This is a very impressive set. Not only is this set 18/10 (which is becoming harder and harder to find), but the pieces have a significant weight to them. The design is simple, yet elegant. We are getting rid of our plastic cutting boards over concerns about bacteria. I really like this very hard, recycled cardboard and that it has the qualities of wood but can be put in the dishwasher. However, it needs to be thicker and more sturdy because it warped just enough after one wash in the dishwasher that it spins like a top on the counter. Which isn't safe when handling a knife. And really for the high prices of these cutting boards I expected something more substantial.This is my second Epicurean cutting board. My first was a larger size, a gift from my son, for my home kitchen. I loved it, so I purchased this smaller size which was perfect for my small camper kitchen counter. They are lightweight,smooth, easy to work on, dry quickly when washed, and can easily go through the dishwasher. They do come up with knife gouges, which is why I rated it with 4stars, but they don't effect the use in any way. The fact that they can be run through the dishwasher takes care of any problems with bacteria but I believe the boards are anti-bacterial. I bought my first cutting board from Epicurean on Food Network, when I went back to buy another one they no longer carried it. I'm happy that I could get it thru Amazon.I've had the heavy plastic type boards with the bumps on the bottom to keep from moving, they warp and then they move all over the place.
I have never had these boards move when I'm cutting raw veggies, fruit or raw or cooked meats.
I love the fact they can go in the dishwasher and they never warp.

I love this corkscrew because it's small enough to carry in my pocket. I keep a spare in my car and almost always have one in my pocket when I am at social events.The spiral has a sufficiently coarse pitch to quickly grab a cork and fully screw down in two and a half to three turns. The small form factor does not provide optimum leverage for removing corks, but a little adroit jiggling usually overcomes that problem. Besides, this is more of a portable convenience than a bar accessory.
I found the knife to be sufficient for slitting foil, but I recommend confining it to that use because heavier tasks could loosen it in the handle. Not a problem in my opinion, but I have observed folks who have attempted to use the blade as a small general purpose knife.
While I love the size, I also love the stainless steel finish. It's easy to keep clean and sanitary and it gives the corkscrew a professional, no-nonsense look. In that respect the aesthetics follow form because this is a no-nonsense tool that does one thing very well uncork wines with no pretentious adornment or inflated price.I will never have to worry about subpar corkscrews again. This replaced an old cheapie leftover from times begone. I'll be buying several more to have around.

I own a set of Henckels knives that are several years old. They are used every day and despite regular honing they were becoming dull. Keeping knives razor sharp is a skill that requires some practice and the right kind of sharpener, and so I was skeptical that one of these quick sharpeners would do a good job at sharpening them, but I decided to give it a try. Does the sharpener make dull knives sharper? It certainly does, in just a few minutes. Does it make them sharp enough for routine use? I would say yes; I am not a professional chef, but I find that I am much happier with the performance of my knives after sharpening. Does it return them to their factory degree of razor sharpness? Unfortunatley, no. I think there is no question that my knives were sharper out of the box than I can achieve with this hand sharpener. But that does not mean that this was a bad purchase. It has restored my knives from being a bit dull to being perfectly adequate for the use they get in my kitchen.
If you want to achieve like-brand-new razor sharpness, this sharpener will not do that for you. If you want to bring your dull knives back to a degree of sharpness that will be adequate for 99% of home cooks, this would be a good item to have.I am the proud owner of 25 Henckels knives, largely due to a consolidation of two households. I was never able to get a truly sharp edge on these knives, regardless of the sharpeners used and I tried many different gizmos using different sharpening techniques. The latest was the motorized "Chef's Choice" using diamond encrusted wheels and magnetized knife guides for the proper sharpening angle. Doing 25 knives took about two hours at least and the result was usually unremarkable. Actually, the knives remained remarkably dull regardless of the effort expended with this noisy gadget. And then I stumbled across the Twin Sharp Duo Knife Sharpener. Somewhat encouraged by the largely positive customer feedback, I bought one and have never looked back. The process is silent, it takes less than one third of the time compared with the "Chef's Choice" and the results are remarkable. The knives slice through the edge of a sheet of paper with no difficulty, tomato skin is no longer a challenge and carving a side of beef or a turkey is a joy. Pulling the knives through the sharpening ports of the Sharpener at first seems to yield nothing, but after the third or fourth pass the steel or ceramic plates engage the knife and impart an amazing edge. Maybe I am over-reacting because all my previous efforts with other sharpeners were overly time consuming and did not yield good results. This one, however, is different. It actually works! Some have said that the gadget does not impart the same edge as a professional sharpening would and that may be true. However, I don't intend to shave with my knives and for demanding kitchen work they are about as sharp as one would need. I think Henckels has done it this time. This is a great sharpener!

