I've used other boards for cutting and dicing vegetables, slicing French bread, etc. but this is super. Its cutting surface is perfect and being thin is nice too. I'm surprised with its heft and solid feel. Made of glass,unbreakable and heat resistant, that's mind-boggling.

It says it only needs wiping, but I'll use my sanitizing wipes and see how that goes. I thought about the black finish version but decided the silver matched my other s/s ware.

This looks very classy on our counter! I just wish it was a little larger -so a full size cookie baking sheet would fit on it without overhanging the edges.

Zwilling J.A. Henckels Twin Pro S 5.5-Inch High Carbon Stainless-Steel Boning KnifeI work with fish and other seafood all day long, and I've been looking for a good, flexible knife to fillet and skin fish with, to no avail...every knife I've had has either been too light, or not sharp enough...

Needless to say, I've found my knife...it is a godsend to anyone who works with fish, chicken, meats...the blade is flexible enough to make skinning fish like salmon, halibut, haddock, snapper, etc. an absolute breeze, but stiff enough to make boning chicken & other meats very very easy!

I do recommend only handwashing this knife, however...it says dishwasher safe, but I wouldn't risk the high-heat of the wash cycle...

All in all, a GREAT addition to ANYONE'S kitchen.

We bought this knife to trim tenderloin, after being inspired by a televised cooking show. This was my first investment in a really good knife and I had a hard time believing that it would be worth the price. Once the knife arrived, I became a believer. This knife has great weight, balance, and a fantastic blade for meat (just enough flexibility to trim bits of fat and gristle without cutting into the good meat). It was worth every penny.

It's really amazing how much easier it is to work with a good professional knife. We later got a (not quite as expensive) set of Henckels and, although they are good, they are not quite as nice as this particular model. This Pro S series has a better handle and a nicer weight. If you need a good boning knife, this is the one to get.

This is the knife that most cutlery sets leave out (oh, and the Santoku as well), and I highly recommend getting one. It really makes deboning so much easierespecially on chickens and turkeys. I deboned a turkey in no time, especially appreciating the extreme sharpness and flexibility of the blade.

I have a mix of Wusthof Classic and Grand Prix knives, but settled on this to 'match' my Classics. There's no difference between the Pro S and Wusthof Classic in terms of performance, but I preferred the lower price tag and shorter length to its Wusthof analogue.

Whenever you buy Henckels Pro S knives you know you are getting the very best. They have other types (Four Star, Five Star, etc.) but the the Pro S handle stands out simply due to the construction of the handle, the only one that is a harder type of poly PLUS the handles are RIVITED, giving it a toughness second to none. The Five Star knives have the same good knife edge (don't get the Four Star...the edge isn't as good and doesn't hone as well) but lack the rivited handle as the Pro S. True, the Five Star is more "ergonomic" in handle shape, so if that is what you are after, go for it. But I don't see THAT much difference...I want the rivits!

I have tried the other names and Henckles beats them all so don't try to save a few bucks.

As for this particular knife, if you can only spend the money for ONE good utility knife, go for this knife. I use it for paring as well as for all other kinds of uses except for things that require a chefs knife or cleaver...it isn't only for boning and filleting. In fact, I don't think I have ever boned with it, (I own three of them since my husband and I both cook together and we are always fighting over who is going to get this little knife, so here I go getting another one. Hopefully the fighting will stop now!

You should always invest in the Henckles honing/sharpening stone when you buy your first Henckels knife...DON'T EVER GET ANY OTHER STONE...they are totally inferior, trust me. And don't get fooled into buying any other device for honing either.

When you first receive your stone and knife, give the knife a few long strokes (both sides) on the stone to get it at top performance from the start, wipe with a clean, damp cloth, dry and you are on your way.

...Get this knife and you will NEVER look back...or purchase any other type of kitchen knife again. I would rather have one of these than ten of any other brand names.

8'osaka Yanagiba KnifeThis is a very nice slicing or carving knife. An Asian sashimi or yanagi knife has a single bevel edge either on the right or left side of the blade used for preparing sushi. When I saw the nice wooden box which contained the knife the label described the knife as having a Euro grind. After examining the knife it does have a european double bevel edge. The knife is extremely sharp and with a 50 rockwell hardness scale should be easy to sharpen and still be durable and not as fragile as blades with a hardness in the 60's. The blade has the appearance of Damascus steel, but doesn't say it's made from Damascus steel. The blade is VG-10, 67 layers which are forged together which make the blade the strongest you can buy without have a custom made knife.

