LamsonSharp Oyster Knife - WalnutOn my first day ever shucking some soon-to-be friends at the table next to us allowed me to use this. I didn't find it flimsy or of poor quality. Actually, I found it to be quite sturdy. The owners were seasoned oyster lovers and claimed this to be "the" knife which other should be compared. Yes, it has a slightly curved tip. I don't think I needed the added safety of that, but the more cautious of the two diners appreciated the added measure. The wood grip was thick and did not slip even when wet. As a rookie user, I found it excellent and actually wrote this review because it will soon find a place in our utensil drawer.

The blade of this knife is thin and curved. They don't tell you that in the specifications. I bought two of these and the tips of the knives are so thin that they break off and send metal flying.

I had a more narrow knife before this one...which broke. With the more narrow knife I put it in the oyster and twist. I tried twisting with this knife and almost hurt myself several times. I was confused, it looked like a great knife but wasn't working well.

I then noticed that it had a curve on the end and was more broad that my previous knife, so I just pushed it up to the shell and pried it open with a downward movement...it works flawlessly!

Sabatier 8 Inch Forged Carbon Steel Chef Knife Made in FranceFirst let me say the price of $55.00 was the best I found and these were shipped fast. (The name Sabatier is not protected by patent. Sabatier knives are made by a number of companies including China and really the 4 Star Elephant brand are the nearest in quality to these). I bought a set of 4-6-8-and 10 inch. These knives do have a slight curve to the edge so you can dice or slice with them. I liked these well enough to buy my daughter a set. These knives have a RC of 54-56 and while may be considered a soft steel it's also easier to sharpen, plus holds an edge pretty well. These are carbon steel (not stainless) and will develop a patina or will also rust If not hand washed and dried, then vegetable oil applied. Truthfully I believe any good knife should be hand washed, even stainless can rust and handles crack. I prefer carbon steel knives for kitchen work . Now I'm 69 years old and own 200 plus knives (stainless and carbon steel) for hunting and kitchen work (some hand and custom made), plus own a number of sharpening systems. Many stainless knives sold today are junk (cheap ones won't hold or take an edge) and good stainless knives will be harder to sharpen due to the alloys used. I'm not a novice when it comes to knives. I'm very satisfied with this brand of Sabatier, have found they do take a good edge and hold it well. I also have three 4 star Elephant Brand Sabatiers, two of steel forged in the 1930's (sold as historic knives) and one of new forged steel. The two historic older forged will match these in edge holding, but the modern one doesn't match them. I really didn't expect that and I know a lot of people like the Elephant Brand, so many will disagree. (Both brands in my view are better than the German Knives, yet generally cheaper in price) Fit and finish on these are good, did notice one had slight grind marks on the top edge, but not bad. Most wouldn't even notice it. But one of my Elephant Brand historic knives did too. That doesn't effect use though. The blades are thinner than some Chef Knives, they are lighter than many, well balanced, but for most of us in home kitchen use, these are great. Handles on the smaller knives are larger than most making them easy to use too. The only kitchen knives I have and rate better are 40+ year old Carbon Steel American made, Wear-Ever and some Clyde Knives. I don't believe anyone has ever matched those in quality, nor do they now. This review is just my opinion and some will disagree and that's OK and why we have many knife companies. Hope this review helps someone and I tried to be very honest.

I have a fondness for old carbon steel knives, and was intrigued when I saw these K Sabatiers listed as such a great price. Based on research, and on the reviews on the 10-inch version of this same knife, I bought a 4-inch, 6-inch, and 8-inch version. I am VERY pleased with these knives, and will probably go ahead and order a 10-inch as well. They were fairly sharp upon arrival, but a quick trip to my professional knife man for a pre-use touchup turned them into razors. Care must be taken, remember, to wipe these occasionally during use, to wash and dry immediately, and even wipe with a bit of oil, as they WILL rust and discolor.

If you like carbon steel knives, trust these. These are the real K Sabatier. You won't be disappointed.