This was a gift for my wife who is going to Culinary School and uses Henckel Four Star knives. The two step sharpener works great and is very easy to use. A few strokes in slot 1, then about the same amount of strokes in slot II and the knife is new sharp again. While I have a great set of Henckels for home use, I bought this more to use on my work knives as a bartender. At work we have cheap generic knives that are highly abused.It took some time with the steel wheels to clean up the edge on the cheap knives, much more than "5 passes", but once I got the edge down and nicks out, the ceramics gave them terrific edge. Almost a month later the edges are holding up great despite heavy abuse and constant runs through the dishwasher (dishwashers take the edge off of knives hand wash), since I have no control over the abuse my coworkers dish out.
I am really looking forward to using these to clean up my personal knives out home, as soon as I get them out of storage.

I have a whole set of these blades, so I'm breaking down my review to two parts: Review of the Shun Classic Blades, and the portion as it pertains to this knife in particular.I actually have this knife in the scalloped version. Although it looks kind of cool, I don't know if it really offers any additional advantage. I would have bought this straight version instead, except, I bought my knives as a set and the scalloped version came in my set.
The 6-1/2 inch knife is a utilitarian knife with many uses. It's definitely one of the steady work horse knives that you'll be reaching for all the time. It's a little on the small side, but perfectly in the middle between the real work horse (an 8" blade) and the smaller utility or paring knife.
Shun knives are beautiful creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slippery when wet providing a very secure hold. The steel is of utmost quality and sharpness. Do not put this blade into any old electric knife sharpener! Electric knife sharpeners are made to put one angle on any blade. These blades come with a 16 degree angle and you don't want to be changing that angle. There are electric knife sharpeners that can sharpen these knives, but you'll have to do some research and find out which ones can be a fit with these knives. I prefer to hone with a sharpening steel and manually sharpen with a stone if necessary (and I don't see it being necessary to touch it to a stone any time soon). The blade is sharp straight off the factory and as Alton Brown says it's the sharpest straight out of the factory edge as he's ever seen.
These knives are more expensive than most, but I think it's definitely worth it. To have the sharpest, most beautiful knife around it's no contest. If you are on a budget, build your collection slowly. It's been said that there are only 3 knives that are the absolute basics for any kitchen: A 8" Chef's Knife, a Paring Knife, and a Long Serrated blade for cutting bread and larger items. I would add a thin utility knife and a boning knife to that list next. Then I would add those "in-between" sizes as I get more money flow in. =)
If you plan on spending any time in the kitchen, good kitchen knives are a definite must. Preparation is the bulk of cooking and when you have good knives, it cuts down on the danger of cutting yourself, it adds pleasure to the work, and it cuts down on prep time. Knives are also a very personal choice and it's best to at least go to a store and try it out for yourself first. Shun Knives are designed by the Japanese, so remember it's designed for small hands. This makes it fit most women's hands perfectly, but I've heard of guys with larger hands not like it so much and going back to the German knives. So definitely try it out. It's a personal thing, it needs to fit you.
Why spend so much money on a knife? Well, if you spend a lot of time in the kitchen, and you almost always have to bust out a knife to prep a meal from scratch why not use the best? Why spend that time with items that you love and brings you pleasure to use? Many times, it's the small things that brings us the most pleasure in life, and I consider my Shun knives as one of those things. Having something so beautiful and yet so sharp and perfect it makes my time cooking just that much more enjoyable.
Another good thing to know is that although the Shun Knives are usually offered for right-handers, you can get these knives for left-handers. You just need to find the guys who stock and sell those ones as they are less known, and less common.I bought this knife because my hero, Alton Brown recommended them, and as an author who has made a special study of kitchen equipment, I put a bit more weight on it than if the recommendation came from anyone else. I am not disappointed. This knife is sharp beyond imagination. I have an extensive collection of high end German knives, including Santokus and chef's knives, and straight from the package, none of them even come close to this beauty for sharpness. I swear it can cut through relatively robust materials such as raw onions, potatoes, and mangos as if there was nothing there. Shaving the flesh from the mango seed always seems to be something of a struggle with mere mortal knives. Doing this task with this beauty is a dream.
I will not plug the Santoku design, as one's choice between Santoku and French chef's knife for most kitchen tasks may really be a matter of taste and familiarity. Frankly, if it were not for the insanely sharp blade on this knife, I would prefer a chef's knife for many tasks, especially for those veggies where the rocking motion of the French design comes into play.
I will also not wax lyrical about the scalloping, as I really see little advantage to it. I have an unscalloped German Santoku which comes very close in sharpness, and it is the quality of the edge, not the scalloping which makes the difference.
If you want effortless prep work, get this knife!

