Concord Sushi Pro Line 3-Piece Santoku Knife Set
We bought a set of these knives and are very happy with the purchase. The build is high quality, the wooden handles are beautiful, and the quality of the steel is high for the price. The blades are decent at holding an edge. When we need to sharpen them, the Chef's Choice 440 2-Stage Manual Sharpener gets the edge back in about a minute. Great value for the money.Considering the price, these knives are a great deal. Despite their affordability and the fact that they are made in Chinanot the best knife forgersthey do have some nice attributes. They are full tang (the metal goes all the way through the handle) and have great balance. I am a professional chef and I use my knives more in one day than most people do in a year. So my criteria is a little differentI appreciate the fact that they are so affordable-not such a crushing loss if they "disappear" in my kitchen. Additionally the handles are solid and feel comfortable to grip for long periods. The one negative thing I have to say is that the blades are not exceptionally sharp out of the box. But a few passes with a sharpening steal should remedy that.Buy Concord Sushi Pro Line 3-Piece Santoku Knife Set Now
A couple of years ago, I saw one of those infomercials on TV before the holidays and thought maybe we could use a few "SUPER SHARP SUSHI KNIVES" to add to our regular knives in the kitchen. I saw these on Amazon.com and they looked impressive. I thought I should order some in time for Christmas and wrap them for my husband who does like to cook from time-to-time. When they arrived, they looked substantial. They say they are made from Carbon Vanadium Stainless Steel. The handles are wooden with a steel plate going through the wood and out the back and around the bottom for strength, which makes them look good and much more solid in your hand. Because of the wood handles, you cannot put them in the dishwasher, nor get them wet much because the wood will swell and lose the varnish and color. But, of course, this is the case with all wooden handled knives. I believe they were relatively sharp, however, they were not "super sharp" like I was hoping, even after re-sharpening. So, maybe our sharpening technique is flawed, but they did not become our favorite knives as I had hoped. Maybe we just have really good knives already, so I do not want to be critical. All in all, I think they were a good value for the price.

This is my first Wusthof purchase. I currently own a Henckels knife set and wanted to add the 7" Santoku Chef knife to my collection for a new twist. The Wusthof Ikon Classic Santoku has an incredibly sharp edge, cutting through soft tomatoes with little effort was a joy. I nicked and cut myself without even knowing because the blade was so sharp. I love the ergonomic way the Santoku handle feels in my hand, the knife is very balanced. I haven't been able to rock this knife the same way like my classic edge knives, so this knife definitely cuts differently. The hollow edge is supposed to keep food from sticking to the blade while making cutting easier, it made cutting seem easier, not so sure about food not sticking to blade. Sadly after about 3 weeks of cutting on a wooden cutting board it had already lost some of it's razor sharp edge and will need sharpening. Wasn't expecting this to happen so quickly, but I use it several times per day. I'm planning on adding the regular Hollow Edge Ikon Classic 6" Chef Knife & 3.5" Paring knife to my growing Wusthof collection (Merry Christmas to me!)and eventually phasing out my tired Henckels for the new Hollow Edge tech. All in all, I'm converting.Read Best Reviews of Wusthof Classic Ikon Hollow-Edge Santoku Here
Wusthof Culinar Cheese Knife
I received this knife last christmas and immediately fell in love with it. It's heavy for it's size, feels great in your hand, and just looks really cool. It also cuts great. Cheddars and Swiss don't stand a chance, as well as peppers, boneless meats, tomatos, and anything you can think of that doesn't need a really stout, heavy blade. The holes in the blade make any meat or cheese just slide off as soon as the cut is made. It's just a quality piece of cutlery. Now if only you can get someone to buy one for you.....I purchased this soft cheese knife 5 years ago. I love both how it looks and how it feels in my hand. I use it several times a year. It has remained sharp and still cuts well. The way it cuts soft cheese is a dream. The knife doesn't bunch up the cheese and have to be worked loose like other knives. This cheese knife has held up well. It still looks great, good enough to put on a cheese tray for company. I've kept this knife in a drawer with the rest of my knives. I do wash it by hand, not in the dishwasher. Otherwise, I've taken no special care of it. I expect this knife to meet my needs for a very long time.
I've had similar experiences with any Wüsthof product that I have purchased.