This is the only reasonably priced well-made carbon steel knife available ANYWHERE, including France (where it is made)--yup, even including Dehillerin. I've ordered several of these in different sizes now, for myself (US) and sister-in-law (France). There are some very high-priced "celebrity chef'" ones out there, with damascus-steel blades, exotic wood handles, etc., but for everyday use by a good but unfamous cook, these are perfect. Lovely edge, weight, and balance--everything you'd expect from a real carbon steel knife.

This knife is not the knife that is advertise. The knife I received was made in China not France, like the one I purchased and was described on the product information. I hope that this will be corrected either sending me the correct item or refunding my money, since I did not get what I thought I was paying for.

I recently bought a set of these Sabatier-K knives a 4" paring, as well as the 6, 8, and 10 inch chef knives.

I'm very pleased with them. As I read on some reviews, most needed some slight sharpening, except my 4 inch was quite sharp out of its shipping sleeve. I like their light weight, feel, and balance. They are fairly thin compared to most German chef knives. The 8 inch chef only weighs about 6.4 oz... The spine did have a relatively hard 90 degree edge. I sanded one down a bit with a little sand paper, but decided why bother on the others, at least for now, my hand is never there. I also noticed the rare, odd grind mark on the spine, which tells me they are hand made, something I like in this day of robotic automation. I am using DMT 8" diamond block to sharpen, which are scary fast. Overall these K Sabatier's fit and finish is top shelf. You do need to take care of them drying, occasionally oiling, but don't fret over common patina spots that develop, its normal. Just don't let them rust!

It is a bit hard to find such well priced, quality high carbon steel knives these days, but these are the real deal, along with their brass riveted POM handles. And I prefer the brass rivets to the stainless steel ones pictured on the Sabatier-K (Aine Perrier) website. The handles are a nice size, even on the small four inch. I think my six inch is my favorite, perhaps the eight, I can't really decide. I enjoy looking at them on my wall magnet and watching their patina grow. They are real pleasure to use... You won't be disappointed.

One last thought... I would use a smooth, polished sharpening steel, not the coarse one. F Dicks makes an inexpensive one (Pack House) with nice german steel. One is suppose to very gently, slowly steel these carbons, at an angle a few degrees over their edge angle. One or two strokes (alternating on each side) is all that is needed, and you might steel them everytime or every other time you use them. I recommend not using a diamond or ceramic sharpening steel with these authentic Sabatier knives.

Chef's Choice M450 Diamond Hone Manual Straight Edge SharpenerI've had one of these for a year or two, and it works great. It puts a sharp edge on every (non-serrated) knife I've tried, including my Swiss Army knife. The edge seems to last a reasonable length of time, I don't find that I have to use the sharpener all that often. But when you want to slice tomatoes, you need a good edge on your knife, and this sharpener fills the bill for me.

Now, I'm no chef, I'm a rank amateur when it comes to sharpening knives, so if you're very picky, or a pro, or just very well educated in sharpening knives, then this may or may not be for you.

I've read comments about similar models to this one, and I'm surprised at some people's complaints. First of all, take a minute to read the directions, and you'll be glad you did. Secondly, there are two wheels which you're suppposed to hold the knife against while you draw it through the sharpener. Ideally, they both turn as you draw the knife through, but DON'T WORRY if they don't both turn all the time! They're there as a guide to how to orient the knife, that's all. If you're close, it still works just fine.

This is a quick and easy way to sharpen most knives but does not work too well with my vegetable knives those I still sharpen with a whetstone. Incidentally sharping with a whetstone gives me a better edge but this is good enough for everyday use.

I've had this item for about 4 years and just bought one for my brother after visiting him and trying to use his very dull knives.

Overall it works very well. If you are good with a stone, you can get a better edge, but for 95% of your cutting the edge on this knife sharpener works very well. I also like it better than some of the electric sharpeners. The electric devices can really chew up your knife if you aren't careful.

The trick to getting a good edge with this device is to follow the instructions. I know this sounds obvious but I had this thing for several years and didn't quite use it correctly. I found a couple of videos on YouTube that showed the correct way to use this sharpener.

