shipped it, was worried that they were having second thoughts about the price, especially since the day after I ordered it, they raised the price back up to $299. But then, they arrived. I don't use or need the block, as I prefer the magnetic knife strip, by MIU, which I also got here on amazon. It holds them off the counter, so taking no counter space, and is much more sanitary than what could accumulate in the knife slots on the block. These knives are beautiful, VERY sharp, well balanced, and its nice considering that I no longer need to think about knives from now on. Go for the quality, as it is cheaper in the long run than cheap knives (or anything), and when you see a good sale, jump before they change their mind!

Though this doesn't say Twin Pro S that's what you're buying. Chadwick at OneCall was very responsive and did his homework answering my questions. Zwilling is hands down the best knife I ever owned. I'll be back for more and most likely from OneCall. One proviso on the knife set this particular set does not include long blades. Read the dimensions carefully to make sure the blade length is what you're looking for.

These knives are lighter than I expected, not so they feel cheap but nearly as light as a ceramic of the same size. Terribly sharp, the steel does a great job on knives of lesser quality, I have not yet had to sharpen any of the Zwilling knives. The paring knife snapped off perpendicular to the edge while cutting a small block of Jarlsberg. I have returned the knife to the manufacturer for replacement. Will let you know how that goes. These are lovely knives, so far I am pleased...if my paring knife gets replaced.

Furi Rachael Ray 7-Inch Sharp-and-Store Self-Sharpening Knife with StandI bought this knife after seeing Rachel Ray talk about how wonderful it was because it stays sharp. Well, no it doesn't. I even slide it in and out of the holder/sharpening blades a few times before each use but it doesn't help. It's no better than my other knives, which also need manual sharpening. Oh well.

Okay, let me say first that I'm a young man that knows his way around the kitchen. I'm also a young man who doesn't have a high opinion of Rachel Ray. My mom actually bought me this knife because she knows that I enjoy cooking. As soon as I saw Rachel Ray, I was skeptical. That being said, let me now tell you this; this knife has replaced my Henkel. I don't know what these other people are doing that dulls this knife...maybe they're using a glass cutting board or something. I've used this thing daily for about 7 months now and it is still razor sharp. If you're considering this item, buy it, you won't be disappointed....unless perhaps you're using a glass cutting board.

I was looking forward to getting a great knife and was excited when it finally arrived, but my delight turned into disillusionment when I opened the package. Although it was securely packaged, the self-storing stand was already cracked where the knife is inserted -obviously a manufacturing flaw. The plastic handle has a cushy grip, but when my hand got wet, the handle became slippery and hard to control -unlike my previous wood-handled knives. I have always wanted one of these since I saw Rachael demonstrate it on her show in "kitchen must-haves". I always had trouble keeping my knives sharp, even though I pride myself in my knife sharpening ability, someone else using my kitchen always threw my knives into the drawer with other knives and they would get knicks and dulled, (and I would be furious) I had a knife block for them to go into, but for some odd reason I am the only one in my house to get the concept that the knives GO IN THE BLOCK not in the drawer. With this knife... it has it's own stand/sheath, and it gets sharpened every time you take it out of the sheath and put it back in.

It can even get tossed into the drawer in the sheath and it will be protected and you won't get cut reaching into the drawer because it is safe.

It sits nicely on the cutting board or counter until I want to use it again.

It has a good weight to it, and feels good in the hand. It cuts beautifully and is sharp EVERY time!

I highly recommend getting one of these, it's expensive BUT WORTH IT!

This knife is a little pricey but worth it. It is extremely sharp (be careful when removing from holder). You won't have to dig through your drawer to find the right knife, this one will do it all. With the exception of a serrated knife and a small pearing knife, I got rid of all the other knives in the drawer that never cut right. You could keep it on the counter or put the entire piece in a drawer for safety, especially if you have children, you would not want to leave it on counter. Very sharp, very versitile.

