KitchenAid Triple Riveted 16-Piece Set in Silverite BlockI have had these knives for over a year now. Not one speck of rust. These knives a great. You never realize how bad your knives are until you use a good set of knives. I had a set of never-need-sharpening knives that I have had for about ten years. I always thought they were fine. As I lost pieces of the set due to breakage over the years I started looking for a new set. I decided on these. What a difference! They cut so well. It makes cooking much more enjoyable. I used to cut carrots and they'd go flying off the cutting board. I realize now it was because I wasn't using a sharp knife and they were more or less being "snapped" through than sliced through. These knives cut through the carrots with such ease, and the carrots stay right there on the cutting board instead of flying off. Every knife I have used out of this block has been sturdy, sharp, and rust-free. And it is nice to have the sharpener built into the block. I was kind of leery about the sharpener, thinking it may not be as nice as the sharpening rods in other knife sets; but the sharpener works quite well. I'm very pleased with this set.

This is a fairly good set of home chef knives. I have used high-end forged chefs knives, this set is not that. I have used 15 year old economy serrated knives, this set is not that either. These knives are a good mid-range stainless home chefs set. In fact it was a great surprise that this set is much closer to quality basic forged knives than economy stamped knives while being priced far closer to the latter.

An issue I have, not just with this set but almost all all-in-one home sets, is that it includes "steak knives" as part of its total. I would prefer to buy separate sets that would allow my cooking knives and my table knives to be separate and have more cooking knives included. That said, this set has a good range of the most needed cooking knives and the heft and balance of the knives are pretty good. The handles appear to be phenolic or similar material (box didn't say). They could have been smoothed and polished better but that isn't anything a years' worth of use won't hide.

The "silverite" block is painted wood and there are grippy rubber feet on the bottom. It is at a nice low angle which let you pull the knives to you as they come out rather than up into your kitchen counters like some more upright designs. Unfortunately it is clearly used for multiple knife sets. Because of this a few of the knife slots are overlong for the knives they hold in this set allowing those knives to shift a bit. It doesn't affect anything other than to make the handles appear misaligned if the block gets shaken. If you're OCD about that and a little crafty this can be "corrected" with some filler in those slots.

The sharpener actually does a nice job. I was skeptical, never having used that style sharpener, but it will put the edge back on a knife with a few strokes. I would caution that if you have a knife with a nick in it to take it out with a steel first to avoid putting a nick in the sharpening stones (ceramic?).

Over all I am quite pleased with the set and with reasonable expectations for this sized set in this price range I think others will too.

I had been waffling over buying a new set of knives for a long time. I didn't want to spend a lot of money, but I wanted a nice set that had a sharpener. This was exactly what I was looking for.

The knives themselves have good balance and the handle material feels durable. Since I'm a home cook I don't really need a fancy, expensive set, so this will do me quite nicely.

Swissmar Cheese Plane, Hard Cheese, Stainless SteelContrary to the previous review on this item, this is an excellent cheese plane that I would recommend to anyone that likes hard cheese, as I do. In fact, its excellent for the specific fact that it's so hard and rigid. Most cheese planes (basically, every other one I've come across) is cheap and floppy when you want to cut really hard cheese like aged Gouda or Parmesan, the plane practically falls apart before the cheese does. Not this one, which is as sturdy as it gets. It is, without question, the most useful cheese implement that I have in my collection.

It's not perfect; I don't care for the handle (or in general, Swissmar's handles in general). They're a bit lightweight and unimpressive; not molded at all, feel a bit flimsy in the hard. Compare these to the J.A. Henckels cheese knives, for example, which feel a lot better in the hand and more impressive to look at (hey, if you're entertaining people, that's important!). Oh, and its true that they're made in China. Pretty disappointing for a company named "Swissmar".

Despite imperfections, though, I wouldn't be without it.

I have been looking for a good cheese plane, and this one isn't it. It works fine for rubbery semi-soft cheeses like swiss, but not for harder cheese like cheddar, which tend to crrumble before I can finish a slice. The problem is that the plane it too thick and rigid. It should be thin and flexible.

Also, don't let the name fool you. This utensil is made in China, a country which consumes very little cheese.

Excellante 1/2 by 14-Inch Polyethylene Round Cutting BoardI had, for whatever reason, this idea that I "needed" an 18 inch cutting board and I wanted round and not wood since I abuse everything I have horribly. I never found one so I then ordered this unit in the 1 1/2 inch thickness. Sitting here now looking at it, it is more than big enough and the round size will get down in the sink much better than a large square or rectangle, the main reason I wanted a round board (well, pizza cutting and serving too maybe).