We find the knives to be sharp and comfortable. They definitely keep the sharp edge longer than her old knives. Plus, her counter looks much neater with the huge knife block gone. These knives come in nice boxes and would make a great present.

One thing that puzzles me is why Amazon calls these knives "SHUN Wasabi...". I did not find any reference to Shun on the knife boxes. I understand that the cutlery maker KAI that makes Wasabi line also makes Shun, but that is like calling Scion a Lexus.

I thought the handle was going be a cheap plastic, but I was wrong. The handle feels and looks great! The blade is incredibly sharp, and the whole knife is very well balanced. I'm very pleased with my purchase and would encourage anyone to make the purchase as well.

Just wanted a sharp knife larger than a paring knife. This is great for cutting up veggies. Can do some light chopping as it can rock a little like a chef's knife, but blade is too small and thin for much of that motion. More of a slicing blade. The handle is shaped with a bulge on one side that makes it feel uncomfortable for left-handers, but is good for righties. Sharpened easily with Accusharp.

Chef's Choice Edgecraft 2-by-6-Inch Diamond Sharpening StoneThis is a single stone (rather than a complicated series of stones) that gets the job done better than a much more costly electric sharpener. If you wish your knives were sharper, but don't want to become a professional knife maintenance technician, it's a nice choice. I like mine.

Bear in mind that with a sharpening stone, YOU are responsible for holding the knife at the correct angle; there are no safety features; and you'll still want to use a honing steel (that long metal rod with a handle) after sharpening.

While I am still a neophyte when it comes to sharpening, I rate this stone as good overall and my skills limit the possible outcome. There are tradeoffs with a one-in-all approach, so using a strop or steel after sharpening is recommended.

What this does well is remove metal fairly quickly if you need to reprofile, repair edges, or bring an abused/dull knife back. This has worked well with both pocket knives, kitchen cutlery, and general fixed blade knives of various metals (carbons and stainless). It works better, or perhaps my technique (lack of) produces better results with softer steels. I've been less successful with D2 or higher vanadium steels such as that in Global knives.

Per comments above, it will not bring back the best polished edge, so this is not the best option for an only one.

Good base/box with small rubber feet that grip a counter/table well when sharpening.

Not the optimal size for larger cutlery, but this seems to work well for a variety of blade types sizes, etc.

Good overall option for free hand sharpening with a reasonable price for a dry stone. Those with a high degree of skill may be better served by other options.

I purchased this item because of a good experience with other company products and a family reommendation for this particular item. The diamond stone has not been fixed exactly parallel to the sides of the wooden base casing and so the lid cover does not sit squarely on the base. It is not worth sending back from Australia but if the manufacturer wishes to distribute internationally they need to do more than just have US address and telephone in the internet age.

Have had a small cleaver that I like to use for general purpose chopping and cutting, but was never able to keep it very sharp, despite trying to use a sharpening rod kit. The missing piece was not using a stone, you can use either a traditional wet stone, or a hard surface (diamond) one. Since I didn't want the hassle of a wet stone, I opted for this one, and found it to be easy to use. The instructions tell you to try and maintain a 22.5 degree angle while sharpening, which they recommend you do by folding over a piece of paper twice, once to get a 45 deg angle and then once more, and using this from time to time to check your angle. Other than that, it's very straightforward and you end up with a very sharp knife.

Chef's Choice Pronto Santoku/Asian Manual Knife SharpenerI am a personal chef and caterer and use my Asian Shun Kershaw knife 6 to 8 hours a day, 6 days a week. Of course that will dull any blade and so far the only good solution was for me to send my knife back to the factory every 6 months to be re-sharpened. Losing the use of my knife for 3 weeks was never fun; I do have a replacement, a Victorinox Fibrox chef knife, but it is not quite same.

So I tried a sharpening stone, the kershaw electric sharpener (mistake, I had to send the knife to the factory right after using that), the Wusthof santoku sharpener (not effective enough), a diamond coated steel, built a wood stand for my sharpening stone at the required 15 degree angle (that worked pretty well). And then I found this.