Kikkerland Lightwood Fish CorkscrewI love the design but the shape of the lever tends to slip off the wine bottle when you are trying to pull the cork. It seems as if the notch that is supposed to connect to the bottle is just a bit off. Very ineffective compared to other similar waiter tool style corkscrews that I own and somewhat frustrating.

I purchased this item as a gift, and if the holiday wasn't so close at hand, I would have returned it. Overall, the style is cute and great for a man or woman, and it's completely functional & high quality. (The metal looking parts are actual metal, not metallic paint coated plastic, which is more common than you'd think!) Unfortunately, the item arrived completely separate from the packaging & was not re-assembleable to look un-touched. I hated to give as a gift in that condition, but through it in the gift basket anyway.

Mundial Y5627-10E 10-Inch Slicing Serrated Edge Utility Knife, YellowThis knife is labeled as a slicing knife. It's intended to be used to slice either bread or a roast. However, I rarely use it to slice roasts, I prefer to use my chef's knife for that or a straight edged slicing knife for that.

I bought this knife primarily to use as a large bread knife because I didn't yet have one in my set. I use this knife fairly frequently for slicing bread and rolls and it works quite well. The blade is sharp and the serates are well spaced to make it not rip the bread or crush it. Like the other couple of Mundial knives I own, I like this knife a lot, it's a great value for the money, the sanisafe grip is nice (it doesn't slip when wet, it's comfortable and sanitary).

It's very comfortable and very efficient, I was able to cut up a 3 foot long italian roll to make bruschetta for my last party (some 60 slices of bread) easily and in comfort with this knife... If you're going to be cutting for 15 minutes straight, it's good to have a comfortable knife.

The handle of my Chinese copy broke while opening its forth bottle of wine. Amazon is putting their reputation at risk by not requiring a statement of country of origin in the description. Do not be fooled.

I am not a waiter that serves wine, an overseas traveler, or a wine expert. I am just a Joe Schmo that was looking for a corkscrew. I read the reviews on Amazon, and noticed this item had an average customer rating of 5 stars. Boy, were these customers on the money. I bought this rascal and am absolutely amazed that such a simply constructed tool can be so efficient. It works great. All the other fancy schmancy corkscrews may be cool to look at, or lend some self-prestige to the owner. Whatever, blows your skirt. This baby is all anyone needs to open a bottle of wine and enjoy it. Although I enjoy and trust shopping on Amazon, readers should note that this item is available at some stores for $10.

I have prettier, bigger, and more expenseive wine openers but none of them match this Pulltap for being easy to use. The two stage design for removing the cork is genius. I've never broken a cork or struggled to break loose a particularly tough cork when using this Pulltap.

I hate to part with some of my fancy (and expensive) corkscrews, but the truth is that when I want to open wine easily and quickly... this is the tool I go to every time.

I have always been a huge fan of the Zwilling knives... and this set solidifies that even further. Not only are they comfortable and practical, they are absolutely beautiful. The horizontal tang makes the knives feel even more solid and secure as I'm cutting or chopping, and knowing I have that much control over such an unbelievably sharp knife is very comforting. I also appreciated that when they were shipped, each knife was sheathed individually, which is nice since I do often travel with my knives.

These are by far the best knives I have owned. Out of all the things in the kitchen I use my knives the most, so I wanted to invest in a good set and I could not be any happier. These knives have a great balance and feel in my hand compared to previous knives I have owned. I have had these knives for about a year and a half and they have held up really well. I sharpen them about once every two or three months and they still manage to stay pretty sharp with daily use. These knives might be a little expensive at around $300 but in my opinion they are worth every penny.

We don't use them that much, but when we do they out perform all the other knives that we own. We have them for home use. I keep them tucked away so that the kids won't see them (out of sight out of mind). This is our first set of really good knives and I don't want them damaged. I got them as a Christmas gift for my wife. She loves to watch the cooking shows on TV, so I wanted her to have her own great set of knives.