SCI Scandicrafts Fluted Deep Tart/Quiche Mold, Removable Bottom 8-inch Diameter by 1.75-inch Deep
Thought it took a long time to ship this item along with the rest of the items David Glass suggested.SCI Scandicrafts Fluted Deep Tart/Quiche Mold, Removable Bottom 8-inch Diameter by 1.75-inch Deep was everything I expected. I am very happy with this product.Thomas Keller said that a quiche should be baked in a 2-inch deep pan to achieve the right texture. When I purchased this pan, I couldn't locate an 8-inch pan with a 2-inch depth. This pan is close to that depth and the size is perfect for the quiches that we like to bake. It bakes evenly and is a cinch to clean. The removable bottom is a great feature.Love these deep tart style tins. Great to make mini gift like quiches for people. Shipped well ahead of estimated time which was a plus.If you are thinking about following "Go Eats" and buying one of these for an Apple Pie. Buy the bigger one. This is good for a tart only.Rosewill RHKN-11001 14-Piece Stainless Stell Knife Cutlery Block Set
Probably the best kitchen knife set I've owned to date. I was so impressed by them that I ordered a second batch for my mother-in-law, who is an insanely dedicated cooking fanatic: She loves 'em, or at least she claims she does. She tends to spin them around in her hands with a look of burning hatred when she talks to me in her kitchen. I genuinely fear for my life. She dislikes me whole-heartedly.But back on topic: holy heck, can these things cut. I have had no issues at all with them, personally! This Knife Set was not what I Had Expected, But was exactly as I At First Thought I Would Get, Would Not Purchase Again, Live and Learn, Oh! I paid about $15 for this knife set, so I did not expect much. However, these knives are GREAT. They're sharp and fairly well-made, and seem sturdy. I used the chef knife to cut some onions and celery yesterday, and it was like slicing through butter. The handles are lightweight plastic, but they don't feel as if they're about to fall apart or snap off. The only thing I don't like is that it doesn't have a knife block, but that has no bearing on the quality of the actual knives. I definitely recommend this product.Victorinox Cutlery 7-Inch Wavy Edge Bread Knife, Black Fibrox Handle
The Victorinox knives are terrific....sharp, lightweight, easy to hold.I bought four and really enjoy using them. They stay sharp and are easy to resharpen when necessary. After reading many glowing reviews, I decided to add three Victorinox knives to my kitchen. As advertised, they probably perform excellently. When I received them, however, I was turned off by the cheap look and feel of them. I kept the bread knife, but sent the other two knives back. The knife cuts bread well, but I'd recommend a longer size for a more versatile blade. The seven inch blade is a little short for some wider bread loaves, but it's great for sandwiches. I think I might have liked the rosewood handles better for home use. In a commercial kitchen, the fibrox handles are ideal. I purchased two Chinese Kenda brand paring knives for 1.50 each, and the handles were EXACTLY the same as the "fibrox". (just an observation).
MSC Joie Spud Dude Potato Wavy Knife
I was unsure about this little guy, because so many similar tools had bad reviews. It arrived in great packaging, and is much better made than it looks in the pictures. When you actually try to cut potatoes with it, it makes the wavy pattern, perfectly, same with carrots. As long as you're looking to make thick slices (it doesn't really work for thin slices), this is a great tool.