I've split two other wooden boards, a bamboo and a hardwood. I can tell you now, any wood that is glued together can split if you don't care for it and sometimes even if you do. I will never again have to worry over that. The packaging states that this board is the correct hardness to not dull your knives as well. That statement remains to be tested but the size and heft are perfect for a solid cutting surface that won't slide around with a knife cut like some thin little wooden unit.

I like the round shape and it is the size I have been looking for.

I have the whole set of Wusthof Classic knives and thought this knife would be good for cutting very hard cheeses like parmesan, as it said it would do. Wrong ! Unlike the other knives, this one does not seem "sharp" and when I use it I am afraid it is going to slip. Would not recommend this one.

LamsonSharp Pro 33100 7' Meat CleaverI was expecting a heftier cleaver. The description said it was 4 pounds and the best cleaver I had used, my dad's 60 year old cleaver, was probably 6 or 7 pounds. So, when I got this and it feels like it's slightly over 2.5 pounds... well I almost called and complained. Then I felt the blade. The blade feels as sharp as some chef's knives I've used. Additionally, the handle and the balance are fabulous. I made short work of some redfish bones for stock first. Then, I stepped up and chopped a chicken with ease. Then, the real test: quick chopping pork brisket bones (i.e. rib tips). Before I started chopping, I did run the cleaver through my manual sharpener 8 10 strokes. I cut through the bones quickly and made 1/8 slices of the bones for rib tips without this cleaver ever not chopping cleanly through. This thing is what the old time cleavers that weigh 6 or 7 lbs but at a 1/3 of that weight with perfect balance. I'd buy it again and again. The only downside is I wish it came in a black handle to match my other cutlery.

The handle is rough wood--not at all smooth to touch. It feels like I need to take some sandpaper to it to smooth it out. But the knife cuts through butternut squash and chicken bones effortlessly.

I received the cleaver tonight, it is lighter than I expected at 13.75 ounces, being made from stamped steel rather than forged. Its crudely sharpened, but good enough to do the job.

The reason I returned it is that it did not give the dimensions in the listing, and at 4-3/8 wide, it will not fit the 4 inch slot in my knife rack. Many of the listings do not give a size or accurate weight, which makes it hard to shop for what I want.

The Good ... Made in the USA. I'd keep it for that alone if it would fit my rack.

The knife seems to be well made and the weight is good. The handle is of a material that makes it easy to hold. That being said it has a big basic problem. It won't cut in a strait line. Because of the fact it is only ground on one side of the blade or because of the way it's forged/hammered it rolls to the right (clockwise) when you cut firm thick items. I've tried it on grapefruit a dozen times and it cuts fast and clean but you have to force it by applying a left or (anti/counter clockwise) pressure to make it cut the same thickness at the top of the slice as the bottom. If you don't do this by the time you get to the bottom it will be half again as thick as the top. I find that to be a problem.

It works fine for bread and less dense items or smaller things. but something the size of a grapefruit or a roast and forget it. It looks like a 3 year old cut the stuff up.

It is so sharp that I got careless once when I was not wearing my kevlar glove and I cut myself. It cut so clean I didn't even know it until I saw a bunch of blood that didn't belong.

So pros: Good materials and very sharp.

cons: Won't cut strait.

Victorinox Cutlery PerformanceShield Cut Resistant Glove, Extra SmallMy wife is working an internship finishing her Culinary Arts degree and I bought these for her since she works with knifes/mandolins a lot and has a tendency to cut her hand/fingers a bit. So far, as long as she has been wearing the glove, she has not had any more cuts. It does a very good job at its intended purpose.

As for the sizing, it seems like these run in "guy" sizes. If you are a woman with a little smaller than normal hands, the extra small size is probably for you.

This is a great cut-resistant glove lightweight, flexible, and not bulky at all. I use it with my mandolines and will start using it for regular knife cutting and grating.

For those of you with small hands, it was the only one I could find in XS. Fits like a glove!

I will be getting several more.

My manager asked me to order some cut resistant gloves for the electronics lab I work in, as we sometimes handle sharp metal pieces. This was the only glove I could find that came in anything smaller than medium. I do wish it came in pairs instead of just one glove, but I understand how that would make sense for their normal usage model of using it in the kitchen. Because of this (and the higher price to begin with) my pair of gloves ended up costing 3x more than my male counterparts!

It would have been helpful to have a sizing chart before ordering, too. I have a hand circumference of 6 3/4" and usually buy women's small. I am very pleased with the fit and feel of the gloves, and since I just got a mandoline at home, I think I will buy one for personal use, as well!