This knife is great. I use it every day and it has held up very well. Remember when using ceramic knives you must use a wooden cutting board and not a glass one or the knife will break. Even the backside of the knife is sharp so watch out when cutting that you dont press on the back part of the ceramic part too hard or youll cut your finger. I had to learn that the hard way.

Mac Knife Chef Series Slicing Chef's Knife, 8-1/2-InchI love knifes.

This MAC is the first MAC I bought and it's awesome. It's very very light and one of the "go to" knives my finace grabs. The blade is very thin, allowing it to make quick work of dicing onions, cutting vegetables and mincing herbs. Personally, I never use any of my japonese knives for boning chicken, smashing garlic or any other "rough" use, but this knife is great for everything else.

I have maybe 12+ knives at home from my japanese collectoin (global, miyabi, shun) to my western knives (henckel, wusthof, etc...). From my 5" santoku to my 10" chef, I mix and match based on my mood and what I'm cutting. I grab this one often for vegetables and slicing cooked steaks (no bones).

Strengths:

1) Super sharp

2) Super light

3) Great price point

4) Hard metal (holds edge well for such a thin blade)

Weaknesses:

1) Angle of blade is not western, probably closer to 16-degrees so you need to sharpen accordingly. Additionally, most honing rods might not be hard enough to hone this strong metal. (Note: I don't know how hard this metal is);

2) Not advised (personally) for frozen items or anything hard as the blade is thin.

I gave this as a gift to my partner, and he treasures it. It keeps an edge really well, handles very well. feels great in the hand.

Hampton Forge Silversmiths Lexington Mirror 45-Piece Flatware SetI was ready to order these, since we have lost about 6 of our teaspoons and dinner forks. Replacement.com does not have those items. However, I then read reviews of the set with extra serving pieces, and people said they were "cheesy." When I noticed the stainless was only 18/1 (1 being the percent of nickel) I realized that they would look a lot different from mine, which are heavy, and excellent quality. If this is what you can afford, buy them, but they will not feel heavy in your hand and the big difference is the amount of nickel. Luckily, mine were from Costco, and actually were priced very low for the quality.

I wish that I could find a set of the version of this pattern with the 18/10 quality! Hampton is a good brand.

You get what you pay for I guess. Obviously, will not hold up over time. I regret making this purchase.

I received the Ozeri Elite Chef Black Ceramic 3-Piece Knife Set and I was AMAZED! I wasn't all that familiar with ceramic knives before using these! Boy, have I been missing out!! I only wish that they came in a block set! I'm officially addicted to ceramic knives though so they've done their job on that! I cut all sorts of things with them and didn't get any trouble with cutting anything. I cut steaks, chicken, and potatoes--none of them giving me any trouble on trying to cut with them! They were really sharp, but I suppose would have to be to cut so well through things that normally give you problems with ordinary metal knives! I can't really express of how much I LOVE these knives! I just wish I had more of them!! The only thing that seems off with them, but is NOT a problem for meit says that they're supposed to weigh less than other nights but to me they seem heavier. The fact that they're ceramic means that they will not corrode or rust with moisture, oils, and acids. I highly recommend these knives to anyone and everyone who has reason to use knives (if you cook at all or are in the kitchen even to make a sandwich)! My only thing to say to Ozeri is that I hope you come out with a bigger set for like a block of them!!

It does an excellent job, but there is a slight metallic taste to the food that I hope goes away after it's used more. Basically, it isn't as handy as a Cuisineart food processor, but it is a good alternative for the price. It is more complicated to cleanlots of parts to correctly reassemble laterbut not so much so that you can't get it right if you think about what you are doing.

it does the job but upon first opening i had a small chunk of the blade flake off xD ? not a good sign of things to come but so far it works i guess.

FYI: do not use an abrasive on the patina (dark) finish, it will take the finish right off. You can probably put them in the dishwasher, but if you're handwashing, let them soak in hot water for a couple of minutes to loosen stuck-on debris and use a sponge or something soft; do not scrub with anything abrasive.