Plastic Safety Bagel Knife 636
Your fingers may not get cut, but the bagel does...although quite a bit of pressure is needed and the bagel gets a little mishapen.I love ordering from Amazon but am now leery of their secondary vendors. This knife broke at the handle while slicing a sheet cake! We don't normally have bagels but I've had a knife like this before and used it on baked items without issue. I would think a sheet cake is easier to slice than a bagel... If I had gotten this at a retail store or knew the manufacturer I could have returned it but the marketplace only has a 30 day return window there is no exceptions for items that break & are possibly still under a manufacturer warranty.Buy Plastic Safety Bagel Knife 636 Now
Found this knife by luck in a thrift shop, and have loved it ever since. It is sturdy, very slightly flexible, and tremendously useful on breads, lettuce, cheeses, and cakes. I am going to buy more of them as gifts to friends with bread machines, friends with kids who use knives on good bakeware, family who love bagels (and have cut fingers while cutting bagels), and a couple of brides as a general, must-have tool in the kitchen. It is definitely worth the money!Should inform people that the plastic knife will warp in the dishwasher. I now have a wonderful peice of modern art that resembles a knife! The bagels get awfully crumbly. I ended up getting a bage guillotine for the kids; still safe, and leaves virtually no crumbs.Stainless Steel Sushi Sashimi Knife
This is my only review in years of using Amazon. This needs a review! I love to cook, and have owned many knives in the last 39 years. This is by far the most versatile knife I have ever used. Back to buy 2 more as gifts. Virtually the only knife I now use except when only a much smaller blade will do. Still sharp after a year of constant use, slice, dice, smash, carve. Yes, a set of specialty knives will do a little better, but not much. Oh yes, its great for cutting sushi as well!I just was back to get another as a present and saw the questions and review. A quick update from my usage. I am not any sort of knife expert, but an accomplished practical family cook with about 35 years experience. The bottom line is that its still the only knife larger than a steak knife I use. I have actually thrown out given the rest away. I have had to sharpen it two times with a inexpensive stone picked up locally, and I was surprised how well that worked. Its last major task was Thanksgiving when it chopped, diced, and carved up a meal for eight. I find the shorter size, and I believe slightly heavier blade than some sushi knives, helps to make it such a good all purpose knife. May not be the best at anything, still very good with everything I have tried. I am not easy on my tools and it has held up very well.
The blade on this one is 8.5 inches and it does look like the less expensive Seki Ryu brand yanagi bocho as mentioned. Since the one I purchased has different markings, an almost worn out komodo dragon engraved in a circlular pattern on the blade, I cannot be certain its the same as this or the other one pictured it arrives. I originally paid about and shipping, so either way it is the same or less as 2 years ago.I normally spend more time with my purchases before writing a review but in this case I want to make other shoppers aware of the fact that this very same knife is available on Amazon at a substantially lower price. Shame on the vendor for passing this off for something other, and tacking on a higher price, with no value added. In fact, the opposite is true, not only from the higher price, but from the misleading product name. They did not even bother to repackage the product--that is how I found out the original brand name. Now that I have the knife in my hand, I see that it is actually a Seki Ryu brand yanagi bocho.
For starters, this is *not* a Santoku and cannot be classified as a Chef's knife (gyutou) either. This is a yanagi-style sashimi knife. Blade length is 210 mm (8 inches) from choil to tip, which is very short for a yanagiba. The principle behind this type of knife is that from the sharpness and length of the blade one is supposed to cut fish meat with one clean stroke, no sawing back and forth, or the texture of the flesh gets ruined. Total length is 330 mm, and weighs in at about 77 grams! Spine thickness at bolster, about 1.78 mm. In any case, this is still a good buy, considering that the truly professional-grade yanagibas can cost up to a hundred times as much, or more.
The handle is wood, D-shaped and because of this, plus the single-bevel edge, is definitely not meant for the sinistral user. I doubt if you can find a left-handed version. The bolster is plastic, instead of the traditional water buffalo horn--but what can you expect at this price? Fit and finish is fair, a tad blade-heavy (balance at about 30 millimeters north of the choil).
To find the "cheaper" version of this product, just do an Amazon search for "sekiryu sashimi." I cannot determine what kind of metal they used for the blade, but for a single-bevel edge, it does not seem to be that sharp. Don't get me wrong--out of the box, it is still very sharp--sharper than any traditional western-style knife out there. The metal seems to transfer very easily onto a ceramic steel (soft?). I will see for myself how well it will sharpen, and how well it can hold its edge. Bevel angle seems to be greater than 15° (probably to protect the edge from the "average" user?), so it should sharpen to a much keener edge after I'm done with it. Despite the short blade, this knife should do very well for almost anything that your traditional slicer kitchen knife is used for, just not as rugged.
For the budding Japanese-knife enthusiast, this makes for an ideal "practice" knife. So, in spite of all my complaints, I can still give this item four stars!