Alright. First read all the other reviews and see what they think. Chances are, they're right.I've been looking for a knife like this all my life.
I like the thinness of American knives like Chicago Cutlery (the original Walnut, not the cheap ones they sell now), but am envious of the heft of the German knives (I had a full set of Henckels Professionals).
The problem? The thin knives are too light, the heavy ones are too thick.
Now, we have the best of both worlds with Shun.
Wait, I know what you're saying. They're too expensive. No. Listen: if you pick and choose, you can get a lifetime of cutlery pleasure out of just a few samples.
First, buy the 7-inch Santoku. You can get the Granton edge (the scalloped thingies) if you want, but it will just mess up the beauty of the Damascus steel finish. This is your workhorse; a little hotrod that will lightly and competently saw through most of your daily chores.
Then, you need a little parer--the 3-1/2 inch or 4 inch will do nicely.
Big, small.
But, we need bigger still, so get a ten-inch chef's. You'll like this knife. Owing to it's fairly small profile (height), it does double duty as a slicer. Chop up heads of cabbage and slice a turkey or ham, your choice.
Get one of the six-inch slicers (utility or tomato) and you're done.
That's all the expensive cutlery you will ever need.
Anything else: serrated, bread slicers, or other novelty knives, just by cheap stuff.
Now, you need accessories. Get the Shun sharpening steel for sure. It's got a cool magnetic angle on the hilt that supposedly gives you the correct angle for sharpening. You can do it the wussy way--blade down--or pick it up like I do and steel toward yourself in a grand, flourishing manner.
We're not done yet.
You've got a lifetime investment here (You think I'm kidding? Any time you want, send your knife to warranty service and they'll either fix it or send you a brand new one, and they'll always sharpen it. Don't tell them I said so, but that's a pretty sweet way to keep your knives sharpened. I don't think I'd trust any local shop to touch these blades).
But, let's talk wood.
Don't even think about slamming these things down on just any crappy surface. Use a poly board for yucky meat, but you must have a good end grain board for chopping. One word: Boos. Their best (and trust me, I've researched this) is a 12X18 reversible hard maple. Don't be put off by the flatness of this. What I did was buy some little stick-on nylon bumpers and put them on the bottom to prevent sliding and water damage underneath. After, say, ten years, flip it over for a brand new board. If you've got a bigger kitchen, I'm envious, and I recommend the Totally Bamboo 22X16.5 board. It's got feet on it and, hey, it's like a renewable resource to boot.
You know what you'll get for your trouble? The most beautiful ringing sound you've ever heard each and every time you put edge to board. I'm not kidding...it's melodic. And, it protects your knives.
Whichever one you pick, get some Boos Mystery Oil. I don't know what's in it (hey, it's a mystery) but it will keep your rock maple or bamboo boards seasoned and like new for years. Of course, you can use regular mineral oil or some other cooking-safe wood protectant, but that's like, I don't know, just too weird. Not to mention not product-specific.
Finally, one small caveat.
While these Pakkawood handles are truly an exquisite thing (and, despite what they say, NEVER put them in the dishwasher), they have one drawback: they're slippery. There's virtually no ergonomics evident from the hilt to the butt, and, while sleek and sexy-looking--and very comfortable in your hand--they don't provide much traction. On more than one occasion, I've found one of the larger knives sliding right out of my hand. It was frightening to think what devastation these sharp blades could have done to my bare foot as it hit the deck. Maybe I'm just clumsy (or drunk), but as any cook knows, food prep requires a lot of water, and your hands get dried and slick. Be careful. And, I don't know, maybe wear shoes.
But, if you can keep them in your hands (and really, I know you can), you will never for one minute in the rest of your life regret this purchase.

