Ginsu Essential Open Stock Series Japanese 420J2 Stainless Steel 5-Inch Santoku Blade 5100

Ginsu Essential Open Stock Series Japanese 420J2 Stainless Steel 5-Inch Santoku Blade 5100This was ordered mostly to bring an order to $25 to qualify for free shipping, and my wife gave me grief for ordering it -"we don't need another knife". Now I barely get to use it as she ALWAYS goes for this one first! AND she just bought a set of this size and a 7" also for our daughter. You can't go wrong at this price for such a well-made, well-balanced and useful knife. Unless you buy the 2 piece set for $12 and change.

NICE HANDLING,CAN SPREAD CUT OVERALL NICE, I HAD TO ADD MORE SO THEY WOULD STOP BUGGING ME FOR STUPID REVIEWS

Super sharp, good handle, great price. Not sure how long it will hold this great edge but it's a very nice tool at the moment.

CulinHome Melrose Collection 7-Inch Santoku Knife

CulinHome Melrose Collection 7-Inch Santoku KnifeThe rear half of the cutting edge of this knife was slightly concave, which is to say that if you're chopping anything using the half of the cutting edge closest to the handle, your food won't be completely cut through, since that edge of the cutting edge never will touch your (flat, presumably) cutting board. About an hour of work with a stone was necessary for me to grind the cutting edge into a better shape.

Once that was done, this knife was much better. The spine of the knife is thicker than I would prefer. Cutting hard veggies like thick carrots or nice fresh potatoes is harder than necessary due to the thick spine.

It holds an edge well enough for a casual knife, and is well finished. The stainless steel handle looks nice, and is comfortable to hold. The heel of the blade is a good thick bit of metal, which should protect your finger if you let it slip under that corner of the blade while chopping food. But really, the heel is the part which needed the most grinding to get the edge into a usable shape.

It is a clever buy only if you can sharpen it (please use only japanese whet stone). It has a good greep and the stainless steel is of high quality. It should have been sharpend better at the factory.

Extremely awesome knife. The blade is sharp, feels awesome in my hand. The only thing I didnt like is that it is hollow. I would have liked to see a solid or just filled in knife. But thats complaint is minute compared to the value of the awesome product.

MIU France Ceramic Nakiri Knife, 6-1/2-Inch

MIU France Ceramic Nakiri Knife, 6-1/2-InchThis is the first ceramic knife I have ever owned and so far, I'm impressed. My first job was as a prep cook, so I've done a lot of chopping and mincing of vegetables and fruit, and endless hours prepping meats for cooking. Here's what I have found:

1. It's sharp, really sharp.

2. The Nakiri shape works well for everything you'll need the knife for, so don't worry if you think it looks a little odd or would handle differently.

3. You'll be paranoid about breaking it the first few times you use it, but you'll get past that.

A note on that last point. All the reviews I have read about ceramic knives say the same thing. They're really sharp and they're really fragile. i.e. don't cut bone and don't throw it down onto a hard surface. The knife itself is thick enough to hold up to some banging around, but you will want to be careful about hitting the blade against hard surfaces. If you treat the rest of your knives like an adult and don't use them for stupid things i.e. knife throwing contests, you don't need to worry about breaking a ceramic knife.

Happy chopping.

I purchased this knife recently after reading about the benefits of ceramic and the description is right super sharp, precision slicing and my food does not brown! I can't believe it. I use this knife for all my prep work in the kitchen it's my new 'go to' knife. I hightly recommend adding this ceramic knife to your cutlery sets.

Buy MIU France Ceramic Nakiri Knife, 6-1/2-Inch Now

I work as a chef, and so i keep an eye out for any kitchen equipment that might be useful at work or at home, or that are interesting for some reason. This knife fits the bill for home use, and is interesting to boot. It is true that the ceramic diminishes the amount of bruising/browning from fruit and veggies. I believe that is directly due to it not being metal, which seems to brown things cut more quickly (chemical reaction? I'm not sure). Although a sharp edge also reduces the rate of decay, as it were, this is the same whether metal or ceramic, so that isnt a direct reason. Anyway, the knife does stay sharp a little longer than, say, a Wusthoff, but not so much so that it becomes a deciding factor.

Okay, now that we've gone through the advertised benefits, which are real, but not so much so that it should be a true deciding factor (unless this is going to be the only knife you use), why buy this knife? For me, the knife is a well balanced blade that is easy to use. It isnt very large, so it fits well in your kitchen drawer when not used (and comes with a sleeve). In fact, the overall feel of the blade becomes the deciding factor for me. It is comfortable and, as i said before, well balanced. With that, the lasting edge and reduced bruising can then become a factor. At a little less than $40, it is very reasonably priced for a quality blade. If you cook frequently, you will still want to have a few other knives on hand (at least a paring knife and an 8 or 10 inch blade for larger scale prep work). Either way, you will find this knife to be handy, and a worthy addition to your personal kitchen (i dont see it as a practical blade in a work setting however).