Not a bad deal for the price. It has a semi-rudimentary handle but it is Japanese and very sharp... I'd reccomend it.Read Best Reviews of Stainless Steel Sushi Sashimi Knife Here
I purchased this knife because I wanted a dedicated sashimi knife for the sole purpose of slicing sushi rolls and ingredients for sushi. Japanese knives, such as this, are usually sharpened at a much sharper angle than traditional knives, so they are very sharp, and this knife is no different. It is very sharp, and has maintained its edge after 2 months of use. It is very inexpensive, but the actual blade seems to be of a sufficient quality to handle fish. The knife has a D-handle, which means the handle is in the shape of a "d" so that it is flat on one side and curved on the other, to fit into your palm. This means that the knife is designed for right-handed people and will feel odd in the left hand. The handle is very cheap, however it has held up and I don't really have a problem with it since I only use it for one purpose. The knife is sharpened on both sides of the blade. Traditionally, a knife like this for sushi should be single-ground (sharpened on one side), which it is believed makes cleaner cuts and doesn't tear the nori on the sushi. I have used this for dozens of rolls and don't have a problem with it tearing and not making clean cuts, provided I dip the blade in water first. I should mention that unlike the manufacturer's picture of the knife, the tip of the blade is rounded and not pointed at all.If you're not looking to spend a lot of money on a sushi knife, I would recommend this knife. However I do not think it should be used as an everyday knife and shouldn't be used for cutting things like beef or tougher foods which might dull the blade.
EDIT: 6 Dec 2011 Have to change my review from 4 stars to 1. After maybe one hour total use with the knife, the blade has separated from the handle (see my picture). Closer inspection of how the blade is designed to attach to the handle leads me to believe that this is likely to happen with other knives, since the piece that connects to the notch is just not long enough. I always washed this knife by hand and took care of it. It still has a decent blade, but that won't mean much when it breaks off while you're slicing. Buyer beware.

This is not a 5 star knife at any price, but for the price point it's pretty damn nice. If you're looking for a quick almost disposable blade, it's sharp, it's thin, and it cuts through fish like butter. The blade does not hold an edge for very long of course, but if you hone it before and after each use it will last you for a good amount of time. Handle leaves a -tonto be desired. But let's be honest, the best knives range from 100 dollars to the moon in price. You get what you pay for to some degree, but if you'll only use this knife once or twice a month, and know how to hone it, go for it. Can't beat it for 15 dollars.

Mundial 5100 Series 10" Chef's Knife, Red
I actually love this knife. When it got here it was a lot bigger than I expected (evidently I don't actually know how big ten inches is) but it works great. It is amazing how much easier it is for me to cut and chop with a knife that actually holds and edge.Usually buy Wusthof but their 10 inch chefs are $$$$ so I trolled for something more reasonable considering that this would not be used as an everyday, line chef knife.Has good balance. Personally, would like a little more weight but I admittedly prefer heavy. Most do not? Very sharp out of the box.
Chose Mundial based on $$, blade shape, and the red handle. Yes, the red handle. Blade has less belly than Wusthof but is not as triangular as Henckles. Overall quite satisfied.

Several years ago, I purchased a WMF Profi Plus Stainless-Steel Cheese Slicer from Amazon. After a number of years of use, the wire broke. I turned to Amazon to find a replacement wire. On the page for the Profi, it lists these wires as being "frequently purchased with" the slicer, and it seemed that reviews here indicated that this wire would work for my WMF.Indeed, they fit. But -poing! -they break. Quickly. After running through a couple of packs of these in a year, I decided to see what else might be available. I was able to find a Rösle brand wire on another web site. The Rösle are a bit more expensive, but it is immediately apparent that they are going to last a whole lot longer.
The Linden wires might never give you a problem if you are slicing Incredibly Soft Cheeses. But in our house we eat our share of aged cheddar and Gruyère. -Poing! -is the sound of Linden-on-Cheddar.
Pass these up, even with the convenience of Amazon & super saver shipping. We took a chance on buying these replacement wires for our favorite cheese cutter. By golly, they work! Not so with wires from other sources or "we can't help you with that" responses from local gourmet cookware stores where the motive is to sell you a new cutter. Our goal was to repair our old one, not buy new.