This glove has prevented what would have been a few knicks, so that alone makes it worthwhile. But I don't go crazy with chopping abandon ... I'm still very careful when using sharp knives, but am less likely to get bloody from a slip. I have pretty small hands (size 4 ring or smaller) and definitely wouldn't be able to wear anything larger than an extra small.

Anyone who uses a mandolin or v-slicer should have this glove! Those tools are for cutting things up quickly, right? Well it slows you down to have to use the "safety" pusher, which also makes holes in your slices and the veggies can fall off, etc. Some folks are tempted to just use their hands, not this girl! But thanks to this glove I don't have to use that device anymore. I can work much faster, with less waste. Also, because it comes in a range of sizes from extra-large to extra-small it isn't cumbersome and you will actually *use* it. It isn't insulated, but it does offer a small amount of protection when cutting up slightly less-than-comfortable temperature food. I have a tiny, tiny kitchen, and I really needed to get my gigantic knife block off my counter. A friend told me about this product, and that it had an excellent price tag when compared to similar products, so I decided to give it a try.

A week into using the Knife Dock, and I can definitely say that it is exactly what I needed. I really love that you can slip the knives into the Knife Dock without fishing around for a correct slot. I can also arrange them in the order I prefer, so that the most used knifes are always within closest reach. The dock fit easily in my kitchen drawer, and helped me free up a huge chunk of counterspace.

The only drawback is that I really wish I had ordered the larger, deluxe model. After using the Knife Dock, I decided I liked having a little extra space around my favorite knives. Since it will accomodate various sizes, I would also love get my steak knives out of my cutlery drawer, keep them protected in the Knife Dock. So, unless you are only storing a small number of knives, I highly recommend ordering the larger model.

Overall, this is a good product and I'm very happy with it!

Messermeister 10" Chef's Edge-Guard

Messermeister 10' Chef's Edge-GuardI tried Messermeister, Blade Saver, and Wusthof.

Messermeister was of the worst quality -very hard plastic, unprocessed edges. Also it was the most difficult one to insert a knife into.

Wusthof is the best. The soft inner lining is gentle on the blade. It holds tight enough, but not too tight -it is easy to put it on/off a knife.

I have a 10 inch Victorinox Fibrox knife, the guard won't cover the entire blade, but I just chopped off a corner of the blade guard. I suggest that if your knife doesn't have a bolster that is perpendicular to the knife edge that you purchase a knife guard designed for your knife, or chop off a corner. I personally prefer these types of blade guards. If you do decide to cut a corner off use either strong scissors or some sort of saw.

I found this edge guard to be okay. It leaves about 1/4 inch of the blade exposed if the knife has a bolster (like every german knife), or the handle extends over the heel of the knife (like a victorinox chef's knife.) It slips off easily, but isn't so good for a house with kids.

I have a couple of these, but I wouldn't buy any more.

Shun Ken Onion 7-Inch Santoku KnifeThis is an amazing knife. It was given to us by someone who got it new, but promptly cut themselves badly with it. They no longer wanted it in their kitchen as they considered it too dangerous.

As one who owns both diamond hones and Japanese waterstones for sharpening our kitchen knives and my chisels, gouges, and planes, I thought I knew what a sharp stainless chef's knife was. (Most our stainless knives lose a good edge fairly quickly--not this one--there is a huge difference in "stainless".) This knife with it's 16 degree bevel is so much beyond the rest of our knives that there is almost no comparison. As my wife can cut herself with a sharp paring knife--she is a bit "klutzy"--I have lovingly forbidden her from using "my" knife. I do not want to come into the kitchen and find she has accidentally lost pieces of her slender fingers in the stir fry. This is no idle comment...this knife will cut through meat like you cannot believe. The edge is so fine that it ought not be used on bone. Also, it requires plastic or wood cutting boards. The previous owner was a bit careless with this knife and bumped it into something hard and put a tiny notch (almost invisible to the naked eye) in the blade. If you want a truly amazing chef's knife, this knife ought to be on the short list. However, if you are clumsy with blades or just pile them in a drawer, think again. Also, if just anyone might be grabbing it and using it--be careful!

I have used the highest quality American and German knives but I have never seen anything like these knives. Never before have I found the term "razor sharp" to be more true. These knives are simply astounding. It takes almost no weight at all to cut through veggies, the blade just slides down through. I cut up an onion that was at room temperature and I did not experience even the slightest sensation of a tear. I used the knife to cut a whole chicken into pieces and the blade just sliced through the joints of the bones. These knives are so sharp that you quite seriously need to clean them with the greatest care. My wife wiped a blade and actually cut her finger. I tell you that you will be simply amazed by these knives and will wonder why anyone would ever pay for German or Swiss steel when you can get these for the same price or less. I guess that shows the irrational power of brands over reason.