One further note: ceramic blades are notorious for shattering. So far, i haven't had any issues, but just be aware of this. If you have butter fingers, you may want to avoid ceramics.

I got this on gold box special the other day. The knife is great for cutting vegetables, and makes a gentle push cut almost effortless. It's also very comfortable to hold for a person with smaller hands. But when I tried to slice the ends off a particular sturdy garlic clove it refused to cut. To be fair, my 8" Forschner chef's knife couldn't do it (where did this garlic come from?). But it ended up producing 3 tiny chips across the blade. They don't affect the cutting ability, but at this rate the edge won't last very long. And although they stay sharper longer, you generally have to send ceramic knives away to be sharpened. So I'll probably end up returning this one.

A couple of things to note this knife is sharp, but also a bit fragile so be careful with it in all counts. Also it is made in China not France. Overall not a bad ceramic knife but know what you are getting into with ceramic knives -they have pros and cons very sharp but a bit more hassle tan steel blended knives.

Wusthof Classic Bread Board Set

Wusthof Classic Bread Board SetI bake bread a few times a week, and finally decided to upgrade to this bread knife. All I can say is WOW. It slices through crusty loaves effortlessly. The board is a good addition for presenting bread and charcuterie/antipasto. Never thought I would spend so much on a bread knife, and even after I saw this set on sale for cheaper in a store, I'm still glad I bought this.

As others pointed out, for some reason it's less expensive to buy this combo than the knife by itself. We wanted a bread knife, but could not warrant paying the price to add to our JA Henckel Pro S collection. This knife looks almost identical to the Pro S knives, was sharp and appears very well made. It is not as heavy as a Henckel, but it is well balanced and will be everything we wanted for a rarely-used (in our house) bread knife. We didn't even card about the little cutting board that comes with it, but it will be handy for light use with french bread or cheese.

I have this knife as part of a set of Wustof Classic knives and they are fantastic. I got this one for my Mom on Mother's day and Amazon shipped it out quick. For some reason this particular packaging is cheaper than buying the knife on it's own from other vendors.... Great bread knife.

Victorinox Forged 17-Slot Bamboo Knife Storage Block

Victorinox Forged 17-Slot Bamboo Knife Storage BlockThis knife block is very attractive. I first bought the Kapoosh to fit my Victorinox knives, but after reading the reviews I decided to opt for a block that was a better fit and longer lasting.

It fits my 10" Chef's knife, 7" Santoku (w/ a little wiggle room), Henckles bread knife, 4 1/2" utility knife, 6 Steak knives, Kitchen Aid kitchen Shears, w/ 6 empty slots remaining to fill. However, I was a bit disappointed that their didn't seem to be a slot that fit my Santoku or my Steak Knives perfectly. I just thought it odd since the brands matched.

I am happy with the overall look and organization of the slots. Prior to purchasing I reviewed the Henckles blocks, but found there slots and layout a little odd. It might have worked, but I had the money and figured I go with the matching brand. If I had to do it all over, I would have bought the Block w/ the matching set. Prior to buying my first two Victorinox knives, I didn't know I was going to like this brand that much.

After receiving the rose-handled Victorinox steak knives as a wedding gift, I wanted to upgrade our storage block as well. I shopped around and couldn't beat the price, the storage capacity and the attractiveness. I would have purchased one from a different maker if made better sense. It looks great-very eye-appealing. I would recommend on the factors stated above.

The slots are too narrow to hold other than 2 8" Victorinox knifes.

I can't fit my 7" santoku, 10" bread and 8" chef into the block at the same time.

Save your money and buy the snap guards or find another block.

I don't have room for a mag-strip or I'd go there. I figured this block could

accommodate at least 3 top end knives from the same vendor but that's not the case.

It is well made and works for knives that fit. Maybe it's perfect for you if you

don't have any large knives but I can't really recommend it to anyone.

I presented my boss with the ten inch knife after he used it during one of our xmas parties, since then I had only sharpened that knife 4 times in a lapse of 4 years and he loves it.

I too swear by it and I'm planning on purchasing some more in the future.

Zwilling J.A. Henckels Twin Four Star 10-Inch High-Carbon Stainless-Steel Granton Roast Beef Slicer

Zwilling J.A. Henckels Twin Four Star 10-Inch High-Carbon Stainless-Steel Granton Roast Beef SlicerThis is an excellent knife given the right conditions. If you find yourself cooking large roasts of any sort, this is the knife to carve with.