Totally Bamboo Dominica Cutting Board, 12.5-Inch
I have been wanting to try out a bamboo cutting board for some time and when I saw this one, I was sold!!! I have not been disappointed one bit with my purchase. I love that it is reversible which gives me both a cutting and carving board. It's like getting two boards for the price of one. The board not only looks great, which I also use as a cheese platter because it looks so attractive, but it is sturdy and cleans up easily. The size of the board is perfect for everyday use for cutting fruit and vegetables, as well as for special occasions when you need something large for trimming a roast. We just used it for our 10 pound lamb roast at Easter and the drainage trough around the edge worked great to keep the juices from flowing all over my counter. I am pleasantly surprised at how sturdy this board is and it doesn't show any cut marks from knives. It also doesn't dull my knives. If, and when, this board wears out, I will definitely buy another one just like it.Love the look of this board, very sleek and cool. It's durable and easy on my knives. A little heavy, but helps it to stay in place and not swivel around while you're cutting on it. I also like the fact that it's earth friendly! I was so excited to receive my new cutting board in the mail. I was looking for something that was functional and slim for easy storage as well as something that looked good. When I first opened the box, I immediately loved the look and feel of the board. I liked how it was double sided for versatility and how there was almost a crumb tray on the border on one side. I also liked how it was so slim that it could easily fit in my side narrow cabinet.I have had the board for a couple of weeks now and wanted to wait to write my review until I used it a few times. At first, I was chopped onions and was a little scared about how much my brand new sharp knife bounced off of the board. After I got used it to it, though,I came to actually really enjoy that. It made chopping move along a lot faster and efficiently.
The second thing I liked about it is that my knife didn't dig into the board and make obvious marks/dents. It just lightly scraped the board and you cannot even see the indentations unless you look closely.
I also enjoyed the fact that after washing it several times, you do not get that woody smell you get when you use a regular wood cutting board. Which means, my food sitting on it or being chopped on it is staying fresh!
The only downside I have is that I do wish it was on some feet so that it could be elevated a little bit off the counter. while I liked that it didn't slip around, I felt that I was at an awkward angle chopping because of the level. That could just be me and the height of my counters, but that was my only complaint!
LEM Products 1 HP Stainless Steel Electric Meat Grinder
Very glad I chose this machine. Heavy Duty, Strong, Efficient. The motor doesn't even change pitch when stuffing it full of meat. We process a lot of sausage and burger and are very happy with it. Can't think of a negative other than it is heavy... but that's a good thing too.I have used the #8 LEM grinder for years and decided to upgrade. I could not imagine how much better the #22 (1HP) would be. It is amazing and so fast. The new auger is the best new part of the machine the meat doesn't get stuck. I went hunting and shot a wild 600 lb cow and we ground it up in about 1 hr. This thing doesn't slow down at all on the first grind, it'll grind anything that you drop in the hole. Also, I love how the second grind is super fast. My old small grinder would create a vacuum on the second grind and stop, but this one pulls the meat through as fast as you drop it in the hole. Very impressive. The quality is very heavy duty. I don't regret the purchase one bit and definitely think it is worth buying.Oh, and one more thing... I live in Hawaii, but I was in Seattle on vacation so while I was up there I tried looking for a store to buy this model. They were going to charge me like $700 and I would have had to pay baggage fees to bring it back on the plane $50 to $100 because it weighs over 50 lbs, and Seattle's 10% sales tax, with Amazon there is no sales tax. I just up-graded from a Deni #8 grinder. Wow!!! This thing is fast! What would take me an hour just to prep the meat for the grinder took five minutes. No need to cut into little chunks anymore. I just did 12 pounds of pork, two grinds in less thsn 10 minutes. That includes preping the pork! Easy clean up to boot. Storage is going different cause this thing is big and heavy but hey, who cares when it preforms like that. I'm not going to try to use it to stuff with having already aquiring a stand alone stuffer. Block is well made, heavy and nice looking. I do not know much about the wood, but the wood is hard, and you can not scratch it with your nail. It well matchs my wusthof classic knives.scissor's model number is 5558. The steel is 9 inch long, and heavy and well made. Though it does not carry model number, it does feels like something belong to Wusthof grand pix line.
The block can handle 12 inch long knife.
The width of uppper slot is 2.5 inch. If you have a cleaver, there is no place to put it.
In short, this is a great starting set to hold wusthof knives.Finding the perfect knife set is nearly impossible. Most sets include a lot of extras that you probably didn't want. Most of us need the basics (big chopping knife, smaller knife and paring knife) plus a few. Buying this block and outfitting it yourself is the much more economical way to purchase a knife set. Especially when you are talking about somewhat pricey knives like Wusthof. This block is perfect. There are plenty of large and small slots and slots for steak knives. It easily fits my 8" cooks' knife. The block is a little bit bigger than I anticipated. It's a little 'longer' than I thought it would be. But it's beautiful and really doesn't take up much counter space. It's solid and hefty, doesn't move around when taking knives in and out. I love that it came with the sharpening steel and scissors. I would have gladly bought the block itself for the price I paid. This is a great product for anyone looking to put together their own knife set. Highly recommended.