I've been using a Chef's knife (7") for many years, when I went looking for a new blade, I settled on Shun, and I thought I would get one. But when I hefted it, I didn't like it compared to the Santoku. (I've heard it referred to as the Japanese Chef's knife).So I got the Santoku instead, and I have not regretted it. I like it much better than the traditional (French?) Chef's knife, even for Western-style cooking.
With regards to the Shun Classic....this is a fabulous knife. I've used quite a few Chef's knives, including my friends' Wusthoff and Henkel, and I was not nearly as impressed with those as I was when I first used the Shun Santoku.
This is a very, very sharp edge that is holding up very well.
The few times I prefer not to use the Shun Chinese Chef knife (like for "lighter" duty), I pick up the Santoku.
You may not believe it, but it's so sharp, it doesn't stick to things, that I can chop _much_ faster, with more consistency, almost like the "pros" on TV.
The handle is shaped nicely. The wood is not slippery even when wet, the only drawback...you may not like the shape if you're left-handed, as it is assymetrical.
You gotta try this knife...it is really, really good!

Absolutely the best vegetable knife ever, I do have small hands, and while these are heavy, they are ergonomic and so comfortable to hold. The blade has stayed sharp with months of heavy duty vegetable cutting use and the dishwasher too... I've spent a lot more on german and french knives whose ergonomics don't work for me, and those knives did not hold their edge as long, I just freshen with a sharpening steel every few days so far.The other reviewer was absolutely right, I am going to forgo a little LCD for my kitchen and will indulge in more of these Shun classic knives instead. Just gave away two knife blocks and their contents ! I can slice 4 lbs of beets to transclucent slices without my hands feeling fatigued -this knife has made cooking a so much fun, I don't groan when I look at that huge pile of veg I picked up at the farm market since I know it will be a breeze to slice thro them. I don't feel compelled to turn to the mandoline as often. I can see how I would want to own and treasure these for a lifetime. Makes me feel silly in the kitchen -can imagine myself in the kitchen stadium iron chefing away almost. I plan on getting the Alton angle set tho, can see how the angle would make this fabulous knife even better! Plus I bought this on Alton Brown's recommendation.

Marvelous knife!!! Well worth the money. Extremely sharp and well balanced. If you have a larger hand this will fit your hand well. I had this in a different style handle, the classic grip and exchanged it for this handle style.I cannot say enough about this knife! I use it far more than my classic chef's knife. It takes just a few minutes of getting used to how it handles. It can be 'rocked' like a chef's knife, just not quite the same way. Once you get used to this you'll love it. It cuts very cleanly and smoothly. Treat it properly and it will last a lifetime.

My husband bought me this knife for Christmas a few years ago. It immediately became my favorite knife. It's the first knife I reach for every time. The blade is heavy and sharp and has held up well to at least five professional sharpenings in the interim.(Note to other knife-users. Spend the five bucks and get your knives sharpened regularly. If you're on here looking for a new $100+ knife, it may just be that your current good quality knife needs a $5 sharpening.)
So, it's my favorite knife. I love the ergonomic shape of the handle. Do not ignore this feature, it makes a world of difference to cut or chop with a knife that feels comfortable in your hand.
Unfortunately, as other reviewers have pointed out, the handle is too fragile. My knife has never, ever, not even once been in the dishwasher. I am obsessive about taking good care of my knives. But despite my loving care and even conditioning the wood in the handle, it has cracked in several places. It's still usable, but I will clearly have to replace this knife soon.
For as much as I love this knife, maybe it's worth it to spend ~$150 every few years for a new one. But it feels wasteful and I'm sure I could do better. Too bad, this could have been the perfect knife.

I have been involved with the restaurant industry for some thirty years now as a Chef, management, designer, contractor etc... So I know good from bad when it comes to restaurant products.
About four years ago I decided to purchase a new set of knives. Henckel being one of my top choices, based on previous experience and ownership.
I settled on the Twin Cuisine because I liked the larger handle and overall weight of the knives and the look. Full length tang, no rivets and a more robust design of the handle. I purchased from various vendors on Amazon a compliment of around nine knives of various lengths and cutting styles. I also got two sets of the Twin Cuisine Steak Knives.
Speaking for the knife, (cutting portion) they are a great set of knives. They keep there edge, (as long as you hone them) and I think I have only had to sharpen them a few times over the years.
Now for the handles. Every one of these knives the handles are cracked, not cracking.... cracked. From my 10" chef knife to the steak knives. There is definitely a flaw in the plastic used to mold these handles. I have found references on other forums about this problem with the twin cuisine so buyer-be-ware.
Although they are warrantied for life the hassle is you have to send them in one at a time to Henckel, which frankly I have not taken the time to do, and it can take them up to eight weeks to deal with the warranty.