This thing goes through prime rib like no other knife I've ever used. You want paper thin beef? Done. Big honking thick slices of beef? Done.

The one drawback of this knife is when you are slicing near bones. It's a pretty stiff knife and very long with a blunt tip. If you want to get the tender little bits from the bone, get another knife out, or plan on getting your hands dirty!

The first time I used this was to slice soporsato for the Superbowl....Excellent knife! I was able to slice this cured sausage diagonally, and with thin, even slices which can be really difficult. Love this knife....I look forward to many years of use with this knife!

Forschner 6" Semi Stiff Knife

Forschner 6' Semi Stiff Knife - Black HandleI used this exact knife for two years in a meat processing plant. I used it for boning sides of beef and it works well for every aspect of boning. I would set the edge with a diamond bit steel at the beginning of an 8hr shift and that edge would last all 8hrs with only the occasional run on a sapphire cut steel. I do have these knives in my house and they stand up to my wife chopping veggies very well, even though that's not what it is made for. I have only high praise for Victorinox blades and its all i will buy.

If you have experience cutting vegetables and you are looking for the best price this knife is the best choice. Excellent grip, but small if you have big hands (not my case, my height: 1,75 m = 5,74 ft). It is well-crafted and after more than a year of use, it has no signs of rust. It is decorative, I have it in my magnetic knife holder with my other knives at sight. Wusthof Silverpoint II 3-Piece Paring Knife Set

Wusthof Silverpoint II 3-Piece Paring Knife SetI have been searching for a "birds beak" paring knife for years and years. It is perfect for hand help slicing and cutting. This knife is excellent because of its thin blade, you can cut matchstick carrots without the carrot breaking. The other two knives that come in this set are great also. I am so happy to have found these and I would recommend this set for everyone!!!

I've been a wusthof fan for a while. i knew when buying these they would not be the same as the classic series. and i got about what i expected. they look well made but the blades are rather thin all the way through. this allows for quite a bit of flex while cutting. it made it tricky to cut straight as the metal would flex and get off track. not a big deal to me for just little things. but something to be aware of.

nice light knife set. can't wait to get my hands on a full classic set.

Dexter Traditional Wood Handle 8 x 3-1/4" Chinese Chefs Knife

Dexter Traditional Wood Handle 8 x 3-1/4' Chinese Chefs KnifeA very sharp knife, very good to cut meat(boneless) and chop vegetables. BUT: I chopped my first onion and the blade stained, and I do not think that even a blow torch will not remove stain. Handle way too small for large hands making it a bit unstable.

This is the lowest cost item in Dexter Russell's line of Chinese knives. Just as sharp as all the others. High carbon steel guarantees the sharpest blade possible, and will eventually develop a patina. Every Chinese restaurant kitchen has one. In Chinese kitchens, they don't have a block of knives, with a different size and design for different jobs. Every job is done with this knife. Chopping. Slicing. Dicing. Paring. Smashing garlic. And even processing of live animals.

Before you call PETA, just keep in mind that in Asian cultures, the food has to be as fresh as possible. For one, it taste better. And in the days before refrigeration, You keep everything alive up to the last possible minute. Nobody wants to eat spoiled, rotting meat. Would you eat day old sushi without refrigeration?

Being a vegetarian is a first world luxury. Eating meat is a third world luxury. Rejecting food, while others starve, is a pompous, arrogant action by overfed, privileged elitist. 30% of the world's population is vegetarian, most of them not by choice, and they're not too happy about it either.

I have a small apartment on the bottom floor of an older building. There is no vent to the outside over the stove, which is gas, so I don't use the stove. Everytime I tried the CO2 detector would go off and when its cold outside its just not practical to leave the doors open and a fan blowing. So I bought some of those counter top induction cooking plates. The pans that come with it are nice but not very varied so I've been looking for more sizes to cook with. These looked like everything I would need and was assured they would work with induction cook tops. THESE DO NOT WORK.

I broke down and bought an electric hot plate thinking when I "really" needed to use these pots I could break it out. When I went to boil some water in the largest pot these are constructed so thin the top part of the pot never would get hot enough to boil the water. The base was hot but you could actually touch the top part of the pot. The hot plate was cycling on and off as it had reached max temp but the top of the pot was not very hot. The material is very thin and will not properly retain heat to cook well.

To add insult to injury. The first time I washed the pot it formed little rust spots. Stainless steel my a$$. These cheap sucky things are worthless and its too late to return them as I tried to do the right thing and make them work. As someone new to cooking I've learned my lesson of what to look for when buying cooking utensils and these are not it.