It's sturdy, not too big, looks great. Fits a few of our older knives, and the new Wusthof 8 inch chef's knife and 3 1/2 inch paring knife that I just bought for my husband.KitchenAid Stamped Pom with Endcap Cutlery, 12-Piece Set
I've had some knife sets that have lasted a long time, but when my wife and I got married we got a lot of Kitchenaid tools for our kitchen, one of which was this knife set. The knife set really does a good job, the quality is there but I found that our knives have little rust spots on them after a few years of use. The construction however is touch, we've never bent or broken any of these knives and everything has stayed sharp. Occasionally we will sharpen the knives but for the most part we don't even think about it.I would have liked to see these knives last longer without getting little rust spots, but overall they held up for a few years and for the price I don't think you can beat the quality. Our knives are approx 4 years old.I didn't want to "skimp" on knives like I had in the past, but since they were Kitchenaid and only $30 I figured it wouldn't be the end of the world. I really love these knives! They slice as good as my mother's $200 set. (They cut through chicken like butter!) And if rust does become an issue, Old Dutch or Vim remove it easily. I highly recommend these knives to anyone that does a lot of cooking and doesn't want to spend a fortune. Enjoy!

I bought these on sale from the local grocery store, damaged box only. A great deal at $20.The knives are really sharp, I know these are only cheap compared to how much you could spend on knives but a good 'intro' set for the beginner. I'd only ever had hand me downs or walmart sets before and the difference with sharp knives when cooking is amazing!
Much more enjoyable.
I've never had a problem with any Kitchenaid product, they are usually built well and good value.
These do rust easily though however someone in our household, who shall remain nameless, did put some of them in the dishwasher and they are the ones that have rusted a little.
Handwash only!

I picked up this knife set on Black Friday a few years back for $30, which is a steal. Previous to purchasing this I had a smaller knife set that I had picked up from Ikea for $20, so that's what I had to compare these knives to. And the difference was beyond compare. When I purchased this set, the lower block, with the steak knives, was actually removable in case you wanted to place it on the dinner table for serving. A nice touch.
Included in the set is the following:
1 Santoku knife
1 bread knife
1 chef's knife
1 slicing knife
1 paring knife
4 steak knives
1 knife sharpener
1 pair of chef's scissors
These knives are wonderful quality and remained sharp for a very long time. My favorite among them is the Santoku. I love its curved edge for chopping up vegetables. The slicing knife is extremely sharp and is great for quickly cutting up chicken breasts. The steak knives are great, but are probably the lightest of the set. I think they're the weakest link, so to speak, but they're still better than the average dinner knife.
I've also experienced what other people have reported about rust, but only on the steak knives. The other ones are going strong with no marks whatsoever. I've never used the sharpener included with this set because I'm sure there's an art to it and, having no experience, I wouldn't want to accidentally do something wrong and mess it up, so I can't comment on how effective it is.
I'm sure there are nicer knife sets out there, but these are a great value as a starter set for the money. And they blow those old Ikea knives right out of the water in terms of durability and sharpness. I think this is a worthwhile investment and I've had mine for three years now.

I was cutting an apple with my chefmate set from target when I could not cut through an apple! Time for a new set. Looked on amazon and these seems to fit the bill. Not too expensive but quality. The set of knives seemsed to be a good middle of road choice. This is a good basic set of knifes that have a sharp edge and actually cut. I was pleased with this product and how it worked. Good knives and a sharp pair of scissors as well.ZHEN Japanese VG-10 Damascus Fish Fillet Knife, 8-Inch
I bought this knife to process fresh fish, mostly crappie, blue gill and bass. The blade of the knife is very sharp out of the box, though polishing it on a leather wheel brought it to a fine, paper-slicing edge that is typical of VG-10 steel. I have used it a couple of times on salmon and crappie. It does exactly what one would expect of a premium-grade knife. It slices, cleanly. The ergonomics are good. The construction is excellent. This is a good tool, and attractive to boot.super sharp and feels well balanced. Holds an edge even when filleting tough fish.