This knife is WONDERFUL. I have arthritis in my hands and while I have small hands, gripping a small handle is very uncomfortable, the handle on this knife is perfect. Cutting anything is like slicing through butter, the knife is very sharp and does all the work. While pricey, I have no regrets about buying this knife.

I got my Shun Ken Onion 7" Santoku DM0517 from Amazon's lightning deals, received the knife in 4 days, pretty fast delivery.

I have some faith in Japan made products. But I have to say I am a little disappointed while unpacking and examing this knife. Please note, I said unpacking, not the actual experience using the knife. I am sure you will find plenty of people saying how sharp the knife is, I am just sharing my point of views and things I see but not mentioned from other reviewers.

While unpacking this knife, I have noticed few small things, maybe they aren't big deals for most buyers, but It's always nice to know more, that's why I am writing this review and uploading photos to share with you.

1. I wasn't sure if the knife will come with the bamboo stand since the product feature and the picture didn't say much, but at the very end of product description it did mention about the bamboo stand is included. And I am happy to see the stand is right next to the knife when I opened the box, but interestingly, the bamboo stand is different from what's printed on the box. It actually looks like the same holder as DM0523 Shun DM0523 Ken Onion Hollow-Ground Santoku Knife With Arch Bamboo Stand, 7-Inch.

2. The bamboo stand has a narrow bar at the bottom to stop the tip of the knife touching the counter top. I think the stick is too narrow, it can be a little wider for more blade tip protection.

3. The blade and bolster are not created as one piece, I actually see a small gap between the bolster and the back of the blade heel, so there are possibility of germs and residues getting stuck in the gap.

4. The tang doesn't go all the way to the butt. And I can feel the sharp edge of rivets and tang when I run my fingers through the handle, it's not like they can scratch my fingers, but I was expecting a smoother touch.

5. One nice thing about the knife is both side of blade are hollow edged, why does this matter? well, as a lefty, using a knife with hollow edge on the right side of blade doesn't help slices from sticking to the blade.

I will update when I learn more about this knife. Hope these are useful.

Oneida Icarus 45-Piece Set, Service for 8I bought the Icarus set at Bed Bath and Beyond after falling in love with my mom's couple year old set. While I love the looks and especially the weight of the pieces, I'm extremely disappointed.

First thing I noticed out of the box was like some other reports, some of the handles were actually sharp on the back edges. Secondly, on several pieces, the curve between the fork and handle and spoon and handle is very rough almost as rough as the inner portion of the fork tines. I figured that I could live with it since I loved the set otherwise.

Less than a month of use later (including being washed promptly in the dishwasher with regular non citrus/no bleach Cascade) I noticed that not only were the inner fork tines rusting, but several of the knife blades were as well. Closer inspection revealed that nearly all of the pieces with rough surface (spoons, knives and forks) had rust on the rough spots and half of the knives had a spot of rust on the handle in the exactly same spot just underneath the place/date of manufacture stamp.

So why can a 3 week old set be rusting when a couple of years old set look brand new? I realized that beyond the fact that the factory in China that produced my set in June of 08 apparently didn't know what "quality control" meant, the set my mom had was different from mine and others that have had problems.

I asked my mom to see if her set had a date stamp it didn't, but WAS stamped 18/10 Oneida China. I'd assumed (you know what they say about that) that mine was 18/10 and couldn't remember even noting if the box said 18/10 or not, but my set has no 18/10 stamp on the pieces and according to the Oneida US site, the Icarus is now 18/0. Oneida UK still lists the 18/10 Icarus.

While the 18/0 may account for the rust, the other issues are just related to absolutely no quality control and corners being cut in manufacturing. I'm really disappointed in Oneida they used to be a decent brand.

Much has been said about the lack of quality control in this pattern. Complaints have ranged from rough edges to rust. Such complaints weren't limited to Amazon's Web site. To Oneida's credit, the complaints are even more extensive on their Web site. They also stop after February of 2010.

I purchased two, 8 service sets of Icarus from Bed, Bath, and Beyond. The complaints stress the cheap, Chinese manufacture, and the change from using the relatively more expensive 18-10 stainless to the cheaper 18-0. The two numbers refer to the percentage of other metals combined with steel. The first number refers to chromium, the second to nickel. People attribute the rust to the lack of nickel.