Zhen Japanese Steel Santoku Hollow Ground Chef's Knife 7" + Vegetable Knife 5.5"

Zhen Japanese Steel Santoku Hollow Ground Chef's Knife 7' + Vegetable Knife 5.5'I am a pro, I use knives all day. The knives came razor out of the box, it was an unfinished stone grind that could have lost its edge fairly quickly (nothing wrong with that for $38). I stropped them on a piece of cardboard to make that razor last longer (if you don't know what "stropping" is look it up, very good thing to know). Today I diced 15 lbs of carrots, 10 onions & chopped 10 lbs of zuchinni alternating between the two knives for different cuts. They are still razors and I did not steel them at anytime during the prep work (look up "steeling a knife" if you don't know, also a very good thing to know). All in all, I am very! impressed with the quality for $38. You will have to care for the edge more often than one of those $118 knives, I'm not saying these knives dull quickly.. they dull less than average, 440c is a good blade steel. But the $118 knives that these knives are modeled after are made of a steel which will hold an edge a little longer.

What I'm saying is... :)

If you don't know how to maintain a blades edge, learn how to by watching videos online. Anyone reading this review obviously cares about quality. All knives dull, all dull knives are equally cruddy. So no mater what knife you buy, it would suit you well to learn how to maintain an edge.

These knives are well worth the price, I don't regret it and don't feel that I ever will. They will be in my prep bag and commonly used for years to come.

Outstanding knife set and a great value. I bought these as a replacement for a set of Paula Deen santoku knives. Those knives are well made but I didn't like the clearance between the handles and cutting board. I also didn't care for the fact that the bolster went fully down the heel of the blade. The Zhen knives are well made. The integrated handles provide a good grip, adequate clearance from the cutting board (no hitting your knuckles) and won't crack as plastic handles are prone to do over time. I like this combo as the 7 inch does the "heavy lifting" while the 5.5 vegetable knife with it's angled blade is excellent for dicing. I'm not sure you would be able to do better for the money.

Victorinox Cutlery PerformanceShield Cut Resistant Glove, LargeIn my years as a professional chef, I was accustomed to use a safety glove of mesh steel so you can imagine that I was a bit dubious about a fabric alternative. However, after a number of sessions with a mandolin, I can assure you that it provides ample protection. It is light in weight, easily cleaned, and comfortable. It is, however, a bit on the small side so that I have to wrestle my hand into and out of it. My hands may be a bit larger than most but are by no means huge. So if you have big paws, be prepared to feel that you are putting on a girdle.

In short, a quality product that can save you nicks and cuts while improving your speed with a knife or mandolin.

I now have two of these gloves so I can have one to use when the other is in the wash. Before this glove I would cut myself almost every time I used my Mandolin cutter. Even though thy provide a pusher to protect you fingers it does not work well and you end up using you hand. Heck I have cut myself cleaning the darn thing. LOL. I also use it when cutting meat especially when deboning or filleting fish. Unlike the other metal glove I had it does not appear to dull the blade and its a lot easier to clean and does not get hot and sweaty inside. If you have a Mandolin and want to keep your fingertips I'd get at least one of these.

I use my glove whenever I use my mandolin slicer. In the course of using the glove I have slipped and had my fingers impact the sharp blade with no adverse effects to me or the glove. I really can't imagine using the slicer without it. It seems to me that the gloves will protect from most any slicing cut but it won't provide complete protection from a sharp knife tip punctures since the material is relatively thin.

If you use a mandoline to slice vegetables and such, this is a must. I'm still careful when using the mandoline, but the glove protects my fingers beautifully from getting cut.

American Metalcraft PPK17 Stainless Steel Pizza Knife with POM Handle, 18-InchThis pizza knife is big, sharp and easy to handle. It works great with both small and large cut pizzas. It looks intimidating but really handles nice. It is also impressive when you are cutting pizza for show. I have a pizza catering business and this pizza knife offers a different way to cut pizzas rather than using the roller type pizza cutter. Most of my clients love watching the whole process of making, baking and cutting the pizza. It is bulky so you may have to find a place to store it.

This knife is a great alternative to those wheels that push the toppings all around. There's no reason to go into pizza cutting details, so I'll just mention some unexpected things. (1) This knife is VERY big, as it needs to be to do it's job, but good luck finding a place in the kitchen to store it. I wedge mine into the side of a cabinet. (2) My cutting board has a raised edge, and the knife contacts the edge, stopping it from coming down far enough to cut through the crust adjacent to that edge of the cutting board. (3) The little handle on top of the blade is just that, little. It works, but I would prefer a bigger little handle. Overall, I like it because it cuts the pizza without mangling it.