Kuhn Rikon PushPan

Kuhn Rikon PushPan, 8-InchI make cheese cake often since I LOVE it. And I have three springform pans a 10", a 9" and a 7". One of my recipes calls for the cake to be baked in a hot water bath but first the pan must be wrapped in a double layer of heavy-duty aluminum foil to keep the water from seeping into the cake. I've made this cake a half dozen times and the foil wrapping is such a pain in the butt and also if you do not do it correctly, the water seeps in making the cake a soggy mess and wasting a lot of very expensive ingredients.

I saw in a catalog a new-fangled cheesecake pan that did not have the spring latch on the side. It has a rubber gasket rimming the pan bottom to seal it tight. To remove the cake it said to place the pan on top of something sturdy that was taller than the cake pan and then push down on the sides of the pan. No need to use a knife to loosen the edges one little push and the pan bottom with the cake on it would slip right out. I doubted that this would work but still I wanted to try it and so I ordered the Kuhn Rikon PushPan on amazon.com for $30.

I was very nervous about using this pan and so I first tested it with a normal (no hot water bath) cheesecake. I made the recipe posted below. The pan worked just as they said it would cake slipped right out. Even better there was no dripping of butter onto the bottom of my oven. Loved that. One problem however I ordered the 9" pan and made the same recipe I've been using in my old springform 9" pans for 30 years. The Kuhn Rikon pan was too small to hold all the batter so I put the overflow into a small bowl and baked it too.

The yesterday I got brave and decided to test its water-tight claim. Made the chocolate-swirl cheese cake that gets baked in the hot water bath 4 cream cheese $8; sour cream $2, and sugar, eggs, chocolate an expensive endeavor. Once again though the 9" recipe I have made many times before did not fit in this pan. The overflow this time almost filled my 7" cheesecake pan. But both cakes looked great when I took them out of the oven. Then the waiting three hours to cool and then the overnight refrigeration.

I could not wait until suppertime and so I decided to have a piece for breakfast. Cake slipped easily out of the push pan and wonder of wonders the cake was not soggy or wet at all.

So the pan works it's just not big enough for normal 9" recipes. Rather than try to redo all my 9" cheesecake recipes, I am going to write to the company and ask that they exchange this one for the 10" pan.... or give me my money back. I like the pan just not the size.

I am an accomplished baker; I bake everyday and am currently working on a cookbook. I have made hundreds of cheesecakes using a traditional springform pan. Whenever I make cakes using a water bath I have always wrapped the pan in 2 layers of foil. This has always worked for me.

I was excited to try the new Push Pan and did so for the first time yesterday. I made Junior's New York Cheesecake. You cannot imagine how disappointed I was when I removed the ring from the Push Pan. The base of my cheesecake was entirely WET! All around the sides, where the red silicone ring is, was completely drenched!

I followed the instructions completely; pushed down the base into the pan, made sure it was secure and even. The cheesecake came out delicious, however, the crust was soggy; I do not recommend this pan to be used without wrapping it well in foil before putting in a water bath.

However, I must say that the unmolding of the cake was very easy and the sides were nice and smooth; the bottom wet, but smooth...

Buyer, beware. If you do decide to buy this pan, WRAP the pan with foil in the traditional manner!!!!!

Customer review from the Amazon Vine Program 9" pan

I have a large collection of well used springform pans from cheap tinned steel to LaForme's expensive "leak-proof" enameled steel. They all get the job done but leak. Even double wrapping the bottom of those pans with heavy foil when baking cheesecakes in a water bath would be no guarantee water would not find a way in. So I was very anxious to try this pan and immediately put it to the test by baking a cheesecake in a water bath with no foil wrapping. It worked like a charm, the cheesecake was perfectly dry.

This pan also is also constructed from very heavy weight metal; 19 oz. versus a typical 9" tinned steel pan at 9 ounces. So you don't get over-baking at the edges that you do with a thinner pan. My cheese cake was evenly cooked and perfectly flat from edge to edge. Removing it from the pan was no problem and if you line the bottom of the pan with some buttered parchment it makes it easy to remove your dessert from the bottom piece.

I also used it to make a quiche and when blind baking the crust I didn't get melted fat leaking from the bottom of the pan like I do with traditional pans.

Although this pan looks like it has the exact same dimensions as a standard 9" springform pan; 9" x 3" because the bottom of the pan when fully seated rests 1/2" above the bottom you get about an 8 cup capacity versus 9 cup in a traditional springform pan. So if your favorite recipes tend to fill up your pan I would size up to a 10" or plan for a separate pan for the overflow.

I love the pan and hope at some point they also offer it in a 4" size for individual portions.