I have used it and it is wonderful! The blade is back to factory sharpness and it is very easy to use. Plus I can use it to hone the knife everyday before using it to maintain the edge. My search is over! Thank you Chef's choice. To my knowledge it is the only easy to use sharpener on the market that works for Asian knifes.

I have never had any luck with manual or electric knife sharpeners and was hesitant to try and sharpen my expensive knives on one only to have the edge completely trashed, which has happened. However I have been without the use my santoku for too long and decided to purchase this item. I didn't expect much, however it was recommended by cook's illustrated so I figured I would give it a try. I got it today and tried it and was amazed at how it put a razor sharp edge on all my dull knives. I highly recommend this product to anyone with Asian style knives that need a good sharpening.

I own a nice set of Global knives and I got tired of using their "waterstone" to sharpen them (nice job but tedious). I've tried both this product by Chef's Choice and the MinoSharp (also available from Amazon). I found the MinoSharp to be far superior. Both products are easy to hold and use. They have, however, very different methods of sharpening. Chef's Choice uses two abrasive bars in a V shape configuration. MinoSharp uses small round sharpening stones over which the knife glides (one for course, the other for fine sharpening). With Chef's Choice you need to use a lot of pressure to sharpen the knife and it does not sharpen as well as the MinoSharp, which requests you to use light pressure. The difference in pressure also makes me feel that a lot of steel is being taken with the Chef's Choice. I've read the testimonials of the "5's" but their results have not been mine. If you do select the MinoSharp my only caveat would be that you need to be very careful once you sharpen your knife--it really does come out razor sharp.

I purchased this knife sharpener after reading about it in Cook's Illustrated, where it was highly recommended. I have a mix of German and Japanese knives and the two have different angles on the blades, which means that you need sharpeners designed for each type. Since I only had a sharpener suited for German style knives, my Japanese knives were not being sharpened properly, and they were not performing to their full capabilities.

After purchasing this sharpener, I used it on my Japanese knives, and they are now performing like I knew they could, and were, when I purchased them. Personally, I don't like electric sharpeners, but if you do, there are excellent ones on the market. If, like me, you prefer manual sharpeners and have Japanese knives, then this is the tool for you.

(I had ordered four sets (so I expected 16 blades) so the total with shipping was about $25.) I only got four blades! Bottom Line: they are cheap plastic disposable blades that would reasonable cost about $1 each. Ther are only two complaints. the first being that the size measurment seems to be slightly off, and the blade is very sharp.

although it is hard to complain about a knife being too sharp. the size guard has worked on my mothers salsa recipe, each ingredient, flawlessly!

This is my favorite knife of all. In fact, we bought two of the 5" ones (because each of us always wants to use one, usually at the same time) and one 10" one, and I've given them as gifts too. I love the rounded tip and the overall balance. It does need to be sharpened quite frequently but when sharp is superb for dicing, peeling, and slicing almost anything. I can't imagine my kitchen without it.

Citrus Knife and PeelerI always used a similar item growing up but never owned one since out on my own. I found this one online and ordered it about six months ago. I was surprised how thin the cutting edge was, but it seemed to work for a few oranges. Didn't use it for many months since no oranges bought. Pulled it out the other day to use on a clementine and the cutting edge snapped off immediately. Broken after only a few uses! Highly disappointed. Sad since I really liked the translucent color options. I think I will continue my search and try one of the uglier, but hopefully more sturdy, designs since this one was useless.

I have one of these and couldn't remember where I got it. I wanted another and everyone that sees me use it wants one too. I have been searching high and low and just found this. I am thrilled! This is the best citrus peeler I have ever used especially for the price. (I have never tried the ones that cost $50.00 since they are too pricey for me.) Well worth the money. I am buying several. Great for a stocking stuffer or token gift for anyone that will definitely be used and appreciated as well. It's the best. Give a try. You won't regret it.