I have put my flatware through about 6 bouts in the dishwasher, using Finish Quantum tablets. There is no rust, anywhere. Properly made 18-0 shouldn't rust. I have been watching the fork tines especially like a hawk (and will keep on watching them). Written on the box and imprinted on the flatware itself is the country of origin: Vietnam, not China.

Update 16 December 2010: Flatware has been washed repeatedly with Finish Quantum and Cascade Complete tablets, and there is still no rust or discoloration.

The finish is a smooth polish, with no rough edges. No, it's not mirror smooth, but it's pretty good. The exception is the inside of the fork tines. They are merely ground smooth.

In short, it looks like Oneida had outsourcing trouble, and changed factories.

Here are some comments on the individual items:

Knives: These are a fairly standard size and weight, which makes them seem rather light compared to the forks and spoons. The serrations are more pronounced than any other set I saw. In other words, you could probably cut steak with these.

Large spoons: These are slightly wider than what they replaced, and much deeper. These are true soup spoons. They weigh more than double (99 grams) what they replaced (45 grams). These are thick, strong beasts that will not bend at all if you abuse them. Their ends may have trouble fitting small slots in a dishwasher's silverware basket.

Small spoons: These are a little narrower than what they replaced. They fit a large number of narrow containers. They may be narrow, but they are deep. They are also built solid. You can still scoop hard frozen ice cream with these.

Forks: Big, and massive, like the spoons. They have relatively short, thick tines. They, too, may have trouble fitting the smaller slots of the dishwasher silverware basket.

Salad forks: Petite versions of the dinner fork, but with even more shortened tines. They are still surprisingly heavy, and won't bend.

I like the simple lines and curves of this set, but you will never mistake this stuff for formal dinner ware. This is good quality, virtually indestructible, daily beater ware.

I purchased this flatware after an exhaustive search for new everyday stainless. Many of the reviews posted referred to the nice weight and simple styling of the design. All true. However, I should have paid more attention to the couple of reviews discussing rust spots. After the very first wash every grooved piece (forks and knives) were covered in ugly orange rust spots. These were washed in a two year old Fisher & Paykel dishwasher with powder detergent arranged as specified in the manufacturer's care instructions. I spent over an hour using stainless polish to try to remove the spots (it is impossible to remove them completely) and then rewashed only to have the exact same result. These went back pronto! It was a real disappointment from a brand like Oneida. It is clear that there was a defect in the manufacturing process.

My fiance and I had a hard time looking for flatware that we both liked. We wanted something simple, elegant, and classic. That's what we found with the Oneida Icarus pattern.

This pattern goes with everything. Given this is our first complete set of flatware, we wanted something that would go with everything. In the future, we can buy a set with more design or one that we want specifically for a table setting (holidays, etc.)

The flatware is a bit larger and heavier than most other sets; it doesn't feel cheap or bendable. This pattern is available at a number of retailers so I would suggest taking a trip to the store to hold, feel, and examine this flatware.

Dishwasher safe, though we've had some problems with spotting but that is probably due to the dishwasher we have. No tarnishing or other marks to speak of.

The set we received as a gift was not from Amazon. Ours included a five piece bonus serving set of two large serving spoons, one large slotted serving spoon, a large serving fork, and a sugar spoon. I do not believe this one contains the same it would be a good idea to contact Amazon or Macy's to find out.

Overall, I would definitely recommend this set based upon its quality and price. It's your own decision whether or not you like the pattern. :)

I am reviewing these because I was SHOCKED by the one-star reviews. I could see some 4-stars (I will address the rust issue) but there is some real vitriol here that I don't think is warranted.

I bought this set about 1.5 years ago. It is beautiful and washes wonderfully without rust spots. I should note that they will get rust spots (like all other stainless steel utensils and pots and pans and knives) if you use lemon detergent, use too much detergent, and/or pack the silver too tightly. I try to only pack 2-3 pieces per compartment and haven't gotten rust spots. I also like to use the "heated" drying cycle on the dishwasher and it seems to work. Also, don't wash them in a "heavy duty" cycle.

I love the design, it's modern, no hard edges (I agree with the other poster, she MUST have gotten fakes), and it's symmetrical (I'm a lefty, so "righty" (anything unsymmetrical) utensils are awkward). I've received compliments from multiple guests because they feel quite expensive (heavier utensils are a sign of quality--go to a diner if you want paperweight forks). The handles themselves are well-balanced and easy to use if you hold a fork properly. If they fall off of your plate, I suggest re-positioning them closer to the center of the plate.