I was skeptical of purchasing this since there weren't any reviews yet, but I'm glad I did. I own other Henckels kitchen gadgets and have been satisfied with them.This grater is sturdy and comes with an additional grate grid (one is for a fine shred and one is for a medium, coarser shred) that can be popped off the handle base. I worried that because the grid can be popped off the handle, that it might not be sturdy. But it is, and I had no reason to worry. It grates a hard block of parmesan like a dream, and washes up easily in the dishwasher.
The only drawback is that the weight of the handle is almost too heavy. When rested across the top of a smaller bowl, the weight of the handle will tip the bowl over. But I wouldn't let that stop me from purchasing this again.Very nice looking grater with two attachments, does what it's intended to do. Item arrived on time with no complaints.

This item was actually a gift for my mother but I have had the opportunity to use it a couple of times, and it is awesome!!Now, I know what some of you are thinking, "How hard is it to slice an avocado,really?" I know! I thought the same thing before I used this tool. This is a great little tool by Chef'n, that perfectly slices nine thin uniform slices of avocado for you and also cuts it away from the skin as it does so!! How cool is that? Definitely worth a buy if you value thin uniform slices that make a nice presentation or if you are slicing a bunch of avocado for salads and burgers all summer long... zip, zip, zip, All done!!
The only thing I would recommend is, contrary to the instructions, start slicing your avocados from the narrower/smaller end. The handle is quite stiff so this makes it easier on you and it lets the tool do all the work. So basically, you squeeze the handle, insert into the avocado and then drag it through, allowing the handle to open up as you go along. Voila!! Perfect slices. Really nice tool from Chef'n!! I also highly recommend their VeggiChop manual food processor, which I did buy for myself, and is so great to be able to process small amounts without all the noise of an electric.This is the worst kitchen gadget I have ever used. I thought this would be really cool, but I was wrong. I used a wire version once and liked it, and I felt like a total retard for wasting my money on this plastic POS. This will mash your avocados instead of slice them, then you'll work twice as hard trying to clean the darned thing. Just use a knife, or if you must have a gadget try the wire one. I thought about giving this away or putting it in the box destined for charity, then decided to throw it in the garbage instead in order to save somebody else from having a frustrating time using it.

I used an avocado smaller than the tool, so I had to uncomfortably squeeze the tool until it'd fit. Then it kind of smooshed my avocado into slices that were not attractive, while leaving a layer of unused avocado in the shell.It made me realize that it's not *that* hard to slice an avocado with a paring knife... oh well.

I absolutely loved this gadget as soon as I got it. You're not going to get it right on your first avocado, but once you figure it out, you'll have perfect slices every time.You must squeeze it to the size of your avocado, then scoop really deep to get all the flesh.
I use this even when I want to mash my avocado, because it works better than a spoon to get everything out. If I do miss some, I just go back and scoop some more.
I took away a star because if you don't wash it immediately, it's very hard to clean and it just gets more and more nasty over time. Mine is badly discolored now. (I eat a lot of avocados.) This hasn't affected the performance, though.

I purchased this tool because my autistic daughter likes to eat her apples in their complete round form, but hates biting into the seeds. She's forever asking me to cut out the center without cutting the apple in half. This handy tool allows me to just punch out the middle and hand it back to her. But I don't want to sacrifice the counter space, I don't have the drawer space, and I don't want my knives hanging from the wall. So these are perfect for me and probably for you too if you have a small kitchen.

My spouse and I have been taking cooking classes and kitted ourselves out. Blade sheaths are a must have unless you have a heavy-duty leather knife bag, and even then you'll save yourself from cuts by having these.The magnetic sheaths excel for two uses: odd shaped or taller bladed (like a clever) and knives stored in drawers. Being magnetic they fit more securely so blade thickness and size doesn't need to bet as closely matched and in a drawer the extra grip adds peace of mind.
We purchased a few different types of sheaths being first timers and are very happy we included some of these magnetic sheaths. The typical slip on sheaths work great but getting the correct size is a must. In our knife bags we use the slip ons regularly along side the magnetic, but bias to the magnetic for drawer stored knives.
We've had these now for a couple years and they show no signs of wear or decreased magnetic cling.Knives can be kept super sharp, yet safely kept in a drawer. Trim to fit. Excellently made! This is the best solution!