Cuisinart 2-Piece Carving Knife SetJust received this before Thanksgiving to carve the turkey and ham. The full tang (steel runs from blade through the handle) is nice plus and it feels very solid. The handle is a plastic material but has a solid grip and looks and feels like quality for the price. The edges of the steel through the handle has a slight edge to it and extends slightly beyond the width of the handle, but not enough to cut yourself on.

The fork is what I really bought this item for and it is very sturdy with thick and rigid tines that can easily man-handle a nine pound ham without fear of it bending and dropping your roast on the floor. The fork's finish is nicely polished and smooth.

The knife on the other hand, while also solidly constructed, is on the dull side. It had problems slicing through turkey breast on the bird, but is a good length overall. Up close, you can see that the blade is not entirely smooth, there are slight grooves perpendicular to the blade's edge that indicate heavy grinding. The blade's edge itself feels fairly sharp, it just doesn't do a great job slicing through meat.

Good for $20 or less, as a quality fork is much more than the price of the two combined, just don't expect a smooth cut from the knife

My wife would prefer that this would disassemble more for cleaning. It sometimes comes out of the dishwasher with egg on it if it isn't thoroughly cleaned. Other than that, it works as advertised and slices eggs and strawberries well.

So disappointing!! I too was fooled by the sturdy look of this product. Now what do we do with this?? If so many people are having trouble with the wires snapping, Amco should offer to fix them for free! What a rip off!

Bought this to replace an egg slicer of similar design which had lasted for many, many years.

What a mistake.

As with others, the wires broke within several uses, and it's never seen anything other than eggs, strawberries, and mushrooms.

Avoid, and go with the much sturdier all-metal version.

iron 74%

Chromium 18%

Nickel 8%

When this composition is exact then this grade of steel is non-magnetic, meaning that it will not be attracted by a magnet. I did this test on all spoons and forks in this set. The five teaspoons in this set failed the test. (meaning that they had less than 8% Nickel). So how does that affect you? Those five teaspoons will develop some rust in some form some time because stainless steel with less than 8% Nickel is not rust proof. J. A. Henckel is making a fool out of all of you. Buy it if you like to be treated that way.

This flatware pattern, Rapture, appeals to men and women alike. It fits with any decor and looks beautiful. The knives and forks are large, which is what I like and they add a touch of class to everyday dining.

I love it! Not very heavy though, so if you prefer heavy utensils, this set won't make you happy.

The knife is longer than you might presume from the picture, but I actually like it very much.

This replaced first choice that sent back. This is much better quality for the price. The design is not typical and can be used for both casual or semi-formal dinning. Love the price and design and quality of this product. Will for sure buy from this Mfg. again for higher line of Flatware.

This set is made in Vietnam (not Germany) by Henkels. It looks very nice but it just feels light and cheap. The teaspoons bend which is just a no-no for quality flatware.

We had one before this one that worked great, but the wheel was plastic and eventually got too dull to use. I got this one as a replacement about 6 months ago, but it really is impossible to clean. I wish it didn't have the blade guard, because the guard just attracts pizza gunk that can't be cleaned off. I just put the Zyliss 30820 in my shopping cart. I hope I like it better than I did this one.

Got this because we have limited space in our kitchen and was looking for something compact. This wheel is great small, sharp and safe. We have curious toddlers and so appreciate the cover over the sharp wheel. Only issue it is a bit painful to clean as you have to rotate the wheel in order to get soap and water all over for a full clean.

Pizza wheel is a solid utensil! It's very sturdy and serves it's pizza-slicing purpose very well. We especially like the blade cover so we can keep it in our drawer with other utensils and not have to worry about safety.

I like the way it cuts, but pizza gunks up the blade, which goes up inside the green half. The Joseph and Joseph site simply says to throw it in the dishwasher. Yuck. Anybody have a suggestions? Google hasn't found a solution, yet, so on the counter it sits.

I used to use a cutter with a handle, then I switched to another brand hand held. I love this handheld cutter because it is dishwasher cleanable, no parts to open (except for the guard) when cleaning. Better than the last handheld I had which broke quickly because it was difficult to open to clean.