By far the best Bread knife I have ever used. Its weight and design lets it slice effortlessly through bread (and tomatoes if you are too lazy to get another knife out of the block). We bought this knife as part of a set, and out of the bunch it is my favorite knife. If you are having trouble deciding between the Classic and the Grand Prix, I prefer the Classic.Although the Grand Prix is slightly more comfortable, I prefer the construction of the Classic. If you inspect the knives, you will see that the Wusthof Classic has a full metal tang with 3 rivets. The Grand Prix, although having the same blade, has a smaller, cylindrical tang that runs the entire handle of the knive. This tang is secured by a single large rivet at the end of the handle. Although I'm sure the Grand Prix is well built, I bought these knives for a lifetime of use and heartier construction of the Classics just appealed to me more.One of my young ones received this as a gift and when it arrived at work we all just HAD to give it a try. We bake all of our breads from scratch and our crusty loaves surrendered meekly to this blade in two strokes no matter which recipe we attacked...it even sliced our house "Wonder Bread" sandwich loaves cleanly! This 9 inch is sooo much more versatile and heftier than the 8 inch ...size really does matter.
I'm biased against all Wusthof "Classic" knives...I think that they're too light weight and small scaled (the grip is too narrow for me) but...

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference. The balance and grip of these knives are as close to perfect as I have found. For those wondering what benefits a higher priced knife provides, one benefit is that the blade (or tang) is one piece all the way through the handle. This makes the blade much stronger, and less likely to snap.
This particular model, the bread knife, is a great knife. Many people think tomatoes are the hardest food items to clearly cut. I think bread is much more difficult; but this knife makes the task seem easy.
I highly recommend the Wusthof 9" bread knife.I bought this knife as a replacement for a cheap one that we used for years but was finally too dull to keep. After using it, I can't figure out why I didn't buy this a long time ago. It's fantastic. The handle grip is terrific, you get great leverage and the blade is wicked sharp--it's almost scary. I own both Henckels and Wusthof, and to me the Wusthof is definitely the superior blade. I highly recommend this knife.

I did not expect to get a quality for $4. I consider my $4 as a donation to keep USPS in business. 3 of them broke first day my wife tried to cut an apple. Don't understand the word professional in the description. They did not say what profession they meant. They are sharp and that makes them even more dangerous when the handles brake away. This is the best knife sharpener I have ever used to put a new edge on a dull blade with out chewing up the blade and putting scratches all over an expensive forged knife(like a Chef's Choice knife sharpener does and doesn't produce the result like this one). And is it so easy to use! Only about four passes through and you have a new edge on a dull knife. I really can't recommend this product enough. Honing steel only works for so long and professional knife stores often get confused when you ask them about working on a 16 deg angle edge.So for those reasons getting a sharpener that could do the job was a must. I've used it on my knives (also Shun) and the results were everything I could have asked for.
I did have some issues running the utility knife through Shun Classic 3-1/2-Inch Paring Knife, mostly because of the short blade. But when using my santoku Shun Classic 7-Inch Santoku Knife it worked like a charm and the results on both were fantastic.
As for the unit itself, it is quite solid because of the motor, and includes a compartment for keeping the power cord tucked neatly away. I did have some trouble with the power button. It had to be pressed farther than I would have expected and the detent felt off to me.
The grinding wheels seem to be ceramic and the grinding assembly is easily removed. I would assume that would be for either cleaning or if the grinding wheels need to be replaced.
It is a bit on the expensive side, but I'm sure that it will more than pay for itself in sharp knives.

I have only used this on shun classic knives. While it does sharpen a dull knife, it does not do nearly as good of a job as having your knives professionally sharpened. I also fear it takes off much more metal than is necessary to achieve a new edge. Buy this only if you are exceedingly lazy about getting your knives sharpened and it won't happen any other way. Otherwise get your knives sharpened professionally. Shun will sharpen them for free if you don't mind shipping them to Japan (rolls eyes). I get mine done at Sur La Table; they charge an arm and a leg, but they specialize in Shun knives and do a great job.I'm a Shun fan. Love their knives, but their knife sharpener isn't up to this company's usual quality standards. It's useless on short blades like the paring knife and can easily put nicks in the blade -regardless of length. Not what you want for these instruments. And if you're expecting "factory sharp", forget it.I was looking for a sharpener specifically for Japanese knives (I have 5 Shun knives). I could not believe how horrible this sharpener is. I really thought it might have damaged my knives. It is unbelievably course and it chatters very badly while sharpening. Do not even consider this product. The only bad thing is that the handle was for a righty when it says it a chef knife. Chef knives are usually 50-50. it didn't say anything about that part. Im a lefty, but actually it doesn't bother me at all.
